LOOKING FORWARD
I’ve always enjoyed the month of January because it marks the beginning of a new year and, at WestJet, we have a lot to look forward to in 2018. This year, we will launch Swoop, Canada’s ultra-low-fare airline. Headquartered in Calgary and backed by WestJet, Canada’s most-trusted airline, Swoop will offer Canadians an unbundled, no-frills, lower-fare travel option. Can’t wait? We hear you! Watch for announcements about fares and routes coming next month. Speaking of announcements, WestJet’s world is about to get a whole lot bigger. Last year, we placed orders for 10 Boeing 787 Dreamliner wide-body aircraft (and negotiated options for

another 10). With a mission range of 14,000 kilometres, these airplanes will allow us to take you almost any place on the planet. Although they won’t begin arriving until early 2019, we’ll be making some exciting announcements about new international destinations this year. While we await our Dreamliners, we’ll take delivery of more Boeing 737 MAX aircraft in 2018, complete with ovens on board, which will allow us to offer hot meals as part of a new, elevated inflight dining experience. We’ll also take delivery of two more Canadian-made Bombardier Q400s for WestJet Encore, making us the second-largest operator of Q400s in the world. Our WestJet Rewards program will continue to grow and offer even more opportunities for members to earn and redeem WestJet dollars both within the WestJet network as well as with our global airline partners Delta, Air France/KLM and Qantas. Watch for other global partners to join our Rewards network in 2018. And, finally, I’m very proud to announce WestJet’s new President’s Circle Award. This new premier award recognizes 12 amazing WestJetters who consistently go above and beyond to create a remarkable guest experience. One of the 12 winners will be recognized each month, on the last page of this magazine. Congratulations and thank you to all the winners. And thank you for flying with us today.

WHAT WE LOVED CE QU’ON AIME
WHAT THE WESTJET MAGAZINE TEAM LOVED MOST ABOUT WORKING ON THIS ISSUE… CE QUI A PLU À L’ÉQUIPE DE LA REVUE WESTJET
EDITOR/ RÉDACTRICE EN CHEF I visited Glasgow a couple of years ago and have wanted to return ever since. The music scene there is undeniably exciting, but it was the architecture that really grabbed me. So, the Glasgow piece (page 72) in our Where to Go In 2018 list was especially fun to work on.
DIANE BOLT
ASSOCIATE EDITOR/ CORÉDACTRICE I fell in love with Canada on a ski trip to Fernie Alpine Resort in 2003 and called this mountain town (page 32) home when I relocated from the UK. Spending an afternoon wandering its streets brought back many happy memories and created a few new ones, too.
SARA SAMSON
ASSOCIATE EDITOR/ CORÉDACTRICE For a place that’s known for its delicious, but decadent, culinary offerings, I was pleasantly surprised by Montreal’s lighter side. It was a real treat to visit LOV and experience the city’s burgeoning vegan and vegetarian dining scene (page 42).

DESIGN DIRECTOR/ DIRECTEUR DU DESIGN Being an avid Game of Thrones fan, and a regular visitor to the UK, I really enjoyed seeing what Belfast (page 60) had to offer as a destination for the perfect city break. It’s on my radar for 2018. TERESA JOHNSTON
ART DIRECTOR/ DIRECTRICE ARTISTIQUE I’m a huge animal lover, so it was a real treat to look at dozens of sloth images for the Costa Rica write-up (page 67). I would love to visit Nayara Resort, Spa & Gardens or Nayara Springs to see one of these creatures up close.

Long in the Tooth? Receding gums are not just a normal part of aging
Ever heard the expression “long in the tooth”? Although it originally referred to horses, whose teeth continue to grow throughout their lives, it’s often applied to people. And it is not exactly a compliment. If your teeth look longer, it’s not only an aesthetic issue. It means your gums are receding — a telltale sign of possible gum disease. If left untreated, gum disease can cause swelling and bleeding, loosening or shifting teeth, poor chewing function and, eventually, tooth loss. Gum disease is also associated with other medical conditions including heart disease and diabetes. If you’ve noticed puffy, red, tender or bleeding gums while brushing or flossing, a persistent foul taste or odour, or changes in how your teeth fit or bite together, it’s time to seek the expert help of a periodontist.

NYC
1 The city’s first subway stop opened in 1904, and though it closed just 41 years later, Old City Hall Station’s tiled interior remains an architectural marvel. Tours are only available for New York Transit Museum members (you can visit nytransitmuseum.org to become a member), but everyday riders can try to catch a glimpse of the abandoned platform by staying on the 6 train after its final stop at Brooklyn Bridge.
When it comes to underground attractions, New York City’s subway system gets most of the attention. But there’s much more lying beneath the Big Apple’s concrete streets. Here are six subterranean spots to explore.
4 Situated in the basement of a Midtown high-rise office building, Sakagura is a cozy oasis specializing in Japanese fare. The chic izakaya (a Japanese gastropub) boasts one of the most impressive sake lists in New York City, along with shareable small plates and excellent lunch specials.

5 Located in the Financial District, the Federal Reserve Bank of New York is perhaps most recognizable from the film Die Hard with a Vengeance (the Hollywood set was based on this bank). A guided tour of the museum and underground gold vault gives the public a unique perspective on the history of the United States’ banking system.
2 Hidden beneath sister bar The Happiest Hour in the West Village, Slowly Shirley is a throwback to the cocktail lounges of the 1940s, complete with art deco decor and jazzy soundtrack. Cocktails come courtesy of beverage director and partner Jim Kearns and also nod to the bygone era— classics like daiquiris, sours and martinis all share menu space with sophisticated new sips, like the rum- and pisco-infused Tahitian Coffee.

