ADISHES. Yes I know radishes can be a bit of a problem. They’re looking fabulous sitting there in their bowl, but what to do with them. Ermm, well you could put them in a salad. Or you could leave them in the bowl until they go a bit wrinkly and then put them in the compost bin. But wait. Help is at hand, here comes Pete, or in this case, shall we call him ‘The Red Radish Raider’. Don’t worry boys and girls, mums and dads, he’ll soon sort things out. “What shall we do with our unwanted radishes Red Radish Raider Man?” “Fry them!” “You what?” “I said fry them”. “Are you serious Red Raider Man?” “Never been more serious in my life boys and girls and what’s more here’s a delightful easy radish recipe you can cook for your tea tonight.” RADISH & CHORIZO SURPRISE Clean your radishes, top and tail them and then cut them in half and fry in a tablespoon of olive oil till they are just picking up a bit of colour. Take them out of the pan and fry the chorizo, cut into ½ cm rings, till it’s just this side of burnt (nice and crispy). Then bung in a whole fresh chopped up chilli and two large cloves of chopped garlic (no onions in this recipe). Fry for a minute and then stick the radishes back in the pan along with some chopped cherry tomatoes and two glasses of white wine, tomato passata or tomato paste, some thyme and oregano and salt to taste. Turn the gas down and let it bubble away for ten minutes and then serve with rice noodles or spaghetti (it’s a pan-national dish).
Why am I giving you radish recipes? What’s going on? I guess I’m feeling a bit weird because everything interesting in my life is just around the corner, but nothing is actually happening now. The town is building up to Sheep Music. Lots of people driving around with sofas and pianos and hardcore and fencing. Lots of tents going up on Wents Meadow. Lots of people looking at the sky and praying. But it’s Wednesday evening and it doesn’t start till Friday. Then again, I am also pretty excited by the Tour de France. Bradley, (as predicted) is comfortably in the lead. Chris Frome is nicely placed in second We take no protecting his team leader. Tomorrow is the last mountain stage where somebody responsibility for might attack him. But once the veracity of the again it’s only Wednesday and information herein it doesn’t end in Paris until SunPete Mustill day. So nothing concrete to Mayfield, Stapleton, report. The most interesting Nr Presteigne, Powys facts that have emerged about LD8 2LS Bradley are that he can cuss Tel: 01544 260051 like a sailor and that rather Email: info@broadsheep.com surprisingly he is a keen ‘mod’. Website: www.broadsheep.com Actually perhaps it’s not surprising because although Lambrettas and Vespas are not allowed on the Tour, he does bear a passing resemblance to a young Pete Townsend. The other thing waiting round the corner is my impending visit, as soon as Sheep Music’s out of the way and Broad Sheep is delivered, to Amsterdam. I’m going to go and meet up with a load of crazy European custom bicycle builders for four days of bicycles, beer and talking about chain wheel sizes. However, the bit of the trip that’s really setting my pulses racing is the chance to experience the wonders of Dutch bicycle lanes. I shall ride from the Hook of Holland to Amsterdam, up the coast on a dedicated bike path all the way. With its very own white lines, roundabouts, traffic lights and even bicycle bridges. Ah, if only we had such luxuries here. Anyway let’s hope that by the time you read this, Sheep Music will have passed off in brilliant sunshine, Bradley will have won the Tour de France and I will be spinning up the Dutch coast between the sand dunes on a dedicated Dutch cycle superhighway – the Noordzee Route. You, my poor dears, will be glued to the synchronised swimming!

