Parks Begins Removing TrapBags By Katie McFadden

A layer of beach protection may be coming down soon. TrapBags, utilized as a temporary safety measure post-Hurricane Sandy, are starting to be removed by the Parks Department. The TrapBags were installed in 2013, roughly between Neponsit and Rockaway Beach. Some were intended to be used as temporary protective measures while others served as a dune core. In Neponsit and Belle Harbor, the baffle walls have been created. The dunes have been formed and the TrapBags have remained uncovered along the baffle walls, until now. Concerned resident Greg Reinhardt reached out to The Rockaway Times when he noticed that the TrapBags on Beach 135th Street were being removed over the course of a

few days. Reinhardt says when he asked the staff a reason for the removal, he was ignored. The Rockaway Times reached out to the Parks Department for an explanation of the removal. A Parks spokesperson said, “NYC Parks is planning to remove the TrapBags in the Rockaways between Beach 127th and Beach 149th Streets. The TrapBags in this location were installed in 2013 and were intended to be a temporary protective measure until the

completion of more permanent protective infrastructure. Since the bags were put in place, baffle walls and a planted dune have been installed as part of our comprehensive resiliency plan. Parks has removed several TrapBags at 135th in order to determine possible staffing needs for the future large-scale removal of the TrapBags.” Parks says it may remove all of the bags in the future. “We are now working with the State regulating agency to determine if we may remove all the TrapBags.” Reinhardt says the removal doesn’t make much sense. “We got money for Sandy relief to install these bags. Why take them out? They’re not hurting anybody. They can only help and not hurt. Paying for these and then paying people to remove them is money wasted. Why are we paying Parks to remove these bags when they have the poten-

tial to help?” he said. “We just had this huge snow storm where high tides were predicted. What if those TrapBags were the last layer of protection that kept our streets and homes from being flooded?” Reinhardt observed the TrapBags being removed and described a large-scale removal including more than 20 people and five trucks being used to remove just twelve of the bags over the course of three different days. “It’s costing a lot of money to remove these bags. Can’t we leave them alone and use that money for something more productive? Put it towards something like benches, garbage cans, street cleaning, grass planted along Beach Channel Drive, anything else. It seems like they just have money to burn and they’re trying to burn it on something that doesn’t make sense,” he said.

Graybeards Gala Is Saturday FROM HOOPS TO HELPING OTHERS, GRAYBEARDS MAKE THE ASSIST By Dylan Watton

There wasn’t a soul in Rockaway not affected by 9/11. Everybody knew someone, if only indirectly, who had a brother, wife, friend, etc. either in the towers or responding to the attacks. A New York Times article from 2011 states that “Fifty-nine people from Rockaway died; about 70 counting summer and former residents. One enclave, Breezy Point, lost 32 of its 5,000 people. A proportional hit to New York City would have taken 51,000 lives. Finding good that came out of that day is almost impossible, yet the perseverance and general human nature of the peninsula ultimately led to the creation of a charitable organization that has impacted the lives of many in the past 14-plus years—the Graybeards. “What happened was that we were a bunch of guys playing so-called over-the-hill basketball, Steve Stathis, the Gray-

Graybeards know how to have fun, too!

beards first president, said. “I think that’s what enabled us to actually have the organization formed. We had a nucleus of 6070 guys that played ball. We all hung out and socialized. I know a lot of people but it wasn’t like me walking around to just my friends saying ‘Let’s start this

thing.’ The Graybeards basketball league formed in 1995 according to the organization’s website. It is exclusively for older guys to play in, or as a gentleman named McGack is quoted on the site, “This is [an] over 40 league. Feeling 40 does not count. It appears

that the initial formation was intended to be nothing more than a way for old friends to compete on the hardwood for guts and glory. “It was a fun organization of guys just enjoying the sport and the company, Joe Keenan, the current Graybeards president, said. But things changed following the terrorist attacks. “I worked for ConEd at the time when 9/11 happened, Stathis explained. “I was working at the World Trade Center site. Kevin [Boyle, editor-in-chief of The Rockaway Times] called me up right near the end of the month, the 29th or something like that. He just said, ‘Graybeards of Columbus? What do you think?’ Kevin, being the intellectual that he is, I knew that he was up to something. Boyle’s idea was to create a nonprofit around the idea of the Graybeards to assist families affected by 9/11. “He told me ‘We have enough guys who can figure out all of the le-

Many residents have expressed concern over beach erosion, particularly in light of Winter Storm Jonas. Spokesman Dan Falt of the Army Corps of Engineers sent us this statement: “Winter storms play a big part of beach erosion in Rockaway and the work performed following Hurricane Sandy allowed us to increase the measures of resiliency to help reduce risk for the residents of Rockaway. Over the weekend, the beach worked as it was designed and provided excellent protection. The dune/ berm features sustained little to no impact from the combi-

Cabin Fever So it seems like shovels are like socks in the dryer. They just go missing. For no damn reason. They just disappear. The phenomenon caused Shaun Reen to ask a very sensible question: Why is there a rush on shovels every time a snowstorm is in the forecast? What’d you do with last year’s shovel? I’d like to blame my son – who, like a lot of sons, leaves his bike or one that he shouldn’t have been using – at some friend’s house. Or some place he can’t re-

member. But getting him to pick up a shovel is so hard I can’t imagine him losing one. Though I wonder… I have to say shovels must be big business. Although there’s a run on them, youcanbuythemjustaboutanywhere. When you go to Duane Reade for some cold medicine, you might as well pick up that shovel right at the checkout line. I think nail salons make shovels part of their pedicure specials. Ten toes and a shovel for $20. Of course, there are runs on milk and bread. Supermarkets are packed

with survivalists --- who buy a lot more than milk and bread. They go hard after Mallomars and ice cream. January diets be damned. I’d like to ridicule all these maniacs but after being stuck inside last Saturday I kinda get the point . There’s only so much you can do while snow pours down. You can shovel and then by the time you take off your gloves and look outside it looks like you were never out there. You can watch the weather reports, but sooner or later those annoying people, Governor Cuomo and Mayor de Blasio, are going to seem like they’re on every channel. So you eat. Or you bake. Just to take a break from eating. And then eat. And then eat again. You go on Facebook repeatedly and wind up hating people you never hated before. You can’t bear to watch the weather though you’re starting to wonder, what would happen if it doesn’t stop. Ever. You turn the channel and the first show you come across is Buying Alaska, which is a lot of fun to watch when you’re not in Alaska. I Google Anchorage. It’s 24 degrees and cloudy. We’re putting Alaska to shame. I go back to Facebook and John

Page 5 Sica has posted a picture: Almost two feet already!! But he’s not talking about snow. He happens to be in Puerto Rico and he and others are standing in almost two feet of crystal blue water in the Caribbean. That was cruel but he had the right idea. I started looking at vacation websites but didn’t get too far before I came across a list of things people have complained about. “When we were in Spain, there were too many Spanish people there. The receptionist spoke Spanish, the food was Spanish. No one told us that there would be so many foreigners.” And from another genius: “Noone told us there would be fish in the water. The children were scared.” From someone you’d never go on vacation with: “Although the brochure said that there was a fully equipped kitchen, there was no egg-slicer in the drawers.” And from someone who could never be happy: “We had to line up outside to catch the boat and there was no air-conditioning.” But then I heard something on the TV in the one that topped them all. Yes, it is a record-setting blizzard. Alternate side is suspended. But feed the meters.

