From The Publisher Something always feels good about bringing in a new year. We reflect on the past year, and look to the future new year with hopes, dreams and goals. Sometimes we just say “phew” we made it through that one, and other years we Jean Van Kleek say “wow” that was the best year ever. Whatever Photography: Jen Alston the case may be, it feels good to know that we got through the year intact and look forward to more adventures.

As Quirk Magazine enters its third year of publication, we are very excited over the response we have received from readers. We have received several emails from people in other parts of the province as well, who either saw the magazine online or had the magazine sent by family. All of these e-mails have expressed surprise in what our city has to offer. And we do have a lot to offer!

Quirk’s goal for the new year is to continue to surprise readers about our area and the talent that resides here, be it in the arts, business, or every day heroes.

The practice of reflection that happens as the year turns to new,

is never lost on me. Some years the momentum of a desired change lasts longer than other years, but I find it's always worth having a look at what's working in my life and what's not.

This past year held many challenges that have stretched my coping mechanisms to the limit.

When this happens, I cope in ways that ultimately prove more harmful than good and I find myself falling into old patterns of unhealthy behaviors that I had worked hard at vanquishing.

This is when I need to surrender to the forces in the universe that are trying to move me in a new direction, bringing new people and experiences into my life.

I booked the trip so quickly that I had forgotten what time of year it was. It had barely been a week since I sat down with the travel agent about going to Europe. But the plans were set and I was going to spend the latter part of November travelling by planes and trains across the beautiful continent.

Christmas had certainly not crossed my mind. I had been dreading it all year.

Four years ago, my Mother passed away two days after Christmas due to cancer. Being an only child, it was hard, but my Dad and I did the best we could to move forward. We would especially lean on each other during the holidays. But last year, one week before Christmas, he lost his battle with cancer, leaving me to figure out things for myself. So I can tell you this year has been full of heartache and spontaneous trips. And no part of me wanted this time of year to arrive. I mean, what do you do when a holiday about celebrating family is all around you and you simply canâ&#x20AC;&#x2122;t be with yours? In the midst of planning this adventure, I guess I just forgot about these feelings and the holidays in general. But when I stepped foot outside Amsterdam and saw trees completely decked out with tinsel and ornaments, I suddenly remembered what time of year it was. And so began my unintentional yet essential Christmas trip across Europe.

So it turned out to be a fun filled and enjoyable event that hurled me into the Christmas spirit.

Now, I have a Dutch background so I knew some of the customs, foods, and even a couple words. Dutch Christmas traditions were no exception. Amongst the famous “coffee shops” and Red Light District windows was a large city square where friends and families packed the streets. It just so happened that on the second day I was there, the kickoff to Sinterklaas (Sinter-Clause) was being held. This Dutch holiday takes place on December 5th when Sinterklass and his workers called Zwarte Piet (or Black Peter) come and bring candy and gifts for children. Though some labelled the tradition racist due to the black face make up and allusions to slavery, all I could think of was my childhood. I was taken to a similar festival right here in Lethbridge when I was around five years old. My Dutch grandfather told me that the henchman, Black Peter, take the kids who have been bad all year, put them in a sack, grind them up into candy, and serve it to the good kids. Of course I believed him so I was terrified for the entire night, thinking that I was going to be made into candy. They gave me some instead, but of course, I didn’t eat it. So all my life I had been afraid of this Dutch holiday. But there I was in Holland, watching 100 Black Peter’s sing Dutch Christmas carols, play guitar, dance, and scale rooftops for dramatic effect. And to top it all off I got to enjoy my favorite treat Olliballen, which I can only describe as the Dutch version of Tim Bits. So it turned out to be a fun filled and enjoyable event that hurled me into the Christmas spirit. I think it’s also safe to say my childhood fear of being made into candy is now long gone too!

