LOCALNEWS KEANAN WINS NORTH EAST YOUNG CHEF OF THE YEAR 2018 A CHEF at a leading North East hotel has beaten competitors to win a prestigious award. Keanan Pattison, Junior Sous Chef at Rockliffe Hall’s Clubhouse restaurant has won the coveted title of North East Young Chef of the Year 2018. Organised by NECTA (North East Culinary and Trade Association), the competition involved a half an hour knife skill class followed by an hour-long challenge where the young chefs had to prepare, cook and present a two course menu for two

Keanan, who started working in the Clubhouse kitchen at Rockliffe Hall five years ago, was named the winner and is now automatically through to the semi-final of the Craft Guild of Chefs National Young Chef of the Year competition, which will take place in mid-2019. Keanan, from Darlington, says: “I’m so excited to have won this award. I was up against some great chefs and feel privileged to have come first. I’m looking forward to
the challenge of competing in the national competition next year.” Douglas Jordan, Chairman of NECTA adds: “The standard of food produced by each chef was extremely high and people attending from outside the region were very impressed. TOP AUTHOR OFFERS STUDENTS A MASTERCLASS IN MURDER MYSTERY AVID bookworms have been given a master class in murder mystery by a leading literary role model. Year 7 students from Haughton Academy, Darlington, were joined by primary pupils from Springfield Academy, Marchbank Free School and Gurney Pease Academy, for an afternoon workshop with celebrated children’s author Robin Stevens. The American-born fiction writer, best known for her Murder Most Unladylike series of books, began writing aged 12 after being inspired by a book by novelist Agatha Christie.

A LOCAL theatre is taking steps to create a more environmentally friendly experience for theatre-goers.

Darlington Hippodrome has made the decision to switch from plastic to paper straws in all five of its bars, which usually give out around 10,000 plastic straws in a six-month period.
The theatre has also dramatically cut down on the number of paper brochures they have printed and distributed to promote their Autumn 2018 shows, with 15,000 fewer brochures than the previous season.

MIDDLETON OFFICIALLY LAUNCHES MHA MONTPELLIER MANOR The official opening of a new Middlesbrough care home was kicked off by a former Emmerdale star. John Middleton, who played Ashley Thomas in the popular soap, spent the day talking to staff, residents and invited guests of Montpellier Manor as the local community marked the official opening of its new care home. The occasion was marked by an official ribbon-cutting ceremony and cutting the cake, then guests enjoyed cake and tea with the opportunity to take a look around the home for themselves.
The home provides residential and dementia care to people in Stainton and the surrounding area and is the ninetieth MHA home across England, Scotland and Wales.

John Middleton said: “The important word here is ‘home’ and that’s the impression I get. It’s a home where people can live with dignity and a whole lot of happiness. “I first came across MHA while I was doing research into dementia for the character I played in Emmerdale. Their very first care
home that I visited was Glen Rosa in Ilkley and I was absolutely bowled over by the care and atmosphere of that place. Montpellier Manor is the same - it’s just newer. And I can’t wait to come back to visit soon.”
US DIPLOMAT INSPIRES STUDENTS AT DARLINGTON COLLEGE AN American diplomat has given Darlington students an invaluable insight into the UK’s special relationship with the USA. US cultural attaché with special responsibility for the North East, Kim Dubois helped dispel popular misconceptions about the world’s richest nation, explained how elections and the administration works ‘across the Pond’ and urged students to take up study and life experiences in America, which often come backed with full scholarships. More than 100 students from across all the college’s curriculum areas heard the cultural attaché talk about the ‘best year of her life’

Even within our own country the West and East coasts are different planets. The only way to get to know us properly is to spend some time with us,” said Kim.

CHRISTMAS PARKING OFFER CONFIRMED Christmas will come early to Darlington this year after councillors agreed to introduce festive parking offers for motorists.

RAF CHARITY SEEKS TO TACKLE LONELINESS IN DARLINGTON THE ROYAL Air Forces Association is encouraging local members of the RAF family to get in touch if they are feeling isolated or lonely. The charity provides welfare support to serving and ex-RAF personnel and their dependants, including a befriending scheme which offers people visits from specially-trained volunteers who work across the UK. The befrienders pay regular visits, giving people someone to talk to and providing support in re-establishing old connections or forming new ones with people in their local area to help establish a wider group of friends. In 2017 alone, the Association responded to hundreds of appeals for befriending support, and the charity’s director of welfare and policy, Rory O’Connor, hopes the Darlington area will see local people benefitting from the scheme. He said: “We know, from the Office for National Statistics data, that five per cent of adults in England last year reported feeling lonely ‘often’ or ‘always’. Single or widowed people are at particular risk of experiencing loneliness more often, and we know that elderly people with reduced mobility can be hard-hit. “Feelings of loneliness and isolation can be a serious issue for people who served in the RAF because, when they retire,
they suddenly lose the camaraderie of being part of a close-knit community of colleagues. “Our experience shows that our befriending scheme benefits everyone involved – our volunteers who take time out of their day love doing it, and befriendees benefit hugely from the visits. A well-known historic site in Durham has been given a new lease of life, thanks to the work of the Darlington office of an award-winning architectural practice. Church Lukas, whose head office is in Nottingham, is celebrating its second year in the North East with the successful completion of the regeneration of the former County Hospital site in Durham. Renamed as Rushford Court, the site will now provide contemporary accommodation for over 360 students, run by Unite, the UK’s largest provider of privately-operated accommodation. Unite’s Commercial Manager, Matthew Painter, said: “Church Lukas has delivered an exceptional student scheme for us in Durham. Put you and your family first and don’t run yourself ragged pleasing everyone else’s requests before fulfilling your own needs first.

