TAKE TO THE SKIES FROM DURHAM TEES VALLEY Your guide to holiday hotspots for Easter and beyond It may not seem long since they went back to school but Easter holidays will soon be upon us and if you’re already panicking about how to keep your youngsters entertained throughout this two week break – and the many holidays yet to follow – then a family getaway could be just what you need. Start your journey at Durham Tees Valley Airport, located just six miles from Darlington on the A67, and in no time at all you could be seeing the sights in Sydney or swimming in a Scottish Loch. Don’t worry, teachers, we know you need a holiday too, and there are plenty of destinations on offer from this local airport to help make the most of your hard earned break. We put our head in the clouds, quite literally, to explore just some of them…

Soar in to Scotland: Eastern Airways operates at least three flights every day direct from Durham Tees Valley Airport to Aberdeen. This stunning Scottish city, dating back more than 8000 years, has much to offer in the way of pristine parks, spectacular shopping and amazing architecture, with plenty to keep visitors of all ages entertained.

Venture outside the urban sprawl and you will find more to explore, including the wonderful walks along the coast, as well as countless castles and dozens of distilleries. If you fancy something a little more remote, then Eastern Airways also offers visitors easy access to a number of other, arguably quieter Scottish destinations. These include the Northern Highland regions of Wick and John O’Groats, boasting unspoilt beaches and spectacular scenery, as well as Stornoway in the Western Isles.

Nip to Norway: Spend the day in Norway’s second largest city, Bergen, feast your eyes on two of the country’s most spectacular fjords – Hardangerfjord and Sognefjord – and you’ll soon understand why the area was awarded World Heritage site status. Alternatively, why not take a stroll through the old town of Stavanger, surrounded by beaches, mountains and pleasing pockets of culture – just don’t blame us if it’s hard to tear yourself away. Both Bergen and Stavanger are easy to reach from Durham Tees Valley Airports with flights once again being offered by Eastern Airways.

Explore the exotic: It might not be the most obvious choice for a quick half term jaunt, but if you’re willing to push through the jet lag then a far flung vacation is still within reach. Hop on board one of KLM’s three daily flights from Durham Tees Valley to Amsterdam and within 80 relaxing minutes you’ll be at the gateway to the rest of the globe. From there you can continue your journey to more than 200 wonderful, worldwide destinations, including Sydney, Cape Town, Bangkok and Cairo. Why not live it up in the Big Apple for a week and explore landmarks such as the Empire State Building, Brooklyn Bridge or the Statue of Liberty? Or spend the school holidays discovering the ancient temples and trendy shopping districts of Tokyo, Japan? AFTERNOON TEA, ANYONE? Head Chef Steve Smith of Michelin Star Bohemia Restaurant has shared his Hedgerow Jam and delicious fruit scone recipe created for the hotel’s Bohemian Afternoon Tea Collection. Head Chef Steve Smith @ Bohemia has held a Michelin Star for over 10 years from the age of just 24. Steve has enjoyed a spectacular year being named Catey Chef of the Year 2014, retaining Bohemia’s Michelin Star, being awarded 4AA Rosettes, as well as being listed in The Sunday Times Top 100 Restaurants, with special praise being given to Bohemia’s desserts which were listed ‘6th Best in the UK’.

Ingredients

Ingredients (to make 10 scones)

2kg Wild Fruits (Sloes, Bilberries, Blackberries, Elderberries, Rosehips) 2 Cooking Apples Water Sugar

300g Plain Flour 32g Caster Sugar 18g Baking Powder 44g Unsalted Butter 250ml Milk 140g Sultanas 1 Egg

Method

Method

Remove any stalks and dry leaves from the fruits.

Mix flour, sugar, baking powder & butter until the butter has crumbled.

Cut the apples into quarters.

Add sultanas and milk.

Put the fruits into a stainless steel pan and cover with water. Simmer until soft for about 30 minutes.

Roll out on a floured surface, cut to the desired shape and size, eggs wash (1 egg and a splash of milk) & leave to prove for 15 minutes.

Unlike other jams and preserves this needs to be sieved to remove seeds and pips. Force through a sieve and weigh the pulp. Transfer to a clean saucepan and add an equal weight of sugar. Bring to a boil stirring to dissolve sugar and cook over a high heat until jam reaches setting point (105°c). Remove from the heat and leave to cool for 20 minutes. Then ladle into, warm sterilised jars to within ¼ of the rim. Wipe off any sticky drops with a hot damp cloth. Place a wax paper disc onto the jam surface to seal. Cover the mouth of the jar with cellophane, fastened with an elastic band.

Bake @ 180°c for 10-12 minutes or until golden. Store and use as required.

OF MICE AND MEN “Guys like us, that work on ranches, are the loneliest guys in the world. They got no family. They don’t belong no place…with us it ain’t like that. We got a future. We got somebody to talk to that gives a damn about us.”


