EDITOR'S NOTE

'd like to introduce this issue by talking about greatness. There are those who aspire to it, those who help to cultivate it in others and those who inspire us with their own great achievements. I feel very fortunate that in creating ROSE & IVY, I’ve had the opportunity to meet and work with all of these kinds of people. Long ago, before I had the idea of starting my own magazine, I knew I wanted to contribute an element of greatness to the world, but like so many of us, I didn’t know exactly what that meant. But by keeping my eyes and heart open, eventually I realized that I wanted to create greatness through beauty. What I've learned over time, though, is that beauty doesn't always have to be about something grand or immense. Don't get me wrong—things like old European architecture or a couture gown are undeniably beautiful. But beauty can often be found in the smallest things, and in unexpected places. For this issue, I had the great pleasure of working with a talented group of people who, just like me, have a passion for beauty. Take, for example, Sarah Ryhanen, whose new shop Saipua in Redhook, Brooklyn, is profiled in this issue—she bucks the trend of stark modern-day retail with a space that is decidedly feminine and perfectly imperfect. Paris is always on my mind, no matter the season, and as they say, “Paris

is always a good idea,” so I am thrilled to bring you a piece called Dreamers Wanted, in which Jean-Louis Deniot, a Parisian interior designer to know, penned a love letter to the city that constantly inspires him as well as so many others. Writer Cara Gibbs also chatted with interior designer Eileen Kathryn Boyd, who offers up an insider’s guide to the best in Parisian design for the bon vivant. Often, the best part about travel is stepping off the proverbial beaten path. In The Great Escape, we transport you to the road less traveled in Thailand—sandy white beaches included. And speaking of travel, Iceland is a faroff place that I never dreamed I’d have the chance to visit, but recently I found myself exploring its otherworldly terrain, surrounded by exquisite landscapes and majestic horses—you can read more about my personal adventures there in Untouched Beauty. Circling back to this idea of greatness—I profoundly believe that we all have the ability to achieve it in some way, shape or form. I hope that this edition sparks a curiosity inside of you to pursue it on your own terms. Cheers,

ashion designer Johanna Ortiz has forged a unique design path full of feminine ruffles, layers that look like they belong in a confectionery and colorful, eye-catching prints. Based in her hometown of Cali, Columbia, she transports women through her clothes into her impossibly beautiful world inspired by her homeland. Her spring collection brought her to the rainforest, which was translated into prints with palm fronds and pieces in shades of jungle green. She talks to ROSE & IVY about her design process, her love for her country and the Columbian places that she frequents the most.

You are from and based in Colombia. How does the beauty and landscape influence your aesthetic? All of my inspirations come from Colombia, it's where I grew up and it is where I live. Columbia to me is festive, effortless elegance and the people are always up for a little fun! It is part of our Latin heritage – it is the mixture of cultures that makes the diversity so rich. I love working with volumes that are reminiscent of the Colombian landscape and the joyful spirit of the people. When I think of ruffles, I also think of salsa music and Pacific coast nights, which are full of dancing, color and heritage. There is also a natural sexiness and flirtation, which I find very feminine.

Would you ever consider moving to a major city like New York or Paris for another point of view? I was born in Cali and that is where my family lives – it is home! Having my atelier in my hometown is the way I contribute to society and support the local economy by teaching what I have learned – it is a way to give back after receiving so much from this city. For me, Paris and New York are better for visiting, but traveling is a way to keep my creativity flowing; it works as a constant source of inspiration for my collections.

The Johanna Ortiz woman is effortless, festive and fun. If you could offer your younger self some advice what would it be? Stay true to your own aesthetic while celebrating femininity.

You create beauty through feminine silhouettes and details. But in a less tangible sense, how do you define beauty? Beauty is the true essence of yourself and a spirit captured in a sublime moment.

JOHANNA’S COLOMBIA

For a memorable meal, I go to La Vitrola in Cartagena (Calle Baloco no. 33-201). When it comes to shopping, my favorite boutiques are St. Dom in Cartagena (Calle Santo Domingo 33-70) and Michu in Cali (Calle 2 Oeste # 2-38). If I need a beach escape I head to Cartagena or San Andres. My favorite city is Cali, but Paris should be on anyvisitor’s list of places to visit. I love Colombia because it means craftsmanship, hands-on techniques and inspiration from nature. Colombia is home to more than 100 different ethnic groups who inspire the whole country on a daily basis. Local designers get to engage and experiment with different materials and techniques. I love the diverse landscapes, the rich fauna and the weather, they form the perfect canvas for exquisite design.

