Chef’s table STATE With the help of Visit Philadelphia, residents are getting an opportunity to interact (virtually) with many of the movers and shakers in the city. The group has kicked off a weekend streaming series containing food, lifestyle and culture segments on its Facebook page. Last week, Jen Carroll and Billy Riddle from Spice Finch cooked from home all weekend. Starting this Friday, April 3, local chef Jose Garces is up. The price tag per month Jeff Freedman, new owner of Hahnemann University Hospital, told the City of Philadelphia it would cost to rent the hospital to act as overflow for COVID-19 patients. Needless to say, city officials told Freedman to go fuck himself (in the most bureaucratic way possible, of course). Fortunately, Temple has stepped up and has modified its Liacouras Center to serve as a makeshift medical facility. We never knew a pandemic had a price tag.

Staying in the dark

After repeated inquiries on why there wasn’t one, last week, the city finally created an interactive map for residents to know how many confirmed cases of COVID-19 there are by neighborhood. The map portrays the number of tests administered, the number of confirmed cases and the total percentage of those tested. It’s good information, and we hope is more of a deterrent for people still venturing out, but now that it exists, there’s a small piece of us kinda wishing that it didn’t.

Some people, man... We’ve all done it. Moved out of a place and left a few things on the sidewalk for garbage pickup. But this Philadelphian clearly took it to the extreme, leaving essentially what amounted to an entire house for city trash crews to come collect. What we’re baffled by is how at no point did this person take a look at the block after disposing of beds, dressers and a slew of trash (not in bags, mind you) and never think at one point, that perhaps he might have overdone it.

Tom Segura: Ball Hog | Netflix

We’re suggesting this one because none of us can decide if Segura’s latest Netflix special is hilarious or just ehh. There were LOL moments, like his discussion of loving his kids over his wife or telling us just how slutty our moms are, but then there are predictable moments where it’s easy to just shake your head and wait for the next joke. However, Segura is worth a watch so you can make the call for yourself.

This ultimate David vs. Goliath’s story is probably one of the best in sports history. Perhaps what’s extremely interesting is that “David” is Muhammad Ali, arguably the best boxer of all time and Goliath would be George Foreman, the former heavyweight boxer and indoor grill magnate. It’s said that 1 billion people watched the epic fight between these two in 1974. This doc goes into excellent detail why.

OK, so if you’re not already watching this one you are completely on the backburner. Remember how people went crazy from Netflix’s 2017 “Making a Murderer” mini-series? We think this one blows it out of the water – in fewer episodes. Dive into the life of exotic animals, murder, murder-for-hire and polygamy in just seven episodes. There’s not many shows that expertly can describe the term “degenerate” as well as this Tiger King. Actress Octavia Spencer freaked us all the fuck out in “Ma,” but she’s so damn inspiring in this Netflix flick inspired by the life of Madame C.J. Walker, whose beauty products made her into the first woman to become a self-made millionaire. If you’re looking for a little hope in all of this self-isolation, this is probably the one film that’ll get you pumped to get back out there – once we all can, of course.

There’s only two seasons of this dramedy created by Childish Gambino (actor name: Donald Glover). Glover plays Earn, who’s trying to piggyback the stardom of his cousin, on his way to becoming a big name in the hiphop game. We like this one because everytime we think we have a handle on what happens next, we realize, yeah, we definitely don’t. It’s a good watch, if you have the time, which, yeah, you do.

Jeffrey Tambor plays a transgender woman named Maura and dives into how family, friends and those on the outside world interact with Maura on a daily. We love this show for an eye-opening insight into how we subconsciously treat each other even if we don’t think that’s what we’re doing.

HUNGRY? What we’re cooking….

Since it’s never a good idea to drink on an empty stomach, and you can eat only so many Pop-Tarts and Hot Pockets until your insides violently rebel, we’ve also rounded up some great recipes from some of the most noted chefs in the area.

