F

oodies have a lot to thank Thomasina Miers for: smoky chipotle chicken tinga tacos for one; flashfried steak skirt burritos for another. Before her

Mexican street food chain Wahaca burst onto the scene, there was a black bean and guacamole tostada-shaped hole on London’s culinary horizon. A decade later and more than 20 restaurants under her apron belt, the former MasterChef winner is turning her attention from eating out to staying in, with her latest book Home Cook, released last month. Brimming with more than 300 recipes, it includes foolproof guides to knocking up shortcrust pastry and Sunday roast cheats, alongside adapted family classics and dishes inspired by her travels. Where possible, each recipe also includes a bonus dish so that leftover ingredients and sauces can be put to good use. “Home cooking is so often undervalued,” Miers tells me. “Being a working mother of three, it’s a constant juggling act to get lovely meals on the table. For me, healthy eating isn’t about abstinence or cutting out food groups, it’s about cooking things from scratch – using good ingredients and as few processes as possible.” Food that hits neither the waistline nor the wallet too hard is the order of the day. “I’ve always wanted to write a book inspired by Mrs Beeton’s Book of Household Management from 1861,” Miers continues. “We didn’t have much money growing up, so there were always the same ingredients, like mince and squash, in the fridge, but my mother would turn them into something delicious.

“I was really bad at playing, so I just hung out with her in the kitchen from the age of five. If I’m in the pub and there are triple-cooked chips on the menu, they’re on my plate with a lot of mayonnaise.” The occasional chocolate bar or bowl of chips aside, Miers wants to pass on lessons in eating well to her children and believes the key to this, apart from cooking together, is shopping at her local farmers’s market in Queen’s Park. Her mission to cut down food miles has also been the catalyst behind Fork to Fork Festival, which she helped to launch at ARK Franklin Primary Academy two years ago. So far, the family-friendly event has helped raise almost £180,000 to teach children about the benefits of sustainable eating. “People say farmers’s markets are expensive, but good food costs more,” she admits. “Once a week I’ll buy a chicken to roast it, but then I’ll make a stock with it too, so we can have a delicious soup.” And if you want a recipe for that, you’ll find one in her book. Miso-Smoked Mackerel with Avocado Salad

For the Salad 120g mixed sprouted seeds 1 large, ripe avocado, peeled and diced Juice of 1 lime 2 tbsp sesame oil 2-3 smoked mackerel fillets 2 slices of sourdough toast Small handful of parsley leaves, finely chopped Lime wedges, to serve

FEEDS TWO 1. First make the butter by beating the three ingredients together and seasoning to taste with salt and pepper if needed (go easy as both the miso and fish are salty). 2. Put the mixed sprout seeds in a sieve and rinse well under cold, running water. Drain and dry thoroughly with a tea towel. Toss the avocado with the sprouts, lime juice and sesame oil and season lightly with salt and pepper. 3. Preheat the grill to high. Line a baking sheet with foil and place the smoked mackerel on top. Put a slice of butter on top of each fillet and grill for a minute or so until the butter is melted and bubbling. 4. Toast the bread and spread with a little more of the miso butter. Top with the mackerel, sprinkle with the parsley and serve with a pile of the avocado and sprout salad, with lime wedges on the side.

all me a snob, but I’ve always loved going to the best places. The more exclusive the better: behind the red rope, into the VIP sample sale, turning left on a plane

– you get the gist. Seeking to get even closer to the action than a chef’s table permits, I find myself standing inside Plateau’s vast stainless steel kitchen one Tuesday morning in February, with its head chef Jeremy Trehout. The kitchen is bigger than most one-bedroom London flats. In it, Trehout is relaxed, despite knowing that in a few hours the lunch rush will kick off. He’s clad in a white shirt, navy and white striped apron and backless black shoes, which look like Crocs to me but are “chef shoes”, apparently. If you’ve ever wanted to know what exactly goes on in the underbelly of some of London’s finest restaurants, I’ll tell you one thing: they’re not spitting on your food or secretly eating off your plates – “you have to be kidding me!” – is

