2020 certainly has had a lot of flavor. Whether you’ve been significantly impacted by the pandemic or other challenges, through illness, business changes, at-home learning, remote work, or in other ways, I hope that December finds you healthy and well as the year draws to a close. Despite the pandemic, DC Ranch launched virtual fitness classes and programs, innovated with social distancing events such as Spooky Maze, hosted a virtual Community Safety Forum, and completed important projects such as road resurfacing, renovations to Desert Camp Community Center, path and trail improvements and tennis court resurfacing. Both Community Council and Ranch Association have balanced budgets entering 2021, and the community remains in strong financial condition. Home sales are setting records. DC Ranch remains a desirable place to live, work, play and give back. And we are committed to keeping it that way. Stay tuned for a re-imagined 2021.

Ranch Updates DC Ranch to host 2021 Foothills District Community Safety Series

S

afety and security are essential to the residents of DC Ranch. Every two years, Ranch Association surveys the community to gain homeowner input regarding community safety services and to solicit suggestions for improvement. In 2018, the Association debuted its annual Community Safety Forum as an educational tool on security both within DC Ranch and the greater north Scottsdale area by partnering with local police, fire and wildlife agencies. DC Ranch staff has worked diligently at strengthening rapport with our local safety partners. Next year the community will host a five-part series presented in part by the Scottsdale Foothills Police District. The Foothills District is the largest in Scottsdale, encompassing 140,000 square miles from Cactus Road to the city’s northern limits. At the 2020 Community Safety Forum held Oct. 7, Foothills District Commander Patrick Regan shared that almost half of all businesses in the city are also located in the Foothills District, which makes the area more prone to crime. Additionally, the area is home to major national events such as the Waste Management Open, the Barrett-Jackson car auction and world-renowned resorts, hiking and golf. Regan reported that the numerous path and trailheads present an easy crime target because many hikers, both residents and visitors, don’t lock their valuables in the trunk when hiking. He suggests doing this before arriving at your destination. The upcoming Foothills District Community Safety Series will kick off Jan. 6 with a Zoom presentation on ways to avoid being a victim of fraud schemes and cons. The safety series will be free and open to DC Ranch residents and those living in other North Scottsdale communities to encourage crime prevention collaboration.

Short term rentals are prohibited DC Ranch Community Standards require a six-month minimum rental period and a property can only be rented twice in any continuous 12-month period. The Community Standards team keeps a close eye on vacation rental websites, especially during the tourist season. The minimum fine is a costly $1,000. Courtesy notices are sent first to those who advertise short term rentals, knowing that many times, owners may not be aware of the guidelines.

Residents who rent their homes must submit a Tenant Registration Form to ensure that their renter is added to the community’s database for notifications, event registrations and emergency messaging. The registration process creates a separate security account for the tenant allowing for gate and community center access. There are so many wonderful reasons to live at DC Ranch; it’s important that tenants are properly registered, enabling them to enjoy all that the community has to offer. Cooler temperatures and water conservation

N

ow that cooler temperatures are here, did you know that you can reduce irrigation to your landscape and trees? Water management experts recommend turning off your irrigation system between Dec. 1 and March 1 to established native plants and trees. The goal is to minimally irrigate while maintaining an aesthetically vibrant landscape conducive to plant health. Ranch Association does not irrigate many common area plants and trees during this time. For additional help with home water management, visit wateruseitwisely.com or scottsdaleaz.gov/ water. The DC Ranch Maintenance and Landscape Department is also available to help with questions. Reach them at 480.585.8654.

Ranch Association recently mailed Neighborhood Voting Member (NVM) candidate ballots with the 2021 assessments to all Association members. Ballots are due back to The Ranch Offices by Monday, Dec. 14 at 5 p.m., and residents are encouraged to use the Official Ballot envelope with prepaid postage. Staff will post a list of new and returning NVMs on DCRanch.com on or before Dec. 21, and new terms begin Jan. 1, 2021. Expect an introductory hello from your NVM shortly after the New Year begins.

Newsworthy 2021 to bring development along Legacy Two projects along Legacy Boulevard will likely break ground in early 2021. One is a five-lot residential subdivision and the other is a commercial/retail project that is part of DC Ranch Crossings. The two parcels of land are adjacent to each other. The five new residential homes will have ingress and egress from 94th Street onto Union Hills. Access to up to three commercial buildings will be from the traffic signal at 91st Street and Legacy, on the north side. Both are part of DC Ranch’s master plan and the Covenant Commission and City of Scottsdale must approve design plans.

LIBERTY STATION Chef Anthony Apolinar of Keeler’s Hospitality Group learned to love cooking at the young age of six, when his mother and nana began showing him how to develop flavors using his Mexican heritage and their family’s traditions. As a young man, he attended Scottsdale Culinary Institute while working full time.

His “never quit” mentality and determination continued to open doors for him, and he then became a regional trainer and kitchen manager for BJs Brewhouse. Yet he craved the chance to create and learn the business side of the restaurant industry. That led him to Fox Restaurant Group, where he ran Culinary Dropout. But in the kitchen is where Apolinar’s true passion is ignited—and that brought him to Keeler’s Hospitality Group, where he takes pride in every dish that is presented to guests at Liberty Station. He aims each day to make great food that is comforting and “hits close to home” for diners. Apolinar suggests the BBQ platter for a nice sampling —and don’t miss the craft cocktails!

