Gilad Ritz
From Milan to Melbourne: the design trends shaping our homes
Gilad Ritz, co-founder of the award-winning architecture and design studio RITZ&GHOUGASSIAN, is known for creating interior-focused moments that merge the external environment with the interior experience. Having attended Salone del Mobile in Milan, Gilad shares his insights on the latest design trends and innovations, their potential influence on new residential design, and his studio’s approach to crafting memorable spaces.
What were some of the most inspiring trends or innovative ideas you observed at Salone del Mobile this year?
The strongest movement we observed at the Salone del Mobile was a shift towards re-use and re-invention. Yves Salomon and Chapo Creation expressed this idea in their upholstered furniture in which shearling off-cuts were assembled as if they were wooden inlays. This translated into furniture that was rich in texture and expressive in technique. Emerging designers such as Jisun Kim took to using plastic bags to create lampshades, while we saw the invention of organic matter amalgamated with resin to create such things as avocado-seed bricks by Fragmentario.
How do you envision the concepts and designs showcased at Salone del Mobile influencing the architecture and interior design of new homes in the near future?
I think Salone del Mobile 2024 has reinforced the design community’s willingness to re-use materials in inventive ways and a desire to create new palettes and design outcomes. Our own studio’s work balances the ordinary with the technical, the banal with the profound. I see this idea broadening outwards and becoming a methodology designers can use for residential applications. Imagine your own home, a clean, elegant space; the walls in hempcrete are textural and sensorial, plastic lighting shades send shards of light across the floor, and the furniture is new but shows the creases and patina of 50 years.
Experimenting with materials is a hallmark of your studio’s work. Were there any material innovations or applications at Salone del Mobile that caught your attention?
As mentioned, we are inspired by the creation of new materials such as the ‘avocado-seed brick’ or, in our studio’s work, new masonry blocks made from building waste. These new palettes will shape future architectural envelopes grounded in re-use and re-invention.
Your studio has gained recognition for its unique approach to interior-focused architecture that creates memorable moments and experiences. Can you walk us through your creative process and how you work with clients to bring these visions to life?
Our work focuses on the user experience of the spaces we create. We are interested in one’s relationship to the built environment through an interiorised lens. A clean, minimal palette means that space is expressed as simply volume and light. When shaping these spaces, we focus heavily on the client’s brief and their spatial preferences. Materiality is influenced by the site and/or some other local context. Materiality also dictates the construction methodology and thus, in turn, all these factors mould design.
How do you see RITZ&GHOUGASSIAN evolving into the future? Are there any exciting projects on the horizon or new areas you’re eager to explore?
We work across many sectors, from residential and multiresidential to hospitality. In turn, our designed spaces are often influenced by one another. Hospitality becomes a little more residential, and residential becomes a little more experimental. This method of working on many things at once allows ideas to become more plastic and stretch across projects. ■
Tsukune Yakikamifrom
Acclaimed restaurant Yakikami shares their Tsukune recipe, a Japanese chicken meatball delicacy. Chef Daiki Myomoto’s creation blends culinary expertise with traditional techniques, allowing you to recreate this authentic dish at home.
Ingredients Method
700g chicken drumsticks
100g breast cartilage (can be purchased from local butchers or big supermarkets)
50g shio koji (marinade)
65g chopped onion (approximately half an onion)
65g breadcrumbs
Olive oil spray
1 pasteurised egg (optional)
Grated parmesan to taste (optional)
Servings: 12 skewers
1. Remove the bones from the chicken drumsticks and set aside.
2. Finely dice the onion and soak in water for approximately 10 minutes, then drain in a sieve. This will soften the flavour.
3. Coarsely mince the drumstick and breast meat.
4. Add minced meat, onion, shio koji, and breadcrumbs to a large bowl and mix well.
5. Roll generous handfuls of the meatball mixture into oval-shaped balls and set aside on a plate.
6. Fry or grill:
• If frying in a frying pan (without a skewer), press the meatball down in the centre to make a well and fry on both sides for 7 minutes on medium heat.
• If you have a barbecue at home, you may like to skewer the meatballs and grill them with salt, cheese, or your favourite sauce.
At Yakikami, we baste the skewered meatballs with a sweet soy saucebased yakitori marinade and serve alongside a raw egg yolk (pasteurised). Topping with finely grated parmesan cheese is also very popular.

NGV ’s Adult Learning Programs
The National Gallery of Victoria (NGV) has announced an exciting new season of adult learning programs offering a range of courses and talks designed to engage art enthusiasts of all levels. With options for both online and inperson participation, these programs provide unique opportunities to explore the world of art and design under the guidance of NGV curators, educators, and international experts.
Online Courses: Flexibility Meets Expertise
NGV’s online courses offer an accessible gateway to art and design history through self-guided digital experiences. From August, participants can delve into various art movements and themes over an eight-week period, completing weekly readings, videos, and activities at their own pace.
The upcoming lineup includes courses on Impressionism (starting August 16), Women in Art & Design (September 6), Surrealism: 1920s to Now (October 11), Colour (October 25), and First Peoples Art & Design from Australia (November 1). These courses provide comprehensive insights into their respective subjects, drawing from the NGV’s extensive collection.
Immersive In-Person Experiences
For those seeking a more hands-on approach, NGV offers oneday courses and four-week evening programs. These in-person sessions allow participants to engage directly with artworks and experts in a gallery setting.
Highlights include a one-day Colour course on August 31, featuring guest expert David Coles, founder of Langridge Artist Colours, who will share insights on pigment history. On September 7, curators will lead an exploration of women’s
contributions to art and design history. A Surrealism-focused course on November 23 will trace the movement’s evolution and enduring influence.
The four-week evening courses dive deeper into specific themes, with upcoming programs on First Peoples Art & Design from Australia (August 28 - September 18) and Surrealist Art & Design (October 9-30).
Scholars Series: In-Depth Presentations by Global Experts
The NGV Scholars Series brings world-leading art historians to the gallery for in-depth presentations on iconic works from the NGV Collection. Upcoming talks include Dr. Ken Wach on Hans Arp and Surrealism (September 25), coinciding with the 100th anniversary of the Surrealist Manifesto.
Observations 2024: Exploring the History of Dress
October 2024 will see the return of Observations, an NGVcurated online seminar series. This year’s focus is on the history of dress, examining its role in art, social expression, and political change from the Elizabethan era to the 20th century.
The three-part series will cover key moments in dress history (October 12), freedom of dress from 1900-1950 (October 19), and 20th-century influences, including fashion magazines and dress in LGBTQI+ and post-colonial African communities (October 26).
These learning opportunities reflect NGV’s commitment to making art and design accessible to all.