The Strange Case of the Exploding Lobster
A
4
DMIT it - it’s not everyday you sit next to an exploding lobster, especially when said lobster is a neglected French philosopher. In the unlikely event that you’re still reading this and have not yet reached for Yellow Pages to look up Maximum Security Homes for Deranged Thinkers, let me explain. Recently in a posh Powys [sorry, ‘Paris’] bistro, the man sitting next to me was wrestling with a lobster. It should have been an unequal battle, the lobster being, as we philosophers like to call it – dead. But far from it. The lobster is tricky enough when alive, but considerably trickier post mortem, as the poor mutt who had ordered him was about to discover. The waiter had provided the man with an impressive array of tools designed for the job, all of which he ignored, instead opting to lunge at the beast with a knife and fork. You don’t need to be in MENSA to know that the attempt was doomed from the outset. As the man got more and more furious, diners in close proximity got more and more intrigued and then more and more alarmed. Eventually the man made one last savage attempt to penetrate the lobster’s defence system. But being a wily creature the lobster would not give up its secrets any too readily. There was, so to speak, a sting in its tail. What exactly happened next will perhaps never be fully understood. Suffice it to say that suddenly and without warning the lobster exploded, scattering itself all over the man, his companion and several other diners. There were bits of lobster everywhere. Diners, including your philosopher-in-residence, were seen trying to get lobster stain out of their clothes and fragments of legs and claws out of their hair. As for the elegant Parisian lady with a rather low-cut dress - well, she just couldn’t see the funny side at all. In his book, The Republic, Plato has much to say about the Philosopher-King, but nothing at all about the Philosopher-Lobster. Although not a stranger to French philosophy and knowing my way around the likes of Descartes and Sartre, I have never once come across a single reference to this sadly overlooked Gallic thinker – M. le Homard. Nevertheless, he has much to teach us. Like what, you may ask? Well this, for a start: sometimes tasks we assume will be simple turn out to be impossibly difficult. M. le Homard reinforces a basic principle of philosophy: never, but never, take anything for granted. Do not assume – an insight the diner had yet to learn. And another thing: if you keep failing in your attempt to do something, there’s little point in repeating the same thing over and over again. Instead, try something different. Even a further insight: why, oh why! didn’t the man use the tools provided? He failed to recognize that other people might just know something he didn’t. He should have learned from the experiences of others. A little humility goes a long way. M. le Homard also knew that small things can create disproportionately huge problems. In fact, this is
possibly a yet-to-be-formulated law of the universe: the smaller the thing, the bigger the problem. One day it will perhaps become known to the world as Homard’s Law: ‘The Difficulty of a Problem is Inversely Proportional to the Size of its Cause’ - a truth dramatically demonstrated to me quite recently. If anyone wants a half-decent proof for the existence of the devil, he need look no further than that tiny gadget from hell - the zip fastener. On a very crowded Metro train I watched a man zip up his anorak. At least that was what he thought he was zipping up. In actual fact he was inadvertently attaching his anorak to the anorak of the man standing next to him. The two zips chose this precise moment to become locked. A pity the men were getting off at different stations. Another tiny cause of great misery are those wretched individual plastic pots of milk you get in cafés of a certain standard. It’s a total impossibility to get to the milk. But what is not widely understood is that this is nothing but a further cunning ruse on the part of the government to run down the British dairy industry. People get so exasperated with trying to take the top off these accursed pots that in the end they decide to give up milk altogether. Yes, M. le Homard has much to teach us about the minutiae of life, whether they be the bringer of joy, or misery. To quote that contemporary giant of a philosopher, the great Arthur Daley: get the little things right and “the world’s your lobster”. Philosopher-in-Residence

She was just a part-time waitress in a greasy-spoon cafe, but she stole my heart with a slice o’tart when she set down her tray. CHORUS: I lost my heart to a Bakewell Tart in a caff in Matlock Bath. The bikers outside said, “Take you for a ride?” - I said, “You havin’ a laugh?” Frances Field
BAKEWELL TART I met you in the cakeshop In old Bakewell town You were lying there seductively In your soft almond gown. You hid your blushes secretly Within that warm facade I put my lips around you And you succumbed to this young lad. MR PERNICKETY in the Marches Mr Pernickety’s Guides are essential reading for the discerning diner in the Marcher towns of Ludlow and Hay-on-Wye. All Mr Pernickety’s reviews of eating places are untainted by financial consideration. Praise is given strictly when merited, clear disapproval expressed only when deserved as a prophylactic against the disappointment of users’ gastronomic expectations. This advice will more than recoup a modest outlay of £2.50 from brave shopkeepers in both towns.

