Q: What is your favourite festive tradition?

THE COUNTDOWN TO Christmas is nearly over. If you’re a busy traditionalist like me, the thought of all the last-minute preparations might be just too much to bear. But put that aside, because there are already some extraordinary sales and events to be enjoyed in Brisbane; our city really comes alive during the festive summer season. This time of year, we begin to really focus on what we are thankful for: the people and moments that make us truly grateful. For me, this year has been about facing challenges and choosing to change along with this excitingly disruptive world and its creative outlets. Speaking of celebrating, our new issue is something to cheer about. Stylish Santa (formerly known as Lee Carseldine) is ensuring we survive Christmas the only way we know how… by shopping and shopping some more at Wintergarden. SHAPE SHIFTER Specialising in well-designed pieces with a touch of luxe, Nicole Banning of Ephemera elevates traditional swimwear silhouettes to a level of understated sophistication, writes Emmy-Lou McKean. What was the moment you knew fashion was something you wanted to pursue? I have memories of designing dresses from as early as eight years old and I was always interested in fashion. When I finished high school, I spent a year in London and that really cemented my love for fashion and desire to study design. The energy of the city and all the creative love that seemed to be pouring out of the city was so exciting to me. This was at a time before the internet exploded and access to this world was otherwise impossible from Australia.

What was your big move for your career? I moved to Paris in August 2010 [after studying Fashion in Sydney] and started working at Saint Laurent in October that year. It was really one of those “I’ll regret it if I don’t do it” moments where I knew I had to give Paris a go. At 28, I pulled the plug on a great job and a happy life in Sydney to try my chances in Paris.

How did your experience in Paris shape you as a designer? I always instinctively knew that there were things that I couldn’t learn in Australia and that I needed to go overseas to become a really wellrounded designer. My hunch was correct: my experience in Paris shaped me in so many ways. I spent a lot of time in the Italian and French factories, and talking with the various fabric suppliers in Europe. There is such a wealth of knowledge in the textile industry over there. I was constantly learning new things through dealing with our various suppliers. What inspired you to start Ephemera? From a design perspective, I was inspired to

clean up swimwear and offer some classic, no-fuss, well-designed swim pieces. On a personal note, starting Ephemera was about the desire to be creatively independent and also a lifestyle choice. I was fed up with nine-to-seven work and wanted to be the master of my own destiny. What inspired the Ephemera Cruise 2017 collection? The Californian desert was a big inspiration behind Cruise 2017. Your favourite piece from the collection? The Laced Back One-Piece is my new favourite in the collection. I’m a big fan of the bare back and the rhythmical lacing detail. READ MORE ONLINE

Whether it means decorating the tree, spending time with family or doing nothing at all, Christmas has a different significance for everyone. Hannah Doody finds out how four creative Australians celebrate the holidays.

Elyse Knowles Quickly becoming one of Australia’s favourite models, Elyse Knowles is known for her killer curves and impeccable sartorial choices. Named the 2016 Face of the Caulfield Cup, Elyse also has a secret passion for wakeboarding, skiing and motorcycling. What is one of your fondest Christmas memories? My fondest Christmas memory would definitely be waking up to a motorbike sitting in the middle of our lounge room. The three of us excited children went absolutely crazy – when we saw it, our eyes lit up and we haven’t been off motorbikes since! What does Christmas look like in your household? Absolute mayhem! Christmas morning always consists of mountains of wrapping paper all across the floor because Santa wraps our presents individually before he fills our stockings. After presents, we all come together for a lunch of love, giving and happiness – before round two with dinner!

Do you have any Christmas traditions? My mum loves to have all of us kids sleep at home on Christmas Eve so we all wake up together on Christmas morning. We all get together on Christmas Eve for a BBQ dinner outside and to watch Carols by Candlelight, but that usually leads to us wrestling and playing on the grass! When my sister was younger, she would wake us all up at six in the morning. Now that she is 19, she always sleeps in, which is perfect for payback! I wake up at seven and get a pot and pan before jumping on everyone’s beds to wake them up. There’s nothing that makes me happier!