After five days in Amsterdam, I took the train to Munich, Germany. Now let’s face it, I’m twenty-one. I was mostly in Munich to drink their famous giant beers. That’s what Munich is widely known for; Oktoberfest and large beers! But after I arrived, I discovered that next to my hotel was a Christmas market full of people selling food and decorations. And instead of beer, during Christmastime, people drink Gluhwien (GlueWine) which is basically hot wine. You could get it in red or white and wow, all I can say is it was delicious. It really warmed you up on a cold day!

Speaking of cold, I took a day trip to the Bavarian village called Fussen. Nestled in the heart of the mountains, Fussen was blanketed with snow and really gave off the Christmassy vibe with its cozy little homes and shops. It seemed like a place that would only exist of a Christmas Special on TV. Neuschwanstien Castle overlooked Fussen, it’s lake, and all the frosted forest trees that surrounded it. This must see excursion was what every place in the world should look like during December in my opinion.

The taxi driver that picked me up in Vienna asked me what my favorite part of my holiday had been so far. I responded with “the Munich Christmas Market.” He scoffed at my answer and said Vienna has the best in all of Austria and Western Europe… and he was right! Miles of wooden stands lined the streets and parks. Each one sold some kind of ornament or clothing. And the food! Oh the food was incredible! Loaded baked potatoes, soup in a bread bowl, sausage, Wiener Schnitzel, and anything you could ever want covered in chocolate! And of course, every second stand served Gluhwien! The trees were decked out completely with lights. Snow covered the ground. Music filled the air! It was the best festival I had ever seen! I was finally truly embracing Christmas!

So getting to see the Do-Rei-Me Steps, the Von Trappe House, and even the Gazebo where they sing “Sixteen going on Seventeen” brought a big smile to my face.

Finally, the last place I went to see was the city of Salzburg. You recognize that name because every year at Christmas, The Sound of Music comes on TV. Salzburg is where that film takes place.

Though the movie has nothing to do with Christmas, it always seems to come on during the season and bring families together.

My household was no exception. So getting to see the Do-Rei-Me Steps, the Von Trappe House, and even the Gazebo where they sing “Sixteen going on Seventeen” brought a big smile to my face. So

this year when it comes on during Christmas Eve I can shout “I was there” at every single scene. And of course Salzburg was a beautiful city full of snow, markets, and yes, Gluhwien.

So in the end, when I came home, I found myself excited for Christmas. I was no longer dreading it! During the trip I kept seeing things and thinking “Oh my Mom would have loved this” or “my Dad would have gotten a kick out of that.” Still having the ability to recognize those things gave me joy. I do have great memories of wonderful Christmas’ spent with my parents. But now I have incredible memories of Christmas in Europe too! Though the holidays are still not easy for me, I am glad I was able to do my own thing and maybe start a tradition. Maybe I’ll check out Christmas in another country next year? Who knows! All I can tell you is if you have lost someone and you’re finding this time difficult, do your own thing and find what works for you. I stumbled onto these events purely by accident and now this time of year doesn’t seem so hard. If you get out there and try something different and new, who knows what you’ll discover. I discovered a beautiful trip of a lifetime. And I knew in my heart my parents were there with me, sharing in the festivities and drinking a glass of Gluhwien every step of the way.

Deep, rich, hedonistic lasagna crowded with tender chicken, garden fresh asparagus and zucchini, oozing with the smooth decadence of buttery hollandaise, melty mozzarella and tangy nutty asiago. Oooh la la!

Precisely how "Death to Dieters Chicken Lasagne" became The Last Wonton's oft and heartily requested,

I felt the need to let the inner foodie in me run wild, architecturally creating new layers, using more noodles and a few zip, zaps of flavour enhanced ingredients until I hit paydirt with more mmmm's per mouthful than ever before.

So, by very popular demand, here it is, one of the recipes I get asked for more than any of the others.

