world of TASTE interesting and tasteful recipes easy to prepare@home Greek Chicken with Herby Vegetable Couscous & Tzatziki By Jamie Oliver INGREDIENTS For the couscous • 1 mug (300g) of couscous • 2 mixed-color peppers • 1 fresh red chilli • 4 spring onions • ½ a bunch of fresh dill • 200g podded raw or frozen peas • 1 small handful of black olives (stone in) • 2 tablespoons extra virgin olive oil • 40g feta cheese For the chicken • 2x200g skinless higher-welfare chicken breasts • 1 heaped teaspoon dried oregano • 1 teaspoon ground allspice • 1 lemon • olive oil For the tzatziki • ½ a cucumber • 250 g fat-free natural yoghurt • ½ a lemon • ½ a bunch of fresh mint

METHOD Put 1 mug of couscous and 2 mugs of boiling water into a bowl with a pinch of salt and cover. On a large sheet of greaseproof paper, toss the chicken with salt, pepper, the oregano, allspice and finely grated lemon zest. Fold over the paper, then bash and flatten the chicken to 1.5cm thick with a rolling pin. Put into the frying pan with 2 tablespoons of olive oil, turning after 3 or 4 minutes, until golden and cooked through. Using a box grater, coarsely grate the cucumber. Sprinkle it with a good pinch of salt, then squeeze and scrunch with clean hands to get rid of the excess salty water. Pop in a bowl with the yoghurt, juice of ½ a lemon and a pinch of pepper, finely chop and add the top leafy half of the mint, then mix together. Remove the stalk and seeds from the peppers and chilli, then pulse in the processor with the trimmed spring onions and the dill until finely chopped. Scatter over a large tray or platter. Add the peas to the veg (if using frozen peas, blanch them in boiling water for a couple of minutes first), destone and tear over the olives, then squeeze over the juice of the zested lemon and add the extra virgin olive oil. Fluff up and scatter over the couscous, toss well and season to taste. Move the cooked chicken to a board, slice it up, then lay it around the couscous. Crumble over the feta and serve with the tzatziki. 24 POSH HOTELS Haute Cuisines Summer 2013


Raspberry Syllabub with Langues de chat

INGREDIENTS • 2 punnets raspberries • 4 tablespoons caster sugar • 50 ml sweet red wine or sweet dessert wine • 284 ml double cream • 284 ml fat-free natural yoghurt • a few sprigs fresh mint, to serve • 1 pack langues de chat biscuits or any thin, all-butter biscuits.

METHOD Place the raspberries in a bowl, sprinkle with the sugar and wine and set aside for a few minutes to macerate. Whip the cream to very soft peaks in a separate bowl and stir in the yoghurt. Fold half the cream and yoghurt mix into the raspberry mixture to get a bright pink cream. Now gently fold in the remaining cream and yoghurt mix to give a ripple effect. Divide between 6 glasses or tumblers. Top each with a mint sprig and a few langues de chat biscuits poked in the top.

METHOD Peel the green mango, then use a serrated vegetable peeler to make fine strips (or you could use a mandolin). Place the mango strips into a mixing bowl and add the coconut flesh, turnip, shallot and beetroot. (If using wakame, add now). Rub the gotu kola leaves between your hands to release the flavors and nutrients, and then add to the other ingredients. Add the chilli, sesame seeds, tamarind juice and lime juice. Mix well, and then serve.

INGREDIENTS • 20gr Gotu kola leaf • 60gr Green mango • 25gr Coconut flesh, cut into fine strips • 40gr Beetroot, cut into fine strips • 10gr Turnip, julienne • 15ml Tamarind juice • 15ml Lime juice • 1/2tsp Lemon grass, chopped very finely • 1/4tsp Sesame seed, black and whit • 20gr Shallot, sliced very finely • 1/4tsp Chilli powder • 40gr Wakame (optional).

Double Chocolate Loaf

By Two Peas & their Pod

INGREDIENTS • 3/4 cup firmly packed dark brown sugar • 1 cup dark unsweetened cocoa powder, sifted • 1 1/2 cups all purpose flour • 3/4 cup granulated sugar • 1 1/2 teaspoons baking soda • 3/4 teaspoon baking powder • 1 teaspoon salt, 2 large eggs, 1 large egg yolk • 3/4 cup buttermilk • 1/2 cup vegetable oil • 1 teaspoon pure vanilla extract • 8 ounces good-quality dark chocolate (60-72%), coarsely chopped

METHOD 1. Preheat the oven to 350 degrees F and position the rack in the center. Butter a 9 by 5 inch loaf pan, dust it with flour, and knock out the excess flour. 2. Place the brown sugar in the bowl of a standing mixer fitted with the paddle attachment. Press out any lumps with the back of a large spoon. Add the cocoa, flour, granulated sugar, baking soda, baking powder, and salt. Scrape down the sides and bottom of the bowl. 3. In a separate bowl, whisk the eggs and egg yolk until blended, then add the buttermilk,oil, and vanilla; whisk until combined. Turn the mixer to low and slowly stream the wet ingredients into the dry ones, mixing just until combined. Stir in the dark chocolate chunks by hand. 4. Pour the batter into the prepared pan and bake for 1 hour to 1 hour and 10 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Let the cake cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely. 5. Slice the cake and serve with whipped cream and strawberries, if desired.

INGREDIENTS · 2 dried ancho or guajillo chillies · 1 tbsp olive oil · 1 large onion , chopped · 4 garlic cloves , chopped · 1 tsp smoked hot paprika · 1 tsp ground cumin · 700ml chicken stock · 250gr chopped tomatoes · 200g large peeled raw prawns · 300gr halibut · 300gr clams · 500gr small new potatoes, halved and boiled · juice of 2 limes

METHOD

Toast the chillies in a hot dry frying pan for a few moments (they will puff up a bit), then remove. Deseed and stem chillies, and soak in boiling water for 15mins. Heat the olive oil in a large saucepan over a medium heat. Add the onion and garlic, season and cook for about 5mins or until softened. Add the chipotle paste, reconstituted chillies, cumin, stock and tomatoes. Sauté for 5mins, then purée until very fine in a blender. Pour back into the pan and bring to the boil. Reduce the heat and simmer for 10mins. When close to eating, add the prawns, fish fillets, clams and potatoes. Place a lid on top and cook for 5mins over a medium-high heat. Add the lime juice and serve with lime wedges, avocado, coriander, red onion and tortilla chips for sprinkling over.
