Governor Brown Announces Orange County Appointments
Lana Peterson, 37, of Orange, has been reappointed to the Santa Ana Regional Water Quality Control Board, where she has served since 2016. Peterson has been director of public affairs at the Kaiser Permanente Downey Medical Center since 2017, where she has held several positions since 2010, including senior public affairs representative and senior communications specialist. She held several positions at Cox Communications from 2004 to 2010, including senior communications specialist, communications specialist and public relations coordinator. She earned a Master of Business Administration degree from Chapman University. This position requires Senate confirmation and the compensation is $250 per diem. Peterson is registered without party preference. Daniel Selmi, 67, of Newport Beach, has been reappointed to the Santa Ana Regional Water Quality Control Board, where he has served since 2016. Selmi has been a professor of law at Loyola Law School, Los Angeles since

Holiday havoc? Consider it handled The holiday season is full of magic and wonder - until your flight gets cancelled, your budget is blown and you fall ill at the worst possible time. Fortunately, staying merry despite common holiday conundrums is easier than you think with the right attitude and a few simple steps. Here are some of the most notorious holiday hurdles, with practical advice for overcoming them and enjoying the best of the season. Holiday hang-up: Blown budget The holidays can get expensive fast. Buying something for everyone on your list shouldn’t put you in debt. Instead, think outside the box. Solution: Organize a gift exchange where each person draws one name and buys one gift. federally-funded Alzheimer’s disease research center, has announced that Maria Shriver, internationally renowned Alzheimer’s disease advocate, founder of The Women’s Alzheimer’s Movement, and former First Lady of California, will be honored at its 8th annual A December to Remember Gala on Saturday, December 2, 2017. “Maria Shriver is a champion for Alzheimer’s disease research, and is a voice of strength for many families and individuals who are suffering as a result of this disease,” says Dr. Joshua Grill, Co-Director of UCI MIND. “We are proud to partner with Ms. Shriver and honor her important work that continues to shine a light on Alzheimer’s disease.” Shriver is the founder of the Women’s Alzheimer’s Movement (WAM), a global alliance of individuals, organizations, researchers and industry leaders who are committed to studying Alzheimer’s disease and why it disproportionately affects women. “Every 66 seconds a new brain develops Alzheimer’s. Two-thirds of them belong to women, and no one knows why that is,” explains Shriver, who began her advocacy for the cause when her father was diagnosed with the disease in 2003. “This is a devastating disease that must be stopped. Through the support of local communities and research organizations such as UCI MIND, we will continue to work towards a cure.” Shriver’s organization seeks to bolster scientific pursuits to understand why women are at increased risk for Alzheimer’s disease, and to help all people take steps to improve brain health. WAM also raises money to support gender-based research, and shares stories and resources for patients and loved ones battling Alzheimer’s. Dr. Frank LaFerla, Dean of UCI’s School of Biological Sciences and Co-Director of UCI MIND,

In medium saucepan, heat cream, coffee creamer, cinnamon, nutmeg, vanilla, cloves, brown sugar and 1/2 cup granulated sugar. Stir frequently to dissolve sugar. Bring to boil then
immediately remove from heat. Set aside to rest 10 minutes. In large bowl, whisk egg yolks until frothy. Slowly whisk in cream mixture then whisk in pumpkin puree. Set 16 medium oven-proof ramekins in 13-by-9-inch baking pan. Divide custard evenly between dishes. Add boiling water to baking pan halfway up sides of ramekins. Bake 40-55 minutes, or until center is set but still jiggles. Remove from water bath; cool about 15 minutes then refrigerate 2-3 hours. When ready to serve, remove ramekins from refrigerator and dust tops with remaining granulated sugar. Caramelize sugar with kitchen torch or place under hot broiler 1-2 minutes. Let cool 1 minute and top with whipped dairy topping to serve. (Family Features)