A soulful conversation with Anit Hora, the founder of Brooklyn-based natural beauty line Mullein & Sparrow.

ou were born in India and moved to New York City when you were young. How was it adjusting to such a different environment? The move here was impactful. I have always been extroverted and friendly, so it may have seemed to the outside world that I adjusted quite quickly, but in fact, I’m not sure the adjustment period ever really ends. Without intending any graveness, it is an uprooting experience and you’re always sort of harmonizing these two sides that make you up as a person, especially when you’re young. I do feel incredibly fortunate that my parents brought us to New York where there is so much diversity. Being or feeling different doesn’t automatically qualify you as being outside of things; the very pulse of New York is different.

Sometimes in life, we think we know what we want, until we learn through experience that in fact it isn’t what we want. Would you say that’s true of your early career in fashion design? I wouldn’t say fashion design became something I didn't want, because there was no aversion to

because ultimately people all share the same heart. Once you make that deeper connection, you start to belong to a place and everywhere and anywhere can become home. You become a citizen of the world.

Did you always envision becoming an entrepreneur, if not specifically a beauty entrepreneur? Yes, I think I always envisioned becoming an entrepreneur, but maybe I wasn’t always completely aware of it. I believe somewhere along the way, I always knew that I would want to do my own thing. In terms of being a beauty entrepreneur specifically, that just unfolded naturally from my own wants and needs as a consumer. When I was younger, makeup for brown women was not as widely available as it is today. I had to really search and I learned a lot about quality and where things come from. As I got older and gravitated towards natural beauty and skincare, the same discernment was very much called for! I quickly realized that a lot of products that were packaged as green beauty were in fact far from it and the companies that were actually organic and green were not formulating with efficacy. It only made sense for me to start making my own products.

What was your first creation when you started blending skincare? Did it begin as a hobby and then slowly build from there? The first product it; I was just being drawn to other things as well. For the most part, I loved my time in the design world and I am still very much drawn to it. My fashion career wasn’t perfect, but I was starting to find my footing and get really comfortable in that world. I could have easily let that become my whole career, but for some reason that thought brought up some deeply restless stirrings of my soul. I decided to take a complete left turn and explore life in an open-ended way. Maybe I wasn’t ready to be comfortable yet? Whatever it was, I look at that time of my life as a necessary catalyst of sorts, which inadvertently set the stage for who I am still unfolding into.

When you left that world, you traveled quite a bit. Where did you go and what did you learn about the world through your travels? I backpacked extensively throughout South America and even settled in Buenos Aires for a bit. What I learned about the world is simply that one can belong to the whole of it. This extensive travel reiterated for me that national identities and culture, with great aspects to share and celebrate, are just the beginning of connection. Beyond these things, beyond the unfamiliar sounds of a new language, the same words are being spoken, the same sentiments being expressed, the same desires,

I made for myself was a face serum. I had already received my esthetics license and was pretty deep into the herbal world. I felt underwhelmed by the options available on the market. I knew a good moisturizer was the cornerstone for healthy skin, so I decided to make one, knowing that I could trust myself not to cut corners on the ingredients. It was more than a hobby; it was an extension of the self-care that I had started implementing in my life, like practicing yoga and Ayurveda. I began making small batches for friends and loved ones because I was genuinely in love with what it was doing for my skin. People eventually started asking if they could buy it for their sister, mom, or friends—so I kept making it. Soon enough, I realized that I really enjoyed what I was doing. I enjoyed the study of ingredients, the formulating, but especially knowing exactly what I was putting on my skin and being able to see the results from my labor of love. How did you come up with the name Mullein and Sparrow? Mullein was the first herb I learned about when I started studying herbal medicine. It’s a great remedy for respiratory issues and my mom suffers from asthma, so mullein tea was a revelation and thus remains a

