veryone’s heard of Jamie Oliver. We at Canary Wharf are fans of Jamie’s Italian, and the cheeky Essex boy, who first burst onto our screens in 1999 as the self-titled Naked Chef, has been trying

to make Brits healthy long before it was cool. The busy dad-of-five revolutionised school meals, and now he’s launching a new book and TV series, 5 Ingredients - Quick & Easy Food, offering healthy, quick

and budget-friendly recipes using just five ingredients. We meet the man behind the brand to talk about why simplicity is key, the future of nutrition and picnicking in Cornwall. What’s the idea behind your new book and TV series? Five is the magic number – and not just because that’s the number of children I’ve got! With five ingredients, you’ve got the beautiful opportunity to be simple but have a nice surprise too. It’s not time or cost that is the most important thing now, it’s simplicity. The biggest block to people cooking from scratch is a really long list of ingredients. What sort of recipes are they? Not every recipe is a complete meal. You’ve got a salad, a side dish, a beautiful slow-cooked centrepiece, a dessert, a plate of biscuits. You might open the book on an incredible slow-cooked lamb shoulder, which could happily be served up for a crowd. Or, you might find a really easy, fresh salad that you can rustle up for a solo lunch. I purposely wanted the recipes to cover a massive range of occasions and serving sizes, but with ease and simplicity being the thread that runs through it all. Where did you get your inspiration for the recipes? I looked to the big, bold flavours of India and the Far East for many of the recipes, because using things like curry pastes, miso and other spices guarantees a punch of flavour without taking too many steps to get there. I also looked at classic recipes that use loads of ingredients, and wound them back and stripped them down. Sometimes restraint is the best ingredient – just holding yourself back and keeping a dish clean and simple makes it easy to showcase all of the wonderful flavours. Did you practise any of the dishes on your family? Loads, in different forms – my family often get the more experimental side of my cooking, the dishes I’m playing with and tweaking. Having said that, cooking for the family is so different now, as the kids are growing up. I’ve got teenagers who are ready to give anything a go — they loved the dynamic salads, the punchy noodle and rice dishes, anything hot and kicking. Jools is always into the roasts, slow-cooked dishes and really beautiful pastas. The kids are by far my harshest critics.

Quick Asian fishcakes Makes 4 Total: 22 minutes 1 stick of lemongrass 6cm piece of ginger ½ a bunch of fresh coriander (15g) 500g salmon fillets, skin off, pinboned, from sustainable sources 4 teaspoons chilli jam Whack the lemongrass against your work surface and remove the tough outer layer. Peel the ginger, then very finely chop with the inside of the lemongrass and most of the coriander, stalks and all, reserving a few nice leaves in a bowl of cold water. Chop the salmon into 1cm chunks over the mix on your board, then push half the salmon to one side. Chop the rest until superfine, almost like a purée, then mix the chunkier bits back through it and season with sea salt and black pepper. Divide into 4, then shape and squash into 2cm-thick patties. Place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil. Cook the patties for 2 minutes on each side, or until nicely golden. Spoon the chilli jam over the fishcakes, add a splash of water to the pan, turn the heat off, and jiggle to coat. Serve sprinkled with the drained coriander.

Do you do most of the cooking at home? Well, my wife cooks for the kids when I’m not there, but if I’m home I’ll cook. She loves it. And it’s my way of loving – she loves getting looked after and I think she enjoys it. Cooking at home is very different from cooking at work, or cooking on the line, in the kitchen. It doesn’t have to be stress; you put some tunes on, you have a little glass of wine. I love it.

