New Pain Treatment at Haydel Spine Pain & Wellness Center Haydel Spine Pain & Wellness Center is excited to offer a new state of the art minimally invasive treatment for lumbar stenosis. Dr. Michael S. Haydel specializes in minimally invasive spine procedures and is one of only five physicians in the entire state of Louisiana who is certified in this advanced procedure. Dr. Haydel is also certified by the American Board of Interventional Pain Physicians, Fellow of Interventional Pain Practice and American Board of Anesthesiology.

The procedure is Vertiflex, an indirect decompression system, FDA approved and covered by Medicare. It’s a new alternate treatment for lumbar stenosis, providing patients with a minimally invasive approach that puts your comfort and safety first, offering the only treatment on the continuum of care between conservative care and more invasive surgery. This treatment is especially helpful for older patients with significant limitation in walking distance due to pain, which is also relieved by sitting and resting. If you have leg/hip/groin pain with standing or walking, which is relieved by bending forward at the waist and no more than two vertebral levels are involved, then you could be a candidate. This procedure requires only a 3⠄4-inch incision, takes about one half an hour to complete and is completed in an outpatient facility making it a favorable alternative in treatment. Clinical trials indicated 90% patient satisfaction through 60 months post procedure evaluation. They experienced 75% successful reduction in leg pain, which makes this procedure an excellent alternative to the more invasive options. This new therapy allows Haydel Spine Pain & Wellness Center to provide customized and optimal pain reduction or relief utilizing state of the art and groundbreaking minimally invasive healthcare, which can result in improved quality of life.

TAKE ME TO THE BEACH Welcome to the Summer Fun Issue!

to Austin Doiron. Austin took a hobby and has turned it into a very successful business. A love of fishing and a desire to paint his own lures led him to start Blackjack Lures. Learn more about this fisherman’s dream come true on page 24.

What comes to the top of your mind when we start talking about summer fun? My mind drifts to the beach. While I’m not exactly a sand person, I love the ocean. I love the loud sound the waves make against the shore. I could sit for hours and just gaze out, listening to the lullaby of the waves. Jackson decided last summer that he wanted to go to the beach. No clue why; he just randomly announced one day that he wanted to go on vacation to the beach. So John and I began to look into making a summer stop along our Gulf shoreline. While visiting with my parents one evening, Jackson brought up the idea of going to the beach again. We remarked that we also wanted to go somewhere where there was more to do than just sit on the beach. Dad commented that he wanted to go to Pensacola and visit the Naval Air Station, where the U. S. Navy Blue Angels are stationed. And so our vacation for three became a vacation for five! We had a blast! Jackson had more fun at the National Naval Air Museum than actually playing on the beach. The museum was amazing, with lots of hands-on exhibits, planes to climb in and out of, an IMAX theater and of course a great gift shop! Jackson actually asked to go back to the museum two days in a row. That’s a lot, considering the beach was right out our window. But it was a different sea of “blue” that held his attention on the second day. We were able to go down to the museum flight line and watch the Blue Angels practice. It was an amazing experience that we are all still talking about. Our family returned home happy, educated and ready for another trip! The Summer Fun Issue revolves around what we do during these long, hot months. For example, summer in Louisiana is prime time for fishing. Our first story introduces you

We couldn’t let the summer start without throwing another one of our amazing PoV Pop-Up parties! May’s party brings together art, music, food and more during our Summer Arts Stroll in Town Center at Acadia Plantation in Thibodaux. Learn more about the artists showcasing their work and the featured sponsors that helped bring the idea to life on page 38. Families often create a “bucket list” to help them never be bored over the summer. We took it a step further and invited area businesses to help us create a list for you. Our Summer Sand Bucket List will guide you to a few new spots and a few favorites around our great state stating on page 40. Last May we took a closer look at the boys of summer with a story on the Nicholls Baseball team. This year, make way for the girls! Nicholls Softball is making a name for themselves and they give the credit to faith and friendship. The girls prove why winning is the only way on page 44. While most people think of the Caribbean as a vacation destination, several of the youth in our area have visited the poorer regions of countries such as Haiti and Jamaica on mission trips to offer help. Darian Cheramie and Gillian Breaux share what led them to mission work and what the future holds for them starting on page 52. Our May issue is packed with ideas for summer fun. We hope your summer will be just as packed with adventure! Send us a postcard! POV

