Volunteers are needed to help count bald eagles for the 35th season in the annual winter bald eagle counts in and near the San Bernardino and San Jacinto Mountains on February 9, and March 9. Concurrent Bald Eagle counts are held at Big Bear Lake, Lake Arrowhead, Lake Silverwood, Lake Perris, and Lake Hemet. Volunteers are stationed at vantage points around the lakes, where they watch for bald eagles during a 1-hour period on the count mornings. Volunteers record their observations on maps and data sheets. This is a wonderful opportunity to catch a glimpse of our breath-taking national symbol. A brief orientation is conducted prior to the count so volunteers know where to go and what to do. “Through this method, the agencies and land managers have learned a lot about which areas are important to eagles and how the populations are doing. But we can’t do it without a lot of volunteers – we need their eyes to help us look,” said Forest Service biologist Robin Eliason. The bald eagle counts for this winter are scheduled for the following Saturday mornings: February 9, and March 9. No experience needed. Signing up ahead of time is unnecessary – just show up at the designated time and location, dress warmly, bring binoculars and a watch.

Wedding Guestbook Ideas By J.C. Meeker Many couples these days are opting to do something a little more creative for their wedding guestbook. Instead of the traditional lined paper guestbook that people sign there names in, guests are asked to sign there names on something a little more unique. Check out these 37 cool wedding guestbook ideas. I have created a Pinterest board to help you visualize the idea and see how other people have brought these ideas to life. A Polaroid message guestbook would be a lot of fun for the guests to interact with. Frame a large blackboard and ask your guests to take a Polaroid photo of them and post the photo to the board and write a message. Ask your guests to write a message on a piece of paper and roll it up and place in a bottle. This message in a bottle guestbook would be great for a beach or nautical themed wedding. It would also make a great conversation piece for your home. A birthday calendar guestbook serves as a dual purpose. Ask your guests to sign their name to the date of their birth on the calendar. This also lets the couple know when everyone’s birthdays are and they can send a nice card to their guests on their birthday with an additional thank you for being a part of their lives. Ask your guests to sign some nice stones and keep them in a jar as an artistic display in the couples home or us them in a rock garden. Having your guests sign Christmas ornaments is a festive addition to a Christmas or winter wedding. These ornaments will be used to decorate the couples’s tree as they celebrate their first Christmas together as a married couple. Guests could sign large Champaign bottles and the happy couple could crack a bottle open on their upcoming anniversaries. What would even be nicer is to save the Champaign bottles for a milestone like their 10-year anniversary and share these bottles with some of the guests that originally signed them at their 10-anniversary party. Large monogram letters would make a great guestbook that could be hung in the couples home as a piece of art for one of their rooms. Plates are another idea that could be signed by guests and hung as an artistic display in their home. Paper butterflies punched out of paper can be signed and framed to make a really pretty piece of artwork. Be creative with the type of paper you use. I would highly recommend using scrapbook paper because the papers are typically treated so they do not fade. However, if you want to use something
like old sheet music you can purchase a can of archival spray that you can spray your papers with so that they will last for years to come. Also be creative with the shape. You do not have to use a butterflies, any shape that would look great framed in your home would be perfect. Guests could take photos of them with a Polaroid camera and place them in an already made scrapbook with a message to the happy couple. This is really awesome because at the end of the day you have a completed Polaroid photo scrapbook and the bride and groom didn’t have to do a thing to it. Keep the cover blank and later add a photo of the couple in their wedding attire or the wedding party or you could use an engagement photo as the cover. Advise cards are fun for the guests to fill out as an alternative to a guestbook. These cards could be stored in a wide variety of boxes and containers. The advice could be serious or funny. A nice way for each guest to give the bride and groom a personal message. Balloon picture is another really fun idea. A framed photo of a bride and groom holding a large number of balloons in which each guest will sign. Makes for a great piece to hang in their home. Asking your guests to sign quilting squares or completed quilt is a really unique idea. This quilt would look great in the new couples home. A globe that the guests could sign is another piece that would look great in a den or man cave. For those jet-setting couples this could be a fun addition to a travel themed wedding. Wine corks signed by guests are a