Melina Marchetta Matt Okine Sydney-based author Melina Marchetta has penned several best-selling novels, including Looking for Alibrandi and her latest feat: Tell the Truth, Shame the Devil. Was Christmas a big family affair in your household when you were young? My mother is a North Queenslander, so we spent every second Christmas in Ayr. We would stay in my grandmother’s home and live in shorts and no shoes for six weeks. All my cousins lived in the same street and I just remember playing with them. Now it’s usually at one of my sister’s homes, my home, or my mum’s. It’s a lot of food, but not traditionally Italian food. My brother-in-law is Irish and part of our tradition is that my sister makes a Guinness stew the night before just so that he won’t get homesick! Do you have any other Christmas traditions? Growing up, there was no way we ever got out of midnight mass. I was brought up in a pretty Catholic household so that was pretty much the focus. And anywhere we went (whether it was a Sydney Christmas or a North Queensland one), it was almost a week of big, big, big family celebrations. Sometimes we look back on it now and think, “How did our mothers cope living with 60 people in the house?”

After three years presenting Triple J breakfast with Alex Dyson, Matt Okine is calling it quits to focus on TV, his music project Boilermakers, and his love of stand-up comedy. What did Christmas Day look like in your household when you were growing up in Brisbane? Because my parents weren’t together, I would spend the first half of Christmas Day with my dad, who would then drop me to Mum’s place. It would always be a very simple Christmas with Mum, my sister and myself. She used to make this French-style lemon chicken which, looking back, is so typically Australian. After Mum passed away, we would have Christmas at Dad’s. He is all about food. There would be a lot of seafood, prawns, and mud crabs if he’d been fishing recently. He would cook these peanut and spice-rubbed African kebabs called chichingas on the hibachi stove. Man, I have never given them to someone who hasn’t enjoyed them! Do you have any Christmas traditions? There were a few Christmas Days where I worked at a video store. It’s bizarre because a video store is pretty much the most unnecessary thing to be open on Christmas Day. The boss was adamant people would be scared to have their new releases overdue, so I would be the schmuck sitting by myself on Christmas. No one ever came in so I could do whatever the hell I wanted. The concept seems barbaric now, not to mention copping the fine if it wasn’t rewound! What is one of your fondest Christmas memories? My dad is from Ghana and I spent a Christmas over there about 15 years ago and we had a big, big family get-together. There are some traditions there that I’m not really across. At one point, one of my cousins had to come up to me at the table and say, “You know how you’re eating with your left hand? Well, you’re not supposed to do that.” It’s not about the kitschy, shopping sort of stuff; it’s more about family and tradition.

Alex Dyson After 10 years at youth radio station Triple J, three of which he spent hosting a breakfast show with Matt Okine, Alex Dyson is saying goodbye. From December 16, he will embark on a round-the-world adventure and attempt to ween himself off his addiction to new Australian music. You grew up in country Victoria; what did Christmas Day look like in your household when you were young? It was usually a very early morning because Santa would fill up a sack of pressies that were wrapped in butcher’s paper for some reason. I don’t know, maybe the ol’ fella just liked quality meats and had some left over to wrap up our board games. Anyway, then it was usually sunny so we went to the beach. Do you have any Christmas traditions? Hell would freezeth over before Dad didn’t cook some sort of roast from a random item that was on special at the supermarket. What is one of your fondest Christmas memories? I remember my sister and I got matching Mickey and Minnie Mouse raincoat ponchos. We wore them to the Warrnambool Lake Pertobe Adventure Playground, where we climbed over the play equipment looking very fly indeed. They were boiling, sure, but fly. 15