While drinks are part of the evening, the focus is on Michelin-starred pastry chef Rory Macdonald’s exquisite all-sweets six-course tasting menu.

SEEK BEHIND THE SCENES
LET IT SNOW
Mélanie Raymond—CEO, Carnaval de Quebec
Q
What’s the history of Carnaval? The first modern Carnaval de Quebec took place in 1955. It was started by a group of business owners to fire up the city’s economic development during this quiet time of year. Today, we stick to traditions such as the arrow sash (a 19th-century sash that fastened clothing around the waist and prevented cold air from seeping in) and our king of festivities, Bonhomme Carnaval, but we carefully mix in innovation, too.
Q
When do you start planning? We don’t stop. Innovation is always key and we also keep a place for tradition. Tradition and the celebration of our nordicity is part of our DNA. So, one of the challenges is to respect our long traditions and keep innovating with the program. It’s our mission to surprise our locals
18
JANUARY 2018 | WESTJETMAGAZINE.COM
and visitors with something new and unexpected, so our main attractions are one-shot deals—if we did it last year, it won’t be back.
Q
What are the biggest challenges? Carnaval is held during the winter, and this introduces the challenge of dealing with cold weather, snow and even rain, so we have to be ready with a Plan A, B and C. I don’t work alone. I have a dedicated and talented team of 35 people working full-time all year for this event, and we have more than 900 volunteers helping. It’s a family, and everyone is ready to put in extra hours; I’m so proud of them.
Q
Who is Bonhomme? Bonhomme is Carnaval’s official ambassador and the living representation of the Quebecois joie de vivre. Each year, on [Carnaval’s] opening night, the mayor of Quebec City gives Bonhomme the key to the city. Quebec is a winter wonderland and Bonhomme wants people to play outdoors and love the season as much as he does. People must have a Bonhomme effigy [a $15 Carnaval pin] to enter most of Carnaval’s sites.
Q
Are there free events? Entry to Jos’ Camp in the Parc de la Francophonie is free. There are activities like axe throwing,
a lumberjack challenge and the mechanical moose, plus Snow Bath, where people in bathing suits play in the snow with Bonhomme.
Q
What are Carnaval’s top draws? Bonhomme is the star, and during Carnaval, he lives in the ice palace. It takes almost a month to build the palace using from 1,800 to 2,000 ice bricks. We hold a contest in the fall, and students from the architectural program at Laval University [submit] designs for the ice palace. These students do a great job imagining unique designs for the palace, and it’s a great way to involve our citizens. —Diane Bolt

A
s the former assistant director of Quebec’s Junior Chamber of Commerce, Mélanie Raymond has worked with nonprofit organizations before, but never on something as big as Carnaval de Quebec. This 17-day annual winter festival, one of the largest in the world, takes place in Quebec City and welcomes more than 400,000 visitors. Raymond, who joined the Carnaval team in January 2016, was tasked with rejuvenating the nearly 65-year-old event. Last year, as part of that endeavor, Raymond moved Carnaval from its site of 20 years on the Plaines d’Abraham and spread it out over five downtown sites. “We wanted Carnaval to come alive again, and for people to walk the streets of downtown and get involved,” she says.

Perched on the highest floors of this castle hotel in B.C.’s Coast Mountains, the new Alpine Suites at the slopeside Fairmont Chateau Whistler offer a bird’s-eye view of the surrounding slopes. Few roosts in Whistler reveal such action: skiers, riders and a whirring Wizard Express chairlift. Opened last year, these roomy, 600-square-foot suites help define modern mountain luxury with smooth lines, rustic textures, flat-screen TVs, contemporary fireplaces and, best of all, walls adorned with black-andwhite photographs of Whistler’s past. Spend your time skiing past the Chateau’s steamy outdoor pools, channeling your inner calm at The Vida Spa and relaxing après-ski with a martini in the Mallard Lounge. Rates from $479. SUNSHINE MOUNTAIN LODGE Banff National Park, Alta. Rewind the tape. Cue the classic snow setting. Sit back and savour scenes from a retro ski flick. That’s the cozy cabin feel coming your way with a stay at Sunshine Mountain Lodge. Situated high in the Canadian Rockies, this 84-room, mid-mountain boutique hotel at Banff Sunshine Village ski resort is surrounded by snow. Accessed by skis, snowboards, chairlifts and gondolas only (no cars), it’s one of Canada’s true ski-in/ski-out accommodations. Step outside and slap on your boards; you’ll be riding the Standish Express in seconds. Later, slip into the lodge’s outdoor hot pool—it’s steamy, slopeside and iconic among skiers. A west wing addition was added to the lodge’s clean-lined design in 2009 and features two-storey lofts with rosy wood tones, fireplaces and soaring windows. Rates from $540 (includes lift ticket). THE SUTTON PLACE HOTEL Revelstoke Mountain Resort, B.C. If B.C.’s Revelstoke Mountain Resort is Canada’s ideal hub for heli-, cat- and lift-served skiing, then The Sutton Place Hotel is its ideal lodging. In the lobby, you’ll find a crackling fire and a bevy of on-the-ball bell captains offering tips on Revy’s secret powder stashes. Rooms are spacious, and many have balconies overlooking the Revelation Gondola or the Monashee Valley. Out front, there’s a heli-pad with choppers whisking heliskiers into the mountains. Pre-flight, fuel up on a hearty breakfast at Sutton’s Rockford Wok Bar Grill, and later, après-ski on-site at The MacKenzie Common Tavern or head downtown, roughly a 10-minute drive (or shuttle) away. But first, soothe your muscles in the Sutton’s outdoor heated pool and hot tubs—with Revy’s 10-metre annual snowfall, you’ll be glad you did. Rates from $475. (suttonplace.com) —Lori Knowles