Potage Parmentier (Potato Leek Soup)

Courtesy of Forsythia chef/owner Christopher Kearse Serves 6-8 3 large leeks 4 tablespoons unsalted butter 1/2 cup sliced shallots 1/3 cup sliced onions 1 lb (about 1 large) Yukon gold potato, peeled 3 garlic cloves crushed and skin removed 6 cups chicken (or vegetable) broth 1 cup heavy cream Salt and freshly ground pepper 2 sprigs thyme,2 sprigs parsley, 2 bay leaves

Courtesy of Lalo and Bourse Food Hall co-owner Neal Santos 1 medium Chinese eggplant, grilled, cooled, and skin peeled. 2 eggs 1 tsp of fish sauce or salt 1/4 cup of chopped red bell pepper 1/4 cup of chopped sweet banana pepper 2 scallions, thinly sliced 1 tsp of garlic minced 1 tsp of ginger minced 1/2 cup of leftover sausage, or bacon 1/4 cup of cilantro for garnish 1/4 cup of pickles for serving Banana ketchup or regular ketchup for serving

Instructions: 1. Cut away and discard the dark green leaves and roots from the leeks, leaving only the white and palest green sections. Then cut them lengthwise and rinse in water to get rid of the dirt. Chop the leeks into pieces about 1/4 inch wide 2.Melt the butter over medium heat in the saute pan, and add the leeks, onions, garlic, and shallots. Season generously with salt and pepper. Cook the vegetables over medium heat for about 3-5 minutes 3. Cut the potato lengthwise into quarters, then cut crosswise into strips about 1/4-inch thick 4. Make a sachet, wrap the thyme, parsley, bay leaves and some fresh-ground pepper in the cheesecloth and secure with twine 5. Add the potatoes and sachet/ herbs to cook for another 2 to 4 minutes 6. Add the chicken broth to the mixture. Stir, and taste to adjust seasonings as needed. Bring the pan to a simmer, then reduce the heat in order to simmer for 30 minutes. Cover with lid 7. After 30 minutes, remove the soup from the heat and let it stand and cool for 15 minutes. Remove the sachet 8. In batches, puree the soup until fine. Return the soup to the rinsed-out pan and bring to a simmer. Add heavy cream and simmer for 5 minutes

Prepare ahead of time: Roast your eggplant on a grill or in your oven for 15 minutes underneath the broiler, or directly over the flame of your gas burner. The skin of the eggplant should crack until blackened and soft. Cool the eggplant in a ziplock bag and let the steam continue the cooking process. Once completely cooled, the skin of the eggplant should peel right off. One the day of: Whisk your eggs until creamy and consistent in a large enough bowl to fit your eggplant. Add fish sauce or salt. Dip your cool and peeled eggplant into the batter and mash the flesh of the eggplant with a fork. Heat a medium or large skillet with oil to 350 degrees. Saute your peppers, onions, garlic, ginger and sausage. Cook until softened and set aside. Clean your pan and reheat with oil to 350 degrees. Gently slide your eggplant from the bowl to the pan and fry your egg and eggplant. Add your filling back to the omelette and let the batter set. About 3 minutes. Carefully flip your tortang talong and cook for an additional 3 minutes. Serve with the stem on with rice, pickles, cilantro and some banana ketchup.

STEP INSIDE ZONE 6 Where the beat goes on and on and on BY JASON N. PETERS

O

n a standard weekend night, pre-coronavirus, of course, most Philadelphia clubs and bars close up shop at 2am. There are only a handful of blessed establishments exempt from that strict close time, Pen & Pencil and Zee Bar to name two. However, there’s a nightlife scene that operates outside the purview of the liquor control board and law enforcement. A major player in that scene is “Zone 6,” an unsanctioned West Philly after-hours club that opens at midnight at closes whenever the party stops. Zone 6 is run by a pragmatic 27-year-old who goes by “Zell.” The soft-spoken club owner explained that he is much younger than anyone else running an after-hours spot in the

