




Hi everyone.
Its May, the evenings are getting longer, and the weather is not too bad to go with it, so all is good.
This month we look at exam time, changing my hat from editor to mum of an exam student, it’s a tough ole time for them, lots of study brings a lot of stress, but there are lots of other things to understand for them too, eating properly to have the body fuelled up, sleep and exercise are both important in their own right, as is time management, and most of all realising that these exams are not the entire world, there are so many options out there now I always say to my son, ‘there are lots of options for you’ so take the time out to listen to your teenagers and understand what and where they are going. We have some tips and advice here for everyone so have a read and best of luck to all in the final studies before it begins.
We also had a great chat with the leading roles of a new series starting on RTE on May 14th Charlene McKenna and Barry Ward star in Clean Sweep which I think will be a ‘worth watch’ so put it in the diary.
Tralee Food festival is happening this month and I am looking forward to sampling the delights available across the town over the two-day event.

An exciting and thoroughly gripping drama series, ‘Clean Sweep’ will hit our screens May 14th on RTÉ 1. Based on a true story, starring Charlene McKenna (Peaky Blinders) as Shelly Mohan and Barry Ward (The Fall, Britannia) playing Jason Mohan as husband and wife duo. Jason spends his days working as a Garda Detective coming home to his perfect wife, Shelly. All-round super mom, she does it all so well, from chauffeuring their 3 kids around from school to activities, active on the PTA, all the while being an exemplary wife with a dinner on the table for her husband every evening. But appearances can be deceptive! Unbeknownst to everyone around her, Shelly has been secretly living a double life for the last 20 years with a murderous past, keeping this secret even from her unsuspecting husband. Will the arrival of someone from Shelly’s past unravel her carefully manicured world and home life? Will her husband find out exactly who he married? I spoke to Barry Ward to find out more.
Barry, thank you so much for joining us here in Connect. Your new starring role in RTÉ’s, Clean Sweep sounds very exciting, can you tell our readers about the show?
Thanks Cathriona, absolutely! Clean Sweep is an exciting new 6 part crime drama starting the 14th of May on RTÉ. It focuses on the two parents in the Mohan family, Shelly and Jason. Without giving too much away, the very first episode lays out the plot for the entire story. The matriarch, Shelly played by Charlene McKenna, is a criminal whose unsuspecting husband Jason happens to be the lead detective investigating the case and crimes she committed.
Your character, Detective Jason Mohan, is an unsuspecting husband to his wife’s past. What drew you into this character?
The fact that I got to play opposite Charlene McKenna! Detectives are always an interesting challenge and especially the lead investigator, there is always plenty to get your teeth stuck into with that type of role. I think part of the attraction for me was that to play a role where the audience are always one step ahead of my character, it’s always tricky to keep that ball in the air so it’s a very interesting challenge!
How is the relationship between Shelly and Jason, as Shelly’s past catches up to her does this cause a shift in the couple’s dynamics without giving too much away!
Oh absolutely, Charlene’s character Shelly holds all the cards in a sense because she knows more than I know and always one step ahead of her husband Jason the whole time. It kind of sets the tone for that big plot devise, it’s essentially a big rock thrown into the pond that is our marriage and our family. This of course has a huge ripple effect so when you take in the series, it’s got this quality family drama but with the explosive tense side to it giving the viewer an exciting viewing experience. It’s tinged with tension and the stakes are high.
What affect does this have on Jason throughout his story arc?
As Jason gets closer to the truth and closer to solving the crime it leads Charlene’s character, Shelly, to more drastic measures so this really takes its toll on the family and Jason particularly.
But Jason is no angel either, he has a few skeletons in his closet that come out during the course of the show, but that’s all I will say on that for now so not to give too much away!
With it being based on a true story I feel this adds to the overall excitement of the show, particularly with the rise in interest in true crime series and documentaries. Did yourself and Charlene do any specific research or training before filming to learn more about the roles?