The “natural” beauty category is flooded with products that are anything but natural. What standards do you adhere to when formulating? Mullein & Sparrow is organic anywhere it is possible and wildcrafted where it is not. There are also no preservatives or chemicals. And while we do take great care to maintain these standards, it’s important to acknowledge that good ingredients are only the beginningsof good skincare. After you have great ingredients, you want to adhere to certain standards that keep efficacy in mind. This means that the formula considers not only that the ingredients are organic, but also that they are the appropriate ingredients for the usage indicated and in quantities that would be effective. In other words, not just any combination of organic ingredients will do. At Mullein & Sparrow, every formula has my esthetician’s license and years of studies in herbal medicine and Ayurveda behind it. We live in a fast-paced world where self-care can often be last on our list. How do you nourish the mind, body and soul? What advice can you offer to others? Like everyone else, I struggle with this one. Despite knowing the real importance of self-care, it does sometimes get lost in the shuffle of trying to accomplish 100 different things every hour of every day. But I remind myself that it is also not about beating yourself up or feeling guilty about missing yoga, because it

becomes self-defeating at that point. Some weeks, it’s easier to be in the flow of good healthy behaviors and other weeks, you’re never getting enough sleep. Life happens and these things are a part of finding, understanding and appreciating balance. Outside of the rituals of self-care resides actual self-care, where you accept yourself as you are, always. So I guess my advice would be to use the rituals, but don’t get stuck in them; they’re merely tools to the ultimate goal of self-acceptance. Please share with us your skincare routine! fine fragrance is truly a work of art, so it is only fitting that it should be showcased in an equally artful package. So why not pour your favorite perfume into a beautiful flaçon and display it on your dressing table? There is something wonderfully nostalgic about dabbing a scent on your pulse points versus spritzing it from an ordinary spray bottle. ntering into the realm of Saipua is like stepping into an ethereal world of beauty. Sarah Ryhanen founded her Brooklyn-based floral design company in 2006, not long after she received a bouquet of flowers for her 25th birthday. Inspired by their beauty, she found herself thinking, “I can do that,” and that she did. Ten years later, she has won over the flower and design world with her wild-crafted arrangements that resemble those found in Dutch still life paintings, as well as her adorned tablescapes that transform ordinary events into extraordinary fêtes. Saipua recently opened the doors to its new sun-drenched Redhook shop, a place that is firmly rooted in the present but with a definite nod to the past—design elements include marble columns and vintage kimonos dangling from suspended copper racks.

The process of transformation took approximately one year, resulting in a space that pairs a feminine aesthetic with a bit of “unraveling,” as Sarah puts it. It is her response to the more prevalent kind of retail environment that favors strong lines and a more stark, masculine interior. At Saipua, every nook and corner is crammed with items to delight the eye, whether it be a whimsical bonsai tree or colorful candlesticks. The walls are tinted the palest shade of pink, but with delicate remnants of the original tilework tracing down to the floor. The boutique is heavily stocked with pottery, made on the premises by in-house ceramicist Object and Totem, as well as Saipua’s famed handmade soap, created by Sarah’s mother in Peekskill, New York, and wool yarn from the Icelandic sheep they raise at their very own World’s End Farm in upstate New York. f you've ever considered a trip to Thailand, the thought of the nearly 30 million tourists who travel there each year just might deter you from making the trek yourself, especially if you're looking for a restful and relaxing vacation. But who can resist the lure of epic landscapes, picture-perfect coastlines and delicious – not to mention inexpensive – food cooked fresh daily in the local markets? Although Bangkok, Phuket and Koh Phi Phi are undoubtedly three of the most popular destinations on many travelers' bucket lists, I wanted to seek out places that aren’t completely overrun with tourists but still capture the unspoiled beauty and charm of the essential, authentic Thailand.

ua Hin is less than three hours from Bangkok but feels worlds away from the bustling metropolis. It's free from the high-rise buildings that crowd the beaches of the capitol but full of old-world charm and plenty of mustsee attractions: elaborately decorated temples, lively night markets, a royal palace that is open to visitors and the country's first-ever train station. During the day, you can choose between exploring the city or enjoying a relaxing day on the beach, a prelude to the white sand beaches of the islands. The city's narrow, winding streets are filled with shops and restaurants that

are perched on top of stilts that overlook the water. The restaurants serve fresh seafood at incredible prices; one place to try is Meekaruna Seafood (26/1 Naresdamri Road), known for its large portions and lovely beachside location. Looking to unwind even more? Check out Sanae Beach Club, which serves poolside cocktails and boasts incredible ocean views. In the evening, don't miss the fun-filled Hua Hin night market. It's packed with vendor stalls selling locally-crafted items such as handmade bowls, servingware and leather goods. Music provided by live bands will put a skip in your step, and the food options are virtually endless – you'll want to try some of everything. But be sure to save room for dessert. Try the mango-flavored sticky rice, as well as the roti, a thin pancake filled with egg and banana that is cooked in a wok, topped with condensed milk, then dusted with powdered sugar – a luscious treat.

