The top food trends to focus on in 2015 (BPT) - No two days are ever the same in the restaurant industry. Every hour new restaurants open, expand or franchise to meet the needs of their customers. Meanwhile, visionary restauranteurs are constantly creating new processes or taste sensations that create and respond to demand. To keep up in this industry and grow your market share, your restaurant must capitalize on
the latest trends. Restauranteurs looking for the latest trends in food should start with the National Restaurant Association’s 2015 Culinary Forecast, highlighting the year’s top 20 food trends. While the list itself includes a variety of tastes and considerations, four common themes exist throughout.

Trend one: Locally sourced products The popularity of locally sourced products has dominated the restaurant trends list for several years and does so again in 2015. Locally sourced meat and seafood tops the list, with locally grown produce finishing second. Hyper-local sourcing is seventh. If you’re a restaurateur who hasn’t yet made the push toward local sourcing, consider doing so this year; this trend won’t disappear anytime soon. Trend two: Environmentally conscious decisions The restaurant industry is going green to protect the environment that has provided it with so much. Environmental sustainability was the number-three trend on the 2015 list, while sustainable seafood and food-waste reduction/management finished eighth and ninth. Now more than ever, restaurants must strive for great taste

Trend three: Healthy options Restaurant menus are healthier now than they were a generation ago, and healthy menu options remain one of the top trends for 2015 with an amazing seven points among the top 20. Healthy kids’ meals finished fourth on the list, with natural ingredients and minimally processed food finishing fifth. Dietary restrictions saw non-wheat noodles and pasta take 11thand gluten-free cuisine at 12th. Whole-grain items in kids’ meals came in at 14th, while general nutrition and fruits and vegetable kids’ side items were 17th and 19th overall. Trend four: Creative flare and unique tastes Patrons are still flocking to restaurants to be amazed and delighted by something new. The top 20 list is loaded with food trends that center on new taste sensations, starting with new cuts of meat at number six. The classic taste of ancient grains comes in at number 13, while non-traditional fish and ethnic-inspired breakfast items are 15th and 16th. House-made or artisan ice cream was sweet enough to land at 18th on the list, while artisan cheese closes out the list at 20th. Like the restaurant industry itself, the top 20 trends for 2015 feature an intriguing mix of traditional mainstays and up-and-comers. Flavors across America Food inspirations across the country - what will be next? (BPT) - America is home to a diversity of flavors - each region of the country is known for unique dishes and flavors that people from all over the world flock to, to get a taste. America’s passion for flavor is not only shown through the variety of flavors found across the country, but also through the continuous evolution of regional dishes and tastes. Here are some favorite regional dishes and examples of how the tastes of each region are evolving: The Midwest The home of comfort food, the Midwest is not just the birthplace of some of the country’s favorite dishes - it’s a hotbed of creativity, often reintroducing classic favorites with contemporary twists. * Sauerkraut. Dating back to ancient China, sauerkraut is poised to make a bold comeback in 2015. This tasty fermented cabbage will be finding a place in soups, stews, dumplings, coleslaw and even smoothies. * Hot dish. The hot dish - a casserole-like dish has been a Midwestern favorite for generations and has evolved with the times. Traditional hot dishes fuse starches with meat and vegetables, but new hot dish flavors have been created to reflect popular tastes such as cheeseburgers and fries, pizza and cheesy bratwurst. The West From the Tex-Mex of the American southwest to the latest catch in California, the west is known to break boundaries when it comes to new flavor profiles. * The California roll. While sushi draws its origins from Japan, the California roll took sushi to a
whole new level. Created by Japanese sushi chefs who first arrived in Los Angeles in the 1960s, the California roll substituted avocado for tuna to create a healthier taste. The California roll continues to evolve as chefs use other fresh ingredients such as banana or mango to update this classic roll. * The chimichanga. The Latino population throughout the west coast and southwest have introduced amazing dishes that have become mainstream, such as the chimichanga. Though the actual inventor of the chimichanga is still widely debated, Arizona is commonly credited as the birthplace of this deep-fried burrito. The East Fare in the Atlantic region is very different from the Pacific’s cuisine, but it’s every bit as delicious. * Bone broth. Bone broth, a more substantial cousin to stock, has taken off as one of the hottest new beverages to take east coast foodies by storm. Made like a stock - simmering poultry, meat, or seafood bones with seasonings in water - this nutrient-rich broth is meant to be served like tea or coffee. * Manhattan clam chowder. Clam chowder is a defining flavor of the east coast but Manhattan clam chowder has a look and flavor all its own. A clear broth with the addition of tomatoes links the Manhattan clam chowder back to the Portuguese stews that inspired it. The South Southern hospitality and southern cooking go hand-in-hand. Here are a couple of staples that have become synonymous with southern states.