When asked how homewares measured up to her other passions, Bec got right to the point. “It has certainly replaced fashion,” she admits. While Bec’s summer collection with Adairs is not her first design venture, it has certainly been the most well-received, her signature style evident in its very stitching. What is the philosophy behind your company, Kinetic Etc.? Customers want more than to just look at a brand – they want to engage with it. We’re less about advertising in the traditional sense and more of what I call a branding and activation agency. We bring brands to life. What are some projects you have worked on with Kinetic Etc.? I’ve worked on over 300 different brands in my career, but the Teneriffe Festival is close to my heart. It is now one of the biggest street festivals in Australia with more than 50,000 attendees in one day. We won the Lord Mayor’s Best Community Event of the Year Award with the Cerebral Palsy League’s Picnic in the Park, delivered the Valley Fiesta for Brisbane City Council, and I worked on the YMCA’s Rat Race. How do you spend your spare time? I am lucky enough to have three beautiful women in my life:

my wife Shiralee and daughters Skye and Lily. I have also played a lot of top-level sports in my life, and one day I decided I wanted to do boxing. After five years and three amateur fights with the Boxr team in Teneriffe, I have found it was the most physically and mentally challenging sport. What is your favourite place to eat in Brisbane? My wife and I love going to Jellyfish on Eagle Street Pier for a big dinner, but for a quick coffee and catch-up, Harveys on James Street is where I spend a fair bit of time. What’s next for you and Kinetic Etc.? Kinetic’s next major event activation is the Brisbane River Jazz Festival, held near the Gasworks Precinct in March 2017. They come in all shapes and sizes and the BMW X1 is one of the smallest – which is why I love it. It is manoeuvrable and easy to drive around the city. My overnight test drive from Westside BMW gave me a firsthand experience of what it would be like owning this majestic vehicle. There is plenty to like about the BMW X1; as much effort is put into the entry-level model as is put into the top-shelf model, which is a rare find. I test-drove the latter, with all the bells and whistles. While there was so much to love, a few key elements stuck in my mind: the superior finishes and reliable performance; the alerts on the steering wheel; the soft drive. 26

The generous serve of features was reinforced with adjustable suspension, active cruise control, sports seats, digital radio and panoramic sunroof. I couldn’t even begin to enjoy all this car’s features in my short time but I made the most of it. What is noticeable from the start is the superb handling of this medium-sized car, as well as the 2.0 litre turbo-charged four-cylinder engine with a matched eight-speed gearbox. It is said to go from a standstill to 100km/h in 6.5 seconds. I didn’t have the opportunity to try the sprint for myself but I have no doubt that the vehicle willingly meets it. This new model incorporates more interior and trunk space, and this only adds to the fierce drive. The dashboard is attractive, built out of decent materials, and is extremely well laid out for all lifestyles, even the busy ones.

The BMW menu system is super intuitive and easy to get your head around on the go, and the centrally-located screen is at just the right height for your needs. GOMA TURNS 10 Celebrate 10 years of GOMA from December 3. GOMA’S 10TH BIRTHDAY is being marked with a summer jam-packed full of exhibitions – and there’s something for everyone. The largest of these exhibitions is Sugar Spin: You, Me, Art and Everything, which features more than 250 contemporary artworks exploring light, space, architecture and the senses. Sugar Spin will feature major new commissions, including Nervescape 2016, a large-scale multicoloured landscape of synthetic hair by Icelandic-born, New York-based artist Hrafnhildur Arnardóttir. This will be her first work in Australia and the largest in the world to date. Other highlights include Carsten Höller’s Left/Right Slide 2010, which will spiral visitors from the top to the bottom of GOMA, Ron Mueck’s oversized In Bed 2005, and Olafur Eliasson’s interactive installation of thousands of white Lego pieces, The cubic structural evolution project 2004.