food page Tomatitos, Hay-on-Wye
A
S his regular readers will know, Mr Pernickety, although a stern and demanding critic of inns and restaurants is, au fond, a red-blooded romantic. Passion and danger to him are as a bottle of Chablis and a dozen fine de claire oysters. As Mr P crossed the threshold of what used to be The Wheatsheaf in downtown Hay-on-Wye, the hot harsh voice of an Andalusian gypsy wailing about his paramour’s lack of candour made him prick up his ears with excitement. The lusty roar of the corrida, the clattering of castanets in the slender brown hands of a sloe-eyed bailarina, the sweat coursing down the temples and flickering fingers of a stone-jawed guitarist – the sights, sounds and smells of a smoky Sevillana taverna fuelled memories of his giddy past. Tomatitos on a dull Tuesday in the wettest summer in Britain since the Romans left was no Andalusian taverna, and it wasn’t very full either – just a Scottish scribbler nursing a bottle of Rioja, a proprietor and a young helper. But the radio was lightly tuned to a Sevillano radio station, Mas Flamenco, matching the garlic smells of bubbling tapas somewhere at the back of the building and making Mr P feel suddenly alive, at once putting him in mind of the sweaty dancers, clacking doodahs and so on. The former Wheatsheaf was, frankly, a bit of a rough house, where, Mr P recalls, gin and tonic didn’t come with ice, or lemon, and the menu, untested, wasn’t encouraging. The new occupiers have tidied up, applied good colours in the right places and given their tapas bar a lightness which has entirely dispelled the old gloominess of the place (although the outside could still do with a similar facelift). It is happily furnished with honest old deal tables and a mixed bag of seating. Only the light beech stools at the bar struck a jarring, sub-Ikea note. Immediately eschewing his doctor’s puzzling instruction to stick to one ‘unit’ of alcohol per diem, Mr P ordered a glass of good rioja (and then another and then another) and introduced the Children’s Menu Consultant (who accompanied him whilst Mr P’s Lovely Companion was haggling in an uptown frock shop) to the simple pleasure of Orangina. The LC blew in looking a little testy – apparently mid-haggle – and helped Mr P to choose a selection of tapas. Mr P’s previous experience of ‘tapas’ in England has not been good. They seem usually to be pale, listless imitations of the robust, passionate little platters to which he became attached while researching breeders of rejon horses in southern Spain (for a novel about the London fashion scene in the 1970s, oddly enough). At Tomatitos, Mr P and his team didn’t identify a single dud (apart from the LC not liking the anchovies being served in vinegar, despite being from a nation where they eat roll-mop herrings for breakfast.) Gambas in garlic so impressed the CMC that he could only gasp, ‘Yummie’, a view with which Mr
24
P readily agreed. The albondigas (meat balls) and chorizo stew with beans tasted absolutely authentic (and delicious); it’s clear that someone in the kitchen has made a proper study of how the sauces should be prepared. Croquetas de aroz y qeso were lovely, tasty little parcels (of rice and cheese) with mayonnaise. And the flat bread (by Kate down the road) was good for soaking up the excess sauces. The LC – sometimes a little tetchy leading up to nose-bag time – had perked up noticeably as the tapas had gone down, although she felt she hadn’t eaten a full meal and kept wanting more. Mr P took the blame for allowing parsimony to restrict his ordering to only nine little dishes. That is the one trouble with tapas (even good ones). Although each dish is only £3 or £4, when a punter really starts ordering them, the bill can become unexpectedly high, when he may have come in thinking he was only going to buy a snack. Of course, Mr P could have just breezed in, had a single glass of wine (or a glass of chilled Tio Pepe, if they do it – he didn’t check) and a couple of tapas, and then left, having paid not much more than a tenner, but it’s hard to restrain a hungry woman at lunchtime, midhaggle. However, Mr P and the LC – like the former Governor of California – will be back; they look forward to returning to Tomatitos soon, on a warm summer’s evening when the guttural flamenco voices will mingle with the aroma of albondiga sauce and the squeal of martins in the crepuscular air and when, he is sure, the bar will be buzzing, as it deserves to be. Mr Pernickity

