LINKING COMMUNITIES Next month marks another chapter in the ongoing growth and evolution of WestJet. Beginning in early March we will launch WestJet Link, a new regional air service linking the Alberta communities of Lloydminster, Lethbridge and Medicine Hat, and the British Columbia cities of Cranbrook and Prince George, with our expanding global hub at YYC Calgary International Airport where we offer an average of 125 daily non-stop flights to 62 destinations across our ever-expanding domestic, trans-border and international network. Four of the five new routes will begin in March, as will new service between Calgary and

Denver, Colorado; Calgary and Mexico City; and Vancouver and Mexico City. Medicine Hat will launch at the end of May, once runway construction is completed in “the Hat.” We created WestJet Link through what is known in the commercial aviation sector as a capacity purchase agreement with Vancouver-based Pacific Coastal Airlines. All flights will be marketed and sold by WestJet and operated by Pacific Coastal using its fleet of 34-seat Saab 340B aircraft painted in WestJet colours. These flights, which will be staffed by a flight attendant and include the comfort of a lavatory on board, are now available for purchase on westjet.com and through travel agencies. WestJet has been enriching lives by bringing more competition, lower airfares and its friendly, caring brand of service to Canadians since 1996. We expanded our reach significantly in 2013 by launching WestJet Encore, which, using a fleet of 78-seat, Canadian-made Bombardier Q400 aircraft, allows us to extend WestJet service to communities that are too small to support our Boeing 737s. WestJet Link extends our reach even further and gives more Canadians the chance to travel for less, travel more conveniently and travel farther. As the name suggests, this new service will link travellers with the broader WestJet network, which, beginning in 2019, will include flights to exciting global destinations on board our fleet of brand new Boeing 787 Dreamliners. Thanks for flying with us today.

hitney Wolfe has always had an entrepreneurial spirit. Before her junior year in college, she launched the non-profit Help Us Project, a line of organic bamboo totes with proceeds benefitting the Ocean Futures Society, and in 2012, she co-founded the popular dating app Tinder. But 29-year-old Wolfe, who is based in Austin, Texas, is also passionate about tackling gender inequality and using kindness to drive female empowerment and to change how people treat each other. In 2014, she launched Bumble, a dating app that requires women to reach out first when a match is made (unless it’s a same-sex match, in which case either person can make the first move). Today, Bumble has more than 18 million registered users, and roughly 1 million conversations are started each day. According to Wolfe, in the days before and after Valentine’s Day, the app sees a spike in usage. But Bumble isn’t just for dating anymore. In March 2016, Bumble BFF launched to help users form platonic relationships, and the networking feature of the app—called Bizz—launched in October 2017.

ften referred to as the “city of dreaming spires,” Oxford, England, is home to one of the world’s oldest and most venerable academic institutions—the University of Oxford. Afternoon Take in panoramic views of the city from the top of St. Martin’s Tower (known to locals as Carfax Tower), located in the centre of town. THE MUSSO & FRANK GRILL Little has changed since Oregon restaurateur Joseph Musso and entrepreneur Frank Toulet opened this place on the north side of Hollywood Boulevard in 1919. With ancient waiters in red coats serving up hearty Italian fare, this spot has been loved by everyone from Charlie Chaplin and Marilyn Monroe (who dined here with Joe DiMaggio) to literary greats like William Faulkner and F. Scott Fitzgerald, who set up shop in the restaurant’s Back Room. A number of Hollywood heavyweights continue to swing by, including Al Pacino and Julia Roberts.

NOBU In business together for more than 20 years, Academy Award-winner Robert De Niro and sushi superstar Nobu Matsuhisa have built a global brand, serving up Peruvian-influenced Japanese fusion cuisine across five continents. But it all began with a humble, six-seat sushi bar in Beverly Hills. Look out for De Niro as you sample the fare at either of the two SoCal locations—West Hollywood and a seaside spot in Malibu (which is featured in the lyrics of Drake’s “Jumpman”).