THE ISLAND OF HAWAII
Go belly-to-belly with manta rays and peek into the earth’s molten core on the “Big Island.”
F
ormed from five volcanoes (four of which are active), Hawaii’s Big Island is a place of tropical beauty, cultural riches and geological wonders. The Island of Hawaii—the Big Island’s formal name—is the youngest and largest island in the state, as well as the birthplace of Kamehameha the Great, the revered ruler who united the Hawaiian Islands in 1810. Make your base in the historic seaside town of Kailua-Kona, once home to Hawaii’s kings and queens, and start exploring. WESTJET.COM | JANUARY 2018

DAY 1 Morning Breakfast on a steamy bowl of saimin, an Asian-influenced noodle soup, at Teshima’s Restaurant in Kealakekua. After your meal, drive 20 minutes to Hawaii Forest & Trail headquarters to board the Kohala Waterfalls Adventure tour vehicle for an allday excursion. Your guide will take you 80 kilometres north through scenery dotted with black lava rock. Afternoon On the tour, take an interpretive twokilometre hike through the Kohala Forest Reserve (1), a lush rainforest on the slopes of a million-year-old volcano. Cross bridges over old sugarcane irrigation channels, rest in shady guava groves, see kukui trees (the Hawaiian state tree) and swim amid a waterfall. Picnic on sandwiches, guava juice and taro chips with a view of soaring sea cliffs. Evening Back in Kailua-Kona, enjoy dinner with an ocean view at Sam Choy’s Kai Lanai in the Keauhou Shopping Center. Chef Sam Choy helped define Hawaiian cuisine—try his Trio of Wild Hawaiian Fish and leave room for Mac Pie, a chocovanilla macadamia nut pie.

Morning Start the day with brunch at Daylight Mind Coffee Company (2), where co-owner Shawn Steiman literally holds a PhD in Coffee Science. Opt for the loco moco, a classic Hawaiian dish of eggs, meat, rice and gravy. Next, rent a paddleboard from Kahalu’u Bay Surf & Sea, a 10-minute drive away, and hit the water to look for yellow tang and sea turtles. Afternoon Drive 50 minutes north (pause for pineapple fritters at Holy Donuts on Ali’i Drive) to Pu’ukoholã Heiau, a National Historic
Site with one of the largest restored temples in Hawaii. The structure was constructed by hand from lava rocks under the direction of Kamehameha the Great. Evening Grab a poke bowl —a Hawaiian-Japanese dish of rice, seaweed and fish—from Da Poke Shack on Ali’i Drive and eat it on the beach. When the sun goes down, drive 10 minutes south to Sea Quest Rafting & Snorkeling Adventures for the Night Manta Experience, where you’ll watch these gentle giants slide and barrel roll through the water.

Morning Order the Hawaiian waffles with lilikoi (passion fruit) syrup at Kalikala Cuisine on Ali’i Drive—the shaded outdoor restaurant sits right under a massive, 150-year-old Moreton Bay fig tree. Following breakfast, board the KapohoKine Adventures van for the Evening Volcano Explorer tour. It’s not close to evening yet, but the tour will last until then—you have a long, fascinating day ahead.
JANUARY 2018 | WESTJETMAGAZINE.COM
Afternoon It’s a two-hour drive to Mount Kilauea (Big Island’s most active volcano) and Hawaii Volcanoes National Park, but the tour takes its time getting there. Stop for sandwiches and samples at a Kona coffee farm, visit a black sand beach, tour a lava tube and warm up at volcanic steam vents as your park-ranger guide shares stories of the volcanic events that make this island extraordinary.
Evening The tour continues on to Volcano Winery for a tasting and a meal—the Volcano Blush pairs well with your barbecue dinner. The Jaggar Museum & Overlook (3) is near the winery; here, you’ll learn volcano lore and science, and view the erupting Halema’uma’u Crater, a 520-foot-wide opening that turns the night-sky red. Now, relax on the long, sleepy drive back to Kailua-Kona. —Julia Williams

ROAM GOING LOCAL
LOCAL LEARNING "I like visiting the Phoenix Herpetological Society—I've been fascinated by reptiles and amphibians since I was a kid."
HAPPY HOUR “Four Peaks Grill and Tap is a popular spot for happy hour after work. It’s got a fun vibe, the service is always great and I think they have the best beer in Arizona. My favourite is the Hop Knot, an IPA.”
ARIZONA
Originally from Charlottetown, P.E.I., Seth Heald moved to Arizona to study at Arizona State University. He soon got hooked on the area’s warm, sunny climate and decided to start his own adventure guiding outfit in Scottsdale: Arizona Outback Adventures. Here are some of his desert-city favourites.
BEST RESTAURANT “The Vig. The Vig Burger or the Pad Thai are my favourites. [The McDowell Mountain location] has fantastic views of the mountains, it’s convenient to a lot of the outdoor activities that my wife and I like to do and it’s a great place to go after a hike or bike—it’s got a relaxed vibe so you can show up in your hiking or biking clothes.”