Riding the winds of change O

N 10th July 1985, a BBC report began: “The Greenpeace flagship Rainbow Warrior has been blown up in Auckland Harbour, New Zealand. One of the 11 crew members on board has been killed. He has been named as Portuguese photographer Fernando Pereira, 33. Two explosions, 60 seconds apart, ripped through the stern at 2345 local time (1245 BST) and the environmentalists’ boat sank in four minutes. Captain Peter Willcox said he had no idea what caused the blast, but strongly suspected sabotage since there were no explosives on board and only a small engine was operating at the time.” Rainbow Warrior had been leading the famous protests against French nuclear testing at the Mururoa Atoll in French Polynesia and was about to depart Auckland to continue the campaign. A hole measuring six feet by eight feet (1.82m x 2.43m) was found in the boat and divers recovered remnants of limpet mines, unavailable in New Zealand. Following an investigation, Major Alain Mafart and Captain Dominique Prieur were charged with the bombing. They were later confirmed as French secret agents. This event is etched into the pages of history. It led to the resignation of French Defence Minister Charles Hernu and following on from this, in 1998, France ratified the international nuclear test ban treaty. A new Rainbow Warrior, Rainbow Warrior ll, was launched in 1989, with many of its fittings paid for out of compensation from the French Government, but after heading up 22 years of Greenpeace campaigns, Rainbow Warrior ll has retired. Last November however, with Warrior devotee and Glastonbury hero Michael Eavis on board, Rainbow Warrior lll was launched. She has been designed as one of the most environmentally advanced ships for her size today, with the sun and wind providing 90% of her energy. Her strong A-frame mast system can carry more sails than a conventional mast and the hull has been specially designed to minimize friction in the water. There are systems to recycle the engine’s heat and waste “grey” water and a modern communication system that is based on solar powered microwave satellites. The legend lives on, riding at the forefront of the winds of change. The new warrior is pretty magnificent … measuring almost 60 metres in length and with 50 metre masts holding over 1,200 square metres of sails. Not only is she one of the greenest ships today, she is one of the most potent symbols in the battle to protect life on earth. During her previous incarnations, she has endured bombs, raids, long journeys, difficult waters and rammings by larger boats. Perhaps that resilience and determination to prevail under any circumstances and on behalf of people and planet is what keeps the legend alive. Meanwhile, having mentioned wind energy recently, I too have found myself under attack (For the record,
I don’t have any “vested interests” in the local wind farm and never have). Oh yeh, it’s alright for Mustill, Roger, Hugh and co, writing funny stuff about bikes, Bakewell tarts and Tom Waits. Who’s going to accuse them of having vested interests? Luckily however, and despite the rain, a spot of simple good news has been passed my way and I am here to share it ... h.energy 2012. “h.Energy 2012” says Kate Gathercole “is a free, county-wide, open exhibition of events and activities about energy saving and sustainability” I went last year. It was excellent. The week involves everyone around the county, including schools, farms, community groups, businesses, householders, charities, shops, restaurants, councils and public organisations – and it’s a chance to find out about local energy solutions and sustainable businesses/lifestyles from people who are already doing it. The event takes place in October, so if you’re in Herefordshire and would like to hold an event or showcase your low carbon initiative as part of h.energy, you need to get in touch with Kate, Pete or Dave at New Leaf. The original August 1 deadline has been extended by a couple of weeks because the new brochure has something super-duper about it that makes the whole process more efficient … even so, don’t leave it too late. www.herefordshirenewleaf.org.uk