Virtually Perfect Rockaway Beach Golf Club- Coming Soon! By Katie McFadden

Fore! Look out! Indoor virtual golf is coming! If the winter has you feeling blue, it might be time to get on the green. But save the dough on a plane ticket down south. Let the best courses from around the world come to you in a warm, cozy indoor setting right in your own neighborhood. The long-anticipated Rockaway Beach Golf

Club will be opening in February. RBGC is a project more than two years in the making. Owners Steve Stathis, Christian Stathis and Pat Hayden started putting a plan into action in late 2013. “We were going to a wedding and the men were supposed to go golfing and it poured rain, so we were told to show up at this arcade place in New Jersey with our clubs and our coolers. This place had 14 virtual screens and 32 of us played golf. While we were driving home, my son said, ‘We gotta do this for Rockaway. This will go over big,’” Stathis recalled. They found the perfect location at 219 Beach 100th Street. “That was November 2013. Now it’s 2016 and we’re very close to opening,” he said. With Steve and Christian Stathis having business experience as the owners of Boarders Surf Shop, the men figured it wouldn’t be too difficult to build. Christian Stathis and Pat Hayden, both firefighters

Two of the three screens that offer virtual golf

in Brooklyn, enlisted the help of fellow firefighter Stevie Jimenez of Mayday Home Improvements to help with the building process. “We figured we’d just be able to build it and open,” Steve Stathis said. However nothing is ever simple when it comes to working with city agencies. “We’ve been ready to open for five months,

but it has taken so long and thousands of dollars for permits and approvals. We’ve done everything by the book, but the city makes it so hard to open businesses,” he said. Stathis is anticipating an opening of February 15. Despite the long wait, it will be worth it. The Rockaway Times got

GOLF CLUB Continued from page 8 an exclusive preview of the facility last week. It won’t be surprising if a lot of first impressions are, “Wow!” From the leather couches, hardwood floors, a fireplace, small details like golf club coat racks and artwork, to a personalized wooden logo handcrafted by Patrick Flibotte of Sayra’s Wine Bar, it’s clear that a lot of hard work and care went into the space, which was empty since Hurricane Sandy. “A lot of do-re-mi went into this place,” Stathis said. The indoor location will be perfect for winters as it gives a warm, welcoming feeling and the space alone will attract non-golf enthusiasts and will appeal to families. “We were going for a comfortable country club feel with wainscoting, leather coaches and wooden floors,” Stathis said. The space is like a lounge with a fully stocked bar, five high-definition TVs to play the big sports games and of course, three virtual golf simulators where kids, beginners, intermediate players and perhaps pros, can practice their swing.

THURSDAY, JANUARY 28, 2016 For those who have never seen a virtual golf simulator, you hit real golf balls, with real clubs, at a virtual course on a 15-foot screen. The computer based E6 Golf software allows you to choose from more than 50 different courses, including some of the best in the world like St. Andrews, Bethpage Black, and Pebble Beach. The courses are as close as you can get to the real thing without actually being there. There are sound effects, so you’ll hear things like helicopters and birds, and water splashing if your ball happens to go into a nearby lake. The simulator can be an educational tool as it tells you stats like how many yards you hit, your swing speed and more so that you can improve. Stathis says it will cost $40 an hour to use the simulator, which can be split between players. Players can bring their own clubs or rent some for an extra fee. Since there are only three simulators, reservations will be taken in advance through the RBGC’s website once it launches at www. rockawaybeachgolfclub.com. However, those who come by the lounge to have a drink and watch

There’s a 19th hole too.

a game on the TVs may be able to request a spot while there. With the golf simulator system being used around the world, there will be opportunities for people to enter tournaments, which could result in cash prizes. Formal lessons won’t be given at the facility, but instructors will have opportunities to rent it out and teach those looking to improve their swing and the space may be available to rent for special events or parties. There won’t be a fancy food menu, but small bar snacks will be available to order and the owners plan to partner with local caterers for those who want to hold a party. Anticipated hours will be from 10 a.m. to midnight, unless special hours are requested. “During the day it will be mellow and at night we’ll turn up the

Page 9 music or games,” Stathis said. The facility will be open to all ages, so kids can learn the game. “It will be kid friendly and will also appeal to women. It’s more of a lounge than a regular bar,” he said. With places like Riis Park and Marine Park offering real, outdoor golf nearby, Stathis thinks the indoor facility will complement them nicely in the winter months. “Our busy time will be when the real golf courses are closed. Some people want to be able to golf year round, but there’s been nowhere to do that until now. We don’t project this place being busy in the summer, but we won’t know what the demand will be until we open,” Stathis said. There has already been a demand for it to open. “There are a lot of golfers in Rockaway. All of our friends and family are excited and can’t wait to come down. If another person asks ‘When are you opening,’ I may have to get it tattooed on my forehead. Even Assemblyman Phil Goldfeder came by and said, ‘You guys need to open!’” February 15 is the targeted date, but look for updates in The Rockaway Times.

