Navigating an unfair welcome to the ‘college experience’ Ask Linda Linda Cohen Guest columnist

Dear Linda, Our oldest child is supposed to start college at the end of August, and my husband and I just don’t know what to do. This should be an exciting time for him, and all of us, but of course with the pandemic happening, nothing is “normal.” We keep receiving info from his school weekly, and it seems that the game plan keeps changing. His safety is our concern, and frankly, some of the suggested safeguards that the school thinks are “safe” just don’t sound that way to us. The latest info said that they wanted

the incoming freshman to declare a major with the idea that they would be housed and have classes with the same students the fi rst semester. We think that’s an unreasonable request for a freshman to consider. Seminars with many students won’t happen, and at Thanksgiving break, the intention is to have the students remain at home until after the Christmas holiday break. It sounds like a plan that just doesn’t make any sense. The intention is to have the freshman get a taste of college life, but that isn’t what will happen! No parties, no sports events, no fraternity events. It seems really lame. We could use some advice here, because this is all uncharted waters. Is there any governing body nationally for colleges and universities that is making any policy on these important matters?

Any advice would be appreciated, and thanks. — Worried Parents Dear WP’s, This is a major concern for any student and parent, freshman or other. I don’t know of any national policy on this, but I would suggest talking with someone at the school who is in a position to have the information you want. Personally, I would go to the top and call the offi ce of the president of the university to fi nd out. You should at least be given reliable info at that source as well as direction. If the schools have autonomy on these policies, then speak to the individual who is the policymaker. It’s important to understand that this pandemic has required that we all be fl exible because it’s all uncharted waters. Find out if there are options such as

Zooming classes from home or delaying the entrance for your son. A conversation is the only way to fi nd out information, examine options, and then you all can decide on what you feel comfortable with, and of course include your son in the process. It’s a good way to have him learn to make important decisions. You rightly point out that an on-campus experience right now will not be what it was. That fact won’t change for now, unfortunately. Weigh the choices that you have and, again, do what is comfortable for all. There may be some noticeable changes for the spring session of Arizona Restaurant Week, like its dates that are pushed into summer. But what stays true is that restaurants continue to bring their A games to what is reliably one of the most delicious times of the year. It also gives diners incentive to check out a spot about which they’ve been curious or to frugally indulge at a restaurant that may otherwise be reserved for a special occasion. With more than 100 restaurants participating, deciding where to fi ll your belly won’t be easy. And there are only so many meals you can squeeze into 10 days. However, if you’re looking for a place to start, we’re giving you just that by suggesting the menus that caught our eye, whether because of the creative off erings, variety of options or value. All menus are available on June 1928. Some off er menus for take-out and dine-in orders, while others have reserved it for dine-in patrons only. On the starter side, she does a panzanella salad with Noble Bread focaccia cubes, and a smoked salmon and potato pancake featuring locally cured salmon from Little Pickle that’s garnished with herb crème and peppery baby arugula. Entrées include rock shrimp scampi served with Sonoran Pasta Co. bucatini, Noble Bread focaccia dust, micro basil and local fl eur de sel from See Salt. A grilled rack of lamb with creamed caulifl ower, sweet peas and mint pesto, and wild mushroom risotto with locally harvested wares from Southwest Mushrooms are also alluring. All entrées beg for attention: Alaskan halibut with sugar snap peas, local mushrooms and potatoes; dry-aged Duroc pork chop with roasted corn cheddar polenta, squash and barbacoa sauce; and roasted Mary’s chicken breast with Arizona cheddar mashed potatoes and green beans. When you can’t have dinner in Paris, this no passport-needed spot is a good stand-in. To start, purists will crave the classic onion soup gratinee with a healthy heap of gooey gruyere, while the Moroccan lamb meatballs with Noble Bread ciabatta, cucumber mint relish and harissa tomato sauce will appeal to rebels. Two of the four entrée options have add-on options. Upgrade the prime fl at iron steak and frites with foie gras for an additional $19, or add duck confi t for $9 to the corn and ricotta gnocchi with pickled fi gs and roasted mushrooms. The famous tortilla soup with rotisserie chicken and avocado is the go-to opening dish. Five entrées tempt, including blackened Chilean salmon with shrimp scampi, red pepper quinoa and sautéed spinach; sugar-cured duck breast with the iconic green chile mac and cheese; an 8-ounce bacon-wrapped fi let mignon with mashed potatoes and asparagus; a 16-ounce boneless ribeye; and braised beef short ribs. There’s crème brulee on the dessert menu but who can say no to a warm chocolate and toff ee pecan pie accompanied by a scoop of brown butter gelato?