GREAT WAY TO GET AROUND “By bike. There’s a type of riding for everyone here, from the paved paths that connect north Scottsdale to Old Town Scottsdale—and even as far south as Tempe—to the more than 100 miles of single-track mountain bike trails. It’s just easy to get around the city by bike, and for the most part, it’s not very hilly.”
TOP DAY TRIP “Tucson is a great destination with a ton of diversity. The history there is fascinating, and it has the Arizona-Sonora Desert Museum, which is an amazing outdoor zoo. And be sure to take a drive to the top of Mt. Lemmon in the Santa Catalina Mountains. You can experience every ecosystem that exists between Mexico and Alaska all in one short drive.” —Karin Olafson

And don’t forget the trailhead for the famous Horseshoe Bend! Page, Arizona, is one of the youngest communities in the United States. It is in Northern Arizona, on the Southern Utah border on the Colorado River. It is approximately four hours north of Phoenix and four and a half hours east of Las Vegas. In 1958, some 24 square miles of Navajo Nation land were exchanged for a larger tract in Utah, and Government Camp, later called Page, was born. It was incorporated in 1975, and Page is now home to more than 7,000 permanent residents. Lake Powell and the Colorado River offer a wide variety of water sports. Two marinas can launch you onto the lake for a myriad of boating and water sport options. Colorado River rafting begins at the base of the towering Glen Canyon Dam. wo years ago, a finedining vegetarian restaurant in Montreal was virtually unheard of. Fast-casual places existed around the city, but there was a lack of trendy, full-service options. Chef Stéphanie Audet and restaurateur Dominic Bujold knew this was something the city needed, so they teamed up to open LOV, an upscale, vegetarian restaurant in the heart of Montreal. “This is a concept that existed everywhere else—California, New York, Vancouver, Toronto—but no one had dared do it in Montreal,” says Audet. “If, for example, I opened a steak house, I could look to all the steak houses in Montreal and compare numbers and do my research. But, when we opened LOV, we couldn’t compare it to anything in the city, so it was a big risk to take— but I was confident it would work.” Audet and her team were right: LOV was a success from the very beginning. The first location opened in Old Montreal in December 2016, followed by the downtown locale

It’s more expensive and can be harder to source, but I want our diners to be able to taste a very natural product,” says Audet. LOV’s commitment to freshness carries over into the decor, as well, with both spaces giving off an airy Palm Beach vibe, complete with whitewashed brick walls, hanging wicker chairs and terrariums. FEAST DRINK UP
MODERN MEXICAN
MOONSHINE Mexico’s drink scene might be best known for Kahlúa, tequila and mescal, but there are other local spirits that are still relatively unknown but equally rooted in cultural traditions. From artisanal raicilla to pulque, an ancient fermented beverage once enjoyed by the Aztecs, some of these under-the-radar drinks are making a comeback. Here are four modern twists on traditional spirits to try now.
RAICILLA
XTABENTÚN
PULQUE
Move over tequila and mescal, it’s time for raicilla (rye-see-ya), Mexico’s other agave spirit, to shine. Once reputed as a rustic version of mescal, premium raicilla is now being produced by upscale brands such as La Venenosa and artisanal distillers who carefully source wild-grown varieties of agave near coastal or mountain villages (like Mascota, Jalisco) and handcraft it to perfection.
This unique honey-anise liqueur is legendary throughout Mexico’s Yucatan Peninsula. Inspired by balche, a fermented bark and honey drink enjoyed by local Maya, this beloved product, distilled by Casa D’Aristi since 1935, is a golden elixir featuring honey drawn from the nectar of the Xtabentun flower by melipona (stingless) bees.
While mescal, tequila and raicilla are distilled spirits made from the heart of the agave plant, pulque is created from the plant’s sap, known as aguamiel (honeywater). This lightly fermented “drink of the gods” was a sacred beverage for Nahuatl priests and nobility during the Mesoamerican period. After a slump in popularity, it’s now back in the spotlight and can be found in pulquerias (taverns) across Mexico City.
TRY IT: Sample artisanal raicilla at Gaby’s Restaurant, a family-run resto-bar in Puerto Vallarta where the spirit is served in inventive ways. Opt for the Chile Pepino, a twist on the margarita, made with raicilla, triple sec, cucumber and just a hint of chili.
44
TRY IT: At Grand Velas Riviera Maya near Playa del Carmen, the Xtabentún cocktail showcases the liqueur’s subtle sweetness with a fusion of fresh pineapple, lime and soda. It’s best enjoyed at sunset from the resort’s rooftop Sky Bar.
JANUARY 2018 | WESTJETMAGAZINE.COM
TRY IT: Join a Mexico City walking tour hosted by Culinary Backstreets for an insider’s look at Mercado Jamaica, one of the city’s oldest markets, and a visit to a traditional pulqueria, where pulque can be infused with fresh fruits.
DAMIANA Golden-hued Damiana liqueur is made from the leaves and stems of an aromatic shrub that grows wild in the desert. Legendary as a fertility tonic, it’s often sold in bottles shaped like an Incan goddess and is traditionally served as a shooter or in a margarita (the first margarita was made with Damiana liqueur). But this sweet herbal botanical is enjoying renewed popularity as a key ingredient in upscale cocktails across Baja California Sur.
TRY IT: Chat with vendors and chefs while sipping a Nalguita Feliz, a refreshing cocktail with tequila, controy, agave honey, chile and Damiana at The Office Cantina in El Merkado, a food market in San Jose del Cabo. —Michele Peterson

Revelstoke, Panorama and Big White offer a trifecta of powder, terrain and off-slope amenities
FROM THE AIR IN WINTERTIME, British Columbia looks like one giant ski area. In every direction, mantles of downy white cover perfectly pitched peaks, with enticing glades adding a fun challenge at lower elevations. When you’re seated inside a whirlybird en route to heli-skiing in the Monashee Mountains near Revelstoke, this vision becomes reality—no matter where the Bell 212 helicopter touches down, you’ll be rewarded with face shots and effortless pillowy turns. Though B.C.’s backcountry wilderness beckons advanced skiers and snowboarders, the province’s 13 major ski resorts and 22 smaller community hills make the sport accessible to everyone. From intermediate family hills to vertigo-inducing expert playgrounds, meet three resorts that form a triangle of terrific terrain in B.C.’s snowy interior.

