Excitement Continues as Workout Crowds Rush to Shredz Gym, Ladera Ranch’s New Fitness Center “This workout is thrilling”, Says Local Resident After First Visit to Shredz

The Coto de Caza News reporters wondered what all the excitement was about when we visited Shredz gym this week. The new gym had a gala grand opening two weeks ago February 22nd, 2018, and the crowds of High Intensity Interval Training were still excited about the hot new training process. “We’re pumped! This workout is thrilling”, Said one local resident after her first visit to Shredz. The newspaper decided to ask the owner Brittany De Anda WHAT GOAL DID YOU HAVE IN MIND WHEN YOU OPENED Shredz? “Shredz Gym opened it’s doors in 2018 with one goal in mind. Heroes Hall will present A Salute to Women on March 22 a special event in honor of Women’s History Month Heroes Hall is presenting a special event from 5:30 to 7 p.m. on Thursday, March 22, in celebration of National Women’s History Month. For the second year in a row, the Clerk-Recorder’s Office will be hosting this special day at the Old County Courthouse in Santa Ana on Saturday April 14, 2018 from 9 am to 3 pm. Only passport services and birth certificates will be available on this day. These special openings make the passport process easier for parents, as both parents must be present to obtain passports for children younger than 16 years of age. This special opening is also geared towards individuals who can’t make it to our offices during normal operating hours due to work, school or other time constraints. “During Passport Day last year, over 100 busy families and individuals took advantage of these special hours,” Clerk-Recorder Hugh Nguyen said. “I encourage the public to take advantage of these special openings in order to avoid any delays in their travel plans. We are here to help make the process easier for everyone and hope to help even more individuals and families during this year’s Passport Day.” Appointments for passport applications are recommended but

Beckanne Sisk and Chase O’Connell Join Festival Ballet Theatre for Coppélia Photos by Dave Friedman Festival Ballet Theatre will enchant Orange County audiences with its performance of Coppélia on March 24 and 25 at the Irvine Barclay Theatre. Following a very successful Nutcracker season of sold-out performances, FBT presents the sentimental comic story which will delight audiences with its humor and charm. Set in a small European village, this beloved ballet tells the story of an eccentric inventor, Doctor Coppélius, who creates a life-size dancing doll that looks so lifelike, some believe she is real. When young villager, Franz, becomes infatuated with the doll, he casts aside Swanhilda, his true heart’s desire. JOSEPH’S DAY AND RETURN OF THE SWALLOWS CELEBRATION MARCH 19 St. Joseph’s Day and the Return of the Swallows Celebration is a world-renowned tradition celebrating the annual return of the famous swallows to Capistrano. This tradition was started by Father O’Sullivan in the 1920’s at Mission San Juan Capistrano, historic California landmark and home of the swallows, and is carried each year on March 19th. Join us for this historic celebration full of tradition, community, and festivity, on Monday, March 19, 2018 marking the return of our famous swallows to Capistrano and the coming of spring – a time of renewal and rebirth. B r o w n , Professor of Biological Sciences at University of Tulsa Great Stone Church Ruins – Location of the Swallows Nest Reenactment Renowned Cliff Swallows Expert Dr. Charles R. Brown, Professor of Biological Sciences at University of Tulsa, has studied more than 200,000 cliff swallows over the last 29 years. He has written numerous works on his studies of cliff swallows including Swallows Summer and

