ACTION STAR BRUCE WILLIS SELLS SUN VALLEY SKI HOME!
Bruce Willis has something new to remember for 2018 - the sale of the home he has had on the market since 2011. Though he bought it in 2003 for less than its final sale price of $5.5 million, a sales record in the Hailey, Idaho area, it was an excruciating drop from its original list price of $15 million. In the last 15 years, Willis rebuilt the main house, added a guest house, gym, streams and ponds and paid years of property taxes, so whether he made profit, broke even or took a loss is not known. For Willis, no longer having to worry about finding a buyer or upkeep is likely worth the outcome. No stranger to collecting exceptional real estate, Willis has been buying and selling homes for years. He has owned a number of homes in the Los Angeles area, Idaho, apartments in Manhattan and most recently purchased a mansion in Bedford, New York. As more and more of Hollywood’s actors segue into buying and flipping real estate, Willis is near the top of the list. In recent years, he has been gravitating towards more real estate activity on the East Coast. Sited on 20 acres between Hailey

and Ketchum on Flying Heart Lake, the compound is completely private with thick woodlands with multiple ponds and streams. The 8,403-square-foot home is a six-bedroom, seven-bath log house with heated terraces, balconies and driveway. The days leading up to the holidays tend to be among the busiest of the year, with lots of celebrations taking place over a few short weeks. ELKS VISIT HOUSE OF HOPE BRINGING HOLIDAY JOY By Derek Randles The Mission Viejo, Saddleback Valley Elks had their 5th annual Christmas Decorating Party at the Orange County Rescue Mission House of Hope for single women with children. There are 20 ladies and 19 children at the facility this year. When the Elks Helpers arrived, they were there in time for pizza with the families. After filling their bellies, the visitors helped the little ones – and some of the bigger ones – hang the ornaments on the 14 foot tall tree. Derek Randles PER and Michael Long PER held the ladders while the kids made it a contest to see who could go the highest on the ladder and get to the very top of the tree. Leading Knight Jamie Camunas and Chaplain Cindy Wooten helped the kids pick out the right ornament for the tree decorating. Dennis Lumley took the pictures of the event and families while Laura Lumley, Vicky Long, and Orange Elk Stacy Emery printed all of the pictures and put them into Christmas frames to provide them to the families. During the tree decorating, strange noises were

heard on the roof. Derek and Stacy ran in with the exciting news that SANTA had arrived. Elks member Pamela Mackey and her husband Ed provided the Santa and Mrs. Claus holiday cheer all while the children followed Santa around the house asking very interesting questions. Followed by many hugs, the Claus’s sat down to listen to every child and
provide each with one toy or fun item that night. The evening wrapped up with the Elks volunteers finishing the printing of all of the pictures. Stephanie Bongartz and Derek Randles PER started this program five years ago assisting these families with help during the holidays. The Elks will return prior to Christmas to provide
a 5 foot tall stocking to every mother and child. The huge stockings will include both gifts and gas/food gift cards that are also needed for necessities. The Mission Viejo Elks Charitable Committee in conjunction with the Elks National Foundation (ENF) Gratitude Grant provided the funding for this event.