creative idea that could be stored in a really beautiful glass jar. Could be beautifully displayed in a Tuscan themed kitchen or a rustic room. A guestbook tree is a cute idea where guests hang cards they sign with messages on them. Large engagement or wedding photo would be a beautiful piece to have your guests sign and could be hung in a great room or family room of the couples home. Having an engagement scrapbook made with lots of extra room for signatures and messages would be another awesome guestbook idea. Wine bottles signed by guests can be set aside to be cracked open on the couples 1st, 5th, 10th, etc. anniversary. A monogrammed canvas board would be another awesome piece guests could sign and could later hang in the couples’ home. Guests could sign ceramic tiles that could be used in the home on walls, decorative pieces or furniture. I loved this peacock picture I saw on Pinterest where the guests sign the feathers of the bird. It would be really beautiful for a peacock themed wedding. A video guestbook is really fun for the guests and the bride and groom. This is fun for the couple to actually see their guests give them a message. Something they will cherish forever! A piece of art on canvas that might go with the theme of a room in their home would be a nice piece to have everyone sign. A guest blog is another fun high-tech idea. A computer can be set up for the
guests to jump on and leave a message. The fun part about this is that everyone can check out the blog and see what other wrote! Postcards signed by guests are a great idea for those designation weddings. Purchase post cards that have photos of area attractions and landmarks of the place the wedding is held. Ask guests to sign them with a message or advice. This would also be a nice idea for those couples that plan or would like to travel together. You could have postcards of places the couple has been or would like to visit together. These photo postcards would look beautiful compiled in a scrapbook. Another unique idea is to have a large butcher block, bar or counter top signed by guests to be installed in the couples home. A blank journal book would be a really nice idea for those that would like their guests to leave them messages and advice. This would look great as a personal coffee table book for the couple. Vinyl records are becoming more and more like a pieces of art. Ask guests to sign records and hang them in an artistic way on a wall of the couples home. Great for those couples with a passion for music. Having guests sign a guitar is a really cool idea. This could be displayed on a wall or nestled in the corner of a home. Large wooden music notes (monogrammed letters or letters the spell out a word) signed by guests would make a cool wall accent for any room.

The History of Valentine’s Day: Who was St. Valentine? By Scott Brodie This history of Valentine’s Day is shrouded in mystery. While every February 14, Valentine’s Day, couples send romantic Valentines, no one knows the true history of Valentine’s Day. Many believe the history of Valentine’s Day can be found in the question, “Who was Saint Valentine?” The Roman Catholic Church has three saints named Valentine, or Valentinus. Of these three, the history of Valentine’s Day supposedly honors the first Saint Valentine. So, who was Saint Valentine? Saint Valentine was a third-century priest in Rome. He was martyred. Any further answer to, “Who was Saint Valentine?,” is speculation. Yet, there are three theories about the history of Valentine’s Day. Each attempts to answer, “Who was Saint Valentine?” Who Was Saint Valentine? A Priest Marrying Couples. According to this theory on the history of Valentine’s Day, Saint Valentine was a priest during Emperor Claudius II’s reign. Because Claudius II believed single men were better soldiers than married men, he outlawed marriage for young men. Saint Valentine did not adhere to Claudius II’s proclamation, however, and continued to perform marriages in secret. When he was discovered,
Saint Valentine was imprisoned and sentenced to death. Who Was Saint Valentine? A Priest Freeing Christians. Another theory about the history of Valentine’s Day contends that Saint Valentine was sentenced to death for free Christians from Roman prisons. This is the least romantic history of Valentine’s Day, but it portrays Saint Valentine as a heroic and strong figure. Who Was Saint Valentine? The First Valentine. According to this romantic theory of the history of Valentine’s Day, Saint Valentine sent the first valentine. He supposedly fell in love while imprisoned. Perhaps it was the jailor’s daughter who he loved. Whoever the lady was, he sent her a letter signed, “From your Valentine.” The truth is, no one can answer, “Who was Saint Valentine?” Since it remains unknown, the question for today is not, “Who was Saint Valentine?” Rather the question is, “Who is Saint Valentine now?” Whoever he was, Saint Valentine is remembered as a strong, heroic and romantic figure. It is no wonder lovers have been sending love letters in his name, as valentines, ever since the Middle Ages.

