nce again we sit here and look back at another year passing us by. To some the New Year is a time to party, watch a few football games, and maybe make a few resolutions (Knowing deep down inside the resolutions won’t stick).

It is all those things for us, but the New Year is also a time for reflection, a yardstick for measuring what we’ve learned so far, not just in the last year but all along the winding and unpredictable road called life. Let’s be an optimist about this New Year, 2016. January 1st marks a new beginning, a chance to look at the world afresh and to step into the new day and new year boldly. The New Year is a symbol of renewal and on this occasion we should clear our thoughts and refocus our energies. On New Year’s Day, let us all take a moment and just breathe. Pause in what you are doing and set aside where you’ve been and where you are going. In this moment reflect on the here and now. Miracle At SUNCOAST Benefiting The Education Foundation of Sarasota County & The Florida Occupational Therapy Association The Education Foundation of Sarasota County partnered with the Florida Occupational Therapy Association (FOTA) for the Miracle at Suncoast on November 19th at Suncoast Motorsports. More than 150 people came out to support the event that was held to provide valuable resources for students with special needs in Sarasota County Schools. The event featured student performances and a fashion show where students were driven down the runway in style. The Education Foundation of Sarasota County, founded in 1988, serves more than 43,000 students in 52 elementary, middle and high schools. The Education Foundation is the leading advocate for an exceptional public education for all students in Sarasota County. With strong support from donors and the community, the Education Foundation undertakes significant, high impact projects and initiatives. I can’t tell you how excited I am to have Lilly Pulitzer as the Fashion Show Presenter at “Loving Yourself ”. I Love Lilly! Lillian Pulitzer Rousseau, better known as Lilly Pulitzer, was an American socialite and fashion designer. She founded Lilly Pulitzer, Inc. in 1959. On April 7, 2013, age 81, she died at her home in Palm Beach, Florida. Westwater Construction Departs The Lake Club In Lakewood Ranch. Westwater Construction announced that they will cease building in The Lake Club when their latest construction project finishes in March of 2016. To date the firm has completed the largest homes in The Lake Club. Westwater is returning to their roots constructing one-off custom waterfront homes typically beginning at $600 a square foot (construction only). CEO Mark Miller states, “Much like everyone, in the downturn we went where the business was. We enjoyed working with Lakewood Ranch and put up some incredible homes.

Now with the recovery of the market we are experiencing the building of a significant backlog for custom waterfront homes, and that is what we are known for. We re-tooled during the downturn and designed some very cutting edge “jewel box” homes in the 3,500 square foot range, thinking this is where the market was heading in The Lake Club for us. We could not have been more wrong as we only sold two homes in that size range and the rest of our customers demanded the larger custom homes that we are known for. Truffle Infused Beer Takes First Place Students in the “Beer Science 101” class at USF - Sarasota collaborated with upscale Urbani Truffles of New York and Big Top Brewing Company to produce an Italian white truffleinfused German Kölsch-style beer known as “Dark Horse.” The fruits of this class project were recently revealed at a semester ending “Beer and Food” pairing soiree on the USF campus. The truffle-beer was awarded 1st place among the seven teams brewing their own concoctions this semester. The high cost of the truffles mixed with production and marketing expenses mean that a pint of “Dark Horse” will be approximately $200. Not everyone will be able to afford

this sweet nectar but those who can are in for a treat their palate will never forget. The pricey brew was conceived by senior Dennis Metz, with the assistance of fellow students Alexis Brodil and Charlotte Bertha. New York-based Urbani Truffles supplied the truffles used in creating the beer. Sabrina Notarnicola, brand strategist at the company, flew down for the tasting and said Urbani tried making a truffle infused beer a year ago but was unsuccessful. Urbani, satisfied with the end result, said it plans to move forward with a commercial product aimed at affluent markets.

The Oaks Club Completes Heron Course Renovations The Oaks Club announced the completion of the renovations to its Heron Course, a year-long project that brings a memorable new golfing experience for members and guests. “By re-imagining this beautiful course, we have renewed one of our community’s most important assets to the benefit of all our homeowners,” said Oaks Club Board President Chuck Clack. “Our golf amenities have helped make The Oaks Club one of the Gulf Coast’s leading private residential communities for the past 31 years.” Course architect Jason Straka, of Fry/Straka Global Golf Course Design, said the renovations are

Sea Scallops with Sweet Pea Pancetta Risotto and Tomato Coulis

Serves four

Sweet Pea Pancetta Risotto

Bacon Aïoli

20 cleaned jumbo sea scallops (U-10) 8 ounces clarified butter 1 cup julienned fennel ¼ pound green beans 1 Tbsp butter 1 Tbsp olive oil ¼ cup white wine Smoked Tomato Coulis salt and pepper to taste