YAMASHIRO A Japanese “mountain palace” set at the base of the Hollywood Hills, this local institution (which has hosted celebrities including Jamie Foxx and Benicio Del Toro) had begun to sag since opening in 1914 as a 10-room teak-andcedar mansion surrounded by a massive, ornate garden and private zoo. Used as a Japanese set for many movies over the years, it was recently purchased and renovated, giving it a new life, a new chef (Christophe Bonnegrace, who sits on a list of America’s best chefs), and new features including a teppanyaki grill. CATCH LA Paparazzi mingle just outside the elevator doors that lead up to this 12,000-squarefoot rooftop oasis, and with good reason: it’s probably the best place in L.A. to spot celebrities any night of the week (diners have included James Corden, Jennifer Lopez and Selena Gomez). Bonus: beyond hip, it’s also beautiful, with a flower-draped entrance and sweeping downtown views. Try the small plates of signature seafood, from mahi mahi wonton tacos to oyster shooters, and some of the best lobster mac and cheese in Southern California.

But perhaps his biggest yearly challenge is pulling together the Oscar-night Governors Ball (2018 marks Puck’s 24th year with the event), which attracts more than 1,000 guests, including many of Hollywood’s biggest stars. WHAT INSPIRES YOUR CULINARY CHOICES FOR THE GOVERNORS BALL? “Our goal is to create a comforting yet elegant menu in a casual environment where guests can move around and mingle.” HOW DO YOU ORGANIZE SUCH AN IMPORTANT EVENT? “We begin preparing in December, when I meet with my chefs to discuss the menu, and, leading up to the night, we have frequent tastings. On the night, we have 300 chefs in the kitchen and more than 1,000 people working to pull it all together.” HOW DO YOU NARROW DOWN THE MENU OPTIONS? “We create new dishes, but we bring back the classics, as well. People have told me they don’t care what I make, as long as the Chicken Pot Pie with Shaved Black Truffles is on the menu. We also turn our signature Smoked Salmon Pizza with Crème Fraiche and Caviar into Smoked Salmon Oscars, and, of course, there’s the gold-dusted chocolate Oscars. ounded in 2011 in Greater Boston, Wahlburgers is a casual restaurant chain co-owned by brothers Paul, Mark and Donnie Wahlberg. One of nine siblings, Paul is a celebrated chef who cooked at various Boston-area restaurants before opening his own eponymous burger bar. Spurred on by his brothers, he soon expanded his burger bar into a chain, which is currently the focus of the A&E reality TV show, Wahlburgers. Now, with well over 20 Wahlburgers restaurants across North America, including two in Toronto, Paul is really cooking. Q How would you describe Wahlburgers? A “Everyone thinks it’s about glitz and glamour and the crazy family, but the biggest thing for us is making our guests feel genuinely welcome. My goal is to combine deliciously creative dishes with memorable customer service.” Q And how about the food? A “We make as much as we can from scratch in-house, including our pickles and the sauces, [except]

It’s very cosmopolitan and a great food town.” Q How involved are your brothers in the restaurant? A “Mark and Donnie are very involved, Mark especially. They both have their ideas and opinions. And if they don’t like something, I hear about it.” Q Do they cook? A “I’ve seen Donnie cook a little, and Mark likes to take on the grill on Sundays for his kids.” Q How do you balance your family life with your restaurants and TV show? A “That’s a good question. Owner Lynda Turner started making all-natural vegan cheeses in 2013 but only recently opened her Ontario shop.

