AOCRA 2018 NATIONAL OUTRIGGER SPRINT TITLES

The Australian Outrigger Canoe Racing Association’s (AOCRA) National Sprint Titles are a flatwater outrigger canoe regatta held for paddlers from all states of Australia. As a pinnacle event in the Australian outrigging calendar, the National Sprint Titles hosts hundreds of competitors and encourages paddlers to compete in all disciplines, which include V1, OC1, OC6 and V12 races. This is an action packed three days held on Lake Kawana, Sunshine Coast. The Va’a World Sprint Titles held in May 2016 at Lake Kawana was a highly successful and premier international event which showcased Lake Kawana and the Sunshine Coast as a world class venue. eople who work more than 39 hours a week are putting their health at risk, according to new research from The Australian National University (ANU). The research shows the work limit for a healthy life should be set at 39 hours a week instead of the 48-hourweek limit set internationally about 80 years ago. Lead researcher Dr Huong Dinh from the ANU Research School of Population Health said about two in three Australians in full-time employment worked more than 40 hours a week, with long hours a bigger problem for women who do more unpaid work at home. “Long work hours erode a person’s mental and physical health, because it leaves less time to eat well and look after themselves properly,” Dr Dinh said. For women, Dr Dinh said the healthy work limit was 34 hours per week once their other commitments were considered. The healthy work limit for men was up to 47 hours a week generally because they spend much less time on care or domestic work than women.

“Despite the fact that women on average are as skilled as men, women on average have lower paid jobs and less autonomy than men, and they spend much more time on care and domestic work,” Dr Dinh said. “Given the extra demands placed on women, it’s impossible for women to work long hours often expected by employers unless they compromise their health.” The research used data from about 8,000 Australian adults as part of the Household, Income and Labour Dynamics in Australia (HILDA) Survey. Co-researcher Professor Lyndall Strazdins from the ANU Research School of Population Health said Australia needed to resolve some of the bigger problems that affect work and home life balance. “Australia needs to do more to change attitudes to work and to support men to take time to care without penalty or prejudice. Australians also need to dispel the widespread belief that people need to work long hours to do a good job,” she said. www.anu.edu.au/research

great potato salad should be part of every cook’s repertoire, but let’s be honest – not all potato salads are created equal. I prefer a tangy vinaigrette-style dressing laced with plenty of mustard, rather then a heavy mayo dressing. Plenty of herbs add a burst of freshness and I love to add crisp speck or bacon and soft-boiled egg too. Dress the potatoes while they’re still warm so they soak up as much of the flavour as possible.
PREPARATION TIME 15 minutes COOKING TIME 20 minutes, plus cooling SERVES 4 as a side • 600 g (1 lb 5 oz) scrubbed Kipfler or other salad potatoes, larger ones thickly sliced, smaller ones halved • 2 small French shallots, thinly sliced • 4 eggs, at room temperature • 110 ml (3½ fl oz) olive oil • 6 rindless streaky bacon rashers or • slices of speck • 1 garlic clove, finely grated • 1 tablespoon lemon juice, or to taste • 1 tablespoon red wine vinegar • 1 teaspoon Dijon mustard • 1 handful coarsely chopped flat-leaf (Italian) parsley • 1 small handful coarsely chopped dill • 1 small handful chives, finely chopped Combine the potatoes in a saucepan with plenty of cold salted water to cover generously. Bring to the boil over a medium–high heat and cook for 15–20 minutes until the potatoes feel tender when you pierce them with the tip of a sharp knife. Drain and return to the saucepan to steam, adding the sliced shallots so the heat from the potatoes softens them slightly. Meanwhile, cook the eggs in a separate saucepan of boiling water for 7 minutes (this is for soft yolks – if you prefer your eggs firmer, cook for another minute or two). Drain, refresh under cold running water and peel. While the potatoes are cooking, make the dressing. Heat 1 tablespoon of the olive oil in a large frying pan over a medium–high heat. Cut the bacon or speck into 5 cm (2 inch) lengths, add to the pan and fry, turning occasionally, for 2–3 minutes until crisp, then transfer to a tray, keeping the fat in the pan. Return the pan to the heat, add the garlic and remaining oil and stir for about 30 seconds until the garlic is fragrant. Remove from the heat, add the lemon juice, vinegar and mustard, season to taste and whisk to combine. Taste to check the acidity – you might want to add a squeeze more lemon, remembering the acidity will mellow once you’ve dressed the potatoes. When you’re happy with the balance, add the dressing to the potatoes, toss to combine and set aside to cool to room temperature. To serve, add the bacon and eggs to the potato mixture along with the herbs, toss to combine and serve at room temperature. 33