In a short answer, no! I have played the roles of a cop and detective before so for me it was just important to serve the script and get into character. It was all there in the script the character was so meaty and chunky, something I could really get into playing. Anything else might have just gotten in the way really so for me it really just came down to getting stuck into the scenes with Charlene.
With a rise in popularity for Irish film and production worldwide, are you excited at the prospect of it being picked up in America too?
Yes! I think it’s great, the company bringing it there have been involved from the get go so it always had American involvement especially with an American writer on board. So I think it was exciting to know the bigger audience it would ultimately receive. I think given the fact it was set in Ireland too just gives it that edgier, grittier feel, a completely different dimension. So fingers crossed people on both sides of the water like it! It has been a fantastic few years for the Irish film and TV industry, there have been so many trailblazers paving a path for the rest of us.
What locations where included in the filming?
It was mainly filmed in South Dublin, places like Killiney where we did a lot of filming in a hotel there and a house nearby. For me being from Blanchardstown, it’s always nice to film in Dublin. We were in Bray in Co Wicklow a lot too which is always nice, Bray is a lovely spot.
For you personally as an actor, when you are sent a script, what is your decision making process like and what is the deciding factor for you? Are there particular characters that you enjoy being cast as?
It really varies for me from script to script. Nothing will ever fill all the criteria you have, there is always going to be a plus and minus to every role and character. I just personally think script, story and character are absolutely paramount in my selection process. But the writing is very important to me too, the writing has to be good, something to get me hooked! If it’s less than that then it has to come down to factors such as it having a really good cast or really good director, really nice location to film just something along those lines to attract me to it. But essentially first and foremost it’s got to be the writing that sells it to me.
You have had a very successful career so far with roles in drama’s such as The Fall and Britannia and now with Clean Sweep sure to be a success both here in Ireland and in America where it will be broadcast on Sundance Now. In addition to this you recently won an IFTA award, what projects can we expect to see you in over the next year or so?
So Clean Sweep comes out May 14th and after that I have a film called Sunlight which will be actually playing in the upcoming Kerry International Film Festival. It was written by the extremely talented Ailbhe Keogan who as you know comes from Kerry as well! She previously worked on the Olivia Coleman drama, Joyride. Basically Ailbhe wrote this feature for me a few years ago called Sunlight, with lockdown it got delayed but we eventually got there with it! I’m excited for that to come out after all of this time, it will have a cinema release too which is always good! I also have an upcoming Feature called ‘That They May Face the Rising Sun’ which was directed by Pat Collins. It’s based on the book of the same name by author John McGahern. So yes, an exciting year ahead and hopefully audiences will enjoy Clean Sweep as much as I enjoyed making it.

Whether you are living in or visiting Kerry, a trip to Skellig Michael is an absolute must. The Skellig Rocks, Skellig Michael (also known as Great Skellig) and Little Skellig, are towering sea crags rising from the Atlantic Ocean almost 12 kilometres west of the Ivereagh Peninsula. Located at the western edge of the European landmass, 1300 years ago, early Christian monks built a remarkable hermitage at the top of this jagged ocean crag – then at the furthest limits of the known world. This mysterious and awe-inspiring place –described by George Bernard Shaw as “part of our dream world” – is now a UNESCO World Heritage site. It can be reached by the adventurous on a small boat, only when the weather allows from May to October. Recently finding new found fame with the filming of the Star Wars franchise on it, Skellig is just one of those bucket list places you have to see at least once in your lifetime. If it’s a day at the beach then you can’t do much better than Ballyheigue Beach. One of Kerry’s many Blue Flag beaches, it offers a 2.5km stretch of golden sandy beach monitored closely by a team of life guards throughout the summer months. The carpark is so conveniently located parallel to the beach. If it’s a family outing, why not make use of the playground located in the beach carpark with swings, slides and climbing frames to wear your little dare-devils out or to work up an appetite! If its casual dining why not pop into the family run team in Shafi’s Takeaway and sample some of their famous fresh pizzas! (The Kebaberella – trust me you can thank me later!) Open from 5pm every evening in the summer, it’s the perfect place to grab some freshly made food for you and your family to enjoy, you could pop down to the picnic benches by the beach and enjoy dinner with the most amazing view! For the sporting amongst us, a visit to Ballyheigue Golf Course is an absolute must! Situated at Ballyheigue Castle with views of the Atlantic Ocean, it even hosted one of Irelands most star filled weddings of Ballyheigue native Don O Neill. If you are a bit more adventurous (and fitter!) why not hike the Kerryhead loop trail?