A picturesque Acadian home situated at the end of a long driveway lined with crepe myrtles was exactly what Brent and Heidi Rhodes had in mind for their family of five. Situated on 3.5 acres with 5 bedrooms and 4 full baths, there was plenty of room for them and their children, Luke, Jordyn and Jacob, both inside and out. While the interior originally had a dark color palette, Heidi was confident that a neutral color palette throughout would fit their style and make the rooms feel larger. Since purchasing the home in 2010, the couple has completed several large renovations with the kitchen being the first. “I like to cook, so updating the kitchen was my first priority,” says Heidi. The addition

of granite countertops, a travertine backsplash, new lighting fixtures and paint on the both the walls and cabinets completely changed the space. The largest undertaking was the addition of an outdoor living space and pool. Adding an extensive outdoor living area including an outdoor kitchen and fireplace as well as a pool and hot tub makes the space a family favorite. “Choosing flag stone on the patio is one of my favorite additions. It reminds me old style Acadian homes and the outdoor patios that you see in New Orleans,” Heidi says. The addition of palm trees and landscaping along with wrought iron fencing completed the space.

9 Most recently, the renovation of the master suite was completed. Opting to gut the entire master bedroom and bathroom, the couple enlisted Travis Buquet Home Builders to complete their dream. “I wanted the bathroom to feel like a spa, so we used marble, tile, quartz, and glass,” Heidi explains. A glass shower surround encloses both the soaker bathtub and shower. In the bedroom, a marble accent wall and a large cedar beam make a statement while elegant linens and custom artwork add a personal touch. POV

SUMMER OF FUN There’s a four-letter word we use frequently around our house during the summer. As I write this article, we are just a few weeks away from the end of school, and the word is already floating around our house, hanging in the air, making its way into our summer vocabulary. If you have a handful of kids (or five!), you probably guessed our favorite word before I gave any hints – free. We say it loud and long during the financially draining months of summer. Here’s a sample conversation: Kid: “Mom, can we ____________ today?” Me: “Is it free?”

In-Ground Gunite Pool Special $29,999 Pool & Spa Construction & Renovations Outdoor Kitchens and Patios

36 Years Pool

Experience!

Kid: Rolls eyes, and meanders back to the other kids, trying to come up with a better, cheaper, mom-approved plan. The best part about free is that it requires zero math skills to calculate the cost. Five times zero equals ZERO. And that’s where I like it. Because with five kids at home who want to be entertained and are constantly hungry, free is where it’s at for us during the summer. Here’s a little list of some of our favorites. Library This one is pretty obvious and is usually one of the first on our list. If you haven’t stepped foot in a local library lately, you’re missing out. Libraries have evolved since I was kid. We borrow books, use the computers, borrow DVDs, participate in free activities (including LEGO building, craft making and free entertainment). The best part (according to my five kids) is the library offers rewards for reading. When I work during the summer, their sitter loads them up and takes them all around Houma-Thibodaux, using the coupons they receive for reading books. Waterfalls If you’re not familiar with Clark Creek Natural Area, you might think I wrote the wrong word, because surely there are no waterfalls near south Louisiana. Well, you would be wrong! We hike the waterfalls at Clark Creek every single summer, sometimes twice or three times a summer. This is a day trip, but it creates tons of memories all wrapped up in a beautiful nature hike and waterfalls. Pack a lunch and picnic on the trail. It’s a beautiful outing that will make you feel like you’re hours away from Louisiana.

