Thank you to all who have shared your thoughts and feedback on the first two issues and have inspired us to not only keep publishing this magazine, but to make it even better! We’ve heard you enjoy the inspirational stories of people that are making a difference and following their heart. And while there are as many stories as grains of sand, we’ve done our best to showcase a few of the people that help make the Emerald Coast so sunny. From one mom’s passion to fight childhood hunger to an unlikely fishing captain to one of our favorite local chefs, in this issue we’re sharing stories of incredible people that inspire us daily. Our cover story celebrates the Emerald Coast’s obsession with wine and how wine now helps to support more than 14 local charities, serving children in need in Northwest Florida. We also enjoyed getting to know Lucy Buffet and hearing more about her latest venture, Lulu’s Destin. COVER ARTIST GORDIE HINDS returns with the third painting in his series of art created specifically for Where You’d Rather Be Magazine. His adventurous life as an angler, hunter, horseman and outdoorsman are represented in his work. Known for his gift for painting vibrant scenes of life along the coast, Hinds captures a classic, vintage feel that allows his work to be instantly recognizable with his growing base of fans and collectors. So what’s new with Gordie Hinds this year? “Some pretty heady stuff actually,” Hinds said with a grin. Hinds has agreed to illustrate a book on bone fishing in the Bahamas for the 12

Bonefish Tarpon Trust titled “Ghost Stories.” The new hardcover book is authored by Tom Karrow, Ph.D. and will be published by Wild River Press. He is also working with several distilleries, breweries and wineries on labels, logos and advertising along with multiple sportswear companies, including Patagonia and YOLO, developing signage, T-shirts, ball caps and technical fishing wear. Hinds also introduced Gordie Hinds Studios line of shirts and caps in 2016. “This year has been good to us. I am fortunate to stay busy with commissions and continue to be inspired by life along the coast. Luckily there is no shortage of

Gordie and his wife, Susan, join forces and talents to support local groups such as Alaqua Animal Refuge, The Children’s Home Society, Food for Thought and The Pierce Family Children’s Advocacy Center. “When I need a break, it is a short walk away, down to the beach with Susan and the dogs or a leisurely ride along the water. HIT THE FLOOR AT THE DOOR

MORE THAN 14 YEARS AGO, on a warm August night, John Wehner opened The Village Door in The Village of Baytowne Wharf at Sandestin. Quicker than a person could say, “bust a move,” the nightclub became the place on the Emerald Coast for locals and visitors to shake their booties. In fact, Emerald Coast Magazine readers voted this hot spot the “Best Place to Go Dancing” several years in a row. Today, the Village Door still mixes things up, with local DJs spinning mixes of the latest dance music and with the high-energy Dream Band performing live on weekends.

“I have a great love and passion for live music,” Wehner, who is also a drummer, said. The club also serves up dinner to partying patrons on its expansive outdoor deck that overlooks the Choctawhatchee Bay, because, as Wehner put it, “You can only dance so many days a week, but you eat every day.” As the former owner of the Famous Door in New Orleans, Wehner is keeping things fresh. This year, the Village Door will add a second location at Seascape Resort. Here’s to many boogie nights to come!

TIM CREEHAN WHAT’S COOKING ALONG THE EMERALD COAST

COMMONLY DUBBED DESTIN’S own “celebrity chef,” Chef Tim Creehan has been a staple along the Emerald Coast for nearly 20 years. After studying under and alongside talented chefs in Louisiana at a very young age, he moved to Destin and opened Beach Walk in 1998. He went on to be a founding partner and Executive Chef of Marina Café, and in 2007, he opened Copper Grill. Over the years, he’s appeared on various television shows and personally cooked for dozens of high-profile celebrities, ranging from Bruce Willis and Jessica Simpson to Amy Grant and Vince Gill. In May of 2010, Chef Creehan opened Cuvee Destin, and five years later added Cuvee 30A near Rosemary Beach. In 2016, he added Destin Ice Market 30A, a retail market specializing in fresh seafood, prime meats, gourmet cheeses, fine wines and craft beers. Over the years, his culinary enterprise has grown to also include Cuvee Catering, the Culinary Center and the patented Grill Plus Instant Marinade by Kinder’s. As one of the fastest growing organic sauce companies, Kinder’s rapid expansion is now occupying Creehan’s time with product development and operations management at the company’s new southeastern division. Last year, he also agreed to serve as a test chef for the Big Green Egg, a high-quality ceramic outdoor cooker. With so many projects demanding his time, Creehan made the difficult decision to sell Cuvee-Destin to Christopher Ruyan and Tyler Jarvis, the innovative minds behind Jackacudas Seafood & Sushi and Brotula’s Seafood House & Steamer, and dedicate his time to his new roles. We recently caught up with the chef, author, teacher, entertainer, community steward and inventor to hear first-hand about his new projects and what’s cooking along the Emerald Coast.

NOW THAT YOU’VE SOLD CUVEE DESTIN, WHAT WILL YOUR ROLE AT KINDER’S ENTAIL? Kinder’s is an all-natural and organic spice rub and sauce company with some barbecue products as well. It’s a leading brand on the West Coast. Grill Plus will be sold under this brand name and we are updating the flavors. I have two roles in the company: One is product development — expect to see more items from me for sure — and the other is to launch and sell Kinder’s products in the Southeast and East Coast U.S. 18

TELL US ABOUT YOUR NEW PARTNERSHIP WITH BIG GREEN EGG? They’ve asked me to be a test chef—to cook on it and give feedback. When I cook on the Egg now, I’m thinking about sharing, modifying, how to get a better result. When I’m cooking, I’m thinking about the heat source, how can I bring the heat closer? The heat source is the flavor source. I’ve learned that great ideas are born from accidents. It’s important to experiment and try crazy stuff. I was recently up in Oxford, Mississippi, for an Ole Miss game and was experimenting. We had five Big Green Eggs going and were testing smoked mozzarella. We were playing with it and learned a lot.

