F

rom Victoria’s Secret runway to high fashion updo’s as well as brides wanting to look like a princess on their wedding day, Erbeli’s Salon, senior stylist, Tracey Sommers, has you covered. She is an expert in helping brides look and feel beautiful on their special day. Although the end result is, according to her brides, spectacular, it doesn’t happen by accident. Sommers, a South Amboy native, says she has always loved to style hair and has done so since practicing hair styles on her childhood friends. Her career started with training at Vidal Sassoon and continued at Warren -Tricomi Salon and Spa in New York City. She has been a professional hair stylist for more than a dozen years. Sommers says, that before their special day, brides meet with her - well in advance of the ceremony - to talk about the wedding - the dress, the location and what “look” she imagines for herself and her wedding party. “We start off with an extensive trial,” Sommers says, “where I style the bride’s hair so she sees how she will look on her wedding day. We try out different looks and styles so the bride feels confident with the end result.” The preparation can be just as important as the actual day. On the wedding date, Sommers may spend the better part of the day preparing both the bride and her bridesmaids’ hair. “When I achieve the looks everyone envisioned themselves with, my job is done.” Sommers smiles, “they feel terrific and so do I.”

LARRY MELUSO Choreography and catering share much in common, each requiring an intense passion and focused attention to detail. Brooklyn native and Red Bank resident Larry Meluso brings decades of experience in each discipline, the former enhancing the latter, to his position as director of catering sales and marketing at Windows on the Water, a 7,000-square-foot wedding and special event venue located at Surfrider Beach Club in Sea Bright. Under Larry’s direction, Windows, for three years running, has been named a five-star property, winning top awards from New Jersey Bride magazine and The Knot.

“They really let me take the ball and run with it,” says Larry of Surfrider owner Jim Lobiondo and his children, who run the multi-faceted business. “We have a wonderful working relationship.” Larry, who loves the shore and had curbed his global wanderlust, wanted to commit his talents to a single property closer to home. He joined the Lobiondos in 2012. “I feel they’re probably the best family I’ve ever worked for in my career,” he says. Larry began learning the ropes at age 11, with an uncle who owned a catering service in Brooklyn. The skills he learned there were a useful fall-back during his exploration of other areas of interest, which came to include choreography. He put together large events around the world, served as artistic director of the Hong Kong Arts Center, choreographed TV commercials. He also worked in sales and marketing in various countries within the hotel industry, and found himself leaning towards the catering end of it. Throughout his travels he was exposed to many different cultures and languages— experiences that serve him well today. “We’re constantly presented with different challenges in terms of coordinating various types of weddings,” he explains. “We do multicultural and interfaith weddings, and we support marriage equality for all.” Larry’s outgoing personality, knowledge, and hands-on attention to detail led one customer to write: “This loving note can barely express how you have added to the depth of our happiness and for being a part of the most amazing day of our life!” Windows on the Water handles a minimum of 85 weddings each year, during a season that runs from March 15 to December 15. What makes it different from many wedding venues, and more successful, according to Larry, is that the service is uniquely personalized—one wedding at a time, at a “spectacular” private beach club on the ocean; the facility even features a heatable outdoor deck, with dropdown glass rendering it suitable for use year ’round. Much of the food, prepared under the masterful direction of Executive Chef Elpidio Cruz, is locally sourced. The core staff of 20 is carefully vetted and receives rigorous training by Larry, his Maitre’D, and Banquet Captains. Larry continues to take courses and attend seminars to keep abreast of current industry developments and trends. What Windows doesn’t do is lose sight of what Larry believes helps make weddings so magical: the traditions of pomp, circumstance, and etiquette. “A lot of it, including traditional, table side sophisticated service, is going out the window these days,” he says. “But not here.”

