eggstravaganza mother’s club event at the coto valley country club The Coto Mother’s Club (CMC) will hold their Annual EGGStravaganza in Coto de Caza on Saturday, March 26, from 8:00 -11:00 am. It takes place at the Coto Valley Country Club, located in The Village at 2331 Via Venado. This is a community-wide Easter event that offers all Coto de Caza residents FREE entertainment while also benefiting a wonderful charity close to our hearts, Autism Speaks. In an effort to increase awareness in the growing autism community, and in support of several families within our own CMC membership, 25% of all proceeds from the event will be donated to Autism Speaks. This year’s EGGStravaganza features the return of many family favorites including a massive EGG Hunt with over 6,000 goodie-stuffed eggs for different ages, an Easter Bunny, several bounce houses, a face painter, a petting zoo and a trackless train! This year’s event is made possible through the generous sponsorship of Universal Protection Service, Coto’s community gate and patrol service. The members of the Coto Mother’s Club extend a heartfelt thank you to everyone at UPS for helping make this event possible! The start times by age group for the Egg Hunt are below. Get smart about buying insurance For most Americans, insurance coverage is a necessity. While coverage can be confusing and expensive to obtain, its solace is undeniable in the event of a car crash, emergency surgery or if your home has been damaged in a storm. From home and health to auto, life, disability and more, it’s important to be smart about how you buy coverage to limit costs, purchase the right coverage and avoid redundancies. The best place to start is on your state’s official government website, says FindLaw.com, the nation’s leading website for free legal information. There you will find a list of licensed insurers so you can be assured that you’re dealing with a legitimate company. “Work with a reputable insurance agent who represents a financially sound, highly-rated company,” advises Ed Susolik, an attorney who specializes in insurance law at Callahan & Blaine in Santa Ana, Calif. “As is often the case, you get what you pay for. You don’t want to add to a tragedy by discovering that you’re underinsured or that the policy you’ve purchased from a little-known company is fraught with loopholes.” Here are some additional tips from FindLaw.com on purchasing insurance coverage: Follow the law. Check the laws of your state. You may be required to carry certain types of insurance, such as liability insurance to operate a car, motorcycle or boat. This also applies on the federal level, for example, with the passage of the Affordable Care Act, all Americans are required to carry health insurance.

Read your policy. Many Americans don’t read their insurance policies and hastily sign contracts without considering the implications. For example, if your health insurance covers 90 percent of all medical bills and you require significant medical attention, the 10 percent for which you’re responsible could add up. If you have trouble understanding what a policy proposal covers, don’t hesitate to slow down and ask your agent for clarification or get a quote from a different company. Remember: you’re buying insurance to ease, and not trouble, your state of mind. Plan for major milestones. Major events will trigger the need to purchase insurance or increase your existing coverage. With the birth of a first child, parents should consider purchasing term life insurance. It offers a benefit to a spouse and child to cover living expenses if one parent dies before the child reaches adulthood. Inspect your home insurance. Carefully review your home insurance policy. Are you insured for your home’s market value or replacement value? The replacement value is the cost of rebuilding your house, while the market value is based on an appraisal of its value in relationship to surrounding homes. Your agent should be willing to work with you to sculpt the policy that meets your needs. Consider flood insurance. Standard homeowners insurance typically does not include flood insurance. First, determine the level of risk for flooding in your area. There are a few options online, including the Federal

Emergency Management Agency’s website (www.fema.gov), where you can search your address and assess flooding risk. Your insurance agent also should have access to this information and can explore your options with you. Add an umbrella policy. It’s not a bad idea to purchase an umbrella liability policy to provide additional coverage above and beyond your homeowner’s insurance. This helps in situations where you could be at fault for accidents, such as your dog biting a mail carrier or a tree in your yard falling onto a neighbor’s car. Research renter’s insurance. Apartments can be burglarized or damaged like any other property. If you rent, consider purchasing renter’s insurance to cover assets such as computers, furniture and other significant items. Inventory your belongings. Take photos or videos, with audio descriptions, of your property so you and the insurance company have an accurate record of your belongings in the event of a fire or other accident. Capture your home, prized possessions and high-value items such as cars, boats, jewelry and collections. Store the files on a portable hard drive in a secure and safe location, such as a safe deposit box.