The Lazer Speaks White Snow, Blue Monday By Lou Pastina

The blizzard this weekend provided a wintry wonderland for Rockaway residents to come out of their houses and help each other! The winds and snow Saturday night were a beautiful sight, however the storm gates that were inserted into the beach walls were a reminder that snow is water, and it was a full moon with high tides and gusty winds about, safety matters. But Sunday brought sunshine and neighbors out greeting each other with a warmth reminiscent of Sandy. Not all blocks were plowed, but friendly faces from every block were out traversing the snowdrifts and smiling broadly at each other. And that is the soul of Rockaway. Some had snowplows and happily helped neighbors, others had young sons and daughters that they sent to help older residents, or recently injured ones. I fit neatly into both categories somehow and was the recipient of some of that goodwill! Others decided that it was an excellent time to have a blizzard party and marched through the storm to various friends’ houses to light up the night. Some others hunkered down and binged on Netflix relieving bottles of wine of the heavy weight of their loads. Travel bans seemed like a good idea while watching the TV weather reporters vie for a Pulitzer Prize for reporting on a local snow storm. Threats of Armageddon led at least two

governors to declare a state of emergency before the first flake fell. To be sure there were casualties, but upon further speculation, perhaps closing the only two bridges linking the peninsula to the mainland was a bit narrow-minded! But as great as the snow was, and as terrific it was to see neighbors again, Monday crept up on many and the blues set in. Work, travel, monotony, oh brother how did this happen! Right into the winter blues. But there are some good things to look forward to‌the Graybeard dinner honoring Gerry Casey and Monsignor Bracken, two people who have made huge differences through their commitment, loyalty and vision. A Grayrider gig the night before at Thai Rock, always an entertaining diversion and a good pregame strategy before the dinner. Then comes February with the Super Bowl and the Oscars. By then all the snow should have melted and the blues should be lifting. And of course there is Valentine’s Day and February is Black History Month as well. And then it’s only one month to St. Patrick’s Day too. I did learn something new this weekend though, did you know that Saint Francis de Sales is the patron saint of journalists? I didn’t, but now I am praying to him to end the monotony of winter so I can start to write something that is not so, so, so damn blue! Oh well, maybe it will snow again. will be necessary within 4-5 years to preserve the current level of risk reduction which is consistent with beach erosion projects.â€? When asked about jetties, which many in Rockaway have pleaded for, Falt said, “We have consistently said that construction of any elements authorized by the reformulation report will start no earlier than 2018. There are many rounds of reviews and approvals to finalize.â€?

Hotel Looks For Mid-Feb Opening The first new hotel in Rockaway in decades will open in mid-February if all goes according to plans. The La Quinta Inn (part of a national chain) on Beach 44th Street off the Rockaway Freeway will have 99 rooms and 13 spaces for underground parking. The 6-story hotel will be managed by Riverbrook Hospitality Management LLC. One of the principals, Steven Mendel, said “depending upon the season” the hotel will market to beach going families and tourists in the summer (including to locals with extended families who visit) and at other times to JFK layover crews and business people. On Friday, January 23rd, Mendel allowed a Rockaway Times photographer access to the

building. Rooftop views afforded great shots of the beach in one direction and equally expansive views towards the bay and JFK. When the hotel originally broke ground in 2012 some residents expressed concerns

that the hotel would become a shelter or halfway house and threaten the safety of nearby Edgemere residents. La Quinta corporate offices responded by saying the hotel would bring jobs and offer quality lodging. The protests became moot as Hurricane Sandy struck soon thereafter stalling the project for almost three years. With the doors set to open within weeks, Rockaway will soon know if the hotel is a community asset or burden. Reservations can be made by going to LQ.com.

Ray Kairys and Jimmy Fleming have been staples of the Rockaway and Long Island music scenes for decades. Together with their bands, The Electrix and bluegrass outfit Wild Smokin’ Oats, they have opened for and performed with psychedelic luminaries such as New Riders of the Purple Sage, Levon Helm, renowned fiddle player Vassar Clements, and Doors guitarist Robby Krieger, among others. On Sunday, January 31, Wild Smokin’ Oats will take the stage at The Blarney Castle in Breezy Point, joined by T.K. Kearney on guitar and banjo along with some promised “special friends.” Both Kairys and Fleming expressed deep appreciation for the band that has served as both their biggest musical influence

Card Party At St. Camillus Led By Principal With A Vision By Dylan Watton

Sheila Smith Gonzalez doesn’t know why it’s called a card party, but the annual fundraiser for the St. Camillus Catholic Academy has been a hit for a long time. The 2016 edition will take place on Friday, February 5 at the church’s Springman Hall, located on Beach 99th Street. “Our card party is our biggest fundraiser of the year,” Gonzalez, who is in her second year as principal of the school, said. “We have wonderful prizes and it’s a great night for the community. But it’s really done to offset our tuition. We don’t want the cost to outweigh the choice of parents to send their child to Catholic school.” The card party is essentially a color-coded raffle featuring different levels of tickets and a separate 50/50. Interested parties can purchase tickets at six

People bring money and buy raffles and then it’s very exciting when they start pulling the tickets,” Gonzalez said. She commended the work of numerous volunteers, including parents of students as well the local 100th Precinct, for helping to spread information and prepare for the festivities. “We do a lot of work to make a fun and profitable night.” Gonzalez has been a fixture in Catholic education for her entire life. Growing up in Jackson Heights she went to Catholic grade and high schools, and upon receiving her degrees from New York University, Queens College, and later St. John’s University, immediately went to work as a teacher at a

school in Corona. Prior to joining St. Camillus she was the principal of a Catholic school in Bushwick that unfortunately closed down. “I went to Catholic school and I just believe in it,” she explained. “I never really saw myself going to a public school. I’m a very faithful person. I sing in the choir at my home parish, Our Lady Queen of Martyrs in Forest Hills. I’m very active in the parish and always have been. My kids are too, they’re active in the youth parish. I feel [Catholic school] has values that are important, teaching our kids to be good people, as well as good academics.” Gonzalez has presided over a number of changes during her time as principal. “I was given the opportunity to hire a number of new faculty members. ANOTHER REASON FOR QUEENSRAIL WHAT GIVES? Dear Editor: Imagine waiting at a bus stop in Rockaway during that snowstorm on 1/23/16. Women of Rockaway: Juliette Admoni Of JUMP Dance Studio By Katie McFadden

Who runs the peninsula? Women. A large number of local businesses and organizations are owned and operated by females, or female co-owners. And they deserve recognition. As part of an ongoing series, the Rockaway Times is profiling local female entrepreneurs each week. This week is Juliette Admoni, co-owner of JUMP Dance Studio. At just 17 years old, Juliette Admoni became one of Rockaway’s youngest female entrepreneurs when she started JUMP Dance Studio with her mother, Michelle. Wanting to share her passion for dance with the neighborhood, Admoni started teaching in Rockaway in the summer of 2014. Originally from Brooklyn, Admoni had built a reputation as a dance teacher there, but she wanted to bring her talents to her own neighborhood. “After living in Rockaway for this long and growing to love the

Michelle (l) and Juliette (r) with onf the young dancers, Laila Hahn.