It all starts with a blank canvas and a lively art instructor who guides the group through the process of creating an original work of art. No artistic talent? No matter. The instructor breaks down the painting step-by-step through simple lines and basic shapes that, before you know it, combine to create a complete and professional-looking painting. Everyone paints the same image, but it can be customized with different colors. “People walk in saying, ‘I can’t even draw a stick figure,’” says Dorothy Ferlanti, who owns the business with partners Fred Fadell and Rich Barton. “But, they are amazed at the paintings they create, and have so much fun doing it.” Pinot’s Palette is an ideal venue for a girls’ night out, date night, bridal shower, or bachelorette party. Dorothy says groups often start the party at the studio, and afterward take advantage of the restaurants and other night life in Red Bank. There’s a private party room for up to 24 guests; the main room holds 50. Giving new meaning to the tradition of wearing “something old,” Gina often remakes a bride’s mother’s or grandmother’s bridal gown, or other family heirloom dress, into a more current look. She can also create “something new,” by transforming a dress into a baby’s christening gown.

H

er name and story sound like they are straight from the pages of a fairytale, so perhaps it is no coincidence that Gina Zatsarina makes a career out of helping brides feel like princesses. The petite proprietress of Zatsarina Fashion in Red Bank is a fairy godmother of sorts, who uses needle and thread as her magic wand to create exquisite wedding gowns.

The master seamstress’ other forte is designing custom wedding dresses. The process, which takes about two months from concept to creation, involves an initial consultation where Gina sketches designs based on the bride’s vision. “Sometimes a bride knows what she wants, but can’t find it at the store,” Gina explains. “I’ll work with them to create whatever they like, whether it’s simple, over-the-top, or somewhere in the middle.” She also offers custom work or alterations for the bridal party and mother-of-thebride, with group pricing. “We’ll work with any cusGina Zatsarina tomer,” she assures. “Any style. Any budget.”

Gina Zatsarina grew up in Russia, where her love of sewing was sparked watching her mother make clothes for the family. After earning a degree in fashion design at a Russian university, she set off to America through a work-study program with Six Flags Great Adventure amusement park. She was 21 years old and spoke no English, but managed her way through classes at the Fashion Institute of Technology in New York City. Her first job at a small tailor shop in Rumson led to work as a seamstress at area bridal salons. She quickly developed a reputation as the go-to person to handle the most complicated and intricate alterations on high-end designer gowns. But, when their baby was born two years ago, Gina and her husband, Italian-born Victor DiDonato, opened their own studio. Today, Gina attracts clients from all over New Jersey and as far away as Florida, California, and even England. She specializes in extensive reconstructions, taking dresses apart layer by layer to make them smaller, larger, or restyled, then stitches them back together so they look perfect. “Gina has a very good eye for which silhouette works best on every body type, and she helps guide brides to a design that suits them,” says Victor. “She’s not a diva designer; she’s very accommodating and open to customers’ ideas. She has a gift.” Gina handles all design work, alteration consultations, and fittings, and is supported by a team of six seamstresses and beadwork specialists who work their magic in a studio illuminated by special lighting. To the untrained eye, a wedding gown is “white.” But a rack on the wall holding spools of thread in dozens of shades of the color speaks to the meticulous attention to detail that goes into crafting each dress. “The pure light allows us to distinguish the exact shade of fabric and thread in order to match them perfectly,” explains Victor. “We have extremely high standards of quality and put tremendous care into every dress.”

One, Lynda Dipasquale, was referred by the Molly Pitcher Inn for her bridal hair and make-up a year ago, and has returned at least once a month for hair and other services ever since. “Jessica and Grace are so upbeat and kind and had me at ease from the moment I walked in the door,” she says. “I felt at home; like I belonged with these women. They treat everyone like they are the most special client they have.” This nurturing spirit extends to the community where they live and work. The pair have given free “transitional” haircuts and makeup applications to those undergoing cancer treatment; have applied eyebrows using microblading for people with alopecia hair loss; did prom hair and makeup for a group of high school girls displaced by Superstorm Sandy; and held a benefit at the salon – complete with an appearance by an actor from the hit show “Orange is the New Black” (also a client) – for a child battling cancer. “I am in business to help others,” says Grace. “We give our brides, and all our clients, the personal experience they deserve to look and feel their most beautiful.”