DEEP-DISH DECADENT CHICKEN ASPARAGUS -

LASAGNA

2 tablespoons olive oil 1 tablespoon butter 1 large Vidalia, Walla Walla, Maui or other sweet onion, chopped 3 cups zucchini, cut in quarters lengthwise, then sliced into about 1/2-inch thick pieces - 1 teaspoon dried basil - 1 teaspoon dried oregano - Sea salt and freshly ground black pepper - 2 packages Knorr Hollandaise sauce, prepared according to package directions (with butter and milk) -

4 tablespoon butter 4 tablespoons flour 2 cups milk 1 tablespoon Worcestershire sauce 1/2 cup grated Parmesan cheese Sea salt and freshly ground black pepper

- 2 good size bunches fresh asparagus, about 3 pounds total, cleaned, bottoms broken off - 3 whole boneless, skinless chicken breasts, cooked and fairly thinly sliced - 1 pound full flavoured Mozzarella cheese, cut into tiny cubes - 1/4 pound Asiago cheese - 1 pound package lasagna noodles, cooked just barely al dente, rinsed with cold water

RECIPES I like to make this lasagna the day ahead and refrigerate overnight so I'm ready to go on dinner party day. So I cook and prepare the ingredients for the various layers and let everything cool to room temperature before putting the lasagna together. Works like a charm every time.

Heat olive oil and 1 tablespoon butter in a large skillet over medium high heat.

Add onions and saute for 5-10 minutes until softened and starting to get a good caramely colour. Toss in zucchini, basil, oregano and salt and pepper to taste, stirring to combine. Saute another 4-5 minutes. Remove from heat and set aside.

Melt 4 tablespoons butter in a medium pot over medium high heat. Stir in flour and let bubble for 1-2 minutes, stirring.

Whisk in milk, reduce heat to medium.

Stir or whisk until bubbles just break the surface and mixture has thickened. Add Worcestershire sauce, grated Parmesan and salt and pepper to taste. Stir to combine, remove from heat and set aside.

Steam or blanch asparagus for about 4 minutes until just al dente.

Rinse immediately with very cold water to stop the cooking. Drain well. Set aside.

This lasagna is 'high', so you need to use a deep (high edged) approximately 9 x 13-inch (4 litre) baking dish or roasting pan. Smear a small amount of the Parmesan white sauce over the bottom of the dish and place a layer of noodles on top. Cover with half of the chicken pieces, half of the sauteed veggies and half of the mozzarella cubes. Top with another layer of noodles, then half of the asparagus and half of the hollandaise.

Repeat these 2 layers, topping with another layer of noodles. Smooth the remaining Parmesan white sauce over the top layer the noodles and sprinkle evenly and generously with grated Asiago. Refrigerate overnight or until ready to bake.

One of the greater charms of childhood has got to be nosing through the many cupboards and drawers at Grandma’s house – oh with her permission, of course. Nothing is quite so delightfully unusual as the bits and pieces of a couple of generations past.

or me it was my Granny’s dressing table with its little brooches and mirrors and tiny enamel pillboxes. And for Bonny Dolbec it was her grandmother’s china cabinet and stacks and rows of beautifully patterned dishes. The magic of vintage lies not in the dry history of books or the impersonal glass-cased history of museums, but in the tangible history of homes and families: the magic of a shared life’s story that keeps on going, whether you’re the grandparent, or the grandchild. And it was magic that Bonny was aiming for when she opened her shop, Antique & Vintage Charm, in the heart of downtown Lethbridge.

Based in Canmore Alberta Canada, recording artist Marion Walsh has sung her way across the US & back again, nestling her way into Canadian territory where this incredible Folk/Americana songstress now calls home. Through her travels, in & around Lethbridge & Calgary, Marion has found inspiration in the local beauty of her new found homeland through the mountains, the rivers, the oceans & through everyday people she has met along the way.

Living in southern Alberta, she finds peace and solitude and her creative musicality has never been more enticed.

As a young child, Marion recalls listening to a capella music, which enticed her senses through her father, who was a music director for several groups in her hometown of Owings Mills, Maryland. So, from the time she was five years old & until she left for college, Marion found these four-part harmonies as compelling as sledding, raking leaves, and catching fireflies. “My head can be a very noisy place!” says Marion, who has two full-length original CD’s to her name. “Home to Home,” released in 2005, and “Early,” released in 2009.