city, of which he could name five or six. Zell’s operation is extremely fluid by design. Without proper licensing, Zone 6 functions as a modern illegal speakeasy forced to conceal its existence from police. Zone 6 is not a concrete place, rather a brand that moves from rented space to rented space on a week-toweek basis. One week it’s in a warehouse, the following week it could be in a home. The only way to find out the location of Zone 6 is by reaching out to its social media pages or being personally invited. What is offered at an unsanctioned West Philly after-hours club? It offers multiple flavors of hookah and even supplies disposable mouth pieces for hygiene purposes. There is a bar serving a modest range of liquor in trans-

lucent plastic cups, as well as the signature Zone Punch. Regardless of the location, there is always a stripper pole for the cavalcade of dancers there to work. When asked why he runs an after-hours spot, Zell replied, “Some of the ones (after-hours spots) that include dancers have a different kind of dancer, they have dancers that get high a lot or sell themselves for money. Those places exist in Philly where you can go and have sex with people.I wanted to be the opposite of that.” Zell stresses safety, cleanliness, and professionalism whenever asked about the club. “There have been no fights or shootings in two and a half years,” Zell explains. “No one brings a gun in, not me, not my best friends,

no one. Only the security guard.” Flexx, a dancer and bartender at Zone 6, explained, “If I was someone visiting for the first time, I’d be skeptical about safety, but the more I come here, it’s like home. It’s like a family, club type of thing.” The general atmosphere is not reminiscent of a standard strip club, it’s more comparable to a college party, plus strippers. A DJ plays the hottest new hip-hop, blunts circulate from patrons to staff, and there is a standard level of familiarity between all parties. It’s easy to gawk at the idea of an unlicensed nomadic strip club, but its very existence beckons greater questions. Zell mentioned the lack of after-hours spots in Philadelphia in comparison to New York: “Zone 6 is an after-hours club, because other bars close at 2 o’clock. … A lot of people like staying out past then. In New York, where there’s a lower crime rate, they allow clubs and parties to continue to operate with no problem.” Zell has run into legal troubles running this

operation. Zone 6 has been raided, and Zell has been arrested and fined by the Department of License and Inspection. Pennsylvania has some of the most strict and inane alcohol regulations in America. The restrictions range from forcing bars to close at 2am to the prohibition of beer pong in bars. Pennsylvania is the most difficult state to acquire a liquor license as state law puts a limit on the number of licenses available, inflating the cost and impacting the price. The only way to acquire a liquor license in Pennsylvania is to acquire one that already exists. Pennsylvania is the only state in the union that operates this way. States like Vermont and Minnesota simply charge a small annual fee and ask that you fill out a form. ing down the street, like in this area (around UPenn’s campus), a bunch of black people at 4am, cops are gonna be drawn to us,” Zell explained. “As black people, we tend to ‘look suspicious’ after a certain hour in the eyes of law enforcement. We get hassled. So a lot of after-hours places are more so in urban areas where there is a majority of black people. We get harassed past certain times. It happens.” The section of West Philly where Zone 6 is located offers little to no night life. The nearest clubs are miles away in areas of the city where Zell doesn’t believe his patrons would feel comfortable or welcomed. Where would the hundreds of people go each night if there weren’t places like Zone 6? When the 2016 Democratic National Convention came to Philadelphia, Gov. Wolf signed a revenue package granting “national event permits” to “bars hosting DNC events”permitting them to push last-call back to 4am. When patrons of Zone 6 want to enjoy themselves past 2am, it is against the law; but when friends of the government (who dictate the arbitrary liquor laws) want to enjoy themselves, the rules are subject to change. Moments like this point to how arbitrary the 2am close time really is. Zell hopes to one day turn Zone 6 into a legally sound private club. At his current capacity, he brings in close to a hundred patrons on