THE VINTAGE CAKE “The wedding cake should make a statement,” says Gina Roselle-Broschart of The Vintage Cake, Red Bank which she owns with fellow pastry chef Nancy Lee. “It is usually on display for the entire reception, so why not make it a showpiece where the taste is as impressive as the design?”

The partners, both culinary school graduates, bring together professional pastry techniques, natural, from-scratch ingredients, and artistic talent to design cakes that not only visually reflect a couple’s personality and wedding theme, but also their increasingly sophisticated palates. The Vintage Cake is known for pairing two different fillings within the cake layers. Couples can custom-match their favorite flavors—passionfruit and coconut, anyone?—or, chose from a menu of suggested gourmet combinations. According to Roselle-Broschart, a popular selection is Key Lime Pie Cake with homemade key lime curd and vanilla Bavarian cream tucked between layers of graham-cracker sponge cake. Other favorites include Carrot Cake with maple buttercream, caramelized pineapple, and cream cheese frosting; and Black Forest cake, which pairs devil’s food cake, homemade Italian Amarena cherry compote and vanilla Bavarian cream.

CINNAMON SNAIL CAKES Unique flavor combinations are also a hallmark of the cakes made by Joey Smith, the “cakestress” behind Cinnamon Snail Cakes, an offshoot of the Red-Bank-Farmers-Market-renowned Cinnamon Snail food truck (rated “one of the best food trucks in America” by the Huffington Post) she owns with husband Adam Sobel. But there is a twist; all the cakes she makes are vegan and, therefore, made without animal-derived ingredients, including milk, eggs, and honey.

Smith experimented extensively to ‘veganize’ traditional recipes, and even studied at the Institute of Culinary Education to learn the proper consistency, textures and techniques for icings, fondants and decorative elements, so she could better replicate them in vegan versions. “Vegan doesn’t have to mean boring, or ‘granola-y’ with mashed bananas and oats,” says Smith. “I use the finest ingredients—organic whenever possible—and infuse every cake with lots of love.” Her inventive offerings include chocolate almond sponge cake Cinnamon Snail String Work with fresh fig filling and whipped Earl grey chocolate ganache; mocha spice cake with hazelnut praline and cappuccino buttercream; lemon olive oil pound cake with apricot preserves and vanilla bean whipped cream; and vanilla sour cream pound cake with blood orange curd and white chocolate macadamia buttercream. But extraordinary flavor is only half the requirement. When it comes to wedding cakes, artistry is essential. Roselle-Broschart says she is seeing an increase in requests for rustic looks: “naked” or “semi-naked” cakes with minimal or no exterior icing; “woodland” themes with fresh flowers and painted-on birch-bark woodgrain; and “chalkboard” designs decorated with black fondant and white “chalk” writing. She says another trend is having a “tall tier,” a double-height tier positioned at the bottom or midsection of the cake. According to Smith, while modern designs with clean edges made using fondant icing are very popular today, traditional designs are making a comeback. “I love the classic detail and beauty of traditional wedding cakes,” she says. Smith specializes in Lambeth design, an elaborate and ornate method of piping first popularized in the 1930s. She is also skilled in intricate String Work, in which icing is piped in amazingly delicate, three-dimensional strings, swags and patterns. Both The Vintage Cake techniques typically involve royal icing—something avoided in vegan recipes because it is made from egg whites—so Smith developed a “veganized” icing she was surprised to discover, she says, “creates better results than the original.“ Smith’s garden is a muse for the sugar flowers, leaves and other natural elements she crafts to decorate cakes. She also gets inspiration from architecture, crown molding, and even carousels. “I could think about and talk about cake all day,” she adds, laughing, gladly giving away one of the secret ingredients in Cinnamon Snail Cakes—the Joey factor.