After years of promoting back to back single releases to International radio, Marion has left her mark within the global markets. A legacy she can be proud of. "This talented lady knows what she wants and goes after it with a vengeance. Not only is she a brilliant vocalist and songwriter, but she is a strategic planner as well, with the personality to match." says world renowned publicist Danie Cortese, known for having worked with Emmy & Grammy winners.

An intuitive and spontaneous composer, Marion feels that her inspiration isn’t complicated. Available Light Use the camera meter to help you decide what you want to see in your photo. I kept the ISO at 400 to give me enough light to not need a tripod. The exposure allowed enough light to pick up details throughout the image. There was just enough depth of field to keep objects in the background recognisable while keeping the store owner in focus as the main subject. After touring the store I asked the owner if I could make a photograph with her in it.

The Lions Foundation of Canada Purina Walk for Dog Guides has been held annually in Lethbridge since 2002 and Bill Brown's enthusiasm is a driving force behind the continued success of this event. The Lethbridge Dog Guides Walk is one of the top money raisers in Canada and to date has raised a substantial amount for the Dog Guide School. With the addition of Skyla and Crumpet, there are now twelve Dog Guides in Southern Alberta, including two Autism Assistance Dog Guides. A Seizure Response Dog Guide is scheduled to arrive before the end of 2013.

The Lions Foundation of Canada is a national charitable foundation created by Lions Clubs across Canada. Its mission is to assist eligible Canadians with a medical or physical disability by providing them with Dog Guides at no cost, and has been providing this service, coast to coast since 1983.

Lions Foundation of Canada Dog Guides does not receive government funding and relies on the support of fundraising events and donations from service clubs, corporations, foundations and individuals across the country.

The School offers Dog Guides trained for six specific conditions:

Canine Vision Dog Guides - trained to assist people who are blind or visually impaired. These Dog Guides help create an increased sense of mobility for their handler.

Hearing Ear Dog Guides - trained to assist people who are deaf or hard of hearing. These Dog Guides are taught to alert their handler to important sounds, make physical contact with their handler and lead them to the sound. They will also respond to hand signals if handles uses sign language.

Special Skills Dog Guides - trained to assist people with a physical disability, helping increase their sense of independence and mobility on a daily basis.

Seizure Response Dog Guides - assist individuals who experience frequent epileptic seizures. Trained to recognize and react to the onset of a seizure.

Autism Assistance Dog Guides - helping children with autism spectrum disorder by providing safety, companionship and unconditional love

Diabetic Alert Dog Guides - assist people who have Type 1 diabetes with hypoglycemic unawareness. Trained to detect sudden drops in their handler's blood sugar through scent and alert them so they can ingest something.

The date for the 2014 Lions Foundation of Canada Purina Dog Guides Walk in Lethbridge is May 31st. Everyone is welcome to participate.

Guiding the WayA New Beginning

for Skyla

A recent trip to Oakville, Ontario was a life changing one for the Greening family of Coaldale. They arrived home with a new addition to the family. An addition that came in the form of a Standard Poodle named Crumpet. Sklya, her mother Gloria, and Crumpet arrived at the Lethbridge airport November 22 to several media waiting to speak with them. That is because 13 year old Skyla is the youngest recipient in Canada to receive a guide dog for the visually impaired from the Lions Foundation of Canada Dog Guides School.

Tony and Gloria Greening wanted to give Skyla every opportunity to live her life fully, so began the search for a Service Dog some time ago.

During that search they learned that the only suitable breed as a service dog for a family with allergies would be a Standard Poodle. This breed is hypo-allergic and an ideal companion for people with allergies. They had applied to several organizations that provide Service Dogs and were eventually contacted by the Lions Foundation of Canada Dog Guides School, Canine Vision Canada Program, with the offer of a Standard Poodle.

applied to the school several months ago and later had a home visit from a trainer who would be the one to decide if Skyla would be a good match for a guide dog. Once suitability is approved, nothing is certain until graduating the program at the Oakville school.

