HOPE that none of the fair minded and kind readers of Broad Sheep jumped to any hasty conclusions last week when Broad Sheep’s name cropped up in the Panama Papers. Admittedly 4.7 billion dollars does seem a lot of money for a small free listings magazine to be stashing in their offshore account, but I can 100% assure you there is a perfectly reasonable explanation (as I already told that nosey git from the Hereford Times). That reporter somehow got the idea I was using Broad Sheep to hide the ill-gotten gains of my good friend and judo partner Vlad, (President Putin to you mate). The perfectly reasonable explanation I alluded to was this... hmmm... hmmm... (sorry, something in my throat). Meanwhile, away from the big sites things should be jumping in the middle of town as well. The Electrical Shop will be serving up their usual brew of fab cocktails and live music. The Fair on the Square will be doing food, vintage antiques and live music all day on Saturday 28th, Sunday 29th and Monday 30th. Most exciting for us is that since Groucho’s disappeared back to the smoke, we i.e. THE FAMILY! have jumped at the chance to run a pop-up bar in the Castle. It’s called The Menagerie and will run from Friday 27th May to Saturday 4th June. Food and drink will be supplied by street food legends Moo & Two and The Whole Cheese and there will be a proper bar serving good wine, beers and cocktails at pub prices in proper glasses. (None of yer £6 for a dodgy plastic cup of Cab-Sav here mate). Friday 27th - Monday 30th there will be live music every night, a featured performer plus the Menagerie House Band and guest DJs. The Holy Grail: the Ultimate Bacon Sandwich W

HEN Covent Garden was still a genuine wholesale vegetable market, I remember seriously considering opening up a café there with a friend, which we were going to call ‘The Ultimate Bacon Sandwich.’ This was in the days before these shores had been invaded by the likes of Starbucks and Costa, although an advance party from McDonalds had just planted its flag in Woolwich High Street. I’m old enough to remember when the only place in London you could get a decent espresso was in the legendary all-night Bar Italia, in Soho’s Frith Street. And a pretty edgy experience it was too, as you’d as like as not be sat up at the zinc counter between a prostitute and a minor mobster. Our bacon sandwich enterprise was going to offer numerous cuts of bacon and ham (including the delicious paper-thin Prosciutto di Parma), between sundry dough-based enclosures, from rye and wholemeal bread, through to bagels, croissants and cobs. Along the counter there would be more jars of chutney, ketchups and mustard than you could shake a stick at. Our dream was to patent our café’s name and then offer it on the franchise market, ensuring a UBS in every town in England. We could have been as rich as Mark Zuckerberg, if we’d only got our act together. But it remained a pipe dream and I am still searching for the ultimate bacon sandwich experience today. To promote the subject, I decided (with the Editor’s permission – though no expenses were offered) to ‘road test’ half-a-dozen establishments in Hereford. Below are my Michelin-type findings. Broad Sheep readers may care to write in with their own bacon sandwich experiences from elsewhere in The Marches. Ascari’s Ever since Anthony Vaughan left to join the Great Barista in the Sky, this West Street café has been a changed place and (like Mamie Van Doren) has undergone countless face-lifts. My bacon sandwich scored 6 out of 10, because butter had been added (see final entry below). As always, the service was fast and courteous. All Saints Café Bacon sarnies probably aren’t mine host Bill Sewell’s mainstream item here, though his hardpressed kitchen staff rose to my early morning challenge, with an offering on a par with Ascari’s, using their own granary bread and what I detected was bacon from Mr Tudge’s farm at Richard’s Castle. At £4.45, it was the most expensive sarnie on my survey. County Bus Station Café A strange place, this, mostly peopled by Sun-reading Yeomans bus drivers. Décor is 1950s and should be given Listed status. Though this café recently scored a top 5 on the council’s hygiene standards Richter scale, it scored a paltry 3.5 on my BS scale, as the luke-warm sandwich filling had clearly