How to Pick Out the Perfect Wedding Dress for Your Big Day By Abby Willow The wedding dress decision is perhaps the most nerve-wracking part of the wedding planning for any bride. Trying to find the perfect dress can feel like an uphill battle, but not when you go in with an open mind and a realistic budget to get the dress of your dreams. Here’s how to get the best wedding dress for your big day. The more people you take with you, the more opinions are going to be thrown your way when you’re trying on dresses. To get the dress YOU want, go into the bridal salon alone or with one very good friend who you know has your best interests in mind. Too often, a bride will find the perfect gown only to be swayed into disliking it because her mother, sister, fiance, or friend hated it. It’s your day. Get the dress you want and the more people you leave at home when shopping, the more likely you are to trust your own opinion and instincts. Don’t even bother trying on dresses that are out of your budget. Stick to dresses in your price range. If you don’t, your perfect dress can be one you can’t afford to buy, so every dress you try on thereafter won’t give you that wow factor. Only try on a dress if you know you can afford to buy it, no matter how much you are tempted to upgrade. Be open about styles. What looks terrible on a hanger may suit your body perfectly, and a style you are in love with
might not suit your frame. If you think it even has a chance, try it on. You may be surprised. If you find “the dress”, stop. Right there. Try not one more dress on. You know when you are wearing the dress that makes you feel like a bride the second you see yourself in the mirror. Don’t sway that positive feeling by trying on other dresses “just to be sure”. You are sure. Get the one, and kiss all the other possibilities goodbye. Bring your wedding shoes and jewelry with you if you’ve already purchased them so you can see what they will look like with the dress you choose, and your accessories can help make your selection that much easier. Shoes also help with the alterations of the dress so you can be sure your dress won’t be too short or too long with whatever shoes you have. If you absolutely do not know what you want as far as style, start small. Do you like lace? A full skirt? Are you adverse to strapless? Is your wedding Spring, Fall, Winter, or Summer? Indoors or outdoors? All these little details can help narrow down your choices and make gown selection easier. If you have just ONE gown in mind, start with that style. This way, you know straight off the bat if the mermaid design will work for you, and you can either go with it or venture elsewhere. Try off-white. If none of the classic white
gowns are working for you, it might be the color. Champagne and off-white gowns can make all the difference in style for many brides. You don’t have to go white on your wedding day just because it’s traditional. If you see a gown that you love but you think it won’t look good on you, if it’s in your budget, try it on. You don’t know what it will look like until you see it on your frame. Remember, even the right dress isn’t altered to you perfectly just yet. If a gown is just right but you’re afraid it won’t fit, keep in mind alterations will make it fit you like you were born in it. Don’t try on so many dresses that you
can’t remember a single one, or you become overwhelmed. If you are frustrated after trying on just one dress, stop. Being frustrated and shopping for “the dress” don’t go together. Try on as many as you are positive about, and if you get “the dress” on the first day, good for you. If not, there is always tomorrow. Lastly, remember it’s your day, so get the dress you want. It’s not your future husband’s dress, your best friend’s dress, your mom’s dress, or your sister’s dress. Don’t buy a dress because everyone else likes it. Get it because you love it. It’s your dress. Get the one that feels like it was made just for you.