3 Tbsp small-chopped pancetta 2 Tbsp butter 1 small-diced onion 1½ cups Arborio rice ½ cup white wine 5 cups heated chicken stock 2 Tbsp sweet peas ½ cup grated Parmesan cheese 2 Tbsp butter 2 tsp chopped chives salt and pepper to taste

2 egg yolks 3 Tbsp water 1 ounce fresh lemon juice 3 roasted garlic cloves 1 cup olive oil 2 Tbsp finely chopped crisp bacon Salt and pepper to taste

Pat the scallops until completely dry and season with salt and pepper. Heat 2 ounces of clarified butter on medium-high heat and add 5 scallops. Cook, without touching, until the edges begin to brown. Carefully flip and cook one minute more. Transfer to a cookie sheet. Repeat this process 3 more times, adding 2 ounces of clarified butter each time. Sauté the fennel and green beans in butter and olive oil over medium heat until the fennel is soft. Add the wine and deglaze the pan. Season to taste. Place on top of the scallops and serve with Sweet Pea Pancetta Risotto, Bacon Aïoli and Smoked Tomato Coulis.

Cook the pancetta over medium heat until the fat has been rendered. Melt the butter in a large saucepan over medium heat then add the onion and pancetta. Cook until the onion is soft, about 5 minutes. Add the rice and stir for one minute. Add the wine and stir until almost all of it is absorbed, about one minute. Add one cup of hot stock and simmer for 4 minutes until the stock is almost absorbed, stirring often. Repeat this process adding one cup of stock each time, being sure that the stock is absorbed and stirring until the rice mixture is tender and creamy, for about a total of 20 minutes. Stir in the peas, cheese, butter and chives. Season to taste.

Combine the egg yolks, water, lemon juice and garlic cloves in a blender and process on high. Reduce speed and slowly drizzle the olive oil into the mixture. Pour into a bowl, fold in the bacon and season to taste.

Smoked Tomato Coulis 5 medium tomatoes ½ tsp chopped garlic 3 Tbsp extra virgin olive oil Salt and pepper to taste Cut the tomatoes in half horizontally and squeeze the seeds out. Smoke on a grill for 6 to 7 minutes until the skins begin to split. Cool, core, peel and rough chop. Mix the tomatoes and the garlic in a small sauce pan over low heat and simmer for 20 minutes. Transfer to a blender and drizzle in the oil on high speed. Season.

HOLIDAY DETOX: Use your lymphatic system for better health

S

tarting a new year usually means starting a diet or exercise routine. Choosing which route to take or what activities are going to be right for you can be daunting. With so many fad diets and exercise routines out there, why not try a new routine of influencing your body though its immune system. The lymphatic system is a crucial component in health and wellness. It is involved in all aspects of your body’s inner workings and carries out your body’s immune responses through channels that are similar to the circulatory system. The lymphatic system works along with the circulatory system to clean up the waste materials from your body that your blood vessels could not accommodate for. It is also able to absorb larger materials than the blood vessels are able. Attending to your lymphatic system can assist in reducing pain, managing swelling, weight loss, and will help you to restore balance and equilibrium to your body. Learning to live with a lymphatic influence is easy and can be built into your already daily routines. Let’s take a look at a few key points of this great system. The Lymphatic system is an open system meaning it can collect and release fluids. This allows for your immune system to deliver pathogen fighting cells and to remove waste products. What does this mean for your lymphatic techniques? It means there is a system in our body that can be influenced to remove toxins and assist in living a healthy existence. Education is key. By learning about the lymphatic vessels, its route to the circulatory system and alternate pathways, you will see how easily you can adjust how you put on lotions, how you dry yourself off and how to modify many other self-care techniques to improve your immune fighting power! Schedule some time

for an educational session about your specific circumstances. There is no pump for your lymphatic system to move fluid such as the heart does for the circulatory system. For this system to assist in its fluid returning to the heart, it works on pressures of the environment and within your body. The muscles of the body are this systems biggest support. The diaphragm acts as the pump utilizing the suction effect from the diaphragm pulling downwards then returning back to its original position. The muscles of your body press the lymphatic vessels with the help of the skin and assist in moving lymphatic fluid upwards.

Our lymphatic system works on pressures, and because of that we can influence how gravity will take its effect on us. Your lymphatic technique includes the use of manual lymph drainage and compression garments. The ADA – Americans With Disabilities Act Making Life Better And More Complex

The Americans with Disabilities Act (the ADA) is an “equal opportunity” law for people with disabilities. It was signed into law on July 26, 1990, by President George H.W. Bush. The ADA is one of America’s most comprehensive pieces of civil rights legislation. It prohibits discrimination and guarantees that people with disabilities have the same opportunities as everyone else to participate in the mainstream of American life – to enjoy employment opportunities, to purchase goods and services, and to participate in State and local government programs and services. The ADA was modeled after the Civil Rights Act of 1964, which prohibits discrimination on the basis of race, color, religion, sex, or national origin. It was also modeled after Section 504 of the Rehabilitation Act of 1973. The Americans with Disabilities Act is intended to protect the rights of people with disabilities. The ADA bans discrimination based on disability in the private sector and the state and local government sectors. It requires access to programs and services, facilities, transportation, employment, and communication. The ADA Accessibility Guidelines (ADAAG) were issued on the first anniversary of the ADA, July 26, 1991.

