How would you describe yourself? Spinning plates! I love my work, my family and my friends…though I’m still trying to find a good balance between all three!

Where is home? And work? Is there a difference?! Work is either at our original site, Piste Wine Bar & Restaurant in Tarporley, or at our new site, Piste Sandbach. What did you want to be when you were younger? A rock star, and I’m still hopeful! Name a few of your favourite places to be… My favourite places would be at home with my little boy watching Peppa Pig; at any vineyard in Europe; or snowboarding, absolutely anywhere. What/who inspires you? Anyone with a true passion for what they do, who feels the pain of running their own business. A great example would be top to bottom: dishes and interior at piste sandbach; men’s shoes; barolo wines; snowboarding; a vineyard in barolo

someone like Danny Meyer, who’s a New York City restaurateur and the CEO of the Union Square Hospitality Group, which own some of New York’s most famous eateries. What was the last gift you gave someone? A great Barolo – one of the best red wines in Italy and always hard to part with! Tell us a secret or a fun fact about yourself. A New Slant

Pride of Place Liverpool Pride, the LGBT+ annual festival, is now one of the major dates in the city’s programme and attracts over 25,000 people. The theme of this year’s festival is ‘International Love’ and, as part of the celebrations, Manchester Airport will sponsor ‘The World on One Stage’, which showcases international music and culture, including performances by Marcus Collins and choirs from across Merseyside. An impressive consortium of partners – including Storyhouse, Tatton Park and the National Trust – have developed a three-year programme which repositions culture as a prominent offering within Cheshire. They will work together under the new collective name Slant, which was launched at an event in Left to Right Caroline Sutton, Councillor Louise Gittins, Alison Knight, Katherine West, Lord Lieutenant Cheshire David Briggs, Helen Paton, Clive Sykes, Andrea Morley. the grounds of the beautiful Nunsmere Hall Hotel. The programme will focus on increasing the profile of arts and culture, presenting unique events in unexpected locations and breaking out of traditional venues into innovative spaces throughout Cheshire. From the Grand Canyon to Cumbria The Lake District has been officially recognised as a World Heritage site by Unesco, joining the likes of the Taj Mahal, the Great Wall of China and the Grand Canyon. This unique area of natural beauty has inspired poets such as Wordsworth and Coleridge, is home to Beatrix Potter’s much-loved Peter Rabbit, and provides around 18,000 jobs each year. The decision to grant World Heritage status was made by a committee in Krakow, Poland and marks the end of a 31-year bid. (lakedistrict.gov.uk)

History in the Making Manchester is well known as the birth place of many radical thinkers, and the People’s History Museum on Bridge Street celebrates the stories and big ideas which have shaped society. Now, the museum itself also has something to celebrate. Housed in the Grade II-listed former hydraulic pumping station, designed by architect Henry Price, it has been shortlisted for the Family Friendly Museum Award 2017, where children and families pick the winners. This year has been very competitive, with over 700 nominations, but we have everything crossed for when the winner is announced in early October. (phm.org.uk)

True romance Melissa Porter challenges your idea of romance, while getting caught up in the moment

I

was recently in NYC at an elegant gallery soirée and walked slap-bang into a man who caused my heart to stop momentarily. In that starry encounter – and though my first thought was that I might never see him again – I was immediately reminded that fiery chemistry can absolutely exist between two humans. A scintillating, exhilarating exchange and a reminder of what is possible. It was even more of a surprise when he suggested taking me for lunch in Cheshire over the coming weekend and – an even more delicious surprise – when he arrived as promised. Artful romance? For me, his words and promises were not what I had considered so romantic. What was fresh, new and romantic was his choice to follow them up with positive action. He chose to follow through on his words, taking them from what could have been empty and hollow, to an entire plethora of progressive possibilities. The sort of man who can take an empty word and fill it with the authentic and messy magic of integrity inspired actions: that’s what I consider romantic. “But where are the shoes, flowers and handbags?” I hear you call. A slap-up dinner, designer handbag or bunch of blooms has historically been considered a romantic gesture,

and I challenge you to rethink if this is always truthful. Potentially this ‘romantic gift’ concept has become somewhat prehistoric: it can be viewed as one-dimensional and sometimes misleading. Picture the scene: an oversized orange box tied with a black bow is received, and contains a gorgeous grey calfskin Hermès handbag, nestled cosily within swathes of the brand’s exquisite tissue paper. As I opened what many might consider a box of magic, I instead felt I was viewing a can of ugly wiggly worms. Did I consider any part of this massive £4,000 gesture romantic? No! It was sent to me (after I’d discovered my then-partner’s infidelities) by way of a quick-fix apology. Therapy, I would have considered a romantic gesture. Personal development, with the intention of getting to the root of the challenge, I applaud. But plastering over a wound with a simple-tobuy and expensive gift is not romantic. See the difference? The art of romance begins and ends with loving, multi-dimensional intentions. Love is truthful, love is patient, love is kind, love is honest and love is filled with integrity. above As British salon empires go, very few can claim a heritage to rival that of Liverpool’s Andrew Collinge. Gemma Knight meets the couple behind the brand, Andrew and Liz Collinge, to find out why staying power is all in the genes

W

ith six salons – across Chester, Liverpool, Heswall, Ormskirk and Manchester – two training salons, a training school and a branded product range, it stands to reason that the Andrew Collinge name is synonymous with luxury haircare in the north west. And, in case a prolific presence and renowned reputation weren’t sufficient pedigrees of such a boast, the brand even has a near 80-year heritage to seal the deal. The first Collinge salon was opened in 1940 by Wilfred – who had trained as a barber in Southport – and Molly Collinge, on a quiet street in West Derby, Liverpool. Soon, their son Peter was training to follow in his parents’ footsteps, perfecting his skills aboard the luxurious ocean liner Mauretania, and before long becoming one of Europe’s most successful competition hairdressers. He opened his own salon in the bustling Liverpool metropolis in 1954 and, by the 1960s, several more of the chain has sprung up across Merseyside.

“My father’s first salon was in Liverpool on Church Street and was very much the place to be seen,” his son, Andrew Collinge, tells me with obvious pride, “In 2012 my father was awarded an OBE for his services to hairdressing, and it’s his passion for his craft and his commitment to training that is the benchmark of the business today.” And it’s clear that hairdressing is truly in Andrew’s blood. Born in Liverpool, he headed south in 1976 to finish his training with an apprenticeship at the prestigious Michaeljohn salon in London’s Albemarle Street. Living in a hostel in Kensington, it was there that he met Liz, a Gloucestershire-born student at City College with extraordinarily thick hair and what she describes as a “wicked hairline”. Rather than asking her on a date, Andrew instead invited her to model for him on a training night – and, many hours of studious hair-cutting later, romance had blossomed.

“Having a brand is very much a part of the creative process, it allows us to get the results we want and that our clients want” The pair moved back to Liverpool in 1982 and the brand continued to make waves, with Andrew entering the British Hairdressing Hall of Fame in 1987, winning British Hairdresser of the Year twice during the 1990s and, as a crowning glory, becoming the first British hairdresser to be awarded the Grand AIPP Trophy by the Mondial Coiffure de Beauté in Paris. The business, too, expanded – now under the moniker of Andrew Collinge – with new salons opening in Chester and Manchester, then a new flagship on Castle Street in Liverpool and within the Trafford Centre’s branch of Selfridges. In 2008, the business was voted UK Salon of the Year by HAIR magazine, and is today as much a family affair as ever, with Peter serving as life president; Andrew as creative director and

chairman; and Andrew and Liz’s son, Charlie, now at the helm as managing director. The brand is now also increasingly involved with philanthropic projects, giving back to the area which helped nurture the fledgling business in its early days. Amongst these is new Wirral Youth Zone venture, The Hive: a facility for young people from the OnSide charity, for which the salons recently ran a workshop on hair and make-up to help inspire the young people to potential careers. After all, working with young talents is in the company’s veins, thanks to a long history of providing hairdressing apprenticeship training which, today, has evolved into a government-recognised training program offered to young people from over a 100 salons throughout the north west. The company also recently worked with the British Style Collective when the institution brought a three-day festival of fashion, hair and beauty to Liverpool in July. “The British Style Collective coming to Liverpool was an event we felt we just had to be involved with,” explains Andrew. “We were approached by the organisers to take part, which we did by opening a pop-up salon and having teams of stylists create a collection of ‘Get The Looks’ for visitors. I have many memories of

