M

achu Picchu became one of the 7 New Wonders of the World in 2007, and interest in hiking to this lost city became a must-do activity for many people, myself included. One option is to do the four-day trek along the Inca Trail, but that wasn’t going to work for me. I had spent most of my time on a volunteer vacation in Cusco, Peru, so, due to limited time I hopped an early afternoon train of the Cusco-Machu Picchu railroad for the 4-hour train ride up to a small town at the base of the mountain. I spent the night at a cheap, but decent hotel. There was a flyer in the room about soothing, miracle, hot waters a block away. So, I took a bath in the bubbling hot springs with 12 perfect strangers. I dined on a glass of wine and a scrumptious pizza that I watched bake in a huge stone oven. The next morning, a bus whisked us tourists halfway up the mountain. The rest of the way we hiked to Machu Picchu, at least a mile straight up the side of the mountain. I took the guided tour and marveled at how the Incas were masonry geniuses. They built a city out of these gargantuan stones. Each stone was so well matched to the next one that they didn’t even have to use mortar to fill in between them. Some people believe that mystical energies flow from its stones. Just in case they’re right, I made sure I touched a few. When the tour was over, I explored on my own. I found a quiet, tourist-free area where I could look over the gorgeous green canopy of the jungle and up at the mysticallooking clouds surrounding the mountain peaks. A blanket of peace enfolded me. I prayed for divine guidance and felt a sense of spiritual rejuvenation. Here are 5 reasons I believe hiking Machu Picchu and/or the Inca Trail should be on your travel bucket list.

1. Step into history – Machu Picchu, The Lost City,was built circa 1450 and is the most recognized site of the Inca dynasty. It has become the most popular tourist attraction in Peru. As such, it is in danger of being commercialized, with a new hotel and cable car on the horizon and too many tourists. You should get there while it’s still in great condition. 2. Point and shoot moments – Take your camera to capture the mountaintop views, with mystic clouds circling their peaks and the gorgeous jungle canopy in the sacred valley below that I mentioned earlier. 3. Marvel at the Incan Architecture – How did they move those gargantuan stones? And why build it in a hidden spot in the South American jungle? It’s a mystery. Some believe it was super natural intervention. Go visit and form your own opinion. 4. Commune with Spirit – Feel the mystical energy that many people believed flow from its stones. Or like me, find a quiet place to speak with your creator. 5. Awe Inspiring – Hike to the top for the 360-degree, awe inspiring view. If you can’t get to Peru, no worries. Take one of the other 10 inspiring mountain hikes or numerous bike tours featured in this issue. It’s Spring, go out and play together.

or couples who enjoy biking, taking part in a bicycle tour can change the way that you see traveling and reaching a destination. Instead of rushing through, bicycle tours for couples give you the time to notice small details like the way that the road bends, how the sunlight moves across the water, and the scent of a nearby orchard. There are many bike tours across the United States and the world that couples can enjoy. If you're interested in taking part in one of these experiences, take a look at some of these ideas. BEND MOUNTAIN BIKE RIDE If you and your sweetheart are of the hipster variety, then there’s no better spot than Bend, Oregon. Bend is known for its amazing craft beers and its even better bike tours. Take your time enjoying this tour, loaded with tracks that go through dense forests and dramatic volcanic landscapes. However, while you can enjoy hundreds of the trails, the best part of this experience is enjoying your post-ride reward. Take an afternoon or evening to float in the crystal waters of the Deschutes. Or, for an intimate evening exploring the local culture, take in the craft breweries that make this Oregon paradise famous. One word of caution though. The trails tend to be mountainous and best suited for more experienced cyclists, so beginners may want to make sure that they’re prepared to take on this bike tour.

Haworth Moor to Top Withins Ruins, England As the inspiration to one of the most famous, romantic novels ever written, Haworth Moor is the windswept, rugged scene described in Wuthering Heights, during Cathy and Heathcliffe’s liaisons. The British weather can add to the drama and passion of this landscape but it’s advisable to enjoy this lovers’ hike in warmer months when you’ll get to experience the striking heather blossom that’s synonymous with the Yorkshire Moors. Late summer sees the moors completely carpeted in this pretty purple heather, giving an unusual hue to the ground as you visit the Brontë Waterfalls and then the ruins of Top Withins, allegedly associated with the Earnshaw Home in Emily Bronte’s famous love story.