Indeed, it’s a mountain where would-be experts sharpen their edges down steep chutes and over gnarly bumps—almost 50 percent of terrain is designated advanced. What’s more, skiers can push the envelope by backcountry touring, cat skiing or even heli-skiing from the village (there’s a heli-pad right at the base of the resort). As Revelstoke’s reputation as an adventure Mecca has grown, outdoor enthusiasts are contemplating a lifestyle move to the mountain town. They’re finding a dream community in Mackenzie Village, which is located between the ski hill and downtown Revy. “Revelstoke is one of those places that you drive by and say, ‘I’d love to move there some day,’” says Mackenzie Village developer Shelley Evans. The master planned community is a mix of mountain modern designed condos and townhomes with all the features, plus shops and parks with a school nearby. Residents can walk downtown, access mountain biking trails right from the community or hop on a shuttle to the ski hill.

With views of snow-toqued peaks in every direction, Panorama earns its name. Located in the Purcell Mountains near Invermere, the resort caters to families but has extreme terrain for rippers, too. Drop in to Taynton Bowl to sample four new wide-open runs, totaling 120 acres, which ski like the backcountry (the bowl used to be part of R.K. Heliski’s tenure). Off the slopes, grab a cappuccino at Lusti’s, an après-ski bevvy at the Jackpine pub or mouth-watering barbecue and smoked meats at Cabin—
Just a 45-minute drive from Kelowna International Airport, Big White is regularly voted Canada’s best family resort. Beyond its snow globe-worthy village, complete with twinkly lights, the resort’s terrain is ideal for parents skiing with their children—soft, plentiful snow and gentle grades on many runs make it easy for different generations to ski and ride together. What’s more, all of Big White’s on-mountain accommodations are ski-in ski-out, so Mom and Dad no longer have to lug little skis and poles on a long trek to the chairlift. Parents can even pay a bit more and have a “ski concierge” come to the condo to pick up kids for their lessons. Après-ski, there are tons of family-friendly activities, too, from ice skating and tubing in the lower village to a build-your-own hot chocolate bar on select nights at the Happy Valley Day Lodge. n With more sun, snow and mild temperatures in the forecast as winter’s grip eases, now is the time to plan your spring skiing vacation to British Columbia.

Un restaurant végétalien de la ferme à la table aurait été incongru il y a quelques années à Parade Gardens, l’un des quartiers les plus durs de la ville. rom the guest rooms of The Courtleigh Hotel & Suites in Kingston, you can catch a beautiful view of the setting sun bathing the city’s rooftops gold while the Blue Mountains fill the horizon. It’s a surprisingly picturesque scene for this city of about 660,000 that has, historically, been cited more often for its crime statistics than its scenery. But that’s all changing. Jamaica’s capital is no longer just a stop on the way to the beach. Crime rates are down and visitor numbers are up, as is investment in Kingston’s infrastructure. A new revitalization plan for Downtown Kingston is intended to rehabilitate blighted areas and attract residents, businesses and tourists. While improvements will continue for years, transformation is already well underway in the city through grassroots projects such as Life Yard, an urban farm and restaurant celebrating Rastafarian culture and promoting social change. A few years ago, a farm-to-table vegan restaurant would have been unexpected in Parade Gardens, one of the city’s grittiest neighbourhoods. Today, a graffiti mural of a Rastafari lion welcomes people to Life Yard, and visitors can enjoy dishes like sweet potato pudding in the open-air restaurant or take

While music has always been a defining element of Kingston’s culture, the city was designated a Creative City of Music by UNESCO in late 2015 in recognition of the important role reggae, ska, dance hall and rocksteady have played in shaping the city’s economic, political and cultural identity. There are plenty of spots to pay homage to Kingston’s greatest musicians, including the new Peter Tosh Museum. As a founding member of the Wailers and a successful solo artist, Tosh is a reggae legend, and the museum celebrates his life with a small collection of musical and personal memorabilia. The museum also hosts special events that feature up-and-coming musicians such as Tosh’s granddaughter, Jahzarah Tosh. To get a glimpse of Kingston’s more classic musical history, a visit to the Bob Marley Museum on Hope Road is a must. Evidence of Kingston’s evolution can also be found in the infrastructure changes that are slowly starting to take shape across the city. The most highly anticipated new developments are centered around Kingston’s waterfront—the new Victoria Pier, which sat unoccupied and unused for nearly two decades, has received a makeover and reopened late last year with restaurants, outdoor entertainment and an art gallery. Not far from the waterfront, the sprawling Coronation Market—a fascinating mix of farmers’ market, swap meet and food court—is another one of the areas targeted for restoration. Brimming with vendors hawking fresh fish, herbal remedies and tropical fruit, the market is surrounded by 19th-century buildings, many with fine Victorian latticework that is faded and crumbling. Revitalization plans include restoring these buildings back to their former grandeur and upgrading vendor facilities while keeping the district’s dynamic spirit—an encouraging sign of the potential that awaits in Downtown Kingston.
—Michele Peterson

Places related to that historic gathering have been preserved, including Stanton’s Washington Street home and the site of the Wesleyan Chapel, where the official demand for suffrage—the Declaration of Sentiments—was signed.