working at the Clothes Show over the years and it's always a fun event to be part of.” Liz, Andrew and their team also recently launched a range of professional performance styling products, entitled CO by Andrew Collinge – which Liz describes as “a collaboration between Andrew and I, colleagues, family and clients to produce the most useful and effective products for busy lifestyles. “Having a brand is very much a part of the creative process,” she adds. “In simple terms, it allows us to get the results we want and that our clients want – and they smell fantastic, too! We’ve also loved working with our brand ambassador, [gold-medal-winning British field hockey player] Sam Quek. She’s ideal, not just because she has fabulous hair, but because she is successful, ambitious and independent. We arranged to meet her and immediately found that there was a mutual respect and an excitement about working together. Having got to know Sam, we find we share a lot of views about confidence, self-esteem and empowering women and young people.” The couple now live in Hoylake, spending spare time enjoying the beauty of their surrounds: walking out to Hilbre Island with friends, playing golf, cycling or catching the west coast sunset, which Andrew describes as “the perfect way to unwind after a busy day”. But they certainly aren’t planning to hang up their hot rollers just yet. “Our son, Charlie, is doing a great job as managing director, and I’m sure he and his team are going to take the business forward into exciting new ventures and opportunities,” Andrew smiles. “His taking over also means that now Liz and I have more time to work with our creative team on photoshoots, fashion shows and events, and to get even more involved with our training division where we can pass on our knowledge and skills to the new apprentices who join us each year. We work in a very exciting business where no two days are the same, and we’d love to help inspire others to follow this path.” (andrewcollinge.com)


Putting your children f irst when separating

A child’s welfare is the family court’s paramount concern when it comes to deciding arrangements after separation. As society changes, with fewer of us identifying with the traditional nuclear family, splits and divorces can be more complicated and family courts are increasingly being asked to resolve issues. Here are a few answers to frequently asked questions which will explain some of the processes and terms:

Q: How do I Get Parental Responsibility? You automatically have Parental Responsibility if you are a mum; and if you are dad, you have it if you were married to mum when the child was born, or if not you can obtain it through a Parental Responsibility Order. You also have it if you subsequently get married or have re-registered your child’s birth on or after 1 December 2003. Other people can secure it such as in the event of Adoption, obtaining an Order or being the child’s Guardian.

Q: How do I apply for an Order? There is a principle of nonintervention of the court, meaning it will only get involved if parents can’t agree. In most circumstances before anyone can apply to the court for an order you have to attempt to resolve matters. This usually means attending a Mediation Information and Assessment Meeting (MIAM)

to see if mediation might be one way to get parents talking and keep matters out of court. Parents may wish to try and resolve matters more informally, perhaps with trusted family members or friends to assist with anything that might be considered an obstacle. Mediation is not obligatory in situations involving potential harm to a child or where domestic abuse might feature.

Q: What if mediation doesn’t work? If it is really necessary, you may wish to make an application to court. This might be in relation to when and where a child should live or spend time with a parent, a Specific Issue Order such as which school a child should attend, a Prohibited Steps Order, which could prevent removal of a child from United Kingdom, or any other relevant order to a child’s upbringing. If an application is made to court then CAFCASS will be asked to undertake a safeguarding check which involves contacting social work agencies and the police about any information held before the first court hearing, to make sure there is nothing which might impact upon the child’s welfare and therefore the court’s decision making.

It seeks to provide a voice to the child in line with the court’s need to take account of a child’s “ascertainable wishes and feelings” in any decision. The court will be guided by any recommendation made by CAFCASS or give good reasons if not doing so.

am warmly welcomed to The Fine Bedding Company's headquarters in Trafford Park and lead to the meeting room complete with duvets and pillows stacked on shelves, proudly showcasing the company's philosophy of being passionate about sleep. That philosophy is brought to life as soon as managing director, Claire Watkin, walks in and immediately begins on the story of The Fine Bedding Company. “We're a fourth generation family business, very much ensconced in the north west with a love for innovation. The company was founded by my great-grandfather William Harrison when he saw the potential to supply linens and bedding to the shipping lines leaving from Liverpool Docks. But he was also a leader in his time, investing in the development of new machinery and branding. And that continues through to today. “From an early age, I remember visiting the old factory in Oldham with my dad, now chairman, with great excitement at seeing the new machines. When I was around 15 I recall dad speaking about my joining the business one day. As you can imagine at that age, the last thing I wanted to do was what my parents actually wanted me to do!

“So I followed a new path and headed up to Edinburgh to study Biology, followed by a masters in business marketing. This was interspersed with travel. I have always loved to travel and discover new places. It was before mobile phones and email were the norm, so you can imagine my poor parents’ heartache as I trekked across South America, weeks without contact. I am fearful that my daughter, Xanthe, who's only four, will be doing the same, but I've got a few years yet to prepare myself.

“I’m a firm believer that if things can be improved, that’s a good thing” “I think dad used my passion for travel as a cunning ploy,” she laughs. “He identified Estonia as a potential site for a factory. The country had just gained independence and wasn’t in the EU yet but looking to Finland as a guide. In 2001 we secured a newly built empty factory in Estonia and I was sent to help set everything up. From then on, I was hooked. “When I look back, it was the best way to get involved in the company. I’ve had the chance to get to know the business from the ground floor up and I have walked in the shoes of many of

my team, so I can understand the opportunities and challenges we face. “Also with Estonia not being in the EU when we first started working there, we have an understanding of how it might be post-Brexit: a bit more paperwork and time, but all will be well. “We are constantly looking for new innovations in processes and machinery to be able to deliver quality products at different price points. We manufacture and distribute duvets, pillows and bedding under several of our own brands – The Fine Bedding Company, Kings & Queens and Nimbus – and also supply several high-street retailers like John Lewis, Marks & Spencer, Debenhams and Next. And we have a growing number of hotels such as Hotel Football and Hotel Gotham in Manchester and the O2 Intercontinental in London, who are using our products and even offering them for sale to their clientele. We have to stay at the top of our game. “One of newest innovations, SonicSeam, is sewing without thread. It reduces energy use and minimises waste in comparison to

traditional stitched seams. Fortunately, I married an engineer, Meirion, and he's currently working on two new machines to capitalise on this new process. “It's not all about leading the way in the manufacturing process, though. Our Estonia factory, which produces our synthetic duvets and pillows, has achieved M&S Eco-factory status. I think it goes back to my biology days; I’m a passionate believer in producing responsibly sourced products. “I'm a firm believer that if things can be improved, that's a good thing. Our roots are in the history of Manchester's textiles, but we're committed to ethical sourcing and developing better ways to manufacture on every level. “Which leads me to the Northwest Football Awards. Whilst the manufacturing innovations are amazing, it's also about what you really need for a good night's sleep. What's the perfect temperature? Position? Support level? And so on... So we've been working with NIRI (Nonwoven Innovation & Research Institute) at Leeds University, looking at the importance of sleep for sports people. So much time is spent on diet and training, but if you don't recover properly you won't perform as well. The research continues; we have already proudly supplied some of the Olympic team with sleep packs. “We're a sporty family. I was one of three girls out of 200 boys who played football when I was young, and I still play lacrosse alongside my mother and four sisters. My sister is currently organising the Lacrosse World Cup festival. So it all fits together really nicely. I have followed the rise of women's football and can fully understand the trials and tribulations of carving

There's still only a handful of women I could say are leaders in the manufacturing business. I will be proud to present the award to the Women's Player of the Year in November. “If you had asked me, when I was younger, where I would be when I was approaching 40, I would have said in a jungle somewhere measuring things. We did get to spend five months living in the woods in Estonia as a family, though; Meirion, myself, Xanthe (4) and Oscar (2), which was such an amazing experience. “We do love the outdoors, the simple life. Living in Rainow, we’re always out walking with the kids or on the mountain bikes. It’s hard to get the balance of switching off, but we're making the most of it. ndeed he’s just returned from his latest trip to Australia where he’s been filming a new television series to be screened this autumn. However, you don’t have to wait that long, because the man will be arriving here in person soon, as part of his Born to Go Wild UK tour. “Cheshire and the surrounding countryside is such a beautiful part of our country, I’m hoping to inspire your readers to get out and enjoy the beauty around them,” Ray enthuses. “I’m also hoping to give audiences a unique insight into my wilderness travels and survival techniques, including some footage of my recent visit to Australia where I’ve been looking at the extraordinary conditions endured by the indigenous wildlife and the bushmen who live off the land and who have taught me so much.” This legendary bushman discovered the joys of exploring the wilderness at an early age. “I was an only child and my hero was Gerald

