VIVE LA FRANCE!

BY | PAR GREGG SARETSKY, WESTJET PRESIDENT AND CEO/PRÉSIDENT ET CHEF DE LA DIRECTION DE WESTJET

VIVE LA FRANCE!

In case you missed our exciting announcement on January 29, WestJet’s ongoing international expansion is about to take on a distinctly French flavour. On May 31, we will begin non-stop service to Paris, France (Charles de Gaulle Airport), from Halifax Stanfield International Airport in Nova Scotia. A global centre for art, fashion, gastronomy and culture, Paris is one of the greatest cities in the world. The list of things to see and do is endless, thanks to more than 1,800 monuments, 173 museums, over 800 libraries and 450 parks and gardens. The Eiffel Tower, Arc de Triomphe, the Louvre, Champs-Élysées, Notre-

Dame de Paris… the City of Love is a bucket-list must-see. Paris is also home base for WestJet’s partner Air France, whose network can take guests throughout Europe and beyond, to the Middle East, Africa and Asia. WestJet Rewards members are able to earn and redeem WestJet dollars on Air France flights to popular destinations from A to Z—perhaps Ajaccio or Zurich or any of the destinations in between? And, if that isn’t exciting enough, you can look forward to a pretty sweet ride, too. We’ll operate the service using our new, fuel-efficient Boeing 737 MAX-8 aircraft featuring 12 seats in Plus (Premium Economy) and 164 in Economy Class all equipped with WestJet Connect, our wireless (WiFi) entertainment system. Further enhancing the guest experience, the aircraft comes with Boeing’s new Sky Interior which features customizable LED lighting and additional onboard storage space for personal items. Our MAX aircraft also have ovens on board which allows us to greatly enhance the variety of our inflight buy-onboard menus. Bon appétit! Thanks for flying with us today.

WHAT WE LOVED CE QU’ON AIME

WHAT THE WESTJET MAGAZINE TEAM LOVED MOST ABOUT WORKING ON THIS ISSUE… CE QUI A PLU À L’ÉQUIPE DE LA REVUE WESTJET

EDITOR/ RÉDACTEUR EN CHEF Growing up in northern Ontario, a trip to the local sugar shack was an annual school tradition. The maple syrup story (page 29) reminded me of seeing fresh syrup poured over snow and then rolling a popsicle stick over it as it hardened for a sticky snack.

DIANE BOLT

ASSOCIATE EDITOR/ CORÉDACTRICE On a recent trip to London, I stayed at The Bloomsbury (page 18) and stuck around for brunch at the hotel’s Dalloway Terrace. The Ginger Boilermaker juice shot and avocado, grilled tomato and poached eggs on sourdough set me up for a day spent touring the city.

TERESA JOHNSTON

ART DIRECTOR/ DIRECTRICE ARTISTIQUE My experience with Florida is limited to the theme parks, so I was pleasantly surprised by the diversity of its cities, which are highlighted in the Florida Match-up feature (page 51). I found Fort Lauderdale’s “living mermaids” show particularly intriguing.

DESIGN DIRECTOR/ DIRECTEUR DU DESIGN Revisiting the West Midlands by narrowboat (page 61) was a cool experience for me. The views from the canal give a unique perspective of a historically significant region, not to mention the hidden gems you’ll discover along the way.

GOOD TIMES TRAVEL WELL Wherever you’re traveling to, The Keg will always make you feel celebrated. From consistently delicious dinners to exceptional service, why not make The Keg the next stop on your journey?

SENIOR EDITOR/ RÉDACTRICE PRINCIPALE I’ve often heard Denver compared to outdated stereotypes of Calgary: cowboys, beef and ski towns. So I was thrilled I had the chance to go to the Mile High City and discover what Denver is really all about (page 36). Hint: it includes food, craft beer and local art.

FABIAN MAYER

EDITORIAL ASSISTANT/ ADJOINT À LA RÉDACTION After spending a week in Mexico City a few years ago, I knew it was somewhere I would always want to revisit. Mexico Four Ways (page 26), which explores the bustling capital’s food scene, museums and rich history, has me looking at flights and brushing up on my Spanish.

THINGS YOU MAY NOT EXPECT IN

1

This Mexican city is synonymous with lovely resorts, icing-sugar beaches, great shopping, fine dining and vibrant nightlife, but here are some of its lesser-known delights.

Located on the Caribbean’s shallow seabed around Cancun, the Museo Subacuático de Arte (MUSA) is one of the world’s largest underwater art museums. Snorkel, scuba dive or hop aboard a glass-bottom boat to view underwater galleries displaying more than 500 otherworldly life-sized statues and sculptures.

3

2 Stroll Cancun’s streets to see an array of colourful new murals transforming walls and building exteriors in the Hotel Zone and downtown into an open-air street art museum. The work of international volunteer artists, the murals portray local culture and issues important to Cancun, such as ocean conservation.

16

MARCH 2018 | WESTJETMAGAZINE.COM

You don’t need to venture far to explore ruins of the ancient Maya civilization. Right in the heart of the Hotel Zone, you’ll find Yamil Lu’um and El Rey, with the latter containing 47 excavated buildings, including a pyramid temple. Nearby, the Maya Museum of Cancun houses the San Miguelito archaeological site.