J o h n ’ s E p i s c o p a l Sc h o o l t o h o s t 2 0 1 6 O ly m p i c At h l e t e s f o r 3 r d A n n u a l G l o b a l 8 C a m p This summer’s athletes from around the world will gather in Rio de Janeiro, Brazil’s for the 2016 Olympics. However, in April of this year, the road to Rio in the Olympic sport of taekwondo runs through St. John’s Episcopal School in Rancho Santa Margarita. Taekwondo has achieved worldwide popularity and is the most popular martial arts sport in the Summer Olympics. From April 1 through 3, just a few months before the Rio Olympics, ten of the greatest athletes in the Taekwondo world will be coming to St. Johns School from around the world as instructors at the third annual Global 8 Taekwondo Camp at St. John’s School. The camp is the brainchild of Janet Jones, a local resident and parent of a St. John’s student. It was designed to give young Taekwondo athletes the opportunity to train and learn from Olympians. The first camp involved world champion and Olympian instructors from the USA. But because Taekwondo is a global sport and this year is an Olympic Year, the 2016 instructors will be global greats. The list of instructors is literally a who’s who of the sport. Three of the four gold medal winners from the 2012 London Olympics will be among the 10 Olympians instructors. These instructor-athletes have won 15 world championships, 20 Olympic medals and numerous national and international championships. USA Olympic coach Jean Lopez will be the camp director. His brother, Steven Lopez, a 5-time world champion, 5-time Olympian and 23-year member of the US National Taekwondo Team, is also an instructor. Few athletes in any sport have achieved such success. Mrs. Jones praises St. John’s

School for its support of the event. St. Johns has been a partner in this effort since the inaugural camp. The St. John’s STEAM Program fosters a team approach among its students through collaboration on group projects. Jones said there is no better example of a team approach than the athletes who instruct at Global 8 Camps. They come to the United States to support and grow the sport they love and they do it, asking for nothing more than reimbursement of their expenses. Soon after their departure from the camp, the instructor-athletes will travel to Rio to compete against each other for Olympic medals. This year’s camp is an important event in the sport of taekwondo never before held in the United States. Imagine holding a basketball camp and having Kobe Bryant, Lebron James, Steph Curry and seven other hall of fame players participate in the camp on the court for three days, instructing young athletes. Taekwondo athletes from around the world are recognizing the opportunity. Not only are local athletes attending, but athletes from across the United States, Canada, Africa and Mexico will also be participating. An important part of the team approach has been the support of local businesses and organizations, including St. John’s School, Realtor Mariann Cordova, Hilton Garden Inns and Applied Medical. The athletes and the camp participants thank them for their contributions. The camp can use an additional $3,000 to bring the athletes to Disneyland and the beautiful beaches of Southern Orange County. Then, blend out the concealer to create a brightened under-eye area. Step 3. For breakouts or dark spots, dab concealer and use a small stippling motion to blend it out. Step 3: Gather the top section of hair and clip it out of the way. Leave

enough hair on each side of the head above the ears to create two small braids. Secure them with an elastic band. Step 4: Drop the top section you previously clipped up and gather all the hair into a low ponytail, leaving out the two side braids. Then bring the two braids together in the back of the head and secure tightly with another small elastic band. Step 5: Undo the low ponytail and the two elastics around the ends of the two small braids (not the one that just secured the braids together). Then pull lightly at the roots of the pulled-back hair on the top of the head to create texture.

elks St. Patrick’s Day Dinner & Dance Fundraiser Photos and story by Mike Klinger On Saturday, March 12, the Mission Viejo / Saddleback Valley Elks hosted their Annual St. Patrick’s Day Dinner & Dance Fundraiser and for a few hours everyone was a wee bit Irish. As guests were greeted by Elk volunteers, Judy Klinger and friend, Donna Hagan, they could not pass up an opportunity to purchase tickets for some great raffle prizes, including the Grand Prize, an Orange County Entertainment Package valued over $300 for restaurants and other vendors. As the band, FRENZY, with lead singer Patricia Bowers, kicked off the evening with light tunes for dining, Girl Scout Troop #261 began to serve dinner. And oh and what a dinner! Lodge Chef, Ed Mackey, prepared outstanding corned beef and cabbage with red potatoes and his famous Sheppard’s Pie all accompanied by Irish Soda Bread. The Girl Scouts then served everyone a delightful chocolate cupcake topped with an Irish Cream icing prepared by Cheryl Tucker and Judy Klinger. Kitchen Manager, Pam Mackey, “Tiger” Ed and Janet Griffin and Lodge Inner Guard, Kevin Hughes rounded out the St. Patrick’s kitchen crew. Then it was time to hit the dance floor and along with that came a very special treat for the evening. Christine Bryne of the Aniar Irish Dance Company presented eight dancers that filled the hall with joy and excitement of traditional Irish dancing. The seven kids and one adult, all dressed in tradition Irish dance attire, put on a performance that was second to none. Thank you to Sheyenne Egenese, Alessia Brown, McKenna Walsh, Kennon Compton with the family of Fabiola,

