Method 1. Boil the pasta for 8 minutes or until al dente. Drain and set aside. 2. Heat pan with 20ml olive oil and sauté onions and garlic with a pinch of dried chilli and sugar. 3. Add calamari, diced red snapper and prawns until cooked. 4. Add tomato puree, cherry tomatoes and chopped basil. 5. Mix in pasta and baby asparagus. 6. Season with salt and pepper. To serve, arrange pasta in a deep dish, garnish with seafood and grated parmesan.

3 cups chicken broth 1 stalk lemongrass 2 pcs kaffir lime leaves 8 large whole prawns 1 tbsp fish sauce 1-2 red chillies as desired 3 tbsp garlic, minced 3 medium tomatoes, cut into wedges 1-2 cups coconut milk, fresh or canned 1 tsp tamarind paste 2 tbsp brown sugar 3 tbsp lime juice 3 tbsp fresh coriander leaves

1. Place the chicken broth in a medium-sized pot with the lemongrass and tamarind paste. Simmer for 5 minutes. 2. Add chilli, garlic, lime leaves and sugar and simmer for another 5 minutes. 3. Add the prawns and tomato and cook for about 4 minutes until prawns are cooked. 4. Add the coconut milk and season with the fish sauce and lime juice, adjusting the flavour to taste. Finish with the fresh coriander and serve.

Method 1. Prepare 4 plates, in the middle of each plate put a little balsamic reduction cream and extra virgin olive oil, spread outwards over the whole plate with a brush. 2. Mix the cucumber, white celery and green apple. Divide among the 4 plates and arrange over the dressing in a circle. Sprinkle with a little salt. 3. Arrange the medallions on top of the vegetables in a clockwise array. 4. Sprinkle with salt, extra virgin olive oil, balsamic cream and capers. 5. Shave the Parmigiano very thin over the top, season with black pepper. 6. Chill in the refrigerator before serving.

Lipari is the biggest of the Aeolian Islands and offers the most services and entertainments. Given its central position, Lipari is also ideal to use as a base to explore the Aeolian archipelago. It has 10.000 people and all the amenities, the Hospital and supermarkets, but it also has many quiet places off the beaten track. Panarea is one of the smallest Aeolian Islands, well-known to islanders for its beautiful beaches accessible only by boat. The island is frequently visited by many VIPs. The population is around 300 people in the village of St. Pietro, small landing port on the eastern shore. Nowadays the prevailing activity is traditional fishing and tourism. The splendid seabeds are particularly good for underwater exploration. Salina - After Lipari, Salina is the biggest of the Aeolian Islands and also the greenest and most cultivated. There are 4000 inhabitants and it has 3 villages each with their own council: Santa Marina Salina, where the main harbor is, Malfa and Leni, each containing shops , restaurants and various services. On the island there is the famous village of Pollara, which is 8 km from Malfa, where the movie "Il Postino" with Massimo Troisi was made.

Vulcano covers an area of 21 sq. kms and it is situated south of Lipari, separated by a stretch of sea called the Vulcano Channel. It is the island with the most volcanic activities: warm water in the Baia di Levante; therapeutic muds and sulphur steam water called "fumarole". The crater is reachable by foot in less than one hour, it doesn't erupt and it has only sulphur steam. From the top there is a fantastic view of all the other islands. The economy of the local population, about 460 people in winter time, is based on tourism and wine-growing. Stromboli is the most northern island of the archipelago, 12.2 sq. kms and it has a population of around 400 people. The island has a volcano 926 meters high which is perpetually active with some spectacular eruptions of incandescent lava that fall toward the sea. The population lives in the centre of Ginostra and Stromboli. The economic activities are fishing, wine-growing ,caper-growing as well as tourism. Filicudi is the wildest of the Aeolian islands . Only 300 inhabitants in winter time, it has one of the most interesting prehistoric villages of the archipelago. The unique beauty of the houses and landscape add to the charm of this enchanting island. Alicudi is the smallest island of the Aeolian archipelago and during the winter time it has around 50 inhabitants. From the pebble beaches long flights of steps go to the inhabited areas. Basil There is currently no other aromatic that is cherished with such warmth as basil, which in the spring will make its appearance in Mediterranean courtyards.

When we find it Basil makes its debut in March. There are three types: the curly or Greek, the broadleaf or Genovese and agioritikos or winter.

Sowing Home sowing starts from mid-winter, while in an external environment in spring time.

Planting Spring is the best season for transplanting.

Harvest Cut the leaves from spring to autumn.

Cuisine The most typical use of fresh basil in cooking is in Genovese pesto, especially the broadleaf. It fits wonderfully in cold sauces and dips with yoghurt and white cheese spreads. It's perfect with raw tomatoes and gives flavor to marinades. Avoid to use it with another herb, because it makes a strong counter.

Laurel The erstwhile prize winners and a symbol of victory is now used for its most "humble" properties, culinary, but far from insignificant.

When we find it We find the laurel from March, which is the most appropriate time for planting. It is a large evergreen bush or a small tree and usually reaches five meters tall.

Sowing The best period for sowing is September to October or March.

Planting We plant from March - April and November to December.

Harvest We collect leaves all year round.

Cuisine Essential herb in lentils and a major ingredient in bouquet Garda (aromatic and herbs bouquet), the laurel exquisite perfumes the water or broth when you boil potatoes or carrots and fits well with tomato sauce dishes. To take off the maximum aroma in cooking, sautĂŠ 1-2 leaves laurel with onion.

Rosemary Very popular as an ingredient in Greek cuisine, rosemary is renowned for its healing and seasoning properties.

When we find it The rosemary is a perennial herb, shrub and garigue, which blooms in spring and autumn.

Sowing In spring, when the average daily temperature is almost the 15ËšC.

Planting The seedlings are planted in pots or in the ground from March till April.

Harvest Cut sprouts with fresh leaves throughout the year, but it is better to avoid it in the spring, because it loses some of its properties.

Cuisine The strong smell of rosemary fits well with pork, especially in combination with garlic. As good "ties" with large fish as well as potatoes, carrots and celery. Its aromatic woody twigs can be used wet over the coals of the barbecue to aromatize our roasts.

Thyme In antiquity it was initially popular aphrodisiac but soon spread widely for many healing Properties.

When we find it Thyme is a perennial plant and it is not easy in cultivation. We find it from April to May.

Sowing The ideal time is late spring when the temperature reaches 20 - 22 ËšC. Attention: we sow the seeds on the surface.

Planting Resistant to cold, it planted in mounds. It loves the sun and wants sparse watering.

Harvest Collect all year round, but especially from May to September.

Cuisine Fresh thyme leaves are wonderful herb for white meats, fish, legumes and almost all vegetables. If you use dried thyme, prefer whole dried bunches and not the ready grated, which has lost its aroma, and rub the leaves on a summer tomato salads, cold soups, olives and white cheeses.

Oregano It is not only the greatest of all the herbs of Mediterranean cuisine, but also a basic remedy of folk therapeutic.

When we find it Although we find it in nurseries throughout the year, the best season is from April to May.

Sowing In the middle of spring when day temperature reaches 18-22ËšC.

Planting In the spring we plant seedlings from March to April and in the winter from November to early of December.

Harvest Collect oregano throughout the year. For fresh oregano collect its leaves from spring to autumn, while for dry in late June to early July

Cuisine Fresh or dried, oregano flavors summer salads, especially those with tomato and those that have boiled vegetables. Fits in innumerable cooked dishes, although place it at the end of cooking, to retain its aroma.