NOW THAT YOU HAVE A BIG GREEN EGG AT DESTIN ICE HOUSE 30A, WILL YOU BE ADDING MENU ITEMS COOKED ON THE BIG GREEN EGG? Yes. We’re starting by making our signature smoked tomato soup on the Big Green Egg and will add more items as we begin to experiment. We’re getting outside the box. Let’s try it! We tried a smoked cheese, which we cooked at a cold smoke of 90 degrees for 30 minutes, and over-smoked it, so we’re still experimenting. While I was in Italy, we sat down for lunch and enjoyed a smoked Burrata, green pepper and mozzarella salad.

It was the first one I ever had and now I’m thinking about trying it. IT SOUNDS LIKE SOME OF YOUR INSPIRATION COMES FROM YOUR TRAVELS. IS THAT TRUE? Definitely. All my education was traveling. I thought about culinary school and looked at Cornell, but in the end I would travel to Atlanta and eat at four or five restaurants a day. I would do the same in California. I was staying ahead of trends by traveling to markets, but the key is knowing what will work in Destin and South Walton.

WHAT DO YOU SEE AS THE NEXT BIG THING ALONG THE EMERALD COAST? Going out to dinner is changing as more and more people want to enjoy and entertain at home. Families are building gorgeous coastal homes and want to stay in. The private chef business is huge. Home meal businesses, like Blue Apron, are exploding. We developed Destin Ice Market 30A, a walk-in market, with fresh, prepared meals, baked potatoes in the oven, and homemade sides, to serve these families. I’ve been a private chef for Jerry Jones for 14 years and when he’s in Destin, he doesn’t want to leave his house. The trend is staying in.

WHAT TYPES OF FOODS ARE MOST POPULAR? You would think heart healthy foods, but here, it’s a vacation destination so it’s splurge time. Twice baked potatoes, steaks, decadent desserts are some of our top sellers. Locals want heart heathy, but visitors want to splurge. WHAT HAS BEEN THE KEY TO YOUR SUCCESS? The key to success is understanding the market. The biggest mistake I see people make is that you must be able to understand our market. What works somewhere else is not necessarily going to work here. DESTINVACATION.COM

CHRIS ALVARADO MAKES music — literally. He makes it out of wood and strings and shellac, and on recording equipment in his studio and at live music venues all around the Emerald Coast. Long popular as a singer and songwriter, Alvarado began designing and building acoustic guitars as a hobby nearly a decade ago, posting pictures of the instruments on his Facebook page for friends to see. works closely with clients — well-known professional musicians and dedicated amateurs alike — to design and build the guitars of their dreams. His wife, Naomi, works with him, managing the business side of his ventures. Together, they take turns watching and playing with their 3-year-old son, Hayden. A Crestview native, Alvarado joined the Air Force after the terrorist attacks of September 11, 2001. His father had retired from the Air Force, and after the attacks, Chris Alvarado felt a need to serve his country, too. He stayed in the military for seven years, and then chose to leave when his stationing assignment brought him back home to the Emerald Coast. “I tell everyone that I’m glad that I’m out (of the military),” Alvarado said, “but I’m also glad that I did it. If I hadn’t ... done my time in the military, then I wouldn’t realize how fortunate I am to be able to wake up every morning and live my life on my terms.” After leaving the military, Alvarado decided that he would make music his life, one way or another. At first, he focused on singing and songwriting — and he still does enough of both to have made a name for himself as a renowned, award-winning musician — but then he added producing to his repertoire

and built a full recording studio in his home, where he helps other artists produce their songs. Finally, he discovered instrument making, which he sees as a natural extension of the creative process. Alvarado and his clients carefully choose every detail of each guitar in order to yield the look and the sound that best suit each musician. “I familiarize myself with the style of music they play,” Alvarado said. “Then I ask them about their favorite guitar and what it is they like about it. Then I talk about sound. I ask them, ’What color sound are you looking for?’” That’s right. Color. Where most of us only hear sounds, Alvarado sees them — in tones ranging from shimmery metallics to deep chocolatey browns, with an array of shades in between. “I’m not just hearing six notes,” Alvarado said. “Some (sounds) weave into others. The wood contributes notes to the strings, dark versus light sounds. It’s like tasting wine. There’s a lot more happening than just the notes being played.” During the guitar-building process, Alvarado talks to clients about the shape of their instrument, their selection of

wood and how the different bracing styles for construction will affect the sound. Together, they discuss the trim work, the fingerboards, the sides, and the wood and pearl inlays on the body. It’s important to him, he said, that the client leaves with more than just a beautiful instrument. On average, it takes Alvarado four months to build each guitar, and he normally talks to clients twice each week during the process. Many of these clients describe the building process as an emotional experience, because they work so closely with Alvarado. Alvarado’s goal is to make 12–15 guitars each year, but he also dabbles with making other one-of-a-kind instruments, such as the upright guitar that he made, which is played with a bow, like a cello. For Alvarado, creating such unique pieces is just one more way to leave his mark on the music world. “I want to be known as an artist,” he said. “I just want to make something that lives longer than I do. I’m going to die someday, and these guitars are going to live on. LUCY BUFFETT THE ’CRAZY SISTA’ SHEDS LIGHT ON HER LIFE, INSPIRATIONS

Q: WHERE WERE YOU BORN AND RAISED? A: I was born and raised in Mobile, Alabama. I’m the only one in my family not born in Mississippi. My mother’s family and my father’s side of the family, and my brothers and sisters, were all born on the Gulf Coast in Mississippi. Both he (my father) and her (my mother) moved to Alabama to work at the dry docks. Q: HOW DID YOUR CHILDHOOD INFLUENCE YOUR LOVE FOR FOOD AND ENTERTAINING? A: It definitely did not come from my mother. My work ethic and my feminism came from my mother, because she worked all of my life, but she did not like to cook. My grandmother in Pascagoula Mississippi is my Buffett grandmother, and she grew up with a mother who cooked in a boarding house, so she cooked boarding house food. There were three proteins and four vegetables and four deserts and a gumbo. My other grandmother, she was a dietician at a girl’s finishing school in Long Beach (MS). Two Sundays a month we had to go to the grandmothers, so we would alternate between the two of them. On

The cuisine at Lulu’s reflects Alabama-born Lucy Buffett’s life travels from Key West to New Orleans, New York and Los Angeles. With her restaurant she made a dive come alive.