Will any of these dishes make it onto the menus at Jamie’s Italian? I’ll definitely be working with my chefs to make sure some of the dishes make it into the restaurants for autumn/winter, so watch this space. What is your favourite hack from the book? There’s a chicken recipe that’s just really good chicken rubbed with curry paste, roasted over potatoes and cauliflower, with a sprinkling of fresh coriander — it’s not complicated, but you just know that combo is going to deliver. What five ingredients would you banish from the kitchen? I think soda is a good one to get out of the house. Fish paste is disgusting. Spam Chocolate orange shortbread Makes 12 Total time: 30 minutes 150g unsalted butter (at room temperature) 200g plain flour 50g golden caster sugar, plus extra to sprinkle 1 orange 50g dark chocolate (70 per cent) Preheat the oven to 190°C/375°F/gas 5. Grease a 20cm square baking tin and line with greaseproof paper. In a bowl, mix together the butter, flour, sugar and the finely grated zest of half the orange by rubbing the mixture between your thumbs and fingertips. Squash and pat into dough – don’t knead it – then push into the lined tin in a 1cm-thick layer. Prick all over with a fork, then bake for 20 minutes, or until lightly golden. Remove, sprinkle over a little extra sugar while it’s still warm, then leave to cool. Meanwhile, melt the chocolate in a heatproof bowl over a pan of gently simmering water, then remove. Cut the shortbread into 12 finger portions, then transfer to a wire cooling rack. Drizzle with the chocolate, then finely grate over the remaining orange zest. Cut up the orange, and serve on the side!

can definitely go to hell. MSG. And hydrogenated fats. How do you spend your weekends? For me, the weekends are much more about longer meals and Sunday lunches, when I’m off and the kids are off. For me, the weekend starts on Friday night and finishes Sunday night and generally, we do indulge more. So in some ways, the book is more for Monday to Friday, when you’re working and you want energetic food that is not unhealthy. How has fame and wealth changed your life? I don’t think it has... I think I’ve stayed true to my values. I’m very aware of the downsides but I think it’s important, whoever you are or whatever you do, that balance is always there. Having more money has changed my life, but only in more obvious sorts of ways; like if I want to go on a holiday and one place is more expensive than the other but it feels right, then we’ll go for that one. I don’t think I live a celebrity life. I’m not private jetting everywhere, or going on big boats. I don’t want to own an island or anything like that. As a family we just got back from Cornwall – we got pleasure through having a picnic, walking to a beach and going fishing. Where do you see the future of food and nutrition? I think in the next 20 years the most exciting bit of nutrition, health and diet will be making things unique and individualised. If you go online now, there are generic recipes, but I think probably very soon, from a pin-prick, or scanning your urine or blood, it will be edited to you personally, and I think that is fascinating. I think the concept of modern-day people getting it right most of the time because they have truth and clarity is really exciting. What gets you up in the morning? Well, the joy and fun of the food industry, farming, cooking, eating, sharing – it’s generally a beautiful place to be, full of pretty amazing people. On top of that, at this stage of the game where, let’s be honest, our food system is broken, me and all my teams feel like we’re able to influence the conversation globally and hopefully impact real change. Of course, it is the innate simplicity of each piece that makes it quintessentially Harry Winston. Its late founder strongly believed that the stones should always come first when it came to a jewellery piece’s design, as Hayek explains: “Harry Winston believed that the beauty of a diamond should speak for itself. His signature aesthetic was to place diamonds at the forefront of designs in order to create fluid, more graceful jewels that highlighted the innate brilliance of its diamond centre stones.” This has been captured in the collection’s 11 necklaces, which have been meticulously sculpted in invisible platinum in order to maximise the diamonds’ brilliance.

One of the renowned designers responsible for capturing this fluidity in each piece was the late Maurice Galli, who worked with the house for many years up until his death last year. Despite there having been much talk about this collection within the luxury jewellery circuit, Harry Winston has remained fairly discreet about its latest high jewellery collection and even forbade all press photography in the run-up to its unveiling. While this may be unheard of in the public world of social media, it seems entirely fitting for a house whose founder allowed his pieces to speak for themselves. The Legacy collection has been designed for a modern woman who truly appreciates quality, craftsmanship and rarity, but who is also not afraid to be noticed. It seems that in the lucrative world of collaborations, no stone is left unturned; no coupling seems too far-fetched. Streetwear brand meets Kermit the Frog? Fine. Coach meets Mickey Mouse? Sure. In recent years, we have also seen car manufacturers enter the mix, with Hawes & Curtis’s partnership with Alfa Romeo and the latest collaboration between Barbour and Land Rover. This season sees the launch of Barbour’s first Land Rover Defender collection. A union of two titanic British brands, the range has been inspired by that modern symbol of country living – Land Rover’s Defender – and has been designed with a driver’s lifestyle in mind, with waxed jackets boasting symmetric leather overlays to provide protection from seatbelts. Traditional country colours of olives and blues feature throughout, alongside a unique Land Rover tartan that incorporates hues from the brand’s paint palette. Barbour’s design and development manager, Gary Janes, says of the range: “We wanted to create a menswear collection that incorporated the heritage and functionality of both our brands. The collection features a range of jackets, shirts, sweaters, tees and accessories that are designed for both city and urban living; it’s clothing that is effortless to wear, and the influence of the Defender means it’s more rugged in appearance than