Try your luck at the Red Casino at Grand Oasis Cancun, the city’s first resort casino. Here, you can watch the big game, take in a live performance or dance the night away. The resort’s Oasis Arena hosts concerts and sporting events.

5 Cerveza-lovers will delight in Cancun’s growing craft beer scene. Tres Cervezas at Hyatt Ziva Cancun is the world’s only microbrewery in an allinclusive; stop by to try one of the three different brews on tap. Mexico’s artisanal beer takes centre stage at Cancun’s Soy Cerveza festival, an annual event (held every July) that showcases local craft beer.

Hundreds of female hawksbill and loggerhead turtles return to their Cancun beach birthplaces to lay eggs at night during sea turtle nesting season, May to November. s co-owner and vice-president of merchandising for Simons department stores, Richard Simons spends roughly 100 days a year travelling the world in search of the best designers, and new ideas and inspiration. He attends approximately 50 women’s fashion shows each year but his favourite place is in the showrooms, feeling the product as customers would in a store. Born and raised in Quebec City, Richard always wanted to follow his father into the family business and, after graduating from business school at the University of New Brunswick, he saw a place for himself at the family firm. Richard is the fifth generation of his family to work at Simons, which started in 1870 as a dry goods store in Quebec City. (His brother, Peter Simons, is the company’s CEO and president.) These days, Richard oversees the buying for Canada’s 15 Simons stores, including two new stores— one in Calgary and the other in Edmonton. “It’s a very challenging and exciting time,” he says. “I’m always thinking about what’s next. What’s a mall going to look like in five years? How much will people be buying online? As a retailer, you know there’s going to be a lot of change.”

Q

Where do you find your inspiration for the upcoming season? “Inspiration is all around. There’s inspiration when you watch a film, walk through an airport, go to a fashion show, go to an art museum or when you read. We’re bombarded with inspiration.”

Q

Where did you get your fashion sense, your sense of style? “It’s like doing a 5,000-piece puzzle. There’s no instruction book. You might have a system and use logic;

And sometimes no one else is doing it, but you just think it’s interesting.”

Q

Who are some of your favourite designers? “Without hesitation my favourite show is Dries Van Noten. He is the master of beauty and the values of his company reflect those of our

own organization. I’m very keen on Canadian designers [such as] Unttld, Denis Gagnon, Sid Neigum. There’s great talent amongst Canadian designers and we should encourage and support them.”

Q

What’s trending this spring? “Over the past season, we’ve seen a lot of flower prints, but this has really changed and we’ll be seeing more intense, bright colours this season mostly in solids prints and multi stripes and a lot of shiny vinyl in pants and skirts. Q

What’s the best part of your job? “The buyers and designers I work with. I’m privileged to work with such passionate forces in fashion. Nobody around me is ever unmotivated. It’s important to enjoy what you are doing, and it’s fun to work with happy people.”

Q

What do you do to get away from it all? “I bought a cabin that’s three hours north of Quebec City with my brother when I was 21. I go fly fishing there with friends every spring. There’s no cellphone reception, no electricity, no TV. It’s the best place on earth.” —Shelley Boettcher WESTJET.COM | MARCH 2018

RESTORED AND RENEWED Sometimes hotels need a little love. Here are three that modernized in style.

HISTORIC HAUNT

FAIRMONT THE QUEEN ELIZABETH HOTEL Montreal, Que. Located in the heart of downtown Montreal, The Queen Elizabeth has been an icon of the city since it opened in 1958 and is considered Canada’s last grand railway hotel. The hotel recently underwent a $140-million renovation, which transformed the property with a major design overhaul of its 950 rooms and suites and its common areas and restaurants. The hotel’s redesign reflects on its past with vintage design touches, such as mid-century modern furniture, but also looks forward with modern-art installations throughout the property—the hotel’s art collection has 123 works, including sculptures and paintings, by 37 local and national artists. Guest rooms include sleek furnishings and modern conveniences. Notably, guests can stay in room 1742 where John Lennon and Yoko Ono held their Bed-In for Peace in 1969. The suite has interactive displays that provide video and audio clips detailing the pair’s stay. There are also four dining options, an indoor pool and a spa. Rates from $249. The Bloomsbury London, UK Housed in a heritage neo-Georgian building in London’s Theatreland district, The Bloomsbury hotel has recently undergone an extensive, multi-million-dollar renovation. The redesigned, modest reception area and homey, guest-only lounge with fireplace sets the scene for a modern Bloomsbury set, à la Virginia Woolf and Lytton Strachey. The hotel’s new bar, The Coral

Room, with its bold, coral-coloured walls, Herringbone parquet flooring and 1920s decor, is the place to go for cocktails and small plates—think Cumberland sausage rolls with relish and short-rib sliders and spiced slaw. DESERT OASIS

Miramonte Indian Wells Resort & Spa Indian Wells, Calif. Nestled at the base of Coachella Valley’s Santa Rosa Mountains, this once-Tuscan-inspired retreat is debuting a fresh interior look, thanks to an US$8-million facelift. While the Miramonte maintains its original Tuscan-style exterior, inside, the lobby, common areas, meeting rooms, spa and dining areas have embraced a new “Coachella cool” aesthetic of blue hues and wood accents, a homage to the resort’s natural desert surroundings. Start with a treatment at the freshly renovated spa, The Well. The new menu highlights local ingredients like lemons and lavender plucked straight from the property’s own herb and citrus gardens. Keeping with the farm-to-(massage)table theme, the reimagined restaurant, Citrus & Palm, features produce from local Coachella Valley farms and the chef’s own on-site garden. After dinner, opt for some classic Miramonte experiences: relaxing in one of the resort’s two pools or playing a round of lawn games like cornhole under a starry, palm tree-lined sky. Rates from US$149. (miramonteresort.com) —Marissa Willman Nearby: Empire Polo Club, the site of the Coachella Valley Music and Arts Festival (April 13-15 and 20-22) is just 15 minutes away.