After a month of intensive training in Oakville Gloria says, "Skyla and Crumpet are already starting to be in sync". As the lessons progressed, Skyla and Crumpet spent more and more time together. Just as Crumpet is responsible for taking care of Skyla, Skyla is responsible for taking care of Crumpet in a newly formed relationship that will bond the two of them for many years.

There is much work still to do in terms of getting Crumpet used to her new environment and introducing her to the community, but this new "dynamic duo" who wear matching pink hair clips, are off to an excellent start.

Crumpet has opened up a whole new world for this young girl. A world that includes being able to do things and go places on her own for the first time. In the short time that Skyla and Crumpet have been together, Gloria says that they are already witnessing positive changes in Skyla in the areas of responsibility, confidence and independence.

Skyla is a grade 7 student in a Coaldale school where Crumpet also will be - from the bus trip to the classroom and beyond. Gloria, too, will be attending in the beginning to assist them, but also to teach the other students and teachers about proper etiquette towards a Dog Guide. When Crumpet is wearing her harness, she is in WORK mode and neither she nor Skyla are to be touched by others.

In the spring of 2013, the Greenings learned about an annual local event that raises money for the Dog Guides School, the Lions Foundation of Canada Purina Walk for Dog Guides, hosted by the Southern Alberta Lions Clubs. Within a week-and-a-half, Skyla raised close to $5,000.00 in pledges. Her oldest sister, Shawna Brackley, was a huge help with her Social Networking skills.

The Greening family and friend, Shelley, attended the Dog Guides Walk wearing their bright yellow "Team Skyla" colors. It was at this walk they met Bill Brown. Bill has been a Lions Club member since 1976 and like Skyla, was born with a visual impairment. He has been partnered with a Dog Guide for several years and is currently paired with a Standard Poodle named Jax. The Greenings have had many conversations with Bill since then, and Gloria says he has been a tremendous support since they met. He greeted them at the airport, assists them with any questions they have and has played a pivital role in helping the family throughout the process.

Gloria expresses much gratitude to everyone who helped make it possible for Crumpet to be in Skyla's life. Dogs are provided at no cost to qualified applicants and the cost for travel and accommodations for clients are also covered by the School. The cost to raise, train and place each "Dog Guide" is approximately $25,000.00. The Sponsorship for Crumpet was jointly provided by the Lethbridge Kennel Club and the Strathmore Lions Club.

The Greenings wish to acknowledge Lethbridge "Just For Pets" pet store, who will be assisting with Crumpet's ongoing care and wellbeing. Thanks also to McCallum Saddlery & Leather Repair. Andy will ensure that Crumpet's harness fits properly and stays in good condition. The Greening family are thankful for the generosity and kindness of all those involved.

Sardine and Green Bean

Recipe Sophie & Kiwi Taste Testers

5 eggs

3 cans sardines, in spring water only 2 T oil, coconut or olive

3/4 cup All Bran or buds

2 cups green beans, minced

1 apple, minced (seeds and core removed)

1 small can (398 ml) pure pumpkin (not pie filling)

5 cups oatmeal, uncooked quick

Cookies for Dogs

Sardines: Nature’s “Super Food”! Sardines have omega-3 fatty acids which contain wonderful health benefits including: brain health for developing puppies and aging seniors; heart disease prevention; cancer fighting; regulating the immune system; and reducing inflammation in dogs with allergies, arthritis and autoimmune diseases. Green beans are a good source of vitamins, minerals and dietary fibre which improves digestion and absorption. Green beans are low in calories making them a great treat for overweight dogs. Use fresh or frozen green beans, steamed lightly, or canned green beans with no added salt.

Beat eggs in large bowl. Add sardines with liquid and mash. I like to use the food processor to chop the beans and apple. Add remaining ingredients.

Mix together well by hand. I wear disposable gloves for this. Drop on large cookie sheet 13 X 18 using parchment paper. Squish down and score with a paring knife to desired size. Bake for one hour at 350 F. Cookies will be moist on the bottom.

It is best to flip to bottom side up and cool.

Refrigerate up to 5 days or freeze.

These are healthy, soft and meaty cookies that are easy to make.