Salt Caves HALOTHÉRAPIE Popular in parts of Europe since the 1800s, halotherapy (halos is the Greek word for salt) has come to North America in the form of human-made salt caves, caverns and chambers. At âme Spa & Wellness Collective, located inside the Turnberry Isle Miami resort, the salt room is lined with Himalayan salt bricks, and a halogenerator grinds and disperses pure Himalayan salt into the space. This centuries-old bathing tradition, also known as a Turkish bath, has become a common addition to North American spa facilities in recent years. One of the continent’s most authentic hamams can be found at Winnipeg’s Ten Spa. Here, a Hamam Fully Loaded treatment comes complete with all the traditional accoutrements: a gommage (exfoliating) glove, olive oil soap and cool water poured from an authentic tas bowl. While you lay on a heated, tiled bed, you’ll be lathered, rinsed, scrubbed, then rinsed, soaped and rinsed again, leaving you feeling squeaky clean and relaxed.

The term forest bathing, or shinrin-yoku, was coined in Japan in the 1980s and introduced to the country’s public health programs to reap the therapeutic effects of spending time in the forest. The idea is simple: take a mindful walk through wooded areas while focusing on your breathing and surroundings. The practice is said to improve your mood. New York State’s Mohonk Mountain House in New Paltz is a prime locale for forest bathing thanks to its more than 135 kilometres of wooded trails. Guided walks with a mindfulness expert are also available.

I

t’s a peaceful Sunday evening at Sibéria Spa, on the outskirts of Quebec City, next to the Rivière Jaune. I’m dressed in a bathing suit and terrycloth robe as I explore the series of paved, tree-lined pathways that lead from the main building to the saunas, steam rooms and outdoor pools. Here and there, I spot other spa-goers enjoying some of the facilities: a cozy dry sauna; multiple secluded hot tubs with bubbling jets; an outdoor relaxation area with lounge chairs set around a fireplace. But the other visitors don’t bother me and I don’t disturb them—we’re mutually committed to the completely chilled-out vibe, not to mention the rules that maintain the quiet atmosphere for all. At Nordic spas like Sibéria, a concept that is hugely popular in Quebec but less so in other parts of Canada, it’s all about relaxation and the thermotherapy experience—a practice that has existed throughout Europe in various forms for thousands of years. The principle of thermotherapy is simple: you get really hot—in a dry or infrared sauna, a steam room or a hot tub—and then quickly cool yourself down in a cold plunge pool or, if you’re feeling rustic and the weather is co-operating, by rolling in the snow. After a rest period of 15 to 20 minutes, you repeat the cycle as many times as you like. The positive effects of this practice include stress reduction and relaxation, and experts claim it can also boost blood circulation, soothe muscles and improve sleep. Many facilities also offer a

Ici et là, je vois des gens qui profitent des installations : sauna sec, plusieurs cuves thermales à jets isolées, aire de détente extérieure avec chaises longues autour d’un foyer. Les autres visiteurs ne me dérangent pas et je ne les dérange pas. Nous sommes déterminés à profiter de l’atmosphère détendue, sans compter que le règlement exige la tranquillité, que ce soit dans la zone de chuchotement ou la section de silence complet. Dans les spas nordiques comme le Sibéria, immensément populaires au Québec, mais moins ailleurs au pays, tout est axé sur la détente et la thermothérapie, pratique qui existe en Europe depuis des milliers d'années sous diverses formes. Le principe de la thermothérapie est simple : avoir vraiment chaud, dans un sauna sec ou à infrarouge, un bain vapeur ou une cuve thermale, puis se rafraîchir rapidement dans un bassin d’eau froide ou, si on aime l’idée et que le temps le permet, en se roulant dans la neige. La belle province has taken the European-inspired thermotherapy experience to another level with its huge variety and sheer number of offerings; it seems there’s a Nordic spa around every corner in Quebec. You can find tiny facilities—just a sauna, hot tub and plunge pool—at rural auberges, or bigger operations closer to urban centres. Visitors to Montreal might while away an afternoon at Bota Bota, a converted ferry boat anchored in the Old Port with saunas offering views of the St. Lawrence and downtown. Skiers spending time in Charlevoix might choose to stay at Le Germain in Baie-Saint-Paul, where its Spa Nordique includes an outdoor soaking pool looking out onto expansive farmland. And travellers to Ottawa should cross the border into Chelsea, Que., to chill out at Nordik Spa-Nature. Here, the facility includes silent, whispering and social sections so everyone can find their own version of relaxation. Why Quebec is now an epicentre of this type of spa is an open question, but the fact remains they have become an essential part of many people’s leisure time. “It’s a good way to take care of ourselves,” says Amélie Gagnon, director of operations at Sibéria Spa. “Leave your problems at home and don’t think about anything else.” As I walk toward the river at Sibéria, I discover a dock with a hole cut out of it—a natural plunge pool that I’m not quite brave enough to try out. But I do cycle through a few of the other options: a wood-scented sauna; a cave-like relaxation chamber; and a pool—with a waterfall pouring into it—so cold that I only manage to go in up to my waist. My mind is calm yet alert, and I can see why so many locals have memberships here. “Everybody lives a stressful life,” Gagnon says. “When you go to the spa, you can sit back, relax, and have a moment for yourself.”