The Finger Lakes Cheese Alliance Representing 12 dairy farms and creameries, this cheese consortium spotlights the crème de la crème of the area’s artisanal fromage. Seven of the alliance’s producers are open year-round for tours, including Engelbert Farms (a certified organic dairy farm) and goat cheese specialist Side Hill Acres. The annual Finger Lakes Cheese Festival (July 28) features many styles of cow and goat cheese, local cuisine and live music.

Harriet Tubman National Historical Park Located near the Canadian border, the Finger Lakes served as a critical stop for slaves escaping north between the late 1700s to mid 1800s on the Underground Railroad—a secret network of antislavery opponents and safe houses. At her former Auburn residence, learn more about Harriet Tubman, who escaped slavery in 1849 only to return south to liberate 300 others as a Railroad “conductor.”
Dr. Konstantin Frank Wine Cellars The Finger Lakes’ rise to winemaking powerhouse began five decades ago when Dr. Konstantin Frank discovered that the area’s cool climate was ripe for vinifera grapes, a European species that is widely considered the best type of grape for both white and red winemaking. Frank’s eponymous vineyard is still a top producer of the terrain’s signature Rieslings and boasts Instagram-worthy views of Keuka Lake.
Watkins Glen State Park Home to about five kilometres of the Finger Lakes Trail (an impressive 1,541-km footpath network), Watkins Glen State Park has 19 waterfalls, one winding gorge path and 832 stone steps, making this 778-acre park a must-visit spot. Water flow is at its peak in the spring— when rainbow trout also pass through nearby Catharine Creek—but fall is the season to visit if you’re the leaf-peeping type.

elfast has seen so much rejuvenation in the last two decades, even its long-time residents have trouble recognizing it sometimes. In the early 1900s, the Northern Ireland capital thrived thanks to its shipyards, which built the world’s most luxurious ocean liners (including the RMS Titanic), but the city’s growth stuttered in the late 1960s, when a three-decade-long conflict over the region’s constitutional status began. Since “the Troubles” ended in the late 1990s, Belfast has recuperated, and its compact city centre now hosts world-class museums (don’t miss the Titanic Belfast Museum), Michelin-starred restaurants, repurposed heritage buildings… and dragons. The city, which lies on the northeastern coast of Ireland, but is part of the United Kingdom, has hosted HBO’s award-winning fantasy drama Game of Thrones (GOT) since it began seven seasons ago. In addition to being the TV show’s main production headquarters, Northern Ireland stands in for Westerosi locales like the Iron Islands, Winterfell and more. With the show’s final season set to air in late 2018, this is the year to visit its magical landscapes. Katrina Doran is a native Northern Irelander and has been part of the show’s makeup team for the past three seasons. She’s travelled around Belfast and the Northern Ireland countryside applying prosthetics to stuntmen, checking extras’ beard lengths and even colour-matching makeup to the mud found near the town of Saintfield, where an epic Season 6 battle was filmed. Following are a few of the reasons Doran thinks this is the year to visit Belfast:

GOT filming sites “Mostly, anything that’s interior in the series is shot in Titanic Studios in Belfast; outdoor scenes are filmed all over Northern Ireland. The most famous location is the Dark Hedges [a.k.a. the Kingsroad], which is about 40 minutes outside Belfast. It’s an unusual location where the trees all bend across the road.” »
Mind-bending treats “Co Couture is a chocolate shop on Chichester Street. They make everything on the premises, so the smell of chocolate as soon as you walk in is just incredible. It’s my literal happy place. You can have a hot chocolate served with cream and freshly made marshmallows.” »
A memorable pub “The Crown Bar is a National Trust property and they do a really good Irish stew. You’ll get an amazing pint of Guinness there, too, because they serve lots of it and it has to be flowing from the keg constantly to get the best pint.” »

The allure of the city “There’s just something about Belfast. [Most] people who live here are actually from Northern Ireland, so there’s a real sense of home. No matter where you’re from, the people here will make you feel welcome. They love showing off the city because it has come so far.”
"[At Ox] there could be a table of GOT cast members sitting beside you." »
Classic shopping “Avoca, which is an Irish brand, does beautiful woollen blankets, giftware, little books and knick-knacks. And Northern Ireland’s original Primark—we pronounce it Pre-mark here—is in an old bank building, so you can shop for clothes amid this stunning architecture.” »
Gorgeous view “Walk up the side of Cave Hill, past Belfast Castle, which is a historical building. When you get to the top, you can see all over Belfast, the shipyards and the two big iconic yellow cranes from Harland & Wolff and the whole way across the Belfast Lough.”
GOT cast hangouts “You could be sitting having an amazing five-course meal at OX [restaurant] and there could be a table of GOT cast sitting beside you. And [cast members] also hang out in Victoria Square, but it can be hard to recognize them out of costume.”
» —Mandy Savoie

Costa Rica’s ecosystem supports an abundance of wildlife, including two of the world’s six species of sloth—the Hoffman’s two-toed sloth and the three-toed brownthroated sloth. To get close to these national treasures, stay at Nayara Resort, Spa & Gardens or Nayara Springs. Situated on the edge of Arenal Volcano National Park, these resorts recently planted 300 Cecropia trees (this creature’s go-to food source) on both properties, enticing 15 local sloths to make this forested canopy their permanent hangout. —Diane Bolt

