THE YEAR AHEAD I come from a family that loves to celebrate. Birthdays and anniversaries, graduations and promotions, send-offs and homecomings, Friday afternoons—when it comes to marking milestones or making special occasions feel all the more special, we’re game. Which is why I’m excited for the year ahead; there’s a lot to celebrate. For starters, WestJet turns 20 this year (on February 29, to be exact). To honour this auspicious birthday, we’ve chosen what we believe are the 20 most exciting destinations to put on your travel list for 2016. Many of these places are observing notable birthdays or anniversaries of their own this year, while others are debuting long-awaited attractions, launching inaugural events or finding new ways to

pay tribute to time-honoured traditions. We reveal our list of top destinations—and the reasons to celebrate them—on page 42. Included on this list is Cuba, thanks in part to the thaw in its diplomatic relations with the United States and the gradual easing of U.S. travel restrictions to the island. Change and anticipation are in the air throughout this Caribbean destination, and, starting on page 56, writer (and perennial Cuba visitor) Tim Johnson shines the spotlight on some of the exciting ways the country is revitalizing itself. ennie Bowen Steed’s idea of fnding love changed on a fight when she saw an ad for It’s Just Lunch, a personalized matchmaking service for busy professionals. The ad read like a good friend who could introduce her to single, professional men she wouldn’t have the opportunity to meet on her own. Today, Bowen Steed is married to her IJL match Greg Steed. We sat down with Greg and Jennie to learn about their dating experience, lifestyle, and why they chose to invest in their pursuit of relationship happiness.
Why did you join IJL? G: I’d been divorced for about two years, and it was a hectic time career wise. My company was in a transitional phase, and it demanded a lot of my time and effort, so I didn’t have time for much else.
Favorite frst date memories? G: I was attracted to her right away. On the second date there was a real chemistry. Then it evolved very, very quickly. J: When Greg and I started talking, I discovered we had similar careers. I remember the conversation was so easy and comfortable. When I shared my date feedback with my IJL matchmaker, I let her know that Greg and I had made arrangements to attend a big award dinner at his country club. The minute I walked in, I knew he was a consummate gentleman. He was attentive and made sure I was introduced to everyone.
How did IJL compare to your online dating experience? G: Online dating isn’t easy, it’s work. I’ve got a full-time career; I didn’t need another job. With IJL they did everything for me. You’re busy with your career and everything else going on – IJL was just easier. The caliber of matches was much higher.
Best part about dating thru IJL? G: Besides choosing all my matches I would say the scheduling of my dates. They call you and ask what your schedule is like, so you don’t have to worry about it. If I said I was available Wednesday or Thursday this week and Sunday next week they would fnd a way to ft dating into my schedule.
What would you tell a friend who was interested in IJL but was tentative about making the investment? G: At the end of the day what is your end goal? hen Greg Taylor and two fellow brewery workers found themselves unemployed following a buyout, they decided to jump into the vat and brew a craft pilsner beer better than anyone else. That decision was 16 years ago. Now Steam Whistle Pilsner is sold in almost every province in Canada and the brewery, located in a former railway roundhouse at the foot of the CN Tower, is one of downtown Toronto’s most popular tourist attractions.

How did Steam Whistle get started? Cam Heaps and Greg Cromwell and I were coworkers at a microbrewery in Ontario, but we were all fired when the brewery was bought out. One night, during a canoe trip, we sat around a campfire talking about the business of brewing beer and how much we all missed the industry. Just before sunrise someone said, “We could make a better beer.” Somehow, we followed up on that statement. Business philosophy? Happy customers and happy staff make for a successful business; take care of the staff and they will take care of the customer in the same way. My dad said the way to success is to build word of mouth by doing a good job, with better value than the customer expected. What’s the story behind the name? We considered calling

