The barbecue is used year round these days and if you’re bored of the usual, we have five delicious recipes here which will liven up your garden socials. BEETROOT BURGERS These burgers are packed with colourful goodness. Using jarred beetroot as the main ingredient, I added protein packed chickpeas & feta plus fresh herbs and lemon zest to make the ultimate intensely coloured vegetarian burger. You choose your favourite garnishes – I settled on shredded beetroot, grated carrot, cucumber ribbons, leaves and mayo. The burger can be cooked on the barbecue, in a frying pan or in the oven. 16

Prep: 10 mins Cook: 15 mins Serves: 4 Ingredients:

For the Burger: 1 x 340g jar Beetroot | 400g chickpeas drained | Zest of 1 lemon | 200g feta cheese | 3 tbsp flour (plus extra for dusting) | 1 egg | Bunch fresh parsley and/or mint To serve: Burger buns | Cucumber slices or ribbons | Leaves | Grated carrot | Shredded beetroot | Extra flour for dusting Method: 1. Set aside 2 tbsp Shredded Beetroot for garnishing. Drain the remaining beetroot and chickpeas through a colander. Rinse well and squeeze out as much liquid as possible using the back of a spoon.

2. Add all the burger ingredients to a blender and blitz. Using floured hands form into patties and if possible pop in the fridge to firm. 3. When ready, heat either a griddle or barbecue. Lightly oil the pan or bars and cook the burgers for 3-4 minutes on each side. Alternatively they can be baked in the oven for 25 minutes at 180 fan. Turn half way through cooking time. 4. Use a flexible, sharp knife to cut each scallop free from its shell, place scallops-in-shells on a plate. Cut butter into 6 pieces and put a piece on top of each scallop. 2. Mix together the lemon juice, pepper, minced garlic, desiccated coconut and wine and stir well. Spoon a 1/6th of the mixture on top of each buttered scallop-in-shell. 3. Check BBQ charcoal is white hot. Use tongs to place scallops-in-shells on to the BBQ rack. Cook for 5 mins, until bubbling. Leave or turn over only the scallops to cook for another 5 minutes. 4. Scallop is cooked when the meat has turned whiter. Avoid over-cooking! The mixture should be juicy and moist, not dried up. Serve with small pieces of fresh, crusty bread. Blend the dressing ingredients together in a blender until creamy and the ginger is broken down. If you don’t have a power blender, you may need to strain out the ginger fibres after blending. 2. Place kale in a large mixing bowl and add a tablespoon of the dressing. Massage the kale well until it wilts. This step is important to activate the beneficial compounds in kale and also makes it easier to eat. Once the kale has softened, mix through the quinoa and set aside. 3. Place the kale and quinoa mix in a salad bowl and scatter over the spring onions, the cranberries and the almonds. Just before serving drizzle over the citrus dressing and gently toss the salad.