There’s no shortage of options for all courses. Olive oil pressed mozzarella with peaches and prosciutto, veal meatballs with polenta and San Marzano tomato, and farfalle with bay scallop and asparagus are the stars of the starter lineup. Choosing the main course is tough with an 8-ounce Prime Ox Cut Steak served with charcoal potato, red wine onions and arugula, and the Narragansett Bay day boat scallop with charred octopus and gigante beans being the interest-piquers. For dessert, there’s butterscotch budino, but Nutella lovers won’t be able to resist the luscious Gianduja Frangelico tiramisu. Details: 6316 N. This downtown Phoenix fi ne-dining establishment relies on Frank and Agnes Mancuso’s own family recipes. Both menu options start with a salad of choice and end with the solid duo of cannoli and tiramisu. The $33 menu includes the choice of: house-made cannelloni fi lled with beef, veal, Italian sausage and spinach with alfredo or marinara sauce; fresh wild salmon fi let with risotto and vegetables; chicken marsala and risotto; a 5-ounce fi let mignon with Béarnaise sauce and risotto; or shrimp and scallop scampi. Man charged after Scottsdale car, golf cart crash injures 5 Chelsea Curtis Arizona Republic USA TODAY NETWORK

A man was arrested after crashing into a golf cart in Scottsdale early Sunday, seriously injuring its fi ve occupants, police said. Robert A. Gandara, 22, faces multiple charges of aggravated assault, according to Scottsdale Police Department spokesman Kevin Watts. He was discovered to be the driver of a car that rear-ended a golf cart on Miller Road near Chaparral Road around 2

a.m., according to Watts. All fi ve of the golf cart's occupants were taken to a hospital with serious injuries. Impairment is believed to have been a factor in the crash, according to Watts. Navajos’ poet laureate nurtured dream in secret Elizabeth Montgomery Arizona Republic USA TODAY NETWORK

As a child, Laura Tohe secretly wanted to be a writer. She kept the dream to herself, because in school, she only read the works of White authors. “I thought only White people could become writers,” she said. “All those years. I kept my yearning to be a writer in the closet.” Today, Tohe is poet laureate of the Navajo Nation. She was recently awarded a $50,000 grant from the Academy of American Poets. She is one of 23 poets laureate to receive the esteemed fellowship in 2020. “I’m thrilled, excited and grateful for the fellowship,” Tohe said. “It’s one of the highlights of my writing life.” Several of her pieces explore the spirit of elements. She fi nds a magical spot where body and nature seem to become one.

Much like its title, her poem “Meeting the Spirit of Water” creates a bond between the reader and the elements of a lake. Tohe wrote, “Place your hand into its belly / feel the energy / stroke its power / caress the life source / let it run through your hands / say a prayer” Her poem “Female Rain” has a similar semblance. “At dawn, she gives birth to a gentle mist / fl owers bow with wet sustenance / luminescence all around.” Interpretation is ultimately left to the reader. Tohe is of the Sleepy-Rock People clan and born for the Bitter Water People clan. A poet and librettist, she is the author of “Making Friends with Water; No Parole Today,” which was named poetry book of the year by the Wordcraft Circle of Native American Writers and Storytellers in 1999. As a librettist, Tohe writes for oratorios and operas. Her latest oratorio work, See POET, Page 14