Give Mom The Comfort

Sh1e Deserves

Tunnel Walking So this one is pretty random, but it was on our list two years ago, and we never got to do it. So it’s happening this summer. We are going to walk through the tunnel. Why? Because we want to. We are also going to walk as far over the tunnel as we can and peer across the Intracoastal Canal. This makes us dorks, I know, but I promise we all want to do it this summer. Because if you haven’t walked through our local tunnel, are you really living? (Plus, it’ll let me teach them about how the Intracoastal Canal was made - but don’t tell my kids. They think it’s just going to be fun.) Cooking Each summer, each kid cooks a meal or two. They pick the recipes, make sure we have the groceries, and cook our family a meal. It’s not technically free, since you have to buy groceries, but we have to buy groceries anyway, so it’s no additional expense, which makes it technically free, right? It teaches them the basics of cooking and it’s a few hours of fun with each individual kid. Plus, it allows them see how hard cooking can be and how maybe they should tell their mom thanks for cooking. So that’s a win-win. Vacation Bible School So many churches in our area offer Vacation Bible School. If your kids are 12 and under, that’s the age of most VBS programs. If they’re over 12, your preteen or teen can volunteer to help. If you happen to have free time and aren’t working, adults make good volunteers too. This is something we participate in as a family every year, and one we plan on being a part of until we are too old to help out. POV

BY DREW MILLER PHOTOS BY CHANNING CANDIES

When Thibodaux native Austin Doiron asked his wife Ashley for an airbrush for his 32nd birthday, she looked at him puzzled. “‘You’re not an artist. What do you want an airbrush for?’” Austin smiles, recalling the exchange with his wife. Little did Austin or Ashley know that his soon to be new hobby would ignite a business — with products that are raved locally and even admired by a national audience. After Austin received that airbrush on October 30, 2013, he began painting his own fishing lures. The following month, he caught his first fish off a lure he painted; from there, Austin says, he was “hooked” (no pun intended). “It became an addiction to me,” he shares. “I was like, ‘Wow, a fish bit something I created.’” The volunteer firefighter’s new obsession painting his own custom lures quickly became a favorite of his family and friends — which sparked the idea that it might be more than just a hobby for him. “I started small just doing customer orders here and there for people I knew,” Austin says. His brother-in-law Wesley Landry — who was a member of the Nicholls State University’s bass team – gave Austin’s products a lot of exposure, which in turn helped progress the formation of Blackjack Lures. “I think my brother-in-law played a huge part in that [in promoting the lures]. He qualified to fish in a state championship as well as the national championship.

He used my baits there and caught fish,” Austin remembers. “And that’s kind of where we realized, ‘Hey they work. We got something special going on here.’” Word spread, and before long, people outside of his family and friends started calling the hobbyist-turned-entrepreneur. Then in March of 2017, he officially launched Blackjack Lures — which he named after a black dog he had at the time named Jack, who would keep Austin company while he painted. The word of mouth that Austin’s baits generated carried over to the internet when he launched his website and Facebook, the latter having over 2,200 followers. His lures are also a favorite at Thibodaux’s The Reel Outfitters. “It’s a great feeling,” he expresses about Blackjack Lures being a local hit. “First of all, I enjoy fishing, but I also enjoy getting pictures back when other people catch a fish on my lure.”

“It’s something unique. It’s not something you can go into Academy and buy,” Austin adds. “I think that’s what kind of drives people to it.” For the making of his unique baits, Austin orders clear blanks— wholesale. He then chooses if the batch of 15 he is painting will be a crawfish pattern or a bait fish pattern. He then airbrushes the custom items, which typically takes an hour a batch. Not only are the colors and patterns he uses for the lures unique but also the names of the baits (displayed on his website, blackjacklures.com) that includes such names as “Square Bill Sexy Shad”, “Square Bill Zombie Tiger” and “Blackjack Wart Ghost Chart.” In addition to the natural local buzz that was spawned by his creativity, Austin makes sure to promote his custom baits as well. He sponsors local professional angler Tyler Rivet, who fishes while using Blackjack Lures for the Bassmaster Elite Series — giving the brand more exposure on a national level. Besides Tyler showing off the products during televised sporting events, Austin himself makes sure to travel and demonstrate his baits, attending the Southern Louisiana Boat, Sport & RV Show at the Houma-Terrebonne Civic Center and Louisiana Sportsman Show in Gonzales earlier this year. “That’s a great experience because I get to talk to a lot of people and actually sell a lot of product. I also get a lot of custom orders from that show,” Austin says about the Louisiana Sportsman Show. “People stop by and realize I basically hand painted these things…Old guys will stop by, and they are like, ‘Man, I have a bait I used to use in the 70s. It was such and such color, and I can’t find it anymore.’ And I’m like, ‘I can make it happen for you.’” POV