community, I wanted to share my passion for competitive dance with the area. I spent 15 years of my life being a competitive dancer, and every time I succeeded with teammates the feeling was indescribable. Now that I am experienced enough to teach others I am thrilled to go into work every day when I see a student learn something new, or win at competition. It is even more fulfilling than when I experienced it myself,” Admoni said. Since starting out with a handful of students at The Creative Clown studio on Rockaway Beach Boulevard in May 2014, the number of students grew to more than 100 and JUMP moved to a larger studio location at 181

Beach 116th in September 2014. The studio offers classes for children of all ages starting at two and all the way through high school. “We offer classes in ballet, jazz, tap, contemporary, hip hop, acro, musical theater and more! Our Company Team, which competes regionally and nationally, ranges in age from four to 16. This team also performs at high profile events such as Barclays Center for the Brooklyn Nets, MCU Park for the Brooklyn Cyclones, as well as local events such as the Beach 116th Festivals and The Little North Pole,” Admoni said. Admoni, the Director of Dance, owns the studio with her mother, Michelle, who is the manager. Admoni says her mother has always been one her biggest supporters. “My mom has been there from taking me to my practices, doing my hair and makeup at 6 a.m. for a dance competition, to believing in me and partnering with me in opening our dream business,” she said. They’re also joined by an all-female staff with many years of teaching and dance experience. “Miss Kristin is a former Radio City Rockette, Walt Disney World performer, and competition judge. Miss Melanie is an acro-yoga specialist and contortionist who performs for Cirque du Soleil and shows in New York City. Miss Giana has taught dance for many years and is studying fashion and costume design. She has earned

numerous regional and national awards, along with all of our assistant teachers with years of experience,” Admoni said. Several years of dance experience and a love for it led Admoni to making it her career. “I have been dancing since I was two years old. I spent years competing and performing nationally, and learned the ropes of the competition world. I began teaching and choreographing at a young age and I developed the skills necessary to open up my own studio,” she said. She took a chance on Rockaway, but wasn’t sure how successful it would be. “At first, I wasn’t sure if my studio would fit in due to the various recreation options children in Rockaway have to choose from. My dance reputation was recognized in Brooklyn where I taught for years and I was unsure if I would be able to start from scratch in Rockaway. Fortunately, through the last year and a half I have already surpassed my goal of being recognized for my dancers’ exceptional growth,” she said. Admoni has found there to be some challenges in being an entrepreneur. “Owning a business is a 24/7 gig. When I am not in the studio, I am researching, ordering equipment and costumes, coordinating schedules, organizing performances and competitions, working on choreography, communicating with staff

and customers, as well as always learning how to improve my studio and my teaching skills. I give everything I have to my studio and my students. At times, this makes it difficult to balance my personal life. It is worth it in the end because of the satisfaction I get from doing what I love and I have the support of my family and friends who know how dedicated I am to my studio.” Despite being a young business owner, Admoni believes her age has been beneficial. “I think that starting so young has been extremely beneficial for three reasons,” she said. “For starters, I am highly energetic, very hungry and motivated, and use all of my energy toward achieving my goals. Second, I am in tune with the latest dance trends, music, and choreography concepts that rapidly change in the dance world. Third, I am able to reach and command the attention of my students who are more able to relate to me. Those who are concerned with my youth are no longer concerned once they see what my studio is capable of.” Admoni finds her work very rewarding. “I like knowing that my dancers look forward to coming every week. It makes me happy to know how many friendships have already begun within the studio. I wanted them to feel like the studio is a safe place, with a second family who supports them,” she said. Her students are also very accomplished. “I am proud of my entire Jump Dance family. We have won many awards in just a short amount of time: 1st place overall awards, overall high score awards, the most inspirational studio award, the drama factor award, most photogenic award, future and rising star awards, the wow me award just to name a few. However, it is not always about the win. It is about taking what you have worked so hard on and showing it off to the world and growing not only as a dancer, but as a person.” JUMP Dance Studio is located on the second floor of 181 Beach 116th Street. Two Good Men Graybeards to Honor Msgr. Bracken & Dr. Casey By Katie McFadden

Two honorable men will be recognized at this year’s Graybeards Dinner Dance on Saturday, January 30. One you may know from church at St. Francis de Sales. The other is a local man who decided to serve our country with the Navy while in his 60s. This year’s honorees are Monsignor John Bracken and Dr. Gerry Casey. The Graybeards are a group of men that volunteer their time to make the community better. Each year at their annual dinner dance fundraiser, they recognize two outstanding community members. “We generally honor someone who has volunteered their time and in a way, helps the Rockaways and we try to choose someone who does it without seeking fanfare. They’re positive role models,” Graybeards President Joe Keenan said. Each year, the members recommend

someone for the honor and the board votes on the nominees. They don’t have to be a Graybeard member. “Msgr. Bracken was selected because of the positive influence he’s been in the neighborhood and the way he brought the community together in his role as the pastor of St. Fran-

cis de Sales. He’s put a positive feeling back into the parish,” Keenan said. Last year, Msgr. Bracken once again became the pastor of St. Francis de Sales. When he was first ordained in 1967, St. Francis was his first assignment. He served as the priest there for 10 years. In that time, he improved

Jewish-Catholic relations within the community and helped start the parish’s CYO program. He then went on to several other churches around Queens and Brooklyn. Msgr. Bracken was given higher roles when he was appointed as Episcopal Vicar of Brooklyn and Northern Queens, overseeing 56 parishes for seven years. He was then offered a position as Director of Stewardship and Development in 1995, where he was put in charge of a capital campaign to raise $50 million for the parishes. The project wound up raising $80 million. In 1997, Msgr. Bracken was made Vicar of Administration to handle buildings and insurance issues. He was also later named Vicar General by Bishop DiMarzio and served as the right hand man of the bishop. After all of his service, Msgr. Bracken was inching towards retirement. “After being in ad-

TWO GOOD MEN Continued from Page 17 ministration for 25 years, I thought it was time to step aside and go back to the quiet life,” he said. But his services were still needed. He was asked to step in emergency roles at Holy Name in Fort Greene, St. Mary’s in Far Rockaway and back to Our Lady of Hope in Brooklyn. “After Sandy, the bishop asked if I’d go to St. Thomas in Breezy Point because of my experience with buildings,” he said. He was there until he was asked to return to St. Francis. “I’ve been back home at St. Francis since January 2015,” he said. In the past year at St. Francis, Msgr. Bracken has instituted new traditions to bring the community closer. Last summer, he helped start a weekend farmer’s market in the schoolyard. He also started Mass on the beach, which drew more than 700 people around Labor Day. This past Christmas, he helped start a tradition of lighting 100 Christmas trees in the prayer garden, with a ceremony that was attended by more than 1,000 people. “This community

