As photographers, we often find it surprisingly challenging to step away from behind the lens and truly be in the moment The urge to capture the perfect shot can be overwhelming when you're on safari

You get so caught up in the pursuit of that elusive, flawless image so much so that it's not uncommon to feel a little put out... if a leopard is sleeping and, worse, facing the wrong way Yes, I know, it sounds absurd How could anyone possibly be disappointed by a leopard? But that, my friends, is the strange paradox of the African photographic safari: the more you chase the perfect shot, the more you risk missing out on the true magic unfolding around you.

For those of you who have never set foot on African soil, the anticipation leading up to your first safari is often built on an Instagram feed full of dazzling, once-in-a-lifetime shots: lions lounging majestically, elephants sweeping through golden plains, and a sunset that could make the gods weep But here's the catch: the game drive vehicle, often a safarigoer's best friend, places a significant barrier between you and the raw, untamed reality of the bush The animals, having long since grown used to the quiet hum of these steel boxes, hardly bat an eye Sure, you get incredible photographic opportunities but are you really experiencing the wilderness or just snapping pictures from behind a lens?

We were lucky enough to experience that on a recent stay at Monwana Lodge in Thornybush Game Reserve, where we had the privilege of being guided by Taya Maasch Taya is no ordinary guide She is a walking, talking encyclopedia of the bush, and her enthusiasm is so infectious that we are still smiling just thinking about our experience with her. From the moment we met her, it was clear she wasn’t merely sharing facts about the land she was living it, breathing it, and weaving us into its rhythm You don't learn about the wild with Taya; you become part of it, and it becomes a part of you.

Our walk began shortly after a mouthwatering pancake (or flapjack, as they’re affectionately known in South Africa) brunch stop in a dry riverbed, the perfect place to pause and reflect before diving into the bush We were all content and full, ready to face whatever the wild had in store The weather, however, was anything but cooperative clouds swirled overhead, and gusty winds whipped unpredictably through the trees, making the atmosphere feel more charged than usual It wasn’t just the elements putting us on edge it was a reminder that out here, things are always shifting, always changing, and you have to be ready for anything

To help us navigate the elements, we were joined by a second guide, Bush Man Dan, whose calm and collected demeanor added a reassuring presence to the group Dan's knowledge of the terrain was as vast as the land itself, and his ability to interpret the subtle signs of the environment was a skill born of years spent in the wild. With him and Taya, we felt like we were walking with true experts people whose deep understanding of the bush turned every moment into a lesson, every footprint into a story

At the start of the walk, Taya pulled out an eyedropper filled with a fine powder and let it float in the wind to gauge its direction This may have seemed like an odd ritual, but to her, it was an essential step By confirming the wind’s trajectory, she could ensure we remained downwind of any potential wildlife encounters It’s one of those small, seemingly insignificant details that, when done right, makes all the difference in the world

As we moved through the dense thickets, they spotted signs that seemed invisible to the untrained eye The faintest impression of a paw print half-buried in sand leopard. The subtle indentations left by an elephant’s massive feet elephant herd, traveling slow and steady, likely just ahead It was like witnessing a silent conversation between the land and its inhabitants, a dialogue only those with a deep understanding of the environment could interpret.

But it wasn’t just about the big animals. Taya and Dan taught us that every inch of the bush tells a story. We spent a few moments marveling at the delicate architecture of a community spider’s web, sparkling like a gossamer tapestry in the morning light, each thread a testament to the spider's artistry We paused to admire the silver cluster leaf, whose soft, silvery foliage is said to soothe ailments, while its presence indicates a healthy, thriving ecosystem

And that’s what made this walk so special this wasn’t a race to see how many animals we could spot It wasn’t about ticking off a checklist of predators It was an immersive education in nature, a deep dive into the bush’s rhythms, its details, its secrets. Taya and Dan didn’t just show us the animals; they made us feel the bush in ways that only those who have spent a lifetime in its embrace can truly teach tayaontrails

Kieran Whyte - a multi-talented chef at Ellerman House, renowned for refining the dining experience and expertly optimizing local ingredients in every dish.

RB: Kieran, we appreciate you taking the time to chat with us today. First off, the team here is fantastic, and the venue is breathtaking You’ve embarked on a remarkable culinary journey, transitioning from large-scale menu development to fine dining. How does Ellerman measure up?

Kieran: Ellerman House strikes a balance between a relaxed yet vibrant atmosphere, although it can be demanding Managing everything here is a responsibility, as guests often seek personalized services or unique dishes that aren’t on the standard menu This means we have brief conversations with each guest about their dinner preferences, especially since we update our menus twice daily. So far, we ’ ve crafted 470 different menus, not counting special events, which occur two or three times a week (such as wine events and themed dinners) In reality, the number is probably even higher; we actually calculated it just last week in jest

RB: Wow. 470 individual and unique menus is unbelievable! That must really keep you all busy.