20 wins on the season by April 15, and recently, she recorded her 500th career strikeout. But she’s not alone. Also in the senior class are players like Amanda Gianelloni, Veronica Villafranco, Kali Clement, Gretchen Morgan, KaseyFrederick and Maegen Ellis — all players who have assisted in helping turn the program around. “The year before I got here, we didn’t make the Southland Conference Tournament at all,” Megan says. “Now, we’ve made it every year since. We’ve seen the change in culture in our team over the past four years. … I feel like my freshman year was the turning point. Everyone is now on the same page and we’re willing to buy into Coach’s approach to the game.” “We knew our freshman group would be the start of something special,” Kasey adds. With the senior group’s contributions, the team has also carried forward its successful recruiting efforts and Nicholls also utilizes several underclassmen in its starting lineup, as well, including Emma Holland, Samantha Dares, Melise Gossen, Caitlin Garcia, Corynn Major and Samantha Mracich, among others. Aiding Megan in the circle are also underclassmen Alexis LaBure and Emily Danehower.

It’s a group that, when put all together, can possibly win the entire conference — at least that’s the goal. Nicholls has made the Southland Conference Finals in each of the past two seasons, but both years, the team lost its final game to McNeese State University. This year, Nicholls wants to buck that trend and bring it home, earning a spot in the NCAA Tournament in the process. Players believe they can do it … together. For them, there’s no other way but together. “We think we can do it,” Kasey says. “We’ve had some hiccups in the Conference Tournament in the past, but when we’re focused, we know what we can do.” “We have some powerhouse teams in this conference,” Megan adds. “But we have to believe we can do it. We’ve been so close. I think we know we have the talent and the heart and the coaching. It’ll be a combination of those things that will guide us combined with our unity and our faith.” The Colonels wrap up their regular season at home on May 3-4 against Southeastern. They then move to the Southland Conference Tournament in Katy, and could play into late-May with an NCAA Tournament push. Admission to Nicholls softball home games is always free. POV

GILLIAN BREAUX - JAMAICA

BY DREW MILLER | PHOTOS SUBMITTED

Areas in the Caribbean region may be a vacation destination for a lot of Americans this summer, including some here in southern Louisiana. While many might think of the Caribbean’s beautiful countries with images of luxurious resorts, warm sand, palm trees and clear blue water — unfortunately, the majority of the people in that region experience a life far from a vacation. For instance, Jamaica — even with their gross domestic product (GDP) slowing rising in recent years — is faced with high poverty percentages, devastating natural disasters, widespread corruption in government and a significant lack of life’s necessities for its people, all of which is similar to the island’s neighbor to the east, Haiti.

DARIAN CHERAMIE - HAITI May 2019 53 povhouma.com

Except Haiti is far behind Jamaica, being the poorest country in the Western Hemisphere, according to worldbank. org, with $870 GDP per capita in 2018 compared to the United States last recorded $53,128.54 GDP per capita. Always being a community willing to help, brave and kindhearted volunteers of the Bayou Region have traveled to these two countries to do their part in turning their situations around. Two of whom — Houma natives Darian Cheramie and Gillian Breaux — each answered the call to do missionary work in Haiti and Jamaica, respectively, when they were just 17 years old. Encouraged by Others to Make a Difference For Darian, she was inspired by Dr. David Fakier, who was a duke on the Krewe of Houmas Royal Court when Darian was a maid on the court. David started building homes through local non-profit

organization, Haiti Mission Inc. (HMI) and dedicated them to his daughter Rebecca Claire, who unfortunately passed away at a young age due to cancer. “I always thought it would be a good idea because God has blessed me so much in my life just from having loving parents, a nice car to drive to school and a private school education,” Darian shares. “My parents are very into giving, and I wanted to do something on my own to be able to give back to people that could never even repay me for what I have given them.” At an early age, Gillian knew she wanted to make a positive impact in other’s lives while admiring her mom. “My mom was a nurse and I always found interest in taking care of kids and doing stuff like that. So once I became old enough to go, that was the first thing I wanted to do: spend my summer helping others.”

