The Gressingham duck is a unique breed that first came about when the small but flavourful wild Mallard was crossed with the larger Pekin duck giving a meaty, succulent duck with more breast meat, less fat and a rich gamey flavour. We believe cooking with duck makes a meal much more memorable as it tastes wonderful, is one of the healthier meats you can choose and is easier to cook than you may think. Here is just a couple of our simple but delicious recipes.

Duck Stir Fry with Peppers & Black Bean Sauce Ingredients 2 skinless Gressingham Duck breasts, cut into 1 cm strips 1 small onion, roughly sliced (approx 1 cm) 2 cloves garlic, finely diced 1 large red pepper, cut into 2 cm pieces (core removed) 1 small thumb of root ginger, peeled and finely sliced into matchsticks 1 tablespoon of light soy 2 spring onions, finely chopped into rings 250 ml black bean sauce 2 tablespoons vegetable oil 1 large handful spinach or pak Choy 1 chilli, finely chopped (optional) Salt and pepper Small jug of water Serves 2 5 minutes preparation 15 minutes cooking

Method

Heat the oil in a wok or large frying pan until hot. Add in the duck and quickly stir fry for approximately 1 minute. If the duck appears to be drying out too quickly add a splash of water and continue to stir. After 1 minute take the wok off the heat and quickly remove the duck from the wok and set aside in a warm place. Return the wok to the heat and add in the onions. Put in a pinch of salt and a touch of water and fry for 1 minute. Be careful not to burn the onions, if the flame is too fierce turn down the heat a little and add another splash of water (about a teaspoon each time it is required). Add in the peppers, ginger and garlic (and chilli if required) and stir fry for another minute. Afterwards, add the light soy and spinach/ pak choy and stir fry for one more minute. Now put in the black bean sauce and bring up to heat until bubbling. Return the duck to the wok and cook for a further minute. Mix well and serve with plain rice. Garnish with spring onion.

Pulled Gressingham Duck Leg with Sweet Chilli Sauce Ingredients 2 Gressingham Duck legs 1/2 teaspoon of ground cumin 1/2 teaspoon of ground paprika Salt and pepper 200g sweet chilli sauce for cooking and extra for dipping 150g mixed leaves Serves 2 5 minutes preparation 1 hour and 30 minutes cooking

Method

Pre-heat the oven to 180oC, Fan 160oC, Gas Mark 4 Season the duck legs with salt and pepper on both sides. Then mix the cumin and paprika together in a bowl and rub in to the legs. Place the duck legs on a wire rack on a baking tray and put in them in the oven. Cook for approx 1 hour and 10 minutes and take out of the oven. Pour the chilli sauce over the 2 legs and return to the oven on a lower temperature of 160oC for 20 minutes. Take the duck legs out of the oven and allow to cool for a short period of time. Shred the duck with 2 forks and discard the bones. Divide the mixed leaves onto 2 plates and top with the shredded duck. Garnish with spring onions and serve with extra sweet chilli sauce.

This issue we’ve teamed up with sustainable travel organisation, Local Motion, to bring you a guide to 10 of the best walks in and around Darlington, giving you a chance to explore this beautiful town on foot. You’ll find a full description of each trail, including directions and a map, at www.dothelocalmotion.co.uk. So why not grab your walking boots and give it a try? – You may be surprised by what you find…

Whinfield Loop A circular route, covering just over three miles, through open countryside, woodland and around Darlington golf course. The walk, which starts at the end of Glebe Road, uses mainly rural footpaths and bridleways and should take around 90 minutes to complete.

Rockwell Local Nature Reserve A pleasant 45 minute walk, accessible to both wheelchair and pushchair users, which follows part of the River Skerne. The two mile trail also passes through the heart of Rockwell Local Nature Reserve, which was restored in 2000 to provide a tranquil habitat for all manner of wildlife.


Red Hall / Great Burdon Loop This trail is slightly more adventurous than many others on the list thanks to the use of stiles and lack of structured paths but it is well worth the effort. Those who give it a go will walk just over a mile and half along bridle paths, through fields and along a small section of the River Skerne between the Red Hall and Great Burdon estates.

Red Hall Local Nature Reserve A flat and easily accessible walk through a small nature reserve, which features grasslands and ponds. You should be able to complete it in around 20 minutes but remember to look out for its wide variety of wildlife, including the Great Spotted Woodpecker.

and wetland habitats situated on the edge of Firth Moor near to Cummins engine plant. It covers a circular one mile route from Salters Lane, taking approximately 30 minutes.

Geneva Wood & Barnkline Moor Local Nature Reserves Encounter woodland areas affluent with orchids, woodland plants and mature trees on this 45 minute trail passing through two local nature reserves between Skerne Park and Firthmoor.

South Park Explore the first Victorian park of the North of England in a 1.7m route starting at the main gate. This scenic walk will also take in a stretch of the River Skerne and should last around 45 minutes.

The Whinnies & Middleton St George

Broken Scar and River Tees

This substantial four mile route takes in both The Whinnies Local Nature Reserve, on the site of a former iron works near the Darlington to Stockton Railway, and the Whinnies Water Park, which was gifted to the village by Northumbrian Water in 1950.

A stunning trail along the River Tees, through woodland and in to the West End of Darlington, passing Baydale Beck and the historic Tees Cottage Pumping Station. This walk is the most challenging on the list and covers five miles.

Maidendale Local Nature Reserve A gentle stroll around the ponds, through grassland

Cocker Beck Local Nature Reserve A winding walk exploring woodland and riverside habitats between the Mowden, Cockerton and Branksome estates. The 45 minute route is fairly flat and easily accessible, with structured paths that follow the becks.