Kieran: Absolutely It keeps us engaged and enhances the guest experience by providing variety every night, so they never have to settle for the same meals repeatedly

RB: Can you share what that process is like? Do you plan menus daily, ahead of time, or monthly?

Kieran: We actually create the menus on the go. We come in during breakfast or lunch service, see what ingredients we have, and quickly (and thoughtfully) devise a menu for the evening For example, if there’s risotto for lunch, we might repurpose it as a garnish for a fish dish at dinner with a different flavor profile It’s all about reusing ingredients creatively and finding ways to expand on them

RB: That’s a great approach. Do you have an example for us?

Kieran: Last night, we prepared a Namibian crab risotto with corn and peas, which we later served as a side for one of our fish dishes at lunch This approach allows us to experiment and find new ways to utilize ingredients

RB: Besides that sounding delicious, planning your menu this way must greatly enhance sustainability and reduce waste.

Kieran: Absolutely For the crab, I used the meat in the risotto, then the shells to create the stock and sauce, ensuring nothing went to waste This method promotes sustainability We're fortunate that suppliers come to us rather than us having to search for them, as there’s an increasing demand for sustainable products Often, suppliers will knock on our door, sharing stories about their offerings, which makes it easier for us to stick to our sustainability principles ensuring optimal guest satisfaction.

RB: Since you're in South Africa, we can only imagine you must have access to some amazing fresh produce.

Kieran: Yes, we ’ re now sourcing langoustines locally from KwaZulu-Natal, which eliminates the need for imports The same goes for the crab, which we ’ re sourcing from Namibia We focus on Southern Africa, providing luxury products without relying on overseas imports We’re also now offering high-quality truffles from the Drakensberg and caviar from Madagascar My goal is to showcase luxury options while minimizing dependence on largescale imports, highlighting the finest products from this region.

RB: It truly is remarkable to see how the art, food, wine, and individuals at Ellerman reflect the dedication to showcasing the best offerings of Southern Africa.

Kieran: Our clients have access to some of the finest wines in the world, and I’ve always wondered why we would offer them anything ordinary. This is why we emphasize South African wines, which many people don’t

encounter often Typically, they’re exposed to imports where as at Ellerman, we present only the very best I encourage our guests to savour these selections

RB: We know this is a tricky question, given there are over 470 menus, but is there a must-try dish for any guest coming to Ellerman?

Kieran: South African lamb from the Karoo is exceptional If you go deeper into the Karoo, you'll find Laingsburg, a region known for its superior lamb This Laingsburg lamb is likely the finest from the Karoo I’d serve it with a gourmet Pap, elevated with parmesan and cream truffle We also prepare a delightful Chakalaka to complement the dish It’s not just a meal; it’s a celebration of local ingredients and flavors. I would strongly recommend everyone to give this a try, and pair it with one of our top wines from the cellar!

RB: That sounds like the perfect combination. If we saw it on the menu, we would order it immediately. We are assuming the dish was inspired by local produce and showcases local flavors? Does your team assist in the decision making and helping choose what flavours to incorporate for local flair?

Kieran: Of course!, We have our kitchen team and all of us come from diverse backgrounds, which means it can’t be solely about my preferences. As team members, we all contribute our home cooking experiences We’re incorporating everyone's culinary backgrounds, not just mine or the hotel’s This approach truly reflects South African culture, allowing everything to blend harmoniously

RB: It is unique to allow an entire team to provide you with culinary ideas. This fosters the feeling we have received so far at Ellerman On a side note, Cape Town seems to have become a “culinary destination” these days Why do you think that is?

Kieran : I believe there’s a natural connection between food and wine For starters, the wine is consistently excellent In wine regions, food and wine naturally complement each other This area also has a strong artistic atmosphere and is quite popular with tourists. Consequently, top chefs tend to be drawn to this region when it comes to cuisine. While I'm not sure how it all began here, I think it likely relates to the wine and the talent this region attracts

RB – Wine is clearly a praised topic around here We heard you are quite fond of wine, can you tell us a bit about the wine program here at Ellerman?

Kieran: Wine significantly enriches the experience here We offer nearly 11,000 bottles, featuring our impressive wine cellar and two satellite cellars, simplifying the serving process As I previously mentioned, we ’ re committed to highlighting the finest selections from Southern Africa

Many wines are not yet listed as they are intended to age and mature As a guest, any wine you purchase has been specifically aged and curated over time for our collection We often express that we aim to buy wine for someone else to enjoy, rather than for our own consumption.