I was also fortunate to have a mentor who taught me the basics of how you could survive outdoors and I used to love camping under the stars. Eventually it became my passion, not only learning, but teaching others.” Once Ray’s hopes of joining the Royal Marines were dashed, after taking his A-levels he briefly worked in the City of London. The business acumen he’d gleaned helped him to set up his own company, Woodlore, successfully offering bushcraft-related courses and developing a career as a photographer. That led to books and, from the early 1990s, television. “People often think I made my name on television and then started my company after that – in fact it was the other way round,” Ray laughs. “When the Royal Geographical Society ran a course on how to organise expeditions, I

learned a whole new set of skills that have stood me in good stead ever since.” Ray first appeared on television in 1994 presenting television series Tracks and Ray Mears' World of Survival. In addition he presented a BBC documentary about the World War II sabotage mission by the real heroes of Telemark. “I followed their journey braving the icy waters and their incredible climb up the those dangerous mountains – a real test of endurance – particularly as they were carrying their equipment. I was thrilled to meet some of the few survivors who were among the most modest and brave men I’ve met. Now I’m exploring the incredible story of Violette Szabo, the British spy who suffered horrific ordeals under the Gestapo only to be shot – a true heroine.” Life has never been dull for Ray. While filming an early television series, he survived a helicopter crash when it accidentally struck the ground and broke apart. Fuel-soaked, he escaped uninjured, and administered first aid to a badly hurt crew member. “The survival instinct just kicked in. Once you know you’re okay you help others – it’s all part of survival training.” In 2010 Ray was asked by Northumbria Police to help track fugitive killer Raoul Moat after he fled his temporary shelter in Rothbury. "I got pretty close to him but then the news came that he’d killed himself.” Ray’s fascination for wild areas of the planet undisturbed by civilised human activity has

shaped his life. Others have followed in his path, but one of his pet hates is programmes like I’m A Celebrity Get Me Out of Here. “They make a mockery of eating witchetty grubs, which bushmen regard as sacred because they need to eat them for survival, not entertainment. I just think it trivialises their lifestyle. The bushmen now recognise I’m not a tourist, but one who learns from their wisdom and respects their survival skills.” After two decades Ray’s name is recognised throughout the world from numerous BBC and ITV series. They include the three-part Survival series concentrating on his tracking skills to locate bears, wolves and leopards. However, he admits he hates crocodiles. “They are so unpredictable because they strike without warning. One minute they appear docile, the next lashing out.” Although Ray’s respect for the natural world and its inhabitants has established him as a positive force, he stresses that, away from the cameras, he is the antithesis of celebrity. “When I am running courses, including an annual expedition to the Arctic, I'm a totally different person and sometimes people are shocked. I teach properly, and don't like people who come just because they want to meet me or take my picture." You have been warned! Meanwhile, there’s a chance to get up close and personal with Ray at The Lowry. “I’m really looking forward to meeting the folk who have been my television viewers over the past 20 years. Natalie Anglesey catches up with old friend, Les Dennis about his role as Uncle Fester, reality television and doing the school run

Y

ou don’t have to wait until Hallowe'en to meet the ghoulish Addams family in an entertaining new musical version at The Lowry. Based on the original television series, this new story has been written by Marshall Brickman and Rick Elice, who created the successful musical Jersey Boys, although this time the music and lyrics are by American Andrew Lippa, who was born in Leeds. There’s a star-studded cast including a strong local connection in Cheshire-based comedianturned-actor and musical star, Les Dennis. “I’ve seen many plays at The Lowry but this will be the first time I’ve performed there,” beams Les, who is currently celebrating 45 years in show-business. Since he left Coronation Street, after playing Michael Rodwell for two years, he’s been in demand for musical theatre roles, a genre he’s always enjoyed. “After Corrie I went straight into She Loves Me at London’s Menier Chocolate Factory while my previous musical theatre credits include Me & My Girl, Chicago, High School Musical 2, Hairspray and I just loved playing King Arthur in Spamalot!” Enthusiastic about his new role, Les explains: “If a role excites and challenges me, then I’ll take it. As soon as I was offered Uncle Fester, I tried on the bald wig, but it itched so much I let hair stylist Nicky Clarke shave my hair off and

the proceeds went to a breast cancer charity. We have a really talented cast and it’s one of the happiest shows I’ve ever worked on.” Glamorous Samantha Womack plays Morticia Addams, fresh from leaving EastEnders after a decade playing Ronnie Mitchell. She’s reprised her role as Michelle Unwin in Kingsman: The Golden Circle and appeared in Guys & Dolls with Patrick Swayze in London. “I was such a fan of the Addams Family, I used to run home from school to watch the black and white television series. I jumped at the chance to play Morticia,“ Samantha laughs. “However, trying to glide across the stage in a tight dress with a long, black wig and remain quite still was surprisingly difficult. My children are my harshest critics, but thankfully my daughter loved the show, while my teenage son astonished me by saying he was proud of me!” For Les, working with Samantha has been a chance to catch up with an old friend. “I’ve known Sam for a long time so I knew she’d be fun to work with” he chuckles. “I started my

career as a stand-up comedian in working men's clubs while I was still at school. Then winning the talent show New Faces opened the door to numerous light-entertainment shows.” As the host of Family Fortunes, Les enjoyed a successful 15-year run from 1987 to 2002 and, while recording an episode, was surprised himself, by This Is Your Life host, Michael Aspel, with the big red book. “I was astonished, and when the series ended I made a decision to widen my career from comedy and enjoyed a bit of drama both on and, as it turned out, off stage.” Les has rarely stopped working. We saw him give a superb performance in Misery at the Oldham Coliseum. He appeared with Dame Janet Suzman in Cherished Disappointments In Love and in Anthony Shaffer's dark comedy Murderer in London. He starred in a tour of ART while his big-screen debut was in the film Intimate Relations with Julie Walters and Rupert Graves. As Les points out, Coronation Street was by no means his first soap. “I appeared in drama serials like New Street Law, The Bill, Casualty, Holby City and Hotel Babylon.” Surprisingly, he also appeared in the second series of Celebrity Big Brother, while his marriage to Amanda Holden was ending, and finished as runner-up to Mark Owen. In retrospect did he regret doing that show?

“Well it’s perhaps not my wisest, decision but that’s where Ricky Gervais saw me and I became a guest star in the first series of Extras, written by and starring Ricky and Stephen Merchant. I also worked with them again in the Warwick Davis comedy series, Life’s Too Short, so you could say Extras changed my life.” Les returned to comedy on stage in A Servant of Two Masters and JB Priestley's When We Are Married. “I also appeared in several pantomimes with Hollywood legend Mickey Rooney, The Fonz and the late, great Cilla Black. My favourite way to relax is cooking, and I was a contestant on Celebrity MasterChef but was pipped to the post by Ade Edmondson. However, since then, I’ve returned to the show as a guest judge.” Back in 2008, Les wrote his autobiography Must The Show Go On?, but a great deal has happened since then. He narrated his Home

Video Heroes, and made the ITV documentary Les Dennis's Liverpool. “I absolutely loved that, although it was emotional recalling my childhood there and the history of that famous city. I was also proud to appear in the 40th anniversary production of Alan Bleasdale’s Down The Dock Road in Liverpool.” Does Les have an unfulfilled ambition? “Well, Uncle Fester is a bit of a fool and I’ve always had a yen to play a Shakespearean Fool – just in case anyone from the RSC reads this, do take note!” Now home is Cheshire, where Les lives with wife Claire with children Eleanor Grace (9) and Thomas Christopher (6), as well as adult son, Philip, from his first marriage. “I love living in Cheshire as the schools are excellent and within minutes you are in such beautiful countryside. After living a frenetic, showbiz life in London, I feel calm and tranquil here. I’m really enjoying life, and touring means I can often go home to my family and sometimes even do the school run. All my children have been to see the show and absolutely loved it, so it obviously appeals to a wide age range. I’m also hoping to catch up with my Corrie pals when we come to The Lowry – and perhaps I’ll even see you there. Magnum Opus How the King of Diamonds became one of the leading names in haute horology