You will be treated to scenery of the Atlantic on one side and the Shannon on the other across the coastline to County Clare. Be sure to bring water on the hotter days though! What a more perfect way to end a day like this than to pop into Claire and Pat in Flahives and enjoy one of their famous cocktails, the daquiri being a personal favourite!
Experience 1 million years of geographical wonder in this underground world and one of Ireland’s best examples of an open cave in Ireland. Crag cave is suitable for children and adults with so much to learn and experience. Crag Cave offers more than just a cave visit with a fun indoor play centre, restaurant, gift shop and some outdoor activities. Located in Castleisland with easy access from Killarney and Tralee, it is open throughout the year with a wonderful seasonal Santa experience in December. The cave was discovered in 1983 and opened soon after. There are guided tours of the cave available and it is recommended that children should be school age as there are steps and narrow passages in the cave. In the cave you can learn about cave formation, the development into a show cave and details about what the cave is composed of. Younger guests can enjoy the large play centre as part of their visit or a standalone visit. There is a large slide, crazy maze area, rope bridge, ball pools, a spiral slide and balls guns. The area is very safe and fun for kids up to 12 years of age. Supervision is on hand and parents can watch from the café area beside. On pleasant days there is an outdoor play ground with swings, slides and a tent shaped climbing frame. Located in the main building of the visitor centre there is a gift shop and restaurant. The gift shop stocks a range of jewellery, bags, ornaments and gifts. Many are made locally with some very nice items on sale. There is a souvenir range and toy section. The Garden Restaurant is open to all visitors and provides a menu with hot and cold options. Dinner and lunch items are served along with a tasty dessert range and choice of drinks. It is without doubt that every parent/guardian wants the best for their child on the run up to and during the Leaving Certificate examinations. Reports received from some 6th year parents/ guardians on the impact the Leaving Certificate year has specifically on them, and not the actual students, is fascinating. From weight gain to weight loss, due to over or undereating brought on by stress, to cancellation of the year’s holiday, to acting as sentry on duty outside bedrooms, to payment of bribes and promises of exotic holidays, latest gadgets, etc the list goes on.
Below are some tips for parents/guardians – based on my own personal experience working with thousands of students and their parents over the years. These should help leading up to and during the Leaving Certificate exams.
Allow the Leaving Certificate students to take control and drive their own study and revision sessions. If they themselves take ownership of the situation, they are more invested in the process and the learning outcomes will be far more beneficial. The drive should come from within to do well and not from an external factor such as the promise of money, foreign holidays or extravagant gifts.
It is important for all involved to realise that, while the Leaving Certificate is currently significant in your child’s life, it will not make or break a person. It is a means to an end. A means that, in a lot of cases, does not reflect the full potential or abilities of a student. Having a great future and leading a full and rewarding life is not solely dependent on the outcome of the Leaving Certificate. Parents/guardians need to be aware of the various options after the Leaving Certificate outside of CAO and thirdlevel colleges. Careers do not depend solely on CAO offers.
As parents or guardians, you need to be aware and accept your student’s historical pattern of results and how these relate to
potential CAO points. Every parent/guardian wants their child to do their very best and to be happy with their results. Students should not be pressurised to aim for a 600 points course if parents/guardians know that with hard work and effort, the scope of their ability is 400 points. Treat everyone as an individual. Be aware of differences within families. Don’t compare siblings, each person is an individual, in their aptitudes and abilities, and how they will perform in exam settings.