ROAM GOING LOCAL

DAY TRIP "County Tipperary is off the beaten track in terms of tourism—it has a combination of historic buildings and beautiful landscape."

HISTORIC HOTSPOT “One place that should be visited is Nano Nagle Place, a convent complex that’s open to the public. You can visit the gardens and see the exhibition on Nano Nagle [a pioneer of Catholic education in Ireland] and see her grave. It’s a place of stillness, right in the city centre.”

A history buff at heart, Peter Foynes has worked as the director of The Butter Museum for the last 16 years. Foynes says Cork’s history is just one aspect of the town’s appeal. Here, he shares a few of his favourite things about this easy-going Irish town.

THE BUTTER MUSEUM “The Butter Museum offers a different historic perspective, not just on Cork but on Irish society as a whole. When most people think of Ireland in the 19th century, they think of potatoes and poverty, but we were the largest butter market in the world.”

LOCAL GEM “St. Peter’s Cork on North Main Street. It’s a historic church that’s now a modern arts and event venue. There is always something different going on there, like exhibitions and performances. They have a good coffee shop, too: the Portafilter Café.”

IRISH SPORT “I’d recommend seeing a hurling match at the Páirc Uí Chaoimh, the main Gaelic games stadium in the city. Hurling is an amazing game to watch—the speed of play and the skill level of amateur players is remarkable.” FOR A PINT “I go to a pub called the Long Valley Bar. It’s an old-fashioned, historic bar with mahogany and stone. My preferred drink is the Rebel Red Ale, which is locally produced.” —Karin Olafson

A GUIDE TO

MAPLE SYRUP Everything you need to know about Canada’s liquid gold.

T

his month, just as Canada’s eastern provinces round the corner on winter, the nation’s maple trees are tapped. As the mercury hovers above 5˚C by day and just above zero at night, this liquid gold flows until late April when the trees’ leaves bloom and the sap runs dry. In and around Quebec, Ontario and Nova Scotia, sugar shacks serve up generous quantities of maple-mingled fare. Canada supplies 71 per cent of the world’s maple syrup—92 per cent of which comes from Quebec alone, and most of the rest from Ontario and the Maritimes—so it’s no wonder locals and visitors alike come out to celebrate this sweet season. QUEBEC'S SUGAR SHACKS DISCOVER TRADITIONAL CUISINE AND MORE LA TABLÉE DES PIONNIERS Chef Louis-François Marcotte of Montreal’s high-end Les Rouges steakhouse bestowed an upscale menu on La Tablée des Pionniers when he bought the classic, 55-year-old sugar shack in Saint-Faustin-Lac-Carré near Mont Tremblant (about an hour and a half north of Montreal). The menu boasts dishes using local products such as white wine from Rivière du Chêne Vineyard that has been flavoured with maple syrup.

1

CABANE À SUCRE AU PIED DE COCHON Reservations are a must at Cabane à Sucre Au Pied De Cochon, the Mirabel-based cousin of Montreal’s popular restaurant, Au Pied du Cochon. Owner and celebrity chef Martin Picard’s belief that maple syrup is a national culinary treasure prompted him to open this sugar shack almost a decade ago. He taps the surrounding maple trees, makes his own syrup and creates a new menu each spring. Past dishes include mapleglazed duck, maple mille feuilles and maple-sugar cotton candy.

2

SUCRERIE DE LA MONTAGNE Sucrerie de la Montagne, less than 45 minutes west of Montreal, transports visitors back in time to the pioneer days and is a designated Quebec Heritage Site. This clapboard sugar shack is located amid 120 acres of century-old maples atop Mont Rigaud and serves up hearty meals year-round.

DARK Robust Taste With its strong and pronounced maple taste and dark colour, this syrup is a popular choice for baking. Try: Cosman & Webb syrup, made in Quebec’s Eastern Townships, is organic, single-forest and unblended.

VERY DARK Strong Taste Similar to molasses, this syrup can be used in baking, as a sugar substitute in coffee, and when crafting bourbon, rum and whisky cocktails. Try: 29 FÉVRIER’s Maple-in-a-tree is produced at the very end of the season.

A

little more than a decade ago, Christie Peters moved to Vancouver, sought out her culinary hero, Chef Rob Feenie, and learned how to cook at his former restaurant, Feenie’s. Peters later honed her chops at restaurants in cities like Amsterdam and San Francisco, but she always knew that one day she’d return to her hometown of Saskatoon. Today, Peters and her partner (in life and in business), chef Kyle Michael, own two restaurants in this prairie town: an eclectic flagship called The Hollows and the Italian-focused Primal. With her dedication to sustainable house-grown ingredients, full animal butchery (even the excess animal fat is turned into soap) and a vintage chic aesthetic, Peters is on a mission to refine and redefine Saskatchewan cuisine.