A non-profit brings the poetry and the love of learning… while carving out a creative niche on the WestSide

Situated just steps from the train station at 25 Bridge Avenue, the nonprofit PROJECT WRITE NOW has made it a mission to awaken the inner writer that resides within every local resident —not just the school-age kids who comprise the core of their clientele, but aspiring grown-up authors, established professionals, and really anyone who stands to benefit from the most useful skills and healthy work habits in the Co-Founders Allison Tevald & Jennifer Chauhan successful wordsmith’s toolbox. “We’re encouraging all voices; bringing a literary voice and sensibility to the Red Bank community,” explains Executive Director Jennifer Chauhan, a veteran educator, magazine editor, nonprofit administrator and mother-of-three who segued from teaching English at Rumson-Fair Haven Regional to conducting creative writing workshops at her own private studio in Fair Haven. It was there that she met Allison Tevald, who would bring her accrued skills as a book publishing professional and newspaper reporter/editor to bear as Program Director, when the two women went on to co-found Project Write Now in September 2014. Assembling a team of instructors with career backgrounds in academia, journalism, major magazines, public and private education—the partners wasted little time in making “the write impression” on the community. An early initiative found the newly launched nonprofit teaming with the Red Bank Public Library, in a summertime project that saw local students conduct interviews with seniors, and present their unique stories to a live audience.

Even after the regular daily run of classes (and a newly established after-school program) let out, the activity at the Write Now studio continues well into the evening hours with a range of adult workshops that include sessions on memoir writing, the benefits of “hybrid” self-publishing, and practical information on how to secure a literary Red Bank Mayor Pat agent. with a simple idea: turn Red Bank into Pink Bank to increase mammography rates in our community. In 2006, Tria Deibert was new to health care as the director of marketing at Riverview Medical Center, when she came across a startling statistic: despite all of the medical advances and media attention paid to breast cancer, specifically in October (National Breast Cancer Awareness Month), the number of women having their annual mammogram was shockingly low. Tria knew something needed to be done. She worked with the team at Riverview to create the mission of Paint the Town Pink, which encourages women, age 40 and older, to get their annual mammogram, and also raises funds to provide mammograms for uninsured or under-insured women in the community. Add energy, passion, community involvement, and human kindness, and Paint the Town Pink was born. Over the years, Paint the Town Pink has expanded its hue from solely the town of Red Bank, to three towns, then eight towns, then 23 towns, to 35 towns, and finally to an astonishing 41 towns across Monmouth and Ocean counties in 2015. “It started with just a tent in the front of Riverview to bring the community in to educate them about the importance of annual mammography,” says Timothy Hogan, FACHE, regional hospital president for Monmouth County and proud Pink Bank resident. “For nine years—going on ten—I have had the honor of watching businesses in my town get decked out in pink to share the message. My wife, daughters, neighbors, friends, and hundreds of people in our communities have given their time to support Paint the Town Pink so for me, it‘s been an incredible honor to be part of this cause. At the end of the day, it’s really all about early detection. To hear from survivors who found cancer early and beat it because of a mammogram, and are now able to live their lives and spend more time with loved ones is just so moving and special.”

BEHIND THE PINK Volunteer support continues to grow, and so does the commitment and participation among participating Pink Partners, as more than 1,100 joined Meridian Health in 2015 to support the mission. Partners have included local photographers Bob and Liz McKay, who have captured the photos that represent Pink; graphic designer Judi Mumford, who has designed all of the ads, Each year, dozens of community members join together to lead the town banners, and educational materials; numerous efforts in their towns, and each of their reasons for getting involved are print and radio media partners; and hundreds of town unique. MIXED MESSAGES About Annual Mammography

Why the change in guidelines if mammograms are saving so many lives?

E

xperts agree that mammograms save lives and that the earlier breast cancer is detected, the better the chances of surviving the diagnosis. However, in October of 2015, new guidelines emerged leaving many women confused about when they should start, or how often they should undergo a mammogram.

