IT’S THE MOST WONDERFUL TIME OF THE YEAR November and December always feels like a good opportunity to reflect on the past 12 months and take stock. This year, the idea of reflection feels very fitting. Given the rollercoaster of a year that we’ve all had. However, it’s also a great chance to look ahead. It was wonderful to taste that first glass of wine back in the comfortable surroundings of our favourite restaurants and pubs. Alongside the ending of lockdowns and the reopening of hospitality, there have been a number of other highlights for us as both a business and a family as this year has rolled on. Back in the spring we started the long-awaited work on the regeneration project that is our Victorian Groomsport shop premises. For those of you that follow us on Instagram, you’ll have seen just how this has been progressing and we can’t wait for you to see the finished project in full - it’s not just the store that is getting a dramatic makeover. We’ve got something up our sleeves that we think you’ll love! More recently, we’ve taken full advantage of the chance for us to finally get abroad - travelling, remember that? – we’ve returned to doing one of the things we love, meeting our growers in person.

Heading into 2022, there is even more for us to look forward to. Little things such as cold but cosy evenings spent with friends and family and a glass of wine at home or in our local have never felt more appealing and will be so appreciated. We can’t wait to open the doors to the transformed Groomsport store and for you to see just what we’ve been working on. All said we will have to get Christmas sorted first. We’ll also be visiting as many of our growers as we possibly can to find the best of what they’ve been working on whilst we’ve been away and bring this hard work back to our stores. As well as existing, we’ll be exploring new and exciting growers too. From a personal and professional perspective, it feels like there has never been more to get excited about. In finishing, I’d like to say a huge thank you to you for all of your continued support over the last 12 months and more. GR APE EXPECTATIONS We take a look at one of the most misunderstood grape varieties

CHARDONNAY

When you think of Chardonnay, a few things will immediately come to mind - such as fresh apple aromas, crisp flavours and a dry, medium to full-bodied white wine. Known as the winemaker’s grape, Chardonnay is grown in many prestigious wine producing regions around the globe, including Chablis, New Zealand and Napa in California. History Chardonnay originated in the Burgundy wine region of eastern France, and stems from a crosspollination of a grape in the Pinot family and a near-extinct grape variety called Gouais Blanc. Often misidentified as Pinot Blanc, the grape was slow to be adopted by wineries and grape growers outside of France, until it was judged the better of several white wines in a blind taste test dubbed the ‘Judgement of Paris’ in 1976. Since then, Chardonnay has become the fifth most widely-planted grape in the world over the last decade, and has been deemed the ‘winemaker’s grape’ in recognition of how easy it is to grow, maintain and harvest. Chardonnay is available in unoaked and oaked varieties, which refers to the way the wine is fermented during production. Unoaked wine is that which is fermented and stored in stainless steel to produce a crisp and bright flavour, while fuller-bodied wines that carry flavours of vanilla and spice are fermented and aged in oak barrels. Regions The Chardonnay grape is most often associated with its place of origin, Burgundy, in east-central France. Chablis is the northern limit in Burgundy which produces lean, dry flavoured wines, which are often considered to be the ‘purest’ expression of the grape. As the variety migrates from north to south, the flavour characteristics evolve, with wines produced in the furthest south Burgundian appellation - the

Mâconnais - resulting in spicier, butterier and fruitier wines. Despite being synonymous with Burgundy, Chardonnay can also be found in other warm regions around the globe, including New Zealand, Australia, South Africa, California and Chile. In California, Chardonnay is considered the premier white grape of the state, with the North Coast renowned for producing well-balanced whites across Sonoma, Napa and Monterey. Techniques commonly adopted in the region include oak ageing and lees stirring, which result in a range of flavours from fresh fruits to creamier and deeper profiles. Generally speaking, all of the wine from the Sunshine State blends tropical zest with buttery oak. The Limari valley in Chile has fast become the go-to location for the country’s best Chardonnay. Carrying notes of pineapple and lychee, wines from the cooler sites in this region are packed with freshness, mineral-laden flavours and citrus aromas. In Australia, Chardonnay has become a touch controversial as many feel that an overzealous use of oak comes at the cost of the signature fruit flavour, but the region is working hard to strengthen its portfolio of quality white wines. The best Chardonnay can be found in regions that boast hillside sites or a large body of water, as these work to balance acidity rather than producing an overly-ripe wine. New Zealand is another region that has become