While it is tempting to constantly tell the Leaving Certificate student they should be studying, this nagging causes friction and upset, negatively impacting the entire family.
It is important that students eat well and drink plenty of water to ensure they are well set up physically to perform to the best of their ability.
Allow a certain level of engagement with hobbies and interests. From a mental and physical health perspective, such activities are hugely beneficial and will keep a balanced perspective on the looming exams.
Try and keep things as normal as possible leading up to and during the exams. The students will hear nothing but talk about the Leaving Certificate in schools, in the media, on social media, contributing to increased levels of stress and anxiety. It is normal for them to be somewhat nervous as that shows they care about the outcome, so their feelings should not be dismissed. The more normal everybody behaves, and the more relaxed the atmosphere in the house at this time, the better the student will function and perform.

As parents we play an important role in supporting our children through this challenging time. We got a glimpse of what exam stress may look like as they were doing their mocks. So I’ve put together some tips to help ease the stress somewhat. Firstly it’s us parents that need to regulate; Parental emotional regulation refers to a parent's ability to manage their emotions effectively, particularly in the context of parenting. It involves being able to regulate one's own emotions in response to their child's behaviour or emotions, and to respond in a supportive and positive way.
The importance of parental emotional regulation cannot be overstated. When parents are unable to regulate their emotions, it can have a negative impact on their child's emotional development and overall well-being. For example, if a parent becomes angry and yells at their child when the child is upset, the child may feel unsupported and unsafe, leading to increased anxiety and emotional dysregulation.
On the other hand, when parents are able to regulate their emotions, they can create a supportive and nurturing environment for their child. When a parent is able to remain calm and empathetic in response to their child's emotional distress while studying, the child is more likely to feel safe and secure and can return to emotional baseline faster.
There are several strategies that parents can use to improve their emotional regulation. One of the most effective strategies is to practice mindfulness. Mindfulness involves being present in the moment and paying attention to one's thoughts and feelings without judgment or reactivity. By practicing mindfulness, parents can become more aware of their own emotions and learn to regulate them more effectively.
Another strategy is to engage in regular self-care. When parents take care of their own emotional needs, they are better able to regulate their emotions in response to their child's behaviour or emotions. This can include engaging in regular exercise, getting enough sleep, and practicing relaxation techniques such as deep breathing or
Finally, parents can benefit from learning effective communication skills. When parents are able to communicate effectively with their child, they are better able to understand their child's emotions and respond in a supportive and positive way. This can include active listening, using "I" statements to express their own feelings, and validating their child's
and avoid procrastination, which can lead to unnecessary stress and anxiety. In our house my daughter studies a subject for 20 minutes takes a 10 minute break and starts a new subject and will do this for 2 hours and stop. This works for her and we discovered this through trial and error! Build an approach that works for your child.
It's important for parents to set realistic expectations for their children when it comes to exam results. It's natural for parents to want their children to do well, but putting too much pressure on them can be counterproductive. Instead, focus on encouraging your child to do their best and recognise that not everyone can achieve perfect grades. Remind your child that exams are just one part of their academic journey and that their value as a person is not determined by their results at school.
Creating a supportive environment at home can make a big difference in how your child copes with exam stress. This includes being available to listen to your child's concerns, providing encouragement and positive feedback, and avoiding unnecessary criticism or negativity. Help your child feel supported by being present, offering to help them study, and being willing to discuss any issues or challenges they may be facing.
It's important for children to have healthy coping mechanisms to deal with stress and anxiety. Parents can help by encouraging their children to engage in activities that they enjoy, such as hobbies, exercise, or spending time with friends. Make sure your child takes breaks from studying to engage in these activities and encourage them to talk about their feelings if they are feeling overwhelmed.