PACIFIC CHORALE ANNOUNCES SINGER AUDITIONS FOR 2019–2020 SEASON
Pacific Chorale, resident chorus at Segerstrom Center for the Arts, today announced upcoming auditions for prospective volunteer singers. Auditions will be held January 20–26, 2019 by prior appointment only. Prospective singers are requested to visit Pacific Chorale’s web site at pacificchorale.org/auditions to learn about the audition process, then to submit their information via the online form provided to schedule an audition time. Rehearsals for the fall begin in September, although singers are also encouraged to participate in Pacific Chorale’s Festival Chorus in August 2019. The 140-voice ensemble will present its own concert season at the Renée and Henry Segerstrom Concert Hall conducted by Artistic Director Robert Istad, as well as appearing as the guest chorus in several performances presented by Pacific Symphony. While applications are being accepted for both volunteer and paid positions with Pacific Chorale, this year’s auditions are primarily focused on proficient volunteer singers. Volunteer members of the Chorale hail from a broad range of backgrounds and career fields, but share a love for and extensive experience performing choral music. Volunteers have the opportunity to participate in both self-produced and contracted engagements calling for larger groups of singers. Pacific Chorale members enjoy a wide variety of challenging and stimulating repertoire and performance opportunities, including world and West Coast premieres and
guest appearances with prominent ensembles and artists. ABOUT ROBERT ISTAD Dr. Robert Istad has served as Pacific Chorale’s Artistic Director since July 1, 2017. He has prepared choruses for many of the world’s leading orchestral conductors, and has been featured on a number of recordings including The John Williams Collection on Sony Classical and Nostos: The Homecoming of Music on Yarlung Records. He continues in his role as Professor of Music, Director of Choral Studies, California State University, Fullerton. THE MIRACLE OF MAGIC RAISES NEARLY $1.3 MILLION TO SUPPORT CHILDREN The Monarch Beach Resort in Dana Point was the scene for the Miracles for Kids Annual Night of Miracles Gala: The Miracle of Magic where nearly 500 of Southern California’s most generous philanthropists, business and civic leaders gathered to raise funds to benefit families with critically-ill children. This year, guests made the biggest impact in the nonprofit’s 16-year history, raising nearly $1.3 million. “Words cannot express our gratitude to the incredible community of friends, donors, volunteers and sponsors who help make miracles happen at Miracles for Kids every day of the year,” said Autumn Strier, Co-founder and CEO of Miracles for Kids. The Fund-a-Family portion of the evening raised $700K of the $1.3 million during which guests raise their paddle to donate at various levels that range from $100K to $100. In an exciting and unexpected moment, four $100K donations were gifted by generous supporters. A gourmet dinner and signature cocktails from custom bars by longtime sponsors NOLET’S Silver Gin, Ketel One Family Made Vodka, and Duke Spirits kept the guests satisfied. Further adding to the excitement of the evening was the Opportunity Drawing for the chance to win a pair of White Gold Diamond Earrings containing 370 round diamonds weighing 9.06CTS with a retail value of $18,500 – generously donated by the Night of Miracles Gala exclusive jewelry sponsor, Martin Katz. The lucky winning guest, Brian Hill, took home the opportunity item after purchasing just a handful of tickets for $100 each. Guests continued to raise their paddles during the lively and highly anticipated live auction. Top items included a Telluride Ski Resort Package and a Vintner Hosted Wine Connoisseur’s Getaway with Private Air, which were each generously donated by Orange County locals and company owners - Chad Horning of Telluride Ski & Golf Resort and Steve and Seanne Contursi of Arrow&Branch. HOW A HEALTHY TUMMY CAN BE GOOD FOR YOUR WELL-BEING
Whether it’s eating too many slices of pizza or constantly getting takeout, most of us have slipped on our good eating habits at one time or another. But is avoiding unhealthy foods enough to keep our bodies in top shape? While gut health is not something many people consider, Mayo Clinic experts agree that it is important to pay attention to as it can affect your overall well-being. Here’s what you need to know about your gut and how it concerns your health. Hundreds of different bacteria
species live in your gut The lining of your gut is covered in bacteria, and these organisms create a micro-ecosystem called the microbiome. Before you stare at your stomach in horror, know that many of these bacteria species are good for you and should be nurtured with specialized plant fibers called prebiotics. Prebiotics encourage healthy bacteria growth and can be easily incorporated into your diet, as they are found in many fruits and vegetables. Look for foods containing