Sundays, we would dress up, so you had your gloves on, your hat on and we went to church, then we would eat at the dining hall in the finishing school where there was an elaborate spread of food. It was all coastal cuisine. This is the foundation of my inspiration, and I started cooking as a kid. Q: WHERE HAS YOUR LIFE/CAREER TAKEN YOU? A: My first move was to Key West, where I got to really learn about the beautiful casual lifestyle and the fabulous food. All those stone crabs and Florida lobsters and warm water fish. My second journey took me to New Orleans, where I really kind of downshifted. I learned and fine-tuned what my grandmothers had done with the gumbos and jambalayas. The food culture there was phenomenal. Life took me to New York, and I cooked on a yacht when Cajun food was hip and exploding. I got to learn so much just by going out to eat, then finding the recipes or buying the cookbooks. I moved back to New Orleans for a bit, then I went to Los Angeles. Sometimes I would cook for a bit or cater, but I had been a secretary when my kids were young and did a lot of administrative work and worked in the motion picture industry cooking for friends. What I like to say is that every job I’ve had has prepared me for what I’m doing now. Q: WHY DID YOU RETURN TO ALABAMA? A: I had been in Los Angeles for almost 10 years, but my father had Alzheimer’s, which we knew, but my mother had some complications from a stroke, so I packed up and moved home to help take care of them. At the time, I was broke and either way over-qualified or under30

qualified for anything going on in Fairhope, Alabama. I just didn’t quite know what to do, and someone had asked me to take over this little dive restaurant. I woke up and thought, “I don’t know how to do this.” My brother (singer Jimmy Buffett) had come to visit and he checks this place out and ended up giving me some money. From there, it was up to me, so I had to pull it together. I did everything for the first five years at this restaurant (Lulu’s Sunset Grill) until my lease wasn’t renewed. I had someone else who believed in me find me a new location and build me a new restaurant. That’s when things took off, when I opened the Lulu’s in Gulf Shores. Q: WHY DID YOU EXPAND LULU’S INTO DESTIN? A: Little by little I was building upon a new corporate culture while I was at Lulu’s in Gulf Shores. I was creating a place where I would want to be, where our employees could be proud and want to be. The years piled up and I kept taking care of my people and my customers, giving them the best I could. So as things grew, it was time for me to pay it forward. People had believed in me, so now it was time to give back. I knew if I was ever going to put another restaurant out there, it was going to be in the Destin area. Even though it’s not home to me, it’s the Gulf Coast. It has the beaches and the back bays and it’s beautiful. Q: WHAT MAKES LULU’S SPECIAL? A: It was purposely designed to be a place where people can escape, which is why we made it very colorful like a Bohemian food shack. It has a fun vibe. It’s not fancy cuisine;

it’s just good Gulf Coast-type food. It is a lot of great fried food, but it has to be the best quality it can be. Remember, people are on vacation and they have escaped to the beach. Music is a big part of what we do as well; we have local music nightly. Music and food can transcend economic and social levels of culture — it’s an equalizer. It’s all about making our customer comfortable and giving them the best you can give. Our team is phenomenal. I mean, without our team I am just a woman with an idea. Q: HOW IMPORTANT IS IT FOR LULU’S TO BE AN ACTIVE MEMBER OF THE COMMUNITY? A: This is part of our culture. Sure, we are making our money, but we have to put that money back into the community. I just feel like it’s a moral obligation of ours, I was raised that way. I’m passionate about children and the arts. A spiritual mentor once told me to “decide what’s important to you, then that’s where you put your energy and your resources.” I went to Haiti with Habitat for Humanity after the earthquake, and it was so overwhelming. I work with Habitat for Humanity in Baldwin County, because I believe you have to start locally in your own community. Q: WHERE DID THE “CRAZY SISTA” NICKNAME COME FROM? A: My brother and sister are only two years apart in age, but I’m the youngest — Jimmy is seven years older than I am. I was always very sensitive and wore my feelings on my shoulder. I was wild and very rebellious, and I always seemed to get caught. You know, in the South, there is always a crazy sister, which just so happened to be me. I just embraced it and thought it would be a good name for a cookbook. Q: WHAT IS SOMETHING MOST PEOPLE DON’T KNOW ABOUT YOU? A: I actually require quite a bit of quiet time. I love to meditate. As much as I love to have a lot of people around and I’m good with large groups and being highly social, there is an equal side of that where I have a huge need for solitude. — COMPILED BY MATT ALGARIN

How did a once sleepy fishing village become one of the most recognized regions for wine consumption in the U.S.? The story begins with a charismatic man named Chan Cox. Cox went to school at Troy University, and after graduation, he took a job with a wholesale distributor in Pensacola in 1971. With only a few restaurants in Northwest Florida offering a wine list, his territory spanned from Pensacola to Panama City Beach. “Today, 25 wine representatives serve my original territory,” said Cox. “Back then, my No.1 selling item was MD 20/20. Then, Boone’s Farm came out. It was sweet, easy to drink. Since Boone’s Farm was owned by Gallo, the brand benefited from great marketing. People started drinking more wine.”

“The public wanted something besides bourbon and beer,” continued Cox. “Then came gateway wines such as Beringer White Zin, Glenn Ellen Reserve Chardonnay and Kendall Jackson.” As a vacation destination, the Emerald Coast also benefited from visitors who had been exposed to different types of wine during their travels. A wine culture began to develop, which was propelled by wine festivals and a growing culinary scene. “The first wine festival was 1986,” said Cox. “I was told Peter Mondavi was visiting the area. My Mom and sister had a café at The Market Shops at Sandestin, so we hosted the region’s first wine festival there. Tickets were $5.” “Hardly anyone came,” recalls Cox. “But it started raining, bringing the Louisiana


Bar Association meeting attendees off the beach and to the wine festival. It was the perfect storm.”