32

MARCH 2018 | WESTJETMAGAZINE.COM

Q Why did you choose to return to Saskatoon? A Saskatoon is very much a land of opportunity for me. To own or even lease a building in Vancouver is unattainable, but, here in Saskatoon, it’s possible. Financially, it was easy for us to start a restaurant here—we got our foot in the door early and, as the city grows, we’ll grow with it. Q You have your own gardens, compost almost everything and practice full animal butchery. Why is that important to you? A I just couldn’t do it any other way. I’m a nature-lover and an environmentalist at heart, so, when I opened my own restaurants, I wanted that full-circle feeling. Q How are your restaurants representative of Saskatchewan? A Saskatchewan is the breadbasket of the world. To have a cuisine based around the heritage grains that we grow here was important.

We have a rye pasta with bison tongue pastrami and sauerkraut, and our house-made bread is made with red fife wheat. Q What are some of your favourite dishes at Primal and The Hollows? A At The Hollows, the menu changes frequently with the seasons, but there’s always a lot of beets and cabbage on the menu, because it’s so Saskatchewan. At Primal, we have a beef heart bolognese that I think is really cool because it uses beef heart mixed with pork. Q Can you describe the vibe of each of your restaurants? A I designed both restaurants and I’m really proud of that. The Hollows is in a huge building that used to be a Chinese restaurant—it’s kind of a time capsule from the 1960s. Primal’s decor is more high-end and polished. It’s dark and loud. —Elizabeth Chorney-Booth

FEAST DRINK UP

Pucker Up!

Sour beers are catching on across North America.

NEW BELGIUM BREWING

VANCOUVER, B.C. There’s a high concentration of craft breweries producing sour beers in Vancouver. At this East Van spot, brewmaster Iain Hill makes several different styles, including kettle sours and traditional wood-aged brews. TRY: Reynard (6.5% ABV)—an oud bruin with a complex cherry-like flavour, even though no fruit was used in the brewing process. It took home a gold medal at the 2016 B.C. Craft Beer Awards.

T

art, fruity, refreshing: sour beers have grown in popularity across North America in recent years, with many craft breweries producing these pints alongside ever-popular IPAs, pilsners and porters. What differentiates sour beers from other styles is the fermentation process: they are soured naturally by bacteria and yeast. Sour beer was first produced in Belgium in the 18th century and is made by pouring beer into big, open-air vats, allowing airborne bacteria and yeast to drop into the liquid and start the fermentation process spontaneously. The beer is then aged, often for more than a year, in barrels that contain souring bacteria. This traditional style is called lambic and variations include gueuze (various lambics blended together), kriek (fermented with cherries) and fruit varieties like framboise (raspberries). Other styles of sour beers include Berliner

34

MARCH 2018 | WESTJETMAGAZINE.COM

Weisse, first brewed in Germany, which is lighter than a traditional sour and made with a lactic acid bacteria, and Gose, also from Germany, which is a blend of sour and salt—thanks to the addition of coriander and salt—giving it a refreshing profile. European sour beers have been available in North America in a limited fashion since the 1970s, and, by the late 1990s, craft breweries around the continent began experimenting with their own varieties. In the past decade, North American brewers have adopted a hybrid version called “kettle sours,” where beer is kept at a warm temperature in the brew kettle, accelerating the souring process so the beer is ready within four to eight weeks. Fruits or well-aged hops are sometimes added to emphasize the fruity flavours. There are now hundreds of craft breweries across North America producing sour beers. Here are a few standout spots to try. —Joe Wiebe

TRY: Transatlantique Kriek (6.5% ABV)—a unique blend of sour cherry lambic from Oud Beersel brewery in Belgium and New Belgium’s own sour golden ale.

THE LOST ABBEY SAN MARCOS, CALIF. Southern California is an epicentre of sour beer production in the United States and The Lost Abbey is one of the area’s most exciting breweries to check out. Its lineup of Belgian-inspired beers includes a range of outstanding sour and conventional styles. TRY: Framboise de Amorosa (8.5% ABV)—a barrel-aged sour (it spends more than a year in wooden barrels) that is a deep, ruby red and bursts with sour raspberry flavour.

FORT COLLINS, COLO. Denver is a well-known hot spot for craft breweries, but its neighbour to the north also has a growing list of breweries. New Belgium Brewing’s inception was spurred by its founder’s bike trip through Belgium in 1988, resulting in a whole host of traditional ales.

Could curcumin be your golden ticket to good health? ver wonder what gives your curry its bright, golden colour? It’s turmeric. Or more specifically, the curcuminoid known as curcumin, which makes up 2-5% of turmeric. But while curcumin’s colour-enhancing properties are impressive, they pale in comparison to its many potential health benefits.

E

From smooth skin and pain-free joints to stronger hearts and minds, safe and natural curcumin could be the key to unlocking a longer, healthier life. Preliminary studies have shown curcumin’s powerful antioxidant and anti-inflammatory properties can have beneficial effects on such degenerative diseases and conditions as depression, anxiety, diabetes, heart disease, and Alzheimer’s disease. Does that mean you should start packing turmeric into every snack, meal and dessert? You can if you like, but there isn’t much point. Turmeric only contains about 3% of curcumin,

which means you’d have to be eating an impossible amount of turmeric to enjoy its full benefits. And eating an impossible amount of anything is, well, impossible. Your other option is to take a curcumin supplement, but that can be tricky as well. With most supplements, fat-soluble curcumin simply passes through your digestive tract before much of it can be absorbed into your blood stream. UNION STATION

A trailblazing craft beer industry, a growing culinary scene, revitalized neighbourhoods and a variety of arts-based initiatives make Denver worth exploring.

