Winter Nights’ Entertainments

IN my last essay we scrutinised a few important cocktails for use during the shortening of the days, and I hope that having read it everyone is feeling better, though if you paid too much attention to the subject matter that seems unlikely. Now that the nights are properly drawing in, the Politburo of the Foundation for Useless Information has decided that it is the moment to discuss a bit of cookery. Cookery is good stuff, and better, on the whole, than mixing cocktails, as though the dishes you confect may make you vomit they will probably not lead to you committing any crimes first.

You cannot, however, go far wrong with bread; so bread is what we will start with. The Marches are just about awash with bunsmiths and loafers. In Hay there is Alex Gooch, the Guardian’s favourite baker. In Presteigne there is the ineffable Phoebe Boulanger, maker of fine loaves and patisserie, also available from the excellent Grapevine in Kington High Street. And if you have eaten the lot and you are bored and it has got dark early you can always have a crack at making it yourself.

I know, I know. Any minute now, you will be grumbling, this person is going to start saying that it is time to make sourdough using that recipe in the Guardian and put some distance between yourself from the Yeast Corporations, who are almost certainly a subsidiary of Exxon and one handshake away from the militaryindustrial complex. Sourdough, you will maintain, is pure and innocent. Well, the hell with that. I merely point out that sourdough yeasts are pretty random affairs, and while kneading sourdough dough is by all accounts hardly necessary, a kitchen in which sourdough has been made looks like a dandruff epidemic in a whirlwind. And that yeast is not murder, but yeast.

Here I might have shoved in a recipe, had I known one. But actually come to think of it here goes. Mix together the right amount of flour with the right amount of warm water and the right amount of yeast with a pinch of sugar and slightly more salt than you thought advisable and slightly less olive oil than you thought proper. Then do some kneading. This should go on for about fifteen minutes, and combines the therapeutic effects of the a/c part of massage with the interesting bits (i.e. the moment before your creation blows up in the kiln) of making pottery. You will then, obvs, knock the dough down and squish it into a tin or form it into something delightful, slashing the top with a knife to make it look proper Ethnick, wait a bit, and bake it.

Many at this point will be saying, this is all very well, but we live in the new-as-tomorrow space age in which social media is king, and have you never heard of bread-making machines? To which I reply aye, yea verily, I have heard of bread-making machines. In fact I used one to set fire to a 12,000 ton merchant ship halfway between

the Philippines and Hawaii, a black curse on the lot of them and if I never see one again it will be too soon.

It is worth remembering, when you are making bread, not to get carried away. At one extreme there is the addition of walnuts, raisins and liquorice allsorts because they will look pretty and taste charming. At the other is the use of superauthentic ingredients like spelt, a form of animal food, and in extreme cases screeding grit, to produce something very like the medium-weight throwing bread used during battles by Terry Pratchett’s dwarves. Seek a happy medium.

In the end, should all work out as you hoped, you will have something in front of you suitable for toasting and filling the kitchen with the smell of motherhood and allied warmths. And if it doesn’t work out, well, at this time of year the birds will be approaching the tables, and what better sustenance than a slice or two of a reject loaf? If even the birds won’t touch it, you will need to keep warm, and bread burns. As you may already have discovered.

THE OUTRUN (15) – 117 MINS

Oscar-nominee Saoirse Ronan never shies from tough, complex roles (HANNA, BYZANTIUM) and here she’s Rona, a fiercely intelligent but deeply flawed alcoholic – “I cannot be happy sober” – who leaves her messy, conflicted London life and worn out boyfriend (Paapa Essiedu) to live with her religious devotee mother (Saskia Reeves) on the wild, and beautifully rendered Orkney. The power of raw nature exemplified by the unforgiving climate and the wildlife she’s confronting in her new role as a conservationist contrasts with her rackety metropolitan past, and so the metaphors roll in thick and fast. But co-writer/director Nora Fingscheidt’s constantly shifting timelines also serve to illuminate Rona’s relationships with both her crazy mother and her bi-polar father (Stephen Dillane) who, forced to sell the family farmhouse, lives in a caravan whilst still working the land and make for a discursive yet powerful eulogy on the possibilities of self-redemption, and Ronan has never been better.