Proud of the 10-year milestone, QAGOMA Director Chris Saines CNZM said this is a time to reflect on GOMA’s impact locally and nationally, and to look toward its future. “GOMA has been a force for cultural change, stimulating our appetite for contemporary art and ideas. I WAS RECENTLY given the opportunity to take the new range of Audi A3 models for a drive. Setting off with a fleet including the new Audi A3 Sedan, A3 Sportback, A3 Cabriolet and S3 Sportback, the Audi A3 Sportback E-tron and the impressive Audi RS 3 Sportback really does make you feel incredibly important. The experience placed an emphasis on control and dynamics, making me aware of things I would never usually notice while driving. The Audi Drive Day does not push you to your limits; there’s no skidding or screeching tyres. This fun day was focused entirely on the Audi lifestyle and the leisure that the brand effortlessly evokes. The luxurious drive through the countryside of Samford and up Mt Glorious to a picturesque lunch spot at Ocean View Estates Winery & Restaurant 40

was exceptional. There were five stops along the way, giving everyone the opportunity to change to a different vehicle to test out the speed, agility and unique features of each car in the fleet. Every changeover stop got more exciting, the roads became more of a challenge, and the chatter increased as each person fell in love with a model. Audi’s ability to combine understated elegance with power, technology and luxury is what makes it so sought after as a brand. There was a feeling of luxurious quality across the entire range, with clever design features, soft-touch surfaces and leather that was to die for. The RS 3 Sportback was an obvious front-runner due to its power, quick gear change and incredible sports appeal. In close second was the new A3 Sedan and the A3 Sportback E-tron. The A3 is a

perfectly-balanced car: a four-cylinder engine and seven-speed dual clutch automatic. The A3 E-tron, on the other hand, is a pleasing combination of hybrid and hatchback. Roomy enough for everyday tasks, the six-speed automatic boasts a four-cylinder 1.4 TFSI engine and an electric motor that allows the car to drive up to 50km without touching the fuel tank. The Audi Drive Day heightens your appreciation of luxury and allows you to explore performance on a new level. According to Chief Driving Instructor Steve Pizzati, many car enthusiasts will tell you they’re pretty good drivers and most are wrong; a statement with which I truly agree. Maybe it’s all the festive cheer in the air; most people are on holidays, families are coming together and everyone is celebrating. So why not add another amazing celebration to the list? The advice that I often give to guys is that it is better to have the engagement ring and not need it, than to need it and not have it. On many occasions, a groom-to-be has told me that he intends to propose in the next six months, only to frantically call me two weeks out from the day, needing that perfect engagement ring crafted. So if you know you’re a procrastinator, or even if you just like to be spontaneous, don’t wait until it’s too late! Start planning for your engagement ring to make sure it’s ready in time for the holiday season. That way, if the perfect moment presents itself, the only thing you will have to think about is how to pop the question. If you’re ready to have that ring made, pop in-store today.

WHEN I HELP my career coaching clients narrow down their reasons for feeling like they’re in a career rut, the cause is usually that they are not exploring their full potential. Often, I see people avoiding these questions and focusing on other areas of their life to gain fulfilment. Staying in your comfort zone and working without change is guaranteed to hold you back in your career. But discovering your natural genius zone is easier than you think. If you spend your days doing something you excel at and enjoy, it won’t feel like work. And if you get paid for it, well, that is a ticket to a passionate career. People who are stuck in a rut can also be stuck in their heads and tend to over-think without action. Writing down your strengths and weaknesses is a great tool to help discover how to challenge your career direction.

Visiting a centre is the best way to meet the key educators and learn more about their approach to learning, daily routines, and facilities. It’s normal to have questions as you consider care for your child. After all, you need to be comfortable with the choice you’re making.

GQ MAGAZINE RECENTLY noted that wearing cufflinks at work is an unfashionable ’80s hangover: it’s the era of the button cuff now. This is a revelation for some men, as wearing cufflinks helps them feel more distinguished. The button cuff is traditionally the working man’s cuff as it’s easy to fold up to get your hands dirty. Button cuffs are also popular because they are quick and easy to fasten, lightweight (no doubling of fabric like the double cuff) and easier to use at a computer. Here are some tips to ensure you use the button cuff correctly: • The cuff must be well-fitted, with generally only half an inch allowance. • Tailored cuffs with one cuff will accommodate your watch. • Ensure 1cm to half an inch of the cuff is showing under your jacket sleeve. Three common styles of cuff are the button, rounded, square and corner cutaway. My preference is the corner cutaway, closely followed by the round cuff as I like sharp lines.