complex carbohydrates, which can’t be digested by the body and instead become food for the healthy bacteria living in your gut. Probiotics offer another way to help maintain a healthy balance of good bacteria living in the gut. The difference with probiotics is that they actually contain live organisms. Instead of nurturing healthy bacteria, probiotics add specific strains of healthy bacteria to your microbiome. Probiotics can be found in foods like yogurt, kimchi and sauerkraut. Kombucha is also a good source of probiotics. You can also find prebiotic and probiotic supplements designed to help with specific conditions. Consult your doctor before adding supplements to your diet. A healthy gut may be connected to weight loss The benefits of a healthy gut are still being studied, and more research is needed to confirm how a healthy gut contributes to weight loss. In a preliminary study, Mayo Clinic collected and analyzed gut bacteria samples from a group of 26 participants enrolled in the Mayo Clinic Obesity Treatment Research Program. The research team found that those who did not lose weight had
different gut bacteria than those who did. Dr. Purna Kashyap, a Mayo Clinic gastroenterologist and co-author of the study, says that these findings “suggested to us that gut bacteria may possibly be an important determinant of weight loss in response to diet and lifestyle changes.” Poor gut health can exacerbate certain autoimmune disorders While there are species of healthy bacteria living in your gut, some species in the microbiome are not helpful. Having an imbalance of the two can lead to poor gut health, which can then exacerbate certain autoimmune disorders such as irritable bowel syndrome, celiac disease and rheumatoid arthritis. Improving your diet is the best way to foster healthy gut bacteria. Along with eating more fruits and vegetables, eliminate as much processed foods and added sugar as possible. It’s also a good idea to reduce meat consumption and to incorporate alternative proteins such as legumes, tofu and nuts into your diet. 5 TIPS FOR HOLIDAY ROAD TRAVEL If you’re planning to travel for the holidays this year, you’re not alone. Over 107 million people traveled last year for the holidays, according to estimates from the American Automobile Association (AAA), and more than 97 million of them did so along the nation’s highways. Be sure your tire tread is in good shape. When it comes to winter weather driving, a general rule is that the more tread depth, the better. A tire’s minimum tread depth should be more than 2/32 of an inch deep all around the tire. You can check your tread depth by inserting the edge of a penny into the tread with Lincoln’s head down, and facing you. If the top of Lincoln’s head is covered by tread, there is at least a minimum amount of tread left. If the top of his head is visible at any point around the tire, it’s time for a replacement. While you’re examining the tread, you can also look for signs of uneven wear or damage such as cuts, cracks, splits, punctures and bulges. These conditions shorten the life of tires or even cause tire failure. 3. Have the right tires for your needs. While all-season tires are a great choice for many people, if you live in an area that routinely experiences extremely cold temperatures and/or heavy snowfall - or plan to travel to one during the holidays - you should add winter tires to your vehicle. In separate bowl, whisk 2 1/4 cups all-purpose flour and 1 teaspoon baking soda together, then add slowly to creamed mixture, beating until combined. “There’s almost no end to what you can do to this dough,” says Bean. “Get creative and experiment with different mix-ins like lemon peel, pumpkin pie spice, even instant coffee, or substitute toffee or peppermint chips for traditional chocolate and butterscotch.” * Use the right fat. Some cookie recipes only achieve their best flavor and texture with butter. Hopefully, those recipes will specify “butter only; no substitutes.” Recipes calling for butter or margarine will produce good results with either, as long as you use a margarine that contains at least 80 percent vegetable oil. Check the nutrition label. The margarine should have 100 calories per tablespoon. Margarines with less than 80 percent vegetable oil have high water content and can result in tough cookies that spread
excessively, stick to the pan, or don’t brown well. * Measure accurately. Metal or plastic measuring cups are intended for dry ingredients such as flour and sugar. When measuring flour, stir it in the canister to lighten it and then gently spoon into a dry measuring cup and level the top with the straight edge of a knife. Glass or plastic cups with spouts are meant only for liquids. If you use a liquid measuring cup for flour, you’re likely to get an extra tablespoon or more of flour per cup, enough to make cookies dry. * Chill dough properly. The chilling time given in a recipe is the optimum time for easy rolling and shaping. If you need to speed up chilling, wrap the dough and place it in the freezer. Twenty minutes of chilling in the freezer is equal to about one hour in the refrigerator. * Use a powerful mixer. An electric stand mixer is the best way to mix heavy cookie dough. With a handheld mixer, you’ll probably end up needing to stir in flour by hand, which can be a nightmare. * Choose the right cookie sheets. Look for shiny, heavy-gauge cookie sheets with very low or no sides. Dark cookie sheets can cause cookie bottoms to overbrown, and cookies won’t bake evenly in a pan with an edge. Insulated cookie sheets tend to yield pale cookies with soft centers.