Trehout’s exact response. I spend all morning with him and Trehout doesn’t eat a thing. This isn’t unusual – “I eat none of the proper meals.” It’s a case of breakfast (today, cookies), and then trying teeny amounts of the food he prepares throughout the day. Being a chef is notoriously challenging: tough crowd, long hours. At 33, Trehout has been a chef for 17 years and sounds entirely used to it. “I work a 90-hour week,” he says with a shrug. Despite how hard it appears, job satisfaction is immense: “I get to work with a range of people

and it is so rewarding.” One of the best elements, Trehout says, is devising the menu – “It’s just the dishes I love.” His current Plateau favourite is beef cheek. “The menu is also dependent on the time of year, as I use seasonal ingredients,” he

says. If he doesn’t change the fish seasonally, for example, the price will have to go up. Trehout truly cares about the vibe in the kitchen. “I spend 12-14 hours a day with these guys, and I want everyone getting on and going to the pub with each other.” It’s paid off: the atmosphere is friendly, with no sense of rivalry. The only time he permits shouting, he says, “is during lunch service. And what happens in lunch service, stays in lunch service.” And at exactly 11.30am, it starts, earlier than I expected. Suddenly, it’s hotter. More lights come on. There are sounds of sizzling, grating, sharp knives and a slight clattering of pots and pans, but less than you’d expect. There are ten or so chefs and sous chefs, all heads bent down, prepping bread and cheese, stirring sauce, tasting it and adding salt. Orders come through automatically on a machine. The piece of paper is ripped off, pinned up and called out before being prepared. When it’s ready to go, a chef calls for service,

at which point a waiter comes in, gives the rim of the plate a final wipe and takes it out to a waiting guest. It’s busy but orderly, fast-paced but not frantic. There’s an order for French onion soup. As it’s being ladled out, Trehout, managing to appear in constant motion even when standing still, is there: “Is it hot? Tasty? Did you try it?” He does so himself. “It needs more salt.” “It can be extremely stressful,” Trehout says. “But I try not to spread it to the team. It’s not a good thing.” I spy root vegetables, green beans and something involving nori wrap. It’s all I can do not to reach over and grab shavings of parmesan being sliced off a giant wedge. I try to gauge what appears to be most popular: several portions of foie gras, beef tartar and beef filet, cooked to perfection on the 350-degree Josper grill, go out the door. Each big white round dish looks perfect, with hearty portions delicately arranged artistically – a vibrant drizzle here, a clever garnish there. puréed beetroot is beautiful. “People rarely send back the food,” Trehout says. Regular guests come in weekly, knowing exactly what they want and how they like it. Despite being shy, Trehout is always happy to go and greet them. The customer service element is far greater than anyone

realises. “We can do 60 covers at lunch. All 60 have to leave happy, not 59, despite different tastes and expectations.” Trehout doesn’t sit down. All day. Just four hours of standing leaves me knackered and, yes, he tells me, his back and feet do hurt. Unsurprisingly, he says, “I never cook at home. Either my girlfriend cooks or we eat out.” Having experienced the underbelly of a restaurant, I wouldn’t blame any chef for being exhausted, overwrought and just the tiniest bit mad. It’s been an eye-opening experience, a world away from the calm environment in Plateau itself, with its serene setting, marble-topped tables and floor-to-ceiling views over Canada Square. There truly are two worlds within a restaurant, and that’s worth thinking about when you next dine out.

hile Canary Wharf is lacking neither tall buildings nor great restaurants, it now has a winning combination of the two.