21 Unique Wedding Bouquet Ideas By J.C. Meeker Traditional wedding bouquets are beautiful. The flowers in the bouquets that coordinate with the dresses add to the elegance of a wedding. More and more we now see couples trying to be different adding unique special touches to their wedding to make them personal and even more memorable. A great way to do this is to trade the traditional flower bouquet for something a little different. Some alternatives could be a lot cheaper than the traditional fresh cut flowers. Flowers of course are what you first think of for wedding bouquets. Fresh flowers (1) are no doubt breathtaking but can be very expensive. Silk flowers (2) are nice because they last and the wedding party can keep them as a memento. Paper flowers (3) are growing in popularity. You can see a variety of scrapbook style flowers, origami or tissue paper flowers as bouquets. Fruits (4) and vegetables (5) are a nice alternative. Using fruit and vegetables that are in season when you have your wedding is a nice touch. A bundle of multicolored apples in a basket or in a bouquet are beautiful
in the fall or maybe some Indian corn. Bouquets made out of candy (6) or lollipops (7) can be really fun for a whimsical wedding. Clusters of lollipops in a bouquet are very cute or send your flower girls down the aisle with a gigantic sucker. That would be really cute and so would the smile on that little girls face knowing she gets to eat it when it’s all over. Tastefully arranged feathers (8) make a great alternative. Peacock feathers were a very hot trend in Christmas of 2012. I anticipate seeing this trend carry over into this years wedding trends. Christmas ornaments (9) are beautiful and add some tulle and you have a fabulous bouquet. Bundles of pinecones (10) make a really nice earthy bouquet. You can spice them up with glitter, colored ribbon or tulle. Lanterns (11) and candles (12) are a really nice touch for an alternative to flower bouquets. They also add to the ambiance of the wedding. For those crafters, making a button bouquet (13) is a different spin on the traditional. You could also make a beaded bouquet (14) or use jewels (15). I have seen some photos on the Internet of sparkling and color-
ful broaches that have been put together to make a really gorgeous bouquet. Collapsible fans (16) are elegant and can serve as dual purpose for those hot summer weddings also a nice touch for a southern style wedding. Parasol umbrellas (17) are another great alternative that could also be used to shade the wedding party from the sun. A cluster of seashells (18) would be a beautiful accent to a nautical or beach themed wedding. Wrist corsages (19) could be a cheaper version of the traditional wedding flower bouquet. Balloons (20) are a fun and whimsical alternative to tradition. Makes for a lot of fun pictures of the wedding. Pinwheels are another great idea. It gives a playful, fun vibe to the wed-
ding. Metal (21) also be really cool as an alternative. Sculpted metal in any color could be a very unique piece. For a great laugh at the wedding, the bride can hold a ball and chain or walk with it attached to her ankle. Or after the “I do” when the couple is about to walk down the aisle have the new husband attach the ball and chain to the wife! Think outside the box and you can come up with some really great alternative ideas.

Center Club Raises $30k at Grand Re-Opening Following a multi-million-dollar renovation, Center Club celebrated its Grand Re-Opening and Annual Charity Classic fundraiser by unveiling its new and tech savvy Club to the Orange County business and social community. This year’s Charity Classic Fundraiser exceeded everyone’s expectations by raising $30,000 for the three selected Charities; Orange County Museum of Art, MDA Augie’s Quest, and Employee Partners Care Foundation. With over 400 attending, this was also a time to honor its founder, Henry T. Segerstrom. “It is hard to express in words about how proud I am to be working with Henry Segerstrom,” stated Chair of the Club’s Board of Governors, Dr. Victoria Collins. New at the Center Club were a plethora of items but one that everyone enjoyed was the Encore Lounge. This area where most guests gathered features an upscale bar with a gastro pub-style menu, a media center with a 103 inch flat screen TV, cabanas with TVs and an elegant communal dining table complete with IPads. Guests attending enjoyed great food, drinks, and live entertainment. Here in my dental office in Rancho Santa Margarita, I use a laser. It quickly delivers a small, concentrated amount of energy to a very specific, localized area, and, in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and the patient is free of pain. Modern technology at its best! Cold sores are fluid-filled blisters on the lips. Their outbreak is stimulated by trauma, colds, or most commonly, exposure to the sun. People who get them regularly report a tingling sensation in the area before any lesion actually appears. Anti-viral medications taken very soon after onset dramatically shorten the length of time of the outbreak and its severity. The amino acid, Lysine, is said to be useful in fighting cold sores. The culprit herpes simplex virus is easily transmittable. Canker sores, also called mouth ulcers or apthous ulcers, are not contagious. They occur as shallow ulcers inside of the mouth. Because they are not caused by a virus, canker sores cannot be treated with anti-viral medications. Canker sores are a reaction to certain “triggers” that initiate their formation. Foods like chocolate, nuts, beer, in some cases orange juice, and wheat products may be the instigator. Of course, injury to the inside of the mouth caused by eating hard candy, crusty French bread, corn chips, or hurried tooth brushing can also be the perpetrators. Warm salt water rinses are the old fashioned treatment of these lesions. Rinsing this way increases circulation and thereby removes toxins from the inflamed tissues. Ibuprofen, an over-the-counter, non-steroidal, anti-inflammatory, is slow but effective. But most people with busy lives find it faster, easier and more comfortable to come into my dental office and enjoy the immediate relief a laser treatment provides. The laser is fast, affordable and, as I mentioned above in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and you continue your daily routine free of pain. REFRIGERATE for 2 hours until thickened. Sprinkle 1 cup raspberries over crust. Spoon chilled chocolate mousse over raspberries. Dollop remaining 1 cup whipped topping on center of pie; top with remaining raspberries.