Coloniality in the Cliff Swallows. Dr. Brown has been the consulting expert on cliff swallows for Mission San Juan Capistrano for eight years. Under his advisement, Mission San Juan Capistrano conducted the Swallows Vocalization Experiment for four years, an initiative to lure the swallows to the historic site through amplified courtship calls. A new project under his direction, the Swallows Nest Reenactment Exhibit, was introduced at St. Joseph’s Day in 2016. The project still stands in place today to demonstrate what the nests looked like historically on the Great Stone Church ruins. Read more on both these projects below. There will be a presentation in the field by Dr. Brown on at 2:00 p.m. on St. Joseph’s Day for the public to learn more about the famous swallows of Capistrano and the Swallows Nest Reenactment from the expert himself. Meet at the Great Stone Church Ruins for this special presentation. A 20-minute informational presentation will be followed by the opportunity for Q&A with Dr. Brown. To purchase one of his books Swallow Summers and have it signed, visit the Mission Store Outpost (in the Historic Sala) on St. Joseph’s Day between 3:00 – 3:30 p.m. to meet and greet with Dr. Brown. Nest Reenactment Exhibit Dr. Charles Brown at the Nest Reenactment Exhibit, 2016 Cliff swallows expert Dr. Charles Brown, a professor of biological sciences at the University of Tulsa, implemented Phase I — the Vocalization Project — in 2012, in which recorded courtship calls were played through a speaker on the Mission grounds to lure the cliff swallows that were flying overhead. Phase II of the project, the Swallows Nest

Reenactment Exhibit, was introduced in March of 2016. Once the birds notice the plaster nests and begin using them, spillover or additional settling birds likely will lead them to building nests on the walls of the Ruins of the Great Stone Church. And once nests are built, the artificial arch would no longer be needed. They were joined by friends and members of both organizations, and representatives of Melzer Deckert & Ruder Architects, Inc. building designers, and Hofmann Finn Development Company, the building’s management and construction company. Also on hand were representatives of the Santa Ana’s City Council and Planning Commission. The 2.6 acre lot now had only the staked-off outline of what will be a 52,000 square foot 2 story Elks building at 1751 S. Lyon Street in Santa Ana. The neighboring Orange County Credit Union will occupy 20,000 square feet of the facility. The new building will be home to the 800 members of the Elks Lodge which is celebrating its 116th anniversary. Santa Ana Elks have a proud history of service to the community through benevolent programs benefiting special needs children, and sponsoring scouting, athletic teams, veterans programs, and more. The Elks are also a major supporter of Elks national programs that provide more than $3,500,000.00 annually in scholarships nationwide and sponsor a national “Hoop Shoot” free-throw contest involving more than 3 million children annually. On this day Art Echternacht, Elks Past State President and past Exalted Ruler of the Santa Ana Lodge welcomed guests and complimented the team from the Orange County Credit Union who worked side by side with the Elks Building Committee in bringing the project to the point of breaking ground after two years of planning. He also thanked Melzer Deckert & Ruder Architects, Inc. and members of the management & construction company Hofmann / Finn Development Co. Inc. Echternacht praised Michael Molnar and Emily Ouzts of Hofmann / Finn saying, “We couldn’t have reached this point if it were not for the dedication and hard work of these two.” Echternacht gave a brief explanation of the significant role played by the Santa Ana Elks in service to the community since 1902. “Love Grows by Giving” event Raises Over $120,000 Nonprofit Wayfinders (formerly Community Service Programs) hosted nearly 450 wine lovers and humanitarians to help raise over $120,000 to benefit Wayfinders’ Huntington Beach Youth Shelter, a safe haven for homeless, runaway, abused and at-risk youth, during its eighth annual “Love Grows by Giving” Wine Tasting fundraiser at the Hyatt Regency Huntington Beach Resort and Spa. The evening offered unique wine tastings, beer samplings, live music and an exceptional culinary experience from local fine dining restaurants. This year, multiple wines were served from various winery’s including Kendall Jackson, Bianchi, Rodney Strong Vineyards, Main Street Wine Company and more. On top of this, Kettle One Vodka presented colorful cocktails, which were a big hit with the guests. Watertable, Duke’s, Slapfish and Ola restaurants also had booths at the event, making great pairings with the selected wines and vodka. Proceeds from “Love Grows by Giving” have gone directly to benefit the Wayfinders’ Huntington Beach Youth Shelter, which since opening its doors 11 years ago has helped over 1,300 homeless, runaway and struggling Orange County youth and their families between ages 11 and 17, most who are trying to cope with issues kids should never face, such as early-childhood trauma. The trained staff has an excellent success rate of reuniting children with their families, over 90 percent, by finding solutions to their very complex problems. The Shelter’s mission runs much deeper than just a place to stay, as they provide a place for homeless, runaway and at-risk youth 24/7, 365 days a year. As emergency crisis and intervention programs, the Wayfinders’ Huntington Beach Youth Shelter aims to achieve: family strengthening and reunification, homeless prevention, diversion of at-risk youth from the juvenile justice system, and school drop-out prevention. In addition to providing youth with a safe haven and protection from the dangers of the streets, the shelters also provide youth and their families with professional comprehensive services including individual, group and family therapy, academic support, job/career readiness, life skills and aftercare. Every day throughout Orange County, people find hope after trauma. They don’t simply survive; they find ways to heal – all with the help of Wayfinders, formerly called Community Service Programs. Their ten model programs guide over 120,000 abused children, crime victims, struggling families, acting-out adolescents and people needing mediation services annually. St. Patrick’s Day Recipes: Easy Dips, Corned Beef Cabbage, Potatoes, Green Drinks and More By Slate Stone The key to fun and festive St. Patrick’s Day feast is to have lots of tasty food with lots of green color. You can accomplish this with some ready made green treats such as serving up lime sherbet or sorbet sprinkled with green sugar. Other cold green St. Patrick’s Day treats could include Pistachio ice cream, Mint chocolate chip ice cream, green koolaid or limeade, or any cake with green food coloring added to perk up the frosting. Use limes in your St. Patrick’s Day Recipes as garnishes. Use mint leaves and organic green lettuces in your St. Patrick’s Day recipes as plate garnishes also. Think green green green for St. Patrick’s Day recipes! Perhaps serve a platter of sliced kiwi with little dabs of whipped cream. Honey dew melon drizzled with Crème de menthe liqueur. Key Lime Pie certainly has hints of green! Instead of fresh squeezed lemonade make your St. Patrick’s Day menu include freshly squeezed lime aid. 1 jar (7.5 ounces) marinated artichoke hearts, drained, chopped 1 cup Mozzarella Cheese, shredded 1/3 cup Parmesan Cheese, grated Directions: Spread cream cheese into bottom of 9 inch metal or disposable aluminum pie plate. Set aside. In food processor, mix spinach, artichokes, and mozzarella cheese until creamy and well blended. Pour mixture into pie plate and sprinkle with Parmesan cheese. Bake at 350 degrees in preheated oven for 20 minutes. Serve on a platter surrounded by cut pieces of Irish Soda Bread. Garnish edge of plate with fresh baby spinach leaves to give a wreath like appearance. St. Patrick’s Day Limeaid Recipe 4 medium sized limes 3/4 cup white sugar 2 quarts cold water Directions: Juice the limes in an electric citrus juicer for maximum juice squeezed. Don’t use lime juice concentrate, using fresh lime juice is the key to a great St. Patrick’s Day recipe for limeade. Pour the lime juice into a 2 quart pitcher and stir in sugar. Then add water as you continue stirring. Thoroughly chill before serving or serve immediately

