‘Tis the season for getting together with friends and family to celebrate. Food is at the heart of the holidays, so whether you’re hosting an event or attending as a guest, you’ll want to whip up something to impress a wide variety of taste buds. The perfect solution: A holiday cheeseboard. Creating a cheeseboard like the ones you see in food magazines might seem intimidating, but it’s actually surprisingly simple. With a little planning and a few flairs, you’ll put together a cheeseboard

that guests will nosh on until every last crumb is devoured. Just follow these five steps to a delicious holiday cheeseboard that’s guaranteed to get rave reviews. 1. Select a serving tray: A wood cutting board is timeless, but feel free to get creative with your serving vessel. DAOU A BEACON OF FINE WINE IN PASO ROBLES

Considered the birthplace of modern winemaking and an amazing terroir for producing Cabernet Sauvignon, 2,300 foot DAOU Mountain stands tall in the Adelaida District of Paso Robles. Off to the west of the 101, in the Adelaida District of Paso Robles, about a half day journey or so on the road from north San Diego, stands a solitary mountain of some 2,300 feet, producing magnificent Cabernet Sauvignon. Everything about this mountain is so right for the highest quality Cabernet. When the brother team of Georges and Daniel Daou staked their claim after growing up in France with a love of wine, then achieving great success in America in academics and in the tech world, the dream of DAOU Mountain turned into the discovery of a lifetime. It did not come quickly. As a matter of fact, when the decision was made to pursue their vision of making the best Bordeaux French style wines in the world, it took them 8 years to find this location. 12 years ago, DAOU Mountain was named and planting began at the pinnacle of what would become the largest wine country in California, Paso Robles. “It was wild country then and we struggled to quickly put up a single building to start making wine,” Daniel Daou told me. “We were just 14 miles from the ocean and you could feel it. The calcareous lime soil had a very similar make up to what makes Bordeaux vineyards thrive. Our wines have lots of minerality and natural acidity. Over time, wine experts have applauded our efforts and now expect us to make great Cabernet Sauvignon. The American dream is still alive. We have challenged ourselves to produce wines that will rival the greatest. There is no question that we have the terroir. This Page 10

terrior is naturally inclined to produce wines of extraordinary staying power. We spare no amount of imagination or technology in harnessing that power to make wines of dimension and elegance.”