Well, Wrap Me in Chocolate and Call Me a Valentine By Nancy V Canfield Describing chocolate is like trying to bail out a boat with a fish net. It just can’t be done. Chocolate is different things to different people. It does seem that the only thing we can all agree on is that chocolate and Saint Valentine’s Day go together like Cheech and Chong. Chocolate is an extraordinary gift, and has been since ancient times. The Aztecs, in 1400, traded with Maya for cacao.. They seasoned bitter chocolate drinks with spices, and offered the sacred brew as a favorite social drink for rulers, decorated soldiers, and merchants. Priests presented the cacao seeds to the gods as offerings and celebrated sacred ceremonies with chocolate drinks. Throughout the ages, chocolate has held its place as the most satisfying of edible delights. Why does chocolate make us feel good? Without expanding on the scientific explanations of the effect chocolate has on us, let’s just say that stimulants and chemicals in chocolate affect our central nervous system and brain, elevating our mood, calming our anxiety, and evoking feelings similar to those described as “a runner’s high.” Of course there will be mood bust-
ers who decry the sinfulness of chocolate. The fat and sugar contained in chocolate more than outweigh the benefits, say the pompous and grumpy food police, who would have us all survive on bark, twigs, and grubs for our own good and the good of the planet. To them I say...hogwash. The wondrous effect that this heavenly, sensual, and gratifying substance offers feeds not only the body but the very soul. The name for the tree from which chocolate is made, Theobroma cacao, in Greek means “food of the gods.” If chocolate was good enough for the Gods, then by golly, it is good enough for me. Chocolate not only does things to us, it says things for us. As a gift, it covers a multitude of occasions nicely, but first and foremost, it is the Valentine’s Day representation to bestow upon the love of your life. It is wickedly suggestive, and sinfully
pleasurable. Sure, a big fat diamond is nice, but surround the rock with the seductiveness of chocolate and you have an unforgettable moment of passionate surrender. Plus, you can eat the better part of the gift. Oh, all right. I may be overplaying the chocolate angle a bit, but when you get right down to it, there are few of us who can resist a big ol’ hunk of chocolate? For those out there toying with breaking tradition and buying the
love of your life something silly for Valentine’s Day, like a Ferrari or a mink coat, I say...think again! Not only will you save yourself a bundle of money by sticking with tradition, you will reap the rewards of being a sentimental slob, which is sure to arouse the loving and protective instincts of romantics everywhere. So, this Valentine’s Day, wrap up in chocolate and call yourself a Valentine!