synonymous with Chardonnay, as the early-ripening grape produces an edgier and more citric wine than can be found in Australia or other regions. Oak fermentation is common here in an effort to enhance rather than mask the wine’s trademark zestiness, with wines also carrying stone-fruit flavours and light tropical fruit undertones. Meanwhile, in South Africa, the focus is on producing youthful varieties that emanate freshness and lightness, incorporating flavours of peach and apricot. it’s worth pursuing varieties from Italy, as Puglia is known for creating vibrant oaked wines that carry unique notes of orange blossom and jasmine. Famous Wines The most revered Chardonnay can be found where it originated, in Burgundy. Here, wines go by many names as they’re labelled by geography rather than by grape, with top varieties including those grown in Chablis, Corton-Charlemagne, Pouilly-Fuissé in Mâconnais, and Côte de Beaune’s PulignyMontrachet.

CASAR DE BURBIA Founded in 1989 by Nemesio Fernández Bruña, Casar de Burbia is a family-owned winery soaked in tradition. The 27 hectares of mountain vineyards in Vilafranca del Bierzo are renowned for producing rich wines that truly capture the spirit of Valtuielle de Arriba. Sustainability is at the heart of the Casar de Burbia Winery, as the family are focused on maintaining the legacy of their vineyards for generations to come. Today, the vineyards are under the care of Isidro Fernández Bello - the youngest of Nemesio’s three children.

The Casar de Burbia Winery is situated in Valtuille de Arriba, a small wine-growing area in Vilafranca del Bierzo, León, bordering Galicia. All of the vineyards are located alongside the Camino de Santiago and are tended to by the second generation of the family, who look to carry on founder Nemesio Fernández Bruña’s vision.

treatments and amount of copper used in production kept to a minimum. This commitment to following best environmental practices is a key focus for all of the mountain vineyards owned by Casar de Burbia, all of which correspond to the mountain slope typology (15-35%) where they are located. The winery’s

an estimated hundred years old and is surrounded by the native flora of the El Bierzo region. It’s also the origin of the El Castañal wine - a hearty red made from 100% Mencía grapes. What makes these Mencía grapes special is that they age extremely well, adding rich aromas and boasting floral and red fruit flavours. Produced only in Spain and Portugal on the Iberian peninsula, the dominant flavours are sour cherry, pomegranate and blackberry, resulting in medium-bodied red wines with peppery undertones. Another key grape grown for the family is Godello, which is grown in the high parts of the Viña de Valdaliga vineyard at around 850 metres. As one of the highest vineyards in Valtuille de Arriba, it produces high-quality Godello grapes that are used to create the family’s sweet, floral and fruity white wines. Found primarily in northwest Spain and northern Portugal, the Godello undertones include white fruits, herby aromas and nutty notes.

Paying tribute to the idyllic setting of El Bierzo, Nemesio Fernández Bruña’s journey to becoming a winemaker was inspired by his childhood job of cleaning clay vats, which saw him scrubbing the inside clean while singing and playing inside the narrow opening. It was from here that he decided to purchase old vineyards situated in mountain plots, which had been abandoned due to the high cost and low earnings associated with grape production. But this didn’t deter Nemesio, and in 1998, the winery bottled its first vintage under his label and since then, has continued to produce diverse and delicious red, white and specialty wines that embody the freshness of the region. Each bottle of wine is created with family tradition, nature and sustainability in mind, with the vineyards now converted to organic, and the EDITION 5