he ground rushes toward me in a kaleidoscope of green palm fronds, blue sea and white breakers. I squeeze my eyes shut, white-knuckle the bar in front of me and scream. Seated next to me, my 12-year-old daughter, Avery, raises her arms over her head and laughs. When the Giant Dipper pulls in to the platform signalling the end of the ride, she’s effusive. “That’s one of the scariest roller coasters I’ve ever been on!” she says. Built in 1925 for a mere $150,000 (it was restored in 1988 at a cost of $2 million), this wooden marvel is a classic fixture at Belmont Park, a Coney-Islandlike amusement park on Mission Beach in San Diego. It’s not my first time on the Giant Dipper, but it’s my first time riding it with Avery, and I’d forgotten how terrifying it is.

I was a Belmont Park regular in the early 1990s, when I lived at Mission Beach and attended the University of San Diego. During that time, I was also a summer camp counsellor for the local YMCA, and Mission Beach—with its thrill rides, three-kilometrelong paved boardwalk and gritty surf culture—was a favourite place to bring the campers, who ranged in age from 10 to 13. Because Southern California can be so busy during peak times (spring break, summer vacation), we often sought out the city’s lesserknown, kid-friendly attractions. Now a parent, I’ve brought my own tween charges and their dad to this sun-drenched slice of Southern California to stray off the tourist trail and visit some of those haunts. In past trips to SoCal, we’ve focused on its star attractions—Disneyland, Legoland and the San Diego Zoo have all been on the itinerary

new-to-me neighbourhoods like North Park. Sunset Cliffs in Ocean Beach (OB), my favourite area back in university for watching the sun say a dramatic goodbye, has also morphed from a quiet date spot into a bona fide attraction for couples and families. People come to visit OB’s famous Dog Beach (where locals’ pups frolic in the surf), browse the boutiques on historic Newport Ave. and, more recently, to eat and shop at nearby Liberty Public Market, part of Liberty Station, a former naval training centre that’s been transformed into a thriving neighbourhood I don’t recognize. Other classic parts of the city, though, have stayed reassuringly the same. Mission Beach and Belmont Park are still as salt-sprayed and sun-faded as I remember. While we’re there, my son Bennett, 9, rides his first solo bumper car, and we all take a spin on the oldtimey carousel. There still aren’t many lineups, and my kids seem just as happy to ride on repeat as my camp charges did 20-plus years ago, doing laps on the roller coaster. Later, on the adjacent beach, Avery and Bennett play a game along the surf line called “line in the sand” that invariably ends with wet shorts as they edge farther out into the ocean. The length of Mission Beach is like one long, skinny peninsula protecting Mission Bay, with vacation homes lining each side. We wander up the bayside path past tidy houses with surfboards and children’s sand toys stacked in the front yards. Back at our base, the Catamaran Resort, we take small, electric catamarans called FunCats out onto the bay to motor around and watch the Flyboarders show off.

