Source: News Corp Australia A CIDER brand has given its fruity drinks a twist by infusing a new range with fresh ingredients that perfectly match popular global dishes. Cheeky Rascal Cider (http://rebellowines.com.au/cheeky_rascal_cider) has developed a flavour fusion to pair with just about any casual dining occasion — a Vietnamese cider of strawberry, lychee and apple; a nashi cider to pair with Japanese food; an apple, lime, mint with chilli inspired by Mexican flavours; a plum, ginger and pear mix for Chinese; and blood orange, lemoncello and pear to partner with Italian dishes. The seasonal range is produced at a fruit winery in Main Ridge called Rebello, run by couple Ruth and Matt Gallace. Chief executive Ms Gallace said the idea for the cider flavours came to her in an unconventional way. “I was sitting in a cocktail bar one day having a capriosca and the mixologist threw in a bit of chilli — it got me thinking about how we could play around with our cider, and how it would be a perfect match with street food.” Ms Gallace said she spent hours experimenting with different ingredients before they found the right combination of flavours for the seasonal cider range. “We wanted to create something fresh and vibrant … a quality cider, but one that is created for that casual, last minute dining experience.” “We wanted to create something fresh and vibrant … a quality cider, but one that is created for that casual, last minute dining experience.” “We have pushed the boundaries a bit.