A

s perhaps the 20th century’s primary purveyor of exceptional gemstones, it was always going to be a challenge for Harry Winston to unshackle itself from an image that revolved solely around spectacular sparklers. When the brand entered the watch world in 1989, it was, therefore, a shrewd move to set course for the most serious end of watchmaking. Two series of watches came to embody the ambition, as well as the sincerity, with which Harry Winston diversified into haute horology. The first, project Opus, launched in 2001, under the stewardship of then44

managing director of rare timepieces Max Büsser (now of MB&F fame). Each year, said Harry Winston, an independent rock-star watchmaker would be given carte blanche to collaborate on a supercomplicated, ultra-contemporary game changer of a timepiece. Each spring, for 13 consecutive years, journalists and watchmakers awaited the unveiling of Harry Winston’s latest piece of wizardry. Aesthetically, the results were varied and polarising. Mechanically, they were always astounding. On the dial of Opus 11, for example, four rotating jigsaw pieces would spring to life every hour,

meeting at the centre of the dial to reveal the time. Hayek has subsequently said that the Opus family will continue to be updated, but will follow no particular schedule. Project Z, Harry Winston’s second series of world-first wristwatches, launched in 2004. The collection took its name from Zalium, a zirconium-based alloy developed by Ronald Winston, the son of Harry Winston. Ronald realised that Zalium’s properties – it is extremely hard, strong and corrosion resistant – made the material perfect for watchmaking. He presented Zalium to the brand his father had founded, which chose to use it exclusively in a line of space-age sports watches, aka Project Z, the latest of which is this year’s Z11 (above). A mattefinish, twin-barrelled automatic, the openwork dial of the Z11 is intended to mirror the steel beams and superstructures of Harry Winston’s home town, New York. From Manhattan, Harry Winston grew an empire that saw him become the ‘King of Diamonds’. From its watchmaking base in Geneva, the brand has become a leading light in the world of fine horology. ngagement and wedding bands are probably the only pieces of jewellery you never take off, always worn together as a pair. Most brides want their bands to match each other perfectly and nowadays people will often choose their wedding rings at the same time as they choose their engagement rings. “For many years, couples would choose the engagement ring first in isolation and worry about the wedding band later,” explains former goldsmith and manager of jewellers David M Robinson in Altrincham, Hugh Pottle. “Now, more ladies are choosing wedding bands and engagement rings, as matching complete sets.” When choosing your rings, it’s especially important to match the metal, the width and the fit so that they go snugly together, and sit well on your finger. “I always encourage the client to look at what the engagement ring would look like next to the matching wedding band,” continues Hugh. “An engagement ring will only be worn in isolation during the engagement, and afterwards it will always be viewed as a pair. Looking at both together helps you to visualise the set which you and your partner will be looking at for the rest of your lives.” And the most popular trends? Recently, many jewellers have seen particular interest in single-stone engagement rings alongside a full-diamond wedding band. What are the main things men CONSIDER when buying an engagement ring? “The main consideration tends to be the price frame. Most men will have an idea of how much they would like to spend, but not necessarily an idea of what that price frame will get them. The second most frequent consideration is their partner’s personal preferences. When helping a client, my main aim is to ask the questions they may not have thought to ask. Us girls are pretty adept at dropping hints, but on the occasion where we’ve been a little too subtle, getting a client to consider their partner’s occupation, lifestyle and the type of jewellery they already own, can be quite insightful. It is then our job to match the ideal style of ring to their price frame and help them find the perfect ring for their perfect person.”

How many engagement rings does the average couple try on? “If a client has a very specific idea then they would usually try four or five different rings. However, if they are only just starting to look and are unsure of which style suits them, then they may try nine or ten.”

Is diamond still the most popular stone? “While different styles and settings come in and out of trend, diamond remains the most popular choice, although we still get the occasional enquiry for sapphire. We have also seen a recent influx of enquiries for alternative precious gemstones such as morganite, aquamarine and moonstone, where a lower cost allows the client to purchase a much larger stone. However, the brilliance and sparkle coupled with the elegance and timelessness of diamond ensures that it remains the number one choice.”

The food was provided by the award-winning Stockport-based Barretts Event Catering – although the venue also works with Congletonbased Vanilla in all Seasons – both of which pride themselves on their locally, responsibly sourced and bespoke, beautifully presented food. Add to this the barn’s selection of micro-brewery cask ales sourced from Knutsford and Mobberley – as well as craft bottled lager and pale ales with a large range of wine, gins and other craft spirits – and it’s no surprise that this was a celebration that went off with quite the bang.

Converted in 2013, this family-run wedding barn is as unique as wedding venues come. The ceremony room, which is licensed to conduct civil ceremonies, is lit with twinkling lights for a thoroughly relaxed, romantic feel, while the main venue was designed as a blank canvas, allowing Lois and Rob to decorate their reception in a style that was personal to them, with as many flowers, lanterns and balloons as their hearts desired.

Taking advantage of the venue’s new beauty shed, a salon complete with hairdryers, salon chairs, mirrors, a fridge and even a shower, the bride and her bridesmaids were able to touch up hair and make-up to perfection before the ceremony – and to make sure they were photo-ready afterwards. Then, after a long day of celebrating, many of the guests made their way to their rooms for the night in the newly converted – and rather luxurious – The Tens, or to en-suite rooms within the traditional old farmhouse. The happy couple, meanwhile, spent the night in the luxury wedding cabin located in a quiet corner of the farm.

EYE- CATCHING EXTRAS Guests were serenaded by local wedding pianist Liz Hendry on her beautiful white baby grand piano and by the Didsbury String Quartet, while guests were also entertained by the working farm’s permanent residents – cattle, sheep and the rather adorable pygmy goats. As an added bonus, Lois and Rob opted for a huge bonfire, adding a spectacular sense of theatrics to the already-stunning countryside backdrops for the wedding photos. With cases of dementia on the rise, it’s more important than ever to explore how best to interact with those affected by the condition, says Kate Baldwin

D

ementia is a growing problem. The Alzheimer’s Society estimates more than 850,000 people have dementia in the UK today, a number that is set to rise to more than one million by 2025. A little over two years ago, I joined the Alzheimer’s Society Dementia Friends Initiative by training to become a Dementia Friends Champion. This enabled me to deliver information sessions designed to challenge some of the myths about dementia, and create communities in which people living with the disease feel more understood and included. Incorporating this into my role at Quilter Cheviot, we launched a dementia awareness initiative within the professional community which has created over 350 dementia friends in many of the leading legal and accountancy firms. So far, the response from Quilter Cheviot and the wider business community has been tremendous. Nationally, there are now over two million Dementia Friends, meaning the initiative is over half way to its 2020 goal. We come into contact with elderly clients every day, and having a greater awareness of dementia can be hugely beneficial when it comes to maintaining meaningful client relationships. When we are more open about dementia with clients and each other, we also help to lift the stigma associated with dementia in general. Recognising that, we have developed an internal programme to provide all client-facing staff with

dementia awareness training. The programme will be supported by a Dementia Champion in each of our 12 regional offices. At present dementia is the only one of the top ten causes of death that can’t be prevented. Until it can, we can’t change the statistics but I believe that we can change the environment for people living with it. By raising awareness within our business and the wider professional community, we can take a small step to help transform the way people think, talk and act in relation to dementia. I shall leave Stephanie Larkin, community fundraiser at Alzheimer’s Society, to conclude. “The Dementia Friends initiative is a social movement about turning understanding into action – and [Quilter Cheviot] has done just that. We aim to create four million Dementia Friends by 2020 and, with Quilter Cheviot’s ambitions along with our own, I’m sure we will get there.” Kate Baldwin is a consultant at Quilter Cheviot and associate professor at The University of Law. Gum Disease Local dental hygienist Lisa Wright advises on keeping your gums healthy What is gum disease?

Is it the same as gingivitis?

Gum disease (or periodontal disease) describes destructive inflammation of the tissues surrounding the tooth, including gums, bone and the tiny ligaments that attach the two together. It is caused by the body’s reaction to bacterial plaque left on the teeth and gums and can lead to loose teeth and, if left untreated, even tooth loss.

Not quite. Gingivitis is inflammation and bleeding of the gums and doesn’t involve bone or ligament destruction. Gingivitis can be a precursor for periodontal disease so if you notice bleeding when brushing you should get checked out by your dentist or hygienist. Gingivitis can be relatively mild to quite severe, where it can cause infection or loss of gum tissue. Bacterial plaque is the primary cause for both gingivitis and periodontitis, so good home plaque control is essential.

How do I know if I have it? The best way to find out is by having a check-up with your dentist or hygienist who will examine your gums to determine if periodontal disease or gingivitis is present. Often you won’t notice the symptoms of periodontal disease until it has reached an advanced state where you may notice loose or drifting teeth. Early signs are bleeding gums, bad breath and gums that appear red and inflamed.

Smoking You are less likely to notice bleeding if you smoke, as it masks the symptoms. This can mean the condition goes unnoticed for longer. Smoking will also slow down the healing process as it restricts blood flow, meaning it is harder for your body to fight off the infection. We would always advise quitting smoking for optimal dental health.