East Maui Waterfalls and Rainforest Hike, Hawaii One of the most romantic places on earth also has spectacular jungle hikes. From making your island dream of swimming under a waterfall come true to giving you the chance of spotting rare and beautiful wildlife, this tropical walk has it all. On this 2.5 mile hike, you’ll follow streams deep into one of Hawaii’s lush valleys and see several stunning cascades along the way - some over 40’ high! As the water is so clear, make sure you jump in from the basalt rock formations so that you can explore the waterfalls close up. Take a healthy picnic to replenish your energy after this adventurous hiking and swimming excursion.

Stechelberg to Oberhornsee, Switzerland The Alps have long been considered a romantic destination and with an immaculate natural setting and clean, fresh air, there are hundreds of hiking opportunities there. This rewarding hike in Switzerland’s impressive, Lauterbrunnen valley is overflowing with picture perfect grazing fields, mountain flowers, and, of course, snow-capped alpine peaks. After hiking forested paths, over old glaciers and across the Alps, you’ll eventually arrive at the Oberhornsee, where you can freshen up whilst taking in the view of one of Europe’s most well known mountains, the Jungfrau.

Vintgar Gorge, Slovenia With a series of wooden walkways built into the side of the rock, the unique hike through the Vintgar Gorge is a blissfully romantic trip. Close to the fairytale-like Lake Bled, this is a gentle gorge walk that will light up a day out with your loved one. The position of the walkways enables you to really experience the power of the water on this wet and wild Slovenian hike that takes you past the impressive, Šumwaterfall and down through the trees to where it meets the Radovna river.

Joffre Lakes, Canada With three lakes of progressively intense turquoise, hiking in the Joffre Lakes Provincial Park is mind-blowingly beautiful. Secluded and remote, these lakes in pristine British Colombia make wonderful stop off points on a half day hike with your partner as well as ideal places to explore on a weekend camping trip. The color, produced when the sunlight reflects off the tiny glacial particles in the lake, is absolutely stunning and makes a great background for photographs of your romantic hike. With the opportunity to spot great wildlife as well, this is a rugged adventure not to be missed!

Tongario Northern Circuit, New Zealand With wide open spaces and dramatic volcanoes dotting the landscape, this 3-4 day hike will have you starry-eyed in one of the most untouched regions on earth. Geysers, emerald green lakes, and lava formations make for an incredible backdrop to this moderate hike, which is one of New Zealand’s nine Great Walks. This wild place will excite body and soul, and, at about 6,000 feet above sea level, hiking this circuit will literally take your breath away.

Lover’s Leap Hike, USA Lover’s Leap Hike makes a great trip for couples that want to experience some of North Carolina’s finest scenery. Just off the world-class Appalachian Trail, this relatively short hike takes in views of the French Broad River with its fabulous rapids, as well as the views of Hot Springs town and valley, which is a romantic destination in itself. Due to the three rocky outcrops, which afford the best views, this hike offers lovers plenty of opportunities to hold on to each other and will have you wooed in no time at all.

Fira to Oia, Santorini Taking the hilly path from the capital, Fira, to the irresistible Oia, this magnificent walk on the Greek island of Santorini is not to be missed. You and your partner will be able to take in breathtaking blue vistas of bright sky and crystal clear water, along this ancient trail on what is widely recognized as one of the most romantic places in the world. Set off in the morning to avoid walking in the intense heat and arrive in whitewashed Oia in time for a delicious seafood lunch in one of its many restaurants – with a sea view of course.

Snæfellsjökull Glacier, Iceland As a place full of mystical and magical feeling brought on by unbelievable natural scenery, Iceland is full of wonderfully isolated spots for adventurous couples. To get away from it all, just the two of you, take a full day hike up to Snæfellsjökull Glacier and as the sun goes down, take in the panoramic view of twinkling Reykjavik and Breiðafjörður fjord. Standing on top of the glacier will feel like you’re standing on top of the world. Bring a cozy blanket and hot cocoa for a truly intimate experience.

ne of the best places in the world that people don’t talk about is El Nido, Philippines. It is a great destination for couples, friends, and anyone looking for a quiet or romantic getaway. Whatever your heart desires, El Nido offers it.

There are boat tours, kayaks for couples, secluded beaches, and hundreds of resorts with hammocks to just relax and forget everything else. The resorts offer a great number of services. You can get a massage at almost all times of the day, get fresh mangoes delivered to you every morning, or walk to nearby corner shops selling them-and best of all, it’s super cheap. The Philippine is not an expensive country to travel to. It’s perfect for the budget traveler and the high spender.Whichever category you fit in, there is something for everyone. From the clear blue water to the almost year round sunset, there is no time of the year that El Nido is not a paradise.