CAN'T-MISS DISH The famed Clams and Lardo tacos make it more than worth stopping at B.S. Taqueria, but the Rice and Beans dish is the surprise star of the menu. With crispy toasted rice, fried garbanzos, fresh chiles and a little bit of magic, this crunchy mix of deliciousness bears no resemblance to the refried mush that passes as a side at most Mexican joints. SMITH Winnipeg Jason Colatruglio of Smith loves encouraging his patrons to try savoury cocktails with elements such as house-made raisin bitters and rosemary-infused bourbon. Meet the man behind frozen-river dining in Winnipeg.
n the dead of winter, dining in the middle of a frozen river isn’t an activity that most people would actively seek out—unless they’re in Winnipeg. Now moving into its fourth year, RAW:almond—a temporary restaurant built at The Forks, an historic meeting site where the Assiniboine and Red rivers merge—sees locals and tourists donning their biggest, puffiest winter jackets and sitting down in subzero temperatures for one of the most original dining experiences in the country. My own visit to RAW:almond last year was distinctly memorable. Teeth chattering, I made my way down the ice toward a large, illuminated structure, and, despite the chilly temperature, was embraced by a surprising sense of warmth as soon as I walked in. It was the subdued lighting from the custom
metallic fixtures, the aromas wafting from the makeshift kitchen as chefs prepared for the busy night, and the long tables with tree-trunk stools topped with animal fur that helped melt the winter chills away. What followed was an evening of refined food, wine and pure enjoyment as chefs from around Winnipeg and across the country worked together to serve us course after course of creative dishes, including popcorn shrimp with beet mustard and jalapeno compound butter, smoked seafood chowder and soy-glazed crispy pork hock with house-made kimchi and scallions. Among the chefs behind this incredible frozen-river experience is co-creator Mandel Hitzer, who is celebrated nationally for the delicious food he creates at his Winnipeg restaurant, deer + almond.
Q How did the idea for RAW:almond first come about? A I wanted to unify the food scene in Winnipeg, and now, because of it, we are spreading out and meeting people from across the country. It’s cool that things are moving in the direction I wanted them to, which was to be more collaborative. Q What should a RAW:almond

The atmosphere in Barbados is going to be festive all year long as the tiny island celebrates 50 years of independence. On Labor Day weekend, Boston will host its first-ever IndyCar Grand Prix on a 2.25mile, 11-turn course, where the world’s best drivers will loop around the Boston Convention and Exhibition Center at speeds of up to 200 mph. Festivities will be held throughout the city in the week leading up to the event, guaranteeing a party-filled atmosphere.

t’s a sunny Saturday, and we’re cruising down Havana’s Malecón—the city’s iconic, eight-kilometre-long sea drive—in a cherry-red 1957 Chevy. As the big car floats through light weekend traffic toward el centro, I take in the lively scene. People are clustered all along the crumbling sea wall, sitting and standing and dancing and playing in couples and groups—a bottle of rum often in the mix. Long the favourite hangout of Habaneros, the Malecón is where locals go to while away the tropical hours of a weekend. It’s an island-time ritual that has been honoured for decades, says my friend and car-mate, Guillermo Cabrera, who was born and raised here. But, while some rituals remain steadfast in Havana, a great deal is changing here thanks, in large part, to last year’s thawing of diplomatic relations between Cuba and the United States. One of the biggest outcomes of this was an easing of more than a half-century of U.S. travel restrictions to the Caribbean’s largest and second most populous island. “The changes are good for Cuba, good for the people,” Cabrera says. “The money they will bring, the additional tourists—it will help everybody.” As we near the city’s core, signs of these changes become ever more apparent. Almost everywhere I look are machines and operators working to fix Havana’s roads and to give its exquisite Cuban Baroque and art deco buildings long-awaited facelifts (or, in some cases, gut jobs).

This is a new Cuba—or, at least, a Cuba that is becoming newer every day. Starting in the capital and emanating out, like shockwaves across the country, new developments—funded in large part by investors from Canada, Spain and China— are transforming this island nation that, for the first time in a long time, is evoking a palpable spirit of optimism (mixed in with a bit of excited trepidation). It all started with the economic reforms of Raúl Castro, Fidel’s brother, who took the reins of power of the country’s communist regime eight years ago and instituted incremental improvements. He has permitted a limited amount of free enterprise, allowing heretoforeunheard-of expansions in self-employment and the private sector. He has also loosened controls on mobile phones and eased up on the rules governing the sale of cars and real estate. Among the businesses to have benefitted most overtly from these improvements are Havana’s paladares, or privately run restaurants. “The culinary culture is almost unrecognizable now, versus when I first came here,” says Tanja Buwalda. Originally from Ireland, Buwalda fell in love with Cuba on her first visit and returned regularly for almost a decade before moving to the island permanently around three years ago. Now one of Cuba’s top food bloggers and guides, she marvels at the city’s dining evolution.