Tohe is also professor emerita with distinction at Arizona State University. Over the years, her work has garnered recognition and several awards, but she didn’t get serious about writing poetry until after college. “I realized that writing is political when you make the invisible visible,” she said. “Writing became a way to seek out my own truths about history, assimilation and colonization, because I was living during many movements taking place across the U.S., like the American Indian movement, anti-war, women’s

Tohe plans to work with Saad Bee Hozho, a collective of writers from the Navajo Nation, and the Emerging Diné Writers Institute this summer to sup-

port the next generation of writers through creative writing workshops, panel discussions and poetry readings. His restaurant career started in his grandmother’s restaurant in a small town outside Yuma and led him to help open restaurants and resorts across the country, be the private chef on yachts sailing in international waters and helm a resort kitchen on Martinique. He also was on “Lifestyles of the Rich and Famous.” But Joe Seriale’s experience in nearly every facet of the business included disappointments and devastation, like closures and a fi re that burned down his fi rst restaurant in Chicago, which he opened at 26. And these are reasons why the owner of Joe’s Diner (4515 N. Seventh Ave.) in Phoenix’s Melrose District wasn’t as shaken when the pandemic hit. “That’s why this COVID-19 thing doesn’t scare me as much as everyone else. You keep working … you put one foot in front of the other and get through it,” said the veteran restaurateur, who opened Joe’s with his wife and business partner, Joan, in 2010. Still, Seriale had a learning curve like everyone else. It included embracing a to-go routine and getting more comfortable with social media and utilizing the technology that was at his fi ngertips but had little use for until a few months ago. He’s posted more and done cooking tutorials touting his expertise used for making his own croissants and jams — he makes about a half-dozen from scratch for the diner. “I’m learning to get better at it. It was the pipeline with customers when everyone was at home,” he said. Seriale isn’t alone. One in 10 small businesses have developed new products as a way to engage with customers during the pandemic, according to the Harris Poll. It’s key, especially considering that as of May, 92% of restaurant traffi c was off -premise, according to industry resource Fast Casual.

Changes made for reopening diner When he reopened his dining room, Seriale did so with Plexiglass shielding the cashier, servers wearing masks and reduced seating. His capacity is normally 118. Now it’s 72. He once served about 1,200 breakfast and lunch customers a

week, or 57,000 a year. Now, he’s at 60% of that base, with 75% of that dine-in orders. He’s increased the frequency of sanitation with a bleach solution and highproof alcohol solution for seats and other surfaces that cannot be bleached. A cleaning schedule is publicly posted. He’s the one who often cleans the doors. There’s a scent of bleach lingering in the background. The rapport he has built with customers means there’s an added responsibility that Seriale embraces as the chef owner of a small business. “People are scared, and they come here because they trust me. I’m very detail-oriented, and they know that about me. They depend on me,” he said. Longtime regular customer and retired nurse Brad Meisenburg attests to this. Since the diner reopened, Meisenburg and his wife, Candy, have their meals at Joe’s at least twice a week. He talked about the separation of tables,

every other booth being blocked off , every staff member wearing a mask and witnessing tables and seating getting scrubbed right after the patron who sat there leaves. “I’m very comfortable eating there. We have no problem at all,” Meisenburg said. Before, during and since the onset of COVID-19, the Meisenburgs have enjoyed Seriale’s breakfasts and lunches three times a week since moving to Phoenix from Illinois fi ve years ago. This continued with takeout meals during the closure. Brad’s favorite is the breakfast bowl of eggs, ham, bacon and cheddar served on potatoes. Candy’s is the turkey rollup. They both adore the famous pancakes and look forward to the fi sh and chips special on Friday. They enjoy the atmosphere and personal attention given to everyone who sits down, in addition to the food. “The ambience is just so friendly.