In the evening we went to a restaurant by the seaside where we enjoyed live music and watched the wave as we ate our dinner. Couples can bask in the sun for hours then cool off with fresh juice that’s made right in front of you. It is a destination that’s unforgettable and one I keep going back to. My fiancé and I jumped on the bus from Palawan to El Nido because we wanted the local experience. The bus was hot and murky but we got to see the countryside and experience what many tourists do not get a chance to. We then booked ourselves into a resort upon arrival. We did not make a reservation because in most cases there is no need to. Immediately we were shocked at how inexpensive it was. We got a huge bed and bedroom with a balcony that had two hammocks on it and two small tables. We hopped on the hammocks and kicked our our shoes off to enjoy the sunset. The next morning we had an elaborate breakfast presented to us that included fresh mango juice, bread, eggs, tea or coffee, and cheese–and whatever else we wanted was given to us. After eating, we took one of the three wheeled bike taxis that are very popular on the island for our snorkeling adventure. The water was so blue and clean with white sand and fish swimming around us that we did not want to leave. In fact we loved it so much that we ended up taking the tour again in the seven days we spent there. The tour included a lunch of fresh fish, mangoes, and other fruits with rice and soy sauce. It was one of the best grilled fish I had ever had.

A Love Affair with Yourself “Loving oneself is the beginning of a lifelong love affair,” says one of my favorite quotes from the book, Love 101.In pop culture love relationship books directed at women (over 35,000 of them!), too often, the focus and attention is on loving the other –alias The One, The Soul Mate, Mr. Right, or A Husband. There’s little or no regard for first attending to, fortifying, and establishing healthy love in one’s existing relationship – the one with self or love first being in place in one’s primary human relationship, the human relationship you’re already in and have been in the longest, the one with yourself. All too often the obsession presented in traditional love relationship books and magazine articles directed at women is externally focused on how to find The One, how to express your love for him, how to keep him, flirt with him, communicate with him, or “light his fire.” How can we overlook such an important foundational relationship when it is the very basis from which our experience of a love relationship with another arises? How can we overlook such an important foundational relationship when our ability to love ourselves translates directly into our ability to love another self, especially in the domain of romantic relationships?

What Love Isn’t We must remember that love is not a thing to be hunted down, sought out, or found in “The One,” contrary to the lyrics of popular love songs, romance novels, and “chick flick” movie plots. Love is a

powerful force, available to us internally. Love occurs first as an experience within, and then expressed, shared, and extended externally, with another. In this culture, we’ve confused selflove with self-absorption, or self-love with selfcenteredness,while actually, what occurs when self-love is NOT in place is being overly self-absorbed, or overly selfcentered. So one of the greatest antidotes to being overly-selffocused, or overly self-conscious, is true and authentic self-love.

Becoming More Self-Loving How do you “raise” the self-love bar to become even more self-loving, and hence better loving another? The answer is through learning how to truly experience and express love within oneself and for oneself, first. In my own life, and in my transformation and empowerment work with women over the past 20 years, I have come to realize that healthy self-love is based in 1) relating to yourself in a way that is grounded in being a responsible caretaker and wise guardian of your own body and being, BEFORE attempting to take care of or give love to others; 2) knowing, valuing, and honoring what nourishes, fortifies, and renews your mind, body, and spirit; 3) wisely managing your energy, boundaries, and choices; and 4) engaging with love relationships in a way that is self-honoring and self-respecting. When you love self, you give and live from a place of self-fullness, not selfishness. You understand the critical

importance of first having an esteeming, loving, and self-valuing relationship with yours truly.

The Fruits of Self-Love are Many The fruit of healthy self-love comes in many forms and sets the stage for having JUICY romantic relationships and marriages. JUICY relationships and marriages are those that are mutually and deeply satisfying and fulfilling. They have a healthy flow of communication, energy and passion, and the connection is strong and vital. When self-love is present and onpoint, it is also a “win” for the other. You are low-maintenance emotionally; you offer, share, andcontribute more than you take, require, or need; and it is easy to experience joy when in your presence. Yes, the easiest person to love is one who already loves herself, and the easiest person to be loved by is one who already loves herself and easily shares with you from her overflow.

