When it comes to the robata, the quality of the cooking is seen in the perfectly blackened skin of our thick, meaty fillet of cod and the well-balanced coating of miso on the thinly sliced aubergine – sticky but not too sweet. The baked sweet potato is soft, creamy and totally moreish.

One excellent thing about dining here is that the food is light. It is filling, but not heavy, and that, of course, leaves room for dessert. Overcome with greed, we opt for the

Grape Expectations ‘British Fizz’ or a glass of ‘Sussex’ with your Christmas dinner? Whatever you want to call it, English sparkling wine has arrived W O R D S / C h r i s A l l so p

uring the tail end of this year’s warm October, Mark and Sarah Driver, owners of Rathfinny Wine Estate in Sussex, hosted members of the press

It’s the final harvest before Rathfinny, established in 2012 along a picturesque swathe of the South Downs, releases its first vintages of sparkling wine to an eager market. At 180 acres, it isn’t a small vineyard, and the Drivers – for whom this is their first foray into the wine industry – intend to double its size by 2020 (thus making it, if things stand as they currently are, England’s largest single vineyard).

What gives these initiates such confidence?

Former hedge fund manager Mark points out that the UK is the largest market for fine sparkling wines (Champagne) outside of France. “We consume about 1.8 billion bottles of wine generally per annum and we import 99 per cent of that,” he says. “If we can produce a wine that rivals the best in the world, which we can, I believe that we can sell it both in the UK and overseas.”

This belief, that English winemakers can match Champagne for quality, has solidified from

faith into fizzing fact over the past decade. In a blind tasting in 2015, the English, in the wine world equivalent of a slap with a velvet glove, bested bubbly behemoths such as Pol Roger, Veuve Clicquot and Taittinger. And then – slap, slap – repeated the presumption at another blind tasting in early 2016.

By May of this year, the French had invaded.

Pierre-Emmanuel Taittinger – president of the eponymous Champagne house – planted vines at the ceremonial launch of Domaine Evremond Vineyard. These plantings were the physical realisation of what had been widely known for years – that major players in the French wine market were investing in England’s increasingly vine-crossed south east.

“Gerard Basset (master of wine and master sommelier) said recently that England is a bit like New Zealand in the 1980s,” Charlie Holland, winemaker and chief executive of the awardwinning Gusbourne winery, tells me. “People are

now seeing a similarity between New Zealand just before its boom and English wines.”

They may even have solved that most vexing question of a unifying brand name for English sparkling à la Champagne, Cava or Prosecco. Previous suggestions have included the distinctly French-sounding ‘Britagne’ (pronounced ‘Britannia’ apparently), as well as the underwhelming ‘Merret’ (for English scientist Dr Christopher Merret, who helped invent Champagne in the 16th century), while Rathfinny’s Driver is intent on serving up his output as a glass of ‘Sussex’. ommy Hilfiger is the American Dream. Born Thomas Jacob Hilfiger in 1951, he grew up in Elmira, New York State – a town whose motto is, rather proudly, ‘A Great Place to

“As a teenager, I was really influenced by rock ’n’ roll artists and the cutting-edge fashions they were wearing,” Hilfiger tells me. “It was impossible to find those styles in Elmira, so I decided to design them myself, inspired by the musicians I loved.

“I then opened my first store, People’s Place, where we sold the coolest clothes while blasting our favourite rock tunes. This is when I discovered my passion for designing.”

It’s not just rock and roll that has informed the direction of Tommy Hilfiger. The brand’s ability to traverse the preppy, rock and R&B scenes is unique. The ’90s was a particularly rich decade for Hilfiger’s collaboration with the R&B world, with superstar singer Aaliyah becoming the brand’s spokesperson

It also helps that his clothes are supremely comfortable, something that could be attributed to Hilfiger’s time in India. In a book produced by Assouline, aptly titled Tommy Hilfiger, the man himself details how, towards the beginning of his brand’s expansion in the early ’80s, he would spend time in the factories where his clothes were produced, “with my pile of sketches and watch [the clothes] being made, tweaking as I went. There’s no better design school in the world”.

RockCircus marked a return to London Fashion Week after a 20-year hiatus, but, says Hilfiger, it is a city that he loves. “London has an amazing fashion and music heritage.

They had a style very different to anyone else.” Hilfiger dressed The Rolling Stones for their 1998 world tour, and was an official sponsor of The Who’s Pete Townshend’s 1993 Psychoderelict tour.

Besides the glamorous catwalks and exclusive parties, Hilfiger is a serial charity worker, having launched the Tommy Hilfiger Corporate Foundation, supporting charities that help at-risk young Americans. Indeed, when I ask him who he looks to for inspiration, Hilfiger is unequivocal in his choice: “One of my idols is Martin Luther King, Jr. He was one of the greatest forces for change in American and world history, and I’ve always had the utmost respect for his passion, devotion and what he stood for as a leader.”

In the fashion world, he hopes to be a leader himself, in sustainability. After reports on factory workers in Bangladesh found major welfare problems, Tommy Hilfiger’s parent company, PVH, signed a factory safety pact and invested money in improving the lives of those making clothes for many Western brands. “It’s our mission to be one of the leading sustainable designer lifestyle brands, and our future success is dependent on bringing sustainable practices into everything we do.”

hat comes to mind when you think of Tiffany & Co? Could it be a sublimely dressed Audrey Hepburn peering into the window of the

brand’s Fifth Avenue store in New York City? Or perhaps it’s the unequivocal thrill inspired by the distinctive Tiffany blue boxes, which never fail to evoke a sense of occasion.