S

tep into Denver’s Union Station on a Saturday morning and you’re sure to find it buzzing with people sipping coffee, reading the paper, waiting in line for breakfast and just generally hanging out. This beautiful, turn-of-the-century building has become such a popular local haunt, it’s hard to believe only a few years ago it was a rundown train station most Denverites went out of their way to avoid. The decline of Union Station and the rest of Denver’s downtown began in the early 1980s, when the city fell into a recession. As time passed, a whole host of beautiful brick and stone buildings in the area, many dating back to the gold-rush era of the late 1800s, were abandoned and left to deteriorate. But, over the past decade, the city’s economy has steadily grown and Denver has invested in revitalizing its historic downtown core and surrounding neighbourhoods, reimagining buildings like Union Station and bringing a new kind of energy to the forefront. Home to 700,000 people (three million in the metro area) and nicknamed the Mile High City (it’s exactly one mile, or 5,280 feet, above sea level), Denver has long been known for its cowboys, beef and nearby ritzy ski towns. But the city is shaking off its outdated cowboyculture image and reinventing itself as a hip and progressive city. Leading the charge is a trailblazing craft beer scene, a host of diverse culinary offerings and neighbourhoods bursting with vibrant arts initiatives. An estimated 1,000 people move to the city each week, lured by its outdoorsy lifestyle, comparatively affordable housing and a welcoming attitude that embraces homegrown entrepreneurs. And lately, an influx of international visitors have been flocking here, too, to find out what’s behind the new Denver.

E

WESTJET.COM | MARCH 2018

While Colorado has been brewing beer for more than 100 years (the Coors Brewery opened in neighbouring Golden in 1873), Denver’s modern-day beer scene came about in the late 1980s when an out-of-work geologist named John Hickenlooper (now Colorado’s governor) opened the city’s first craft brewery, Wynkoop Brewing, in an abandoned warehouse downtown—a radical idea, given that, at that time, downtown Denver was a nearly deserted area that locals avoided. Wynkoop proved to be a hit, drawing thirsty Denverites back into the core and inspiring other breweries and businesses—including Coors Field, home of Major League Baseball’s Colorado Rockies—to take up residence in the surrounding rundown buildings. Thanks in large part to Hickenlooper and his brewery, downtown slowly turned into an appealing place to live and own a business.

known for authentic, Germanstyle beers and Crooked Stave specializes in barrel-aged sour and wild beers. Chad Yakobson, owner and brewmaster at Crooked Stave, says that while these beers aren’t necessarily your typical offerings, consumers in Denver have developed educated palates, which is helping to make these local beers more mainstream. “The beer we are brewing is mostly for the beer geek—the educated consumer—and that base exists in Denver,” says Yakobson.

innovative ART

The sense of innovation that dominates Denver’s craft-brewing community is also evident in the city’s vibrant arts scene. Located on the northern tip of downtown in the Golden Triangle Creative District (so named for its high concentration of galleries and museums), the world-class Denver Art Museum hosts an impressive array of travelling exhibitions and a massive American Indian art collection, while the eponymous Clyfford Still Museum is an entire building dedicated to showcasing the celebrated American painter’s abstract-expressionist work. Of course, the city’s art scene stretches well beyond the more formal institutions found within the Golden Triangle. In recent years, artists throughout Denver have been using the city itself as their canvas; a stroll through any of Denver’s up-and-coming neighbourhoods—including Baker, River North (known locally as RiNo) and South Broadway—reveals a dizzying array of colourful murals, commissioned by local businesses to transform industrial-looking buildings into beautiful works of art. The municipal government is also committed to supporting local art initiatives—the Denver Public Art Program was created

And in 2009, the Urban Art Fund was established to facilitate the creation of new murals by local youth in heavily vandalized areas of the city. In addition, there are currently seven certified arts districts in Denver, each with their own unique offerings of galleries, museums, murals, festivals and initiatives. “There is a real identity here in owning your craft and having a community to support it,” says Amy Phare, president of the local non-profit organization Art District on Santa Fe. This district is home to more than 100 galleries, artist studios and museums, including the Museo de las Americas, a Latin-American art museum. This area also attracts thousands of people during the monthly First Friday Art Walk, when dozens of businesses open their doors for this creative event. “There’s art everywhere: upstairs, downstairs, in the alleyways—people are opening galleries in their garages now— the neighbourhood just really comes alive,” says Phare.

culinary delights

To say that Denver’s food scene is exploding would be an understatement—245 restaurants opened in 2017 alone. And the city is basking in international attention as the 15th season of Top Chef (which premiered in December 2017) showcases various locales around Denver. “When I was growing up here, Denver had this moniker of being a cowtown or a meat-and-potato town,” says Adam Schlegel, co-founder of popular breakfast eatery Snooze and the president of EatDenver, a non-profit that supports local restaurants. “So to see what has happened over the past 10 years is phenomenal.”

“we want to figure out how we can make great things in our backyard.”