Parents can help their children manage their time more effectively by teaching them time management skills. This includes breaking down large tasks into smaller, more manageable ones, creating a study schedule, and setting realistic deadlines. Encourage your child to prioritize their tasks
Exams can be a stressful time for children, and it's important for parents to provide emotional support. This includes offering reassurance, listening to your child's concerns, and providing a safe space for them to express their feelings. I recently sat with Taxation Partner, Laura Dillon to find out more about the firm and their recent launch of a whole new image and rebrand.
Laura, can you tell our readers about your background and your career in CSG?
I am originally from Tipperary myself, I studied Law and Accounting in college which is a good background for Tax. I then went on to gain my masters in accounting in Galway. I trained in KPMG in Dublin which I really enjoyed, I worked there up to the position of associate director. I also have 2 years industry experience with GE (General Electrical). I left my position with KPMG to come work with CSG. My husband is from Killarney so we were trying to decide what the best move for us as a family would be and to have a firm such as CSG to come and work with just made our decision so much easier. I started as Head of Tax in 2018 and since then I have Damian Clifford and Shane Cronin in the Tax department as well with me. We have focused on growing the tax department but we are currently hiring for it too! I feel very fortunate in my job because the work is as interesting whether I am sitting at a desk in Dublin or Kerry, the client base I work with is so broad and diverse it makes it so interesting for me. I was delighted to be recently made a Partner in the firm along with my colleagues Roisin Mulvihill and Edel Broderick in January of this
year. It was lovely for us to get that promotion and recognition amongst our colleagues and clients.
For those who may not know what the firm is about, can you explain a little for them?
For anyone that is not familiar with CSG, we are an accounting firm, we provide accounting, audit, tax and advisory services to clients. We are based locally here in Tralee but with a national expertise level, we have a great client base throughout Kerry and further afield. It is a very interesting job, you get to be involved in different transactions that your clients are undertaking, to guide them through it and assist them every step of the way. We also guide them through their audits, accounts and tax returns. So for us, it really is an interesting mix of services.
We have a very broad range of clients, from sole traders to large corporate groups. We really do cover the whole spectrum of clients, especially given that we are 4 firms merged together, it means we can offer our clients a service of very high standards with a wealth of experience. We are very lucky with our geographical location as we have a lot of hotel groups around us with Kerry being a hospitality centre so we get to work with a lot of clients in that area. Aside from that sector, there really are some great industries in Kerry and across Munster that we get to work with for example the tech industry, manufacturing industry so a really good broad range of client base
Can you tell us about the team in CSG?
There are currently 43 of us here in CSG with 2 more to come on board in May. It really is great to be providing highly skilled jobs here in Kerry, I myself would have moved from Dublin to Kerry so to have a company of this calibre to work in is a great opportunity. Every work day is interesting with the diverse range of clients which we are very lucky to get to work with. The mix of staff too really helps in terms of what we offer our clients. Each year we take on students from MTU and other colleges which brings a great energy into the place, we would have people doing exams with us and then there are qualified accountants, tax advisors and auditors within the firm giving us a great range of age, experience and expertise. We all work well together and do lean on each other for support which makes linking in with colleagues on behalf of our individual clients so much easier, it’s a good dynamic in the office and one that we are proud of.
What do you feel sets your company apart from competitors and makes it so popular with clients across Kerry?
A lot of our work comes from referrals so if you do a good job for somebody it’s always a great sign when they recommend you on to their friends and family. We aim to deliver accessible and
a high quality service to all our clients. When a potential client chooses CSG they get a personal and tailored approach to their business needs. We are lucky in that we are a one stop shop, we have it all here under the one roof. It allows ease of access to leading professionals, ensures excellent time management and is a cost effective approach. For example, I am a tax advisor which is a service that a lot of firms may not have and would have to outsource so it really is great to have these services inhouse.