over ice. Tips: You can serve limeade in a punch bowl and garnish with thinly sliced limes, just double or triple this St. Patrick’s Day recipe. Locate the main electric fuse box, water service main, and natural gas main. Learn how and when to turn these utilities off. Teach all responsible family members. Keep necessary tools near gas and water shut-off valves. Remember, turn off the utilities only if you suspect the lines are damaged or if you are instructed to do so. If you turn the gas off, you will need a professional to turn it back on. EMERGENCY ACTION PLAN PREPARE A DISASTER SUPPLY KIT • List of important phone numbers (family, physicians, etc.) • Copy of insurance policy. • Credit cards and cash. • An extra set of car keys. • Inexpensive rabbit-ears television antennas to use when cable goes out. • Special items for infants, elderly or disabled family members. • Extra batteries. • Matches. • Clock (wind-up or batteryoperated). • Blankets or sleeping bags. • Scissors. • Plastic garbage bags. • Map of the area. • Clean change of clothes & rain gear. • A supply of non-perishable packaged or canned food and a non-electric can opener. • A first aid kit and prescription medications. • Flashlights and extra bulbs. • Battery-operated lanterns. (Candles and kerosene lanterns are fire hazards.) • Working fire extinguishers . • Battery-operated radio. • Assemble supplies you might need in an evacuation. Store them in an easy-to-carry container such as a backpack or duffel bag. Put aside in a special box in garage. Keep heat-sensitive items inside home and rotate stock throughout season. Batteries can go in refrigerator. WATER Having an ample supply of clean water is a top priority in an emergency. A normally active person needs to drink at least two quarts of water each day, hot environments can