Set in America during the Great Depression, this classic play tells the story of George and Lennie, two migrant farm workers, who go in search of new beginnings, in the hope of attaining their shared dream: of putting together enough money to buy a small piece of land and build a home. After a long and exhausting journey, the pair arrive at a farm in California where they seek work. But they are no strangers to trouble and soon find themselves reeling from the fall-out of an innocent misunderstanding which spirals out of control and leaves the two men, bound together by friendship, facing an earth-shattering climax. Featuring Dudley Sutton as Candy. Dudley is best known for his role in the

ITV classic Lovejoy but is also a renowned stage actor who began his career in some of the most iconic plays of the sixties, including Joe Orton’s Entertaining Mr Sloane and Tom Murphy’s A Whistle In The Dark. Over the course of his career he has worked with legendary directors including Federico Fellini, Derek Jarman, Sally Potter and Ken Russell. Meet Picky Paula

Half a slice toast – 60kcals

Dave (Paula’s husband) took her a cup of tea and a biscuit up to bed before he went to work. She reminded him that she was trying to lose weight but he just gave her a kiss and said that he loved her just as she was.

Charlotte was having cheese sandwiches for her packed lunch today. Paula grated too much, she gathered the cheese together and squeezed it into a ball, popped it into her mouth, again saving an extra trip to the bin

She ate the biscuit – 38kcals Paula woke the children up, Jack and Charlotte before making breakfast. She is determined to eat healthily and follow the 80/20 principle as Dianne said and to watch her portion control. She weighed out her 30g porridge, but as she took it off the scales she was convinced it didn’t quite weigh right so added an extra little shake of the box. An extra 10g of breakfast cereal – 43kcals Jack was being difficult and wouldn’t eat his breakfast leaving half a slice of toast. As Paula wiped the tray on his high chair she popped the toast in her mouth to save an extra trip to the bin.

10g cheddar cheese – 56kcals While dropping Charlotte off at school, she bumped into Sandra at the school gates (Sandra goes to Besame as Paula). Sandra enquired how she was getting on and Paula replied ‘great I even weighed my porridge out this morning and I am sticking to my healthy eating really well’. As she put Jack in his car seat, she noticed some random jelly babies on the car seat and the floor (Jack must have dropped them yesterday). Dropping Jack off at Nursery she constantly thought about the Jelly babies. Upon returning to the car and (just to clear up the mess) she ate the jelly babies even the ones off the floor (she decided they

were low in fat but forgot how much sugar was in them). There were 4 jelly babies – 80kcals Arriving at work, Deborah her colleague has left a large banana on her desk , she is really supportive of Paula and wants her to lose the extra 4 stone which she is carrying and is trying to help. Paula waved across the office and mimed ‘thank you’. She ate the banana – it was only ten past nine! 1 banana – 100kcals By 11am she is absolutely ravenous but Dianne (her lovely Becoach) said that with a low GI breakfast and her healthy snack she should be full until lunchtime. Oh she is being very good (perhaps if she really thought about it she should have had an oatcake with 100% peanut butter at the same time as her banana to get the food combination right). By 12.30 she asks her boss if she could have an early lunch or she would collapse from hunger. She took out her carefully prepared salad box with lettuce, tomato, cucumber, black and green olives, tuna fish and wholegrain pasta. She has even poured a little extra virgin olive oil and balsamic vinegar on it. She ate it with relish. Once finished she dashed to Asda for some quick food shopping. Inside the doorway, a lady was offering samples of flapjack with healthy oats,


honey, dried apricots, almonds and brazil nuts. All the things that Dianne said were healthy. She ate the sample – 48kcals It was 3pm and Paula heard a ‘kerfuffle’ as a group of giggly girls came marching in to the office. Michelle was wearing a veil on her head and carrying a box of cream cakes to celebrate her upcoming wedding. Paula looked at Deborah with horror knowing how this might ruin her so far PERFECT DAY. Deborah agreed to share a cream slice with her to halve the damage that might have occurred. Half a cream slice – 160kcals! What would we do without supportive friends? Back at home, Dave had made spaghetti bolognaise and let Paula serve up her own small

portion to fit in with her portion control. Charlotte was being very difficult and had hardly touched her meal. Paula took Charlotte’s plate and played a game of Mummy has a spoonful, Charlotte has a spoonful An extra 10 spoonful’s of Spaghetti Bolognaise – 50kcals It is 9pm Paula found Dave in the lounge munching on a bar of chocolate (her favourite – whole nut). He offered her a piece but she refused, annoyed with him for not supporting her. He knows that eating chocolate containing sugar and fat is not a good choice before bed as it will be laid down as fat cells. Paula sulks, but it was not long before Dave needed the loo, as soon as he left the room she pounced on the bar of chocolate breaking off just 2 squares and quickly (very

quickly!) ate them. He’ll never notice 2 squares whole nut choc – 86kcals and extra fat cells Paula was tucked up in bed when Dave brought her a cup of hot milk and cinnamon (it used to be Horlicks but Dianne said change to milk to help induce sleep and Horlicks was full of sugar. Remember those fat cells?). Paula cried ‘oh Dave’, for sitting on the saucer was one biscuit. Paula drank her milk and read her book at the same time unconsciously eating the biscuit. 1 biscuit – 38kcals Paula thought she had been so good but managed to consume more than 700 extra calories through picking. Over a 7 day period this equates to over 5000 additional calories. 3500 calories = 1lb fat.

RESULT NO WEIGHT LOSS – THE SUBCONSCIOUS EATING BETWEEN MEALS WHICH WAS PREDOMINANTLY BAD CALORIES, CANCELS OUT HER EFFORTS AT MEALTIMES. HOWEVER...