been parked on the side of the cooker for half-an-hour. Also, the white bread slices were thick and not medium, thus offending the inviolate B2B (bread-to-bacon) ratio. Miro The new management are making a decent fist of it here in St Owen Street, with burgers certainly a match for Aubrey Street’s ‘Rule of Tum’. However, I have to report that on the bacon sandwich front, they still have some way to go. Mine scored only 4, partly due to the slow service - which meant that the filling wasn’t piping hot – but also because of a herd of noisy Hereford Cathedral School mothers, grazing at the next table. Tiffany’s (Inside Hereford Butter Market). An artist friend used to refer to this place (under a previous management) as ‘Bruegel’s’, because he was convinced that most of its customers had once modelled for one of the 16th century Flemish artist’s ‘nightmare’ paintings. Today, it is friendly and busy and on the BS front, scored a creditable 5.5. No doubt their bacon comes from Mr Preece’s excellent stall at the west end of the market hall. Walk Café (Union Walk, next door to Nick Fisher Music). Look no further. This, my friends, is Sarnie-Nirvana. Slices of fresh, spongy white supermarket bread (medium cut), enclose at least 3 slices of piping hot back bacon, tantalisingly peeping out from the edges. No butter is used, though a generous dollop of bacon fat is provided as lubricant (Mockney TV chef Jamie Oliver recommends briefly dipping the sarnie’s top slice into the pan you grilled the bacon in). The final touch which wins my Oscar? The sandwich was cut across the middle on a slant (eschew any bacon sandwich which has been cut into two geometrically-equal portions), to create a matching pair of mouth-watering trapeziums. And at £2.40p what more could you ask for? Nick Jones

cinema YOUTH (15) Isolated in a glitzy Alpine spa, two aging but celebrated artists, musician Fred (Michael Caine) and screenwriter Mick (Harvey Keitel) muse on their physical woes, romantic regrets and much else besides. Other guests come and go including Fred’s neurotic daughter (Rachel Weisz), a snippy young actor (Paul Dano, MEEK’S CUTOFF), a wonderfully sweary older actress (Jane Fonda, magnificently cast) and popstress Paloma Faith playing herself to the max. As with his Oscar-winning THE GREAT BEAUTY and previous, rather underrated English-language film THIS MUST BE THE PLACE, writer/director Paolo Sorrentino, is less concerned with plot than creating a work of almost intoxicating sensuality, although watching Keitel and Caine at the top of their considerable game compounds the delight of this Palme d’Or-nominated masterpiece. TRUTH (15) Screenwriter James Vanderbilt (WHITE HOUSE DOWN) makes his directorial debut with this crisply fashioned thriller centred on George W. Bush’s military service record during the 2004 U.S. presidential campaign, which plainly sides with its protagonists, award-winning CBStv news producer Mary Mapes (Cate Blanchett, reliably riveting) and stentorian-voiced anchorman Dan Rather (Robert Redford, exuding twinkly gravitas). Tipped-off that Bush dodged his patriotic duty, Mapes and her team – keenly portrayed by Dennis Quaid, Topher Grace and Elizabeth Moss (MAD MEN’s Peggy Olson) – rush to establish the veracity of the allegations, if not to judgement. Following 2012’s Oscar nominated NO which focused on efforts to counter Pinochet’s abuses of power, the young, much acclaimed Chilean writer/director Pablo Larrain yet again courts controversy, yet again with his talented repertory company which includes Roberto Farais, Marcello Alonso, Alfredo Castro and his wife, Antonia Zeggers. A quiet seaside town shelters several disgraced priests including the doleful Father Vidal (Castro), tended by an apologist nun, Sister Monica (Zeggers). But when yet another fallen cleric arrives, a local fisherman (Farais) recognises him as the man who abused him as an altar boy and, almost literally, all hell breaks loose. OOR old Knighton is an English town in Wales which Mr Pernickety first visited over 30 years ago when he was a lusty young hiker – doing the Dyke, as they say in Rambler Speak. He perceived, even in his youthful naivety, that here was a town abandoned by progress and struggling to find a rasion d’etre in the late 20th century. After a day on the uplifting uplands between Kington and Knighton, Mr P stumbled into what had clearly been adopted as Knighton’s new right to exist in the form of the Offa’s Dyke Centre for when the Offa’s Dyke Long-distance path was opened in 1971, the town which stands on the mid-point of the path, identified a chance to generate profits from the hordes of hungry, high-rolling urban ramblers that would stream through the place. In the event, they have had to cater for a trickle of trampers of thrifty, and generally dorkish disposition (Mr P to a T), which has not proved such a rich seam of tourist income. Only a few nooks and corners of pre-Victorian charm remain, while its chief gift to the local population seems to be housing where the rents are not, as Mr P’s old friend the Rat-catcher would say, too exuberant. It is not even one of those ancient Marcher townships in which old hippies choose to die. It is, therefore, a town underprovided with outstanding eating opportunities, an unlikely hunting ground for adventurous gourmands. On the other hand, reports had trickled through from brocante trading colleagues of Mr P’s Lovely Companion that a former pub in the middle of Knighton has been bought and had new life breathed into to it. On the way home from a bracing trip to Devil’s Bridge, Mr P and his party stopped in Knighton to see what had been achieved at the Red Lion Hotel, just down the road from the Offa’s Dyke centre in West Street. Frankly, the exterior of the Red Lion is not promising, to the point where a former inmate of Wormwood Scrubs might have felt he was coming home. Constructed of dark red engineering brick with chunky hewn stone coins, its 19th century builder sought perhaps to give the place a sense of reassuring solidity rather than light-hearted glamour. The enthusiastic new proprietors, Neil and Charlotte Taylor, must be commended for their vision and supreme optimism in taking it on. However, they did, they bought the pub which had been closed since 2009, and re-opened last autumn. Mr Pernickety must report that against quite discouraging odds, it looks as if the Taylors are making a go of the place. The most impressive thing on entering this externally gloomy bastille of a boozer is the amount of light they have managed to encourage inside by opening up the whole ground floor into one big space. The LC’s eyes lit up at once. It was hard to imagine that one was in the same building. Tastefully Farrowed and Balled in Autumn Toadstool, with a wall of exposed stone and brick around an efficient wood-burner, the large room is floored in lovely oak boards and furnished with genuine, well run-in furniture, with not a stick of beastly pub suppliers’ catalogue stuff in sight: old tables lightly refreshed are surrounded