If you use them, don’t bake cookies long enough to brown on the bottom because the rest of the cookie may get too dry. Nonstick cookie sheets let you skip the greasing step. But the dough may not spread as much, resulting in thicker, less crisp cookies. Unless specified otherwise, a light greasing with shortening or quick spray with nonstick spray coating is adequate for most recipes. * Know your oven. Experiment with the temperature of your oven. If your oven typically cooks items faster than the recipe calls for, adjust accordingly. Don’t bake cookies for too long. They should be light brown around the edges and look a little underdone when they come out. Keep in mind that cookies will continue to cook from the heat of the cookie sheet after you remove them from the oven. Cool the cookies on the cookie sheet initially and then transfer them to a wire rack once they can be lifted with a spatula without breaking them. In a large bowl combine the grapes, parsley leaves, red onion, lemon juice and 1 tablespoon olive oil. Season with salt and pepper and set aside. In a large skillet heat 1 tablespoon oil. Add the garlic and meat, and cook until browned, 2-3 minutes. Stir in the tomato paste, cumin, paprika and cayenne. Place naans on parchmentlined baking sheets, brush with the remaining 1 tablespoon olive oil and spread the meat mixture on
the naans. Bake until each naan is browned and lightly crisp, 8-10 minutes. Top with grape mixture and drizzle with additional olive oil if desired. Cut in pieces and serve. Quinoa Tabbouleh Salad with Grapes Prep time: 15 minutes; cook time: 15 minutes Yield: Serves 6 Ingredients 1 1/2 cups water 3/4 cup quinoa, rinsed 3/4 cup halved red California grapes 3/4 cup halved green California grapes 2 cups diced English cucumber 2/3 cup chopped flat leaf parsley 1/2 cup chopped dill 1/4 cup chopped mint 2 tablespoons extra-virgin olive oil 2 tablespoons lemon juice 1 teaspoon lemon zest 1/4 teaspoon salt Freshly ground pepper to taste Directions In a medium-sized saucepan, bring the water to a boil and add the quinoa; reduce the heat and simmer until quinoa is tender, about 10 to 12 minutes. Drain any excess water, then fluff the quinoa and transfer it onto a baking sheet to cool for 10 minutes. In a medium bowl, combine the grapes, cucumber, parsley, dill, mint, olive oil, lemon juice and zest, salt and pepper. 1 1/2 teaspoons ground cinnamon 1/2 teaspoon allspice 1/4 teaspoon salt 3/4 cup packed light brown sugar 3 tablespoons canola oil 1 egg, lightly beaten 1 teaspoon vanilla extract Heat oven to 350 F. Coat 9-inch loaf pan with cooking spray. Peel and grate apples. Toss with lemon juice to prevent browning. In large bowl, combine flours, baking powder, cinnamon, allspice and salt. Mix well. Make well in center and set aside. In medium bowl, combine apples, brown sugar, oil, egg and vanilla. Mix well. Add mixture to dry ingredients and mix until just blended. Transfer batter to prepared pan. Bake 1 hour, until toothpick inserted near center comes out almost clean. Cool in pan on wire rack, 10 minutes. Remove from pan and cool completely.

Place beans in deep pot and cover with cold water to 1 inch above beans. Bring water to boil and simmer, uncovered, 1 minute. Remove from heat, cover and let beans sit 1 hour. Drain. In same pot, cover beans with cold water to 2 inches above beans. Over medium-high heat, bring to boil. Cover pot partway so it does not boil over; simmer beans until soft and creamy, 45-60 minutes. Set beans aside in cooking liquid until ready to use. In food processor, pulse leek, onion, carrot, celery and parsley until finely chopped and moist. In medium Dutch oven or small soup pot, heat oil over medium-high heat. Add chopped vegetables and cook, stirring, 5 minutes, or until soft. Cover tightly, reduce heat and cook 10 minutes. Increase heat and cook until golden, 8 minutes, stirring occasionally. Add broth, 2 cups water and rosemary. Simmer, covered, until vegetables are soft, 20 minutes. Remove from heat and use immersion blender to whirl soup until partly pureed with some vegetables bits remaining. Add 2 cups drained, cooked beans to soup. Return pot to heat and cook until beans are heated through. Season soup, to taste, with salt and pepper. Divide soup among six deep soup bowls.