LOCAL SCHOOL IS RECOGNIZED AS A GLOBAL LEADER IN TECHNOLOGY INTEGRATION For the fifth consecutive year, Santa Margarita Catholic High School was named a Microsoft Showcase School. Recognized for successfully integrating tablet PC and cloud technology, Santa Margarita’s technology program delivers a personalized, immersive education preparing students for success in college and beyond as they enter the workforce. Santa Margarita joins an elite community of approximately 300 schools worldwide recognized for their pioneering efforts and innovation in teaching, learning and assessment. Santa Margarita is the only school in Orange County to receive this designation, one of three schools in the state and one of 39 in the nation. “We are proud of our partnership with Microsoft and the immersive learning experience we are providing our students,” said Principal Ray Dunne. “At Santa Margarita, we are committed to continuing to provide innovative ways to prepare our students for college and beyond.” In addition, the school’s technology educators received the Service Leadership Award from Microsoft during the International Society for Technology in Education (ISTE) 2018 summer conference in Chicago. JOYFUL CHILD FOUNDATION GALA RAISES NEARLY $100,000.00 P h o t o s b y D r e w Wy m a n a n d M i c h e l l e P e r a l e s The Joyful Child Foundation’s California coastal-themed fundraiser gala at the Fashion Island Hotel in Newport Beach was an elegant affair that generated nearly $100,000 to support the organization’s BRAVE Initiative. Through the BRAVE Initiative, The Joyful Child empowers children and teens, ages 5-18, how to protect themselves and stop violence through self-advocacy, verbal and practical defense techniques, and resiliency skills. A special highlight of the evening featured unveiling the breathtaking painting created by the formally trained and very talented Parisian artist, Laurent Dareau. The painting, which Dareau commissioned specifically for the event, revealed a stunningly joyful depiction of young Samantha Runnion, in whose memory The Joyful Child was established. Founding Director, Erin Runnion, announced that the masterpiece would serve as the focal point for the new Champions for Children Wall at The Joyful Child’s Headquarters, in Irvine. This wall will feature the names of inaugural donors to the newly established Samantha’s Legacy Fund, honoring their support for The Joyful Child’s national movement for child protection and prevention education. Laura Diaz, the 14-time Emmy Award winning and three-time Imagen Award winning Fox11 news anchor and reporter who has been a longtime friend to The Joyful Child, Emcee’d the event with finesse and poise, while framing the context for The Joyful Child’s mission and call to action. Ms. Diaz also introduced a short video of the up-and-coming Eliana Sweet, current president of a local high school BRAVE Club who produced a short film titled “The Joyful Child – Erin Runnion’s Story.” Ms. Sweet’s full-length video was nominated for Best Spot Feature at The Orange County Film Festival. Erin Runnion herself delivered a powerful message, applauding all in attendance for being champions for children, celebrating the victories of the past year through collaboration with a myriad of community partner agencies, and emphasizing the urgent need to “do what needs to be done to stop the cycle of violence so that we can protect every child, whether it be within their schools, communities, or families.” The Joyful Child annually honors a community partner whose work has gone above and beyond to expand the BRAVE Initiative into their communities. This year was no exception, as Ms. Gloria Huerta and the San Bernardino Sheriff’s Department each received a stunning crystal Champions for Children award for their consistent and steadfast work teaching BRAVE to children in the Inland Empire. As a community united for child protection, they have empowered over 1,000 children with knowledge and skills to keep themselves safe from abduction, abuse, and exploitation. The gala’s Co-Chairs Darryl Tallon and Debbie Nguyen orchestrated the details of the evening, including the cocktail reception with silent auction and the sit-down dinner, down to the details of the gorgeous coastal-glam-inspired centerpieces designed by Julie Khuu Interior Design, which one lucky guest from each table had the privilege to take home. Zack Krone of California Coastal Auctions provided lively, jovial entertainment for the fundraising activities, including auction packages and opportunities for travel to places near and far, from as close to home as Pelican Hill in Newport Beach, to Key Largo, Florida and even the Caribbean island of Antigua. This event was an elegant and joyful evening to celebrate this important work for child protection! Since 2002, The Joyful Child Foundation has been dedicated to preventing crimes against children through programs that educate, empower, and unite families and communities. The BRAVE Initiative provides empowering, interactive life skills lessons for children in grades K-12 with the help of teachers, community partner agencies, and law enforcement, as well as through parent education opportunities. COTO MIGHTY EAGLES WIN SOUTHERN CALIFORNIA U8 GIRLS ELITE SOCCER LEAGUE TITLE by: Kevin “The Jet” Hayes Team reporter The Coto Mighty Eagles ventured into uncertain territory as they left the comfy confines of the local AYSO league and entered the U8 Elite Soccer League. Coach Reed handpicked a group of local 7-year girls and put them through a rigorous two-day practice schedule for three weeks to get them ready for the top soccer league in Southern California. Game one found the Mighty Eagles hopping on the team bus to venture to San Clemente to face last year’s champs. The Eagles came away with a 1-1 tie. Coach Reed was quickly called into General Manager Braden Weber’s office where they brought in highly sought out soccer coach Dave Farrell to be the league assistant coach. Coach Farrell quickly inserted his patented triangle attack and the Mighty Eagles responded with a 7-0 victory in their next game over the San Diego Rainbows. Coach Farrell took over the defense the rest of the way as the Mighty Eagles found themselves in a must win situation the last game of the season against the Tijuana Futbol Ninas. The Mighty Eagles were too much for the Ninas as they captured the title with a 3-1 victory. Ninas Coach Hector Vasques was quoted after the game. “Best positioned youth soccer team he had faced in 15 years. Every time we thought we were in open space we were hit with another wave of Eagles!”