Fantastic display of the art of dance! You cannot put on a St. Patrick’s Day event without having a Best Dressed Contest. Elk of the Month, Laura Lumley, and Lecturing Knight, Mike Long spent the evening searching the crowd for their candidates. Pat Doyle, Shelly Blair, Barbara King and Sam Hooker (Shelly’s husband) topped the guest with their special Irish dress. And the winner is…Pat Doyle and Barbara King both received an “Irish Cup-O-Gold-Coins” and a free Friday dinner at the lodge. Then the biggy that everyone was waiting for…eight raffle prizes including the Grand Prize of over $300 worth of gift certificates to restaurants and entertainment in Orange County were ready to be taken! MV Elks Kitchen Manager, Pam Mackey was the BIG winner of the Grand Prize Raffle. There were many volunteers responsible for making the St. Patrick’s Day Fundraiser successful.

Culinary Extravaganza raises $300,000 for Two Local Charities Photos by Tony Lattimore A crowd of 300 converged at the Laguna Cliffs Marriott Resort and Spa in Dana Point to feast at the “Table for 10” annual culinary spectacular orchestrated by KM Productions for deserving non-profts. The evening presented a festive cocktail reception, silent and live auction and of course a banquet for each of the 10 guests seated at the individual restaurants represented. The affair continues to attract gourmet food and fine wine lovers from throughout Southern California for a culinary experience second to none. The evening started with a festive cocktail reception, where guests enjoyed libations and hors d’oeuvres from Manassero Farms, represented by Anne Manassero and Pascal Olhats of Pascal and Café Jardin. Mixed Bakery’s pastry and candy selections delighted, as did the chocolate-covered toffee from Addington Confections, among the many delectable sponsor offerings. When the ballroom doors opened to beautifully decorated tables from the over 30 participating restaurants - each having their own individual gourmet food and wine experience, it was quite overwhelming! I was seated at the Tustin Ranch Golf Club Restaurant which had Chef Bert Agor and his team creating the ultimate tropical island affair. Our taste buds were then enlightened with five courses, all having the appropriate adult libation complementing it. Starting off with a blackened Opah Croquette with gourmet pub flavors pickled onions (which we all received as a gift to take home) with roasted pepper jam, olives, cheeses, and mustard’s – we were able to create our own flavorful croquette. Next came the garden fresh melons wrapped in Prosciutto De Parma and modern gastronomy jellies, then we enjoyed cold, smoked Rainbow trout served with black squid ink pasta, caviar and crushed potatoes. Live Main Lobster that was butter poached with crushed San Marzano tomatoes, main dish of Colorado Rack of Lamb in fresh herbs with creamy smoked Gouda grits, roasted beets and goat cheese. Dessert was Chef Sara’s orchestra of amazing tastings of Raspberry mousse jaconde, Hazelnut chocolate dacquoise, French Macaroons, and Red Delicious apple Rose. Chef Agor also told unique stories about the dish and why he created it. It was a magical evening of fabulous food indeed. The live auction, led by gavel girl Dawn Marie Kotsonis, featured overthe-top “Best of Chefs” dining experiences, as well as travels to exotic locations around the globe. Some of the items up for bid went twice like the St. Mary’s Antigua Escape for seven nights, going for $4500 each and a Montana Winter Escape for five days in a 2300 square foot cabin that went for $3,000 (twice!). The two “Best of the Chefs Packages” included meals or cooking at your home from the listed local high end restaurants listed which brought in $9,000. Along with auction monies raised, dinner costs were absorbed by the restaurants and chefs, with special underwriting from event sponsors and a Fund-A-Need auction, making it possible to give $300,000 to the two deserving charities featured - The Teen Project and Vocational Visions. Among those attending who were integral to its success were The Teen Project Founder Lauri Burns and Vocational Visions Executive Director Joan McKinney, as well as table sponsors, including Susan Samueli, from UCI’s Center for Integrative Medicine, Lindsey Ueberroth, President/CEO of Preferred Hotels and Resorts, Mike Danzi, CEO of Legacy Pharmaceuticals International, Ed Lee, co-founder of Wahoo Fish Tacos, and many more. The Venue Host Chefs were Salvatore Giuliano and Greg Heneghan, Laguna Cliffs Marriott Resort and Spa; Event Chef Chair was Pascal Olhats, Pascal, Café Jardin; and Honorary Chefs included Ben Martinek, The Loft, Montage Laguna Beach and Yvon Goetz, The Winery Restaurant and Wine Bar. Vocational Visions’ programs, services and personalized support develops the talents of adults with disabilities by creating pathways to employment, life-long learning and social inclusion. The Teen Project provides teens aging out of the foster care system the resources and support of an intact family in order to allow them to successfully transition to adulthood. Local Teens Revisit 1920s Glamour in rancho Santa margarita by Melanie Jacobson Hundreds of sharp-dressed young people, ages 16-18, descended on the Bell Tower in Rancho Santa Margarita last Saturday, March 12 to celebrate “A Return to 1920s Glamour.” They came in long formal gowns and trendy shorter dresses, suits and tuxedos. They wore corsages and smiles, they danced and played cards, and the chaperones stood back and marveled at the outstanding collection of young people gathered in one place. The event was the tenth annual Mormon formal, or “Mormal,” sponsored by several congregations of The Church of Jesus Christ of Latter Day Saints with youth attending from the Rancho Santa Margarita, Mission Viejo, Newport Beach, San Clemente, Laguna Niguel, and Irvine stakes. The night was about more than just a dance, though. The organizers dreamed up “Mormal” as an alternative to prom night for the many high school students who had become uncomfortable with the activities associated with traditional proms, such as suggestive dancing and underage drinking and the social expectations that come with it. In addition to providing a safe space for the traditional coming-of-age formal