THURSDAY, JANUARY 28, 2016 has suffered so much between 9/11, the plane crash and Sandy, but you don’t want to dwell on that. We’re Rockaway Strong, St. Francis Strong and I wanted ways to bring people together,” he said. Msgr. Bracken says that attendance and participation within the parish is back to the way it was 50 years ago. “We look forward to an even brighter and productive future,” he said. “Dr. Gerry Casey was selected for his service. He volunteered to join the Navy and went to Afghanistan as a doctor in his 60s. He did it much later in life and he’s being recognized for his dedication and service and willingness at his age,” Keenan said. Dr. Casey, 63, has more than 30 years of studying and working in the medical field, particularly emergency medicine. His longest roles have been practicing emergency medicine at Kings County Hospital since 1993 and in 2003, shortly after 9/11, he accepted a job with the FDNY as a fire surgeon and medical officer in Brooklyn. A friend asked him if he ever considered serving overseas. “I didn’t think

we should be at war in Iraq, but if we ever went back to Afghanistan, I would consider it,” Casey said. His son, Sean, would enter the Naval Academy after finishing high school in 2011. “I followed my son,” Casey said. Casey was commissioned by the Navy in 2012 at age 60. He underwent training and has been a member of the Naval Reserve Medical Corps. In August 2014, he was deployed. “I left for basic training, where I learned medical and weapons training and by the end of October 2014, we were in Afghanistan. Casey served as a Trauma Team Leader in Kandahar until May 2015. “We had situations where people were shot and we’d get these guys to an operating room and stabilize them until they could be transported to Germany for further care,” he said. Casey is back home now, but remains in the Naval Reserves. Why did he choose to serve? “It comes down to God, country and family. I wanted to pay it forward. I believe in karma and I had these medical skills that I could use, so I wanted to provide them. I feel

grateful for being able to serve,” he said. Both humble men were surprised when the Graybeards decided to honor them. “I tried to deny it, but they insisted, so I said if it will help you, I’m willing to do it. The Graybeards are a remarkable group of men and it is an honor to be honored by them because of all they have done in the name of the parish and community,” Msgr. Bracken said. “When they said they wanted to honor me, I said no you don’t,” Dr. Casey said. “I was embarrassed and humbled because I was just happy to go do a job that I could do when I had the opportunity, but that’s what Rockaway is about.” The dinner dance will be held this Saturday, but the fundraiser is already sold out, which Keenan believes is due to this year’s honorees. “They’re both great choices and well deserving, which is supported by this year’s attendance. Our fundraiser is sold out and I think it’s because our honorees are well liked by the community,” Keenan said.

Billy Taylor Remembered Some of you may have met him hanging out at Whit’s End, some of you may have met him pumping out the basements on your block after Sandy; others might have been sucked into conversation at an open-mic or local art opening ,by his infectious smile. Our friend Billy Taylor left us on Friday. Many of you might not have known by his casual, friendly demeanor that this Brooklyn born, Rockaway resident was so often the very real wizard behind the curtain at so many of our creative happenings. Billy always said YES...when Whalemina needed rebuilding, when our beaches needed kites, when our mermaids needed a parade..Billy gave his full support. Fly in Peace , Billy. – (Friends of Billy) Visitation will be held at Marine Park Funeral Home on Thurs. and Fri. 2-5pm and 7-9pm.The Memo-

Know Your Body Embodied Knowledge. The definition: information our bodies know and use without conscious thought, such as routines, habits and tasks. Also known as Instinctive Knowledge. How do we cultivate it? Our bodies have this amazing intelligence not learned from books or an outside source. Taking the time to listen requires unplugging from our devices and the outside world. We are the captains of our ships and so often we relinquish control to someone else. Perhaps this seems farfetched but listen for a moment.

Many of you know me as a yoga teacher, others may know me as a lifeguard many moons ago and yet others may remember when I was an athlete competing in running, swimming and triathlons. These were some of the greatest years of my life but I must tell you I did not know my body had its own intelligence, it was more mental and I certainly didn’t always listen to my body. There were goals to be reached and I pushed to win. Never really loved racing but it was something I learned at a young age growing up in Park Slope with the YMCA. I

have since changed and continue to do so every day because I am taking the time to slow down and listen. Rediscover your wholeness by listening to the space. Take time to be alone. We are all plugged into our devices 24/7. Some people wake up and the first thing they do is look at their emails. Our information is so easily retrieved from the Internet and I don’t think that is a bad thing, but where do we draw the line? When do we have enough information from our outside sources and become more connected to our innate nature. Do you ever take the time to simply listen, feel and be with yourself? It can be magical. How do we become strong in our bodies without injuring ourselves? Listen to the intelligence of your body. Trust yourself and get into your body by moving with your breath. Whether you are running, biking, swimming, practicing yoga or Pilates or kickboxing or Zumba do you pay attention to your breath and body when it speaks to you or do you choose to ignore the signs of injury until you are forced to stop the activity? Do

you change your workout or do the same thing every day? Are you finding a balance between your yin and yang or are you all yang? Balance is everything. Being present plays a key role in your body. If you are already moving on to your next task how can you ever be present in your mind, body and spirit? When you become present there is a moment of bliss. Words that come to mind when practicing yoga and coming into the last pose, shavasana!! Luxurious, silky, delicious, juicy and heavenly. Thank you God for giving me this life, body, mind and spirit. Learning to listen to space means unplugging. So many people are finally realizing how meditation is a godsend. When I meditate I am listening to God. Recently, one of the great sages, Krishnamurti quoted, “When you breathe in, you are getting closer to God, when you breathe out, God is getting closer to you.” Imagine having the time to slow down and actually sit with this thought. Do not neglect your body intelligence. Stillness will become more natural and enjoyable. Stop, listen, absorb it all.