The Mighty Eagles won the Southern California U8 Girls Elite Soccer League Title with a record of 7-1-2. From trying new recipes to creating crafts that will be cherished for years to come, plan a date for some holiday fun and let the memorymaking with friends and family begin! These five festive projects will inspire laughter and good cheer while helping you mark the season with togetherness: PEEPS Snowy S’mores Classic s’mores get a holiday makeover with a tasty and adorable twist thanks to PEEPS(R) marshmallow and its fun seasonal shapes. Just follow the simple instructions and everyone will enjoy a delicious treat. Don’t forget to make a few extras to give away! See instructions below: Curated by Good Housekeeping magazine on behalf of PEEPS(R) Servings: 3 Prep time: 5 minutes Cook time: less than 1 minute Ingredients 9 ct. pack of PEEPS(R) Marshmallow Snowmen 9 graham cracker squares 1 pack of mini candy canes 6 chocolate squares Directions 1. Turn on the oven broiler and place the oven rack in the center of the oven. Line a baking sheet with foil. 2. Break the graham cracker and the chocolate bars into squares. 3. Arrange six graham cracker

squares on the baking sheet and top each with a square of chocolate. Place a PEEPS(R) Marshmallow Snowman on top of each chocolate. 4. Place the tray in the oven for 35 seconds. Check to see how toasted the Snowmen are - they should be slightly puffed, looked melted around the sides, and begin to form a goldenbrown crust on top. If they don’t look melted enough, leave them in for another 5 to 10 seconds. Keep a very close eye on them and use extreme caution when broiling PEEPS(R) and pulling them out of the hot oven. 5. Remove the tray from the oven and immediately begin to build the PEEPS(R) Snowy S’mores by stacking two melted PEEPS(R) topped graham crackers. 6. Finish off with a clean graham cracker and top off with a PEEPS(R) Marshmallow Snowman. Adhere the Snowman to the top of the graham cracker with a dab of melted chocolate, and then adhere the candy cane to his hand with chocolate - to appear as if the Snowman is holding the candy cane. 7. Break up a candy cane and sprinkle bits to the melted chocolate and PEEPS(R) Marshmallow Snowman. 8. Make sure to enjoy while the treat is still warm! Gratitude tree The family tree gets a thoughtful update in this project that serves as a reminder of what matters most during

the holiday season. Use cardboard or poster board to cut out a tree trunk and branches to hang on the wall. Then cut out leaf shapes with construction paper and ask each person to write down what they are grateful for. Then share with each other before adhering the leaves on the branches to create a one-of-akind family tree. For a holiday theme, place an evergreen tree on the wall and decorate with paper ornaments with notations of gratitude instead. Hand-print wreath Every person is unique and so is the size and shape of their hand. Outline each person’s hand on green felt and cut out individually. Then use glue to adhere the hands together in a circle shape to create a wreath, adding in a few red circles for berries or a bow if you desire. Alternatively get a white canvas and green acrylic paint from the local craft store. Gather everyone and paint the palms and underside of fingers and press each family member’s hand firmly on the canvas to create various prints in a beautiful wreath shape. Cup of joy Want a simple project that is as much fun to create as it is to give? From neighbors and the mail-carrier to teachers and school friends, it’s easy to show you care when you create a treat that lets everyone enjoy a cup of joy. Simply get packets of classic hot chocolate and PEEPS(R) marshmallow in seasonal shapes