f you’re looking to get away from cities altogether, Prachuap Khiri Khan is the place to go. Located about 150 miles south of Bangkok in the Malay Peninsula, it offers memorable hikes, long stretches of pristine seashore, romantic sunset boat rides and some remarkably friendly monkeys. It is also an ideal location to rent a bike and discover the area on two wheels. As Ernest Hemingway once said, “It is by

Once inside the massive base, you'll find a wealth of attractions to keep you busy, including a museum dedicated to the history of the Royal Thai Air Force, the Historical Park, a golf course, driving range, and the famed Ao Manao beach, undoubtedly the main point of interest for visitors. You can also make friends with the resident dusky leaf monkeys by feeding them corn directly from your hand. Spend some time lounging on the beach, and be sure to stick around to watch the sun set between the islands.

any travelers like to end their Thai vacations by visiting destinations in the south. Koh Phi Phi island, just off Phuket, is teeming with tourists, which makes it nearly impossible to get the beaches to yourself. Instead, check out Koh Lanta, just off Krabi, for a taste of what the islands were like ten years ago before the tourist boom. If you only have a few days, be sure to spend at least one of them at sea visiting islands like Koh Ha and Koh Rok. Sail from the mainland and jump right from your boat into the pristine blue waters of the Andaman Sea. Snorkel among the vibrant coral reefs as hundreds of colorful fish swim around you. On your second day, rent a scooter (approximately $8.50 for 24 hours) and head to one of the secluded beaches. At the southernmost tip of the island, you'll find the Mu Koh Lanta National Park, where you can hike

the rugged rainforest-covered hills and watch as mischievous monkeys attempt to steal your unattended scooter (but a word of caution: they’re not the friendly variety found at Wing 5). It’s a great place to work up an appetite before heading into the Old Town, where you'll encounter a variety of restaurants that may seem unassuming but are well worth exploring. Try Apsara, just off the main road in town — the entrance leads you straight into the family-run kitchen and out through the back door, where you’ll find a table awaiting you with an unexpected view of the tranquil bay.

y dear Paris, my favorite city, full of constant inspiration, you are such a creative force in the design world; your daringness and democratic drive are simply matchless. In fact, you are the heart of architecture and decorative history – everything emanated from here. What I find remarkable about you, and France in general, is the tradition of collecting and the modernization that occurs with each passing generation, each adding on to an already abundant bundle. Take the family homes found 30 miles outside of your borders, in Senlis for example, the country’s oldest city. Here, eclecticism has flourished as generations embrace your rich tradition of collecting, all the while infusing their own trendy touch. There are so many parts of you that I admire, though I’ve always been partial to the Marais, which for me is the most beautiful, historic area in your realm. A fashion destination unto itself, you’ve managed to foster established labels alongside young experimental designers in stores whose architecture dates back to the 17th and 18th centuries. And it certainly isn’t a secret that you have no shortage of incredible art and museums to see, either. There are always exhibits at the Louvre, the Musée des Arts Décoratifs, Musée d’Art Moderne de la ville de Paris, Palais de Chaillot, Grand Palais, and many more. As is characteristic to you, there really is something for every interest and every type of person here. My beloved city, thank you for the opportunity to work next to truly magical places such as the Louvre and the Musée d’Orsay. It’s where I spend most of my time, at my office on Rue de Verneuil in the 7th arrondissement, surrounded by art destinations, antiques shops and libraries. Thank you also for the marvel that is my favorite restaurant, Le Bistrot de Paris (33, Rue de Lille). I tell everyone that, as far as traditional French bistros go, this is the real McCoy. It still has the same atmosphere and vibe since it opened in 1870, can you imagine that? Unchanged for nearly 150 years! And because you are unfailing in your offerings, when I want something a little more modern, there’s Le Bon Saint

Pourçain (10Bis Rue Servandoni), probably the smallest restaurant in town with only ten tables. Their meats and vegetables all come straight from their organic farm outside of your city limits...wonderful isn’t it? When I’m itching to wander just a little, you provide me with either Les Puces de Saint-Oue, the marvelous flea market just north of you, brimming with eclectic pieces for every budget, or Marché aux Puces de la Porte de Vanves to your south. Amidst your innate magic, inspiring, unique, and exhilarating exterior, I find you are one of the places where I am truly at my best…where I am home.”