Bōkan, the new restaurant perched on floors 37 to 39 of the area’s recently opened Novotel hotel, offers views of the type that will make your heart soar and make you feel as though all those hours spent crushed amid a mass of commuters on the Jubilee Line were worth it, because, well, London is amazing. And if you were about to be put off by the mention of Novotel, keep reading, for this is a Novotel hotel with a difference: luxurious, stylish, and – dare I say it – cool. Bōkan’s impecccably fashionable interiors – think Shoreditch House meets Duck & Waffle – are leading the way, with archetypal on-trend flourishes – including animal hide seat coverings and antique telescopes – in abundance. Her three years in America were a real coming-of-age experience. “Working at Seeger’s restaurant in Atlanta was the only time I worked for a chef who wasn’t French and it taught me a different way of doing things. It was also the first time I had been so far away from my family; I was only 20 and I didn’t speak any English, so it was really good for me.”

We finish with a Paxton & Whitfield-sourced cheese board. Altemaire told me that her last meal on earth would be “without a doubt, cheese and bread”. Neapolitan pizza-making process from the late 18th century; this involves baking the pizza in a wood-burning oven – at 500˚c – and using a sourdough base that has risen slowly over a minimum of 20 hours. The slow levitation and blast cooking process lock in the flour’s natural aroma and moisture, giving it a soft and easily digestible crust. She joined Campbell’s agency, Premier Model Management, and the teenage Wilde found herself swept up in the frenzy of the fashion world, fronting campaigns for Burberry, Topshop and Abercrombie & Fitch: “It was such a mad way to start within that industry,” she recalls. “I did a few shoots with Isabella Blow, which was amazing, then I met Naomi and she took me to her agency. I think I just got swept up in the ride of it all.” Wilde, with her good looks and illustrious name, also caught the attention of the press, which attempted to brand her as an ‘It’ girl and named her the second most eligible girl in Britain. However, Wilde rejected these labels and by 18, she had decided to walk away from modelling. “I stopped because it didn’t make me happy and I didn’t feel comfortable doing it,” she tells me. “I think you need to have a very strong personality to exist in that world and I wasn’t prepared for it.” Her next step was to enrol in a fine art course at City & Guilds of London Art School, but she wasn’t there long before realising she wanted to act. Having never even appeared in so much as a school play, this decision came as a surprise to her family and friends. “I still have friends who can’t understand how I could be an actress because normally I’m quite introverted,” she says. “It was never a route I had expected to go down, but was something I found I was interested in.” In 2009, aged 20, Wilde made her acting debut in the film, St Trinian’s 2: The Legend of Fritton’s Gold, appearing alongside Rupert Everett, Colin Firth and Talulah Riley. hoemaker. Mother of three. Film noir devotee. Charlotte Olympia Dellal is a wearer of many hats – a description

that seems fitting for a woman who has made her name as one of the fashion world’s most creative and exciting accessories designers. The daughter of Brazilian model Andréa de Magalhães Vieira, Dellal was exposed to fashion from an early age, frequently accompanying her mother to shows in the ’70s and ’80s. Being backstage on those occasions, she recalls how she was enraptured by “the buzz, the energy, the idea of creating something and then it unfolding in front of you – it really resonated with me”. Dellal studied at London College of Fashion and afterwards applied for a course at Cordwainers when a tutor pointed out that she was focusing an undue amount of attention on the creation of hats, shoes and bags to match her designs – “I guess she thought my focus was on accessories, to me I was just designing a complete look.” But a seed was clearly planted; at Cordwainers Dellal made her first shoe “and fell in love with it”, sparking a passion and the beginning of a global brand.

travel was an adventure and there was an art form to it.” Dellal took three of the brand’s existing models – including the trademark suitcase in two sizes and a vanity case – and put the Charlotte Olympia stamp on them, adorning the pieces with a soft cream leopard print pattern and adding a silk spiderweb-patterned lining to the inside. In addition to this, and perhaps not surprisingly, the designer has added a shoe case, which again builds on an original Globe-Trotter aesthetic. “I went through their archives and found a piece I could base my design on, and adapted it for a modern customer. Heels are higher now and flatforms are bigger; also, I wanted to accommodate more shoes,” she admits. To coincide with the launch, Dellal has designed a capsule collection of embroidered slippers, inspired by travel. Designed to fit into her Globe-Trotter shoe case, each one bears a motif corresponding to a different destination, ranging from the uniquely distinctive Statue of Liberty for