MEGALOPOLIS

Part whacky comedy, part strong political drama, part art-house sci-fi and more, this latest from THE GODFATHER, THE CONVERSATION and, my favourite, RUMBLEFISH writer/director/genius Francis Ford Coppola is in its own way as impressive as any of those, but also a challenging watch. It’s all about the efforts of an egomaniacal visionary, Cesar Catilina (Adam Driver), to re-build a waning New York as a modern utopia called New Rome, displacing the ruling elite in the process. With a wink to his critics, Coppola’s film is basically all about folly, in his case the massive budget of a project he originated in the 1980s which he self-financed partly by selling off much of his wine business, but it’s a multi-layered, sometimes confusing narrative involving Cesar’s conniving mistress (Aubrey Plaza, T.V’s THE WHITE LOTUS), his billionaire uncle (Jon Voight) and his political fixer (Dustin Hoffman). And apart from anything else, it’s visually jaw-dropping.

FRENCH FILM FESTIVAL

Hereford’s Courtyard is showing a selection from the UK-wide French Film Festival.

ALONG CAME LOVE is, yes, a love story with a familiar theme of a rich wealthy student who falls for a single mother waitress but with a neat twist involving her son and his effect on their growing relationship. The writer/ director, Katell Quillevere’s last outing, HEAL THE LIVING, was feted at several festivals including Toronto and Venice and showing the same week is Woody Allen’s 50th film, COUP DE CHANCE. Allen has flirted with French subjects before, notably his Oscar-winning MIDNIGHT IN PARIS and here we have another star-crossed, and indeed illicit love affair which this time turns fatal. Finally if you missed Claude Lelouche’s 1966 Cannes-winning classic, A MAN AND A WOMAN first time around, here’s a chance to see a newly-restored example starring the great Jean-Louis Trintignant and Anouk Aimée, the latter who died earlier this year. DILIGENT readers with healthy memories will recall that two years ago, for a few months, Mr Pernickety was unable to produce his regular review for the Woolly Organ. He was in The Royal Shrewsbury Hospital, undergoing a fairly beastly surgical procedure to remove a life-challenging cancer. The operation was a success – in that the cancer was removed and Mr P didn’t croak, but within a fortnight of his going home to recuperate, with his Lovely Companion doubling as an attentive nurse, he was rattled back to hospital in a tardy ambulance and a state of confused battiness. Back on a ward with a bunch of other old wrecks, he was told he was suffering from sepsis – an unpromising condition from which people of Mr P’s age usually die.

Over the next few days, semi-conscious after severe organ failure, Mr Pernickety was privileged to experience at first-hand what he’d been told as a child was called purgatory - a period of profound regret for the many, many things he had failed to do thus far in life, along with the things he had said and done which he should not have. More immediately, he regretted that he had left three barns full of junk that he had bought in auctions and lapses of judgement (never strong) which the long-suffering LC would have to sling out. And of course, he felt deep guilt about failing to file his columns for the Woolly Organ. Besides, he had just become a grandfather for the second time, with a third in the imminent offing. This was something he didn’t intend to miss and he concluded that it was his duty to survive and fulfil his obligations. He determined that however ill he was, his bucket would remain unkicked.

Four months later, recovering slowly, Mr P wrote his next review of the eating space at Hay Castle (March 2023) and has delivered every month since. There must be those – proprietors of restaurants which have failed to please Mr P’s palate, who would rather the sepsis had got him – one pub landlord has already threatened Mr P with death if he were to enter his premise. His is in a profession not for the faint-hearted.

For this month’s review, Mr Pernickety had no fears. He reviewed Csons in Ludlow six years ago, with two guests, billed as Distinguished Thespian (now sadly resting permanently) and his Glamorous Assistant.

They all enjoyed their lunch, struck by all the originality of the Crouch Brothers cuisine. Mr Pernickety doesn’t doubt that from time to time they extract ideas from other people’s books, but he thinks it likely that a lot of the bright, uplifting taste and texture combos they present are the products of their own their own creativity.

Mr P suggested taking the LC to dinner there as

a thanks for her brave and resourceful rescue of the Pernickety Jack Russells who had escaped to go hunting and were still missing twenty-four hours later; they’re usually back in two. Mr P gloomily predicted they’d been harmed or stolen and was discouraging about the LC’s plan to walk out across the vast area in which they had disappeared. But she was determined. She set off towards the River Teme, and as she approached she heard a familiar barking. She found them a mile from home, stranded beneath an unscalable bank of the torrenting river, where they must have been all night. She scrambled down and was able to haul them up. She deserved recognition for her resolve and a chance to celebrate the terriers’ return.