like gingerbread men, snowmen and holiday trees. Tie together with a bow and add a tag with a holiday greeting or fun saying like, “You’re our favorite ‘PEEP’le, thanks for being great neighbors!” Salt-dough ornaments Kids love to play with clay, so they certainly will enjoy creating saltdough ornaments. All you need is flour, salt and water to get started. Look up “salt dough ornament recipe” on the internet and you’ll find quick and easy recipes. Traditionally, you’ll roll out dough and cut with cookie cutters before baking and painting. You can also make three-dimensional ornaments like snowmen or people, too. Get creative by using household utensils like a garlic press to create hair or beards. Spending time with loved ones is the best part of the holidays. DECEMBER CHRISTMAS EVENT CAPS OFF ELK’S LODGE YEAR OF GIVING By Andy Costello THE ELK”S SEASON OF GIVING JANUARY TO DECEMBER. December is always extra busy as Mission Viejo / Saddleback Valley Elks Lodge #2444 hosts a super Christmas party for the developmentally challenged men, women and children of the Saddleback Valley. The Elks Lodge was once again full of the holiday spirit as the members played host to 175 special guests. They ranged in age from sixteen to sixty-six. Some came from group homes and some still living with family were dropped off by parents who expressed their appreciation to the Elks for this fabulous party. The special guests could hardly wait as they approached the door of the Lodge. “Will my friend be here?” “What time is Santa coming?” “Will I get presents again?” They entered the Lodge in groups - some walked, some used walkers and many came in wheel chairs with the help of their caregivers. After a lunch of chicken fingers, chips, lemonade and cookies was served, D.J. entertainer & Elk member Roy Southerland kept the music flowing much to the delight of the merrymakers who sang and danced all afternoon, some with old friends and some with the Elk volunteers. The Laguna Woods “Clown Alley” clowns were again on hand in full regalia passing out balloon hats and bringing smiles to the faces of the party-goers. And then came the moment. A big red fire truck courtesy of Orange County Fire Services Association arrived with sirens blaring, and riding atop the truck, and waving to all as the truck pulled up to the Elks Lodge, was none other than Santa Claus Ed Mackay & Mrs. Claus Elk Pam Mackay. The fire truck “Big John” was driven by retired Laguna Beach Fire

Captain Harvey Boelts, who is also an Elks member of the local Lodge. Santa and Mrs. Claus entered the Lodge to cheers and worked their way through the crowded dance floor with many hugs and warm greetings for all before retreating to a special room to make ready for the individual visits. Each guest enjoyed his or her own personal time with Santa and received a bag full of gifts and a photo taken with Santa and Mrs. Claus. Sixty-five Elks member volunteers saw to every need of the special guests. The event was a combined effort of many dedicated members Santa Arrives in style. working together to make the day so successful. As in the past the Elks Bingo Charity committee sponsored the party. At day’s end, a very tired Santa said, “We just love seeing so many smiles and how much happiness the party brings to these wonderful people.” A recently initiated Elk witnessing the event for the first time said she was amazed at how much satisfaction she got in helping the very appreciative guests. Lodge President Mike Klinger said, “I wouldn’t miss being here. Some of these same special guests have been attending this party for 25 years and look forward to returning Santa greets old friend Kevin Guthrie. each year. Our Elk’s members do whatever it takes to give them a fun day at the Lodge. We will see many of these same people at our annual Sock Hop next Summer.” Admission for either events is by invitation only and information is available by calling the Elks Lodge 949 830-3557. The Benevolent and Protective Order of Elks (BPOE) has a long standing support structure for the developmentally challenged and has a 150 year history of giving. “Elks Care, Elks Share.”

The holidays mean different things to different people. Every family seems to have its own set of traditions, but one thing seems to be common among Americans during this time of year, and that’s traveling. Like Santa Claus making that long journey from the North Pole, it’s estimated that more than 90 million Americans (36 percent) will travel this holiday season, according to a recent survey conducted by Extended Stay America hotels and Kelton Global. Santa and his reindeer will hit the road during the 2017 holiday season - and he’s not alone, as nearly threequarters of Americans (69 percent) will do the same with their pets. “Pet parents are increasingly including their furry family members in their travel plans, especially during the holidays,” says pet expert Andrea

Prepare your pet Like finding the perfect gift for your loved ones, the earlier you start to plan and prepare, the easier it will be. In November 2016, a 100-foot maple tree fell on Mike McMahon, causing life-threatening injuries. He needed 11 units of blood during emergency surgery and another seven units to treat complications after. Six weeks following the accident, McMahon was released from the hospital – just in time to spend the holidays with his family. “I’m grateful for the donors who gave me such an amazing gift – the gift of life,” said McMahon. “I was an occasional blood donor before the accident. Today, I donate as often as I can to help ensure others receive blood when they need it most.” Now is an important time to give blood and platelets. A seasonal decline in donations occurs from Thanksgiving to New Year’s Day when donors get busy with family gatherings and travel. In addition, severe winter weather can cause blood drive cancellations and negatively affect the blood supply. Patients like McMahon can’t afford for there to be a shortage of blood.