What do I need to do? It is very important to look after your teeth at home on a day-to-day basis. We recommend brushing your teeth for at least two minutes, twice a day with an electric toothbrush, and cleaning all of the spaces between your teeth daily with interdental brushes or floss. It is also important to consider your general health. Healthy bodies heal better, so choose a healthy diet with limited sugar and processed foods, and consult your GP to rule out medical conditions that may restrict your body’s ability to heal. Brand new Audi The new Audi A8 has made its world debut at the Audi Summit in Barcelona. In its fourth generation, the flagship model again sets the benchmark with a new design language, an innovative touch-screen operating concept and systematic drive-train electrification. The Audi A8 is also the first production car in the world to have been developed for highly automated driving. From 2018, Audi will gradually be taking piloted driving functions such as parking pilot, garage pilot and traffic jam pilot into production. The A8 makes its debut with two extensively reengineered V6 turbo engines: a 3.0 TDI and a 3.0 TFSI. The diesel develops 286BHP, and the petrol version 340BJHP. An eight-cylinder TDI – a 4.0-litre with 435BHP – will follow later. The exclusive top engine version is the W12 with a displacement of 6.0 litres. Silverstone shock The future of the British Grand Prix has been thrown up in the air after Silverstone’s owner confirmed it has activated a break clause to cease hosting the race after 2019. Silverstone has been home to the race every year since 1987. However, the British Racing Drivers’ Club (BRDC), which owns the circuit, says it cannot afford to host the race unless a new deal is agreed. “We have reached the tipping point,” said BRDC chairman John Grant. “We can no longer let our passion for the sport rule our heads. We sustained losses of £2.8m in 2015 and £4.8m in 2016, and we expect to lose a similar amount this year. Silverstone hosted the first Formula 1 race in 1950. It then shared hosting the British Grand Prix with Brands Hatch and Aintree before becoming its permanent home 30 years ago.

am sitting in a new Land Rover Discovery at the Land Rover Experience centre at Eastnor Castle, not too far from the Welsh border. We are here for the launch of the latest Discovery, the Mk 5. There’ll be a good slug of on-road driving; plus ample opportunity to put the Disco up to its bonnet in muddy water later. But first there’s an identification issue. The car park area is crammed with Land Rovers and Range Rovers of all descriptions, but my colleague and I, with years – nay decades – of experience between us, are confused. “So that’s another new Discovery over there?” “No, that’s a Discovery Sport, er, I think. Or is it an Evoque? Actually, no, I’m sure it’s a Range Rover Sport…” As demand for SUVs has exploded in recent years, so Land Rover has vastly increased its product offering. But the rush of new models has clearly exhausted the design team’s creativity, as they are all clones of one another. From the front and in profile, the new Discovery looks identical to the Disco Sport, and head on, like any of the three Range Rovers on the market. The only spark of styling individuality comes at the rear. Every generation of Disco has had an offset rear plate, and the new one is no different. In the early days, it was because the spare wheel was hung on the back door and the plate had to be shifted to the side. Here, it just looks contrived, especially as there’s now a conventional one-piece top-hinged tailgate rather than the split tailgate of previous generations.

Earlier iterations of the car were big, square and tough. This was obviously a serious off-roader built to tackle extreme conditions; does the Disco 5 still cut the mustard? On-road, the answer is a most affirmative ‘Yes’. Today’s Disco is a family car with ample space for the kids and their clobber, that needs to perform like a large estate rather than an off-roader. The new Discovery has an all-aluminium monocoque body. It’s lighter (by 480kgs) and roomier than before, with seats for seven adults, and has far better on-road manners. It’s still a big, tall SUV and can’t be thrown around like a sports car, but body control is vastly improved and ride comfort is excellent, thanks to the standard fitment of electronically controlled air suspension. In the recent past, all Discos had six-cylinder engines, but thanks to its weight-loss programme, the new one can also cope with a four-cylinder diesel, a 2.0-litre version of the Jaguar Land Rover twin-turbo Ingenium unit, which produces 240PS and a hefty 500Nm of torque. It works well. You could stick with a diesel ‘six’ and benefit from a little more power and torque (an extra 18PS and 100Nm), but unless you regularly tow a horse box, boat or – perish the thought – a caravan, why would you want to?

Dazzled by Dubai Lorraine Crighton-Smith falls in love with a very British hotel in Dubai

D

ukes London is one of England’s leading hotels; tucked away on a cobbled street in Mayfair, it is everything you want when looking for a quintessentially British break laced with English luxury. Its history dates back to over a century ago and bar, which is well-known for its martinis, is said to have been the establishment of choice for Ian Flemming when he coined Bond’s famous phrase ‘Shaken, not stirred’. So when Dukes announced it had opened a ‘quintessentially British’ hotel in Dubai, on the artificial island Palm Jumeirah, no less, I was keen to fly over and see how quaint British traditions translate in a world of dazzling developments, striving to be the biggest, the tallest, the best of everything.

The flight itself takes around seven hours from London, but direct flights are available from Manchester, making the United Arab Emirates [UAE] a jet-lag friendly option as a destination for guaranteed sunshine. Temperatures can reach 45°C, with the hottest month being August, so pack wisely. Touching down in the land that was once a desert and is now the most populous city in the UAE is a sight to behold. Fly in at night and watch the bright lights of Dubai twinkle below. Once on the ground be prepared to crane your neck at the congregation of skyscrapers that create the city’s famous skyline. Driving through the mainland and onto the man-made Palm Jumeirah island takes around 45 minutes from the airport. Dukes Dubai is in a prime location on the west trunk of the Palm. Its exterior is a world away from its sister property in St James’s and it’s hard to imagine a thoroughly British set-up inside the twin towers connected by a skybridge that doubles up as a swimming pool. But as you step inside the luxurious lobby and admire the marble floors, bespoke chandelier (inspired by the Breakfast at Tiffany’s one, and so special it took six men

three days to hang), and classic furniture by Andrew Martin, Britishness abounds. En route to our suite, we pass the Duchess Floor – a floor of female-only accommodation that's decorated with bespoke Liberty Fabric prints. Each room has its own Floris London scents in the bathroom, iron and ironing board, hair straighteners and curling tongs, and a Dukesy toy dog. Classic British luxuries indeed. While the Duchess Floor suits the lone female traveller perfectly, we'd recommend staying in a Dukes room or suite with your loved one for a luxurious romantic break. Feel completely at ease as you stroll through the resort as a couple. Dukes is the only hotel on the Palm access to a private beach so find a quiet sunbathing spot and be waited on by Dukes-owned West 14th. Slip into the water of the Persian Gulf when you need to cool down (though don't expect the water to be cold) or, if you'd rather, take a dip in the outdoor infinity pool, which looks out over to the high rises of Dubai Marina.

There are several dining options at the resort, overseen by UK-born executive chef Martin Cahill, whose Bolton accent and Great British Restaurant continue the thoroughly British theme. Head to GBR for typical British dishes such as Welsh lamb, Irish beef, calves’ liver and onion, Dover sole and classic fish and chips - but presented with a contemporary twist. Care for cheese? This too is British, being imported from Paxton and Whitfield, the London cheesemonger with a royal warrant. The newest restaurant is Khyber, a destination Indian restaurant by Chef Martin and the team behind the award-winning restaurant of the same name in Mumbai. We enjoyed a taster menu of curries and struggled to think of better tasting alternative back home in Blighty. Located on the 16th floor, Khyber also has superb views across the city and is designed to accommodate groups of varying sizes. Grab a private booth for an intimate dinner.