YOUR CHRISTMAS TABLE can really set the tone for your festivities. This season, it’s all about simplicity, with metallic accents, warm fairy lights and candles. Plan your table setting before you start decorating, keeping in mind the layout and function. Create a focal point in the centre and develop the style of table around this. Invest in good quality, simple basics such as an oversized white tablecloth, elegant dinner sets and glassware. Bring interest to the table by incorporating metallic cutlery and black granite, slate or marble serving boards. Table settings make more of a statement with repetition, and the layering of textures with glassware, cutlery, plates and platters will always bring contrast to the table. The most important thing to keep in mind is to avoid over-styling! We’re bombarded with inspiration, and people often try to incorporate too many different looks, Christmas styles and decorations. Decide on your theme first, and stick to it!

MY CULTURE INVENTED the word vendetta, which represents the worst of people exacting revenge. In my field of work, I often deal with people who have been wronged by a person or organisation and have feelings of loss, anger, sadness, and guilt. Some find it hard to let go of what happened. Instead of choosing to embrace forgiveness, they allow these harmful feelings to consume them and take over their lives. Choosing to forgive someone can be tough because it can look like you are okay with what happened, and are willing to accept less for yourself, or let the person get away with it. But this is rarely true. Holding on to unproductive feelings tends to have a worse impact on you than it does on the person who has wronged you, and it gets in the way of moving on. Consider forgiving someone not because they necessarily deserve it, but because you certainly deserve some peace. Remember, life becomes easier when you learn to accept the apology you never got.

FINELY-TUNED Allium is plating up imaginative dishes and making fine dining more approachable, writes Christie Sutherland. THE NEW FARM space that formerly housed The Foraging Quail has been transformed into a relaxed fine-dining destination. Created by James and Kylie Gallagher, Allium showed absolute dedication to excellent service and perfectly-executed meals during our visit. Head Chef James Gallagher and his team source fine produce and present it in innovative and comfortingly familiar ways. The menu focuses on seasonal, locally-sourced, slightly-left-of-field and sometimes luxurious ingredients. The interior is minimal but not stark, with the focus remaining on the open kitchen and a chunky bar. The intimate setting is refreshing and showcases a suburban feel. Silence fell when the chef’s taster arrived at our table. The chicken liver parfait, passionfruit and pain d’épices were a work of art on the plate. The dish was melt-in-your-mouth delicious, managing stylemagazines.com.au

to be delicate and decadent all at the same time. From there, we moved onto a palate-cleansing kingfish paired with cucumber, apple and dill that nearly had me licking the bowl. It was in that moment that I understood the relaxed fine-dining atmosphere that Allium evokes. With our mouths ready for every bite to follow, the Wagyu inside skirt arrived, paired with caramelised onion, miso eggplant and black garlic. The butternut squash tortellini, Taleggio and walnut pesto quickly followed. Our minds were blown. The meltingly-tender Wagyu was filled with huge flavour from the surrounding accompaniments and the Taleggio bursting through the tortellini was close to one of the best things that has entered my mouth. Perfection on a plate. The few dollops of smooth baked potato puree and grand cru butter had us surprisingly comforted. When eating such a diverse range of dishes,

it’s not always practical to pick a single bottle to rest on for the whole meal. Thankfully, it was easy to choose a suitable glass for each course from the wine list. Desserts featured a plethora of chocolate, meringue and sweet fruit finishes. It was a difficult choice but the lemon meringue with brown butter, fennel and mascarpone won me over. We are undeniably spoilt for choice when it comes to eating out, but there are a few local spots that are unparalleled in their innovative ideas that continue to challenge the conventional food experience. JAKE NICHOLSON OF BLACKBIRD What is your signature boundarypushing dish? I make a “silk purse” from a sow’s ear. I slowly braise the ears before, filling them with a chicken mousseline, packed with garlic and brown butter. It’s then steamed, crumbed and fried;