WINE FESTIVALS — A GAME CHANGER Mondavi’s visit to the region was just the beginning. Cox continued hosting the Sandestin Wine Festival at The Market Shops at Sandestin, and a few years later, the Merchants of Seaside were looking for the perfect fall event. Scott Witcoski, co-founder of Bud & Alley’s, thought that it would be unique to have a wine festival devoted solely to red wine. Scott presented the idea to the merchants in Seaside, and the Seeing Red Wine Festival was born. “It was truly a grassroots event created by and organized by merchant owners in

town,” said Dave Rauschkolb, co-founder and owner of Bud & Alley’s. “The wine festival always kicks off with the Thursday night winemaker’s dinner at Bud & Alley’s. The second Seeing Red Wine Festival dinner featured winemaker, Robert Mondavi and Chef Lydia Bastianich. With headliners like that, the Seeing Red Wine Festival was an instant success.” As the festivals continued to grow and evolve, so did the culinary scene. Talented chefs were moving their families to the area to enjoy the Destin and 30A lifestyle. James Beard Foundation and Florida Trend Golden Spoon reviewers were taking notice of area chefs and restaurants, which were focusing on innovative coastal dishes created from fresh, local ingredients.

“We were getting good restaurants,” said Cox. “Restaurants including Criolla’s, Bud & Alley’s and Café Thirty-A were adding wine lists. A micro-wine culture was forming.” The Sandestin Wine Festival and Seeing Red Wine Festival continued to expand in recognition and scope. After 19 years, the Sandestin Wine Festival outgrew its home at The Market Shops and moved to The Village of Baytowne Wharf at Sandestin. That same year, Cox added an auction component. “After I attended the Atlanta Wine Auction at the High Museum of Art, that year, we added an auction during the Friday Wine Walkabout that was part of the festival and donated $25,000 to Mattie Kelly Arts Foundation,” said Cox. “The second year we were ready to step it up. formed a board and started the Destin Charity Wine Auction Foundation.” “We raised $250,000 the first year and $800,000 in year two!” exclaimed Cox. “This is a tribute to the outstanding board of directors. It was great for the charities and the children.” This year, Destin Charity Wine Auction Foundation (DCWAF) is celebrating its 12th auction and is ranked number three among the top 10 wine auctions in the country by Wine Spectator. The auction has raised more than $13 million year-to-date to help children in need in Northwest Florida. “Over the years, the Destin Charity Wine Auction has become known as ‘The wine lovers wine auction,’” said DCWAF President John Russell. “We have been fortunate in that we have grown not only in the contributions we have made, but also in our reputation for excellence. This has permitted us to increase our outreach to more than 75,000 youth. We are able to provide funds so that these organizations can focus on improving the lives of children instead of fundraising.” South Walton’s beach communities have been a strong driver in the expansion of the festival landscape. Ro s e m a r y Be a c h l a u n c h e d t h e Uncorked Wine Festival in the fall, and Alys Beach hosts the 30A Wine Festival each spring. Sandestin Wine Festival continues in The Village of Baytowne Wharf, and Chan Cox has continued his festival, which was rebranded in 34

2013 as the South Walton Beaches Wine & Food Festival. Held at Grand Boulevard at Sandestin in conjunction with the Destin Charity Wine Auction the last weekend of April, the South Walton Beaches Wine & Food Festival now features more than 800 wines, celebrity winemakers, distillers, chefs, brew masters and Nashville songwriters. As the number of wine events and caliber of wines poured continues to elevate, Northwest Florida is gaining increased notoriety within the wine industry. “Wine festivals have definitely propelled us. It is incredible to see the level of interest from winemakers who want to come (to our festivals). Napa knows us now,” said Chef Tim Creehan, long-time restaurateur, owner of Cuvee 30A and DCWAF supporter.

WINE ON THE MENU

Not only did wine make it onto the menu, but area restaurants began developing wine lists that are a point of differentiation and pride. “Our customers began requesting that we add certain labels to our list. They want single vineyard wines,” Creehan continued. “We would not be here without the community maturing and developing an appetite for fine and great wines.” The number of wine tastings and wine dinners began growing as well. Local restaurants along the coast, including Chan’s Wine World, are finding their

niche and hosting specialized wine tastings for sophisticated palates. Todd Reber and his business partner Chef John Jacob opened Vin’tij Wine Boutique in Miramar Beach across from Silver Sands in 1998. Reber describes the wine culture at the time as “grocery store wines.” “A handful of us worked at Bud & Alley’s in Seaside and entertained at home, but would go to shop for wines, and they were not available,” shared Vin’tij Co-Owner Todd Reber. “We founded Vin’tij as a place to wine, dine and enjoy but also take home a bottle or a case.” “The early years were tough. We had to survive sleepy winters and waiting for Highway 98 to grow up,” said Reber. “Eventually, savvy visitors and second homeowners realized we were serving elevated cuisine and not grocery store wine.” Vin’tij found its niche with small batch and artesian wines paired with fresh,

inventive cuisine. Much like the restaurant’s colorful walls and constantly changing local artwork, Vin’tij’s wine menu and cuisine is constantly changing, too. “We now have two winemakers coming in here a week. They seek us out,” said Reber. “This was influencing our wine dinners, and we were hosting many from California. This year, we’re reinstituting a focus on winemakers by region to help educate ourselves and our staff. We started in Burgundy — pouring, talking, teaching. Next, we’re moving into Spain.” Other local businesses have also sprouted due to the region’s growing wine consumption. Demetria and Richard McNeese opened McNeese Distributing to help distribute small batch wines locally. “The wines we carry have small production and are too small for big distributors,” said Demetria McNeese, co-owner of McNeese Distributing. “In

three years, we’ve represented more than 150 labels. It is hard work but fun. “The festivals have exposed consumers to new flavor profiles,” continued McNeese. “Once you start trying new wines, you’re hooked!”