Les changements ont démarré dans la capitale et se sont propagés dans tout le pays. De nouveaux développements, financés en grande partie par des investisseurs canadiens, espagnols et chinois, transforment cette île nation qui pour la première fois depuis longtemps manifeste un réel optimisme (mélangé avec une certaine appréhension). Tout commença avec les réformes économiques de Raúl Castro, le frère de Fidel qui, il y a huit ans, prit les rênes du pouvoir de ce pays communiste et entreprit des améliorations progressives. Il permit une certaine forme de marché libre, c’est-à-dire des expansions au travail autonome et au secteur privé qui n’existaient pas auparavant. Il assouplit aussi les contrôles sur les téléphones mobiles et les règles régissant la vente de voitures et de biens immobiliers. Les paladares, ou restaurants privés de La Havane sont parmi les entreprises qui ont le plus profité de ces améliorations. « La culture culinaire est presque méconnaissable par rapport à ce que j’ai connu à ma première visite », nous dit Tanja Buwalda. Originaire d’Irlande, Buwalda est tombé d’emblée amoureuse de Cuba et y est retournée souvent pendant presque dix ans avant de s’y installer définitivement il y a trois ans. “Most of the changes have happened in just the last two years,” Buwalda says, noting that paladares originally started as very small operations—usually, just a handful of tables in a proprietor’s home, with service staff sourced entirely within the owner’s family. But reforms made in 2013 now permit these restaurants to seat more patrons and to hire real waiters and cooks. Enrique Núñez, owner of La Guarida—one of Havana’s most famous restaurants—sees firsthand how reforms such as these are improving his industry. Since opening in 1996, his revered eatery—a place ahead of its time— has hosted everyone from Steven Spielberg and Sting to Queen Sofía of Spain, but serving such luminaries didn’t curb the frequent harassment of inspectors looking to stifle free enterprise. “We played the cat and the mouse,” Núñez tells me, in Spanish-accented English. Following the recent reforms, however, he has been able to expand his restaurant, and he’s got more than his fair share of new competition across the city. “We’ve always had good chefs, but the problem was the motivation,” Núñez says as we sip Havana Club rum at La Guarida. “Now, we have it. Competition was the solution for better food. We know that, if you cook well, everything will be better.” Chef Julio César Imperatori agrees. A little over two years ago, he opened O’Reilly 304, a seafood-focused paladar in the heart of Havana’s Old Town. “Because of the paladares, now is the best time to come to Cuba,” he says, noting that his drive to produce fresh and inspiring dishes has pushed him and other chefs to circumvent the country’s moribund market system, which provides little in the way of fresh and varied ingredients, and to go directly to local farmers to get them growing previously unheard-of produce, like asparagus and cilantro. “I know the farmers personally,” says Imperatori. “They grow it because I ask for it.” Paladares aren’t the only places embracing this spirit of renewed energy and development. With Americans already flowing into the country on special educational trips—a flow that will eventually become a flood when all restrictions on their travel are lifted—Cuba is experiencing a significant influx in new hotels, enticing tour packages and enhanced tourist attractions. Even places like the Tropicana, a legendary club that’s long provided dinner and dance shows, are upping their game. Of course, there are some in Cuba who fear such changes will turn their country into a sort of tropical Las Vegas, but the underlying sentiment here in the capital city is one of excitement. And it’s contagious.

Il alla directement vers les fermiers locaux pour leur demander de cultiver des asperges ou de la coriandre, ce qu’ils ne produisaient pas auparavant. « Je connais ces fermiers personnellement, dit Imperatori. Ils cultivent ces légumes parce que je le leur demande. » Les paladares ne sont pas les seuls à accueillir cet esprit d’énergie et de développement renouvelé. Compte tenu du fait que les Américains affluent déjà dans le pays en voyages éducatifs spéciaux, flot qui s’intensifiera avec la levée des restrictions de voyage, Cuba connaît un achalandage important des nouveaux hôtels, et propose des forfaits intéressants et des attractions touristiques améliorées. Même des endroits comme le Tropicana, boîte légendaire connue pour ses dîners et spectacles de danse, se met au parfum. Évidemment, il y a des Cubains qui craignent que tous ces changements transforment leur pays en un Las Vegas tropical, mais le sentiment général qui règne dans la capitale en est un d’excitation, et c’est contagieux.