Mission Viejo christian School CARNIVAL FUN FOR ALL! By Cindy Williams Mission Viejo Christian School’s (MVCS) first all-school carnival was a huge success with over 500 people enjoying the family fun on Sunday, October 22, 2017. The event was held on the school’s 11-acre San Doval Lane campus from noon until 4:00 p.m. and included carnival games, giant inflatable bounce houses and slides, face painting, food trucks and food venders, a STEM booth, and a pumpkin patch. A dunk tank was also on site and proved to be a crowd favorite, with many teachers and the school’s principal, Bob Sladek, taking a refreshing dip as a result of throws by students, parents, and colleagues. The conclusion of the carnival featured a helicopter hovering above the campus before dropping 4,600 golf balls from the sky for the school’s third annual “Golf Ball Drop” fundraiser. The ball that was first in the “golf hole” belonged to MVCS fourth grade student Ethan Howey, making him the sole grand prize winner of FREE tuition for the 2017-2018 school year. Leslie Lawicki, MVCS’s
Development Director, was thrilled with the success of the carnival. She said, “School families, alumni, grandparents, and community members enjoyed a day in the sun with great food trucks and family fun! While the event also served as the school’s fall fundraiser, far more valuable was the focus on COMMUNITY and SCHOOL SPIRIT. We already can’t wait to do it again next year!” The earnings raised from this fundraiser are earmarked for The Angel Fund which provides tuition assistance to families facing a sudden financial hardship, The Staff Benevolence Fund to help with staff emergency needs, and the Arts Programs at MVCS. Mission Viejo Christian School serves 380 students in grades K-8. the last horse finished the jump-off. Supporting the growth of young horses and young riders, as well as new horse and rider pairs, the Markel Insurance 1.40m Grand Prix Series Final was the ideal opportunity for Richard Spooner to encourage his eight-year-old mount, Quirado RC,

owned by Rancho Corazon, LLC, to be competitive. Fifth in the jump-off, Spooner executed the first and fastest double-clean ride, stopping the clock at 35.55. Soon afterward, twentyone-year-old Chandler Meadows and her own Damian slipped into the second spot, clean in a time of 38.06, relegating Jenni McAllister and Sweet Chocolate PJ’s double-clean effort to third. Meadows noted that she gained solid miles during the 2017 season. “This series has been a building block for me this year. Damian is a bit younger and I’m still a bit inexperienced. This has helped me build a solid foundation while competing through difficult tracks over fences that are not too big.” Spooner spoke highly of his mount. “Quirado is an eight-year-old, and he has only been jumping for a little over two years. I’m very excited about his future. He is very special and very careful. Standing a bit taller than eighteen hands, he has a wonderful mouth,” the veteran show jumper said. “I’ve tried to keep things simple with him in terms of my training regime. Now that I’ve gotten him to follow my hand I’ve been able to find a way around his size. I’m getting more and more confident with him. Speed was a difficulty in the beginning due to his size and youth, but over the last
few months it has come together. I had a plan to stick on the inside bend and have faith in him.” Looking into the future, Spooner wisely said, “I’m optimistic that Quirado will do the 1.50m classes next year. I have the same plan with my other horses. I’m hoping to move them up. With any new string of horses, you go through ups and downs, so I’m hoping for more ups than downs.” And he summed up his victory with a comment about the show and facility, where for many years, he has chosen to end his season. “The Las Vegas National is a great place to show, in that it’s designed with horses and horse sport in mind. KidWorks Foundation for Success Luncheon Raises More Than $768,000 Photos by Ann Chatillon A record of more than $768,000 was raised at the 2017 KidWorks’ Foundation for Success (FFS) Luncheon held at the Doubletree Hotel in Santa Ana – all to help fund afterschool educational and leadership development programs. This is the largest sum raised since the inception of the luncheon in 2007 and represents much of the after-school program budget funding academic enrichment, tutoring, leadership development, and college readiness programs at the expanded KidWorks Dan Donahue Center. Attendees always look forward to this event as the luncheon is emotionally charged because of the positive effects of KidWorks has on the challenged children served by the organization. The prestigious 2017 Dan Donahue Leadership Award was presented to David A. Pyle, Philanthropist, Founder/Chief Executive Officer of American Career College and Shareholder of West Coast University. “This very special award recognizes Mr. Pyle’s fervent support