Several organizations have guidelines pertaining to breast cancer screening, and many are significantly different. For example, the American College of Radiology (ACR) and the Society of Breast Imaging (SBI) recommend that women of average risk start getting yearly mammograms at age 40 and continue annually as long as they remain in good health. The American Cancer Society (ACS) recommends that women start at age 45. The United States Preventative Services Task Force (USPSTF) recommends that women of average risk undergo regular bi-annual screenings beginning at age 50.

What they do agree on, however, is that the decision should be made between the woman and her physician. “The majority of breast cancers, about 70 to 75 percent, occur in women who have no family history and are of average risk,” says Brandon D. Mirochnik, M.D., a radiologist in the Women’s Center at Riverview Medical Center. “Since mammography became common place in the 1980s, the mortality rate from breast cancer among American women has decreased by 35 percent. This is largely due to early detection and improved treatment.” In fact, between January 2015 and August 2015, Riverview’s Women’s Center diagnosed 286 women with breast cancer. Of those, 90 percent fell into the “early, localized, or operable” category, which means that a diagnosed woman would have to undergo less extensive surgery, less frequent or aggressive chemotherapy, and that the rate of mastectomies would be reduced. Why the change in guidelines if mammograms are saving so many lives? “One worry is over diagnosis,” says Dr. Mirochnik. “The fear is false positives, which could cause undue stress and anxiety for a woman, as well as an increase in biopsies.” However, even the ACS agrees that the over diagnosis claims are inflated.

Despite these recommendations by the ACS and the USPSTF, many physicians continue to recommend that women begin getting screening mammograms at age 40 and continue annually. There are also no foreseeable changes to health insurance coverage for mammograms. Additionally, all four organizations support the belief that a woman should have the right to choose when she begins to get a mammogram. What is Dr. Mirochnik’s takeaway from these guideline changes? “It is important for all women to have a conversation with their doctor about breast cancer screening. Starting annual mammographic screening at 40 years of age is the best way to save the most lives possible. Yearly mammograms can help detect breast cancer at its earliest stage, allowing for effective, and many times, less invasive treatment than if the cancer is detected at a later stage.”

ucked away on First Avenue, a few blocks from Sandy Hook Bay, is Sea Sons, a unique gift shop that offers nature photographs, sea glass jewelry, woodworking items and other artistic gifts—all nature-based or repurposed art objects made by the creative Hillmann family of Atlantic Highlands.

Gearing up for their third season, shore natives Jacqui and her husband, photographer Robbie Hillmann, along with their sons Robert, RJ and Randy, have made Sea Sons a destination for gifts and personal purchases as unique as the Jersey Shore itself. "There just seems to be something for everyone who loves handmade, natural items," says Jacqui whose sea glass jewelry is a perfect Sea Sons example. The counters and display cases contain sea glass, picked by Jacqui and her family along beaches from Sandy Hook to Cape May, and fashioned into bracelets, earrings and necklaces. The glass is not tumbled nor buffed, but kept in its original state to allow the natural beauty to show through, explains Jacqui. at Sandy Hook, he has had the opportunity to photograph the lighthouse, wildlife and many of the iconic buildings in all seasons and all types of weather. His Sandy Hook lighthouse image, taken after a winter snow storm, hangs in many area homes and is the store's most popular seller. His framed photos are available at Sea Seaons for prices ranging from $30 to $200. Originally, Jacqui thought of calling the family business “My Three Sons.” As Jacqui recalls, the idea was quickly vetoed, but inspired the current name and the store’s logo featuring three sea horses, created by her son, RJ Clawson (28), a well-known local artist who lives in Atlantic Highlands with his wife Michelle and daughter. RJ uses repurposed objects to create woodworking items for sale at Sea Sons, including signage with GPS coordinates that are popular with shore homeowners and real estate agents who give them as gifts for clients. Son Robert (16) follows in his parents’ creative footsteps as a photographer and sea glass artist with his work on display and for sale at the shop. The Hillmanns have exhibited their photographs, sea glass and woodwork at area shows and Robbie, Robert and RJ had an exclusive show in Monmouth Beach Cultural Center last summer. Eldest son, Randy (29), whose wife Lucia works and helps out in the store, is currently serving in the United States Coast Guard and provides important moral support.

