INGREDIENTS 6 red peppers 1 Italian country style bread 200 g mozzarella small handful oregano black pepper 2 cloves garlic, halved 4 tbsp extra virgin olive oil

METHOD Set the oven to 200°C/gas 6. Roast the peppers for 20-25 min. until the skin is blackened. Place the peppers into a plastic bag and leave to cool down. When cooled, remove the skin and seeds and roughly chop the flesh. Cut the loaf into slices and grill them. Roughly chop the mozzarella, place in a bowl and add the peppers and oregano. Season to taste with salt and freshly ground black pepper. When the bread is ready, rub with the garlic and drizzle with a little olive oil. Top with the pepper and mozzarella mix and garnish with a little extra scattering of oregano.
METHOD
Tip the prawns into a mixing bowl and stir in half the turmeric and salt. Leave on one side for 10 minutes. Heat the ghee is a pan until it just begins to brown, but don't let it INGREDIENTS become too dark. Set aside. Heat the oil in a wok set over a 12 large prawns, shelled medium heat. Add the prawns and fry for about 2 min. until 1 tsp turmeric, 1 tsp salt the color changes but they are not cooked through. Remove from the pan and set aside while you make the masala. Add 3 tbsp ghee, (clarified butter) the browned ghee to the same oil, and when hot, toss in the 2 tbsp vegetable oil cardamom, cloves, cinnamon, bay leaves, and dried chilies. 2 green cardamom, split After about 1 min., when you catch a lovely toasted aroma, 4 cloves, 2 sticks cinnamon 1 1/2 tsp mild red chilli powder add the grated onion, sugar and ginger. Fry over a gentle heat until the onions are golden. Stir in the chili powder, 2 bay leaves, 2 dried chilies ground cumin and remaining tumeric - fry for another 30 sec. 2 small onions, grated to cook the spices. Pour in the coconut milk and add the 2 tsp sugar, 4 cm ginger prawns. Simmer for 5 min., adding a little water if the sauce 2 tsp ground cumin needs thinning. Stir in the grated coconut once the prawns 100 ml coconut milk are tender. Scatter over the chopped coriander, and sprinkle 50 g freshly grated coconut with garam masala if liked.

INGREDIENTS 175 g red kidney beans 4 tomatoes, 3 spring onions, 2 onions, 2 cloves garlic, 4 sprigs thyme 25 g butter 350 g long grain rice 2 x 400 ml cans coconut milk freshley ground black pepper
Drain the pre-soaked kidney beans, reserving the water. Put them in a pan and cover with the soaking water. Bring to the boil and then reduce the heat and simmer for 5 minutes. Skim any foam from the surface and discard. Add the tomatoes and chopped spring onion along with the onions, garlic, thyme and butter to the beans and continue simmering for about 45 minutes, or until tender. Season well. Pour in the coconut milk and add the rice – the liquid should cover the grains by about 3-4cm. Top up with extra hot water if you need to. Stir well, cover with a lid, and simmer for a further 15-20 minutes, or until rice is tender. Stir occasionally as it cooks to prevent the rice catching on the bottom of the pan. There are number of places to see in Indonesia. These include the capital city of Jakarta (1), beach resorts of Bali and Lombok, and the wonderful islands of Java, Sumatra and Kalimantan. As Indonesia is a tropical country and one of the last remnants of tropical rainforests on the earth, it is home to rich flora and fauna and hence a major attraction for nature lovers. Kalimantan is the world's second largest island. The best time to visit this fascinating island is during the months of September and March, when temperatures are much cooler-in the vicinity of 27°C with pleasant sea breezes. Bustling floating vegetable and fruit markets(2). Gunung Leuser National Park (3) the most spectacular mountain and equatorial forests in Asia and home to most of Sumatra’s extensive range of mammals including tigers, tapirs and rhinoceroses and about 500 bird species. C U L T U R E around the world Symi Island GREECE It is a Greek island and municipality. It is mountainous and includes the harbor town of Symi and its adjacent upper town Ano Symi, as well as several smaller localities, beaches, and areas of significance in history and mythology. Symi is part of the Rhodes regional unit. Geographically, it is part of the Dodecanese island chain, located about 41 km north-northwest of Rhodes (and 425 km from Piraeus, the port of Athens), with 58.1 km² (22 sq mi) of mountainous terrain. LANDMARKS The Monastery of the Archangel Michael Panormitis is a Greek Orthodox monastery built on the southwest coast in the early 18th century. It overlooks a bay, and is still inhabited by monks. The Kastro overlooks the main town of Symi, Ano Symi. It was built by the Knights of St. John as an expansion of a Byzantine castle on the same site, many parts of which are still visible. There are also remnants of an ancient citadel on which the two later castles were built. The municipal clock tower which was built circa 1880 The War memorial in the harbor consists of a monument "the Dove of Peace" in front of a bas-relief sculpture of a Trireme. The town of Symi alone has thirteen major churches and dozens of chapels, some dating back to the Byzantine era. The village of Nimborio has surviving ancient Pelasgian walls and a set of twelve domes remaining from workshops used by artists.

Archangel Michael Panormitis Monastery
Archangel Michael of Panormitis refers to a miraculous icon of the Archangel Michael on the island of Symi and is one of the four miraculous icons of the Archangel in the Dodecanese of Greece. The monastery is located on the south end of Symi, situated on the sea front of the tiny village of Panormitis. It is a closed in cove with a small sandy beach, protected by a narrow inlet that opens out into a wide harbor. The mountainous backdrop is covered with pine trees which give the area an ambiance of solitude. The monastery's dorm-house can host up to 500 people. The only way to get to the monastery is via a ferry or excursion boat. If you are already on the island, there is a road that exists between the monastery and the town of Symi. Today, a quarter of a million tourist visit this area. Poas Volcano is an active stratovolcano in central Costa Rica. It has erupted 39 times since 1828. Poás Volcano National Park is an easy day trip from most locations in the central valley, and can easily be combined with a number of other activities. The lower slopes of Poás Volcano are covered with fruit farms and huge ornamental flower farms.