for KidWorks’ youth and families,” said David Benavides, KidWorks’ Executive Director. “For decades, Mr. Pyle has been a leader and innovator in the private, postsecondary education community, and he is as passionate about the community as he is about supporting health care and educational programs that aid underserved children and families.” “I have been a supporter of KidWorks because these young men and woman are being developed as our future leaders and will be making a difference in our communities,” said Pyle. “Seeing firsthand the interaction of the kids, family members, staff and volunteers as they grow is inspiring and something I am proud to be a part of.” The menu was purposefully simple; a salad with beef, rolls plus dessert and the centerpieces were Uncle Dan stuffed bears, named after Dan Donahue, the late benefactor of KidWorks and namesake on the Dan Donahue Center. The event’s keynote speaker Chad Williams, author of the bestselling book, “SEAL of God,” talked about his coming to terms with the direction of his life and his subsequent journey through the grueling Naval Ops training. He was one of only 13 to make it to graduation day and has served his country on multiple deployments to defend freedom. Also recognized at the event was Alfredo Padilla, one of KidWorks many amazing student success stories. He is a recent California State University, Northridge graduate, where he earned his degree in kinesiology. Since its inception in 2007, KidWorks’ annual Foundation for Success event has raised nearly $5.8 million to fund programs at the KidWorks Dan Donahue Center. As a 501(C)(3) nonprofit, KidWorks offers educational support, leadership and character-building programs, and health and fitness activities that begin with preschoolers and follow youth into their college years. KidWorks’ main building, the Dan Donahue Center, serves the highest number of children and offers a state-licensed preschool. In total, KidWorks operates four centers that have become safe havens in gang-heavy, highcrime and overcrowded residential areas in central Santa Ana. Celebrate 100 years of majesty with a visit to a national park Insider tips for a weekend at a national park site It has been over 100 years since an important American institution was born. On August 25, 1916, the National Park Service was signed into law by President Woodrow Wilson and was established as a new federal bureau to oversee the country’s national parks and monuments. Since then, the national park system has grown to encompass more than 400 areas covering more than 84 million acres in every state. With that act, grand sweeps of mountains, canyons, forests, islands and seashores were preserved and made accessible to people of all ages and abilities. Whether you are looking for back-country skiing down a mountain or just a scenic afternoon drive, our national park system has plenty of resources and infrastructure to make a visit enjoyable and memorable to just about anyone. It was John Muir, a naturalist and early parks advocate who said it best: “Thousands of tired, nerve-shaken, over-civilized people are beginning to find out that going to the mountains is going home; that wildness is a necessity; and that mountain parks and reservations are useful not only as fountains of timber and irrigating rivers, but as fountains of life.” No matter where you live,
there’s a good chance one of these mesmerizing landscapes or historical monuments is just a quick road trip away. However, while millions will visit these majestic spots each year, few realize a major challenge faces national parks across the country waste. The National Park Service manages more than 100 million pounds of waste nationally, much of which is generated by serving more than 300 million park visitors per year - that’s enough to fill the Statue of Liberty more than 1,800 times. While waste is a major issue in the parks, visitors can make a difference. Subaru of America, experts in zero-landfill sustainability, is sharing its knowledge of these practices with the National Parks to help keep the parks beautiful for the next century. Keep a refillable water bottle on hand or buy one at gift shop, while taking advantage of convenient refilling stations around the park. Place on baking sheet and bake 15-20 minutes, or until internal temperature is 165 F, flipping chicken at halfway mark. In toaster oven, toast waffles until warm and crisp. Cut into fourths and top with spinach and 1/2 tablespoon honey mustard spread. Cut chicken tenders in half and place atop waffles. Top with another waffle quarter. Garnish with rosemary and serve with maple syrup.