Update on TB By Peter Galvin, MD

A few months ago there was an item in the news that reported that several teachers in the Bronx had been diagnosed with tuberculosis (TB). While it is highly likely that this was mis-reported (see below) I thought a discussion of TB would be interesting. TB is caused by the bacterium Mycobacterium tuberculosis (M leprae causes leprosy). TB is caught by inhaling droplets coughed into the air by an infected individual. It is a disease of urban crowding and, when caught, causes a respiratory infection or pneumonia. It can also cause disease in lymph nodes and bones but these are

quite rare. TB preys on individuals with compromised immune systems. Chronic TB causes weight loss and muscle wasting. Because of this, before the causative agent was known, it was called consumption. The disease appeared to literally consume an infected person. Before antibiotics, infected people were sent to a sanitarium or spa, often in the mountains, because it was thought that the clean, fresh air was beneficial. This treatment was expensive, especially considering that this was done before the advent of health insurance. Poor people, who often lived in crowded tenements where infection was common,

Page 27

were sent to quarantines where they usually died. In NYC there were quarantines on Roosevelt Island and North Brother Island (located in the East River across from Riker’s Island). People with other urban diseases like typhoid were also sent to these places. Detection of TB starts with a skin test. A serum made from the protein coat of TB bacteria is injected under the skin. Exposure to TB activates the immune system and can cause a positive skin test. Vaccination against TB with BCG also causes a positive skin test, which is why BCG, unlike most of the world, is not used in the USA. When a person with a previously negative skin test has a positive skin test it is called conversion. Conversion is often mistaken for having TB. A skin test conversion only means that the person was exposed to TB. Most healthy people who convert do not go on to develop TB. A positive skin test requires a chest X-ray to rule out lung infection. Those under 35 years of age who convert are often given an antibiotic (isoniazid) for six

to nine months to prevent getting the disease. This is called prophylaxis. Over 35 it is thought that the risk of liver toxicity from isoniazid outweighs the risk of getting TB. Active TB is treated with a combination of at least three or four antibiotics as the risk of resistance to just one or two is very high. Because of antibiotic resistance, treatment is long, usually at least six to nine months or longer. Anyone about to be treated for an autoimmune disease like lupus or rheumatoid arthritis or anyone who will be treated with longterm steroids or immune system suppressants (used to prevent rejection in organ transplants) is given a TB skin test before starting treatment (these treatments suppress the immune system). TB can often be dormant in the body for decades, suppressed by a normal immune system. Medications that compromise the immune system may allow dormant TB to become active disease. PLAYING Continued from page 12 and the one that fills most of their setlists, the Grateful Dead. “I started playing right about when the Beatles hit in ’64, Fleming, the band’s guitarist and mandolinist, said. “Once I got into the Dead, the live music was amazing. That’s what really turned me on to playing. He said he joined his first band at age 11 in Breezy Point. “Our first show was probably like 1968. My first band was the Desert Raiders, we used to play at the parish hall and teen dances. Fleming said his family has been in Breezy since approximately 1962 and that they “were certainly one of the few that lived there year-round. Kairys grew up in Brooklyn and was inspired by similar music. “I first started way back when I was in grade school in the mid-60s. I started with guitars then switched over to bass. The band I was going to join needed a bass player. Ever since I picked it up it was like magic. His foremost bass-playing influence was the

Dead’s Phil Lesh, who is known for his lead-style of playing while remaining the backbone of the band’s sound. “I first got into the Dead in the early ‘70s. When Europe ’72 [one of the band’s seminal live recordings] came out that was the album that did it for me, and I’ve been on the bus since then. It was just the way they jammed, that open freestyle approach to the music, which hooked me. Plus they rock it out. It was the combination of everything they do. Among other bassists he cited were Berry Oakley, Jack Bruce, Jack Casady, Paul McCartney, and Carl Radle. Fleming’s tastes are diverse, loving both the jam rock stylings of the Dead and the Allman Brothers and the classic American bluegrass sound formulated by Clements, Da-

vid Grisman, and Peter Rowan. He also named more obscure musicians such as jazz violinist StĂŠphane Grappelli and guitarist Django Reinhardt. Over the years he’s had the opportunity to play on stage with many of these legends. “It’s extremely awesome,â€? he said. “They’re great about it. Vassar Clements, the guys from the New Riders, they say ‘You play a decent mandolin, come on and help.’â€? The Electrix (who also consists of Jeff Naimoli and Mike Nicita on drums and percussion) and Wild Smokin’ Oats modern lineups were formed in 1995 when Kairys joined but Fleming had participated in those bands since the 1970s. “Wild oats is pretty popular term, as in sow your wild oats, but throw the smoking in there makes it a little more extreme,â€? he said of the name. The former band started out as Earl and the Electrix after an original member’s name, but the band kept the moniker even after he left. “Something about the word really gets you and the spelling is a little unique. That seemed to fit.â€?

Since their formation, the bands have played vaunted Rockaway and Breezy haunts such as the Raintower, the Bayhouse, Dingy Dan’s, the Irish Circle, and more. “The fans have been great, man, Fleming appreciatively said. “The crowd really appreciates us. We’ve been playing the Rockaway scene for a long long time. Fleming agreed, saying “There were always bars that had live music. People would have parties and have bands playing on the beach. Bands would play on the boardwalk. I was hearing people on the beach and all of a sudden there was a band on the back deck. Fleming said that current music scene in Rockaway is pumping out great sounds consistently. “There’s a lot of great young bands. A lot of young guys are playing bluegrass, playing the same stuff we played. Live music is alive and well. Wild Smokin’ Oats will take the stage beginning at around 4 p.m. on Sunday. Blarney Castle is located at 202-24 Rockaway Pt Blvd.

Blocks Of The Rock: Beach 92nd Street By Dylan Watton

John Cori knows his block better than anybody. He has lived on Beach 92nd Street for nearly his entire life and proudly displays the original street sign and coordinates in front of his house. “I delivered the Long Island Press as a kid,” he said. “My brother Chris had a paper route and when I was 11, I was able to cross the freeway and deliver them too. So I knew

everybody on the block, even old-timers. I like to be welcoming and give people the history because when people have a good feeling about the block they gain an appreciation.” Beach 92nd Street is one of the most happening blocks in Rockaway, a melding of individual houses, condos, and businesses stretching from bay to beach. Elegante, the godfather of the grandma slice, has stood on the

corner of 92nd and the Boulevard since 1982. Boarders Surf Shop is often ground zero for locals and visitors looking to rent a board in preparation for a ride on waves just up ahead on Rockaway’s most prominent surfing beach. There’s Bungalow Bar, Thai Rock, barber shops, and much more. Chris and Sarah Romulo own CROM Physical Culture, a popular MMA, boxing, and fitness center that has been open in some incarnation since 2010.