There’s a lot of places where you go, they sit you down and that’s it. Here, everyone will talk to you and hold a regular conversation, which to me is like family,” Brad Meisenburg said. This pretty much sums up why Seriale willingly walked away from the lucrative luxury of the haute restaurant realm. He’s funneled his classically trained culinary skills into a 60-item breakfast and lunch menu that fl aunts the classic American diner favorites crafted from a scratch kitchen. “I enjoy this level of food much more than (in) a 5-star (restaurant). It’s disjointed when you have a maitre d’ or waiter between you. There’s a satisfaction when you see a smile when you give them a good plate of food. It’s a relationship,” he said. “This is where I was meant to be. These are my roots. This is where I belong.” See JOE’S, Page 23

From diner to yacht Seriale’s diner shares similarities with the restaurant his grandmother owned and ran, the Desert Restaurant and Café in Wellton, about 35 miles east of Yuma in the middle of farmland. Her recipe is used for what’s known as Grandma Dan’s Meatloaf. “Her name is Eliza, but I always knew her as Dan,” Seriale said. His parents were teachers, but his family’s roots in Arizona date back to 1925, when his great-grandfather opened a store in the town. Over the decades and generations, it grew to include a gas station, motel and the restaurant. “She and 14 farmers would solve the world’s issues by 7 a.m. and go back to work,” he said. “It was as close to Mayberry as you could get.” Seriale’s fi rst job was working at Grandma Dan’s restaurant. He was 11 and washed dishes. He had to stand on a milk crate. His restaurant work and love for it continued into college. It lured him away from earning an engineering degree from the University of Arizona. He traded that degree for one from what is now known as Le Cordon Bleu College of Culinary Arts in San Francisco. Seriale traveled the nation and the world doing what he loved in the venue where he felt comfortable. He went on to

feed 800 people a day from an open-air kitchen at Club Med on Martinique, help open high-end resorts and a gig as a private chef on a yacht that got him an appearance on “Lifestyles of the Rich and Famous,” the popular syndicated television show that ran from 1984-1995 and featured the extravagant lifestyles of the wealthy. Seriale’s resume of restaurants and restaurant-related companies he’s worked at, managed, opened or owned reaches near triple digits. Seriale returned home and made his way to Phoenix. While working as the chef at Tom’s Tavern, he met Joan, who was a server. His cooking on a family beach camping trip drew attention from other families, who wanted to go camping with them just to eat his food. People told him he should open a restaurant. He decided on a breakfast and lunch format. A year after opening Joe’s, he quit his job with a major food distribution company. Six months after that, the diner turned a profi t. “I wanted it to feel like home,” Seriale said. Actually, for a while, the restaurant colors echoed those of his living room. This also drives the comfortable and welcoming vibe and extra dedication to cleanliness and safety. Interacting with those he feeds, even through a mask, continues to give him that rewarding rush. “Whether it’s my employees or customers, it’s all about caring for people,” he said. “I like people, and cooking allows me to care for them.”

On this date in 1913, an entire fl ock of goats drowned in an irrigation ditch in Tucson when they were driven from the Tucson Mountains by thirst and stampeded into the ditch at the smell of water. On this date in 1922, Arizona’s fi rst licensed broadcasting station, KFAD, went on the air in Phoenix. On this date in 1936, A.J. Eddy of Yuma developed the fi rst home evaporative cooler. June 22, 1854: The fi rst steamer on the Colorado River, The Uncle Sam, sank at Pilot Knob. On this date in 1857, the U.S. Government signed a contract with James E. Birch for semi-monthly mail and passenger service from San Antonio, Texas to San Diego via Tucson. The line became known as the “Jackass Mail” be-

After all, they are a great way to cool off when the temperatures hover in the triple digits. There are dozens of splash pads throughout metro Phoenix, but many are closed this summer as a result of concerns about the new coronavirus pandemic. U.S. Marine Corps veteran Ryan Saunders saw service in Operation Iraqi Freedom as an infantry assaultman. While in service, his experiences led to post traumatic stress disorder. To help ease his symptoms, he tried pills, counseling and other treatments.