littering costumes, classic songs and flawless routines are all to be expected at Remembering the Movies. Strictly Come Dancing’s very own Janette Manrara and Aljaž Škorjanec are bringing the movies to life with their latest show, following on from their hugely successful Remembering Fred tour. “Aljaž and I are so excited touring our brand new show Remembering the Movies,” said Janette. “We did two years of Remembering Fred, which celebrated the legacy of Hollywood legend Fred Astaire, who we are both huge fans of, but this year we wanted to try and top that.” And film fans will be pleased to hear that there will be a mixture of movies featured in the show, both old and new and from various genres. “When the movies idea came up we got really excited because there are so many different things you can tap into, so many incredible films,” she said. And while Remembering Fred focused on one man, this time there were countless titles and moments to choose from, bringing with it the difficult task of narrowing down the list.
“Just picking which ones we’re going to dance to and celebrate was tricky. But I’m really excited because the cast is different, in the sense it’s really, really strong in contemporary, ballet and jazz. “It’s going to be a huge celebration of the most iconic moments in film, celebrating the songs and some of the very best dance moments.” From classic titles to modern blockbusters, Remembering the Movies will pay tribute to stars like Audrey Hepburn, Gene Kelly and Marilyn Monroe, as well as much-loved films including Saturday Night Fever, The Greatest Showman, La La Land, Cabaret and many more.

Bohemia’s Black Butter and Jersey Brandy Cheesecake recipe Steve Smith from Michelin star Bohemia restaurant shares his indulgent recipe for 12 portions of Black Butter and Jersey Brandy Cheesecake this Christmas.
Equipment • Parchment paper • Cake tin or mould • Paddle • Whisk
Cheesecake Base • 200g Dulcey chocolate (or milk chocolate) • 300g Crunchy Valrhona praline (or Nutella)
• 150g Feuillentine (or Crunchy Nut Corn Flakes) • 100g Toasted salted hazelnuts blitzed in a food processor • 2g Smoked salt Melt the chocolate and mix in the praline. Fold in the Feuillentine flakes, hazelnuts and smoked salt then spread it between two bits of parchment paper and roll a thin layer into a cake tin or mould.
Cheesecake • 800g cream cheese • Half a tin of cooked condensed milk • 5 leaves of gelatin • 150g Pasteurised yolks • 50g Sugar • 200g Dulcey chocolate • 80g Jersey Brandy
Soften the cream cheese with a paddle then add the cooked condensed milk. Dissolve the gelatin in the cream. Whisk together the eggs and sugar over heat until they are white. Melt the chocolate and add to the Jersey Brandy and Black Butter. If you do not have Jersey Black Butter instead you can use apple puree and a little bit of mixed spice and liquorice. Whisk the cream until thick and fold into the cream cheese mix. Pour over the biscuit base and chill in the fridge for 30 minutes.
Butter Spiced Jelly • 400g cider • 150g Jersey black butter • 3 gelatine leaves • 25g Jersey apple brandy • 1 lemon to use for juice Dissolve the gelatine and strain. Heat the cider and add the black butter and gelatine. Add the rest of the ingredients and set the jelly by placing it into the fridge for 30 minutes. Decorate as desired. WHAT’S BETTER THAN A HOLIDAY?
TWO HOLIDAYS! Bernice Saltzer combines two countries in one memorable trip… My love affair with the Far East began, bizarrely, through a television cookery show. A Masterchef Australia fanatic, I was enthralled by the contestants’ visit to Singapore and their experience at the iconic Marina Bay Sands hotel, with its rooftop infinity pool. That inspired our next holiday choice and quite a few after that, with Thailand and Hong Kong also then ticked off the bucket list. So when the opportunity to take in one of the most famous cities in Malaysia followed by a stay on the 38 | Darlington Today
magical island of Bali arose, who would refuse? It didn’t take long to realise why friends who have previously visited Kuala Lumpur have said they fell in love with it. What you have here is a city of massive contrasts – from the iconic twin Petronas Towers and the KL Tower which symbolise a modern city at its best – to street markets and delicious hawker food cooked fresh in front of you. No visit is complete without a trip to Jalan Alor, a lively street packed full
of outdoor restaurants and stands offering everything from the freshest of seafood to Malaysian specialities. Choosing just what to see in a visit that spans a few days is difficult, but at the top of the list has to be the Batu Caves. Towering over it is the massive Murugan statue which guards the entrance. You clamber up dozens of multicoloured steps to enter this Tamil shrine and simply wonder at the temples created inside. It’s hot and punishing work – the humidity in Kuala Lumpur is exhausting – but worth every step.
We left Malaysia and headed for Bali, the paradise island renowned for its distinctive culture and style. Our first stay was the town of Ubud, where we stayed at the stunning Furama Villas and Spa. This little slice of paradise offers elegant, private villas which even come with their own pool – not surprising we simply didn’t want to leave. But if we hadn’t we would have missed out on so much that Ubud has to offer, from the sacred monkey forest to the amazing markets where you can buy endless souvenirs at bargain prices. It’s a great spot from which to see typical Balinese
architecture, with highly ornate buildings everywhere you look. Our next stop was Nusa Dua, a manmade resort which has back to back luxury hotels. Beautiful beaches are great for relaxing but we craved more of traditional Bali, so it’s worthwhile wandering outside the gates to the village – or get a taxi to the lively resort of Kuta where you can sit on the sands, drink in hand and watch the sun go down. This really was a trip of a lifetime and for anyone with a sense of adventure who wants to sample a different way of life – get on that plane!
