elcome to the “Bring on Spring” series. It’s May now and a perfect time to give your wardrobe a little freshening up so you’ll be ready to step out this spring in style. Spring is the perfect time of year to get a fresh start and cleaning out your closet is the first step. Yes, that’s right, it’s time to “spring-proof ” your wardrobe. Time to put away those dark drab colors and heavier fabrics. I don’t know about you, but I’m wanting to add some color to my everyday outfits. I’m loving the idea of adding small bits of color, florals and pattern into my normal wardrobe. Dreary colors can easily become the staple for spring, but I’m really trying to get a little more colorful! Neon’s, florals and pastels are the way to go, so don’t be afraid of adding some color in your life. This spring is all about color so step outside your comfort zone and brighten it up!
You can also spruce up your wardrobe this spring with accessories. I recommend chunky jewelry in bright colors (a cuff or bib necklace), bright or metallic sandals and flats, a bright scarf (aim for multicolored scarves to get the most bang for your buck so they coordinate with more outfits), a big bag in a neutral leather or bright color (helps contain on the go essentials and can punch your outfit up a notch). Adding these 10 must-have pieces will also help you ‘Spring Up your wardrobe”: •
Spring’s daytime essential – the sporty A-line dress. Highneck dresses with a flirty, full skirt show just the right amount of skin for spring’s daytime events and look great with flats.

Chef Paul Mattison’s Bertha Palmer Special Chef Paul Mattison created this dish in celebration of the 100th birthday of Bertha Palmer. It became so popular, he kept it. Now a signature Mattison’s entrée, it combines all three of Bertha Palmer’s biggest interests: growing fresh citrus in her groves, raising cattle on her farm and the seafood from the Gulf of Mexico, which she so loved. This dish is so special it was Mattison’s Forty-One’s Mother’s Day special! Serves four 4 filet mignon, 6 ounces each 2 Tbsp vegetable oil Meat from 2 lobster tails 1 cup clarifed butter 12 asparagus stalks 6 cups water 3 Tbsp olive oil 4 Tbsp Demi-Glace Truffled Mashed Potatoes Season each filet on both sides with salt and pepper. Sear in oil on one side for 5 to 6 minutes. Turn over and place on a tray in a 350ºF oven and cook to desired temperature (6 to 8 minutes for medium-rare). Rough chop the lobster meat. Slowly poach in the butter in a saucepan over low heat, being careful not to overcook. Trim the asparagus
stalks. Bring the water to a simmer, add the asparagus and cook for 3 to 4 minutes until tender. Drain, toss with olive oil and season to taste. Place each filet on a plate over Demi-Glace and asparagus then top with lobster meat. Drizzle with Citrus Hollandaise and serve with Truffled Mashed Potatoes. Salt and pepper to taste. Truffled Mashed Potatoes 5 medium potatoes ½ pound butter 1 pint heavy cream 1 Tbsp truffle oil Salt and white pepper to taste Peel potatoes and cook in salted water until done. Strain well and rice or mash. Melt the butter with the cream over low heat. Add the truffle oil, season to taste, add to the potatoes and adjust the moistness and seasoning. Demi-Glace 1 shallot, sliced 2 smashed garlic cloves 1 fresh thyme sprig 1 fresh rosemary sprig 1 cup port wine 2 quarts Veal Stock (above)
Add all ingredients to a large sauce pan except the veal stock. Bring to a simmer and reduce by half. Add veal stock and reduce to a smooth sauce consistency. Citrus Hollandaise 4 egg yolks 1 Tbsp freshly squeezed lemon juice 1 cup melted unsalted butter 2 to 3 drops Tabasco sauce ½ tsp lemon zest Pinch of salt Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl until the mixture is thickened and doubled in volume. Place the bowl over a double boiler with barely simmering water and continue to whisk rapidly. Be careful that the eggs do not get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce has thickened and doubled in volume. Remove from heat, add the Tabasco, lemon zest and salt. Cover and leave at room temperature until ready to use. Enjoy!