“This part of Rockaway right now is the most progressive part with all the restaurants and things coming up,” Chris said. “We’re pretty excited to be one of the innovators and pioneers of the renaissance. Not too many cared aside from the surfers before us.” “There’s always been a surf culture,” Cori said. “Boarders has been a really interesting addition to the block. People from all over the world go there and

DISHING THE DIRT An Apple a Day By Valerie Dare

There are good reasons to eat organic and locally raised fruits and vegetables. For one, they usually taste better (though they don’t always look better) and are a whole lot fresher. Unfortunately, most of us can’t afford to buy all our food at the farmer’s market or natural foods store and, in many places, locally produced and organic foods are not easy to find (though they are in Rockaway!). So, if you can only buy a few organic fruits and vegetables, which should they be? Which one produce item could have the greatest impact on agriculture, the environment and your family’s health? Well, the data is in, and it says: APPLES According to the Environmental Working Group’s analysis of USDA data, pesticides showed up on 98 percent of the more than 700 apple samples tested (yes, they were washed beforehand). And it wasn’t just one pesticide either – apples from around the country, domestically grown and imported, were found to have up to 48 different kinds of pesticides on them. Apples are commonly sprayed with Syngenta’s Paraquat, a pesticide under scrutiny for a possible link to Parkinson’s disease. Additionally, apple growers in Michigan received an exemption for the last three years, and have applied again, for the “emergency use” of the unapproved antibiotic kasugamycin. While this antibiotic is currently not in use by humans, data on its affects on ground water and animal reproduction and development are not known. Additionally, several new studies question if even allowable levels of pesticides do harm to humans, particularly organophosphates – substances the USDA reports are found in 81 percent of all conventionally grown apples. Even if the pesticide residues break down and are no longer found on the apple when you purchase it (which is not likely), those who spray the pesticides, and their communities, are affected by the chemicals directly. The problem with chemical use

on farms is that someone has to apply them, and often communities nearby are hit with pesticide “drift”. A study conducted by the National Institute for Occupational Safety and Health (NIOSH) found the following: “…Pesticide-related illness is an important cause of acute morbidity among migrant farm workers in California. A few categories (organophosphates and carbamates, inorganic compounds, and pyrethroids) account for over half of the cases of acute illness…Growers should be educated about alternative forms of pest control and incentives should be provided to encourage their use.” Chlorpyrifos, a chemical linked to lowered IQ and higher incidence of ADHD in children, is also sprayed on 59 percent of apple orchards in the U.S., endangering the general public and the children living in those rural areas. Not only is apple pie American, so are apples. The third most consumed fruit in the U.S. next to oranges and grapes, apples generate $2.2 billion a year. 350,000 acres in the U.S. are dedicated to growing apples, and apples can be grown in all 50 states, although 60 percent of them are currently grown in Washington. With this in mind, organic orchards currently account for only 6 percent of apple acreage, even though organic apples are one of the most popular organic fruits. Of the 21,000 acres of land in organic apple production, 13,000 are in Washington and 3,000 are in California. Now, if each person in the U.S. ate only a few more organic apples each month, that would translate into more opportunity for farmers to convert to organic growing methods. And because the ubiquitous apple grows in all 50 states, this means there is also the opportunity to increase local organic farming as well, allowing more farmers to generate income in their own communities. But they cannot do it without our support. Apples are more filling and help you sustain energy longer than bananas or even eggs. They

are low in calories and rich in dietary fiber, which helps prevent absorption of LDL, or bad cholesterol, in the gut. Apples contain impressive amounts of vitamin-C and beta-carotene and is a good source of B-complex vitamins such as riboflavin and thiamin. An apple a day can do far more than just keep the doctor away, especially if it’s not laced with all those nasty, deadly pesticides. For the third year in a row, apples topped the Environmental Working Group’s “Dirty Dozen” list, which identifies the most pesticide-laden fruits and veggies in the U.S. Produce topping this year’s “Clean Fifteen” include asparagus, avocados, cabbage, and cantaloupe. Dirty Dozen: Apples, Strawberries, Grapes, Celery, Peaches, Spinach, Sweet Bell Peppers, Nectarines (imported), Cucumbers, Potatoes, Cherry Tomatoes, Hot Peppers.

GRAYBEARDS Continued from Page 3 galities. Your talent is gathering people.’ So I called a meeting basically by word of mouth at the Yacht Club,” Stathis said. “I just really thought it was a great idea, especially with what had happened between September 11th and the plane crash (Flight 587, two months after 9/11),” Keenan said. He had played basketball in the league for years prior. Stathis was appointed the first president, John Cosgrove, an accountant, was named treasurer, and Rick Horan became secretary. A preamble was drafted which in part states “…We dedicate this organization’s name and further declare our purpose to enhance the lives of others…to promote an interest in our community; to help those in the community in their time of need, to promote the development/education of the youth of the community and to promote a deeper appreciation of Americanism in the community.” “Everybody was feeling different emotions,” Stathis recalled. “As a group of men we wanted to help people in the neighborhood that was affected by it, which was everybody. But we figured there was a lot we could get accomplished. There was no specific game plan.” Over the years plans have indeed been drawn up and the Graybeards assist Rockaway in a number of ways. “We’ll help people who were in financial trouble,” Keenan said. “We’ve done food drives, we have an annual blood drive.” One of the group’s most prominent endeavors is the Spring SpruceUp, originally thought up by Chris Boyle, according to Stathis. “We found a family in the neighborhood whose house was in disrepair. If I’m not mistaken it was a single woman and we went over there with like 50 guys and we painted the house, put in windows, did a lot of work.” In 2015 the SpruceUp assisted an elderly woman living on Beach 119th Street, and the members chipped in to do yard work and other house-cleaning measures. “They’re usually found through word of mouth. ‘Did you hear about that woman, they could

THURSDAY, JANUARY 28, 2016 use a little TLC,’” Stathis said. The Graybeards also retain roots to their hardcourt heritage by inviting the Harlem Magic Masters, a Globetrotters-type troupe, to entertain community kids. Following Hurricane Sandy the Graybeards once again answered the call. “During Sandy we raised a lot of money and through donations gave aid to a lot of people in Rockaway, Broad Channel, and Breezy,” Keenan said. Stathis estimated the organization raised approximately $1.4 million post-storm. Their efforts were profiled in a number of local and national news outlets including PIX11 and MSNBC’s Morning Joe. Stathis said that around 250 men have participated in the Graybeards since 2001, and especially thanked one woman, Mary Tufts, for her efforts in grant-writing. “She wrote one for us and The Robin Hood Foundation gave us a sizable grant, $250,000. We always used to work basically out of my dining room but that allowed us to open up an office on 129th Street.” After 13 years as head of the Graybeards Stathis decided to step down in 2014. “I left ConEd after 31 years and the lights are still on,” he joked. “It’s a lot of work and time-consuming to be president but you have so much help. I don’t recall ever asking for help and someone saying no. That makes it a lot easier when you know that you have people that you can lean on to get the job done.” The group’s major fundraiser effort is their annual dinner dance held at Russo’s on the Bay. Every year they honor significant community members and in 2016 the Graybeards will commemorate Monsignor John Bracken of St. Francis de Sales and Gerry Casey, an FDNY Medical Officer and ER physician who has served with the Navy in Afghanistan. More information about the dance and other ways to donate can be found at http://thegraybeards.com/. “It’s been very rewarding,” Keenan said. “There’s a ton of really good people who volunteer their time and help people who are in need.”