Finally Laura, you recently launched an exciting rebrand of the company, how did that go?
We were delighted with the launch of rebranding recently, it was a very successful launch and one that we are proud of. It came about, as I previously mentioned we are 4 firms which have amalgamated, so we felt for everyone to feel settled, CSG was a rebrand that made sense. It came after a lot of change within the firm such as 3 new partners so it coincided nicely with all of that too. It allowed us an opportunity to reflect and focus on the firms vision, values and what direction we wanted to go in the future. It was a good exercise in terms of thinking ahead and about providing those skilled jobs in the Kerry area and enticing more highly skilled professionals to work with us. To celebrate it we had a lovely event in The Rose Hotel here in Tralee to launch it, it was very well attended which was lovely for us as a firm to feel so supported by clients, local businesses and the general public. Events like that are great in terms of staff morale, it gives us a sense of pride in where we work. It was great to see everyone enjoy themselves and I think everyone took something from the launch which was great to see. It promoted performance optimization
and leadership skills which no matter what role you are in is always helpful with us all trying to juggle jobs, life and families! For
Minimally invasive dentistry is a a very popular model of providing modern day dental care. It aims to preserve the form, aesthetics and function of the natural dentition for as long as possible by first controlling the disease and then restoring the dentition in the most conservative way.
It is based on a wide range of scientific research and is evidence based. By preserving more of the natural tooth structure, we can improve the long term prognosis of the tooth. By using excellent isolation techniques and precise detection of the decayed parts of the teeth we can be very precise in removing defective tooth structure. This allows us to restore the tooth using advanced adhesive techniques which can mean less tooth cutting. We are at a very exciting time in dentistry with many more conservative options available to treat dental decay.
Silver Diamine Fluoride is a very useful material which can be very beneficial in managing both sensitive teeth and decay. This can be especially useful in baby teeth when co-operation may not be ideal for treatment. When applied to the tooth it can slow the progression of the tooth decay and has an 80% success rate. It can harden the softened dentine and make it more resistant to acid and abrasion. It is a fast, easy and comfortable treatment. It can give an immediate relief for sensitivity and kills the microorganisms that cause the cavities. A repeat application gives the best result. The decayed area will turn black after treatment but not the healthy tooth substance. This can then be covered with a filling if required. This can reduce the risk of early tooth loss in children, reducing the need for general anaesthetics and also maintain the space for the adult teeth so that there is reduced risk of needing orthodontic treatment when the permanent teeth erupt.
Early detection of tooth decay is vital to employ the most conservative techniques, this is why we recommend all adults and children should attend regularly, usually every 6months, for an examination. Even, in the case of deep decay in a tooth we can sometimes use techniques which can reduce the chances of the tooth requiring a root canal treatment.
The pictures above show an example of a very broken down tooth restored using advanced adhesive dentistry techniques in one visit. This was completed using restorative composite.
The Bon Secours Hospital Tralee announced the appointment of ECKL Ltd as the main contractors for their €15m development of a new Day Ward, Minor Operations Suite and new Entrance.
The Bon Secours Hospital Tralee is delighted to announce the appointment of ECKL Ltd as the main contractor for the development of a new Day Ward, new Minor Operations Suite and new Entrance. This project will cost in the region of €15m and is part of the Bon Secours Health System 2025 Plan which is seeing €300m invested across the Bon Secours Health System.
The Bon Secours Health System Group Chief Executive, Mr Bill Maher said “The appointment of ECKL Ltd as the main contractors for this project in Tralee marks a major milestone for this project. This significant investment in the infrastructure of Bon Secours Hospital Tralee indicates our confidence in and support for our hospital in Tralee. I am also delighted that a local contractor has been selected to be the main contractor on this new build and I look forward to attending on-site over the coming weeks and months to view the progress first hand.”

Capital Acquisitions Tax (CAT) at 33% applies to inheritances and gifts.