Grilled Portobello Mushroom and Arugula Sandwich Recipe courtesy of Chelsey of C it Nutritionally Servings: 2 Mushrooms: 4 portobello mushroom caps, stems removed 2 tablespoons balsamic vinegar 1/2 tablespoon olive oil freshly ground black pepper 1/4 teaspoon smoked paprika Sandwich: 1 baguette (12 inches), cut into two pieces and halved lengthwise 2 tablespoons Sabra Spreads Garlic & Herb 1 roasted bell pepper 1 cup arugula Gently clean portobello mushroom caps with cloth just prior to preparation. In medium to large bowl, combine balsamic vinegar and olive oil, and whisk together with fork. Add mushroom caps to bowl and soak until mushrooms are saturated with marinade.
Remove mushroom caps from bowl and place on plate. Sprinkle with freshly ground black pepper and smoked paprika. Gently coat grill, grill pan or large skillet with olive oil or nonstick spray and heat over medium heat. Sear mushrooms for about 2 minutes on each side, until cooked through and mushroom caps darken in color. Set cooked mushrooms aside. To assemble sandwich: coat bottom piece of baguette with spread. Add roasted bell pepper, arugula and cooked mushrooms. In clean skillet over medium heat, sear assembled sandwich about 3 minutes on each side until bread is heated through.

Four-step PLAN Helps Shoppers Save on Black Friday Retailers call the day after Thanksgiving “Black Friday,” because the holiday spending that happens that day generally moves their balance sheet into profitability and “the black.” Barbara Stark, director of community development and education at the national non-profit American Debt Counseling, Inc., serving clients throughout California, recommends following her simple, four-step P.L.A.N. during the holiday shopping season to keep your holiday budget in the black as well. “Retailers offer all kinds of deals to kick-start their all-important holiday sales numbers,” Stark explains. “The key is to have your own game plan for the day so that you take advantage of the opportunities to save on your holiday shopping without being tempted to spend more than you should.”
Stark recommends following her simple four-step P.L.A.N.: Prepare a strategy that puts your financial resources to their best use. Realistically outline your holiday obligations and how much you have to spend. Just like at the grocery store, you’ll spend more at the mall without a list. Next, decide what gifts on your list are “must have” and set your sights on getting them for the best price while they are still available. Layaway is a good alternative to credit cards for expensive purchases if the store or online site’s fee is less than 10 percent of the value of the items. You can reap the same bargains and enjoy the same selection as shopping on credit as well as the added bonus of knowing it is all paid for when you take it home. Layaway
is also a good way to curb impulse buying later in the holiday season by enabling you to buy the gift you really want at a good price. Each store has its own rules and it is important to read the fine print carefully to be sure you understand the fees and cancellation policies. Avoid using credit. Gracious etiquette tips to survive holiday gatherings Whether you are hosting a fantastic holiday gathering or you’re the gracious guest, ask yourself this question: Are you comfortable with your knowledge of etiquette? Are you confident in your table manners or do you admit you take your cue by watching those around you? “It seems so many people only think about etiquette during the holidays and then the pressure is on to be perfect,” says etiquette coach Dubravka Vujinovic. “But proper manners should be important at every meal, whether you are sitting down to a formal gathering or casual dinner with friends.” Vujinovic is one of the etiquette experts at North Carolina-based Replacements, Ltd., the world’s largest retailer of old and new china, crystal, silver and collectibles. This time of year the company is bombarded with inquiries from those needing a crash course in
proper social graces and entertaining. Questions range from how to set the table, to the best way to serve the perfect meal. Vujinovic offers these suggestions for your next event. * Break out the buffet Buffets settings are becoming increasingly popular. In this style of setting the host places the food, dinnerware and utensils on a sideboard or table and guests serve themselves. “I love buffets, because they are so stress-free for me as a hostess,” says Vujinovic. “Since the food is already on the serving table, I don’t have to keep running back and forth to the kitchen to keep bringing out different courses or dishes; I can relax and enjoy the evening. On the other hand, as a guest, I like buffets because this setting allows me to eat the food I want; I don’t feel obligated to have to sample everything that is being passed around the table.” If you’re hosting a seated buffet, water glasses should be filled and on the table before your guests sit down to their meal. Guests should be guided to pick up their dinnerware and place it at their individual setting. * Set the perfect table