While the city still offers plenty of Rocky Mountain cuisine—there’s no shortage of local meats like lamb, bison and elk on menus—Denver has diversified well beyond the steakhouse with hip fast-casual offerings, upscale fine dining and authentic ethnic cuisines. Chuey Fu’s, a quirky spot in the Art District on Santa Fe, melds Latin and Asian cuisines to create dishes like the Fuh (Pho) Burrito, packed with bean sprouts, Thai basil, rice noodles and pho broth (order it alongside the guacamole for a real explosion of delicious international flavours). Schlegel says the city’s culinary community is also putting a larger emphasis on sustainable ingredients. “[Chefs here] spend a lot of time getting to know our vendors,” he says. For instance, Snooze works with local producers who are making everything from pickles to tortillas, and with responsible international producers for items like coffee, which is sourced from a Guatemalan farm that Schlegel visited himself.

THE HIPSTER H O L I D AY POUR LES HIPSTERS

Greater Fort Lauderdale LE GRAND FORT LAUDERDALE

It’s on-point with every trend, but far from being too-cool-for-school. THE VIBE: It wasn’t long ago that Fort Lauderdale was synonymous with spring break. But local hipsterati have been working hard to elevate their entertainment offerings beyond the collegiate bacchanal. Today’s Lauderdale has all the markings of a trendy destination: an artsy mural district, a craft-ale trail, a third-wave café scene. Check out FATVillage for its street art-plastered walls and monthly ArtWalk; and The YARD area in Wilton Manors for syphon coffee and ironic T-shirts. With its focus on all that is indie-cool, Fort Lauderdale has officially graduated.

52

YOU’LL WANT TO STAY AT: The new Plunge Beach Hotel, with its boho-chic design (think Acapulco chairs, driftwood lamps and surf-inspired artwork) and modern eateries that include beachside street food at Backflip Beach Bar & Kitchen and creative gastro-pub fare at Octopus.

WHEN YOU’RE HUNGRY, GO TO: Market 17, a locals’ hot spot for farm-to-table fare. Here, try Dining in the Dark, a tasting experience that deprives diners of sight to heighten the other senses. To keep things clean, waiters wear night-vision goggles and silverware is optional.

TICK THE “BEEN-THERE” BOX BY: Taking in the city’s exploding craft beer scene. Try veteran ale house Funky Buddha Brewery in Oakland Park for one of its bourbon-barrel-aged brews. Then, make your way to Riverside Market, where patrons help themselves to bottles from the rows of fridges and count their beer caps to pay.

FOR AN OUTING: Go next-level on the Everglades airboat tour by signing up for the Red Eye at Sawgrass Recreation Park. After dark, you’ll spot gators and other things that go bump in the night.

T H E C U LT U R E CLUB LE CULTURE CLUB

Miami

A beach vacay with depth. Vacances plage et culture. THE VIBE: When Art Basel launched in Miami in 2002, the glitzy international art fair gave the sun city a new purpose: to ride the wave of art tourism with the trendiest restaurants, the chicest hotels and the most architecturally significant arts venues. Sixteen years on, the only thing Miami still consumes more than mojitos is culture. It seems nothing can quench the city’s thirst for new museums, galleries and creative spaces. Major openings or reopenings in recent years—including the Bass Museum of Art, the Institute of Contemporary Art, Miami and the Faena Forum—have secured Miami’s reputation as a destination that is equal parts beauty and the beach.

YOU’LL WANT TO STAY AT: The Julia Hotel, a new, adults-only, 29-room property in South Beach. You’ll love the refined touches like 20-foot ceilings in the guest rooms, daily wine-and-cheese happy hour and, of course, an original art collection.

WHEN YOU’RE HUNGRY, GO TO: A food hall. The culinary-gallery trend has hit the city in a big way. Italian market La Centrale Miami and New Orleans export St. Roch Market are set to open this year. But if you can’t wait, visit 1-800-Lucky, an Asian marketplace in the Wynwood neighbourhood with seven eateries and two bars.

THE DIGITAL D E TOX LA DÉSINTOXICATION NUMÉRIQUE

Fort Myers

Leave your devices at the door at this mindful getaway. THE VIBE: Close your eyes. You’re reclined in a beach chair on a long stretch of powdery white sand. Out in the water before you, a pod of wild dolphins turns somersaults in the waves. You rise, walk to the ocean’s edge and dip your fingers in, only to catch a sand dollar in your outstretched hand. Around you, thousands of seashells tinkle in the tide like a giant wind chime. Relaxed yet? This isn’t a guided meditation—it’s real life on Sanibel and Captiva islands, just across the bridge from Fort Myers. Explore these unspoiled isles tip-to-tip by bike, spot resident manatees from trailside lookouts and roam the shell-strewn beaches.

56

YOU’LL WANT TO STAY IN: A beach house. They range from tiny rustic cabins to glamorous stilted mansions on North Captiva. Self-catered options abound, but, for hotel-style amenities, opt for a breezy beachfront cottage at the Island Inn.

WHEN YOU’RE HUNGRY, GO TO: Sweet Melissa’s Cafe, where chef Melissa Donahue whips up local seafood with inventive flavours. Order the fish stew, a hearty serving of shellfish in tomato-saffron broth with Pernod aioli. Finish with Lime-Elo sorbet, made from the rare hybrid of a key lime and a Honeybell orange.