vineyard is divided into 52 plots - six of which are considered particularly important to the family - and have high, mid and lowlands due to being in the mountains. These high, mid and lowlands allow for reduced interference with the wine, as the different levels of the winery allow gravity to do the work, instead of pumps. The wines are mainly made in fudres, or large barrels, to maintain the identity of the grapes and soil, while the most unique plots are crafted in open 500 litre barrels. The Viña Sapita vineyard is the first of the crucial six. Deemed fundamental to defining the small family winery, it was planted in 1903 and is called the quiet vineyard by the family due to the relaxing atmosphere that surrounded the old Mencía goblet vines. Another key vineyard is the Viña el Castañal named the secret garden - which is

de Burbia. This includes avoiding less-sustainable processes such as using barrels with very marked toasting that obscure their identity, or using commercial yeasts.

Thanks to Isidro Fernández Bello's insight and oenological work, Casar de Burbia has fast become one of the latest cult wineries in Spain. In short, the family has worked hard to establish themselves as ecoconscious winemakers - a reputation that’s sure to be carried on throughout generations to come.

Food and culture Away from industry, even now it isn’t a stretch to see the role that this unique history has played on the region and its culture.

The lowlands provide perfect growing conditions for vegetables, fruit, rice and more. The Alpine forests provide timber for fuel and building purposes and the hydroelectricity produced plays an important role in powering Northern Italy.

Depending on what you’re interested in, the chances are you’ve had some interaction with the region in some form or another. It’s capital Turin is known around the world for both its football teams - Juventus FC and Torino FC, both with hugely successful footballing heritage.

Food plays an incredibly important part of the culture, with some of the finest chocolate, beef, truffles and even rice coming from Piedmont. Turin is a food-lovers destination. The city is awash with creative and innovative restaurants and foodie favourites, with streets lined with cafes making it a must-visit location when travelling to the region. Alba, a scenic medieval town in the centre of the region is gastronomically known for its truffles, but it’s also and arguably more famously, known and celebrated for its creation of two sweet treats that are loved the world over: Ferrero and Nutella.

Cars are another proud part of the history and heritage of Turin, with the city gifting to the world the Fiat, Lancia, Pininfarina car brands - with those three and more all founded in the city. A complex history Beyond its proud automotive and sporting heritage, Piedmont is a region with a deep and vast history, a proud culture of incredible food and remarkable wines. The hills that make up the run throughout Piedmont are dotted with medieval villages that nudge to its incredible history and sit alongside family-run vineyards. This is a part of the country that has been shaped by what has come before it, with more than a few French influences. It’s passes connected Italy with the ancient region of Gaul - an area that is now better known as parts of modern day France, Belgium, Italy and Western Germany. Jumping forward, across three decades in the 1800s, the Piedmont led the charge in uniting all of Italy, with Victor Emmanuell II, the then-king of Piedmont and Sardinia becoming the first modern king of Italy in 1861. A powerhouse region The question may be why was the region so important to so many different dynasties and rulers but even in

Wine on our minds It wouldn’t be a focus on a region in Commune though without talking about the wine. Piedmont has a global reputation for producing some of the finest wines in Italy, with Barolo and Barbaresco coming from the region.

We’ve worked with wine producers from the region for a number of years and a recent visit from our team rekindled our love for the simply astonishing wines that come from here. Given the size of the region, there are a number of different locations across Piedmont in which wine is grown. The region is dominated by red wine, with around 90 per cent of the grapes grown being red vines. Here the Nebbiolo grape reigns king, not just regionally but globally with Barbera perfectly by its side. Temperature and climate Given the size of the region, the temperature and climate can vary massively across the region. The average temperature across the year for Piedmont is 18 degrees celsius and the temperature generally correlates to the average central european temperature, with cold and wet winters with warmer summers. 1.