A Dreamy Valentine’s Day Dessert If you’re looking for a way to cook up some romance this Valentine’s Day, skip the traditional box of chocolates and try an impressive dessert instead. This recipe for Dreamy Medjool Date Pudding Cake with Caramel Infusion uses Bard Valley Natural Delights, the popular dates grown by a small group of family farmers in the Southwest. 1/2 teaspoon vanilla extract 1/4 cup butter Preheat oven to 350°F. To prepare baking pan, brush inside of a Bundt pan thoroughly with melted butter. Liberally sprinkle powdered cocoa over butter, then turn upside down and tap to remove excess cocoa. In small bowl, sprinkle baking soda over dates. Add water and set aside for 20 minutes. In large bowl, beat butter, sugar and vanilla until creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold in date mixture and flour until well mixed. Batter will be thin. Spoon mixture into prepared pan. Bake for 35 to 40
minutes or until a skewer inserted into the center comes out clean. Allow to stand for about one minute, then carefully turn onto a plate. To make the caramel sauce, set saucepan over medium heat and add sugar, cream, vanilla and butter. Cook, stirring often, until sauce comes to a boil. Reduce heat to medium-low and simmer for 2 more minutes. While cake is still warm, use a wooden skewer to make holes all over the top of the cake. Pour half of the warm sauce over the warm cake. Garnish with glace cherries, if desired. Let stand for 10 minutes before serving. Cut into slices and serve with remaining sauce. Serve immediately.

When to Prune Roses in Coastal California
By Kathryn (Kathy) McKenzie Nichols If you live in coastal California and are wondering when to prune your roses, just remember this: After the start of the new year is the best time to prune. Experts say when it comes to pruning, January is the most favorable month in which to do it. That’s because it needs to be done before new growth starts popping out. If you prune too late, you may end up stunting the rose’s growth and hurting its chances to bloom. It’s a delicate balance in coastal California, because roses often never completely go dormant, as they do in colder parts of the country. Our temperatures rarely dip below 30 degrees. Sometimes roses don’t appear as though they’ve entered dormancy at all. Nevertheless, if you prune, January is probably your safest bet. This is usually when coastal California will get its coldest temperatures of the year. The weather often starts warming in February and new growth can be quite rapid at that point. And yes, most roses do better after being pruned. Cutting away the dead growth and excess canes will enhance the beauty of the plant as well as its health. Pruning encourages strong new growth as well as improving air circulation throughout the plant, which can help curtail the fungal diseases that some roses are subject to. Gardeners should arm themselves with a pair of long, thick garden gloves, a bypass pruner and a long-handled lopper or hand saw. The gloves are to prevent thorn pricks, while the lopper or hand saw will help you with stubborn canes. The bypass pruner is for more precise work. Also handy are a Page 24
small rake to clean up debris. Your tools should be sharp and clean for efficient cutting. If you go to buy a new tool, check for ergonomic features such as padded handles that will make the chore easier on your hands. Modern roses like hybrid teas, grandifloras and floribundas should be cut back by about half their height. Cuts should be made at a 45-degree angle just above a bud whenever possible. Also, pay attention to the shape of the rosebush. Unless it is trained into a tree, you will want to make it into an open vase shape, cutting out any canes in the center or those that are crossing. Also eliminate any dead, broken, weak or diseased stems or leaves. Your rose will look a bit bare when you are finished, but rest assured, it will grow quite quickly given a few warm days. Other rose varieties need more specialized care. Old rose varieties don’t need to be pruned, except for shaping. Ramblers, climbers, repeat bloomers, Bourbons and Portlands should be pruned lightly to remove dead wood and can be pruned more thoroughly after their first bloom. Be sure to pick up what you’ve cut off and dispose of it appropriately. This removes any source of potential disease, as well as dangerous thorns. Five Decadent and Easy Chocolate Desserts for Valentine’s Day By Freida Thomas I can’t think of anything better than treating your sweetheart with a homemade dinner and an easy decadent dessert this Valentine’s day. I’ll leave the dinner up to you, but below are five sweet and delicious suggestions for desserts to make for your Valentine this year! Simple but Yummy Brownie Sundae The key to making this common dessert special is to cut your favorite baked brownies into individual hearts with a 3 ½ inch heart shaped cookie cutter. To assemble, use a white plate and squirt some raspberry sauce in a decorative pattern. Place a scoop of strawberry ice cream on one side of plate. Lay your heart shaped brownie up against the ice cream. Make the mood more romantic by slowly feeding this delish dish to your valentine! Chocolate Fondue What would Valentine’s Day be without chocolate fondue? Serve while the fondue is warm. Load up skewers with fruits of all kinds: bananas, strawberries, pineapples, apple slices, pear slices, and marshmallows. This dipping dessert is only