 For things to do outside the resort, a trip to the top of the Burj Khalifa (the current tallest building in the world) will give you 360-degree views across Dubai and a snapshot into how the desert looked before the building commenced 30 years ago, but anticipate queues. At the base of the tower is the Dubai Mall, which has all your luxury shopping needs covered, and is home to an aquarium, too. Planning a proposal? Dubai could provide an unforgettable location for popping the question. You could then return to host a spectacularly glamorous wedding at Dukes with all the home comforts. A

stone’s throw from the sophisticate glamour of Cannes, St Tropez and Monte Carlo, sprawling over 750 acres and hidden from prying eyes by lush greenery and well-versed discretion, is Terre Blanche: a Provençal paradise in the truest sense of the word. As the only property of its kind in the region – and a member of the prestigious Leading Hotels of the World group – it’s no surprise that the five-star resort remains a well-kept secret (a term often bandied about but, in this case, totally apt) amongst a clientele of affluent realists who value its authentic vibe and rustic opulence. The feeling of space is overwhelming, with the bulk of the acreage covered by woodland dells, trickling streams and the resort’s two 18-hole championship golf courses – as well as a smattering of bespoke villas (owned by the giants of Silicon Valley and their ilk) and even a castle once lived in by Sean Connery – who, in fact, owned the entire property until 1999. At the centre of the resort is the hotel itself: a replica village of winding, undulating cobbled paths (just wide enough for an obliging golf cart) dotted with romantically picture-perfect foliage and 115 discreet terracotta villas and suites, each with its own terrace and a neatly unobtrusive touch of the high-tech. Stroll up to the village’s highest point from your villa and you’ll come upon the colossal infinity pool with its cabanas, cocktail bar and

views across the estate to the mountains beyond – and then, a short walk further, the main building, home to three of Terre Blanche’s four restaurants (including the Michelin-star Le Faventia), each overseen by executive chef Philippe Jourdin and trotting out a consistently delightful array of charmingly bucolic dishes. And then there is the spa: a 3,200sqm destination all of its own, set over two floors and regarded – quite rightly – as one of the world’s best, complete with 14 treatment rooms, fitness classes, a 20-metre indoor swimming pool and outdoor vitality pool, plus sauna, steam room, laconium, hammam and steam shower. This village is the beating heart of Dietmar Hopp’s vision – the German billionaire software entrepreneur who purchased the property from Mr Connery and set about transforming it into the lush haven it is today. His priorities were – and still are – that the resort should preserve the fragile balance of its natural surroundings, and that it should cater equally for all members of the family, the results of which are a comfortingly robust ethos of ecological sustainability throughout, and a truly brilliant kids’ club, with its own private pool and a list of activities – including rafting, tennis and water skiing – long and diverse enough to please even the most demanding of miniature guests. Weekend away Oddfellows on the Park, Cheadle Hulme WORDS: PENELOPE WARDE

O

k, so Cheadle Hulme isn't really a very long way to travel for a weekend break but after visiting with my other half from Chester, we felt completely reinvigorated and persuaded the team to include as a fabulous romantic escape. Living in Chester, we were familiar with Oddfellows, its design and its quirkiness, so leapt at the chance to visit its sister hotel. Situated in the woodlands of Bruntwood Park, Oddfellows on the Park is an imposing Victorian manor house swimming in local history, which the team has taken great care to maintain – evident everywhere from the bike-chain chandelier in reception (a nod to the BMX track in the park) to the spectacular restored stained-glass skylight. We stayed in a Playground Suite, with fabulous park views, roll-top bath and fourposter bed, but did manage to sneak a look at the Bridle Suite (not a spelling mistake, but taking inspiration from when the building was home to a stud farm). All are traditionally designed but with a cheeky touch here and there, indulgent yet practical. The afternoon was planned for us: After Mud Tea for two (£99 each) in The Pigsty. This was in the hotel's adjoining salon de beauté and included 40 minutes in the Mud Room,

perfectly designed for two. It's self-applied and begins with a Himalayan salt scrub, followed by all-over mineral mud mask. Then it was off to the self-contained steam room for a relax before showering off. What's more, it’s all automated, so you literally just have to sit there and catch up on the week, or plan your next holiday, as we did. Great for spa novices like us. After Mud Tea for two also includes a thirty-minute treatment of your choice and afternoon tea for two. I went for the exclusive Ila all-natural, all-organic Glowing Radiance Facial which was absolutely divine. I even came home with the blackcurrant and honey exfoliator. My other half went for the Vitality Massage. We both left with a new lease of life but not before indulging further in the afternoon tea, brought through to us with the essential accompaniment of Prosecco. Feeling a world away from our everyday lives, we headed back to our room to relax and digest before dressing for dinner, managing that rare moment of curling up with a film in the sanctuary of our four poster bed. Popping to the bar for a quick drink before dinner, the design and attention to detail was remarkable. The staff, too, are delightful and full of stories of items or rooms and history. Just after sunset we made our way through to The Galloping Major for dinner. I shan't dwell too much on the food as I know the team has been to sample head chef Ian's fare already, but it was delicious fine-dining with attentive staff and fabulous surroundings. The restored ceiling stole the show, as did the sea trout, roasted monkfish and homemade doughnuts. I love to work with them because of their meaty texture yet delicate taste. They are so versatile and work equally well in fish and meat dishes. What is your favourite food? I’m really enjoying Spanish and Middle Eastern cuisine right now. I think over the past few years there’s been a resurgence in small-plate dining, as people can choose from a selection of dishes packed with a wide array of ingredients and flavours. What is your favourite Piece of Kitchen Kit? I especially like using a water bath when cooking. It changes the texture of what can sometimes be tricky cuts of meat to work with: this method of cooking retains the flavour and moisture. This technique works particularly well with octopus, which is popular with El Gato Negro diners. What is your desert island recipe? It would have to be spiced aubergine with

T

he Stanneylands Hotel is well known and much-loved in Cheshire. It also happens to be where I was married, a mere 20 years ago. However, this was to be my first visit since it was bought by The Mere brand and given a £1.7m refurbishment. I was unsure how I would feel about a place of such sentiment undergoing a dramatic change, but I needn’t have worried and, as we arrived, I still had the sense of stepping into somewhere special. The property’s original elegant charm has been retained, and this, combined with a stylish makeover

“Served with lobster, silky celeriac purée and broad beans, it’s a real treat of a dish” gives the place a modern boutique-hotel feel. A beautiful colour palette, rich soft furnishing and quirky touches create a new take on a traditional country house. The reception and the bright Tap and Pantry were already busy when we arrived and this new open concept area is warm and welcoming. The lovely staff were friendly and accommodating. They kindly gave us a guided tour of the hotel and talked us through the transformations of the private dining attic, meeting and function rooms, after which we made our way to The Grill Room to enjoy our evening meal. The Grill Room is as fine as I remember. The exquisite original wood panelling is offset by the new modern interior design scheme, making it grand and chic in equal measure. Newly fitted French doors open onto a delightful patio area, where guests can take pre-dinner drinks. The menu invites diners to enjoy the best of British classics and so, to set the mood, we started with a crisp glass of Sussex’s Bolney Bubbly NV English Sparkling Wine. This was the perfect accompaniment to my starter of smoked salmon from the local Cheshire Smokehouse. It was served with the classic 100

garnish and slices of freshly made warm soda bread. My dining companion chose the Western Isle Scallops which were beautifully seared and served with a delicious warm tomato compote, black pudding and a crispy bacon crumble, providing intense flavour hits alongside the sweet scallops. The British classic theme continues through to main course and guests can choose from fresh fish dishes, the seasonal vegetarian option or enjoy something from the selection offered from The Grill. The restaurant serves meat cuts from North West farms which have been aged and then prepared by their master butcher, John Glynn. Diners can enjoy a choice of classic sauces with their steaks or add half a lobster, for those wanting to ‘push the boat out’. For something extra special, the

Chateaubriand comes with seasonal vegetables, boulangere potatoes, blue cheese sauce and hand-cut chips. I decided on a roasted Shetland cod dish. My fish was perfectly cooked and generous in size. It was served with sweet little clams, tasty crispy chicken, wilted spinach and a heavenly soft potato puree. My companion couldn’t resist the lamb cutlets from the grill, again perfectly cooked and served with buttery hot-pot potatoes and French style peas, all washed down with a large glass of red Pinot Noir. I am never one to shy away from a dessert, but on this occasion, I admit, the thought did cross my mind. However, after studying the delightful selection of desserts, normal behaviour was resumed, although we did compromise at one pudding, two spoons. We were tempted by the Eton Mess Trifle, Chocolate Delice and the retro Artic Roll. However, we rounded off our wonderful evening with the great British classic that is sticky toffee pudding, which was rich and indulgent. I defy anybody to resist that. The Grill Room is a perfect for diners looking for a modern twist on a classic country house hotel feel and the close proximity to Manchester Airport makes it an ideal spot. (stanneylands.co.uk)

Let the Lesson be Gin Going back to school is not all bad when the lesson is how to make the perfect cocktail. Jan Clarke proved to be good as gold and went straight to the top of the class

E

njoying a cocktail or two is more popular than ever and with the rise in new flavour combinations, infusions and artisan distilleries, this glamorous and iconic drink is literally on everyone’s lips. We recently met with restaurant and bar manager Adam Orridge, of The Cast Iron Bar and Grill at the Renaissance Hotel, Manchester. He kindly gave us a cocktail masterclass, using some of the north west’s great gins. Our masterclass began with a look at different flavour combinations. Adam explained: “Obviously, a lot comes down to personal preference. Some people prefer a dry or sour-based drink, while others have more of a sweet tooth.” We delved a little deeper and Adam revealed he was a fan of the classics. He told us, “I would have to say an Old Fashioned is my all-time favourite cocktail although I do enjoy the odd espresso martini.”