a weekend night and employs eight to 10 people. Zone 6 functions as a source of extra income for all involved, it’s somewhere for strippers to work after the clubs close at 2am, an extra security shift for bouncers, and is even Zell’s side hustle. One dancer studied for her midterm as the other dancers got dressed. “I just got off my shift at the airport, it’s always good to come here and make a little extra money,” another dancer explained. The illegal nature of Zone 6 provides benefits as well as headaches. It’s the only place in Philadelphia where you can smoke a blunt with some strippers and get a Crown & Coke at 5am. Working in the service industry provides an extremely uncertain lifestyle, working at an unsanctioned after-hours strip club ramps that uncertainty up 10 times. For an operation like Zone 6 to function legally, Philadelphia would have to restructure the entirety of its alcohol laws and fundamentally change the service industry. Zone 6 is the byproduct of a system that is not friendly to change or adaptation and rarely feels pressure to evolve. In 2016, state Rep. Scott Petri said it was “of tremendous economic benefit for Philadelphia” to keep bars open for two extra hours while the DNC was in town. Why not extend that “tremendous economic benefit” to the entire city?

PHILADELPHIAWEEKLY.COM @PHILLYWEEKLY Ronca, whose hard life of homelessness and addiction on the streets of West Philly was turned around by self-determination and parlayed into a film school scholarship on the West Coast. No sooner than Ronca began directing and editing his own work for episodes of the 2016-2017 series “The Revolution Televised” (his coverage of the Philadelphia National Democratic Convention and its dressy protests was a particularly sharp and aptly gritty), that he met a soul as troubled as he had once been in Stephen McCoy, a Boston millennial who, like Ronca before him, fell into the cycle of addiction of homelessness. And like Ronca, McCoy managed to hold onto one thing to keep him sane and human – a camcorder. Through video, McCoy captured the squalor of opioid addiction, one needle at a time. Ronca met McCoy, found a kindred Image | Avel Chuklanov spirit in every way, and the former helped edit over 80 hours of the latter’s literally and figuratively raw footage. Ronca also became a producer of “Nightcrawlers,” and took that documentary onto the festival circuit through the auspices of his Write Brain Studios. Fast forward to the present: Ronca travelled to and returned home from a vacation in China – late January to mid February – just in time to witness their onset of coronavirus. “I was in the second-most infected region, Guang Dong,” said Ronca. “I was hoping to film a family vacation, but it quickly turned into a pandemic.” Once home in Diamond Bar, Calif., and self-quarantined, Ronca began hastily putting together his footage for a documentary on the start of Covid-19 with a working title, “The Year of Zi.” Ronca said the zodiac plays a great part in his film, and what he witnessed. “It was supposed to be the Year of the Rat, but it was technically “metal rat,” said Ronca of the zodiac translation, “which forewarns disaster and the collapse of material objects such as metal and gold.” Along with hoping to ready “The Year of Zi” for screening in May (“while people are stuck at home via Patreon”), Ronca is also hoping to get the documentary into festivals, “even if no one knows where we’re heading. Hopefully, I’ll get a chance beyond Icepack to follow up on this. We can discuss Ronca’s troubles with Amazon and “Nightcrawlers.” It’s a doozy.