LOCAL LABELS The focus on wine has spurred local labels as well. In spring 2016, the 30A company, whose mission is to offer the 30A lifestyle to fans around the country, introduced 30A Wines, including a chardonnay and a red blend. “Some people might think we just slapped a 30A logo on a random bottle of wine to sell as a souvenir, but that is not the case,” said 30A Company Founder Mike Ragsdale. “We spent over two years searching for the right vintner, and when we found the award-winning Mercer Estates in Washington’s Columbia Valley, we knew DESTINVACATION.COM

they were the perfect partner to help us craft a growing family of 30A wines.” Ragsdale was looking not only for a reliable, quality winemaker but also a connection to the Emerald Coast and 30A. “Owner Rob Mercer was a Marine sniper who was stationed in Pensacola,” said Ragsdale. “In addition, we wanted to partner with a vineyard that had similar values. We appreciated Mercer’s focus on responsibility and sustainability that we embrace on 30A. Most importantly, we loved their quality and consistency.” In January, the 30A Red Blend was awarded the Gold Medal for Best Red Blend Under $25” by a panel of national wine experts during a blind taste-test for the South Walton Beaches Wine & Food Festival “Tasting of Champions.” With more than 70 different wines entered in this category, 30A Red Blend proved that it is more than just a pretty label. New varietals including 30A Rosé and 30A Malbec will be released later this year. Co-founders of the town of Seaside, Robert and Daryl Davis, also envisioned a private label wine that would complement the lifestyle they created in Seaside, Florida. They found it at Kokomo Winery. Rediscovering and reviving traditional techniques of growing grapes and making wine that are deeply rooted in the terroir of Sonoma, the Kokomo Winery celebrates winemaking styles of a simpler time. The winery is perched on 120 acres of prime Dry Creek Valley known as Timber Crest Farms. Each small

batch wine is as individual as the vineyards from which it was born and each private label Seaside Wine, including the sauvignon blanc, chardonnay, pinot noir, cuvee, red zinfandel, and recently added cabernet and rosé, reveals special characteristics as well as reflects the Seaside lifestyle. In spring 2015, long-time residents, Charles Modica and George Barnes, joined forces with their friend and winemaker Pete Seghesio to introduce 30A Coastal Dunes Chardonnay. After Barnes visited Seghesio at his San Lorenzo micro-winery in the Russian River Valley of Sonoma County, he knew the time was right to introduce their own local label. “I wanted a food wine,” said Barnes. “It goes great with food and is good by itself. It’s great with seafood — a great spring and summer wine.” Since the launch of the chardonnay, 30A Coastal Dunes Wines Company has introduced other varietals, including 2012 Napa Valley Cabernet Sauvignon, 2014 Sonoma Coast Pinot Noir and 2008 Williamette Valley Brut Rosé. McNeese Distributing represents both Seaside wines and 30A Coastal Dunes wines, serving an important role bringing local wines to the market. And for those who want an authentic local wine as a souvenir, there is Emerald Coast Cellars. With homegrown wines

produced from the Chautauqua Vineyards in DeFuniak Springs, Emerald Coast Cellars features a variety of wines created from grapes specifically cultured for Florida soil and environment.

THE FUTURE While nobody can predict the future, many anticipate the Emerald Coast’s obsession with wine will continue to evolve and mature as these beach communities remain meccas for the good life. “Chan will continue to play an important part of our wine evolution,” said Stacey Brady, executive director of South Walton Beaches Wine & Food Festival. “As he continues to bring in wine celebrities from around the world, such as previous renowned participants — Cristina Marini May of Banfi Vintners, Mark Perrin of Château de Beaucastel, JeanCharles Boisset of Boisset Family Estates and Peter Mondavi, Jr. of Charles Krug Winery — our area will continue to make a strong impact and garner a positive reputation within the wine industry.” Brady continued, “At the same time, we anticipate the demand for fine and small batch wines will continue to grow in South Walton and throughout Northwest Florida, fueling constantly evolving wine lists at area restaurants and an escalating demand for wine festivals where consumers can discover new wines.”

The Gulfarium Marine Adventure Park has been entertaining and educating locals and visitors alike for more than 60 years. Construction on the park began in 1954 along a 600-foot stretch of beach. The main dolphin habitat, which is constructed of battleship steel, took 11 months to develop and build. The Gulfarium officially opened its doors in August of 1955. At the time, admission prices were $1 for adults and 50 cents for children. Although prices may have increased since 1955, the smiles on children’s faces when they interact with the marine life remain the same. Walking through the facility now, a lot has changed. New habitats have been created and guests now have a variety of ways to interact with the marine life and animals that call the Gulfarium home, from Sebastian the bottlenose dolphin and Pippin the Asian small clawed otter to

Milo the harbor seal and Floater the loggerhead sea turtle. The team at the Gulfarium is dedicated to educating, entertaining and inspiring its guests to respect and preserve wildlife by providing unique and memorable experiences for visitors of all ages to connect with marine life. The educational aspect of the Gulfarium is key. It’s a common sight to see groups of youngsters touring the facility with school groups or as part of a scavenger hunt. Stacy DiDonato, the Gulfarium’s education coordinator, has been enriching the lives of visitors since 1998.