Stories that will Stay with Them Forever Both Darian and Gillian both admit they were nervous at first, being in a foreign country and knowing the crime that is prevalent in impoverished areas. But their fears quickly subsided when they met the people of the communities they helped. “Once I got in the atmosphere with the kids and the brothers, I felt so safe,” says Gillian who went to Kingston, Jamaica last July through the organization Missionaries of the Poor (MOP) and her church, St. Anthony of Padua. “Never once during the experience did I feel unsafe.” For most days during her trip in Jérémie, Haiti for a week last June, Darian and other HMI volunteers dedicated the homes already built through the organization — bringing toys and household supplies, praying with the families and blessing the homes. Other days, they would visit the local prison and orphanage — the latter of

which housed toddlers, children and the elderly. Darian remembered a story of a young man who lived in one of the houses they visited that had cerebral palsy. His family would carry him up and down every day to bring him to church, school and anywhere else he needed to go. “I remember just going to the house and they were so thankful for a chair for him to sit in; I just started crying,” she recalls. “These people have it so hard already, and to on top of that just to be so positive and grateful that he is even still alive, just spoke to me.”

Besides handing out suitcases full of supplies, Gillian fed, bathed, talked to and more to residents in Kingston at children, women and men’s centers. She and her group also worked at an AIDS center and exercised physically disabled kids. “I was at one of the centers and my job at that moment was to lotion the patient’s legs. And so I was lotioning this one lady and saw this older woman watching me. She kept coming up to me and putting her hand out, like she wanted some lotion. So I would squirt some for her, but she kept watching me,” Gillian remembers. “She just held the lotion and while she was

watching me, she went to a resident next to me and started lotioning her legs…So it just kind of made me realize that not only are we there to help them, but they learn from us, take what we do and apply it to their own people.” A Life-Changing Experience The two young missionaries can’t express enough how their trips have changed their lives, making them more appreciative for what they have. They also say that no other experiences can really compare. “It was such an eye-opening trip,” Gillian expresses. “The genuine joy and happiness that the people there had, even with their low poverty, just made me realize how much of a lavish life we live and how I need to appreciate that more.” Darian echoes those same sentiments. “I think it is one of the most eye-opening experiences you can ever go through in your life,” she adds. “I mean you see it on TV — like the commercials and stuff — and you’re like, ‘Wow, that’s really sad.’ But going there and physically seeing it is something on a totally new level; it changes you for your whole life.”

FINANCIAL AID Encouraging Others to Make a Difference The two high school seniors – soon to graduate from Vandebilt Catholic – are inspiring others to help their respective causes here at home and abroad. As Queen Terre LXIX of the Krewe of Terreanians, Darian — who plans to return to Haiti — helped organize a fundraiser, sponsored by the Krewe, that raised $38,000 for HMI earlier this year. Motivated by stories of her trip, Gillian’s mother and two of her friends will now join Gillian on her two-week mission trip to Jamaica this summer. “In preparation for the trip I am preparing myself mentally to go into this country full of love and selflessness to truly help those who need it,” says 17-year-old Katie Haydel, the Vandebilt Catholic junior joining Gillian this summer. “…I want to bring home the love and hope the people have in Jamaica to my family and friends back home, so that maybe one day they will want to do the same.” To join a mission with or donate to HMI or MOP, visit their websites at missionariesofthepoor.org and haitimissioninc.com. SEIZURES AND EPILEPSY: DEBUNKING COMMON MYTHS

There are a lot of misconceptions regarding epilepsy and seizures in general. Knowing the difference between myths and facts is important in understanding this disease that has been in existence for thousands of years. Epilepsy is currently the fourth most common neurological disorder, so knowing the truth behind some of these commonly held (but inaccurate) beliefs is important.

Myth # 4: “You can swallow your tongue during a seizure.”

Myth # 1: “Everyone who has a seizure has epilepsy.”

Myth # 5: “You should put something into the mouth of someone having a seizure.”

It is physically impossible to swallow your own tongue. However, the relaxed tongue could block a person’s airway. You should roll the person onto their side so that the tongue falls away and to the side. This also prevents choking on vomit and excess saliva.

Anyone can have a seizure. Recurrent seizures, or epilepsy, is sometimes referred to as a ‘seizure disorder,’ but having a seizure does not automatically guarantee a diagnosis. Seizures can be caused by electrical misfiring in the brain as well as irregular blood sugar levels, very high blood pressure, alcohol withdrawal or even extreme stress, including PTSD.