Next, we chose our ingredients, then three local gins which would form the base of our cocktails. First up was Forest Gin, an awardwinning gin distilled here in the glorious Macclesfield Forest; next, Manchester Three Rivers Gin which is produced by hand in small batches by distiller, Dave Rigby in the heart of the city; and finally, Manchester Gin, made in small batches using ‘Wendy’, the bespoke copper still. Our first was a ‘muddle’ of fresh basil and pomegranate seeds to release flavour, with added Forest Gin, crushed ice and a shot of Kwai Peh, a Lychee liqueur. The result was a refreshing take on a Mojito. The smooth Three Rivers with its complex notes and spicy, black pepper finish was our gin of choice for the famous Negroni, shaken over ice and finished with aromatic fresh rosemary. Ingredients for our final cocktail started with a double shot of Manchester Gin – a perfect balance of dryness and citrus, spicy and sweet and with those northern favourites, Dandelion and Burdock root, as its two key botanicals. Freshly squeezed grapefruit and vanilla syrup were then added, and again the mix was shaken hard over ice. Not too bitter and not too sweet, this was our winner – good as gold. T

he 23 June 2016 was perhaps the most important date in recent British history. The Referendum in which the UK electorate voted to leave the European Union (EU) has now been acted upon by the Prime Minister, who implemented Article 50 of the Lisbon Treaty in March 2017. The Article has far-reaching implications; whatever happens during negotiations, in March 2019 the UK will no longer be a member of the EU. Therefore, whether a deal has been agreed or not, it will not benefit from or be obligated to uphold any EU legislation. To put the scale of Brexit in perspective, nearly 20,000 separate legislative enactments – including detailed rules and regulations – must be varied, amended, changed, deleted and, if appropriate, re-enacted and brought within the UK legal system. Despite this, more than a year after the Referendum, there is no clear picture of our negotiating stance, nor is this likely to emerge for an indefinite period. If anything, the position is opaque. Businesses have been left to handle uncertainties alone, resulting in the steady decline in currency values against both the Dollar and Euro. From our position 12 months ago as the leading European growth economy, we are now the worst-performing member. Inflation is outstripping wage growth and our politicians are

proving incapable of leading the way. In such a confusing scenario, Blackstone has been carefully assessing the political, legal and business outlook for our clients, to determine what they should be doing to deal with the uncertainty ahead. A summer of magic, mayhem and milkshake-ontour, oh woof it has been an amazing – and exhausting – season for Aston and me. How the year is flying by, and how hard it is to believe it’s almost autumn! Aston is obsessed with dinosaurs – and quite often tries to scare me with all his many roars and noises – so, when my paws spotted a chance to head back 67 million years to the Cretaceous period, I knew Aston had to experience this. Dinosaurs in the Wild is a 70-minute experience at Timebase 67 in Manchester, combining dramatic storytelling, scripted actors, high-end digital graphics and animatronics to create a realistic prehistoric world, making you feel you are really there among the dinosaurs, and unlocking the past for future generations. There’s a mesmerising experience from The Lookout, where you can see watch Tyrannosaurus Rex, the gargantuan Alamosaurus and a herd of triceratops all interacting in their natural habitat. Get up close to a huge Alamosaurus heart, interact with some eyeballs, teeth and claws and discover the amazing strength of a T Rex’s arm in the laboratories. So in preparation for our visit, Aston, Anji and I decided to have a dinosaur day of our own. We had so much fun playing in the garden hunting for dinosaur eggs – though of course I had the added advantage of a strong nose – but Aston soon whipped my tail as he raced around the garden looking under every plant and behind every tree. Then, to our surprise, Anji had made a dinosaur dinner and, still basking in the September sun, we sat outside enjoying our picnic. For me, there was a feast of my favourite chicken wrapped in the body of a triceratops made out of bread, and it was dinolicious. Until next time, Love & licks

Creative Campers Pupils at Beech Hall School recently spent a day and night outdoors, in aid of Save the Children. The children had to get creative and make their own dens which they subsequently slept in overnight. The event was part of the Save the Children Den Scheme which aims to teach the children the importance of shelter as well as to raise all important funds for the charity. The group which also included teachers and headmaster James Allen, enjoyed a campfire with sausages and toasted marshmallows before settling in for the night. However, there were some comforts on hand and the group took advantage of the school’s swimming pool to cool off in the warm weather. The money raised will go towards helping children affected by natural disasters such as earthquakes or who are forced to leave everything behind due to conflict. Winning Waste Daniel Clamp, aged 11, is an Altrincham Boys Grammar School pupil and now a prize-winning inventor. Daniel scooped the top prize in a secondary school competition to find the UK’s best upcycling project, as part of Waste Week 2017. He proved the old saying that ‘one man’s trash is another man’s treasure’ and took home the winning prize for his innovative candle holder design which amplifies light through a polished trowel. Waste Week is an annual campaign organised by EDF Energy’s school programme and this year students were also given the opportunity to take part in the upcycling competition. Tutoring The number of children getting extra support from a private tutor is definitely on the rise. Anne Morris, owner of Yipiyap, advises on what to look for and watch out for

S

itting in our office this morning it was no surprise when a lady came in to enquire about extra 1:1 support for her daughter. Yipiyap provides academic tuition, after all, and even though we don’t offer private tuition (our support is delivered in schools), we regularly receive enquiries from parents about private tutors. What was unusual in this instance was that the lady’s daughter was aged five and already attending one of the most prestigious independent preparatory schools in Cheshire. When we had persuaded the well-meaning and supportive mum that it might be best to leave things until her daughter was a little older, I reflected on the attitudes that have developed towards private tuition of primary age children and the ubiquitous parental dilemma – to tutor or not to tutor. Certainly, private tuition has become a standard in many areas, resulting from a heady combination of the good intentions, ambition and neuroses of parents who feel the weight of responsibility that their child may be disadvantaged for life because of their lack of action early on. In areas served by grammar schools, there is also a significant financial benefit that parents may feel they have to weigh up – small spend on tutors early on vs relatively huge costs on an independent secondary education later. Concern is growing about the pressure that

after-school tuition puts on young children and the time it takes away from playing, exploring and physical and enrichment activities – all vital to a child’s development. If you have concerns about your primary age child’s progress, the first step should be to discuss these with their teacher as it’s likely that intervention during school time will improve things. However, Year 5 and 6 tuition seems to be here to stay so, if you’re looking for extra support, make sure any tutor you choose knows their stuff and encourages independent learning; check qualifications and ask friends for recommendations, maybe asking to sit in on a session to make sure question technique is up to scratch. And, above all else, make sure the tutor develops a positive bond with your child. Sessions should be fun and your child should come out smiling. (yipiyap.co.uk)

Mental Health We’ve all known someone going through a tough time, and it can be hard to know what to do to help, especially where children are involved. Lucy Davies, head teacher at The Firs School, Chester explains the importance of happiness in children reaching their potential educationally, as well as some tips on how to recognise problems

C

hildren need to have three things; someone to love; someone who loves them; and a sense of achievement. These, of course, need to accompany the basic human needs of security, warmth and nutrition. It is the third point that schools can be greatly influential in. Schools need to give that sense of purpose and wonder in learning, with just the right balance of making someone work hard enough to get the answer that it creates pride, and a sense of achievement, but not so hard that every day delivers a sense of drudgery and failure. Happiness is key and the best learning happens when a child is happy. It is true that learning can happen under duress or when threatened, but the best consistent and long-term learning happens when pupils are happy, and it is important that schools work alongside parents in order to provide a happy place for pupils to learn.

Things to look out for Excessive worry about the little things; irritability and anger; changes in appetite (either increased or decreased); social withdrawal; increased sensitivity to rejection; trouble sleeping at night or sleepiness during

the day; restlessness or fatigue during waking hours; trouble concentrating; irritability; vocal outbursts or crying.