A thin strip of land jutting out into some of the world’s bluest, clearest waters, Varadero, about 150 kilometres east of Havana, has long been Cuba’s favourite vacation destination. For years, guides providing commentary on buses bound for Varadero from the airport or from Havana would rely on shop-worn jokes to entertain their guests. But now many of them talk of change and growth. Already home to an uninterrupted stretch of development, the area is making room for more. Gaviota Group, which owns around 55 hotels in the country—and hosts 500,000 Canadians every year—just opened Ocean Vista Azul this past November. It also debuted the 4.5-star Meliá Marina resort in 2013. Whether or not you’re a guest of this luxurious development, you can pay it a visit to tour a number of amenities not typical in Cuba, such as a 1,200slip marina and Plaza Las Morlas, a village complete with boutiques, supermarket and new dining options.

Set in the Atlantic Ocean, Cayo Coco (and its diminutive sister island, Cayo Guillermo) is a place apart—literally. Now linked to the Cuba mainland by a 27-km causeway across the Bahía de Perros, this island was once an uninhabited tropical paradise. But, since the first resort opened here back in the 1990s, it has blossomed into a popular vacation spot. A visitor has two options here: stay and relax at one of the island’s amenity-rich all-inclusives (the Pullman Cayo Coco just opened last fall), or go and explore. The former will include pool time and many Cuba librés. And the latter? Lots more options. You can cross the causeway and experience nearby Morón or, even better, the provincial capital of Ciego de Ávila. Ciego, as the locals call it, is often touted as a miniature Havana, with a compact city centre, great dining and fun boutiques set along a pedestrianized street.

Situated in the remote east part of the country, Holguín has a long history of good press; Christopher Columbus first set foot near here back in 1492 and he liked it—a lot. Upon first seeing the coastline, he declared the stretch of sand to be “the most beautiful land human eyes have ever seen.” The resort area of Holguín consists of Guardalavaca, which includes Esmeralda and Playa Pesquero. More than two hours south are the green Sierra Maestra mountains, where Fidel Castro and Che Guevara hid out during the Cuban Revolution in the late 1950s. You can head there to visit their camp, the Comandancia de la Plata, where you’ll see their radio hut, hospital and Castro’s private shelter. Closer to your beachside hotel is the city of Holguín itself, Cuba’s fourth-largest. Known as the City of Parks, it’s home to a number of green oases, as well as its fair share of museums. Take in some history, then head back to the beach.

ast winter, I decided to load up the family van and take my youngest three boys—Nicholas, nine, and 12-year-old twins Nelson and Aemon—on a four-day road trip. Where? To British Columbia’s Thompson Okanagan. Why? To ski to our hearts’ content. While the Thompson Okanagan is known best for its world-class wineries and sunsoaked summers, it also happens to be home to some fantastic ski resorts that take full advantage of the light, powdery snow that falls in abundance throughout the region every winter. They say variety is the spice of life, so I figured we should sample a little bit of everything on the area’s ski-resort spectrum: a small, grassroots community hill (Mt. Baldy); a sleek, mid-sized local favourite (Apex Mountain Resort); and a world-class behemoth (Big White). Yes, indeed, it was a plan. We would start in the south and work our way north, testing our mogul mojo along the way. Here’s what we found.

’hiver dernier, je suis parti avec mes trois plus jeunes fils, Nicholas, 9 ans, et les jumeaux Nelson et Aemon, 12 ans, dans la fourgonnette familiale pour une excursion de quatre jours dans la région de Thompson Okanagan en ColombieBritannique, histoire de skier à cœur joie. Bien que cette région soit avant tout connue pour ses vignobles de calibre mondial et ses étés ensoleillés, elle compte aussi des stations de ski fantastiques qui profitent pleinement de la lumière et de la neige qui y tombe en abondance chaque hiver. On dit que la variété met du piquant dans le vie, j'ai donc pensé que nous pourrions goûter à tout ce que la région propose, c'est-à-dire la petite station communautaire populaire (Mount Baldy), la belle station de taille moyenne (Apex Mountain Resort) et enfin le colosse de calibre mondial (Big White). C’était du moins l’intention. Nous commencerions dans le sud et remonterions vers le nord, et en cours de route, nous testerions notre talent pour les bosses. Voici ce que nous avons trouvé.