Sara Palmer Hussey is the founder of Lumity supplements. “The less sleep we get, the less the body is able to counterbalance the damage of everyday living… [which] can lead to accelerated ageing, hormonal imbalances and degenerative diseases,” she says – not to mention increased risk of depression, high blood pressure and weight gain.

And, sadly, you can’t ‘out-diet’ or ‘outexercise’ a bad night’s sleep. Lisa Sanfilippo is a ‘yoga for insomnia’ expert. “If we are sleep-deprived, we’re more susceptible to feeling stressed. In a stressed state, blood flow and circulation to the gut diminish, so even the most nutritious foods may not be absorbed by our bodies effectively,” she says. As for exercise: “When we exercise from an unrested state, our bodies think we’re in survival mode and actually may not burn fat in the same way.” Plus, when you sleep badly, you tend to eat more, as the body tries to make up for lost energy. Yet as crucial as sleep is, modern life isn’t conducive to it. Dr. Jim Brown is a sleep specialist at the Centre for Health and Human Performance. “The circadian rhythm (that controls our natural states of sleep and wakefulness) take cues from the environment, including light, temperature

and hormone levels, to determine when we should be sleeping.” However, thanks to “hectic schedules, stress, light and noise pollution and stimulants such as caffeine and nicotine”, we are ignoring this. Food can make a real difference to sleep. High-tech British mattress brand SIMBA Sleep has worked with a nutritionist to create a menu for the perfect night’s sleep. It includes chicken, which contains tryptophan, the building block of the sleep hormone melatonin, and kiwi, which has high serotonin levels that convert to melatonin. You should also be mindful of when you eat, says Canary Wharf’s CPRESS nutritionist Miriam Gubovic. She agrees

n the early 1970s, Tottenham Hotspur Football Club allowed a writer exclusive behind-the-scenes access to a sport that had, until then, been largely shielded from

Hunter Davies accompanied the team for an entire season: he interviewed players at their homes, witnessed dressing room discussions and was often mistaken for a substitute player at away games. It is due to open a pioneering members’ club, The H Club, at the new stadium in 2018, which looks set to mark the beginning of an entirely original and elite kind of Premier League experience. The reason for this careful curation is that members will be embraced completely into the club – they will be as close as one can get without being considered for substitution at half-time. The world’s perceptions were shattered by the high-tech construction of the Burj Al Arab in December 1999. Now owned by the Jumeirah Group, the hotel remains the pinnacle of luxury. The rooms and lobby are traditionally Arabic in design, with almost everything relying on a colour palette of gold, dark blue and purple. Check-in takes place in your duplex suite next to the floor-to-ceiling windows overlooking the Arabian Gulf. Bathrooms are all marble, with gold taps and towel rails, and toiletries by Hermès. Henry Moore’s Draped Seated Woman Returns to East London Henry Moore’s Draped Seated Woman – affectionately nicknamed ‘Old Flo’ by residents of the Stifford Estate in Stepney where she resided from 1962 to 1997 – returns to the East End on 22 October, after 20 years on loan to the Yorkshire Sculpture Park. The bronze sculpture was created in 1957/58 by Moore, arguably Britain’s most important modern sculptor, as an edition of six, plus an Artist’s Proof. This cast was originally acquired by London County Council as part of the LCC’s Patronage of the Arts Scheme to site works of art in housing estates and other public spaces, for the enjoyment of the local population. The sculpture was located on the LCC’s newly built Stifford Estate in 1962, remaining there until 1997, soon after which the estate was demolished. Since then the sculpture stayed