Ways to help your child Seek ways to relax and have fun with your child; recognise and praise small accomplishments; don’t punish mistakes or lack of progress; praise his or her strengths and abilities; explore new stress management techniques, which might help you understand how to calmly respond to stressful situations. Consider seeking family counseling or the help of support groups, too, and inform your child’s teachers and the school counselor that your child is struggling. Most importantly, don’t avoid getting help for your child out of shame or fear. With appropriate support, you can explore treatment options to help him or her thrive. here is increasing awareness amongst parents, professionals and policy makers of the importance of the early years of education in supporting a child’s development. This has led to a greater focus on the quality of education for three- and four-year-olds. The Teaching Council’s review into effective primary teaching highlights the importance of Early Years, concluding that excellent teaching at a child’s entry into school is crucial. It found that the most effective settings are those that invest in a structured approach to teaching, and focus on planning for learning rather than aimless activities. The review states: ‘In our view, Reception is the most important year. Done well and properly invested in, it will provide pupils with a strong

foundation for the rest of their time in school.’ Many schools understand the significance of these crucial years and their responsibility to get it right: children only have one shot at education and they should develop an early love of learning. The best approach is one that balances both adult-led and child-initiated activities, with focused opportunities to read, write and solve problems. Our early years pupils learn through a series of structured activities, both inside and outdoors. Stimulating challenges encourage children to find solutions as they play. Provision is led by experienced teachers and teaching assistants who pitch learning experiences at a level appropriate to each individual child. The curriculum is child-centred with pupils being encouraged to explore and discover while also receiving adult focused teaching in all areas. In this environment, the foundations of reading, writing and maths are laid. We have devised a broad curriculum that offers a wide range of learning experiences, incorporating our outside classroom and our meadow, as well as trips into the community to enhance the children’s learning as they make sense of the world around them. In pre-school, we focus on the prime areas of learning: physical development, communication and language, and personal, social and emotional development, with specialist teaching in music and games. This continues into reception with the wider curriculum playing a more active role and with the introduction of French taught by a specialist teacher. Good news is on the horizon for you if you’ve found your dream home but haven’t yet sold your property. We all have a sneaky peek on property portals from time to time, and falling in love with a new home before you’ve sold yours doesn’t need to be the end of your dream. Bridging loans, or asset-based lending, have had a bad reputation over the last few years, with high interest rates and expensive arrangement fees. However, changes in lifestyle coupled with the need for niche lenders to find innovative ways to compete with bigger banks has seen favourable terms, fees and deals developing. Bridging loans are now enabling homeowners to secure their new property before they’ve, in some cases, put their own home on the market. Bridging loans have become more popular as people’s lifestyle changes: for example, older couples looking to move to accommodate elderly relatives or people hoping to move to a home with extra accommodation to let out. Niche lenders and private banks have also had to change the way they lend in order to keep up with bigger banks, and the result is that they now offer more creative ways to provide quality finance. The good news for consumers is that the niche lenders have a reputation to uphold, so asset lending finance options are robustly regulated. Most bridging loan providers will lend purchasers up to 75 per cent of the repayment vehicle. In some cases they may be able to borrow 100 per cent of the property value, particularly if people are looking to downsize. Here’s a case study: a couple are looking to purchase a property in Scotland, before they’ve sold their home in Norwich. Their current home is valued at £950,000 with their new home valued at £785,000. They were able to secure a bridging loan of £650,000, leaving them to pay £135,000 upfront for their new home (and stamp duty). They were given 12 months in which to pay back the bridging loan, which would be paid from the sale of their current home. Taking out any additional borrowing on your home comes with risks, so you should speak with an experienced mortgage broker, who will source the best deal for you.

We settle in the lounge area of the showroom, expertly made coffee in hand, but I can see that my first question irks him a little. “When anyone mentions the word ‘trend’ it sends a shiver down my back,” Adam smiles. "Don't get me wrong, trends are great and keep things fresh, but people can blindly get swept up in them when it's not necessarily right for them or the building. “For example, we're currently working on an existing property which is all open plan – so much so that it had lost any semblance of character and flow. It was all about open plan at any cost, but the cost was that the family living in it just didn't love it and see it as home. We're working in

partnership with Janey and the interiors team to bring back some features and create a functional but homely space to live and play. “So, for me, when the project is about enhancing an existing building, it's about balancing the needs of the family with the capabilities and opportunities presented by the existing home. Sometimes, they fit perfectly but sometimes it's more of a challenge, don't get me wrong. There are cans, can'ts and won'ts in any build, but each is individual and bespoke. Typically, there's a story as to why the family doesn’t just move: not just the stamp duties that are now payable, but more often than not it's the emotional connection that keeps them there.

“It's also not just about making it look great. It's about creating dream places that suit the needs of the people who live there. But it's always quite humbling when you see the owners and their family fall back in love with their home. And that's really what it's all about. “One of the things we are getting a lot of requests for, though, are entertaining spaces. It always tends to be part of the briefs we receive from clients in some shape or form. And these clients are from all over the world, so maybe you could call it a trend. “We're putting the finishing touches to a substantial new build design at the moment, which includes a selfcontained entertainment annex. It matches the character of the main home but has suites for the guests, cinema room, bar, kitchen and expansive glass section which extends it even further when the sun shines.

“A lot of our clients are at the stage in life (and that doesn't necessarily reflect their age) where they look at their home in a slightly different light and want to spend more time in it. There's a definite pride in the home, as a statement of the journey they have been on and what they have achieved. “For want of a better word, we're also being asked to design and create a lot of ‘man caves’ – or showcases for beautiful things. Our clients tend to buy and invest well but they don't want their treasures to be shoved away in a dusty cellar or garage where they can't be appreciated. “Clients come to us with an idea, or a Pinterest board or clippings from an interiors magazine, which is great,

but really the key is in understanding their life and how they use the house as well as what is possible, given what we have with an existing property. “Those possibilities are ever-growing, though. Given that design is faster, communications are quicker and technology is advancing every day, the potential for architecture and design is endless. This also links to sustainability. I firmly believe that we should not tread too heavily on this earth and we monitor and nurture advancements in energy hand-in-hand with what we do. OFF THE WALL Interior designer Martin Waller reveals his adventurous side to Camilla Apcar – and how his travels from Nagaland to Timbuktu are so central to his work at Andrew Martin

A

couple of months ago, Martin Waller found himself gazing at El Mirador, the lost city in the middle of Guatemala’s jungle. It had taken two helicopters and a private plane to get there, and the interior designer was alone save for a local guide and a couple of guards. “This was a city that might once have been the largest in the world, and is now completely deserted, like something out of Ozymandias,” he describes. “It’s poignant, moving, and you become fascinated by the culture. There’s also an astonishingly rich textile heritage in Guatemala, with wonderfully bright colours and beautiful handwoven designs.” Waller co-founded Andrew Martin in 1978. It was then based in London, selling fabrics and home accessories. Its distinctions now include showrooms across India, the Middle East, Russia, China and the United States; as well as a license with the National Gallery that permits the reproduction of its artworks

on textiles or wallpapers. “If you want Michelangelo to design your wallpaper, we can do it.” The designer has also worked on film sets – from James Bond in the 1980s to Harry Potter – and for hotels including the Marbella Club and The Langham. Yet it is Waller’s passion for travel that has long epitomised Andrew Martin. He has set foot on every continent, travelled to Siberia in search of mammoths, through Nagaland and visited some of the most remote locations on earth. He spends around half the year on the move, but finds that travel is as much about people as the actual place.

“People are endlessly astonishing,” the designer says. On his way to Timbuktu, Waller met Bozo and Dogon communities that live clinging on to the Bandiagara Escarpment in Mali. “They have this culture of carving and ceremonies that is so different from our sculptural history, which is based on the classical Greek style, yet so familiar because it was such an inspiration for Matisse and Picasso through the wars. One is so astonished by man’s endless creativity.” Almost all Waller’s creations reflect something of these experiences, be it in colour, texture or print. “To translate an experience into a fabric, you either buy vintage artefacts and textiles from that place,” he says, “or you take inspiration from a quintessential motif.” An Andrew Martin interior isn’t about transplanting cultures or creating themed rooms, however. “We bring an African sculpture into a room that might also have a Chinese wedding cabinet and a comfortable English sofa or a Turkish rug,” he says. “We’re not about direct pastiches of looks. We bring influences from all over.”

Waller has also found that his travels have raised a number of deeper questions about our modern world. He cites people in Timbuktu who take camels and caravans across deserts just by following the stars, walking for days on end. “UNESCO is now putting computers in schools there. Do you try to preserve the culture that does this astonishing thing, or do you let them develop the skills to use GPS?” Waller poses. “I don’t know the answer. There’s no doubt that cultures and languages all over the world are being lost at an incredible rate. Even British culture is completely different from 500 or 1,000 years ago – and we think that’s progress, a good thing, that we don’t have ferocious Vikings pillaging churches. But sometimes we think about other cultures being isolated and preserved like that forever.” Waller’s bags are probably already packed for his next trip. The rainforest in Cameroon has been on his hit list for a long time, but he laughs that his top interiors tip is far closer to home. “The great bargain of our age is English antiques.