I
f you’re living with inflammation, these words have great meaning. Ancient Greeks describe it as the “internal fire”. Imagine walking over burning coals. Now imagine that feeling all over your body. According a MedicalNewsToday. com article, “Inflammation is the body’s attempt at self-protection; the aim being to remove harmful stimuli, including damaged cells, irritants, or pathogens and begin the healing process” We can recognize inflammation after a cut or injury because the area becomes reddened, hot and often painful yet inflammation isn’t just a response to something physical that has happened. It can be a response to autoimmune diseases, muscular related pain, germs like bacteria, and chemicals or radiation. Inflammation is our body’s response to something that it perceives as harmful or irritating to it. Whether it’s from a small scratch to injury, an allergic reaction from bug bites to food allergies, or due to your genetic make-up, your body is always at work trying to heal itself. We just don’t always see inflammation or know it is happening because the systems of our body can be inflamed for years before it becomes apparent where it affects your daily living activities or clinically significant to be diagnosed. The small subtle signs that we often disregard as the natural process can become very harmful if neglected. Long term inflammation, whether we see it or feel it, can cause damage to our body, limiting the ability of our natural defenses causing further damage and speeding up the process of aging on the inside and through your physical appearance. The immune system is always at work, it is a network of cells, tissues and organs
beginning with the skin. It is your gate from the outside world to inside your body. Some components of your immune system inside your body are the Lymphatic System, Spleen, and Thymus along with a variety of blood cells and antibodies designed to identify and destroy harmful material. Acute inflammation occurs over seconds, minutes, hours after an injury, and chronic inflammation occurs over longer times, may have a slow onset and be subtle. Chronic inflammation can also be systemic which is caused by the body’s attack on itself due to auto immunity For some people the inflammatory response can be never be fully turned off or it is inappropriately triggered to attack healthy cells. The most common treatment for inflammation and swelling is the acronym RICE. Rest, Ice, Compression, Elevation. Seems simple enough to follow and many times works well in a healthy individual after an injury. Complication sets in when the proper management techniques for YOU are not utilized. Overuse of ice, not elevating or if you are dealing with chronic inflammation, improper management can make matters worse. Pharmaceuticals are also often prescribed to manage inflammation yet this may only mask the problem by reducing the pain. Not getting to the underlying cause allows for the vicious cycle of inflammation to continue with the risk of severe potential side effects. People tend to rely on medication for the quick fix and fail to attend to the necessary self-care techniques. There is no magic cure, pill or other intervention that can be the ONE thing that will make it all go away.

My mom would have found it! She tried everything yet nothing worked because she didn’t give things a chance to work before she was on to the next quick fix. She also did not attend to her diet, allowing herself her “treats” for being good. It has to be a combination of techniques and tools that fit your needs, consistent practice and your belief that it will work. You have to take action before inflammation turns into a fire that rages out of control. It is daily attention to yourself, continuous learning and treating your body with respect by understanding how its processes work. Listen to what your body needs. Become knowledgeable about your current heath situation and your genetics, your family history. Diet is of significant importance because approximately seventy to eighty percent of your immune tissue is located within your digestive system. Changing your diet will change the kind of bacteria that you have; which will support the strengthening of your immune system. Speak to your doctor, ask questions yet also know that not every doctor is knowledgeable in the inflammation process as it is a specialty. There are also some doctors that rely solely on conventional western medicine and may not recommend or even approve of complementary medicine. Always look for second opinions and go with your gut…literally!