F I S H TACO S remember when tacos first came into the general consciousness in Australia when I was a kid – it was all about mince flavoured with premade spice mixes and sauces from a taco kit. Tacos are still popular at my place, but these days it’s about soft tortillas, tangy home-made salsas and crisp fried fish.
PREPARATION TIME 20 minutes COOKING TIME 20 minutes SERVES 6 • Vegetable oil, for deep-frying • 400 g (14 oz) skinless firm white fish fillets, cut into bite-sized pieces • Seasoned plain (all-purpose) flour, for dusting • 6 white corn tortillas • 150 g (5½ oz) white cabbage, shredded • Coriander (cilantro) leaves, lime wedges and pickled jalapeño chillies, to serve TOMATO SALSA • 2 tomatoes, diced • 2 spring onions (scallions), thinly sliced • 1 fresh jalapeño chilli, finely chopped • 1 garlic clove, finely chopped • 1 small handful coriander (cilantro) leaves, finely chopped • Juice of 1 lime 34
• 2 tablespoons olive oil • Pinch of ground cumin SOUR CREAM SAUCE • 200 ml (7 fl oz) sour cream • 60 g (2¼ oz/¼ cup) Greek-style yoghurt • Juice of 1 lime • Ground chilli, to taste BATTER • 1 egg • 150 g (5½ oz/1 cup) plain (allpurpose) flour • ½ teaspoon bicarbonate of soda (baking soda) To make the tomato salsa, combine the ingredients in a bowl, season to taste and set aside. To make the sour cream sauce, mix the ingredients in a bowl until smooth and combined, season to taste and set aside. Preheat the oil in a deep-fat fryer or large saucepan to 200°C (400°F). To
make the batter, whisk the egg until light and fluffy, then fold in the flour, bicarbonate of soda and 250 ml (9 fl oz/1 cup) iced water (the batter should be a thin consistency – add a little extra water if necessary). Season. Dust the flathead pieces in the seasoned flour, then dip into the batter, shaking off any excess, and carefully deep-fry in batches (be careful as hot oil will spit), turning occasionally, for 2–3 minutes until light golden and crisp. Drain on paper towels and season to taste. Heat a frying pan over a high heat and warm the tortillas in the pan for a minute on each side. Wrap loosely in a clean tea towel while you cook the remaining tortillas. To serve, fill each taco with some fried fish and shredded cabbage, top with the salsa and sour cream sauce and serve with a scattering of coriander, lime wedges and jalapeňos.

C H OCO L AT E C R E A M B I S C U I T S his is my homage to that great Australian bikkie, the Tim Tam. Although there have been all sorts of new flavours added to the range over the years, for me it’s all about the original version. Here’s mine.
• 160 g (5½ oz) plain (all-purpose) flour • 40 g (1½ oz/⅓ cup) icing (confectioners’) sugar, sieved • 40 g (1½ oz/⅓ cup) Dutch-process • cocoa, sieved • 80 g (2¾ oz/⅓ cup) unsalted butter, diced • 1 egg • 100 g (3½ oz/⅔ cup) each dark chocolate buttons and milk chocolate buttons CHOCOLATE CREAM FILLING • 100 ml (3½ fl oz) single (pure/ pouring ) cream • 80 g (2¾ oz/½ cup) dark chocolate buttons
Preheat the oven to 160°C (315°F) and lightly grease a baking tray. To prepare the biscuit dough, sieve the flour, icing sugar and cocoa powder into a bowl and add a pinch of salt. Add the butter, then rub in with your fingertips until the mixture resembles fine crumbs. Mix in the egg to make a dough, form into a disc, wrap in plastic wrap and refrigerate for 1 hour to rest. While the biscuit dough rests, make the chocolate cream filling. Bring the cream to the boil in a small saucepan over a medium–high heat, remove from the heat and add the chocolate. Stand for 5 minutes, then stir until the chocolate is smooth and combined. Refrigerate until beginning to firm, then transfer to a piping bag and set aside. Roll out the biscuit dough on a lightly floured work surface into a 5 mm (¼ inch) thick 20 x 50 cm (8 x 20 inch) rectangle, then cut into 4 x 8 cm (1½ x
3 inch) rectangles (use a ruler to help keep them even). Place the rectangles onto the prepared tray, bake for 10–15 minutes until crisp, then cool completely on a wire rack. To prepare the chocolate coating, melt all the chocolate buttons in a bowl over a saucepan of simmering water (make sure the base of the bowl doesn’t touch the water), stirring occasionally until smooth. To assemble, pipe the chocolate filling over half of the biscuits, then sandwich with the remaining biscuits. Dip each of the chocolate sandwiches into the melted chocolate, then place on a tray lined with baking paper until set. Serve with a nice hot cup of tea.