ADAAG contains detailed design requirements for accessibility in new construction and alterations. The ADA Amendments Act of 2008 included three titles which made it applicable to three major areas. The first is Employment. The second is Public Services, and the third is Public Accommodations and Services Operated by Private Entities. Employment is outside the scope this article. We are most involved in the latter two in that they deal with physical obstacles to the use and enjoyment of places people go. Historically, there were barriers everywhere to those with disabilities. For example, it was very difficult before that application of the ADA for a person in a wheel chair to ride public transportation, gain access from a parking lot over a curb to a store, get into the store, access the products and services offered, and even access a bathroom. The purpose of the ADA is to remove these barriers from the everyday lives of those with disabilities of all types. The emphasis has been on three things: access to the building, access to the goods and services in the building and access and use of restrooms. While the ADA originally dealt with public services offered by any government or agency services, it has been expanded to include private places that are open to the public. The extent of this expansion

is huge and reaches into all aspects of commercial activity such as stores, restaurants, parks, swimming pools, amusements, theaters, places of lodging, social service center establishments (group homes, halfway houses, shelters, or similar social establishments that provide either temporary sleeping accommodations or residential dwelling units), housing at a place of education, housing at a place of education, assembly areas, and medical care facilities. This list is far from complete. Due to space constraints there are many, many details relating to the ADA that cannot be mentioned here. However, a qualified architect is capable of not only identifying ADA violations and problems but can also design the solutions. Therefore, it is always wise to consult with a knowledgeable expert when dealing with the complexities of the ADA and its application at the state and local level.

Buying A Home in A Competitive Market Inventory of homes for sale in our area is very low. This means buyers will have fewer choices and may be involved in purchasing a home that has several people interested to buy. As a buyer, what can you do to ensure your offer to purchase will be successful? When most people construct an offer, they think about the price they are willing to pay as their “offer”. In reality, an offer needs to be much more comprehensive in order for it to be given serious consideration by the seller. Understanding all of the seller’s motivations will help you structure a strong offer. First, review everything that has been disclosed about the property so you know exactly what you are offering to purchase and its relative value. Disclosures will usually include the age and condition of the roof, air conditioning/heating systems and other key components, history of any problems and how they were resolved. Your Realtor® should contact the listing agent before composing an offer, in order to understand what is important to the seller. While price is important, there may be other considerations from the seller’s perspective. For instance, they may want to remain in the home until a certain date. An offer from a buyer who can accommodate the seller’s needs may be looked upon more favorably. When presenting a price to a seller, show the rationale behind the offered price. Your Realtor® should review sales of similar properties and establish the fair market value of the home today, based on comparable sales in the neighborhood. It is important to make a realistic offer in

order for the seller to take you seriously. There is no rule of thumb as to how the offer price should be related to the asking price for a property, and each property must be considered on its own merits. Did the listing agent price it above, at, or below fair market price?

Your agent should also “present” the offer to the seller’s agent appropriately. Offers are usually sent via email, but a covering note that gives the seller some background on the buyer may be appropriate, especially if the seller receives several offers.

Your offer to purchase should be made in writing along with all relevant terms, including price, timing and amounts of escrow deposits, cash or mortgage, closing date, inspections to be carried out, responsibility for any repairs needed and any contingencies for the sale.

When other buyers make offers to purchase the same property as you, this is known as a multiple offer situation and requires careful management by your agent. You may not get an opportunity to receive and make counter offers. A seller who is presented with multiple offers may choose to accept one of them, counter offer one of them, or respond to all buyers asking them to submit their “highest and best” offer for seller’s consideration. If this is definitely the “home for you”, I suggest you make a very strong initial offer to give yourself the best possible chance of securing the property.

If you intend to purchase the property in a corporation or trust, but that entity has not yet been formed, the offer should include a clause allowing the buyer to assign the contract to a third party prior to closing. Be prepared to explain why this clause is in the offer, as it may make sellers nervous if they feel you are not fully committed, or plan to “flip” the contract to someone else before closing. The offer should be submitted to the seller’s agent together with proof of your ability to purchase. If you are buying the property with cash, a bank statement or letter from your financial advisor confirming the availability of funds will be adequate. If you are making the purchase with a mortgage, you should have a letter from your lender showing that you are pre-approved for a mortgage for the relevant amount.