“One of the favorite experiences of my job is seeing guests so excited when they get an up-close encounter with one of our animals,” she says. “This often happens at our dolphin observation windows, the tide pool and at animal encounters. Moments like that will never be forgotten by that guest, and my hope is that they will take a conservation stand, even if they just start with something small to help that animal’s wild counterpart and the environment it inhabits.” Animal encounters at the Gulfarium showcase interactive experiences with penguins, stingrays, dolphin and even alligators. to the Gulfarium than interacting with its inhabitants and watching marine mammals strut their stuff. In 2015, the Gulfarium’s C.A.R.E. Center, a nonprofit organization, was developed to enhance its animal rescue and rehabilitation efforts. The program has helped rescue and release hundreds of sea turtles — such as loggerhead, kemp’s ridley and hawksbill — back to their natural environments. And for those who may be too injured to go back home, they become permanent residents at Gulfarium. C.A.R.E. stands for: Conserve (ensure the future of marine animals and their habitats); Act (play an

active role in marine conservation); Rehabilitate (support marine animal rescue, recovery and release): and Educate (inspire awareness for marine conservation issues). “Rehabilitation is absolutely critical as part of the rescue effort,” says Graham Northup, curator of fish and reptiles. “Animals in need of rescue typically are extremely weak, dehydrated and haven’t eaten in a while. It’s often a process to get their bodies and physiology working normally again. It requires a huge amount of effort, time and resources over the span of weeks, months or even years before these animals are ready to be released.”

As a nonprofit organization, the C.A.R.E. Center relies heavily on support from the community. “This allows the community to play an active role in marine conservation and see their own efforts making a difference in the lives of rescued marine life,” Northup adds. When a sea turtle is rescued by Gulfarium staff, it undergoes a thorough evaluation by a team of veterinarians based on standards set forth by the Florida Fish and Wildlife Conservation Commission. Sea turtle releases bear a similar resemblance to a rock concert, as large crowds gather, cheer and clap, and take pictures as these marine mammals make a grand return to the Gulf of Mexico. It’s not uncommon to see groups of 50-plus gather during a sea turtle release. While many things have changed since Gulfarium opened its doors in 1955, the vision of J.B. “Brandy” Siebenaler, the marine researcher who we can thank for the Gulfarium, is still clearly visible today. Light pollution is a serious threat to a variety of wildlife, especially nesting sea turtles. When hatchlings leave their nest, they head toward the brightest horizon, which is normally the moon reflecting off the water. Artificial light can confuse the turtles and cause them to go the wrong way.

WHAT CAN I DO TO ENSURE A CLEAR PATH TO THE OCEAN FOR THE HATCHLINGS?

Remove all beach chairs, umbrellas and other items from the beach to avoid any obstructions during sea turtle nesting season. Flatten sand castles and fill in holes before leaving the beach so turtle hatchlings have a clear path to the water.

COMMUNITY BANDS TOGETHER TO TAKE A BITE OUT OF THE INVASIVE LIONFISH PROBLEM BY MATT ALGARIN


which is good news for anyone trying to combat these underwater pests. Candy Hansard of the Emerald Coast Reef Association has been outspoken about the dangers of the lionfish for years, whether locally or to state and government officials. The reef association provides free lionfish workshops for groups of 10 or more. “Our native fishery does not have the luxury of time anymore,” she adds. “We are at a critical point, right now. The entire Atlantic, Caribbean and Gulf of Mexico is threatened.” “We are continuing to push for more aggressive action to control the lionfish population explosion,” she says. “We are currently working on educational signs to post at marinas and boat launch sites to protect fishermen, divers and soon swimmers from being injured by the lionfish.” Much like divers, local chefs have joined the lionfish fight by cooking up the spiny, white-fleshed fish. Tim Creehan, of Cuvee 30A and Destin Ice Market 30A, has known about the lionfish nuisance for quite some time, as he frequently sails in the British Virgin Islands where the pest has wreaked havoc, even catching the attention of Virgin mogul Richard Branson. “You cook them like snapper,” Creehan says of the mild, flaky fish. Whether or not the lionfish becomes a menu staple is yet to be determined. “The key is making it easy to fish, catch and sell to local eateries,” he said. “If I could get a consistent supply, I could add them to the menu. We also need to find a way to bring the cost down to make it attractive to the consumer.” Shoppers at Whole Foods Market in Destin have probably seen the lionfish on ice, as the company began selling the fish in its Florida stores in April 2016. David Ventura, regional seafood coordinator for Whole Foods, has been instrumental in bringing the lionfish into stores throughout the state of Florida.

THE LIONFISH MAY NOT be the biggest fish in the Gulf of Mexico, but it certainly is one of the baddest. Don’t let this invasive species’ stunning appearance fool you, the lionfish is a fierce predator equipped with 18 venomous spines. Much like the lion is king of the savanna, the lionfish can easily be deemed the king of the sea, and it’s wreaking havoc on local waterways and fish populations. Originally from the Indo-Pacific and Red Sea, the lionfish was introduced to the warm waters of the Gulf of Mexico around 2010. By 2012, most of the local reefs, both natural and artificial, were infested with these voracious eaters. Unfortunately, the lionfish has no known predators in the Gulf of Mexico and they are not easy to catch on a hook. The venomous and spiny fish can not only consume prey up to two-thirds its own size, it can starve itself during harsh conditions for up to 12 weeks. The lionfish is also known to release up to 115,000 eggs into the local waterways as often as every two to three days. To put that into perspective, the average for the same time period is 27,000, based on research from the Gulf Coast Lionfish Coalition. What’s even more unnerving is the number of lionfish in the Gulf of Mexico in unknown. “What we do know is that lionfish are being reported and seen more frequently and in areas where they were not previously known to be,” says Rebekah Nelson, a spokesman with the Florida Fish and Wildlife Conservation Commission (FWC). So what can be done to restore order to the Gulf? Well, the simple solution is to catch as many lionfish as possible. From Panama City to Pensacola, divers have come to the front lines, strapping on their SCUBA tanks, spear in hand, bagging as many lionfish as possible. Given the invasive nature of these fish, the FWC does not enforce a bag limit on how many can be caught,