I haven’t met a person yet who doesn’t say it’s delicious. JOSUE LOPEZ OF GOMA RESTAURANT What are your expert tips on plating up a dish? Even after years of experience and having a vision, I often attempt a few ways of plating for every dish, trying different angles and thinking about what I am trying to convey. It is important for me to celebrate the natural form of each ingredient and present them in a very organic way. Whether it’s a cheese platter, fruit platter or a cold meat platter (or all three!), you can’t put a foot wrong, especially if cooking isn’t your forte. “I can’t cook – I like to buy good products, take the lid off and put it all together,” says Peter.

Here are our top tips to keep your hair looking fresh in summer: • Hot weather leads to lots of swimming, which tends to make blonde hair go a little brassy so it’s important to invest in a blonde shampoo. • Olaplex is the absolute go-to product! Once a week, leave this bad boy in your hair overnight and in the morning your hair will feel better than it has in years. • Can we talk about split ends? Regular trims will stop your hair from splitting higher through the hair shaft. Plus, it looks so much healthier! • As the weather gets warmer, so do the tones in our hair. Colour trends for this season are golden and warmer browns. And for blondes, keep it creamy not ashy. • For the guys, try putting subtle highlights through the top of your hair to add dimension. It’s 2016 and totally acceptable for guys to have colour in their hair.

TRIMMING THE EYEBROW may sound fun, but it is just one small slip away from a disaster! These days, I see plenty of girls on Instagram snipping away at the hairs until there is nothing left. While this may work for some, it is an unrealistic expectation for so many women who don’t have a thick enough brow to cut away. Be careful of brow salons who take to trimming every brow they see without consulting the client. If you got a bit carried away with the tweezers (or the scissors), the Brow Rehab program may take some patience, but the outcome is long-lasting and incredible to see. INTO THE BALTICS Think “former Soviet” means dull and grey? Think again. Hannah Doody explores the gritty, forgotten charm of Estonia. FROM THE MOMENT the hostelworker told us about Rummu, Jaime and I knew we had to get there. Part of an abandoned Soviet prison an hour outside Tallinn (Estonia’s capital), the limestone quarry of Rummu is now half-submerged, making it a popular swimming spot for locals in the summer. There was only one problem: it was on private property and only possible to access on foot. It didn’t take long for Jaime to persuade two young guys from our hostel to drive us there. The guys were from France and Canada respectively, and they seemed trustworthy enough. So we stocked up on snacks at the supermarket, plugged the address into Google Maps and set off in search of Rummu. The rugged green meadows whipping past the car window were mesmerising. Some might say the Estonian landscape is bleak and harsh but to me it’s full of intrigue. We arrived at a road with a barbed wire fence with some parked cars alongside it. Climbing through a hole 82

in the fence, we waded through the thick vegetation until we reached a clearing – and the view was surreal. The limestone mound spills down to meet crystal-clear water. Dilapidated, abandoned buildings that would have made up the old prison emerge from the water and surrounding trees. We wandered in and out of the abandoned buildings, admiring the colourful graffiti on the walls as we imagined what this place would have been like so many decades ago. This was just one of many bewitching episodes on my trip. Everything felt so removed from anything I had experienced before. Fusing medieval and modern, Estonia has an allure all of its own. This is a country where brutalist Soviet architecture and romantic Art Nouveau buildings stand alongside glass skyscrapers and shiny shopping districts. Once you have a taste of the nightlife, rich history, cultural meltingpot of cuisines and untouched natural beauty of Eastern Europe, it never stops calling you back.
