THE BALMORAL WELCOMES PAUL HART AS EXECUTIVE CHEF
Paul Hart joins The Balmoral with over 28 years of culinary experience and will lead The Balmoral culinary team, bringing dedication and passion to the hotel’s offering with a vision to continue to develop imaginative and thoughtful approaches to the hotel menu design.
Commenting on his vision for the future, Paul said: “The Balmoral is a world-renowned culinary destination and a landmark of Edinburgh. It’s an honour to join this talented team delivering unrivalled five-star hospitality. Ahead of Scotland’s Six Nations clash with Wales enjoy an evening of rugby banter and great Balmoral hospitality in the company of British Lions legends Jamie Roberts and Scott Hastings as they debate the respective Six Nations prospects of Scotland and Wales after the first round of fixtures. Enjoy an informal supper accompanied by a tipple from sponsors, The Macallan, in the spectacular surroundings of the Annan and Esk suites in Scotland’s only Forbes 5 Star Hotel.
SCOTT HASTINGS
Scott is Scotland’s most capped rugby centre-three-quarter with 65 caps. He played in 51 internationals with his brother Gavin and they are the only brothers to have played on two British Lions Tours, to Australia in 1989 and to New Zealand in 1993. Scott is a former Captain of the Scotland 7s team and played in tournaments around the worldincluding Dubai and Hong Kong. Following Scott’s retirement from the game he moved into broadcasting. Scott is a regular commentator on the HSBC Sevens World Series and continues to work on the coverage of the Guinness Pro14 in the UK with Premier Sports; Heineken Champions Cup Rugby with BT Sport and during the 6 Nations he commentates with ITV Sport. Scott also runs the sports and events business, Hi Events Ltd and writes a regular rugby column for The Times Scotland newspaper.
JAMIE ROBERTS
Jamie Roberts is one of the highest profile rugby players in the world, his accomplishments speak for themselves; he has 97 international caps having represented Wales since 2008, won two Grand Slams, a Six Nations title and has played in two World Cups; he has also toured with the British & Irish Lions twice where he was named Player of the Series in 2009.
One thing that sets Jamie apart from the majority of professional sportsmen is that he is a qualified doctor. He graduated in medicine from Cardiff University in 2012, the same year that Wales won the Grand Slam, playing in every single game whilst studying for the degree. He is now based in London, playing for Harlequins alongside completing a Masters medical science degree at Queens’ College Cambridge on a two year, part-time basis. As part of this, he became the latest on a prestigious list of internationals to represent Cambridge in the 2015 Varsity Match. Jamie has a wealth of media experience having acted as a TV pundit for Sky Sports, BT Sport and the BBC.

To celebrate Valentine’s Day, Palm Court is adding a special tea to their 88 tea selection menu. The milk-infused rose and black tea with rose-infused sugar and rose petals is the perfect accompaniment to our bespoke Valentine’s Day pastries.
Dine under the twinkling lights of the Palm Court trees and listen to the relaxing sounds of a live harpist as you enjoy sweets and savouries prepared specially for your Valentine’s Day celebrations.
The menu features a sumptuous selection of loose-leaf teas (pleasingly poured tableside), fresh pastries, dainty sandwiches and expertly crafted savouries, as well as a beguiling selection of Champagnes.
Afternoon Tea at Palm Court is £55 per person, with Champagne £70 per person.
WINE CELLAR EXPERIENCES
Number One is inviting guests to visit their decadent wine cellar in partnership with award winning Champagne house, Charles Heidsieck. The solid oak cellar offers guests the chance to view, select and taste the restaurant’s extensive selection of fine wines and Champagnes that live within the cellar walls.
The bespoke cellar has over 350 wines on display with the bespoke temperature controlled space offering a beautiful addition to the restaurant’s rich interiors. The wine cellar houses over twenty wines by the glass, bottles from more than sixteen countries and vintages from the 70s and 80s through to 2021.