T H E A D U LT A W AY - T I M E L’ESCAPADE POUR ADULTES

OrlandO

Leave the kids at home—just don’t tell them where you’re going. THE VIBE IS: Visitors may think only about its theme parks (there are 13, after all), but the real Orlando lies in its themeless parks: districts like College Park, Winter Park and Audubon Park. These city neighbourhoods have been quietly developing a distinct adult appeal—not to mention some serious foodie cred. Today, even the staunchest Disney Springs devotees will venture out to College Park for the open-faced rock-shrimp ravioli at K Restaurant and the shrimp and grits at Outpost Neighborhood Kitchen. Or, they’ll head to Winter Park to shop for niche-label handbags and edgy Italian eyewear from among the 140 mostly independent high-end boutiques on its tree-lined streets. Let’s just say if there was ever a time to visit Orlando without the kids, it’s now.

58

YOU’LL WANT TO STAY AT: The Alfond Inn in Winter Park. This gallery-inside-a-hotel features rotating works from The Cornell Fine Arts Museum—Tracey Emin’s neon signs and Steve McCurry’s Afghan Girl photo among them. A private college owns the hotel and all profits fund scholarships.

WHEN YOU’RE HUNGRY, GO TO: The Mills 50 District for modern-American at The Strand (try the Shrimp & Fried Green Tomato) and a tasting session at the nearby Quantum Leap Winery.

grew up in England’s West Midlands, about two and a half hours from London, with its network of canals in my backyard. I couldn’t wait to introduce my wife, Laura, to these historic inland waterways on a 10-day cruise on a narrow boat. We opt for a tour of The Stourport Ring, a 119-kilometre loop that skirts Kidderminster, Wolverley, Cookley, Kinver, Wordsley, Birmingham, Alvechurch, Worcester and parts of the Black Country—named for the soot arising from its ironworking foundries and forges.

These cities, towns and villages thrived during the UK’s Industrial Revolution, churning out goods such as metal, textiles, glass and ceramics, and the canals served as a means of cargo transportation. Competition from railways and motorways saw the canal network redundant by the mid-20th century and the canals fell into disrepair. An injection of government and third-party funding, however, has seen many canals restored to their former glory, with nearby restaurants, cafés and bars creating a buzz.

A complete circuit of the Stourport Ring takes around 10 days, so, before we hop aboard our narrowboat and hit the water, we head into Stourport-on-Severn, a Georgian canal town in the heart of the Severn Valley, to pick up some supplies. This quaint town, once labelled “Pioneer Town of the Canal Age,” is one of a handful in Britain founded as a direct result of a canal, namely the Staffordshire & Worcestershire Canal, which opened to the area in 1772. The town is also home to five canal basins—wider areas of the canal that allow narrowboats to easily load, unload and turn. As we stroll along High Street, we stumble across Laurence Gough & Sons, a family butchers that serves up organic, freerange meat, game and pork pies. Nearby, the Stourport Bakery offers homemade treats that team perfectly with a hot cup of tea—don’t miss the gooey white chocolate cheesecake.

narrowboatS

At Stourport Marina, Starline Narrowboats’ owner Terry Huckerby and Boat Handling Instructor Dave Staines give us a thorough tour of North Star, an 18-metre craftsman-built narrowboat. The boat is slim, and, while the living quarters are tight, I’m surprised to learn it sleeps up to 12 people. Narrowboats may be simple in design, but they’re built like tanks. I volunteer to operate the 100-odd locks along the route, so Laura, under Dave’s instruction, gets the hang of steering by moving the tiller to the right to go left and to the left to go right. After a quick cruise, we moor up. “Never leave the boat without the main rope,” Dave warns. Despite its weight and size, the boat cannot go anywhere while you are holding this rope. Dave shows Laura how to secure the boat to the mooring station with a quick release knot.

“NARROWBOATS MAY BE SIMPLE IN DESIGN, BUT THEY'RE BUILT LIKE TANKS.” « DE CONCEPTION SIMPLE, CES BATEAUX SONT CONSTRUITS COMME DES CHARS. »

WESTJET.COM | MARCH 2018

lock system

“Use your legs, stay low and use the foot grooves,” advises Dave as I set about tackling my first lock. Laura tentatively steers the boat into the lock’s chamber and a mark on the wall indicates where the boat needs to stay to prevent it from flooding when the paddles— sliding panels in the gates—open. After shutting the gate behind the boat, I insert the key into the paddle gear, which resembles an oversized laundry mangle, and, with some effort, crank it clockwise, Clack. Clack. Clack. As the grooves of the paddle in the 1,000-plus-kilogram front gate pass an oily cog, the resistance eases and it opens, sending water into the chamber and raising the boat. Once the water levels have equalized, I push the front gates open and Laura steers through. Having successfully navigated our first lock, we’re on our own. “Relax,” I tell myself. “How hard can it be with a top speed of three miles per hour?”

the black country

Named for the thick black soot that covered the landscape, a result of the coal used in the area’s many factories, The Black Country—comprising Dudley, Sandwell, Walsall and Wolverhampton—was the heart of the nation’s Industrial Revolution, producing much of the nation’s textiles, ceramics, glass and more. We cruise along Stourbridge Canal and brace ourselves for the Netherton Tunnel which, at 2.7 km long, is just wide enough for two narrowboats to pass each other and was the last tunnel built during Britain’s Canal Age. Other than a shaft of light under each of the tunnel’s many air vents and a single head light on the boat’s bow, it’s pitch black. After almost an hour of unwavering concentration to keep the boat in a straight line, we emerge and point the bow toward Birmingham.