Mr P and the LC arrived at Csons tired but happy after the ordeal. The place was as noisy and clattery as last time, with clunky wooden chairs on a hard tiled floor. It isn’t the most comfortable of eating places. But what is presented on the plate more than makes up for that. Most of the dishes are offered as small or large plates with prices to match. The LC wanted only one small plate, and chose Caldecott Chicken Shawarma with mint yogurt – she loved the freshness – harissa, nut and sesame dukkah, and pink pickles which gave a good bite. She beefed up her dinner with a bowl of roast potatoes and aioli, and another of greens with lemon and garlic (Mr P laid into both with relish). He started with small plate of thick, chunky smoked salmon, mustard yoghurt, capers, pickles, labuch and horseradish – a sensational feast of flavours which was instantly elevating. They drank a glass each of Paso Primero – good Spanish house wine, via Shrewsbury. Mr P’s second small plate contained two succulent hunks of beef brisket, (from John at the Ludlow Farm Shop) served with corn & bacon succotash, apple slaw and tangy BBQ glaze, strong and delicious in an entirely different way from the salmon. Mr P and the LC were chirping away merrily after the trauma of the tearaway terriers. They finished dinner with one serving of spiced pumpkin creme caramel, poached pear and ginger crumb, with two spoons. They weren’t stuffed with the food, just excited by it and left well contented. “Economic Folly” - Welsh Senate member ridicules carbon capture

IT is hard to believe how many needless wounds the Starmer government has inflicted on itself during its first three months in power. Some of the blunders have been more about presentation and image than substance.

Within a year or two, I imagine that most of us will have forgotten who Sue Gray was, and why this top Whitehall mandarin became a talking point in the tabloid press in Labour’s early weeks in power. Politicians and top civil servants come and go.

Some are forgettable from the outset and they can be consigned to the history books with a sigh of relief. But, long after the Sue Gray row is over, and her name is a footnote, for me it will be much harder to erase the way the government has shot itself in the foot over its energy policy.

Surely one of the most costly and risky of Keir Starmer’s ideas is the plan to spend tens of billions of pounds on the technology known as carbon capture and storage. The argument behind it goes roughly like this. We need a bold and striking way of fighting global heating. Therefore, let’s splash out and spend an arm and a leg on a huge technical fix.

This so-called solution to climate change has been kicking around for over quarter of a century. But, with a price tag in today’s money of £22 billion, it has a troubled stop-start history. Energy secretary Ed Miliband recalls that all too well. It was fifteen years ago that, as Secretary for Energy and Climate Change, he first attempted to get it underway.

The idea of carbon capture is to collect the exhaust gases from industry and power stations, and bury the carbon dioxide, deep underground, in a region with suitable geology, such as the huge Rough rock formation under the North Sea. To make this idea work, the CO2 has to be buried forever. It’s no good if the carbon dioxide seeps out over the next 50 or 100 years.

When the energy industry starts lobbying government on such a technical issue, it is perhaps understandable for a prime minister to be blinded by science. But when senior ministers, who have access to a full range of expertise from scientists, get involved, there is surely less excuse for them to be bamboozled. To my mind, Ed Miliband, with his ministerial background, has less reason than others to swallow the carbon capture idea, hook, line and sinker. He of all people should have warned Starmer to exercise caution.

Soon after the government re-launched the carbon capture plan this year, a group of climate scientists wrote to Ed Miliband pointing out what they saw as its serious

defects. One of the academics, Professor Mark Maslin of University College, London, asserted that, out of dozens of carbon capture projects set up in the last two or three decades, largely in north America, most eventually had been abandoned.

He said these projects “…have a very poor track record - of over-promising and under-delivering.” He maintained that only two such plants, one in the USA and one in Canada, were still operating. He said, “both have experienced consistent underperformance, recurring technical issues, and ballooning costs”.

Maslin and other critics of carbon capture argue that even it ever worked perfectly, which they dispute, it would lock Britain into dependence on fossil fuels for years to come. Meanwhile the Starmer government are gung-ho for carbon capture, and the Tory former energy secretary, Claire Coutinho has said that “…without a doubt, carbon capture and storage stands among the most exciting ways in which Britain can lead in tackling climate change…”

However, a senate member in Wales has become deeply sceptical about the technology after assessing what it would mean, both in Wales and on Merseyside. Carolyn Thomas, a former deputy leader of Flintshire County Council, has addressed the possible impact of a pipeline which is planned to move CO2 from north and north-west Wales to Liverpool Bay, to be stored in depleted gas reservoirs.

The total pipeline length, including new sections, will be more than 60 km. Ms Thomas describes the plan as “...a political, climate and economic folly.” She claims that “…miles and miles of Flintshire’s highways will be ripped up to allow for the laying of the underground pipeline.”

And, she goes on, “…the project, subsidised to the tune of tens of millions by the UK taxpayer, will serve to entrench fossil fuel reliance…” To date, Carolyn Thomas argues, “… barely a single carbon capture scheme worldwide has collected as much carbon as promised.”
