Middlefield resident’s mac and cheese business is heating up By Nadya Korytnikova Town Times

Is there a comfort food more universally loved than macaroni and cheese? While delicious, like most easy-towhip-up dishes, mac and cheese is not the healthiest of meal options. But a locally-owned business set out to change that. Launched in August, Hide-N-Snack brand Mac-Over mac and cheese is free of artificial flavors, colors and preservatives.

Looking to grow Garden Club aims to add members Eighty-eight years ago, on March 23, 1933, 12 ladies interested in gardening, gathered at the Durham library to organize the first Garden Club in town.

The website for the business states: "We believe that food should taste good, but also be good for you. We strive to put the best possible ingredients in our food and naturally flavor with spices and seasonings."

When Lawson looked for healthier mac and cheese options, she found them hard to come by.

Hide-N-Snack was started by Middlefield resident Shauna Lawson, a nurse and mother of two. “When the pandemic hit, we were looking for something to keep us busy during that time and we were also eating a lot of mac and cheese because that’s my kids’ most favorite food,” she said. “They’d eat it every day if I let them.”

Currently, Hide-N-Snack offers four Mac-Over mac and cheese flavors: white cheddar, pizza, ranch and BBQ. Another flavor – nacho cheese – is coming soon.

With a mission to promote interest and activity in all forms of gardening, the club moved forward to encourage education and an appreciation of the advantages of gardening.

Lawson is also working on low-sodium and vegan versions of her offerings.

Editor : I agree with Stephen Liss, who wrote last week about the need of a forum to openly see, question and assess candidates for RSD13 Board of Education seats. The opportunity for voters

to vet candidates in this manner is basic to our democratic process. Candidate statements published in the Town Times are helpful only as a means of introduction. The RSD13 Board of Education has long felt the need to be nonpartisan. A candidate’s political affiliation

should not factor into her/ his approach to serving on the BOE. I am an unaffiliated voter, and a BOE candidate’s party affiliation doesn’t necessarily matter to me — unless that candidate promotes clearly political viewpoints in an election campaign. The most recent school

board elections in Guilford and Coventry are an example of what happens when political ideology becomes the reason for a candidate’s entry into a race. The politics then take precedence over the normal activity of a school board, namely those of fiscal management and support of a school system’s

Despite the wishes for fairer weather, there is no proof that last year’s downpours dampened community spirit. In the near-torrential rains of 2020, the Community Drop-Off still brought in some 11,000 food items and almost $5,000, according to Bottini. In fact, the Drop-Off model was such a success that the greatest challenge remains in limiting the number of volunteers due to space and social distancing. That’s what happens when residents see the effects of lending a hand.

Morgan Perry, social services coordinator for the Town of Durham, notes the same patterns of generosity: “I see the Community Round-Up event as a wonderful example of neighbors helping neighbors.” But wait. Hasn’t the pandemic taught us that contributions from home value as much as those that are extended in person? So feel free to mail cash, checks (made out to: Local Wellness Coalition) and gift cards to Melissa Snyder at Strong Middle School, 191 Main St., Durham, CT 06422. While the name of the event has changed, along with some of the procedures, the need for donations has not. Peter Keast, Director of Special Programs, Community Relations & Development at St. Vincent de Paul in Middletown, captures it in exquisite brevity: “Everyone deserves a healthy meal.” St. Vincent de Paul oversees the operations at Amazing Grace, which, along with the Durham and Middlefield food pantries, stocks its shelves with the items donated on the day of the Round-Up. This is year No. 16 for the community food drive, and while we can thank Ms. Bottini and the Local Wellness Coalition for all that they do, there are so many others who deserve our gratitude. Teachers and guidance counselors from nearly every school, including retired educators from the district; along with the Local Wellness Coalition and volunteers from our community have all worked tirelessly to make sure this year’s event is another success.

Eversource: Expect higher winter bills With global demand for natural gas soaring, gas and electricity prices for the upcoming winter heating season are on the rise. After hitting 10-year lows during the COVID-19 pandemic, the price of natural gas has risen significantly — impacting customers nationwide and across the globe. The driving factors include an increase in global demand during the ongoing economic recovery and a significant drop in U.S. gas supply due to a number of issues.

In November, the average Eversource natural gas residential heating customer could see a 14%, or $30, increase on their total bill as compared to their average monthly winter heating bill in 2020. Because the Purchased Gas Adjustment (PGA) rate is adjusted monthly, customers can expect to see incremental changes throughout the heating season.

Connecticut Department of Revenue Services Commissioner Mark Boughton has announced the 2021 Tax Amnesty program offering individuals and businesses the opportunity to pay back taxes at a reduced interest rate and no penalties. Tax amnesty began Nov. 1 and ends Jan. 31, 2022. The program provides a 75% reduction in interest and waives penalties and the possibility of criminal prosecution to those who have not filed, have under reported or have existing liabilities related to taxes owed to the state for any tax period ending on or before Dec. 31, 2020.