WESTJET.COM | MARCH 2018

countryside

Embracing this slower pace of life, we cruise effortlessly along the Staffordshire & Worcestershire Canal—considered one of the country’s prettiest canals—and through the rolling countryside toward Kidderminster, once the heart of England’s carpet-making industry. We reach the rail viaduct at Falling Sands and moor up for a quick bite as the magnificent Severn Valley Railway train steams by overhead. Then we’re back on the water, treated to peripheral views of canal-side pub gardens, wild residential gardens, ivy-covered lock keepers’ cottages and fields of curious horses. We putter under small moss-covered bridges, each named and numbered, some crumbling at the corners after years of boating activity. We drift through Worcester, a historic cathedral city, and the nearby locks at the Diglis Basin Marina that open onto the mighty River Severn—Britain’s longest river.

The Experience

Most mornings, we awaken to moody skies and a light fog hovering above the water. This only adds to the burst of smells, colours and sounds filling our senses as we set off for the day, bundled up in thick woolly sweaters while chowing down on breakfast sandwiches. We bump into first-time boaters like us, and our collective anxiety is replaced with nervous laughs and encouraging words as we gingerly pass each other. A group of wader-clad fishermen cheerfully lift their fishing rods out of our way as we work the angles of a tight right-hand turn to join the Stourbridge Canal. We moor at sunset, as the boat is only equipped for daytime use. Cool nights are spent on board drinking wine and revisiting tales of the day, or enjoying an alfresco canal-side pub supper washed down with a pint or two.

“WE PUTTER UNDER SMALL, MOSS-COVERED BRIDGES,EACH NAMED AND NUMBERED.” « NOUS BROUTONS SOUS LES PETITS PONTS COUVERTS DE MOUSSE, CHACUN PORTANT UN NOM ET UN NUMÉRO. »

WESTJET.COM | MARCH 2018

After Alvechurch Marina and Worcester, we’re on the home stretch, and, as I fluently close the gate on my final lock, I’m struck by how life aboard a narrowboat is a bite back at the modern world—nothing is instantaneous while cruising along the canal. You have to watch as time passes by, but that’s the romance of it.

Birmingham

it becomes a desirable getaway for families who are ready to begin their spring and summer adventures. With WestJet offering direct flights to Victoria, Nanaimo and Comox from Calgary, Edmonton and Vancouver, Vancouver Island is an accessible, easy-to-get-to destination.

Kick-start your vacation in Port Hardy, the largest community in the Vancouver Island North region and a wilderness destination for travellers keen on hiking, kayaking, caving and fishing. As a nature-enthusiast, you’ll enjoy a stay in the environmentally friendly accommodations at Ecoscape Cabins. The cozy cabins, made using salvaged wood, reclaimed flooring and recycled plants, are just steps away from rainforest and beach trails, and they also feature cedar decks and shared fire pits for relaxation after your outdoor explorations. For adventurous travellers hoping to catch a glimpse of marine wildlife, Telegraph Cove, a one-hour drive south of Port Hardy, is a must-visit. Stubbs Island Whale Watching, the first company in British Columbia dedicated to observing whales in their natural habitat, has been offering tours since 1980 and re-starts its spring/summer season in May. Take a tour for a chance to see orcas, humpback whales, porpoises and other wildlife, and to learn all about the animals from the naturalist on-board the custom-built whale-watching vessel.

Of course, your wildlife encounters in this part of the island could be even more memorable. If watching a whale breach from the seat of a kayak is a bucket-list item for you, there are a couple of ways to make that dream come true. Both North Island Kayak and Spirit of the West Adventures offer the opportunity to go kayaking with orcas in an educational and environmentally friendly way. Starting in the early summer, the guided sea kayaking tours can be multi-day adventures or a one-day trip — both are unforgettable experiences. After your adventures on the water, return to the Telegraph Cove Resort, where you can unwind in one of the historic cabins or suites located on the 800-foot-long boardwalk that surrounds the village. Although this part of the Island can feel remote, golf fans will still be able to find world-class links. The Vancouver Island Golf Trail is a 250-kilometre stretch that includes 13 courses between Campbell River in the north and Victoria, the southernmost city on the island. Driving south from Telegraph Cove, visitors can stop to play at two courses in Campbell River —

the Campbell River Golf & Country Club and the Storey Creek at Quadra Island Golf Club — before continuing to play on courses down to the South Island.

RELAXATION AND DISCOVERY MID-ISLAND With direct flights from Vancouver and Calgary, the Nanaimo Airport is an ideal landing spot if you’re starting your vacation mid-island. Once you’ve arrived, make your way to Parksville, a coastal town on the east of Vancouver Island.

Parksville is known for its huge sandy beaches and calm waters, and is a must-visit destination for hiking, mountain biking and golf enthusiasts — the Fairwinds Golf Club and the Pheasant Glen Golf Course are both nearby. Also in Parksville is the Grotto Spa at Tigh-NaMara Resort, widely considered to be the best ocean spa in North America, which celebrates its 15th anniversary in 2018. Make the most of its warm, rejuvenating mineral pool and the variety of spa treatments on offer, then, afterward, dine at the venue’s Treetop Tapas and Grill restaurant.