Now it also has a brick-and-mortar location on Concession Street, and the go-to bowl features ahi tuna, green and white onions, cucumber, sesame seeds and macadamia nuts.
Class Vienna schnitzel from Black Forest Inn The Black Forest Inn is unapologetically oldschool with a menu and decor style that has remained largely unchanged since 1967. The schnitzel has long been a menu favourite—it’s cooked to crispy perfection, well-seasoned and so large, it eclipses the plate. Order it with a side of doughy spaetzle (German dumplings).
Sushi nachos at Nique Restaurant Located just off James Street North, this local hangout with funky decor describes its menu as “a cultural mosaic.” True enough with these Japanese-inspired, crowd-pleaser nachos that feature diced tuna atop deep-fried wonton wrappers, along with sushi fixings such as pickled ginger, avocado, chilies and spicy mayo.
Chicken mulligatawny at The Burnt Tongue Locals come to the small, but mighty, downtown eatery primarily for its revolving lineup of stellar soups. While all the broths are delicious, the chicken mulligatawny is a standout—there could be protests if this fragrant, curry-infused, creamy soup disappeared from the menu.
—Michele Sponagle

Kelvingrove Art Gallery and Museum Ask locals to pick their favourite building in the city and many will name this Spanish baroque structure in the West End. Though not designed by Mackintosh, it houses the world’s largest permanent display dedicated to his work, and 2018 welcomes a new Mackintosh exhibition showcasing designs that haven’t been seen in a generation.
The Glasgow School of Art Built in two phases from 1897 to 1909, Mackintosh’s masterpiece was ravaged by a fire in May 2014, but is on its way to recovery. While the interiors remain closed, you can drop by the site’s Visitor Centre and Mackintosh Furniture Gallery. Spot flashes of Scottish baronial style, splashes of Japanese architectural detail and gain insight into Mackintosh’s genius.
The Lighthouse, Scotland’s Centre for Design and Architecture Ground zero for Mackintosh, this was the first public commission the architect completed (in 1895). A mix of old and new—it has four floors of exhibition spaces that act as a catalyst for the next generation of creatives—it’s also where you can find the Mackintosh Tower, an observation gallery with unrivalled views across Glasgow’s rooftops.
The Hunterian Art Gallery A brick-by-brick recreation of the place the designer called home from 1906 to 1914, this walk-through installation at the University of Glasgow’s flagship museum is the ultimate homage to Mackintosh’s legacy. The furniture on display is his design, as are the fireplace, staircase, windows, doors, fixtures and fittings.
The Mackintosh Church at Queen’s Cross Mackintosh tried his hand at houses, mansions and schools, but only one church. Now an arts venue and the HQ of the Charles Rennie Mackintosh Society, this inspired sanctuary is renowned for its stained glass, stonework and relief wood-carving. Like most of his designs, light and space are amped-up to the max.
The Lighthouse, Scotland’s Centre for Design and Architecture Le Scotland’s Centre for Design and Architecture est la première commande publique exécutée par Mackintosh (en 1895).

FUNICULAR Edmonton’s popular river valley just became more accessible thanks to the new, cable-propelled, glass-enclosed funicular that connects the valley to the edge of downtown, moving up to 20 people at one time. The funicular starts at the top of the riverbank just south of the Fairmont Hotel Macdonald and then moves to a promenade, about halfway down, that overlooks the valley. From here, there’s a bridge leading to a lookout point that offers views of the river or the downtown skyline.
AGA KHAN GARDEN This large, Islamic-inspired garden (one of only two in North America) will open in the spring at the University of Alberta Botanic Garden, located just outside the city. The completion is planned to coincide with the Aga Khan’s (the hereditary spiritual leader of the world’s Ismaili Muslim community) Diamond Jubilee Celebration later this year. This serene, 12-acre garden will have native plant species, secluded forest paths, water features, wetlands and stonework, including a central courtyard called a chahar bagh.
ICE DISTRICT The highly anticipated, 25-acre ICE District, a massive sports and entertainment district in the city’s downtown, finally came together in 2016 with the opening of the state-of-the-art Rogers Place arena. The new home of the Edmonton Oilers anchors the area, but there are plenty of shopping and dining options, plus a bustling public plaza for events and festivals. ’m sitting outside Little Victories coffee shop, sipping a flat white from a dainty blue cup and casting an eye over a nearby row of shiny steel shipping containers. The historic Floating Harbour area of Bristol used to be a grubby hive of dockside industry where outsiders feared to tread. But these days, it’s a network of urban waterways flanked by museums, galleries and boutiques selling wares that range from small-batch chocolate bars to furniture fashioned from logic boards. And those shipping containers? They’re the new CARGO 2, a hip hub of restaurants and artisan shops. I first fell in love with Bristol 15 years ago; curious about the city’s now-infamous homegrown street artist, Banksy, I had travelled there to check out the provocative artwork he was spraypainting on local walls. Since that first trip, I’ve returned many times, and with each visit I’ve found a 450,000-strong community that never stands still. Forward-thinking yet still a little gritty, Bristol was recently named the UK’s leading Smart City (outside London) in recognition of its creative tech companies, tide of digital innovators and welcom-

ing vibe for those with ingenious ideas to incubate. New visitors to Bristol will experience a historic destination that’s always deploying fresh ideas to its attractions—clever touchscreen introductions to the 13th-century harbour at the recently restored Underfall Yard area; modern touches to the Bristol Old Vic, the UK’s oldest continuously working theatre; and the newly opened Aerospace Bristol, a state-of-the-art aviation museum housing a legendary Concorde airplane. Another must-see is the M Shed, a repurposed dockyard building with an eclectic, localfocused museum that includes exhibits on the clay animation series Wallace and Gromit (another Bristol creation). Just outside the building is a replica of the Matthew boat that carried explorer John Cabot to Newfoundland from here in 1497. It’s a reminder that Bristol was an innovator long before its Smart City accolade. Which is why the 2018 opening of its newest museum, Being Brunel, will celebrate 19th-century engineering genius Isambard Kingdom Brunel’s ships, bridges and railways while also aiming to inspire the next generation of Bristolian visionaries.
A
—John Lee