nais pas, comme North Park. Sunset Cliffs, à Ocean Beach, mon endroit favori quand j’étais étudiante pour regarderles spectaculaires couchers de soleil, s’est également transformé. Ce rendez-vous tranquille d’amoureux est devenu une véritable attraction pour couples et familles. Les gens viennent voir la célèbre plage Dog (où les chiens gambadent dans les vagues), flâner dans les boutiques sur Newport Ave., rue historique et, plus récemment, manger et faire des achats au marché Liberty, qui fait partie de Liberty Station, ancien centre d’instruction navale converti en quartier prospère que je ne reconnais pas. D’autres parties de la ville n’ont pas changé, ce qui me rassure. Mission Beach et Belmont Park sont aussi délavés et aspergés d’embruns que dans mon souvenir. Bennett, mon fils de neuf ans, conduit une auto tamponneuse pour la première fois et nous faisons tous un tour de carrousel. Il n’y a toujours pas de longues queues et mes enfants ont autant de plaisir à faire plusieurs tours sur la même montagne russe que mes campeurs il y a plus de 20 ans. Plus tard, sur la plage à côté, Avery et Bennett jouent au bord de l’eau au jeu appelé « ligne dans le sable », qui finit toujours par des shorts mouillés puisqu’ils vont de plus en plus loin dans la mer. Mission Beach est une longue et mince péninsule qui protège Mission Bay, avec des maisons de vacances. Nous montons la piste le long de maisons impeccables avec planches de surf, vélos et jouets rangés sur la pelouse. De retour au Catamaran Resort, au thème polynésien, nous sortons dans la baie avec de petits catamarans électriques appelés FunCat pour regarder les acrobaties sur des planches hydropropulsées.

T

he next day, we go get our marine biology kicks in La Jolla, a posh seaside community 20 km north of downtown. For my long-ago campers, the big attraction had been La Jolla Cove, a small arc of beach wedged between two rocky headlands, perfect for swimming and critter stalking. There, sea lions bask on the seaside rocks, and thick ropes of seaweed snake along portions of the shore. The combination of animal and vegetal matter has long imbued the strip of sand with a funky marine smell, but the campers didn’t mind a bit—and my kids don’t complain, either. Bennett immediately dips into the water while Avery heads for the rocks. This—along with La Jolla Children’s Pool—is one of the area’s best tide-pooling spots, and my budding naturalist soon finds tiny shore crabs to capture and sea anemones to touch. Fittingly, Birch Aquarium at Scripps Institution of Oceanography, a leading marine biology centre, is located on a hillside just up the road. The outdoor tide pools there teem with sea cucumbers, sea stars and sea urchins. Avery and Bennett are so captivated, pointing out hermit crabs and tiny fish, that I have to set a time limit at the touch pools so we can see the indoor exhibits. Inside, the impressive Hall of Fishes displays species found in the local coastal waters, from the giant Pacific octopus to California moray eels. There’s a sea horse exhibit on during our visit and we ogle tiny creatures the size of my fingernail. With its focus on research and education, Birch Aquarium offers a very different experience from SeaWorld. What’s more, we have the facility almost entirely to ourselves—I’m glad it’s still one of the city’s secrets.