A sneak preview appears to indicate that women’s locks will be more simplistic and sophisticated this season. In general, the popular look has hair being worn loose and natural with a lot of movement to enhance the delicacy of feminine traits. This hair trend invokes cuts that combine classic and discreet. Those who like trends, always like to walk in fashion.... right? These haircuts are especially for those who like to follow trends. They are super fashionable and will be the darlings of the summer of 2015. Just choose your favorite outfit and play.
“Bob” Hair Cut
The “Bob” cut took over the runways at major fashion events this year. The bob cut made the head of several famous throughout 2014 and promises to continue dictating trends in 2015. It is a further variation of the Chanel classic but with a more elongated look having a length slightly above the shoulders. The long bob is perfect for women who want to change the look without being too radical. The cut typically has a straight base and the front somewhat longer than the rear. You can diversify this look by leaving your hair smooth and straight, or add texture with gentle waves.
“Johnny” Hair Cut
This is a perfect style for a women who wants to make a radical change in appearance. The Johnny cut works well with those who have delicate facial features. This short hair cut will leave the woman with a chic look. Everything depends on the hairstyle.

Regulation Of Florida Water Parks Are You At Risk For Injury? Florida is the home of a large number of water parks. Given its name-- the entity that regulates water parks may seem surprising to you. How does the regulation of Florida recreational theme parks that feature water oriented rides impact safety or lack thereof and –ultimately personal injury? The Florida Legislature has recognized in Section 616.242 of the Florida Statutes the necessity of regulating amusement rides within the State. Exempt from the statute for inspection purposes are: Permanent facilities that employ at least 1,000 full-time employees, and that maintain full-time, in-house safety inspectors. However, the statute requires that such permanent facilities must file an affidavit of its annual inspection with the department, on a form prescribed by rule of the department. As a practical matter, the form adopted by the Department is for daily reports to be completed by the water park’s safety personnel. The statute requires that the owner of an amusement ride must meet at all times the requirements of the statute and any rules adopted thereunder. An amusement ride is defined in the statute as: Any building, structure, or mechanical device or combination thereof through which a patron moves, walks, or is carried or conveyed on, along, around, over, or through a fixed or restricted course or within a defined area for the purpose of giving its patrons amusement, pleasure, thrills, or excitement, and Amusement rides at water parks which

A water park is defined in the statute as: A permanent facility with one or more amusement rides that totally or partially immerse a patron in water
Why would any of this matter to you? The concern may arise as to how much should guest safety rely on selfmonitoring by large amusement park operators and overseen by what may be construed as an anachronism—an agency set up to regulate farming and other such agricultural operations in the State? This in no way is intended to disparage what may be a very competent State agency.
The Legislature incorporated within the statute a statement that reads in part: Amusement rides at water parks are amusement rides that, because of their unique nature, pose safety risks to patrons distinct from other amusement rides. Therefore, the department shall adopt rules regulating their safe use and operation and establish safety standards and inspection requirements in addition to those required by this section or other rule of the department. The Legislature does not identify the name of the mystery Department, but it is the Florida Department of Agriculture and Consumer Services, and more specifically it’s Bureau of Fair Rides Inspection. Why would the Department of Agriculture be tapped to regulate national entities that are household names? It may be that the State recognized the Department’s existing regulation of various State Fairs – the amusements at these fairs are very similar to those in amusement and water parks. The rules adopted by the Department are included in the Florida Administrative Code and regulate several aspects of water park operations. They include the following statement: Ingress, Egress, and Walking Surfaces. The owner shall maintain the means of ingress, egress and walking surfaces of the amusement ride so that they are slip resistant with a textured surface which is

The issue is that it seems to be below the radar screen. This is particularly so— when an accident does occur.—who becomes liable for the deficiencies— the park operator and their insurance carriers –or the State of Florida’s Department of Agriculture who oversees and reviews the safety affidavits supplied by major water park operators? You may now think about this little known oversight procedure the next time you hear about loved ones visiting these parks-- or in fact- what your responsibilities may be if you are the parent or escort of young children and/ or teenagers visiting Florida’s array of water park options. If you or someone that you are responsible for is injured at one of these water parks, then the whole procedure for safety will likely go on the radar screen of those who may be liable for the accident and the injured party’s (plaintiff ’s) counsel.