Casual Dining Etiquette By Sam Erickson
Very few restaurants these days would describe themselves as “formal.” Does that mean that every restaurant is the same? No, of course not. And casual dining is no reason to completely drop your manners and become a slob. What are the rules for casual dining etiquette? That really depends on your company and the restaurant, but here are a few tips that will see you through any dining situation. One of the very first things you’ll want to figure out is what “casual” actually means. For some, casual dining means fast food, while for others, it means business casual attire. The last thing you want to do is to be too casual in your dress or demeanor. This will also allow you to figure out about how much money you are going to spend. If you’re going with a group of friends, then you won’t have to worry about anything. It is still generally considered bad manners to answer your cell phone while eating. Even in casual dining restaurants, this can be an unwelcome distraction. Switch your phone off or to its silent mode when you sit down. If you have to take a call, the best thing to do is step outside, into the bar or into the waiting area. Of course, if you’re looking
for a friend, then keep your phone on until the whole party is together. This will allow you to pay attention to your party. It is still appropriate to put your napkin in your lap when you first sit down. If the server hasn’t yet dropped off the silverware, then you are off the hook, but as soon as it is delivered, the napkin should go into your lap. When eating at a casual restaurant, you don’t have to worry about ordering food you can eat with your hands, like cheeseburgers or fajitas. At fine dining restaurants, this is usually something you should avoid. Common appetizers don’t need to be spooned onto a separate plate. The communal feeling from communal plates might be exactly what you are looking for. At a casual restaurant, you don’t have to worry about which fork to use or what to do with those funny finger bowls on the table, but this doesn’t mean you should completely abdicate responsibility for having good manners or a little bit of etiquette. If you are with friends, you can be relaxed, but it’s a good idea to be more diligent when eating with colleagues or business executives or with new people. Your attention will pay off in the long run.

What has the restaurant industry talking tech? (BPT) - The restaurant industry is constantly evolving; new taste sensations are created, new restaurants open, and established businesses franchise. And while these shifts highlight the industry’s progress, they tell only part of the story. Like the rest of business world, the restaurant

Technologies that improve the customer experience * Point-of-sale (POS) upgrades. Ever heard of Scoutmob? If your restaurant is based in Atlanta or another major metro area such as Chicago, Boston or Dallas, you probably have. Scoutmob is one of several companies providing locationaware coupons to consumers over their mobile devices. The coupons are then redeemed at local restaurants. This new business channel has put more impetus on restaurants to improve their POS options to accept more payment types, particularly mobile payment options. Research from Hospitality Technology shows 56 percent of industry professionals surveyed said “enabling new payment options” was the most important business driver fueling their POS upgrades. The more payment options a consumer has, the more they will enjoying visiting your restaurant. * Punchcard. Punchcard rewards consumers for shopping local, a great innovation for restaurants. To use the Punchcard app, shoppers need only to take a picture of their receipt with the app to start a punch card for the business. As consumers continue to add punches through subsequent visits, they become eligible to earn free rewards. Restaurants offering rewards have a chance to showcase the promotion through the consumer’s applicable punch card. * Tabbedout. Tabbedout allows customers to pay their bill at restaurants and bars from their phones without having to wait for the check to arrive or worry about putting cash or credit cards out in the open. It also makes splitting a check
easy and users receive perks simply by using the app. Technologies that improve restaurant efficiency * Digital refrigeration monitoring. Temperature control is essential for any restaurant; especially when no one is at the restaurant during off hours. New technology has enabled remote tracking of refrigeration temperatures. Wireless thermometers, such as the Comark Wireless temperature data logger, are placed in monitoring position. The readings are transmitted via Wi-Fi to the restaurant’s PC or sent out via alerts and emails to assigned users.. This gives restaurateurs and kitchen managers the ability to track the temperature of their most important inventory and identify changes from anywhere. * Programmable equipment. Programmable equipment options are gaining popularity in restaurant kitchens because they lessen the opportunity for human error and increase the probability of delivering the right product every single time.