surf for the first time.” Cori describes Beach 92nd as a block in constant transition. “The interesting thing about 92nd, is it used to have nothing but summer boarding houses. Now right next door is a condo. Where that condo used to be there were board-

to do what I had to do though. It was bittersweet. We’re here because of Sandy but there was a lot work to get back.” The gym has been a resounding success since then, however. “We’re happy to be here, happy to have this huge facility, helping people realize what they want to do with their lives,” Chris said.

Beach 92 with recent snowfall ing houses and each one would have 40 or 50 rooms in it. So there would be 50-100 kids every summer and they would all play in the street.” Prior to the construction of Peninsula Library there was a school that had a baseball field which stretched on to the block. “So we had our own baseball field up until the 1980s,” Cori said. “We had full nine-on-nine baseball games after we were done being on the beach.” Sam Fleischner, an accomplished filmmaker, moved to the block six years ago and took over a garden on 92nd and Holland from Bill Smith, who tragically died shortly after Hurricane Sandy. “He would hang out with his friends, smoke cigarettes, and sell stuff, kind of like a daily yard sale,” Fleischner said. “I’ve been living across the street from the garden for about six years, so the first two summers or so I had a little garden plot.” The property was recently foreclosed upon and Fleischner and his partner bought it, transforming it into kind of a community garden. “It’s kind of a sanctuary and a peaceful place to spend time.” Following Hurricane Sandy the Romulos lost both their home and their business. “Going back into the city as an instructor, we wanted to go away from that life,” Chris said. “I had

The Romulos have seen positive change come to the block. “Every summer that we’ve been here more and more people start coming out. You see obviously they’re not locals. Every year it’s just gonna get more and more traffic from the outer-boroughs. We had a couple come by that were from England just cruising around Rockaway,” Chris said. Cori has commended the changes in both business and people, especially highlighting his block’s racial diversity. “I think it’s extremely diverse and it’s a beautiful thing,” he said. “When I was a kid it was an all-white block. I’m so impressed with how well people get along. A lot of the time for years during the late ‘80s people were here because they had to be here. Now they are here because they want to be.” A prominent advocate for Rockaway issues (“You have to be the change you want to see”), Cori sees his block improving yearly. “With the snowstorm this weekend the fact that I couldn’t go to UMA’s, Rockaway Roasters, or Thai Rock I was like ‘Wow, this really sucks!’ It’s just great having these new places. You can’t be bored anymore.” We’ll continue to feature other blocks throughout the year. If you’d like to talk about what makes your block special, contact the author at dylan@rockawaytimes.com.

By Artie Wallace

I hope everyone made it through this week’s blizzard safely. This week’s project may help you plan for the next time you’re going to be stuck in the house for a few days. Tired of that old wallpaper and ready for a change? Let’s focus on taking it down and prepping the wall for paint. Here is a list of the things you’ll need: Plastic drop cloth (3 mil or thicker), Serrated scoring tool, Safety glasses, Rubber gloves, Wallpaper stripper, Plastic paint tray and a foam roller, 4” and 6” scrapers (drywall knives), Thick garbage bags, Large sponge and bucket for water, Spackle and a Fine sanding sponge. Wallpaper is sometimes applied over old wallpaper, so stripping down to the bare wall can take a lot of patience. The key to removing wallpaper is

Page 37

Wallpaper Removal in dissolving the glue with the stripper. First: Spread out the drop cloth to protect the floor. Then run the scoring tool in a circular motion over the wall this will create small holes in the wallpaper that will allow the remover to get absorbed by the glue. Second: Wearing your safety glasses and rubber gloves, pour some wallpaper stripper into the plastic paint tray and use the roller to apply the stripper onto the wall like you’re painting it, be sure to saturate it. The stripper will seep through the holes and dissolve the glue. Let it sit for the recommended time according to the instructions for the stripper you bought (time may vary with different brands). Third: Use the 4” scraper to peel away the paper and throw it away. Be careful to do as little damage to the drywall as possible as you scrape. If there’s more

than one layer of wallpaper, you might have to remove them one at a time. (Repeat second step if needed). Fourth: Using a wet sponge, completely clean off any remaining glue. Allow at least 24 hours before repairing any damage to the wall. Fifth: Using the 6” scraper, apply Spackle to the damaged portions of the wall (completing small areas before advancing to the next area). Apply a little extra and in even strokes remove excess Spackle. Let it dry overnight and repeat if needed. Sixth: Sand in a circular motion, making the repaired section smooth with the wall. Repeat fifth and sixth steps as needed until the wall is smooth and ready for paint. Tell me what you would like to read about in future DIYer articles, email me at rocktimesdiy@ gmail.com

Shrimp and Sautéed Spinach By Sharon Feldman (serves 2) Ingredients: 1 pound of cleaned, deveined and shelled large shrimp 2 1/2 tablespoons of olive oil 1 1/2 tablespoons of Simply Asia Sweet Ginger Garlic Seasoning 1/4 cup dry white wine 3 cups of fresh spinach Directions: In a medium skillet, add 1 tablespoon of olive oil and heat until a slight shimmer occurs on the surface. In a separate bowl combine the shrimp, 1 tablespoon of olive oil and the sweet ginger garlic seasoning, tossing lightly until shrimp are thoroughly coated. Add the shrimp to the hot skillet, quickly sautééing until they are cooked and turn opaque. Pour in wine to quickly bubble and deglaze the skillet, scraping up the delicious brown “bits” on the bottom. Remove shrimp to a small bowl and cover to keep warm. In the same skillet, add in the final 1/2 tablespoon of olive oil and toss in the spinach, quickly stirring until the leaves are just wilted. Throw the shrimp back in for a final “toss”, then plate up on a small serving dish.