‘Dispatches’ dispatched? Sticking with the splashy moving image for a moment, is it me or has all the over-the-top good will that was initially afforded everywhere man Jason Segal’s all-Philly-filmed AMC series “Dispatches from Elsewhere” all but dissipated? At a time when everyone is staying home, C-19 nesting and watching everything they can get their eyeballs on, is anyone still watching it, after they checked out Philly during the first episode? If anyone is watching, there’s not much chatter or response. As of March 30, “Dispatches” has not been cancelled or renewed for a second season. The Hollywood Reporter writes that the series was “like watching a quartet of mostly cardboard cutouts figuring their way out of the world’s fanciest escape room.” Stay tuned. Or maybe not. Beat the Plague What a difference a month makes. Toward February’s end, acclaimed Philly playwright Jacqueline Goldfinger had not only opened her new future-forward dramedy “Babel” at Theater Exile in South Philly, but was readying an immediate set of premieres and readings at three additional theaters throughout the states, with several additional productions to mount by summer. It was as if Goldfinger had started a “Babel” franchise, and everybody wanted in. Then, Covid-19 struck, and beat down “Babel” for the moment. “With many of the productions of “Babel” postponed, I’m shifting my writing and education work online,” said Goldfinger in an email. Not only is she running a Beat-the-Plague Playwriting Workshop with free reservations “to keep those of us who want to write inspired and accountable in isolation.” Goldfinger took part in an online play project “Stranded” (“to quickly write a monologue play that teachers and students can rehearse and perform over online platforms for free”), and she’s also planning to mount her April writers retreat – now, online – for April 2427 with master class teachers Tammy Ryan, Stephanie Kyung-Sun Walters, and the author. Kevin vs. the Apocalypse I left for work a week ago as usual on a bike wondering how long it would be before the hotel would have to close. It was a rainy day, I rode my bike because I didn’t want to spend money. We had maybe 20 rooms sold out of 235. I hated that I was going to work with the public, but I had to do it. I’d eat the free food in the employee cafeteria where they had separated the tables a few extra feet apart. Pasta in red sauce. I piled it on my plate having handled the same serving utensils everyone else did. I washed my hands before eating. It was the first of 30 times that I would wash them over the course of the next eight hours. The restaurant and bar staff were gone, most of the housekeepers were gone, it was a skeletal staff at that point. There were no valets, no concierge, not even security. There was a phone operator, a front desk clerk, a room service server, a cook, a lobby attendant, and me the bellman. Seven of us, in a 235-room hotel. The sense of darkness in the air was palpable. For the most part, the guests were fucking lunatics. It was the second night that all bars, restaurants, venues, museums, theaters, you name it, were all closed. If I were traveling for pleasure, I’d call that a big signal to cut my trip short. But no. I watched a family of 10 check in. Three adults and seven kids. They were so excited to use the swimming pool. Of course, later that night, I’d be stuck on an elevator with all of them. One couple that was having their house worked on decided to leave the hotel and go back home. They were the last people I helped with their luggage. They said they would rather endure some unfinished construction than be in a public hotel. I told them I wish I had a choice. They tipped me $50, I thanked them profusely. The next day I put that $50 bill down at the beer distributor for a case of

Victory Hop Devil and marched home with 24 beers and some change. I wasn’t even done putting the beers in the fridge when my HR department called to let me know I had been furloughed for 60 days. Goddamn it. I totally would have bought twice as much shittier, cheaper beer had I known. I didn’t have a job. Last Friday was sunny and warm with a light breeze. I had a few things I needed to grab from my locker at the hotel. I rode my bicycle up there to grab my things. Everything was changing. I could feel it. People weren’t paying attention to what they were doing, everybody’s mind seemed to be somewhere else. A driver sails through a stop sign ahead of me. At the hotel, everybody was quiet. Wash the hands again. I grabbed a to-go box and filled it with rice, mixed veggies and tofu. I’d end up making that fucking rice and tofu last for two days. I wished everyone in the cafeteria goodbye and good luck. I left the hotel, my head swirling with all of the things I needed to do, all of the bills I’m going to have to cover. I really wasn’t sure how I was going to do it. I walked out through the employee entrance with the radiant sun shining down on me. I rode my bike down the Delaware River looking out at the water slowly moving toward the Atlantic, the battleships and tugs, the freighters and barges that I’d watch day in and day out. I glide onward, the families frolicking by the Coast Guard station, knowing full well all of this is coming to a halt. I felt the warm spring air flow past me carrying its memories of every time the land reawakens and how refreshing it usually feels … I still feel it, but it’s more of a memory blanketed with a firm omnipresent grim reality this spring would be different. I stopped to grab a few things at Target. There were more people than would normally be there. Everyone was being polite enough, but there was an emptiness in the eyes. The loss that people were starting to feel was obvious. You would catch a look and it was vacant, or lost. No more jobs, no more money, no more sitting at your favorite bar, no more baseball, no more visiting grandma, hell, no more grandma, no more art shows, no more concerts, no more parties, no more hugs, no more passing the pipe, no more hospital beds, no more living with abandon, no more movie theaters, no more school, no more gym, no more.