Soak up the Aloha Spirit Hawaii delivers sun and fun
FEW PLACES IN THE WORLD elicit a collective sigh of bliss, relaxation and longing quite the way Hawaii does. Distinctive islands that beg to be explored, Hawaii is teeming with flourishing rainforests, rugged volcanoes, bountiful marine life, breathtaking sunsets, vibrant storytelling and the incomparable spirit
of Aloha—warmth, friendliness and sincerity. The epitome of a tropical utopia, the Hawaiian islands offer the perfect escape from a frigid Canadian winter, made easy through daily flights on WestJet. In particular, Maui, the second largest of the Hawaiian islands, guarantees satisfaction
for those seeking sun, surf and adventure. An ideal home away from home, Kaanapali Beach Resort offers 12 different hotels and resorts on Maui’s west side. Whether you’re after a luxury resort and spa, a Hawaiian-style cottage or a beachfront condo complete with a full kitchen, you’ll find it in Kaanapali.

Kaanapali is also home to two championship golf courses along a three-mile stretch of sandy beach, touted as one of the best beaches on Maui. In ancient times, these very sands were used as a training ground for Hawaiian warriors as well as enjoyed by Hawaiian royalty as a rejuvenating retreat—a legacy that continues today. Those seeking traditional Hawaiian culture can stay at the Kaanapali Beach Hotel, named Hawaii’s Most Hawaiian Hotel—and for good reason. A stay there includes complimentary ukulele, hula, lei-making, and bamboo printing lessons, among other classic Hawaiian activities. Guests can also experience the best of the islands at the hotel’s Legends of Kaanapali Luau, under the shadow of what is heralded as the biggest tiki in all of Hawaii. The luau includes the traditional roasted pig and house-made taro poi (a staple in Native Hawaiian cuisine) as well as a live show that culminates in an awe-inspiring Fire Walk performance.
While fire walking may not be on your agenda, you can still try out Maui’s plethora of other outdoor adventures, including oceanbased activities like stand-up paddleboarding, surfing, and outrigger canoeing—a proud display of culture and athleticism, where you can get your adrenaline fix alongside giant sea turtles and tropical fish. If you really want to get up close and personal with ocean life, try a snorkel sail or a whale-watching excursion. Just visit any of Kaanapali’s beach activity kiosks and they’ll get you on your way. Out of the water, take to the skies for unparalleled views of the island via helicopter or try zip-lining for scream-inducing aerial views. On the ground, hiking and biking on the famed 3,000-metre-tall Haleakala volcano is a must-do, and you might even be lucky enough to spot the world’s rarest goose, the wild nēnē. If you’re in a more tranquil state of mind, you can soak up the sun taking a guided tour of Iao Valley State Park, getting your zen on by practicing yoga on the beach,

or simply building sand castles. Whatever you fancy, Maui delivers. And that holds true for dining, too. Maui offers an exotic blend of dining options, from Hawaii Regional Cuisine (made from local produce and fresh seafood) to Asian fusion, contemporary classics and traditional Hawaiian favourites. Every fall, as host of the Hawaii Food and Wine Festival, Kaanapali showcases
renowned master chefs through cooking demonstrations, one-of-a-kind excursions, and exclusive dining opportunities highlighting the state’s cornucopia of local food. And of course, you can’t forget about dessert! Classics like shave ice and Hawaiian Pineapple Upside Down Cake will whet your appetite, but no Hawaiian trip is complete without stocking up on Honolulu Cookie
Company’s signature, pineapple-shaped shortbread cookies. With three locations in Maui, the company hand-dips its gourmet treats in chocolate and tops them with delectable tropical fruit or coffee beans. Baked fresh daily in Honolulu, these beautifully packaged cookies make a delicious gift for friends and family, or for yourself when you’re back home and need a little dose of the Spirit of Aloha. ■

CABIN CREW MEMBER, TORONTO | MEMBRE DE L’ÉQUIPAGE DE CABINE, TORONTO WESTJETTER SINCE 2010 | WESTJETTER DEPUIS 2010
WINNER OF THE 2017 PRESIDENT’S CIRCLE AWARD. GAGNANT DU PRIX PRESIDENT’S CIRCLE DE 2017.
Tony is one of WestJet's finest cabin crew members and has been recognized as such by our President's Circle Award. The President's Circle Award is WestJet's premiere award recognizing the impact of WestJetters who consistently go above and beyond to create a remarkable guest experience. Based out of Toronto but living in Quebec, Tony has been enriching the lives of guests through his entertaining and caring nature. Tony is one of 12 WestJetters chosen annually for this award and has been inducted into our President's Circle Club. Favourite WestJet destination: Charlottetown in the summertime and Huatulco, Mexico, in the winter time. In your words, how would you describe WestJet? Kind, caring and fun. Best travel tip: Stay hydrated, breathe and remember to be kind. What is one thing that you want to share with our guests? I say this all the time and it is my absolute truth: WestJet has the best guests in aviation! I am so grateful that I get the opportunity to come to work each day and connect with you along the way. What WestJet guests have told us about Tony: "Tony was very delightful. He went above and beyond what I imagine is required of him. He was in very high spirits and made travelling a real pleasure. His comedic nature while going over the safety procedures gave me a grin from ear to ear." »