double that amount. Children, nursing mothers and ill people will need even more. You will also need water for food preparation and hygiene. Store a total of at least one-gallon per person, per day. You should store at least a two-week supply of water for each member of our family. If supplies run low, never ration water. Drink the amount you need today, and try to find more for tomorrow. You can minimize the amount of water your body needs by reducing activity and staying cool. Store water in sealed, unbreakable containers. Identify the storage date and replace every six months Sandbags The use of sandbags is a simple, but effective, way to prevent or reduce floodwater damage. Properly filled and placed, sandbags can act as a barrier to divert moving water around instead of through buildings. Sandbag construction does not guarantee a watertight seal, but is satisfactory for use in most situations. Sandbags are also used successfully to prevent overtopping of levied streams and for training current flow to specific areas. Untied sandbags are recommended for most situations. Tied sandbags should only be used for special situations when pre-filling and stockpiling may be required for specific purposes such as filling holes, holding objects in position or to form barriers backedby supportive planks. Tied sandbags are generally easier to handle and to stockpile, however sandbag filling operations can generally best be accomplished at or near the placement site and tying of bags would waste valuable time and effort. If the bags are pre-filled at a distant location, due consideration must be given to transportation vehicles and placement site access. The most commonly use bags are untreated burlap sacks available from feed or hardware stores. Empty bags can be stockpiled for emergency use and will be serviceable for several years if properly stored. Filled bags of earth material will deteriorate quickly. A heavy bodied or sandy soil is most desirable for filling sandbags, but any usable material at or near the site has definite advantages. Course sand could leak out through the weave of the bag (to prevent this double bag the material). Gravely or rocky soils are generally poor

choices because of their permeability characteristics. Sandbag barriers can easily be constructed by two people, as most individuals have the physical capabilities to carry or drag a sandbag weighing approximately 30 pounds the use of sandbags is a simple, but effective, way to prevent or reduce floodwater damage. Properly filled and placed, sandbags can act as a barrier to divert moving water around instead of through buildings. Sandbag construction does not guarantee a watertight seal, but is satisfactory for use in most situations. Sandbags are also used successfully to prevent overtopping of levied streams and for training current flow to specific areas. HOW TO FILL A SANDBAG Filling sandbags is a two-person operation: One member of the team should place the empty bag between or slightly in front of widespread feet with arms extended. The throat of the bag is folded to form a collar and held with the hands in a position that will enable the other team member to empty a rounded shovel full of material into the open end. The person holding the sack should be standing with knees slightly flexed and head and face as far away from the action of the shovel as practical. The shoveler should carefully release the rounded shovel full of soil into the throat of the bag. Haste in this operation can result in undue spillage and added work. The use of safety goggles and gloves is desirable and sometimes necessary. For large-scale operations, filling sandbags can be expedited by using bag holding racks, metal funnels, and power loading equipment. However, the special equipment required is not always available during an emergency. Bags should not be filled more than half full or less than onethird their capacity. PLACEMENT Remove any debris from the area where bags are to be placed. Place the l/2-filled bags lengthwise and parallel to the direction of flow. Fold the open end of the unfilled portion of the bag to form a triangle. (If bed bags are used, flatten or fire the tied end.) Place succeeding bags on the folded or fired portion of the previous bag and stamp into place to eliminate voids and form a tight seal.