by auction room chairs saved from their final journey to the kindling yard, tidied up and continuing to lead a useful life, in a setting just the way Mr P enjoys. From the first, Mr Taylor’s enthusiasm for his (Mr P guesses, new) vocation is engaging and trust-inspiring. He seems to have paid great attention to every aspect of his new venture, like the beers, Hobson’s Best as the permanent staple, alongside visitors from Monty’s and the Wye Valley Brewery. His wines, sourced quite sensibly from Majestic’s trade list, is, in the light of two choices made, sensible, to the point and not too long. Food is served in various ways at different times, including the now-ubiquitous Tapas, 4 for £12.50, all day until 7pm (later on Tuesdays). There are a few £10 options for lunch and sharing platters at lunch time. In the evening there is a more elaborate and expensive menu, featuring the Cordon Bleu skills of Mrs Taylor. Mr P, the LC and the Children’s menu consultant shared two starters, Chickpea Fritters (3 at £5.50) and Crispy Whitebait with Garlic Mayo (£6). The tiddly fish had been lightly fried, and the CMC had no qualms about eating every bit of them. The fritters were like good onion bahjis, but with chick peas, not onions – good taste, interesting texture. For a main course, the CMC had his first try at Pan Fried Rainbow Trout with Dauphinoise Potatoes (£14). He tackled it from the skin side, and thought it too dry, but Mr P advised him to turn it over, when he nodded with enjoyment, though he didn’t feel the potatoes were ‘sloppy’ enough. Mr P who is keen on trying out mutton dishes, chose a Lancashire Hot-Pot with Mutton and Mutton Suet Dumplings. It consisted of some excellent al dente vegetables, two tasty dumplings and some succulent strongly flavoured chunks of mutton, but not enough of them either to satisfy a healthy appetite, or to justify a price tag of £16. The LC encountered, by no means for the first time the difficulty of ordering, and being served a rare steak. Without reverting to her ancestral Australian terminology: “Just pull its horns out and wipe its ass”, she nevertheless mentioned to the attentive Mr Taylor more than once that she wanted her Ribeye Steak in Green Peppercorn Sauce definitely rare. At £15, she wasn’t expecting a large hunk of meat, but this was a distinctly slender slice, which probably needed no more than a minute on each side. It was served not far short of ‘well-done’. The LC responded with quick moue of disappointment, but agreed with Mr


P, after he had tasted it, that it was at least good piece of meat, and the green pepper sauce was delicious. A short foray into the pudding menu led to a decision to let the CMC sample a serving of Spotted Dick and Home Made Custard (£6). He liked it a lot, and so did Mr P, who ate half of it. He imagines that the other two puddings were just as well produced. So, there were some cavils, but the main thing is that Mr P and party enjoyed their evening very much; good advice was offered over wines; Mr Taylor, if he is new to the game, is getting his front of house right; if he isn’t, he hasn’t lost his enthusiasm for the job. Similarly, Charlotte Taylor is clearly making a good fist of the cooking, but Mr P guesses she was busier than she’d expected to be on the Wednesday evening his party went, which would explain the overcooked steak. She clearly can and wants to cook well, and Mr P would recommend giving the Red Lion at least a couple tries to allow them to get into their stride. The ambience is charming, and Mr P was particularly delighted not see on the menu a hint of a 95p, which is such an insult to a punter’s intelligence, but he also feels that they might rein in the prices by about 20% to be accessible to a wider range of appreciative customers. A brisker throughput would pay for more help in the kitchen, and still leave a margin. www.misterpernickety.com