e lendemain, nous allons à La Jolla, élégante communauté côtière à 20 kilomètres au nord du centre-ville, où nous nous régalons de biologie marine. Les campeurs aimaient surtout La Jolla Cove, petit arc de plage coincé entre deux promontoires rocheux, idéal pour nager, bronzer et traquer des bestioles. Ici, les otaries aboient et lézardent sur les rochers, et d’épaisses cordes d’algues serpentent le long du rivage. Matières animales et végétales ont toujours donné une odeur marine un peu bizarre à cette bande de sable, mais les campeurs ne s’en plaignaient pas. Mes enfants non plus. Bennett saute dans l’eau et Avery se dirige vers les rochers. Avec le bassin pour enfants de La Jolla, c'est un des meilleurs endroits pour les bassins. Ma naturaliste en herbe attrape de petits crabes des rivages et touche des anémones de mer. Pas étonnant que l’aquarium Birch de la Scripps Institution of Oceanography, centre de biologie marine très reconnu, surplombe la route. Les bâches extérieures regorgent de concombres et d'étoiles de mer et d'oursins. Avery et Bennett sont captivés par l’eau où ils découvrent des bernard-l’ermite et de tout petits poissons camouflés parmi les rochers. Je dois leur donner une limite de temps pour qu’on puisse voir les expositions intérieures. Le grand hall des poissons présente des espèces côtières locales, de la pieuvre géante du Pacifique aux murènes, en passant par le crabe royal. Il y a une exposition temporaire d’hippocampes et nous lorgnons des créatures de la taille de mon ongle. L’aquarium Birch est axé sur la recherche et l’éducation, et offre une expérience bien différente de SeaWorld. Qui plus est, il n’y a presque personne. Je suis contente que ce soit encore un secret.

few days later, we’re sitting at Clayton’s Coffee Shop on Coronado Island, drinking rich milkshakes and plugging quarters into the mini jukebox at our table. There’s a quaint feel to the island community, with its delis and coffee shops and art deco architecture. In my camp counselling days, we crossed the iconic Coronado Bay Bridge a few times with the campers to visit the parks and the beach, and now I marvel that we didn’t come more often. With its tidy homes and streets, and the impressive red turrets of the Hotel del Coronado beckoning beachside, it’s like a town from another time. The grand resort hearkens to the days when the whole clan would “summer” away from home, and that family-camp feeling—à la Dirty Dancing—is captured by night during campfire marshmallow roasts, and by day out on the sand. Coronado Central Beach is arguably San Diego’s loveliest stretch of beach. It runs for more than two kilomteres, a dot-to-dot of families sunning and picnicking. We break out the Frisbee and toss it around, like I did with the campers years ago. Back then, I couldn’t imagine my life a generation into the future—what mattered was the moment: entertaining kids on a beach, keeping them safe from the waves and discovering the city’s secrets in the process. It occurs to me that not that much has changed. I’m still playing with children in the sand, making sure they don’t go out too far in the water. Sharing San Diego with my own kids is more fulfilling, however. It’s like letting them have a peek at my past, while I get small glimpses of the independent people they may one day become.

uelques jours plus tard, au Clayton’s Coffee Shop sur l’île Coronado, nous buvons de riches laits frappés pour le petit déjeuner et insérons des pièces de 25 cents dans le mini-jukebox à notre table. On se sent bien sur l’île, avec ses épiceries fines, ses cafés et son architecture art déco. Quand j’étais monitrice, nous traversions le pont emblématique de la baie Coronado pour visiter les parcs et la plage, et je m’étonne maintenant que nous n’y allions pas plus souvent. On dirait une ville d’un autre temps avec ses jolies maisons et rues et, côté plage, les impressionnantes tourelles rouges de l’Hotel del Coronado, qui évoquent l’époque où tout le clan passait l’été ensemble loin de la ville et donnent un sentiment de camping en famille, façon Dirty Dancing, le soir en faisant griller des guimauves dans le feu et pendant la journée, sur le sable. La plage Coronado Central est sans doute la plus belle. Longue de plus de deux kilomètres, les familles y piqueniquent et jouent au ballon. Nous sortons le Frisbee, comme je faisais avec les campeurs il y a tant d’années. Je ne pouvais pas alors imaginer ma vie une génération plus tard, c’était le moment qui comptait : amuser des enfants sur une plage, les protéger contre les vagues et découvrir les secrets de la ville par la même occasion. Je me dis que finalement, ça n’a pas changé tant que ça. Je joue encore dans le sable avec des enfants en veillant à ce qu’ils mettent de l’écran solaire et n’aillent pas trop loin dans l’eau. C’est toutefois plus satisfaisant de partager San Diego avec mes propres enfants. C’est comme si je les laissais entrevoir mon passé tout en entrevoyant les adultes indépendants qu’ils deviendront.