or years, health devotees have been downing green juice before slathering on a chemical-rich moisturiser or a bronzer full of unpronounceable ingredients. Now, with more conscious and

demanding consumers, skincare brands are wising up and producing products that are free from commonly found nasties such as parabens, phthalates and petrochemicals. Natural, organic (using natural ingredients grown with no chemicals) and even vegan skincare is experiencing a serious upswing. Earlier this year, the Soil Association stated that sales of organic health and beauty products have increased by more than 20 per cent, and the UK market is now worth around £61m. “[It] has evolved quite dramatically,” says Margaret Mitchell, group buying director at Space.NK. “The customer who buys into ‘green’ brands has diversified – they are no longer a smaller, targeted group of customers.”

our table’s ready,” our waitress says as we arrive at Marchal, one of Copenhagen’s finest restaurants, “but

first, how about Champagne?” She directs us to the bar. We go down a marble staircase, along a corridor, past a gloriously blue pool, through a waft of neroli oil (coming from the spa) to a door. I hesitate; my husband pushes it open. I feel as if we’ve discovered a speakeasy but it’s actually the well-known and lavish Balthazar, the first Champagne bar in Copenhagen, housed in the prestigious Hotel d’Angleterre where we’re staying. There’s a display of Krug, signed by the man himself, mirrors, chandeliers and a sculpture of the winged Spirit of Victory towering over small tables. John, the barman, hands us his “bible” – the Champagne list. Main courses include lobster in two servings: the tail, slow-cooked in thyme leaves, then the claw, sliced and served in a bouillon, with raw Jerusalem artichokes. Desserts include a crisp tarte tartin and a ‘gold bar’: chocolate covered in folds of gold leaf with creamy calvados ice cream. Copenhagen is known for its flourishing food scene and boasts 15 Michelin-star restaurants. But tasty dishes, served at a reasonable price, can be found almost everywhere. One morning, we wander along Nyhavn canal with its colourful gabled houses and cross the footbridge to Papirøen, or Paper Island. Crammed into waterfront warehouses, once used to

Later, we explore Nørrebro (the northern district) on Copenhagen’s Beer Walk, a self-guided tour that highlights specialist breweries. “It’s not a pub crawl,” Henriette Jacobsen, one of its creators, insists (I note our pack of tokens includes tumblers rather than pint glasses). “It’s just a nice way to experience the neighbourhood.” Our favourite bar is Kølsters Tolv Haner, with its airy interior, long tables and wooden floor. It has a bohemian feel, chilled music and an owner, Esben Kølster, who’s happy to chat. He explains that all his beer is organic with hops grown on an estate in the eastern region of Humlebaek. We try Fiskol (“fresh beer”) with a hint of honey and elderflower, Norland flavoured with meadowsweet, and Original Porter, a malty stout based on a British recipe from the 1700s. For a light lunch we head to Tårnet, a restaurant in the historic tower above the Danish parliament.

All Aboard the Bear Express Whatever majestic scenery you’ve come across, the rugged, raw and remarkable Canadian Rockies puts them all to shame, finds PATRICK MCALEENAN

F

or many, the Canadian Rockies conjures up images of a kind of utopia. It’s a trip you may only make once, so heed my advice: there is no better way to see it than from the Rocky Mountaineer train.

It all starts in Vancouver, a city I could happily live in. The boulevards

are broad and handsome, the air is filled with a sense of prosperity, and there’s a burgeoning restaurant and bar scene that has put the city firmly on the global gastronomic map. Highlights include the Bluewater Café, Fable, CinCin and Raw Bar at Oru. There’s no shortage of luxurious accomodation, either. Before kicking off our adventure we stayed at the Fairmont Vancouver, opened in 1939 by King George VI and Queen Elizabeth (for a continued royal touch, the Duke and Duchess of Cambridge were in town during our stay). This sparkling grande dame is a Vancouver landmark. Perfectly located near major attractions such as the Vancouver Art Gallery and luxury shopping along Robson Street, doormen wear long frock