Our Guide New York-based Interior Designer EILEEN K ATHRYN BOYD

reatives the world over have consistently flocked to Paris in hopes of bottling some of its famous effervescence for their own life and work. And luckily for those admirers who make the journey, France’s capital city very rarely disappoints. We talked with one such creative, New York-based interior designer Eileen Kathryn Boyd, whose love affair with Paris began when she came to the city during her studies at Parsons School of Design. The then-aspiring artist soon became friends and studiomates with the now iconic fashion designer and acclaimed film director Tom Ford, because in Paris, the ordinary is always somehow extraordinary. Back then, the two were just a pair of wide-eyed architecture students excited to soak up all the magic Paris has to offer, and even to this day, decades later, that sense of wonderment has never left Boyd. “Paris has such a deep and rich historical background and because of that, you can feel the energy in the streets and in the eyes of the people that live there,” explains Boyd. “It’s the way the Parisians do absolutely everything, from tying their scarves, cuffing their pant legs – it’s all done with stylish ease accompanied by an air of living well,” a philosophy she translated into a flourishing design firm, creating spaces and homes often referred to as “livable luxury.” From the best in street fashion and shopping to must-see galleries and attractions, Eileen Kathryn Boyd walks us through her Paris.

Musée Carnavalet is a special place in the Marais district. Opened in 1880, its collections are housed in two adjoining mansions. I’m drawn to it because of its small boutique feel (which is rare as far as museums go) and its presentation of Parisian interiors from the 17th to the 20th century. The art and furnishings are displayed in room-like settings that look out onto formal gardens. carnavalet.paris.fr Perhaps it’s an obvious choice to some, but I can’t tell you how many people tell me they’ve been to Paris without setting foot in the Musée d’Orsay. It’s a mustsee museum housed in a Beaux-Arts building on the Left Bank that was originally built in the late 19th century as a railway station. The museum houses all of the most famous impressionist and post-impressionist works from Monet, Gauguin and Renoir. Plan on spending a good part of the day here. musee-orsay.fr The peaceful grounds of Musée Rodin are also always a must for me when I’m in town. The mansion and gardens are transcendent, and it’s such an inspiring place to walk through. You can feel the genius of Rodin when viewing his famous sculpture The Thinker surrounded by all the seasonal flowers and plantings. Roasted Garlic Aïoli Spread 2 cloves of garlic, in shell 1/2 cup good quality extra virgin olive oil 1 tablespoon Dijon mustard 1 egg

Sandwich, ingredients for one Emmental, five to six thin slices Crusty baguette, toasted if desired Arugula, a small handful Radishes, five to six slices Cucumbers, five to six slices

To prepare the aïoli, preheat oven to 400 degrees. Place two garlic cloves in foil with the skins on, drizzle with olive oil, salt and pepper and enclose in the foil. Bake for 15 minutes or until soft. Let cool slightly. Remove skins and place roasted cloves in a food processor. Add egg, Dijon mustard and beat until combined. Slowly add ½ cup olive oil, beating until mixture emulsifies. Season with salt and pepper to taste. To assemble, slice baguette in half. Place a dollop of aïoli on bread. Layer cheese slices, vegetables and top with remaining bread. Refrigerate any leftover spread and use as a crudité dip or to add a garlic kick to other sandwiches.

B R IE Hailing from the Île-de-France region, Brie is heralded as the "King of Cheeses." A staple of any cheese board, it is prized for its creamy interior and subtle flavor. It combines perfectly with sweet or savory pairings, from berry preserves to buttery pastry.

A medley of earthy mushrooms combine with creamy melted brie in this comforting dish topped with flaky puff pastry and fresh thyme. 1/2 small onion, minced 6 sprigs of thyme, plus more for garnish 4 cups chopped mushrooms of choice (shiitake, cremini or button) 1/4 cup broth of choice or dry white wine 1 Brie wedge at room temperature, sliced into 1 inch pieces 1/2 package of good quality puff pastry, like Dufour Pastry 1 egg, beaten