Myth # 2: “Every seizure is the same.” Not all seizures resemble what you have seen on TV! In fact, there are many different types of seizures, each marked by unique symptoms. While many people associate seizures with uncontrolled jerking movements (tonic-clonic or grand mal seizure), a person can also exhibit more subtle physical symptoms such as staring without responding, wandering about confused, repeating purposeless movements or even just an unusual degree of confusion, especially in the older population, in the setting of an infection.

Myth # 3: “You should restrain someone during a seizure.” Trying to restrain a person can cause further injury– they may fight you in their state of confusion. Instead, turn them to the side, move anything sharp out of the way, remove eyeglasses if any, and place a soft cushion under the person’s head. Most seizures stop spontaneously within 1-2 minutes.

Never put an object into someone’s mouth during a seizure—doing this risks injury to the teeth, gums, or jaw.

Myth # 6: “People who suffer from seizures cannot participate in normal activities.” In most cases, seizure disorders are not a barrier to participating in normal activities. Restrictions apply when seizures are poorly controlled and can potentially be a cause of concern for safety of the person having the seizure and others around them. With appropriate and adequate treatment, many people continue to play sports, attend school, drive and go about their daily lives. Need further proof? President Theodore Roosevelt, writers Charles Dickens and Lewis Carroll, artist Vincent Van Gogh and the musician Prince are just some of the people with wide-ranging careers who were known to have had epilepsy.

Myth # 7: “Seizure disorders or epilepsy cannot be cured.” There are several options of treatment that includes medications, diet, devices and surgery. Finding the right treatment largely relies on discussing your specific symptoms and options with your healthcare provider. Many people remain seizure-free on appropriate treatment and live life to the fullest!

ARTHRITIS TROUBLE? STEER CLEAR OF THESE FIVE FOODS

May is Arthritis Awareness Month and chances are you know at least one person living with joint pain or joint disease. Arthritis affects millions of Americans of all ages, causing pain and debilitation in joints and, occasionally, in the body’s connective tissues. From the wrist to the knees, hips, fingers and even skin, the pain of arthritis can take a huge toll on a person’s quality of life. And unfortunately there is no cure. Awareness is key when it comes to any ailment and arthritis is no exception. Scientists are actively studying arthritis, and with each passing year, they discover new things that can lead to more effective treatments. It’s no surprise that sugar, saturated and trans fats, omega-6 fatty acids, refined carbohydrates and MSG aren’t the MVPs of nutrition. However, do you know what goodies they’re hiding in or why they are a nightmare for arthritis sufferers? Learn more about the irritating effects of these five foods:

Sugar Processed sugars can cause inflammation; they trigger the release of peptides called cytokines. Processed sugars can be found in foods like chocolate cake, butter cookies, cereal and even dried fruit.

Saturated and Trans Fats

inflammation, worsening arthritis inflammation. These fats can be found in foods like frozen pizza, doughnuts, French fries or vegetable shortening.

Omega-6 Fatty Acids Your body needs omega-6 fatty acids to develop and grow. However, digesting too much omega-6 fatty acids can produce pro-inflammatory chemicals. It’s all about finding the right balance between omega-6 and omega-3 fatty acids. Omega-3, found in oily fish or nuts, can aid in inflammation reduction. Omega-6 can be found in oils such as mayonnaise, soy, peanut and corn.

Refined Carbohydrates Refined carbohydrates fuel the production of advanced glycation end (AGE) products; AGE elicits inflammation. Refined carbs can be found in foods like white potatoes, white flour as well as white bread.

MSG MSG can stimulate two critical, chronic inflammation pathways. This food additive can be found in foods like soup mixes, salad dressings and deli meats.