Tiffany first entered my consciousness as a teenager in the noughties, when the wearing of a Tiffany & Co heart necklace determined your social status. Then, in my 20s, the jeweller’s intricate keys were the gifts of choice for friends celebrating landmark 21st birthdays. Now in my late 20s, my focus is drawn to what the brand is perhaps most known for: its brilliant, dazzling engagement rings.

But what about watches? The brand has a long history of watchmaking, dating back to the 19th century. So entrenched is the brand in horological history that the nine-foot bronze statue of Atlas holding a clock that sits above the brand’s store at 550 Broadway was one of New York City’s first public clocks, and famously one of the most accurate, with New Yorkers syncing their own timepieces by it – hence the coining of the ‘New York minute’. It was at this time that the ever-ambitious founder of Tiffany & Co, Charles Lewis Tiffany, decided to play the Swiss at their own game, opening a five-storey,

creativity in the past few years. We had two crises in a row – first 2008 then 2009 – and now we’re just out of the last part of another crisis so it has been a conservative moment for watchmaking; nobody was launching anything new or daring.

I think it’s time to push more in terms of styling and that’s exactly what we’re trying to do. We want to differentiate ourselves from the competition in the way that we shape watches.”

Andreatta’s passion for the craft of watchmaking is palpable – “from a young age I loved the idea of creating things, and the things were watches” – and he tells me that growing up around watchmakers taught him the value of timeless design.

“It’s important to look at what is around you now but at the same time ensure that what you design is going to last. Beautiful things normally last forever; as do simple things. I believe that the most successful watches in the world are just a few lines.”

Despite his clear love for his work, Andreatta’s heart lies with his family, who he will spend Christmas with in St Moritz – “if there is any snow”. Though he is evidently not the boss at home. “At the end of last winter I told my wife ‘next year we’re going to the sea’ as I love to windsurf. But my daughter and my wife want to ski – so guess what, we’re going skiing.”

Beyond Christmas, what’s in the pipeline for 2018?

“We’ll be renovating the Atlas collection, plus launching a beautiful jewellery watch that will sit with the jewellery range. I think it’s a great opportunity for a brand such as ours.”

But Andreatta seems keen now to pull back the reins a little, presumably in a bid to not repeat the mistakes of the past. “We’ve been running a lot and it’s time to consolidate. My grandfather said to me that whatever goes out fast goes down fast. This is so true of the watch world – there are many brands that become famous quickly and then they disappear. In our case we need to carefully develop the way we connect with our customers.

A FOODIE’S DELIGHT As a person who spent their childhood roaming across fields, picking blackberries for crumbles and chasing after a well-natured but completely daft labrador, I would consider myself far from the dedicated urbanite. Thus, for me, an escape to the country has to feel authentic, and nowhere does the complete country experience quite like The Pig. With hotels in Dorset, Devon and a particularly glitzy outpost close to Bath – known for being the starry post-Glastonbury retreat for celebrity revellers such as Alexa Chung and Daisy Lowe – the group’s focus is on quintessentially British venues and excellent, home-grown food.

If you’re sick of stumping up for a chalet every year, then why not buy one? Katy Parker-Shorthouse takes a look inside the superbly glamorous Six Senses Residences in Courchevel

n my time as editor of this magazine, I have had the fortune and privilege to visit some pretty spectacular hotels – from renovated

monasteries on the Amalfi Coast to underwater destinations in the Maldives – and while it isn’t really in the job description to play favourites, I have secretly harboured a soft spot for the Six Senses group for some time now. Champions of laid-back luxury, Six Senses’ commitment to fivestar services and quality experiences in a tasteful, chic and often eco-friendly environment has long resonated with me.

Known more for its idyllic beachside locations, the group demonstrated its ambition last year when it announced the launch of its first residential project in Europe: 53 sumptuous apartments and penthouses in the heart of the French Alps. And for a brand known for its excellent locations, it had to look to the very top – quite literally – when it came to its position.

Courchevel 1850 – known as winter’s answer to St Tropez – is the highest of the Courchevel resorts and by far the most exclusive; famed for being the ski destination of choice for the likes of the Beckhams, the Duke and Duchess of Cambridge and George Clooney. Marcus Lyall’s popular installation On Your Wavelength will be making a return to the festival. Originally commissioned by Canary Wharf Group in 2017, the interactive light and sound installation is controlled by a participant’s mind via a EEG headset.

As their thought patterns change a light tunnel fitted with over 30,000 LEDs will create intricate light patterns.

Pick up a map on arrival to help guide you around the installations to experience a wealth of inventive and spectacular light effects and sculptures that will illuminate the Canary Wharf skyline.

As well as outdoor pieces in the many parks and plazas of Canary Wharf, the festival also includes a specially curated indoor section of works in the basement of the newly constructed Crossrail Station and in the spectacular Roof Garden at Crossrail Place.

The Festival features a number of UK firsts including Collectif Coin’s Abstract, a 128-pixel matrix in which every pixel can move over its vertical axis between the ground and a 4m crest. Movement, sound and light interweave in Abstract, repeating a 20 minutes loop inspired by the concept of time and relativity. The movement will be used to freeze time whilst the audience keep their feet firmly on the ground.

Belgian artist Tom Dekyvere will be transforming Westferry Circus with Apparatus Florius, a work that stands for togetherness, happiness and joyfulness but also for danger, friction and tension.

Made with hundreds of meters of light emitting rope tied together to form a network, the piece aims to illustrate the togetherness and collaboration in contrast with nature and technology.