Mimi Walters Non-profit organizations throughout Orange County are doing incredible work every day to improve the lives of residents in our community. Whether they are helping veterans, at-risk youth, or other vulnerable populations, these organizations often rely on small staffs and little money to take on significant challenges in our region. While donations play an important role in funding their missions, many organizations must also rely on a combination of grants from both public and private sources. Unfortunately, applying for grants can be a daunting task, and many new organizations may not know where to find money or even where to start looking. These funding sources are not centralized, and it can seem like there is not much money out there. That could not be further from the truth. Private community foundations, as well as local, state, and federal government, are all major players in providing these much-needed funds. Federal grants are typically the most competitive, as applicants come from across the Nation, but they also offer the largest dollar

amounts. However, compliance and reporting requirements can often be a deterrent. To improve the chances of receiving a grant, organizations with common missions may benefit from banding together to submit a single application. Each federal agency has its own requirements and review processes, but most applications must be initiated through Grants.gov. While my office cannot perform grantwriting services, we may still be able to help. Each year, my staff hosts information sessions featuring federal agency representatives and grant consultants who share information about how to find appropriate grants as well as tips to bolster your applications. In addition, my office may be able to provide letters of recommendation for your federal grant applications on a case-by-case basis. As an elected official, I know that the government cannot fix every problem – or even most problems. We must rely on talented, hard-working individuals and organizations to identify issues in their own communities and determine the best solutions. By empowering partnerships between the private

St Patrick - recognized as the patron saint of Ireland St Patrick was a Christian missionary. Two authentic letters from him survive, the only universally accepted details of his life. When he was 16, he was captured in Britain by Irish raiders and taken as a slave to Ireland. He escaped, returned home and became a bishop. He later returned to Ireland, but little else is known. By the seventh century, he was credited as the patron saint of Ireland. (flourished 5th century, Britain and Ireland; feast day March 17) patron saint and national apostle of Ireland, credited with bringing Christianity to Ireland and probably responsible in part for the Christianization of the Picts and AngloSaxons. He is known only from two short works, the Confessio, a spiritual autobiography, and his Letter to Coroticus, a denunciation of British mistreatment of Irish Christians. Patrick was born in Britain of a Romanized family. At age 16 he was torn by Irish raiders from the villa of his father, Calpurnius, a deacon and minor local official, and carried into slavery in Ireland, where, during six bleak years spent as a herdsman, he turned with fervour to his faith. Hearing at last in a dream that the ship in which he was to escape was ready, he fled his master and found passage to Britain. There he came near to

starvation and suffered a second brief captivity before he was reunited with his family. Thereafter, he may have paid a short visit to the Continent. The best known passage in the Confessio, his spiritual autobiography, tells of a dream, after his return to Britain, in which one Victoricus delivered him a letter headed “The Voice of the Irish.” As he read it, he seemed to hear a certain company of Irish beseeching him to walk once more among them. “Deeply moved,” he says, “I could read no more.” Nevertheless, because of the shortcomings of his education, he was reluctant for a long time to respond to the call. Even on the eve of reembarkation for Ireland he was beset by doubts of his fitness for the task. Once in the field, however, his hesitations vanished. Utterly confident in the Lord, he journeyed far and wide, baptizing and confirming with untiring zeal. In diplomatic fashion he brought gifts to a kinglet here and a lawgiver there but accepted none from any. On at least one occasion, he was cast into chains. On another, he addressed with lyrical pathos a last farewell to his converts who had been slain or kidnapped by the soldiers of Coroticus. Careful to deal fairly with the nonChristian Irish, he nevertheless lived in constant danger of martyrdom. The evo-

cation of such incidents of what he called his “laborious episcopate” was his reply to a charge, to his great grief endorsed by his ecclesiastical superiors in Britain, that he had originally sought office for the sake of office. In point of fact, he was a most humble-minded man, pouring forth a continuous paean of thanks to his Maker for having chosen him as the instrument whereby multitudes who had worshipped “idols and unclean things” had become “the people of God.” The phenomenal success of Patrick’s mission is not, however, the full measure of his personality. Since his writings have come to be better understood, it is increasingly recognized that, despite their occasional incoherence, they mirror a truth and a simplicity of the rarest quality. It is not possible to say with any assurance when Patrick was born. There are, however, a number of pointers to his missionary career having lain within the second half of the 5th century. In the Coroticus letter, his mention of the Franks as still “heathen” indicates that the letter must have been written between 451, the date generally accepted as that of the Franks’ irruption into Gaul as far as the Somme River, and 496, when they were baptized en masse. Patrick, who speaks of himself as having evangelized heathen Ireland, is not to be