If you opt to set your table in advance or if you’re a buffet guest setting your own place setting, remember, forks go to the left, knives then spoons to the right. The sharp side of the knife blade should be turned toward the dinner plate. And remember, only include utensils in your place setting that will be used for the courses you are serving; extra pieces may confuse your guests. The bread plate goes on the left of the dinner plate, glasses on the right. Don’t panic if you aren’t sure about the proper place setting for each meal. Vujinovic says you can find “cheat sheets” or place setting guides for various meals on the company’s website, replacements.com, under the site’s “neat things” tab. * Tips for hosts and guests Remember, the host/hostess always sits last. That person will let you know when it’s OK to begin eating. They may offer a blessing or statement or perhaps start by passing a dish. Always pass food around the table counter clockwise to your right and refrain from serving yourself first. Pass the salt and pepper as a set, even if you’re only asked for one. If you’re not sure which utensil
to use with each course, start on the outside and work in toward the dinner plate. Don’t cut more than one or two bites of food at a time, and never butter an entire roll or piece of bread. Instead, pinch off pieces small enough for one or two bites and butter those first. If you need to excuse yourself temporarily, place your napkin on your chair to indicate you will be coming back. Signify you’re finished with the meal by placing your napkin to the left of the dinner plate, and your fork and knife side by side diagonally across your plate with the sharp side of the knife blade facing inward and the fork tines up. Turn your cellphone on vibrate or don’t even bring it to the table. Enjoy the company of those around you. And what if you commit a major holiday fumble by accidently breaking a piece of the host’s dinnerware? “You should certainly offer to replace the broken piece, especially if it has sentimental value for the host or hostess. Combine turkey, pine nuts, celery, chives and red pepper in medium bowl. Stir in mayonnaise and lemon juice. Split croissants and place generous helping of turkey salad on bottom half of each, top with remaining half and serve. To toast pine nuts: Place nuts in dry skillet in single layer and toast over low heat for about 5 minutes, stirring as needed to prevent burning. Because pine nuts can burn easily, it is a good idea to watch until they are golden and fragrant, which means they are toasted.

In skillet, saute onion in 2 tablespoons olive oil for 2–3 minutes. Add cooked turkey and 1/8 teaspoon salt and pepper to desired flavor. Set aside. Heat 1 tablespoon oil in large stockpot on low. Saute celery, carrot, garlic and reserved 2 tablespoons onion for approximately 10 minutes, or until vegetables are soft. Add yellow peppers, potatoes, stock and 1 tablespoon salt. Simmer for 15–20 minutes, until potatoes are tender. Cool for 10 minutes, then transfer back to pot to keep warm. Add turkey and onion mixture to soup. Ladle soup into bowls and garnish with grated Parmesan cheese.

Darrell Glaser, a sixth-generation farmer from Texas, along with his mother, Jeannette, and wife, Shannon, started raising turkeys more than 20 years ago. Today, his four sons also help on the family’s farm. “We do everything we can to produce a quality product that other families would be comfortable eating during the holidays,” Glaser said. Glaser, who has raised nearly 14 million turkeys, says this starts with keeping the birds healthy and comfortable. “We take really good care to ensure the environment is just right for our turkeys. This includes keeping the floors of our barns dry and making sure the birds have plenty of fresh air and good quality water and feed,” Glaser said. Glaser says if turkeys are happy and comfortable, they are generally healthy, which reduces the need to prescribe medicine, like antibiotics. Glaser and his family are one of more than 700 independent farm families who are raising turkeys for Honeysuckle White without using growth-promoting antibiotics. “We feed America and want to provide a quality food source for our customers,” Glaser said. “With consumers more concerned about their food, if we can produce wholesome turkey without growth-promoting antibiotics, then we should.”