There are various tax reliefs available to reduce a CAT liability as follows:
(1) Dwelling House Exemption
Inheritances and certain gifts of a dwelling house may be exempt from CAT where certain conditions are satisfied.
(2) Agricultural Relief
This reduces the taxable value of a gift/inheritance of agricultural property by 90% relief. A number of conditions must be satisfied to qualify for the relief.
(3) Business Relief
This also reduces the taxable value of business property by 90% where conditions are satisfied. Farm businesses may qualify for Business Relief even if Agricultural Relief does not apply.

Ingredients
• 4 large flat or portobello mushrooms
• Low-calorie cooking spray
• 3 baby leeks, thinly sliced
• 200g baby spinach leaves
Our comforting soup is a magical medley of smooth, creamy butternut, earthy lentils and fragrant spices. Every spoonful is a feast for the senses!
50 minutes | Serves 4
Ingredients
• 200g dried red split lentils, rinsed
• 1 butternut squash, peeled, deseeded and cut into 2cm chunks, or 800-900g prepared butternut squash chunks
• ½ tsp ground turmeric
• 1 tbsp medium curry powder*
• 1-litre hot vegetable stock, suitable for vegans
• 6cm piece fresh root ginger, peeled and finely grated
• 2 garlic cloves, crushed
• 1 tbsp black or brown mustard seeds
• 1 tbsp cumin seeds
• 1 tbsp coriander seeds, lightly crushed
• Juice of 1 unwaxed lemon
• 1 green chilli, finely chopped, to serve
• ¾ small pack of fresh mint, leaves finely sliced, to serve
1. Put the lentils, squash, turmeric, curry powder, stock, ginger and garlic in a large, deep, non-stick saucepan. Season lightly, put it over a medium heat and bring to a simmer. Cook for 30 minutes, stirring occasionally, until the lentils and squash are soft. Using a stick blender, blitz the soup until around half of it is smooth and the other half is still chunky, then keep it warm over a low heat.
2. Put a non-stick frying pan over medium heat, then add the mustard, cumin and coriander seeds. Toast for 2-3 minutes, shaking the pan frequently, until fragrant (the mustard seeds may begin to pop). Tip them into a bowl and stir through the lemon juice and a pinch of salt. Ladle the soup into 4 bowls and serve hot, topped with the toasted spice mix, the chilli and the mint.
• ½ tsp ground nutmeg
• 1 tsp white wine vinegar
• 4 large eggs*
• 4 slices lean ham, visible fat removed
•*Pregnant women, the elderly, babies and toddlers are advised to eat eggs showing the British Lion stamp if eating raw or partially cooked eggs.
1. Preheat your grill to high. Remove the stalks from the mushrooms and put them gill-side up on a grill rack. Season lightly, spray with low-calorie cooking spray and grill for 3-4 minutes on each side or until cooked through, then keep them warm.
2. Meanwhile, spray a non-stick frying pan (use one you can put some kind of lid on) with low-calorie cooking spray and place it over medium heat. Add the leeks and stir-fry for 3 minutes or until they start to soften. Next, add the spinach and stir. Cover the pan and cook for 2-3 minutes, or until the spinach has wilted and the leeks are tender. Drain in a sieve, pressing down with the back of a spoon to remove the excess moisture. Return to the pan and season lightly, then sprinkle over the nutmeg. Cover to keep warm.
3. Bring a large pan of water to a boil. Stir in the vinegar, reduce the heat to a very gentle simmer and carefully break the eggs into the water. Cover the pan and let the eggs poach over very low heat for about 4 minutes. Remove from the heat and carefully transfer the eggs to a large bowl of cold water.
4. Put the mushrooms, and grill side up on warmed plates. Top each with a folded slice of ham, some spinach and leeks, a poached egg and a grind of black pepper and dig in!

Surprise guests, Michael Healy-Rae TD and Cllr Sam Locke delighted the audience by strutting suits from Celsius Mens wear, on the catwalk.

