In this issue, we’ll take a look at how elevated bar food can score with sports fans, winning over the crowd one bite at a time. The big game is the culmination of football season, and one of the biggest days of the year for restaurants. But sports are only

getting revved up as we head toward spring. Basketball is up and running with critical conference games leading to the March college tournament. Pitchers and catchers will be reporting soon. And of course, hockey, soccer, and combat sports are all battling it out. These crowd-pleasing events present strong opportunities for foodservice, not only in terms of game-day atmosphere, but in the takeout and delivery segment as well, with many fans rooting on their teams from the comfort of home. Bar food has always been about convenience – grabbing a handful of golden-brown fries to dip, chowing down on pizza with all the best toppings, and snacking on spicy wings hot out of the fryer. Still, just
because we want to watch sports while eating with our hands (don’t judge, you do too), doesn’t mean we want to sacrifice flavor and innovative takes on the dishes we crave. With wings, the sauce is the championship ingredient, and that fits perfectly with consumer trends for bold and spicy flavors. Sriracha is an ideal option, sweet and heat taste providing a winning alternative to traditional Buffalo spiciness.
A great way to utilize Sriracha’s wellbalanced spicy kick is combining it with honey, a squeeze of lime, and a dash of soy—adding an international twist to the hot honey flavor trend.

Spicy Breaded Chicken Wings
2 oz.
Honey
1 oz.
Sriracha Chili Sauce
1 tsp.
Soy Sauce
1/2 ea.
Lime Juice
3 T.
Unsalted Butter
Serves: 1 Cook wings in a 350°F fryer for about 5 minutes. While wings are cooking, over medium heat melt the butter in a saucepan. Add honey, Sriracha, soy, and lime juice. Stir well, remove from heat. Place cooked wings in bowl add sauce and toss. Serve with desired sauces, celery, or carrots.

Yields: 1 Pizza
ingredients 1 Ultimo® 14-Inch Raised Edge Crust 7 oz. Roma® Original Mozzarella/ Provolone Cheese shredded 2 oz. Roma Cup n Char Pepperoni 2 oz. Piancone® Genoa Salami, sliced 2 oz. Piancone Prosciutto, sliced 2 oz. Piancone Capicola Ham, sliced 4 oz. Roma Ground Tomato 1 c. Olive Salad ¼ c. Unfiltered Olive Oil ½ c. Roma Shaved Parmesan cheese
A creation of New Orleans reborn into a unique signature pie. Crust topped with sliced pepperoni, capicola ham, genoa salami, prosciutto, and olive salad. Finished with nutty melted mozzarella provolone cheese and a drizzle of unfiltered olive oil.
preparation Place crust on a pizza screen. In a circular motion from the center towards the edge apply the tomato sauce. Add 4 oz of cheese. Arrange pepperoni, prosciutto, salami, and capicola on top. Sprinkle on Olive Salad and top with remaining cheese. Bake in oven of your choice*. Remove from oven and slice. Drizzle with unfiltered olive oil followed by Parmesan cheese and enjoy. *Turbo Chef oven will take 2 minutes. Impinger Conveyor Oven set at 500°F about 5-6 minutes. A convection oven set to 400°F with fan on will take about 8 minutes.

Surf and Turf Philly Style Sandwich 1 Roma® Hoagie roll 1 tsp. Butter TT Olive oil 1 portion Sliced Philly Beef 3 oz. Peppers and onions – julienned TT Salt and pepper 2 oz. Serves: 1
Butter the hoagie roll and toast on a flat top. Add olive oil to the flattop and cook the beef, peppers and onions together. Season with salt and pepper. Work the cheese in and move to the hoagie. Toss the shrimp in the seasoning and grill. Place the shrimp on top of the steak. Spread the dressing on the top half of the hoagie. Serve with extra sauce and french fries or chips.