confused with Palladius, sent by Pope Celestine in 431 as “first bishop to the Irish believers in Christ.” Before the end of the 7th century, Patrick had become a legendary figure, and the legends have continued to grow. One of these would have it that he drove the snakes of Ireland into the sea to their destruction. Another, probably the most popular, is that of the shamrock, which has him explain the concept of the Holy Trinity, three persons in one God, to an unbeliever by showing him the threeleaved plant with one stalk. Today Irishmen wear shamrocks, the national flower of Ireland, in their lapels on St. Patrick’s Day, March 17.

St. Patrick’s Day in America and Ireland Before doing my recent research on St. Patrick’s Parades, I assumed, as I imagine that many people do, that the mother of all St. Patrick’s Day parades must be in Ireland. In studying the history of the celebrations I learned that my assumption was incorrect. In fact, the “original” St. Patrick’s Day Parade was held in New York, 16 years before the Declaration of Independence was signed. The tradition of celebrating St. Patrick’s Day parades began as a response to oppression. An English law forbid the Catholic’s parades, but allowed a religious procession after Mass. So, on this technicality, the Irish Catholics got a permit for a church procession. The St. Patrick’s procession would leave from the Cathedral after Mass. Therefore the original parades were actually an act of defiance. While the parades have become an accepted part of the mainstream in the United States, historically, that has not been the case. There are several cities that started having parades in the early years, only to suspend them during times of hardship. The times of hardship included anti Irish sentiment, two World Wars and the Great Depression. Up until the mid nineteenth century, the majority of Irish immigrants in Page 28

America were members of the Protestant middle class. The 1845, the Great Potato Famine hit Ireland and close to a million poor, uneducated Catholic Irish started pouring into the United States. The Irish immigrants were despised when they first immigrated, and had trouble finding even menial jobs. They soon began to realize that their great numbers gave them political power and they began to organize. Their voting block became known as the “green machine”. The St. Patrick’s’ Day parades became a show of strength for Irish Americans and a “must attend” event for politicians. As the parades became part of the mainstream society, Protestants celebrated alongside the Catholics and they all enjoyed the party. What started as a religious procession became a celebration with music, dancing and green beer. St. Patrick’s Day and green beer have become synonymous. It’s traditional in many cities for everyone to go on a pub crawl after the parade and drink copious quantities of green beer, which is simply regular beer with some green food dye added. While the St. Patrick’s Day party reigned in American, the Irish observed St Patrick’s Day as a holy day. St. Patrick’s Day had been a solemn

holy day for centuries. As a holy day, the saloons were closed, which was the opposite of the parties that occurred in America. St. Patrick lived over 1600 years ago. He had endured a turbulent life. He was captured and enslaved at the age of 16. He worked as a slave in Ireland, part of that time working as a shepherd. He escaped and became a man of God, entering the priesthood. He was educated in a monastery in France. He was made a Bishop and was returned to Ireland, this time to work as a missionary and convert the pagans to Christianity. He was successful in converting many people to Christianity. The legend of St. Patrick is that he led the snakes out of Ireland. However, as snakes are not indigenous to Ireland, it is believed that the legend is symbolic. Most believe that the snakes of legend were actually symbolic of the pagans that were converted. St. Patrick is credited with using a shamrock to explain the holy trinity to pagans. Thus the shamrock is symbolic of the holy day. In 1995, Ireland set up a St. Patrick’s Day Festival, with the goal of capitalizing on the popularity of the celebration and to encourage tourism to Ireland.

The First St. Patrick Festival was held on March 7, 1996. In 1997 the event was a 3 day festival. This year the five day festival will feature 4,000 performers, with one millions people celebrating. Events include music, street theater, family carnivals, comedy, street performances, dance, a treasure hunt, night spectacles, and many celebrants. In Ireland the St. Patrick’s Day Festival is an event that draws locals and tourists. The country, with it’s long history of honoring St. Patrick and his good works sounds like a great party. On the other hand, if you want to go to the original St. Patrick’s Day Parade, New York is the place.