Step inside the small store in Montreal’s Mile End, and you’re greeted by a glass display case filled with neat trays of bite-sized, chocolate-covered treats; a chandelier overhead adds a little luxe ambience. The scent of melting chocolate and caramel wafts in from the back kitchen as you choose from some 40 op-

poured into indents made in compressed cornstarch by antique plaster moulds and then left to solidify. As for the chocolate coatings themselves, each piece (save a couple of milk-chocolate options) is hand-dipped in 64 per cent cocoa Guayaquil dark chocolate from Ecuador, a process that requires not just dexterity, but skill—and, ideally, cool hands. The melted chocolate must be kept at the right temperature and consistency so that it will set properly. One recent hire, Saint-Denis notes, spent more than six months, two to three days a week, learning to be “fluent” at hand-dipping. “It’s the work of an artist,” she says. While Valentine’s Day is not the biggest time of year for Chocolats Andrée—that honour goes to Easter and Christmas—it represents 20 per cent of their annual sales. “[Everything] has to be wrapped and ready to go, as people are in a rush,” Saint-Denis says. Heart-shaped boxes are a top seller, of course, as are chocolate-covered maraschino cherries, which require a four-day process that involves coating the fruit in housemade fondant, hand-dipping in chocolate, and then waiting for the fondant to melt around the cherry. These cherries have long been a bestseller on the menu, which has barely changed over the decades. In fact, Saint-Denis has noticed a resurgence in the popularity of classics like chocolate-covered marshmallows and wrapped caramels. Despite a lifetime of sampling, she refuses to commit to a favourite. “It changes every [few] weeks. [Lately] I’ve been into dark chocolatedipped pecans. But I’m waiting to start making violette truffles,” she says, referring to the truffles made with shredded walnuts, covered in chocolate and a sprinkle of hot pink sugar on top. “I’ll let go of the pecans for them.”

La Saint-Valentin n’est pas la période de pointe pour Chocolats Andrée, car cet honneur revient à Pâques et à Noël, mais elle représente 20 pour cent des ventes annuelles. « [Tout] doit être emballé et prêt, car les gens sont pressés », dit-elle. Les boîtes en forme de cœur sont les plus populaires bien sûr, tout comme les cerises au marasquin enrobées de chocolat, un processus de quatre jours comportant l’enrobage du fruit dans un fondant maison, le trempage dans le chocolat et l’attente que le fondant fonde autour de la cerise. Ces cerises sont populaires depuis longtemps au menu; celui-ci a très peu changé avec les décennies. En fait, madame Saint-Denis a remarqué un retour aux classiques comme les guimauves enrobées de chocolat et les caramels emballés. En dépit d’une vie de dégustations, elle refuse de nommer un favori. « Ça change toutes les [deux] semaines, dit-elle. [En ce moment] je mange des pacanes trempées dans le chocolat noir. Mais j’attends de commencer à faire des truffes à la violette », poursuit-elle en parlant de truffes aux noix de Grenoble déchiquetées enrobées de chocolat et saupoudrées de sucre rose vif. « J’abandonnerai les pacanes en leur faveur. »

Based out of Calgary but living in Winnipeg, Chuck has been enriching the lives of guests through his kind, caring and compassionate actions. Chuck is one of 12 WestJetters chosen annually for this award and has been inducted into our President’s Circle Club. Favourite WestJet destination: Barbados. In your words, how would you describe WestJet? Family, friends and fun. Best travel tip: Take the time to enjoy your travels no matter where you go or why you go… find the positive!