“To date, we’ve sold 27,000 pounds and counting,” Ventura said. And while that’s a large number, Ventura knows it’s only a small dent in the total lionfish population. As a company, Whole Foods has created partnerships with local divers throughout the state, which allows them to consistently offer the fish in its stores. Outside of the retail markets, locals and visitors alike can do their part at local lionfish events, such as the annual Lionfish Removal and Awareness Day held in May in Pensacola. In 2016, divers removed an astonishing 8,089 lionfish during the two-day event. Lionfish events will also be held in Destin and Panama City. Residents and visitors alike can help tame the lionfish epidemic by grabbing a skillet and a fork and taking a bite out of this growing problem. Reel Enthusiasm PASSION, PATIENCE AND PERSISTENCE ARE THE SECRET TO PAMELA DANA’S SUCCESS BY JENNIFER HOWARD

WHEN DR. PAMELA DANA hangs a “Gone Fishin’” sign on her office door, it doesn’t mean she’s playing hooky from work. Quite the opposite, in fact. Although Dana is the senior strategic advisor for the Florida Institute for Human and Machine Cognition (IHMC), she’s also the owner/operator of Destin-based Sure Lure Fishing Charters. Dana’s USCG Merchant Marine Masters credentials – her captain’s license — shares space on the wall of her office with her master’s degree from Harvard and her doctoral degree from the University of Southern California. A peek at her resume reveals that she was a Fulbright scholar and the recipient of numerous awards, including the Florida Defense Alliance Distinguished Service Award. She sits on several corporate and business advisory boards and councils, and she runs her own business. It’s enough to swamp any high-powered executive’s calendar. So how is it that Dana can maintain an organized schedule — much less a semblance of balance — among all the committees and councils and meetings and commitments? The Holiday Isle resident admitted that it can be a challenge to stay afloat, but she does so by getting involved in only the projects or work that fire her enthusiasm. “I don’t let myself sink into things I’m not passionate about,” she said. Dana’s list of interests is long, and it varies, greatly. “I have such a unique blend of things I’m involved in, that I must be able to shift gears on a dime and keep abreast of all the relevant issues for all of them,” she said. Like most people who live on the Emerald Coast, Dana, who is a California native, was first drawn to the area because of its gorgeous 46

beaches and scenic waterways. After receiving her Ph.D., a 10-month fellowship in California’s Trade and Commerce Agency led to an offer of the position of assistant agency secretary. When an election brought in a new governor in 1999, Dana petitioned then-incoming Florida Governor Jeb Bush for a job. She served as executive director of the Governor’s Office of Tourism, Trade and Economic Development (OTTED) until 2007. At OTTED, she oversaw more than 80 programs and partnerships and held the position of the state’s chief protocol officer.

CATCHING THE EXCITEMENT

While working in Tallahassee, Dana had the opportunity to spend some weekends on the Emerald Coast. When a gubernatorial election again mandated a change in her life, she decided to make Destin her home. She learned that the Sure Lure, a 40-foot Infinity Sportfisher, was for sale, and she immediately purchased it. “Growing up in Northern California, we had a fishing camp on a river,” she said. “My father had a sports equipment store and was a fishing guide. My uncle was a commercial fisherman, so the fishing business made a lot of sense to me.” In addition to the so-called “six-pack” Sure Lure (“six pack” because the boat can carry six fishermen plus crew), the California-girl-turned-charter-boat-captain

built her business to include the Fish Dish, a 21-foot Sailfish, for inshore and bay fishing. Her fervor for fishing goes beyond her record-breaking catches. “I really enjoy introducing customers to fishing,” she said. “No matter what size fish they catch, they really catch the excitement.” When asked to share a fishing tip with other fishermen, Dana circled back to her belief that being passionate about what you do creates success. “It takes patience, persistence and luck,” she said. “And (you should) be there for the love of it.” Telecommuting from Destin and owning her own business make it possible for Dana to maintain balance between her entrepreneurial efforts and her boatload of responsibilities with the Florida IHMC. Make no mistake, she is as passionate about the Institute’s high-tech work as she is about catching big fish. She enthused about an IHMC project to perfect a robotic exoskeleton that enables wounded warriors to recover their ability to walk. “There are only three places in the world with this kind of expertise,” she said.

LOOKING TO THE FUTURE

Dana’s zeal for fishing has lured her into the public sector as well as into private enterprises. Despite having one foot in each world, Dana doesn’t feel torn between the two.

“I enjoy both,” she said. “I see a delicate balance between a strong economy and protecting the environment. Both commercial and sports fishermen are some of the most natural environmentalists. We can’t deplete our resources. Look at the popularity of catch-and-release (programs). I’m clearly not an advocate of destroying the environment for profit. We have to weigh science and economic impact. Fisheries management is very complicated.” Dana’s robust background in tourism and economic development provides her with a big-picture viewpoint with which to oversee the day-to-day operation of her charter fishing business. She is focused on the wave of growth in tourism that has reached the Emerald Coast.

“All over Northwest Florida — from Panama City to Pensacola — we’ve opened the door to a new demographic: visitors from the Midwest and West,” she said. “I definitely see this part of the state having an increase in tourism. We all need to be careful how we develop the infrastructure here so when folks return home, they can look back on a good experience.” Dana emphasized that the cities along the Emerald Coast must be more than great places to fish and go to the beach. “We have to look to the future, understand the new demographic and tap into products and services that appeal to them,” she said. No magic formula exists for success in tourism any more than it does in fishing. Sounding every inch the Ph.D.