EXPAND AND ENLIGHTEN WITH TILES “When executed properly, patterned tiles can inject openness and light into an area – completely transforming an outdoor space. These can be added to garden beds, staircases, patio paving, flooring, fireplace designs and outdoor kitchens to create a beautiful and practical design feature,” says Matt. “These decorative tiles are best used in areas where the indoors meet the outdoors, especially in a dining area, bringing with them a seamless transition from the indoors to the backyard. “Whether Mediterranean, Moroccan or Californian, patterned tiles with simple designs are a great go-to for creating a statement look. Try picking out a pattern that incorporates white so that it will more easily match patio furniture, while still bringing a unique aesthetic to the outdoors.” INJECT COLOUR WITHOUT FLOWERS “Adding colour to the garden doesn’t always have to come in the way of annuals or flowers,” says Matt. “There are other ways to achieve this that require minimal garden knowledge and, better still, less maintenance.” “One area that is commonly forgotten, but frequented many times a day, is the front door. By adding a pot with some hardy, planted colour at your front door, you can create an amazing transformation with little effort. I suggest using a lightweight imitation concrete pot or low bowl as this will juxtapose with most styles of home. “There is an array of hardy, coloured foliage plants on the market, so the selection process can be tricky. Either choose two plants that contrast in colour and texture, or choose one plant and cover the pot with it. Keeping it simple will mean there is less likelihood of clashing colours.” OUTDOOR ZONES, FURNITURE AND FEATURES “The very first thing I do when designing a backyard is to imagine the family doing their favourite things outdoors,” says Matt.

“I then create specific zones for Outdoor copper shower each activity to add purpose to the space. Whether it’s an outdoor kitchen, a beautiful dining set, a fresh garden, or a small nook on the porch, these little spaces will combine to create a place where the family will actually prefer to spend their time.” “If you don’t already have one, I suggest investing in a timber deck,” suggests Matt. “It makes the yard a fantastic place to hang out with family and friends, plus naturally adds a homey feel. Creating different levels as well as zones in a yard will bring out those great spaces to relax. You can also try putting in square stepping stones, which are easy and instantly decorative. “Don’t forget about outdoor lighting – you’ll need task lighting around a kitchen if you have one, and dimmer, more relaxed lighting for the conversation areas,” says Matt. “Candlelight or fairy lights can add that little magic to make the backyard a truly inviting place. You can also create shady spots for daytime relaxation with mature trees, umbrellas, or pergolas. Pergolas look great with growing vines as well.” “A sunken lounge is also a clever way to make your garden space appear larger than it actually is – and they’re the perfect place for catching up with friends and family as you sip away at your favourite beverage,” adds Matt. “At the same time, they create privacy and intimacy, as they allows you to drop below the eye-line or fence line of neighbours.” A TOUCH OF COPPER “Placing a statement copper piece in your outdoor area adds character, charm and something unique to draw the eye to. In
particular, copper works well for light fittings, outdoor showers, fireplaces, water features and bespoke pots,” says Matt. “One of my favourite things about using copper outdoors is that it acquires a beautiful patina over time. This look works particularly well for light-fittings and shower heads, as the patinas allows them to subtly settle into the garden. “If the polished copper look is your preference, I suggest keeping copper pots and fittings under shelter so they weather more gradually,” says Matt. “Just about any plant looks good with cooper, tall leafy plants such as a Kentia palm, or fiddle leaf fig work really well. Silver foliage plants also contrast beautifully. For example, Kalanchoe ‘silver spoons’ have a really interesting texture and shape that offsets copper perfectly.”

DON’T RUSH DRYING TIME: Give it 10 minutes to touch dry, then wear loose, dark clothing and avoid tight-fitting underwear while the colour develops. Avoid washing hands as this will remove the self-tanner too.

WATCH THE CLOCK: Rinse off after 1 hour if you want a light tan, or leave on for up to 4 hours if you want a deeper bronze.

This is due to a tightly held market as property owners are spending on average, 2-3 additional years, owning their property therefore the number of property transactions have drastically dropped off as less properties are available to purchase for our buyers.
What a year it has been! Over the last 12 months, we have seen the Sippy Downs median sale price rise from $475,000 to an all time high of $490,000 based on relative market data. The market overall has risen by +6.6% making Sippy Downs one of the most highest performing market places on the entire Sunshine Coast.
We have experienced more and more Sippy Downs property owners holding onto their property for longer periods and capitalising on this strong growth. Despite all this positive growth, how long will things continue to improve? Many economists and experts alike, are predicting interest rates to start increasing throughout the year 2018. It would be inevitable that interest rates will increase, its just a matter of when not if. Once they do, how is it going to have an impact on our local market place, let alone the property market on a national scale. How is it going to affect property owners who can barely afford to maintain their current mortgage repayments? Just an increase in rates of 0.5% could have a detrimental ripple affect across the board.
Still today, Sippy Downs is one of the most affordable areas for property purchasers to get their foot in the door, as other surrounding areas continue to rise above and beyond the reach of young families and first home buyers chasing that great Australian dream of owning your own home. As you can see from the graph below, we have been in a recovery market since 2011 with both the median sale price and the number of sales steadily increasing month by month, year by year. However, for the entire 2017 year, we have seen almost almost 70 less properties come to the market compared to 2016.
Until this does happen, we will continue to ride this price wave and tackle the challenges we will face with rate spikes, as they arise in the future.