Get This Home Sold! As I write this article, we have just concluded a very successful “selling season” here on the Gulf Coast. Thanks to our winter visitors, we saw lots of new records being set in terms of the number and value of home sales. But what about those owners whose homes did not sell, or those who are just considering listing their home for sale now? Here are some of the steps sellers should take as they consider putting a property on the market. Establish the Reason for Sale Understand why you are selling the property. Is this a decision made solely upon your own personal requirements, or is it being dictated by market conditions? Do you believe the market has peaked and you want to realize your profit at this time? For an investment property, have you seen rents tightening leaving little opportunity to increase your cash flow? If you are a foreign owner, the recent strength of the US Dollar against your home currency may make this a great time to sell and repatriate funds. Define your Needs and Priorities Your needs will depend on your reasons for sale. Timing of a sale could be a particular priority if you have plans for the funds realized from the sale, or if you have a job move for instance. This time of year we tend to see a lot of families looking to make a move before the start of the school year. Set a Price Work with your listing agent to determine the best possible selling price for the property. Setting a fair asking price initially will generate the most activity from other real estate agents and buyers. Your agent’s knowledge and expertise will be invaluable in helping you to understand the overall market, prices achieved for recent sales of comparable properties, and how long properties are typically on the market before sale. It may be hard to be objective about pricing something you personally own, and take into consideration the

true condition and value of the property. It is important to consider “Value versus Price” – how much you may value the property versus how much a buyer might be willing to pay for it today. Buyers are well informed about the market and may know if a property is overpriced. Prepare the Property The condition of the property will affect how quickly it sells and the price it achieves. Preparation can be looked at in two areas – repairs and impressions. You should identify any necessary repairs and replacements and take appropriate actions – make the repair, replace the item or disclose it to potential purchasers. Your agent will give advice on how the property should be presented in order to make it more appealing to buyers. Simple actions like de-cluttering, neutralizing the space (removing personal items and pictures), removing a few pieces of furniture to give the impression of more space and other staging tips can be invaluable at this point. Hide or replace items that will not convey with the property. This is of particular importance if you are offering the property turnkey furnished. Remember that first impressions last, so spend some time and money making sure your property creates a lasting first impression, and sets the tone for a successful showing. On the exterior of the property: Keep the grass cut and remove all yard clutter Weed and apply fresh mulch to flower beds Paint wooden fences Clean, polish, and tighten all door handles Clean windows Power-wash driveways and paths, roof, soffits, etc. Ensure all gutters and downspouts are free from debris and functioning Paint the front door Buy a new welcome mat Place potted plants near the front door

Clean and organize cabinets, closets and bookshelves Clean all light fixtures and ceiling fans Steam clean carpets and tile flooring Remove excessive decorations, knickknacks, and personal photos Clean or paint walls and ceilings (light neutral shades) Replace any worn door or cabinet hardware Establish a Showing Strategy This is especially important if you live in the property or it is rented to tenants. Showings should be by appointment only so the property can be prepared. Be as flexible as you can in setting showing times. If a buyer is from out of town, you may not get a second chance for them to see your property. Always ensure the property is vacated for a showing. A buyer will not feel comfortable spending time to really look at the property if a seller or tenant is present. Buyers may not share their true feelings in front of others. Here are some tips to ensure that prospective buyers see the property as positively as possible: Turn on all the lights - Open all drapes and shutters during the day - Remove any pets from the property during a showing - Deodorize the property and keep it smelling fresh - Place new, decorative towels in the bathrooms - Install new bed coverings - Replace old lamps or lampshades - Set the dining table - Light the fire or clean the fireplace and place a decorative candle arrangement there - Play quiet background music Above all, work in partnership with your listing agent to ensure the property is priced properly, shows well and sells in a time frame that is acceptable to you, and at the highest possible price.