dance, the Mormal also encourages a return to “old-fashioned” dating to counteract “hang out” culture. Attendees must have dates, and they must be at least sixteen to attend. Gentlemen are expected to wear suits and ties or tuxedos, and young women are expected to wear modest dresses. Trabuco Hills High School junior Audrey Bennett, 16, explained, “We all have a good time together, and it’s all about good clean fun. It’s also a good chance to bond with those who have my same standards.” Mormon kids practice standards outlined in a guidebook titled “For Teens from Rancho Santa Margarita and Mission Viejo embrace the the Strength of Youth” that is given 1920s glamour to every young person in the Church of Jesus Christ of Latter Day Saints once they turn twelve and enter the youth program. Standards include modest dress, clean language, and no dating until sixteen, and even then, group dating until at least the age of eighteen. However, these old-fashioned values have struck a chord outside of the church as well. Of the 552 teenagers who attended, 163 were not Mormon. Make Your Ham Brunch Shine This Spring

It’s time to shed those winter layers and enjoy the warmth and brightness of the spring season. And what’s the best way to do this, you might ask? Why not give your spring occasions a taste of their own goodness by hosting a memorable, seasonally inspired brunch celebration. The Ham Tradition No spring brunch is complete without a beautiful ham as the centerpiece. But how did this tradition come to be? Prior to modern refrigeration and all its conveniences, ham was cured during the cold winter months. This made spring the most-opportune time for folks to enjoy this delicious, much-anticipated treat. Servings Made Simple No matter what the occasion may be, you can easily transform it into something special with a mouthwatering ham centerpiece. Rule of thumb: plan on about 1/3-1/2 of a pound of ham for each guest. Of course, if you’re planning to enjoy leftovers, you might consider purchasing a slightly larger ham. Here’s a useful guide to follow, courtesy of The Honey Baked Ham Company: • 4 people – 1.8 pounds • 8 people – 3.6 pounds • 12 people – 5.4 pounds • 16 people – 7.2 pounds

Tip: Try serving your ham either family or buffet-style, allowing guests to pick and choose their slices to help reduce the wasting of food. Table in Bloom The easiest way to enhance your brunch setting is with a floral touch. Even a single bouquet of your favorite spring flowers (think hyacinths, daffodils or tulips) can add eyecatching flair to an otherwise ordinary tablescape. Open puff pastry dough and, on lightly floured parchment, roll dough into rectangular shape, approximately 10-by-16 inches. Transfer and pat pastry dough onto baking sheet, leaving 1-inch border. Layer with goat cheese. On top of cheese, sprinkle shallots and asparagus, tomatoes, ham and salt and pepper, to taste. Brush edge of pastry with egg yolk mixed with water. Bake 20-25 minutes, until pastry is golden brown and puffy. Let cool slightly and serve.

Easy do-it-yourself Easter: Fun Easter projects for the whole family The Easter bunny is right around the corner, which means chocolate eggs, chick marshmallows and stuffed bunnies will soon be popping up around the home. Celebrate with a build-your-own Easter basket with the kids for some quality time for the entire family. DIY doesn’t mean it needs to be complicated or difficult. Here are a few great ideas with some easy shortcuts to make it an enjoyable experience for everyone. The basket It all starts with the basket. The egg hunt and basket fillings wouldn’t be complete without an Easter basket decked out in bright spring colors. Top each cookie with scoop of ice cream then top ice cream with another cookie (bottom facing ice cream). Press down on sandwich until ice cream reaches cookie edge. Immediately roll ice cream edges of sandwich in chopped mini candies, turning sandwich until all edges are coated. Place sandwich on a dish and return to freezer. Repeat with remaining sandwiches.