If you have been watching the nightlife and music scene in Kerry recently, there are amazing gigs by the ‘Stag and Doe sessions’ in their new home in The Greyhound, one of the organisers Ruairi Fry known as his artist name of ‘Radar Fry’ has a chat with me about his own music journey.
It’s a pleasure to speak with you, I know you are putting a lot of hard work in at the moment!
Firstly how have the stag and die sessions been going in their new home? How did that idea come about and what is it trying to encourage?
Stag and Doe sessions was created to promote and showcase original musicians and focusing on local talent. Stag and doe sessions is a platform to give original music the opportunity to show their talent and ability on a professional stage. The idea came about in 2018, I was looking for original music in tralee. I am a huge fan of new fresh material and love hearing up and coming artists. Even as a musician I found it difficult to find places to play original music. Then I decided with a friend of mine Tadhg Flynn that we would really love to do something like this, and thus the creation of Stag and Doe sessions and we had our first gig in March of 2019. Local music is our primary focus, we choose local acts first and then fill in the line up from there. Each session is tailor made each time. Stag and doe sessions is there so artists can try out their own material and to also express their own passions through music.
Stag and Doe sessions is an organic, ever changing entity and we've showcased artists in bars and on large scale stages at local festivals and large local events. Venues in tralee have been very good to us and we look forward to their continued support.
We have grown a great amount over the last few years and have the privilege to showcase some amazing artists and the support locally has been great!
Where did your love of music come from? Has it been a lifelong passion or something life has inspired you to concentrate more on?
Music and the arts have been a major part of my life. I believe music is in my DNA. I can remember being around music my whole life and playing from a very young age.
I started taking music seriously in my teens when I started my first rock band "JERCS" at the age of 13 and I was the drummer. At that time I was one of the founding members of the the kdys band project which was a great avenue for young people, and I have great memories of playing in the Kdys. Shortly after that at around the age of 16/17 I was in a heavy metal band called "Trench" which had a good amount of success. Releasing an EP, We toured many parts of the country.
As I got into my twenties I began to be more drawn to playing guitar and in particular lead guitar. I also loved playing fast up tempo rhythms on acoustic guitar. With encouragement from family and friends and trying out different bands I went solo! I was supported by my great friend Harry Cunningham who's is and amazing bass player. I have always been writing lyrics and music from about 12 or 13. Blues folk rock has always been the style that I was drawn too. In particular ballads I love good balled from Rory Gallagher, Gary Moore and of course Phil Lynott. I have really enjoyed heavy music such as Tool, Staind, Metallica and more heavier bands like slipknot.
Music has been something which has always been a passion of mine it's apart of my daily life I really don't have any day where I don't play or write or go to watch music.
For me the next step is to release my own original music, I have been working hard for a few years crafting songs and to be honest I'm writing constantly and I have a huge amount of material. I will be getting into the studio to record an acoustic album and release an EP. Gigging is a very important part of playing and looking to play venues around the country is my plan.
I know you have some amazing series on social media about different aspects of guitar, how did that come about and what’s next for that?
It's one of those things that happened very organically. I was sending videos to friends and at social events friends would ask me to play on the spot to random backing tracks on YouTube almost like a positive challenge. Which then developed to become part of my practice routine. Every video I put up is literally on the spot never heard the track before and I improvise playing along to it. Which is really fun and challenging.
Following up from that people were reaching out to me asking about elements of how to play guitar and how to learn different ways of playing. I thought that's an idea how do I explain how I do things bringing back to the basics and breaking it down. To be able to share this with others has been great and genuinely fun! The feedback and support from people has been amazing and a huge confidence boost for me. It is amazing to hear people talking about them enjoying my videos.

The Tralee Food Festival will take place on the 20th and 21st of May, building on the success of previous years this year’s festival is being run by a newly formed committee of Mary Mc Quinn, Ken Tobin and John Mc Carthy.