CREATING THE ULTIMATE ROMANTIC CANDLELIGHT DINNER FOR TWO By Alex Simpson

When it comes to romance, there is seemingly nothing better than sitting down to a delicious candlelit dinner for two. Many people choose to dine out at fancy restaurants in order to create the perfect romantic ambience, but in reality, dining out isn’t always the answer. Furthermore, it can be pretty expensive, especially if you fancy a few glasses of wine and have to take a taxi home. Rather than dining out at a fancy restaurant, why not do something a little unique and instead cook a delicious romantic meal for you and your partner to enjoy in the comfort of your own home? Here we give you a few tips to help set the mood, plus we provide a delicious main course recipe and wine suggestion to ensure your evening runs as smoothly as possible.

Tips to help set the mood – Before we get down to the actual cooking, you will first need to take the following steps to ensure everything is perfect for when your date arrives.

CANDLES – No candlelit dinner for two would be complete without, well, candles. Make sure you not only have candles at hand, but that they actually look nice and are well presented in nice looking candlestick holders perhaps. Light them 5 minutes or so before your date arrives which will instantly impress him or her when they walk in. Make sure you turn your main lights off as you want a subtle amber glow in the room, not too light, and not too dark. SET THE TABLE –You’re cooking a romantic dinner for two here so there will be no eating off your laps in front of the TV. Get a nice looking tablecloth, a table runner, and place your candles strategically on the table. Use matching cutlery that looks nice, and don’t forget your wine glasses. Perhaps flowers as a centerpiece could also be used, if you have the room. MUSIC –You want calm, soothing, and romantic music so simply do a little research and purchase albums or tracks that tick all of the above boxes. You want the music playing quietly in the background.

STEAK BÉARNAISE Here’s a steak béarnaise recipe that tastes amazing and actually doesn’t require too much time in the kitchen as the key is the prep beforehand. Ingredients

For the sauce

• 2x ribeye steaks • 3 large peeled potatoes parboiled, cooled, then chopped into thick chunky wedges • Fresh peeled carrots, cut into batons • Fresh green beans • A large knob of butter • 2 cloves of crushed garlic • Pork fat for deep frying • 6 x onion rings (you can make your own with a basic batter mix but we’ll cheat here and go with ready made)

1 Tbsp white wine vinegar Half a finely diced shallot 1 Tbsp of water 3 crushed black peppercorns 1 Tbsp fresh chopped tarragon (save the stalks) 75g of melted butter 1 large free range egg yolk Salt and pepper to taste

Begin by making your sauce. To do this, pour the sauce, heat the vinegar, water, crushed peppercorns, tarragon stalks, and shallots into a pan and heat until roughly 1 tablespoon of liquid is left. In a food processor, add the egg yolk, vinegar, and tarragon reduction and blend until the mixture is frothy and light. Turn the speed of the processor to low, and then slowly trickle in your melted butter. The sauce should turn thick and smooth. Just be careful not to overbeat the mixture. Add salt and pepper to taste, stir in the chopped tarragon leaves, and transfer to your serving dishes. Now, using a deep fryer or a deep pan, heat your pork fat blocks and melt. Once the temperature reaches 180 degrees Celsius (356 Degrees F) add your potato wedges and fry for 6 – 8 minutes, until golden on the outside and fluffy in the middle. Whilst they cook, bring a pan of salted water to a boil and cook your carrots and green beans to your liking. Once they’re cooked, turn off the heat but leave the lid on the pan to keep warm until serving. Now it’s time to cook your steaks. In a large skillet, add a trickle of oil, and heat the pan until smoking (make sure you use your extractor fan). Season your steaks with salt and pepper on both sides, then, one at a time, fry them until cooked to your liking. Generally, rare takes around 3 minutes on each side. Add a further 50 seconds for medium rare, medium, medium well, etc. Only turn them once whilst cooking, and leave the heat on high. Once cooked, set the steaks to one side and leave them to rest on a clean plate for at least 5 minutes. Drain your wedges into a clean bowl with a paper towel and sprinkle with salt. Next, fry your your onion rings for 3 – 4 minutes in the same pan. Drain the water from your the vegetables, add the garlic and butter, and place the lid back on to steam for a minute or two. Give them a stir to ensure they’re coated, and neatly begin plating up. Place 3 onion rings in a neat pile on each plate, neatly arrange your wedges in a pile, do the same with your veg, then in the remaining space, carefully lay down your steak. Drizzle your sauce over the steak and you’re ready to go. Serve this dish with a 2003 Collazzi Toscana wine as its full-bodied ripeness really complements the richness of the meat and the sauce.