Preheat oven to 350 degrees. Place minced onions and a drizzle of olive oil in a sauté pan. Cook over medium heat until translucent, about 3 to 4 minutes. Add thyme sprigs and stir to fragrance onions. Add mushrooms and wine or broth. Cook until mushrooms are soft and liquid has slightly reduced. Meanwhile, prepare the pastry. Flour a working surface and roll out puff pastry dough until it is large enough to form top crusts for four individual-sized ramekins. Turn a ramekin over on top of dough and using a paring knife, gently trace around the edge to form top shell of pastry. Repeat until you have four rounds of dough. Divide and fill ramekins with mushroom mixture and top with two slices of brie. Cover with rounds of pastry dough and brush with egg wash. Cut an ‘x’ in the center to allow for ventilation. Bake for 30 minutes or until pastry is golden. Let cool slightly before enjoying. Garnish with a sprig of thyme if desired. Makes four individual ramekins

ow does one begin to describe the otherworldly beauty of Iceland? You can start with the notion that it is the land of fire and ice, a terrain born of natural contrasts. It is a geographical location perched high above Europe; however, it can quickly persuade you as you set out to explore that you are a pioneer who has encountered an extraterrestrial landscape that is yours to discover. My personal journey to Iceland was intimate, surreal and, at times, intimidating. One moment we were surrounded by the most mind-blowing landscape – a sublime glacial lake without so much as a single bird flying overhead to disturb the stillness – a moment of such utter peace and solitude that I wanted to etch it deeply into my memory, to be recalled whenever the pace of New York life begins to overwhelm. The next, we were enveloped by vast, unknown terrains in the form of craggy, moss-covered rocks, or endless stretches of black sand that go on for miles, as far as the eye can see. Then there were the times we found ourselves traveling on the Ring Road, the main highway, and the brightest rays of sun would give way in an instant to torrential freezing downpours that could turn just as quickly to snow. Moments later, the weather would transform again, and we'd see a rainbow painted across the sky, rising above the barren landscape and adding a welcome wash of color. As one local Icelander put it, "If you don't like the weather in Iceland, wait five minutes." Mother Nature takes her time to reveal herself, and the same places can appear quite different depending on the time of day. My travels in Iceland taught me that not only can you enter into the heart of nature, you can enter the very soul of it, raw and unspoiled. Your mind begins to wonder how a place like this still exists on earth, practically untouched by man even in the modern era that we live. You're filled with a desire to uncover the unknown mysteries of centuries gone by. A trip to Iceland will leave you with indelible memories of the vastness and power of the great outdoors. And with the lure of inexpensive airfares to tempt you, plus the greatly varying seasons, I can almost guarantee that if you visit in the summer, you'll want to return in the spring for an entirely different experience. As Albert Einstein once said, "Look deep into nature, and then you will understand everything better," something I can attest to personally. My time in Iceland taught me about the healing abilities of being consumed by the elements, from the purest air to rushing bodies of water. Experiencing the heart of nature, in its most raw and elemental form, has the power to lift your spirits and make your soul soar.

ocated west of Iceland's main attraction, Jökulsárlón Glacier Lagoon, is the lesser known, almost secret glacial lake called Fjallsárlón. Here you'll find chiseled, jewel-like pieces of ice in shades of amethyst and aqua blue rising out of the water below a snow-covered mountain range. For a truly peaceful experience, head there first thing in the morning as the light begins to brighten the frosty terrain. For the best vantage points, walk around the perimeter, surrounded by smooth glacial stones. There are a few turn offs on the road as you drive towards Jökulsárlón, where you can see the lake from different perspectives. If you prefer a view from above, park on the north side of the road, where you can do a cliff walk that leads you right to the edge of the lake. The cloud-covered highlands provide a somewhat moody counterpoint to the picturesque beauty of the golden, grassy cliffs. Editor’s Note

here will be many surreal moments on your journey, like the time just before dusk, when a thick lilac fog begins to roll in over the sculptural ice floes in the Glacier Lagoon. As the light begins to fade, the clouds cast dark shadows upon the remarkably blue glacier and the snow-capped mountains in the background. Situated across the bridge from the lagoon is spectacular Diamond Beach, where shards of ice, both large and small, rest on silky black sand. As beautiful as it is, if there is one place on earth where you can see the effects of climate change most clearly, it is here in this region. There are only a few small towns in southeastern Iceland that offer luxury stays and restaurants, including Jökulsárlón, Vik and Höfn. One of the most captivating features of the country is the remoteness and abundance of nature – this roundup of hotels delivers both. Jutting from the side of a moss-covered mountain, this location of the Foss Hotels offers an ideal way to experience the isolation of the Icelandic countryside. Located just steps from a plunging waterfall, the hotel’s large and numerous windows immerse you in the surrounding landscape. The cozy interior has high wooden ceilings, and an expansive porch provides the perfect vantage point for taking in the Northern Lights when they occur. The hotel restaurant's menu features seasonal and locally sourced ingredients. Each meal begins with their homemade olive bread smeared with the tastiest whipped butter and served on a slab of glacial rock, because why not? As a starter, try the local Brie, which is presented in a small cast iron pan with fragrant rosemary and drizzled with Icelandic honey. For the main course, any of the seafood dishes are a good bet, but portions are quite large, so splitting could be an option.