The store does not have a website, so don't look to make purchases on-line. "We’re old school," Jacqui says, "and like our customers to come into the store, meet us and look around.” Sea Sons is a labor of love for the Hillmann family. "It’s just our little piece of heaven," Jacqui says with a smile.

Tradition. It’s the reason Helen Arvanitis followed her family into the restaurant business. And, it’s the driving force behind the authentic fare served at Anemos Greek Cuisine, the restaurant she opened almost two years ago in Manalapan. It’s also the reason the teacher-turned-restaurateur is keeping her heritage alive through Anemos’ annual celebration of Greek Easter. On Sunday, May 1, the date of Greek Easter this year, Anemos will feature a special menu with traditional dishes, such as succulent roast lamb marinated with olive oil and thyme, roasted lemon roast potatoes, and a sweet Easter bread called Tsoureki that’s studded with red hardboiled eggs. The vibrant, red-dyed eggs, which symbolize the renewal of life and victory over death, make an appearance in another Easter tradition at the restaurant, a game called Tsougrisma. Helen teaches the rules to those unfamiliar, while passing out complimentary eggs to all guests. The custom calls for one player to lightly tap the tip of his egg against an opponent’s egg, while saying, “Christos Anesti” (Christ has risen); to which the opponent replies, “Alithos Anesti” (He truly is risen). The goal is to crack the opponent’s egg, forcing them out of the game. The game continues around the table – usually amid hooting, hollering and laughter – until the last egg remains unbroken. Besides bragging rights, the winner earns good luck all year. “These are the traditions I grew up with and I wanted to keep them going,” says Helen. “A lot of our customers are Greek, so they are familiar; but many others are not and it’s been fun introducing our foods and customs to them. Our Easter celebration was a big hit last year!” The occasion marks the kick-off to the restaurant’s busy spring catering season for christening parties, communions, showers, Mother’s Day, graduations, and other entertaining events. Helen provides personal attention to customers, helping them plan catering menus that feature the restaurant’s Greek specialties, served family-style. She says some of their most popular dishes for catering are classics like Pastichio (a thick Greek pasta with ground beef and lamb), Moussaka (a hearty eggplant dish, available with or without meat), Spanakopita (spinach and feta layered with delicate phyllo pastry), Farmer’s Salad (the traditional Greek salad with tomatoes, cucumbers, red onion, feta, and olives), and Baklava (a sweet pastry made with honey and ground nuts). Anemos can accommodate up to 120 guests for private parties at the restaurant, and also offers off-premise catering, or take-out trays ANEMOS GREEK CUISINE for at-home parties. F

or the past few years, the heavens have been a-tremble with abrupt, insistent, high-voltage energies. Uranus, the planet of sudden change and unexpected events, has been engaged in an intense, pressure-packed connection to Pluto, the “no-holds-barred” routerouter and transformer/healer of deep-seated toxicity and woundedness. This was a “dance” that came together exactly in a lockjaw grip for an almost unprecedented seven times between 2012 and 2015, urging us to look courageously at the pain we have caused ourselves and others and take action to heal it. Then there was the double-whammy of Saturn, the karmic teacher of accountability and responsibility, travelling in Scorpio, the sign naturally associated with Pluto, while Pluto travelled through the sign of Capricorn, the sign naturally associated with Saturn. This twosome collaborated to rub individual and global noses in the consequences of their limitations and shortcomings, and like Pluto and Uranus, mandated corrective action. Also stirred into the mix last year was Jupiter, travelling through fiery, exuberant, larger-than-life Leo, doing what Jupiter does: expanding all the energies that surround it. All together, these planetary influences delivered an ever-escalating series of experiences designed to get our attention in the name of healing, growth, and progress.