Saturated and trans fats (or trans fatty acids) are two of the culprits behind fat tissue inflammation as well as systemic For more information on nutrition counseling, please contact the Wellness Education Center, 985.493.4765. https://www.express.co.uk/life-style/health/1096452/arthritis-rheumatoid-arthritis-pain-symptoms-knee-diet-food-fat-sugar

THE SECRET LIFE OF

CRAWFISH, PT. 2 “You not gonna get nothing else till you eat what’s in front of you.” How I hated those words as a kid. Even worse, the continual reruns of Popeye the Sailor cartoons broadcast on WWL gave Mom the animated idea that spinach would actually be appealing to a young boy who should want forearms wide enough to sport anchor tattoos of a respectable size. But the sight and smell and taste of dead, wet leaves were simply unpalatable to the boy whose forearms would one day grow delicate enough to manage turning the focusing knobs of a microscope. Dead, wet leaves, however, are delicacies to crawfish, like our favorite Procambarus clarkii—the red swamp crawfish. Dead leaves and stems collected by P. clarkii in its nighttime scavenging are dropped like little Santa Claus gifts down its home chimney and become wetted by falling into the stagnating pool at the bottom of its underground chamber. When such food is scarce, however, a crawfish chamber can become sort of a “Hotel California” for insects and visiting crawfish that may try to “check out” of the chamber but “can never leave.” Like other hungry animals facing tough times, crawfish can become cannibals: They’ll eat their visitors, they’ll eat their eggs, and they’ll eat their young.

Reputation By Recommendation

Eating their young is an aesthetic shame because crawfish have the cutest babies of all crustaceans. The babies or “larvae” of most crustaceans emerge from their mothers’ eggs as microscopic, hairy things that swim awkwardly and that bear no resemblance to the adults they’ll become. Unlike those crustaceans that live in saltwater gulfs and seas, crawfish are freshwater land-lovers, and their young are not tiny, unrecognizable swimmers. Crawfish babies are fully formed before being released from their mothers’ eggs, and, just like cute human babies, their heads are disproportionately large at birth. Again, like humans, crawfish babies are cared for by crawfish mothers before they’re able to crawl. A crawmother will carry her big-headed, pre-motile babies by the hundreds beneath her tail. In turn, the beneath the tail is a good place for babies to hide if there’s no dead, wet leaves at home during the hungry, post-partum days. Like humans and Popeye, crawfish are what they eat. By living in muddy water, they eat lots of algae—like the green or brown scum you see on top of still canals and old puddles. Algae have colors because they make pigment chemicals in their cells. When crawfish and other crustaceans eat algae, these pigments are absorbed in the digestive tract, carried to the animal’s surface, and held in the shell. Our favorite red swamp crawfish eats lots of a type of rainwater algae that makes pigments known as carotenoids, like the pigment of the orange vegetable “carrot.” Carotenoids are reddish pigments, and they give our favorite crawfish its predominant red color. Though crawfish can have some green and brown in their shells when alive, boiling releases all carotenoids into the shell. That’s why boiled crawfish are all red—not because of cayenne.

YOUR

ADVENTURE

AWAITS!

Here are a few other life secrets about our favorite crawfish. First, the red swamp crawfish is the most invasive of all crawfish species. It’ll take over the environment of just about any other crawfish species in any land where it’s introduced. That’s not so good for Louisiana farmers if some innovative rice farmer in the Himalayas gets hold of a mating pair or two. Second, the red swamp crawfish is the crawfish most resistant to fungi, viruses, and parasites. You shouldn’t be so worried about such rare crawfish infestations because if boiling doesn’t kill those things then Zatarains will. Third, the red swamp crawfish is one of the only crawfish that can tolerate polluted water. While good for them, I’m not sure that’s good for us. At the top of most bestseller lists for the past few months is Where the Crawdads Sing by Delia Owens. The novel is set in 1950s North Carolina, where they recognize that crawfish are not really “fish” but instead they’re “dads.” Whether or not crawfish really sang in the mid-20th century Carolinas, I know that red swamp crawfish sing in modern Louisiana. No, it’s not “I’m Popeye the Sailor Man” or anything else that we could recognize as a human-made song. Crawsongs are more like humming than singing, and they’re sung by a choruses of many, so they can get loud if you get close. If you listen carefully outside in afternoons of crawfish season, you can easily hear the drone of crawfish choirs singing. If you don’t know what to listen for, listen for what sounds like ignited propane flowing through a valve and flaming the bottom of a large aluminum pot. If that song doesn’t make you smile and forsake spinach, then nothing will. POV