in International Development and Economics, Dana said, “We need to understand our visitors’ demographics, offer appropriately priced products for visitors and have excellent marketing.” It’s no silver bullet but a time-tested strategy Dana relied on when she led strategic efforts to rebound Florida’s economy post-9/11 and the hyperactive 2004–05 hurricane season. Is there a secret to her multi-faceted success? “I just seem to be put in a place where doors open,” she said. “Success is never final. There is plenty of room for my business to grow.” Somewhere on a dock or a boardroom agenda or maybe even in a government bureau, another door is surely opening for Dana right now. Jeanne Dailey FOUNDER/CEO 32 years of service Hometown: Toledo, Ohio If not born locally, when did you move here? From where? What brought you to Destin? I moved to the Emerald Coast in the early 80s. My college roommate had moved to Destin for a job, and we thought it would be fun if I moved here too. I was eventually hired by Randy Newman who was in the process of building a new development and needed a real estate sales person and resort property manager. He hired me in 1983, and we started Newman-Dailey Resort Properties in 1985. In 1988, I bought the business and became sole owner. What’s your favorite part about Newman-Dailey? The people. Not only have we built a team of incredible individuals that together make up the Newman-Dailey team family, but I enjoy connecting with all our owners, guests, clients, vendors and community partners that I’ve had the privilege of getting to know through the business. I consider them all part of our extended family. What has been the biggest challenge? Anyone who has been in business for any length of time knows there are going to be challenges. We’ve been through poor real estate markets, devastating storms and an unexpected oil spill, among other challenges. I don’t know that any one challenge is the biggest; they are all different and provide the opportunity to emerge smarter, more experienced and a better business person. The greatest thing I’ve learned is “this too shall pass.” 52

What is the most rewarding part of your job? Supporting and watching our team members grow. We have team members that have been with Newman-Dailey for more than 20 years. Supporting them, giving them the tools to succeed and watching them grow as professionals and individuals has been incredibly rewarding. Now we are grooming the next generation of professionals, and it is equally as rewarding to see them grow and thrive.

What’s your favorite Newman-Dailey tradition? The Newman-Dailey Christmas party. It is a 30+ year tradition. Every year, I find myself stressed as I plan and prepare for the party. But once the night comes, I am so thankful to have an evening to celebrate with the Newman-Dailey family and dance! We all have a great time together. One word to describe Newman-Dailey? Integrity.

My grandfather was a Lieutenant Colonel and was stationed at Hurlburt. What’s your favorite part about working at NewmanDailey? My favorite part is that we are very much like a family. Everyone I work with is enthusiastic about their job and is happy to be here. How can we not be with such a wonderful founder/owner to work for? It is truly a blessing to be a part of this organization. What has been the biggest challenge? We want each and every guest to have a wonderful vacation experience. We strive for 100% satisfaction. We are deeply upset when we fall short. So we take that challenge and opportunity to make it right.

If not born locally, when did you move here? From where? What brought you to Destin? Born and raised in Wisconsin, I traveled around Europe before moving to Fort Walton Beach in 1993. I met my husband at a mutual friend’s wedding in Georgia and moved to Georgia that same year. I missed Florida so much that after we got married in February 2002, we moved back to Florida. In April 2002, I started my career with Newman-Dailey.

The things we can control are the easy part; what is most challenging are the things we have no control over and trying to turn a negative into a positive. What is the most rewarding part of your job? Making happy memories for our guests as well as successful and profitable relationships with our homeowners. From where? What brought you to Destin? I came to the Emerald Coast in December 1993 because my ex-husband was in the Air Force and we got stationed here. After divorcing, I decided I didn’t want to leave paradise, so I made Destin my home! What’s your favorite part about working at Newman-Dailey? I love that every day is a new challenge! No two situations with guests or owners is handled the same way even though the problems may be similar. At the end of every day, I feel like I accomplished something. It’s hard to point to a specific reason. I just love the family atmosphere. I’ve been here since I was 22 years old. Newman-Dailey is a family to me. It is a fun workplace. What has been the biggest challenge? My biggest challenge is the turnover rate in the industry with cleaners. During the summer season, we use 30 subcontractors. We get them trained to Newman-Dailey standards and keep them busy. But in the off season, you lose them because you don’t have the volume of work, and then have to start over each year. We have 12 core cleaners that we work with year-round. What is the most rewarding part of your job? There are many rewarding moments. I am a people person. I enjoy having conversations with our guests. It keeps me motivated. One time, I was in the right place at the right time and able to help an elderly couple unload their groceries and take them to the third floor at Summer Breeze Condominiums. They were so appreciative and thankful once we got all their luggage and groceries upstairs and unloaded. It was a good day.

I don’t know when this tradition started but we’ve been doing it for the 13 years I’ve been here. What is one word you’d use to describe Newman-Dailey? Phenomenal!

If not born locally, when did you move here? From where? What brought you to Destin? I moved here in 2004. While living in Louisiana, I would come here four or five times a year. Every time I would cross the bridge to go home, my heart would ache. I made sure I would find a way to move here, and I did! What’s your favorite part about working at NewmanDailey? Seeing the faces of guests checking in, so excited to be here on vacation. I love talking with potential new owners about how wonderful our company is and what all we have to offer them. It has been meticulously planned as approximately 48% of the community will be untouched nature preserve. The city of Destin installed

crosswalk stoplights in downtown Destin to help foot traffic safely cross Highway 98. The Florida Department of Transportation will also be widening Highway 98 to three lanes in some areas to keep up with the flow of traffic. Commercial opportunities are continuously growing as Whole Foods opened near the Destin Commons. City Market in Destin has expanded across from its location on Highway 98 to City Market Bayside. This project sits on 2.5 acres and will be a lifestyle center of 32,000 square feet. Seascape Town Centre is in the works and will be a 55,000-square-foot commercial retail center. The Centre will have the design of a Cambridge Tower system with five separate towers located throughout the development. 30A Avenue in Rosemary Beach is another great development that offers restaurants, affluent retail, and professional offices. DONUT HOLE BAKERY AND CAFÉ A long line of sunburned tourists snaking out of the front door at Donut Hole Bakery and Café is not an uncommon sight; you will almost certainly have to wait for a table, but the wait will be worth it. During your stay in Destin you’ll be inundated with key lime EVERYTHING (from martinis to perfume) but the key lime donut at Donut Hole is the perfect tropical-tasting vacation treat. VUE ON 30A The beach view from Vue on 30A is spectacular, and the food, atmosphere and service are even more spectacular. Order the D.A. venison rolls and crab cakes; though of course crab cakes are offered at seemingly every Emerald Coast restaurant, these truly stand out. Desserts are freshly made in house and selection varies by chef’s whim, so order one of everything.