limited by your imagination. The possibilities are endless! Brownie Heart Cupcakes This is simple yet will convey your love on Valentine’s Day. Bake your favorite cupcake and brownie recipes. Use a 1 ½ in heart cookie cutter to cut heart shapes from the brownies. Frost your cupcakes with a pink Basic Butter cream Icing recipe. Then carefully place your heart shaped brownie on top of the cupcake. Optionally, you could place a cherry on top of the brownie! Chocolate and Banana Waffle Panini (perfect to serve your Valentine for breakfast in bed) This is an easy recipe, but will make a big impression. Simply take 2 frozen waffles, spread 1 side of each waffle with butter. Place sliced bananas, and 1 oz. of chopped chocolate in between the non-buttered sides of the waffles. Heat the waffle Panini, buttered sides out, in a medium skillet, covered, until he chocolate melts and the waffles are crisp and done, about 2 minutes per each side! Chocolate Drizzled Nuts with Sea Salt If your Valentine is a nut lover
(notice I didn’t say nut), but a lover of nuts, try this sweet and salty recipe to have with a glass of wine after your romantic dinner. You can make this with a single nut of your choice or a can of lightly salted mixed nuts. I prefer the mixed because I’m a lover of all nuts! Line a rimmed cookie sheet with parchment paper and spread out 2 cups of nuts on it. Next melt ¼ pound of semi-sweet chocolate, chopped in 30 second intervals, stirring after
each interval, until the chocolate is melted and smooth. Drizzle nuts with the chocolate and ½ teaspoon flakey sea salt. Place the cookie sheet with the nuts in the refrigerator until set, about 15 to 20 minutes. Break apart into pieces before serving. Any of these five easy yet decadent recipes will be appreciated by a chocolate lover, especially if they are made and presented with a kiss and an “I love you.”

Wedding Invitations: What’s the Difference Between Flat Printing, Thermography and Engraving? By Bellamy Vaught-Davis Wedding invitation costs for one hundred guests can vary widely--from just around one hundred dollars to several thousand. So, what’s the difference? Aren’t they all just paper and ink? Well, yes...and no. While the type of paper (or cotton, in some cases) can range in thickness, size and quality, there are only four options when it comes to how your invitations will be printed: letterpress, engraving, thermography and flat printing. Just as the quality of paper will affect your final invitation total, the way the invitations are actually printed can mean the difference between a three digit invite bill and a four digit one. Here are the differences in the main types of wedding invitation printing: Letterpress. This process is the oldest, most elegant and most expensive of the three--and for good reason. The wording for each set of invitations is arranged on a press, using the printer’s available fonts. This plate is then inked with the color(s) of ink you want, and the forced under high pressure against the blank invitation paper. The result is a beautiful invitation--you should be able to feel the indented wording after the process has been completed. You’ll need to order a
very heavy paper to create this effect (read: more expensive); thinner papers may tear during the printing process. Engraving. The end result of this process creates an invitation with raised lettering, rather than indented letter in letterpress. The creation process is similar, but even more individualized, as the invitation wording is carved on a metal plate rather than being composed with moveable type as in letterpress. One benefit? There are far more options on fonts and spacing than with letterpress. Thermography. Are you a champagne bride on a beer budget? Then, thermography may be the ticket for you. This process is highly computerized, which equates to a lower end cost. The wording of your
invitation is placed into the computerized printing system, and the press creates your wording on the paper with a type of very hot adhesive. The ink pigmentation is then forced down onto the adhesive and then quickly dried. The end result is a raised invitation that would fool all but the most seasoned of wedding invitation lovers. You can tell a thermography invite by the shininess of the ink and the lack of indentation on the back of the invite. Flat-printing. The most economical of the four, flat-printing creates an invitation
that is completely smooth on the back and front. The process by which these invites are created are similar to that which occurs on your home computer: ink is laid down in lines or pixels by a printer and then dried.
