How to Cook the [best] Nigerian Jollof Rice RawSpiceBar Spices Nigerian jollof rice is cooked in a flavorful tomato and pepper sauce and laced with heat of freshly ground red chiles from berbere spices.

Ingredients 2 cups brown rice 3 cups chicken broth or vegetable broth 1 medium-sized onion, chopped 2 tsp vegetable oil 6 ounces tomato paste 1 tsp RawSpiceBar Berbere Spice Kosher salt, to taste 2 tomatoes, diced 3 small red bell peppers, diced 2 cloves garlic

Directions 1.In a blender, combine tomatoes, garlic, onion and peppers and pulse until smooth. 2. In a saucepan, add oil, salt and puree. 3. Add the tomato paste and combine to cook and let brown, 6-8 minutes. Add broth and bring to boil. 4. Once boiling, reduce heat and cover pan. 5. Cook on low heat until rice is tender and liquid has been absorbed, about 25 minutes. Serve with garnishes of tomato & enjoy!