tablespoon olive oil, plus additional for searing cup vegetable stock ounces cremini mushrooms, sliced ounces shiitake mushrooms, sliced cloves garlic, minced pepper, to taste 1 pouch SEEDS OF CHANGE Organic Mushroom Simmer Sauce 1 tube (18 ounces) prepared organic polenta 10 teaspoons shaved Parmigiano cheese fresh parsley Caramelize onions. Heat butter and 1/2 tablespoon olive oil over medium heat until hot. Add sliced onions to butter mixture and stir gently to coat. Spread onions in one layer, and cook until golden brown and caramelized, stirring every 5 minutes for about 40 minutes, or until caramelized. Once caramelized, add vegetable stock to deglaze pan and scrape browned bits. Add mushrooms and garlic, and season, to taste, with pepper. Cook until mushrooms are browned and tender. Stir in mushroom sauce, lower heat and bring to slow simmer. Cut polenta tube into eight even rounds. Sear polenta rounds in bit of olive oil and season each side with pepper. Cook until polenta is golden brown on each side, about 4-5 minutes per side. Transfer to plates. Spoon mushroom mixture over polenta rounds and top with 2 teaspoons Parmigiano cheese per serving and fresh parsley.

According to Margaret Martin, RD, MS, LDN, CDE, a Registered Dietitian at The Leukemia & Lymphoma Society, “Your body’s ability to fight infection and disease depends on your immune system.” Margaret provides one-on-one nutrition consultations for people with cancer who have a weakened immune system due to the effects of treatment, but she says keeping a healthy immune system is important for everyone. “Boosting your immune system during and after cancer treatment can help you feel better, maintain your strength, avoid treatment delays and speed your recovery. This goes for anyone fighting an illness, or preventing one.” Margaret offers these important tips to help boost your immune system and keep it running smoothly throughout the year Keep a plant-based, heart-healthy menu. Choose foods first as your source of vitamins and nutrients. Unless your healthcare team directs you to take a vitamin or supplement, you likely do not need one. The best way to include these nutrients is by eating whole foods. Make sure your meals incorporate a variety of vegetables
and fruits, whole grains, legumes, beans, lean protein and healthy fats. Eat small, frequent meals throughout the day to stay energized and to ensure your body is getting enough calories, proteins and nutrients. Protein acts as a “builder” and the body uses it to build and repair tissues. Protein is also vital for making hormones and enzymes that promote the body’s daily functions and supports a healthy immune system. In addition, drinking eight to 10 glasses of fluids every day is one of the most effective ways to flush waste from your body and support the health of your immune system. Power up with phytochemicals. Fruits, vegetables and other plants contain naturally occurring substances known as phytochemicals. Phytochemicals give fruits and vegetables their color and flavor. Phytochemicals act as soldiers in the immune system to protect the body from damage. Studies show that phytochemicals help support the: * Immune system * Creation of healthy cells * Death of damaged cells (such as cancer cells) Decrease your risk of malnutrition. It can be harder for a malnourished body to fight off an illness or infection. Malnutrition results when the body does not receive enough calories and/or nutrients to promote good health and sustain healthy functioning of your body’s systems. When you’re
“in the slumps,” it can be easy to avoid eating altogether. Follow these tips to reduce your risk of malnutrition during cancer treatment: * Choose a variety of foods each week from all the food groups. Talk with your healthcare team before changing your diet. Eat regularly throughout the day, every four to six hours. Even if you do not feel hungry, try to have a snack or mini meal. If you forget to eat, try setting a timer. * Include a protein source with every meal and most snacks. Make changes to your lifestyle. And stick to them. In addition to using nutrition to boost your immune system, you can also make changes to your lifestyle to help support health and immunity.
These include: * Decrease your exposure to bacteria, viruses and germs. * Aim for 7 hours or more of sleep every night. If your sleep is interrupted, try a 30-minute nap during the day. * Reduce stress by taking time to do things you enjoy such as spending time with family, spending time outdoors or reading. If your feelings of anxiety or depression make it difficult for you to complete daily tasks, talk to your healthcare team.