ne of the most famous and picturesque beaches in southern Iceland is Reynisfjara. The sea at Reynisfjara provides a dreamy backdrop to an even dreamier view of snowy mountains. On one side, you'll find an island straight out of a movie set, complete with a white lighthouse; on the other, massive, graphite-colored basalt columns illuminated by the sunlight, seagulls circling overhead. Three rock formations rise dramatically up from the waters just offshore, are buffeted by "sneaker waves" (they get their name from the fact that they do indeed sneak up on you). Watch as overexcited tourists run frantically to escape them, some cutting it a little too close and nearly getting pulled into the sea.

here are a few villages in southern Iceland that are well worth including in your visit. Vík is a charming small town distinguished by a simple white church with a red tin roof, perched high on a hill overlooking the black sand beach of Reynisdrangur. The beach features stables where you can pay to go horseback riding on trails that border the ocean. I recommend riding at sunrise or sunset for an even more spectacular experience.

he country's expansive, wide-open pastures are home to the Icelandic horse. While they are not technically wild, their playful and soulful natures will leave you with some of the most memorable moments of your trip. These friendly creatures are closely connected to the land and add yet another layer of depth to its natural beauty. Their thick, fluffy coats and long exaggerated manes help them endure the often unforgiving climate. Driving south along the Ring Road from Reykjavík, east of Selfoss, you'll see them out grazing in the

Getting Around

The main industry in Iceland is tourism, which means there's no shortage of organized tour companies that will take you to see the most visited spots, like the Golden Circle, Blue Lagoon and other points outside Reykjavík. But the best way to discover a new place is to see it on your own terms, so I recommend renting a car at the airport when you arrive. Driving in the south is rather easy, since the Ring Road is incredibly flat, and nearly all sites of interest, big and small, are well marked. Without a car, you'll miss the opportunities to pull off the road and really explore, something we did quite often – to pet the horses, take in the sunset or other natural wonders, or just to be free to experience the unexpected along the way.

jaðrárgljúfur is a breathtaking canyon formed more than two million years ago, and just a short distance off the Ring Road. Carved deeply out of the earth, its sheer cliff walls drop straight down to the winding Fjaðrá River that snakes its way through it. Visitors can safely hike through the canyon, as the river is quite shallow, and up to the top for stunning views of the ocean off in the distance. There is a marked trail that allows you to stop at intervals and gaze down as you go, to experience firsthand the vastness, depth and majesty of this place where Mother Nature left her extraordinary mark so many centuries ago.

A bright and colorful dish that lets the oven do most of the work. White beans simmer in a rich garlic and white wine broth, while slow-cooked fennel adds an irresistible mellow f lavor. 1 1/2 cups dried cannellini beans, soaked overnight (see note) 3 cloves garlic, minced 1 small onion, minced 1/2 cup white wine 3 cups good quality chicken broth 1 fennel bulb, sliced thin 2 lemon slices Fresh parsley, chopped Salt & pepper to taste Extra virgin olive oil for drizzling

Preheat oven to 350 degrees. Drizzle olive oil in a Dutch oven. Add garlic and cook over medium heat until soft, taking care not to burn. Add beans, white wine, broth, salt and pepper; stir to combine. Add chopped fennel and lemons. Drizzle with olive oil. Cook covered until beans are soft, about 50 minutes. Sprinkle with chopped parsley, drizzle with olive oil and serve. Serves four to five

With just the perfect degree of salty crunch, this easy recipe for roasted chickpeas will add spice to your happy hour enjoyment. The humble garbanzo is tossed in an aromatic blend of warm spices like cumin, coriander and smoked paprika and finished with a sprinkling of coarse sea salt, which adds another delicious depth of texture. 4 cups chickpeas, drained and thoroughly dried with a towel 2 tablespoons neutral oil, like sunflower or canola 1 teaspoon cumin 1 teaspoon smoked paprika 1/2 teaspoon coriander 1 teaspoon garlic powder 1/2 teaspoon onion powder 1/8 teaspoon turmeric 1 teaspoon salt* Pinch of coarse sea salt (add just before serving)

Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside. Place dried chickpeas in a bowl; coat with oil. To prepare the spice mixture, combine all remaining ingredients (except sea salt) in a small bowl and stir to combine. Pour on top of chickpeas and toss thoroughly, making sure that all are coated. Pour chickpea mixture onto baking sheet and spread evenly across pan. Roast for 30 to 40 minutes or until they are crispy. Add pinch of coarse sea salt and serve warm. *If you are using canned chickpeas, reduce the amount of salt to 1/2 teaspoon. Serves four

Note DRIED VERSUS CANNED BEANS

While canned beans may be more convenient, there’s really no comparison with their dried counterparts. Soaking the beans overnight ups the ante on their comfort factor, yielding a softer, creamier center. Plus, they are less expensive than the canned variety. If you do opt for the canned variety, choose a brand that contains only a few ingredients, like beans, water and salt. When using, we prefer Brad’s Organic Beans.

A crowd-pleaser that combines hearty black beans with cumin-scented roasted sweet potatoes, a healthy option for “Taco Tuesdays.” 1 can black beans, drained and rinsed 1 large sweet potato, diced 1 tablespoon olive or canola oil 1 1/2 tablespoons cumin, divided 1/2 teaspoon garlic powder 1/4 teaspoon salt 1 teaspoon onion powder 1/2 teaspoon smoked paprika 2 avocados, thinly sliced Corn tortillas, about six Fresh cilantro Lime, for garnish Coarse sea salt flakes

Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside. Place diced sweet potatoes in a medium mixing bowl. In a small bowl, combine 1 tablespoon cumin, garlic powder and salt; add to diced potatoes and mix to combine. Pour oil over potatoes and toss gently, making sure that all are coated. Spread potato mixture onto baking sheet and bake until browned, about 30 minutes. Meanwhile, prepare the black beans. Drain the liquid from one can of black beans and rinse thoroughly. Place in a medium sauce pot. Add remaining 1/2 tablespoon of cumin, onion powder and smoked paprika. Cook over medium heat until warmed, about 6 to 8 minutes. Let cool slightly. To Prepare Tacos

Place one corn tortilla at a time over medium open flame or grill, cooking until slightly charred on both sides. Set aside and repeat until all tortillas are cooked. Fill tortillas with warm black bean mixture, followed by sweet potatoes, avocado, cilantro and a squeeze of lime. Season with coarse sea salt flakes and serve. Serves six

eykjavík is a quirky Scandinavian city that melds the best of old and new, with an eclectic mixture of architectural styles and pockets of noteworthy coffee shops, restaurants and art galleries. Whether visiting on a stop-over flight before jetting off to Europe or other points east, or as the first stop on a tour of Iceland, it’s a great introduction to Scandinavian culture, since the town is completely walkable. Wander the narrow streets of the Old Town; take in the Tjörnin (also referred to as The Pond) with its serene swans and sweeping views of the mountains. If time permits, catch an evening performance at the Harpa Concert Hall and be mesmerized by the building’s prismatic facade. But if you really want to take full advantage of all the country has to offer, venture outside the city limits; otherwise, you’ll miss a chance to experience unfathomable beauty and form visual memories that will last a lifetime.

A comfortable hotel/hostel hybrid that is a short ten minute walk to the heart of Reykjavík. Situated by the water, many of the aqua blue and powder pink rooms boast great views of the snow-covered mountains. He changes the menu whenever inspiration strikes. For a tiny taste of what you will experience outside the city limits, head to this coastal haven, Seltjarnarnes Peninsula & Nature Preserve, a breeding ground for many different types of birds that’s just a ten minute drive away. Take a quiet walk by the seashore and enjoy views of Mount Esja and the lighthouse in the distance.

WHERE TO TAKE A DIP

Blue Lagoon

Could there be a more relaxing way to start or end a day of sightseeing than luxuriating in heated geothermal water while pampering your skin with an algae-laced facial mask? Pumped from more than 6,000 feet below the earth’s surface, the waters of the lagoon are chock-full of skin healing ingredients like algae, silica and other minerals. So slather on a mask at the Mud Bar and unwind in thermal waters that fluctuate between a soothing 98° and 104°F. Interestingly, although the water is actually clear, the reflection of the sun gives it its dreamy blue shade.
