Spiced Beans
Recipe KIM McCOSKER – Author of ‘4 Ingredients’ cookbooks
This is a really easy meal. It can be prepared in advance and lasts well, in fact, some say the flavour gets better with time.

SERVES 4
Ingredients:
• 1 large red onion (250g), chopped
• 2 x 400g cans 3-beans mix
• 2 x 400g cans diced tomatoes
• 2 tbsp. (30g) Cajun spice
In a large frying pan, sauté the onion until golden and fragrant, 6 minutes.
To them, add the remaining ingredients.
Bring the mix to a gentle boil, then reduce heat and simmer on low for 2 hours, stirring occasionally.
The longer this simmers, the more flavourful it becomes.
We love it served over rice, garnished with coriander.