FLEMING'S PRIME STEAKHOUSE AND WINE BAR Chef Ryan Nelson has been with Fleming’s at DC Ranch since 2018. Having worked his way up from pantry cook at Arrowhead Grill in Peoria to several restaurants in L.A. (where he also dabbled in standup comedy), Nelson feels lucky. “With the guidance of some great chefs and my strong work ethic, I’ve had many great opportunities. My favorite part of the job now is getting to find people who are passionate about cooking and helping them advance in their career,” he says.

Since reopening after COVID shutdowns, Nelson has worked with his team to create a wonderful evening for everyone who visits. Many guests at the DC Ranch location enjoy pork, so he was pleased to add the Tomahawk Porkchop with mustard apple glaze as a chef feature. A full chef menu is also scheduled to roll out in 2021. For those dining at Fleming’s for the first time, Nelson recommends the 11 oz. filet topped with Diablo Shrimp and Fleming’s potatoes, a kicked-up version of au gratin.

VIC & OLA’S Chef Sheila Bryson came to the restaurant industry later in life, but food was always a passion. When Bryson opened her first restaurant on Carefree Highway 15 years ago, she knew the odds were against her. Everything changed when her “Suicide Stack” menu item (a 13-layer dish that serves six people) was featured on Food Network and people from around the world started visiting Heart and Soul Café.

With proven success under her belt, Bryson was ready to embrace her Italian roots in an ode to grandparents Victor and Ola Belmonte. After several months training

in the regional foods of Calabria in Southern Italy, she teamed with an Italian chef to create the menu. The exclusively Italian wine list and all 25 flavors of gelato are flown in from Italy. “Southern Italian food is so simple because it doesn’t use a lot of ingredients. We focus on fresh made pasta, but the menu is varied and even includes Keto-friendly items like Zucchini Pizza,” says Bryson. The Lasagna Bolognese is a customer favorite as well as Pasta Isabelle (named after Sheila’s daughter) featuring shrimp and broccoli. As Vic & Ola’s celebrates what has been an unusual first year in business, she looks forward to sharing the traditional Feast of the Seven Fishes with guests on Christmas Eve.


EGGSTASY Peter Verros grew up in Chicago with a family in the restaurant business. Before moving to Scottsdale, he had started a fun breakfast concept that people liked because the menu was so different. He decided the same idea would work well here—and he was right! The DC Ranch location opened two years ago and remains busy with a loyal customer base. “Our crepes are phenomenal, and the Pumpkin Cheesecake Pancakes are so popular that we’re doing them year-round. There are no cans or freezers here. We use fresh ingredients and cook from scratch every day,” says Verros. The decadent menu also includes healthier lunch and breakfast options, but don’t be surprised if you leave with leftovers. Open 365 days a year, the portions are large and the monthly specials will keep you coming back for more.

JALAPEÑO INFERNO Terry and Laura Craig are the sole owners of Jalapeño Inferno. They started with the Scottsdale Road location in 1999 and recently opened a third location as one of the Valley’s most respected and recognized names for quality, authentic Mexican food.

Both Terry and Laura are alumni of Big 4 restaurants, a Phoenix-based powerhouse restaurant chain in the 1980’s, revered to be among the best in the country. The Craig’s came to DC Ranch with the idea of creating a family restaurant with great food at a reasonable price point. “We’re not fancy dining, but everything is made from scratch. The philosophy is good ingredients make great menu items,” says Terry. That includes fresh squeezed margaritas and their famous flour tortilla chips. But if you want to try a showstopper, Terry says the Sweet Green Corn Tamales are legendary and made by the same lady every day since they first opened. he Grand Canyon State has long attracted individuals wishing to enjoy, study and preserve dark skies. In 1988, two Tucson residents—amateur stargazer Tim Hunter and professional astronomer David Crawford—teamed up to create the International Dark-Sky Association (IDA). Now present in 18 countries,the organization is best known for its International Dark Sky Places program, which recognizes sites around the world that are using “responsible lighting policies and public education” to preserve and protect night skies. DC Ranch is a Dark Sky community. With 16 designated parks, reserves, and communities, Arizona is home to a greater number of Dark Sky sites than anywhere else in the nation. The state also features some of the world’s best observatories and a culture that celebrates stargazing, making it an ideal place to escape the excessive illumination of modern life. Whether you’re spotting planets with the naked eye or finding galaxies with a telescope,

there are many ways to explore the wonders of the universe from the comfort of Earth. Observing the moon is one of the easiest ways to get started with astronomy. You can track the lunar cycle and use binoculars or a telescope to see how your view of it changes. When the moon is full, for example, it tends to be dazzlingly bright and one-dimensional. In contrast, when the moon is a crescent shape (around first or last quarter phase), you’ll get a more dramatic view of its craters since they’ll be well-defined by shadows.

Saturn, Jupiter, Mars and Venus are all fairly easy to spot in the night sky when they are up. If you see something that looks brighter than all the other stars, it’s quite likely a planet. With even a small telescope you can also see Jupiter’s four large moons: Io, Europa, Ganymede and Callisto. Their positions change from night to night, which makes them all the more exciting to observe. Natural objects aren’t the only things to look for. You’ll often see satellites passing overhead and can even see the International Space Station whirl by.
