Seven Stills
Quality spirits inspired by craft beers

Founded in a 400sqft storage unit in the Dogpatch of San Francisco, Seven Still is a unique distillery. The goal from the start was to create seven unique whiskeys from seven unique craft beers. Each inspired by a different hill of San Francisco and each label.
When owner/co-founder Tim designed by a local street artist Obert and his team decided to to depict that landmark. bring all productions in-house in 2016, they had to decide on a location. Even though the cost of building a facility in San Francisco is a lot more than other cities, they knew that their roots were so strongly tied to the Bay Area it was necessary to stay.

As the only combined brewery and distillery in San Francisco, their three core values are delivering quality, having fun, and providing a sense of community. They pride themselves on putting forth the best effort with everything they do. As a result, when they created the food program, quality was of utmost importance.
They brought on multi-Michelin starred chef Joseph Humphrey to lead the kitchen. "Our food offerings are intended to be fine dining quality," he says. "But approachable and fun."

Having both brewery and distillery at the same location created a set of distinct challenges. The biggest hurdle was to separate the two operations and the recordkeeping involved so that the everything stayed divided. From a government regulation perspective, the brewery and distillery are two completely different businesses and must be treated separately.
